The UK’s biggest gin festival will make its way to Newcastle Racecourse with gins from across the world, including exclusive bottles you won’t find anywhere else. Alongside gin sampling, you can take part in gin-infused masterclasses while enjoying live music and tucking into delicious food.

London will celebrate World Gin Day with a three day celebration across the capital. London’s Tobacco Dock will play host to another edition of Junipalooza, with over 60 gin distilleries in attendance. With a strict owner or maker policy, you can chat direct to the distiller. BOTTLES & BARS BAR IN BLOOM

The team behind luxury garden shop The Chelsea Gardener have opened a new cafe with botanical-inspired cocktails from Stefano Zampieri, the former head bartender at Berkeley’s Blue Bar and The Corinthia’s Bassoon Bar. The cocktail menu is set to blossom with exclusive drinks including the Gardener’s Iced Tea and a Dandelion and Burdock Old Fashioned. Find The Chelsea Courtyard at 151 Sydney Street.

Lyme Bay Winery has launched a new spiced rum. The Caribbean inspired rum is aged in bourbon-charred oak barrels with a full spice profile including nutmeg, orange peel, cloves, cinnamon, ginger and vanilla. Toning down the sweetness and vanilla taste, the rum has been created with mixers and cocktails in mind. Lugger Rum is available direct from Lyme Bay priced at £38.50.

THREE BARS IN ONE

Southam Street is a new multi-venue space in London with bespoke cocktail menus for each level. The tequila and Mezcal Parlour will flow with Margaritas and Picantes, the Sake bar features Japanese inspired cocktails and the ground floor bar and terrace serves up fizzy cocktails and classic twists. Putney’s pop up venture Bar Canek invites you to ‘cook’ cocktails El Cartel style, inspired by the Colombian party scene. The Pirate’s Grog Rum Bar will pop up at Taste of London from 13th to 17th June serving up a twist on the traditional Old Fashioned for Dad. Combining Pirate Grog’s Five Year Rum, Pedro Ximenez Sherry and orange and chocolate bitters.

Manchester’s Vesper is renowned for its signature cocktail menu including this twisted tipple, featuring Jim Beam bourbon, white chocolate and caramel espresso.

Step back in time with a 1980’s classic cocktail with Cardiff’s 10 Feet Tall. The cocktail bar has created a nod to the quintessentially British cocktail combining Beefeater Gin with citrus and blackberry liqueur.

6 O’CLOCK GIN The story of 6 O’clock Gin dates back to the mid 1980’s in the kitchen of a small South Devon farmhouse. Edward Bramley Kain and Penelope Gage began experimenting in their kitchen making fruit liqueurs using fruit from their family farm. With a surplus of fruit at the end of each crop, they began to create small batches of liqueurs in the kitchen and upon discovering an abundance of sloe berries, the couple soon decided to develop a sloe gin which quickly became their best seller. Following 20 years of making liqueurs, the couple looked towards retirement and considered selling the business, but in 2007 their son Michael and his sister Felicity bought Bramley & Gage from their parents and decided it was time to make a new gin. In 2010, 6 O’clock Gin launched as a refinement of the gin that the couple had made for years as the basis of their sloe and damson gin.

It had taken two and a half years to develop the 6 O’clock Gin recipe. The family aimed to create a juniper-led taste aligning with their liqueurs which portray the predominant ingredient as the strongest flavour, ensuring to capture the true taste of the fruit. 6 O’clock Gin is a smooth gin created in a custom-built copper pot still with a unique double sphere head. Made using seven botanicals, including coriander and angelica, only the pure heart of the run makes the cut. The gin gained its name from the great grandfather of the Head Distiller Edward Kain who was an engineer, inventor and world traveller. Travelling to exotic countries, he required anti-malarial medication and 6 o’clock is believed to be the time he drank the tonic. The Bramley & Gage family also believe that their gin is worth the wait and 6 O’clock is the perfect time to treat yourself to a tipple!

FRUIT LIQUEURS

This month’s Cocktail Club box features two delicious fruit liqueurs from Bramley & Gage. Producing liqueurs using the best-quality fruits sourced as locally as possible, Bramley & Gage use a maceration method similar to that practiced in France.

QUINCE

Quince is an ancient fruit, traditionally grown across Southeast Europe, Asia and North Africa. The fruit grows on small trees and is most closely related to apples and pears, with golden flesh and yellow skin that can be smooth or covered in a fuzz layer, dependent upon the variety. Unlike apples and pears, which are instantly edible, quince is tough and bitter until cooked as the fruit flesh turns pink and mellows into a smooth sweetness.

SLIDER

Using a traditional Devon recipe passed through generations, Bramley & Gage make their slider by infusing hand-picked sloe berries which have been steeped in gin for up to six months, before infusing them in Perry Brothers Cider creating a liqueur featuring the flavours of apples, floral botanicals and sloes. The name Slider is simply a portmanteau combining the two ingredients - sloe and cider.

TIPPLER’S TIPS & TRICKS

INVENTIVE GARNISHES My name is Josue Romero, although many people call me the Garnish Guy. I am a full-time bartender whose bar of residence is Odd Birds located in St Augustine, Florida. I am also a Drinkstagrammer on my days off which means I am surrounded by cocktails all the time - and I love it! Even though I have a finance degree, my passion for the arts fuels my inspiration for photography while visits to local farms and distilleries inspires my cocktail recipes. While on my days off, my journey includes short trips to museums and art galleries, followed by a trip to the local farmer’s market to influence my cocktail recipe ideas. Garnishing a cocktail is like dressing up for a party. You can do a simple dehydrated orange slice or a mint sprig to edible flowers and cakes, it depends on the message you want to convey. Edible garnishing is always the best so make sure you spray the flowers with some absinthe to add an extra aromatic layer, or sprinkle edible glider for an extra shine. Your cocktails should always be dressed to impress! The Candyman is a modern approach to the classic Sidecar cocktail, taking the sugar rim to the next level with a chocolate doughnut, thus being the inspiration for the garnish of this cocktail! Combine your gin, Campari, grapefruit liqueur and grapefruit juice in a shaker filled with ice. Shake to combine. Fill a highball glass to the top with cubed ice, then strain in your cocktail. Top with Champagne, add a straw and a spoon, then garnish with a doughnut. The more sprinkles the better!

ELDERFLOWER BUZZ CUPCAKES We’ve teamed up with food blogger Paul Toulson from Cake And Slice to share his exclusive recipe for Elderflower Buzz cupcakes, inspired by our June monthly box. Infusing 6 O’clock Gin and quince liqueur syrup into a classic vanilla cupcake, you can create his boozy bake twist on our monthly cocktail!

BUTTERCREAM

125g Unsalted Butter 125g Caster Sugar 2 Eggs 125g Self Raising Floor 1 tsp Honey 1/4 tsp Bicarbonate of Soda

25ml 6 O’clock Gin 20ml Quince Liqueur 30g Caster Sugar

250g Unsalted Butter 400g Icing Sugar 25ml Elderflower Zest of one Lemon

METHOD Preheat the oven to 175 degrees and line a 12 hole muffin tin with cases. Cream together the butter and sugar until light and fluffy, roughly around 3 minutes. Add the eggs, one at a time, making sure the first egg has been fully combined before adding the second. Beat in the honey. Add the flour and bicarbonate of soda and fold in with a metal spoon. Fill your cupcake cases until 2/3 full, place in the oven and bake for 22 - 25 minutes or until golden brown and a toothpick comes out clean. Just before your cakes are baked, you need to prepare your syrup. Add all ingredients to a small saucepan, bring to a gentle bubble and simmer for 2-3 minutes. As soon as your cakes are baked, take them out of the oven and pierce them several times. Using a pastry brush, cover the tops of each cake with the syrup and set the cakes aside to cool completely. Next, prepare your buttercream. Beat your butter until light and pale, this will take a minimum of 5 minutes, add the icing sugar and elderflower in two batches, the elderflower will stop the icing sugar going all over your kitchen. Finally, add the lemon zest and beat your buttercream for a further 3 minutes. Fit a piping bag with a star ended nozzle. Starting at the centre of your cooled cupcakes, pipe clockwise slowly building up a tall swirl. If you do not have a piping bag then you can simply spoon your buttercream onto your cupcakes.
