H ow to Fashionably Dress your Cocktails in Fall BY MATT HOLLIDGE

If you’ve crossed the threshold of any bar in recent years, your senses will have been dazzled by a fashionable catwalk of glassware adorned with fruit, feathers, flames, smoke, bubbles... and the rest. “You taste with your eyes and nose first” I’m told; I’m assuming they don’t mean the ‘cool’ kids who drank milk through their nose at school, but rather the mixological exploration of the senses which does wonders for your perception of taste and your experience of craft cocktails. How you ‘dress’ a cocktail, at a bar or at home, will impact how it’s received. If the recipients of your creations have never grabbed their phone to Instagram or Snapchat your cocktail before drinking it, then perhaps it’s time to bring the theatrical element. Want to create Sherlock drama? Think dry ice and trapdoors, but if you don’t have those available, even the best of us can muster a little Murder She Wrote with all but the zest from our citrus fruits. I use a potato peeler to get a nice thin, malleable rind and always remember to use the natural curves of the fruit to your advantage when choosing which way to peel.

1 2 In this photo above, you’ll see a two step process for one of my favourite citrus garnishes. If you own pinking shears, use them for step two. If not, use a knife and a lot of patience, like I do. A simple cut down the centre provides the gap where you slide the garnish onto the rim of the glass. Wondering how to make your lemon twist keep its ‘twistiness’? Twirl it tightly around a pencil for a few minutes before adding to the glass. And finally, while we’re talking garnishes, never underestimate the power of a tiny clothes peg!

TIPPLER’S TIME

Havana Club Havana Club is one of best-selling rum brands in world, with a rich history dating back to 1934. Originally produced by the Arechabala family in their own distillery, the brand was nationalised after the Cuban Revolution of 1959. The Anejo Especial edition, featured in this month’s Tipple Box, is a double-aged rum with hints of cinnamon, tobacco, orange peel and dry oak. Produced in Cuban tradition using high quality sugarcane, the rum is slowly distilled in columns which have been designed especially for Havana Club. Following their unique distillation method, the rum is aged for a number of years in barrels previously used for maturing American bourbon. The rum is then transferred and ‘double aged’ in Irish whiskey barrels, giving Havana Club Añejo Especial a smooth, balanced flavour. Curating the Caribbean in a bottle, the spiced rum is packed full of flavour ready to have your taste buds doing the rumba.

Chase Distillery Chase Distillery was established in 2008 thanks to William Chase and his beloved Herefordshire family farm. It was upon visiting America to buy packing equipment for Tyrells Crisps that William discovered a micro-distillery which was producing vodka from potatoes. With his family’s farming heritage and a surplus of potatoes which were too small to make the famous crisps from, William Chase set up Britain’s first single-estate distillery on Rosemaund farm near Hereford, aiming to create a new premium tasting vodka. Chase’s single-estate approach to farming and distilling allows them to keep a watchful eye over how their potatoes and apples move from field to bottle to produce their award-winning Chase Vodka, alongside William’s Gin and Chase Liqueurs. A tin bottle of ‘rumbullion’ was discovered on board the Swedish warship Vasa, which sank in 1628.

From it’s ‘hellish’ beginnings, rum became synonymous as a seafaring swager as the drink was given to sailors as a cure for scurvy before becoming their official rationed drink.

Taking inspiration from the bush teas of the Caribbean, Bushtea is made from molasses which are distilled in copper pot stills and infused with a combination of botanicals including hibiscus flower, orange blossom, honey and root ginger.

The newest rum on the block comes from Beach Craft Spirits’ soon-toopen Moray distillery. The spiced rum is lightly coloured, as it is nonaged, and combines a powerful wave of citrus and complexity of spice, described as “a full beach experience”.


In 1687, rum became the official ration for the British Royal Navy and rum importation began to make its way to the UK, with brands including Lemon Hart and Lamb’s blending and ageing rum in the UK. We may have a strong and long tradition in importing rum, but the UK does not have a rich of a history in distilling rum. Due to the climate being unconducive to producing sugar cane, many rum brands opt to import the spirit to blend with locally sourced spices to create distinctive taste profiles.

However, there are small distilleries across the UK leading the way in the current rum revival as they distil new flavours from Moray to Manchester. The revitalisation of rum is well underway as the spirit’s expansion begins to spread across shelves and the highest amount of independent rum festivals todate will take place across the country in 2017. Bringing rum production back to Glasgow in 2016, Sugar House Rum is 100% handcrafted in Scotland. Developing their own unique recipe, the white rum is an unsweetened, smooth and full bodied rum, straight from the copper pot stills.

Taking its name from the Native American term for killer whales, SeaWolf rum is made with a combination of champagne and rum yeasts. Fermented at a low temperature for four weeks, the rum has a tropical fruit palate with a faint citrus and spice finish.

The elusive white rum comes from Manchester’s only rum distillery Manchester Still Inc. Using scientific methodology during distilling, they have created a pure and smooth white rum with a hint of candy apple.

How To Find The Perfect

Choosing the right vessel to serve drinks in is an often overlooked part of drink service which requires just as much skill as crafting cocktails in the first place. Serveware can have a dramatic effect on the drinks in terms of their flavour, size, dilution and, crucially, their appearance. Cocktails need to look as good as they taste and, in this day and age, bartenders are constantly looking at new ways to serve drinks in order to make them more exciting and interesting for their guests. To help you brush up on your bartending skills at home, Head Bartender at Doctor Inks Curiosities in Exeter, Benjamin Smith, has outlined some classic pieces of glassware that no home bar should be without and how to source the more unusual glassware options.

HOW TO SOURCE UNCONVENTIONAL G L A S S W A R E At Doctor Inks Curiosities, we like to use unusual vessels to serve some of our drinks in order to stand out from the crowd and tell a story. shops and jumble sales are a great place to find cheap glasses that you’re unlikely to get anywhere else. Don’t panic if they don’t match, having an eclectic glassware collection can be an excellent ice breaker for your guests. Look in garden centres and home ware shops for small planters and tea light holders, they come in all shapes and sizes and materials just make sure they have a food safe finish and you’re good to go. Martini Glass

Nothing says ‘cocktail’ quite like a crystal clear Martini glass. One of the few types of glass that shares its name with the drink that is most often served in. Martini glasses should be chilled before use, ideally in a freezer, but you can fill the glass with crushed ice and water to achieve the same effect. Old Fashioned

Typically, an Old Fashioned glass is large with a thick and heavy base which is perfect if you make your Old Fashioned with a sugar cube. They usually have a capacity to the brim of around 32cl. This is another extremely versatile glass, being thick and durable means you can build cocktails straight in the glass without the need of additional mixing glasses. Coupe / Coupette

Originally used to serve sparkling wine, legend has it these curvaceous glasses were modelled on the left breast of French queen Marie Antoinette. Named after the protagonists of Dashiell Hammett’s novel The Thin Man. Nick is an alcoholic private investigator and his wife, Nora, is a wealthy heiress.
