Back on UK shores, we’ve visited some of the top ‘flashback’ bars featuring a 1950’s vintage funfair in Edinburgh, a hidden washouse in Manchester and a prohibition era speakeasy in Dublin. From cocktails to cakes, food blogger Victoria Pease has taken inspiration from this month’s cordial and shared her recipe for delicious strawberry and lime cupcakes for you to whisk up at home. With Halloween hauntingly making its way around, we’re embracing the spooky season as the Craft Cocktails Brothers share their secrets on how to create their show-stopping drinks.

REINVENTING RETRO COCKTAILS BY MATT LOOKER To some people, the mention of ‘cocktails’ doesn’t bring to mind Martinis, Old Fashioneds or Vodka Sours, but rather Sex On The Beaches, Tequila Sunrises and Strawberry Woo Woos. These often luminous libations are a product of a cocktail revolution that occurred throughout the 60s, 70s and 80s. At a time when society was changing with more free expression and even more free love, the drinks industry – like everything else at the time – rejected the stuffy traditions of old to pursue more exciting and imaginative ventures. This saw a boom in vibrant liqueurs and syrupy mixers in place of classic traditional spirits, appealing to drinkers enjoying an increasingly more playful pop culture. This burst of bright colours and sugary sweet Schnapps forms the basis of an embarrassingly naff era of mixology that the industry would now rather forget. By modern mixology standards, drinks like the Singapore Sling, the Grasshopper 5 - M UD D LE - T HE THR OWBACK E DITION

and the Harvey Wallbanger seem simplistic and gaudy, lacking the nuance and complexity of the craft cocktails produced today. But as jazz musicians and Terminators know all too well, sometimes the best way to be a revolutionary of the future is to make changes to the past. Reinventing original recipes, such as by adding spice and herbal flavours, or simply by toning down colour or substituting simple sweeteners, can produce some truly impressive drinks. Opposite are some examples, where you can compare the original formulae to my adapted versions. As always with cocktails, which version you prefer is just a matter of taste. 60ml Vodka 90ml Cranberry Juice 45ml Pink Grapefruit Juice

H O T & S A LT Y SEABREEZE 60ml Rock Sea Salt Flavoured Vodka 90ml Fresh Grapefruit Juice 30ml Wild Cranberry Liqueur 30ml Chilli Pepper Liqueur

METHOD Shake all ingredients with ice and strain into a salt-rimmed lowball glass filled with ice. Garnish with grapefruit peel.

METHOD Shake the first four ingredients with ice, strain into an ice-filled glass then float the last ingredient around the surface. Garnish with lemon peel.

METHOD Muddle the nectarines, add ice and the other ingredients and shake. Strain into an ice-filled long glass. Garnish with more nectarine.

Emerald Isle Imbibes Classics

IRIS H CR E A M L I QU EU R This smooth drink can always be found somewhere in your drink’s cabinet and there is no doubt it will be shared out at some point during the festive period. This skillful combination of Irish Whiskey and cream often acts as an alcoholic substitute for milk in coffee, or it is mixed with other drinks to add a boozy kick. Of course it can also simply be enjoyed on its own! Baileys was the world’s first cream liqueur and to this day every single bottle of Baileys Original Irish Cream is made in Ireland where it all began, sourcing every drop of cream from small local Irish family farms combined with world-class aged whiskies from distilleries across Ireland.

P O IT I N Pronounced pot-cheen, poitín is the original Irish craft spirit which came before whiskey. Made by fermenting barley, it was one of the first spirits to be distilled, beginning in approximately 584AD by Irish monks. At this time, a man’s reputation could be made or broken by the quality of the spirit, as it relied on the distiller’s expertise and craft. In 1661, after thousands of years, the concoction was outlawed by King Charles which led to all brewing to be conducted in secret, creating a black market which eventually caused the spirit to die out. However, distilleries including Glendalough are working hard to bring this forgotten art back.

Ireland is synonymous with drinking and dancing the night away so we take a look at some of the infamous Irish Spirits that shouldn’t be forgotten, paying perfect homage to the past.


DR UMSHANBO GUNPOWER IRISH GIN From the curious mind of PJ Rigney, Drumshanbo Gunpowder Irish Gin is slow-distilled by hand with oriental botanicals and gunpowder tea at The Shed Distillery in Drumshanbo in County Leitrim. Fusing both local Irish and oriental botanicals together, the distillery uses medieval copper pot stills for distillation. The gin is bottled and labelled at the distillery and combines vapour distillation of fresh Chinese lemons, kaffir limes and oriental grapefruits along with the intriguing gunpowder tea, and pot still distillation of eight other botanicals, ranging from Chinese star anise to local Drumshanbo meadowsweet.

SHOR TCRO SS GI N As Northern Ireland’s first award-winning craft distillery, Rademon Estate Distillery produce a classical gin with a twist. Utilising a 450L copper pot still and two enrichment columns, this allows them to perfectly tweak the levels of reflux when distilling to create a smooth finish with a custom still unique to Shortcross Gin. Using their surroundings on the estate for inspiration, they utilise as much from their grounds as possible by foraging for wild clover in the meadows, picking local green apples, elderflowers and elderberries to create the smooth and sweet flavours, while combining juniper, coriander, orange, cassia and water from their historic estate.

RUBYBLUE New Age Irish Spirits

Thanks to the surge in the need for something a little different in the alcohol industry, alongside the new wave of craft spirits, Ireland is beginning to see a rise in locally made craft spirits.

RubyBlue created Ireland’s first potato distilled vodka, alongside becoming the first small-batch spirit producer in Northern Ireland in 2010. Strawberry & L BY VICTORIA PEASE Inspired by Norfolk Cordial’s Strawberry and Lime fruit syrup, these surprisingly light cupcakes are filled with fresh berries and topped with a tangy cream cheese frosting spiked with citrussy lime. Perfect for serving alongside a glass of prosecco with a dash of Strawberry and Lime cordial.

140g unsalted butter, softened 140g caster sugar 85g ground almonds 3 eggs (beaten) 140g plain flour 1 tsp baking powder Zest of 1 lime 1 tbsp milk 150g strawberries (hulled and chopped into chunks)

75g unsalted butter (softened) 120g full fat cream cheese 420g icing sugar (sifted) Juice of ½ a lime 6 strawberries (sliced in two to decorate)

Lime Cupcakes V ic to r i a ’ s Recipe

Preheat the oven to 180oc/160oc fan and line a muffin tin with 12 paper cases. In a large bowl, beat together the butter and sugar using a handheld mixer until pale and creamy. Add the almonds and beat to combine then add the beaten eggs a little at a time. Add the flour and the baking powder and briefly beat into the cupcake mixture before adding the lime zest and milk. Beat again then fold through the strawberries. Divide the mixture between the 12 cupcake cases then bake in the oven for 20 to 25 minutes until golden brown. Remove from the oven to cool slightly then place the cakes on a wire rack to cool completely. To make the frosting, beat the butter and cream cheese together in a large bowl for 1 minute until creamy. Add half the icing sugar and beat for 1 minute until pale and creamy, then add the remaining icing sugar and beat until well combined .Add the lime juice and beat until soft. Scoop the frosting into a piping bag fitted with a round nozzle and pipe a large blob onto each cupcake. Top with half a sliced strawberry and serve. Cupcakes will keep for up to three days in an airtight container.

Spooktacular SERVES BY CRAFT COCKTAILS BROTHERS

Are you ready to inject some magic and mystery into your cocktail making? For Halloween season, we teamed up with the Craft Cocktails Brothers from Warsaw who are renowned for their hauntingly good tipples. With a passion for flare and form, they see the bar as a stage. Fine-rehearsing each cocktail and presenting it in show-stopping ways, Łukasz Dębowski and Damian Mielniczek have presented their spooky serves introducing us to the magic behind their mixology.

Thinking about Spook-tacular Serves, we see this as a surprise; something that will attract attention.

DIY drinks

When we are creating spectacular cocktails, we imagine the expression of our guests when they receive the finished drink. We are looking for that surprise and interest - big eyes and a wide smile this is the moment that we feel good in our job. Spectacular cocktails give us amazing interaction with the guests as we show that simple things can be interpreted and presented in an amazing way. To make our cocktails, we use techniques born in the kitchen and feelings born in our heart.

This cocktail is based on bourbon, vermouth and our homemade chocolate and orange. The cocktail is served with pliers which you have to use to destroy the ice to drink the cocktail.


Using the Elements

Edible Foam

A cocktail using gin, tarragon, plum syrup and lime which is served in a tin cup with almond flavour. Guests are given a magnifying glass and can sip the drink out of handmade metal straws.

This is a gin-based cocktail with sweet pear and lavender. Covered with an edible cloud of violet flavour, which is made from the soy lecithin and bubbles that form the aquarium. The cocktail is served in a closed cage and you need to catch the cloud to taste.

Spherification

Power of Magnets

One of the molecular techniques we use in cocktails is spherification. With this technique, we can create a transparent membrane in the middle of the ice to pour in liquid or something else. ‘The Cleaner’ is served in a witch sphere with a fried cricket inside to give the cocktail a thrill of excitement.

An unexpected technique that can be used to decorate cocktails is magnets which can be used to attach ornaments to a glass. The Sherry Man contains light rum, Sherry Pedro Ximenez and orange liqueur with an orange zest attached to a magnet. 1 8 - M U D D LE - THE THROWB AC K ED I TI O N

Mr Fogg’s launched in Mayfair in 2013 and is modelled on the Mayfair house in which Jules Verne’s famous adventurer Phileas Fogg lived, from his celebrated novel ‘Around the World in 80 Days. Mr Fogg’s is refined, but at the same time truly off-the-wall. Breathing liveliness and fun into Mayfair, visitors can encounter all the wonders of the world without stepping foot outside London. An open fireplace welcomes any weary traveller to its hearth and guests can gather around the piano for regular singalongs.
