Ingredients: Wet 2 1/2 Tbsp Unsalted butter, melted 1 Tbsp +1 tsp Buttermilk (regular milk will work) 2 Tbsp Grapeseed oil (or other neutral oil) ¼ tsp Vanilla extract 1 Large egg Desired dose of CAMP Raindrops 1:1 tincture Dry ½ cup Sugar 1/3cup +2 tsp Cake flour 2 Tbsp + 2 tsp Cocoa powder ½ tsp Baking powder ½ tsp Kosher salt 3 Tbsp Mini chocolate chips Directions: Find your best 11 ounce mugs and set aside. EDIBLES 101 Marijuana edibles are cannabinoid-infused food products that are consumed for medicinal and recreational effects. Edibles have become an increasingly popular method of cannabis consumption, especially for people who do not want to smoke or vaporize flowers. It is estimated that edible sales will account for up to 40% of all cannabis sales in the Nevada adult-use market. With the increasing popularity of edibles, it is important for consumers to understand how they work in the body, how their onset and duration differs from inhalation (smoking and vaping) usage, and how to select an appropriate dosage. One common misconception is that edibles are safer than smoking. While edibles can provide patients a great alternative to smoking, the effects from THC and other cannabinoids can be profoundly different from those experienced when smoking. Unfortunately, many consumers are unaware of this, which has led to some adverse reactions from people ingesting too much THC. There are three very important things to remember about edibles: they take significantly longer to produce noticeable effects, these effects can last much longer, and can be considerably more intense than those experienced by smoking or vaping. The most abundant compound in cannabis is tetrahydrocannabinolic acid (THCA). THCA possesses some medicinal properties, but is non-psychoactive. Following heating or exposure to UV light, THCA is decarboxylated to form delta-9-THC (Δ9-THC). Δ9-THC is psychoactive and plays a significant role in producing the high associated with cannabis consumption. During smoking, heat decarboxylates THCA and the newly formed Δ9-THC can be readily absorbed through the lungs. Once Δ9-THC is in the bloodstream, it travels to cannabinoid receptors (CB1 and CB2) to produce various medicinal and psychoactive effects. The effects from smoking are rapid and tend to peak about 10 minutes following inhalation and begin to wear off over the next 30 to 60 minutes. The process for edibles is considerably

different. First, cannabinoids are separated from raw cannabis flowers using a variety of extraction techniques (CO2, butane, distillation, cooking oils, etc.). During the extraction process, heat is applied to decarboxylate cannabinoids. The cannabinoid extract, which is now predominantly Δ9-THC, is then cooked or baked into a food product. After ingestion, the edible goes through the digestive tract and the decarboxylated cannabinoids are metabolized in the liver. While in the liver, Δ9-THC is converted into 11-hydroxy-THC (11-OH-THC), which is released into the bloodstream and travels to interact with CB1 and CB2 receptors. 11-OH-THC can cross the blood-brain barrier more easily than Δ9-THC and has been described as 2-10 times more potent than Δ9-THC. For edibles that go through the digestive tract, the onset of the more pronounced effects usually take 45 minutes to 2 hours. Since 11-OH-THC more easily passes through the blood brain barrier, effects tend to be more intense and can last anywhere between 3 and 8 hours. Lozenges, tinctures, and sprays are other types of cannabis-infused products typically associated with the term edibles. These products enter the bloodstream through buccal absorption in the mouth and, because they are effectively directly absorbed into the bloodstream, produce similar effects to smoking or vaping. Lozenges, tinctures, and sprays are decarboxylated during production so they contain activated cannabinoids including Δ9-THC. During consumption, some of the Δ9-THC is processed through the digestive tract to produce 11-OH-THC, but the majority remains as Δ9-THC. Since most of the cannabinoids do not get metabolized, the effects can be felt faster than edibles that travel through the stomach. The effects of lozenges, tinctures, and sprays can last longer than smoking or vaping, most likely due to the presence of some 11-OH-THC and an extended release effect, introducing cannabinoids into the bloodstream over a much longer period than smoking. Another important consideration when comparing the effects of smoking and
edibles is the presence of terpenes. Terpenes are the chemicals that give cannabis its flavors and scents. They also play a critical role in producing strain-specific effects such as making a person feel sleepy, euphoric, hungry, energetic, etc. Cannabis flowers can be rich in terpenes, but edibles contain virtually none since they are lost during the extraction and decarboxylation process. The absence of terpenes also contributes to the different type of "high" most people experience when using edibles versus smoking. Edibles tend to produce more of a body high rather than a cerebral head high; however, this can differ from patient to patient. Unfortunately, some consumers have experienced adverse events with edibles. In almost all cases, the patient ingested too much Δ9-THC and potentially other cannabinoids. Reported effects from over consumption range from lethargy and sleepiness to irritability and disorientation. It is important to give the edible enough time to reach the bloodstream before deciding to consume a second dose. A depiction of the general effects of these consumption methods and the 'highness' effect experienced is provided in Figure 1. Smoking induces a rapid high, which dissipates in a relatively short amount of time. On the other hand, edibles that pass through the stomach take much longer to produce noticeable effects, but this high can last longer and be more intense than smoking. There are many variables that influence how a person responds to edibles. Because each person is different, it is very important to educate consumers. A first-time user of edibles needs to start off with a lower dose in order to find the minimum dose necessary to achieve the desired effect. peaking of evolving, I have recently been experimenting with a new (to me, at least) way of ingesting the cannabis which I love so much. I have always found that standard methods of consumption served me just fine; igniting sweet flowers and inhaling the result seemed to me to be the alpha and omega of imbibing marijuana. It has been my experience that most people in this life are either drinkers or they smoke weed. Sure, you might have a beer to cut cottonmouth, but most of us have a preference one way or the other. In true Einstein mode, I found myself wondering about a possible hybrid of the two activities, and got really excited! This is tragic on a few levels, I know. However, I know me and I know that my underutilized sense of curiosity had to be satisfied on this matter, so off to work I went. Now, let me tell you about myself in a traditional dispensary. The phrases “kid in a candy store” and “bull in a china shop” are both equally applicable in describing my shopping behavior. I am the king of the impulse buy--Amazon sends me love letters. Flower is important, so I generally would show up knowing exactly which strain I wanted and how much quantity I required. The problem comes when I have a few extra dollars and want to try something different. Too many choices! Do I want some gummies? Some medicated chocolate? A suppository, perhaps. Of late, due to all of the viral nonsense going around, I have begun exploring home delivery options to obtain my product. I absolutely love it, and I will tell you why: I generally get what I need inside of two hours, and it is difficult to overspend beyond your budget, assuming that you do the necessary due diligence. Additionally, a menu tells you exactly what is and isn’t available, so if you are looking to try something new, there is no reason to be surprised by anything, So! Allow me to catch everybody up as to the parameters of my experiment. In order to make this shit as scientific as possible, I instituted some protocols. I purchased four different brands of infused beverages. Given my status as a marijuana-smoking legend, my tolerance is already pretty high, so to level the playing field, I decided on a six-hour marijuana fast prior to drinking my test subjects (I like to imagine them screaming as I drink them). I will admit to a little bit of anxiety prior to consumption. First, I am absolutely revolted by sports drinks like Gatorade or Powerade; to me, they taste like recycled, flavored sweat. Second, again due to my high tolerance, I didn’t think that 5 mg of THC would accomplish anything for me. Undeterred, I plunged into the void because that

is what I do. Here is what I found. Please note: I am not going to use any product names here, because they aren’t paying me and I do absolutely nothing for free. Rather, this is about the experience and results of consumption, not on the label itself. Onward. Flavor: I am not a big fan of unflavored malt beverages. White Claw does nothing for me, nor does Mike’s Hard Lemonade or any other consumables of that variety. My first fear, that the drinks would taste like electrolytes (it’s what plants crave!) and ass were misplaced. The cucumber flavor had a mild cucumber kick to it; the mixed berry even more so. I thought that the citrus tasted like battery acid, so I wouldn’t likely buy that again. Overall, I was pleased by the flavor palate that I experienced. If you, like me, were a child of the 90s, the best comparison I can make is to Zima, the original flavorless malt beverage. You can draw your own conclusions here. Effect: Talk about profiles in disappointment. I guess that I shouldn’t be surprised, given my ever mentioned relatively-high tolerance levels. However, due to my previously-mentioned inborn curiosity, I did a little research on the company whose product I tried. Apparently, they do receive regular feedback on providing a product with a little more zip to it, but my understanding is that micro-dosing is a philosophy with these folks and they like the low levels of THC. That is the nice thing about business: if people want something badly enough, somebody else will provide it for them. For a price. It is called consumerism, and this is what makes our country great! Right? As such, I see it as a matter of time until higher-dose marijuana juice boxes are on the market. I do see this becoming a potential problem for novices, though. Have you ever overdosed or seen somebody overdose on edibles? It’s not pretty, is it. Have you ever tried the adult beverage Cisco? It is another malted liquor flavored with tears and bad feelings. Their advertising slogan is ”Cisco will make a new man out of you, and he wants some, too!” Besides technicolored vomit and the legendary two-day hangover, I see high-powered marijuana drinks as being a similar problem. So, the results of my experiment are fairly clear-cut: marijuanabased beverages are not yet ready for prime time. But do not despair! As mentioned earlier, it is just a matter of time until somebody comes up with a drink that is 10 to 15% THC. Visiting Black & Blue Diner, we were struck by the sheer amount of menu options available. Breakfast (served all day) offers a plethora of favorites from omelets to Huevos Taquitos, breakfast bowls to griddle treats like the French Toast Waffle (which sounds as decadent as it tastes). Vegan breakfast offerings include plant-based spins on dishes like Steak and Eggs and the Breakfast Sandwich. Lunch and dinner options range from chicken, beef, Shrimp N Grits to the highly praised burgers (patty quantities span single all the way up to “You’re Crazy”- a five patty burger). New York seasoned fries, salads, and a vegan version of practically everything offered on the non-vegan portion of the menu make for a harmonious dining experience with mixed meat and non-meat-eating company. Doe's Cheesecake
Doe’s Cheesecake is hand crafted with lemon zested love. And, they do not machine whip a lot of air into it. Owner Barry Levan’s mother, Doe made the amazing lemon zested cheesecake at home and his dad, Maur served it for about 45 years in dining rooms of clubs and hotels he managed in New York and Pennsylvania. Levan began making it in Nevada in 2010 and it was served in the dining room at David Walley's Hot Springs Resort by three different chefs for over 10 years. Levan was back home for Thanksgiving in 2012 and he said to his dad, "Mom made this cheesecake at home but I know it came from you, so what's the story?" Levan’s dad told him that when he graduated from college at Penn State with a major in Hotel and Restaurant Administration, his first job was as a steward at a hotel in Philadelphia located next door to the Art Museum where Rocky jogs up and down the steps and this cheesecake came from the executive chef who was Austrian and to whom it was handed down from his grandmother. It's the real thing and it has a real history going back a very long time.
Crysi's Cake Scene, based in the Minden/Gardnerville area was established in 2018 by Crystal Manjarrez. Crystal spent many years baking for fun and creating amazing goodies for friends and family. Crystal, a Northern Nevada local is originally from Riverside, California but has called Gardnerville home for the last twelve years. She loves the local community and the support of local residents.
Currently, Doe's Cheesecake is made in a shared kitchen in Gardnerville, NV. Right now, the kitchen is shared with Mitch’s Vegan Jerky who is making vegan jerky from tofu, and Fresh Baked Paleo, a mother and daughter team making gluten free baked goods. Crystal has worked with an array of local businesses and events including Silver State Pageants doing a card donation for their raffle, pop-up bake sales with Ping Pow Poom, with CoCoMoes delivering goods to Frida's Grocery, and pop-up themed events at craft fairs for The Chateau at Gardnerville. Participating in local events within a small community is very helpful as it gives Crystal the ability to put a face to a name and easily bond with possible customers. She believes wholeheartedly in supporting other local businesses and those in Crystal’s network come together to help each other as a small business community. Since the pandemic started, Crysi’s Cake Scene, like other businesses has made some updates to their business model. They offer curbside delivery to keep contact at a minimum and use proper PPE when making and handling any and all products or dealing with customers. They occasionally do pop-up bake sales for certain holidays or times of the year. When asked what sets Crysi’s Cake Scene apart from other bakers, Crystal replied “ We do a lot of products customizable, whether that be for cakes or cupcakes, we offer more flavors, endless design and even textures.” The chance to work in a licensed cannabis facility is something Crystal would love the opportunity to entertain. EDIBLES VS. SMOKEABLES Even with all the different products out there, patient survey data found that smoking flower was still the most commonly used method of cannabis consumption followed by edibles. Yet beyond preference, what is the best way to consume cannabis in the scientific and medical worlds? Well, it depends on the situation. Here is what we know about the absorption rates, safety, dosages, bioavailability, and specific effects of either inhaling or eating cannabis. This information can enhance the comfort and efficacy of cannabis-based medicines and allow safe and effective prescribing practices within the health care community. As members of the industry, it can be helpful to revise this stuff to maximize consumer benefit and reduce potential mishaps that deter people from this potentially therapeutic plant. The number of puffs, duration, hold time, and inhalation volume all greatly influence THC exposure and absorption when smoking. Also, THC decomposes with time, and exposure to air, heat, or light, so the further down the shelf-life means the further the decline in THC absorption. Regardless, smoking is the most rapid and most efficient method of administration. The central nervous system effects of smoking a joint, blunt, bong/bubbler, pipe or vape can be felt in less than a minute after consumption and lasts up to two hours. Whereas consuming capsules, tablets, baked goods, oils, and teas can take on average 30 minutes to an hour to feel the effects. Although edible cannabis takes longer to metabolize, edibles have a longer-lasting effect (7-12 hours) and are arguably the most discrete and convenient method. Inhaling cannabis may be the quickest method of administration, though smoking may lead to a greater risk of respiratory damage, bronchitis, cough, and/or phlegm. Whether a joint, blunt, bong/bubbler, pipe, or vape is used, there is only a difference between smoking concentrates from smoking flowers. The major differences depending on the constituents extracted and additives in the vapes. Another difference between smoke and vaporizers is that smoke produces pyrolytic compounds that occur from lighting it up, although this does not mean vapes are a safer option. Edible cannabis eliminates the concern for respiratory damage. However, edibles take longer to metabolize and therefore delayed effects, the chances of overconsumption leading to negative psychotic reactions is far greater. Due to this, edibles are associated with a higher number of emergency hospital visits for intoxication, psychiatric, and gastrointestinal complaints. In the case of dosing edibles, it is recommended that the partaker wait 2 hours before increasing the dose. Not surprisingly, when using inhalation as the preferred route of administration, it can be difficult to provide precise dosing beyond preference. Baked or candied edibles can be more difficult to standardize and less precise. Also, some of the constituents beyond THC or CBD can be lost during the process of making certain edibles. So to date, capsules are the most exact and precise dosing method of all, as well as the most highly tolerated. Researchers found that taking them on an empty stomach will produce quicker results, yet eating a high-fat diet may make you higher but you will have to wait. Even with the right dosage, how much of the THC that is available to

the body differs depending on which method you use. That is, inhaling cannabis results in a higher bioavailability or concentrations of THC in the bloodstream than if an edible was consumed. The body will be able to process about 10-37% of total THC content when inhaled, compared to about 3-6% THC bioavailability when eaten. This might come as a surprise to some, as edibles can sometimes feel stronger than inhaled cannabis. If you are interested in knowing why that might be, I must explain the first pass metabolism. When a drug or substance is eaten, it must first pass into the liver, where much of the original substance is broken down and destroyed before it circulates throughout the body. It can be difficult to pinpoint the best way to ingest cannabis when there are so many variables involved with the bioavailability of THC. For example, we now know there is a difference in cannabinoid absorption between males and females (given mg/kg dosages). Further, one small Canadian study (28 participants) conducted in 2019 found that women had higher THC levels than the men in the study. To complicate things further, THC absorption is even dependent on when and how much food was eaten during the time of cannabis ingestion. That same Canadian study found that a high-fat meal before ingesting a 10 mg THC capsule, increased THC bioavailability, but at a much slower rate than at a fasted state. On the contrary, if the effects need to be felt quicker, consuming capsules on an empty state may be more advantageous although adverse events (dizziness, drowsiness, and fatigue are more common). With more repeatable and precise studies including important variables, we might be able to understand some of the frequently asked cannabis questions in the future. In a comprehensive 2020 study, 670 people over 2306 smoke sessions tracked the effects of cannabis flower consumption over 2.5 years. In 95.51% of sessions, there was a decrease (by 3-4 points on an 11 point scale) in mood-related symptoms of agitation/irritability, anxiety, and common stress, regardless of the type (hybrid, sativa, or indica). Although high THC levels were acknowledged as the predictor of symptom relief. As mentioned, smoking cannabis had a higher level of THC bioavailability, which is why smoking would be preferred in this situation. Smoking is the most common method, and also the most rapid and most efficient method of THC uptake. Still, it is more difficult to accidentally overindulge or a hospital situation. Smoking allows for more constituent variation and less processing in general. Edibles are the most discrete and convenient method that can be felt for a longer time. The delayed effects of eating cannabis can be improved by consuming on an empty stomach. Edibles are safer for the respiratory system, and capsules are most ideal for precise dosing. What about the children? This is the first question asked when States are looking to legalize or decriminalize cannabis. What about the children? Safety for our children should always be our number one concern. Cannabis laws make sure that companies and products are nowhere near our children, where they go to school, and where they play. But what happens when our children experiment with cannabis and get caught? Currently, Nevada minors with a first-time cannabis offense are sent to juvenile detention. In February 2021 The Sentencing Project reported that racial disparities in youth incarceration persists. Nevada comes in at number eight in youth incarceration rates, well above the national average. A study co-authored by MIT economist Joseph Doyle found that 40 percent of kids who went into juvenile detention ended up in prison by the age of 25. According to this study published in the Quarterly Journal of Economics, pulling troubled young people out of school and confining them in close quarters with other troubled young people is a great way to groom future criminals. The study also found that kids who went into juvenile detention were very unlikely to return to high school, crippling their ability to achieve a better life. Bill BDR 360 proposes that no minor under the age of 19 will be detained and sent to juvenile detention center for a first-time cannabis offense. The Clark County Nevada Department of Juvenile Justice Services has released a report showing that since 2016 the amount of kids charged with [cannabis] possession has gone up each year from 952 charges in 2016 to 1,009 in 2019.

The Juvenile Justice Report shows that Possession of Marijuana is consistently the number two reason our community's children get arrested. Those children being arrested are 50 percent more likely to be from a black or brown community, even though statistics show there is no significant difference in drug experimentation between youth from different races. When kids are caught illegally possessing tobacco or alcohol, we do not send these children to juvenile detention. So why send them to juvenile detention for cannabis possession? Cannabis is now legal for adults to use, just like tobacco and alcohol. When we send minors under the age of 19 to juvenile detention for cannabis offenses, we not only hurt the future of that child and their family, we also hurt the future of our cities and use precious resources that could be applied to build our community, not tear it apart. So, what about the children? We need to protect all of our children in Nevada, even if those children are curious about cannabis. When the laws do more damage than the crime, we are no longer a civilized society, we’re a society of selective justice with no regard for those less fortunate. If we truly are concerned about our future generations, then we must pass the Juvenile Protection Bill BDR 360. CEIC is seizing this moment that we find ourselves in; this moment of uncertainty and unease. But instead of allowing it to cripple us, it’s powering us to action. It’s powering us to fight the inequities that have become commonplace in the lives of our community members. It’s powering us to rail against those who seek to perpetuate a status quo that hasn’t worked in a long time. We will not equivocate in our work to greater equity and justice to Black people, especially those seeking to be in the cannabis industry. with Sarah Jane Believe it or not, I wasn’t always a cannabis user until about 10 years ago, when I found myself with chronic insomnia. I tried everything in the book to help me sleep, from Benzodiazepines to antipsychotics, melatonin to lavender oil, regular therapy and cognitive behavioral therapy…but nothing worked. Except weed! More specifically, edibles. Make what jokes you will about brownies, edibles have the ability to knock me out like nothing else. An online search for the most potent recipe led me to the aptly-named Coma Cookies, made with the even more aptly named Blackout Butter. Basically, this recipe calls for a minimum ratio of one ounce dried weed to 8oz. butter – but I would often add even more (depending on how much shake and trim I could score)! Moreover, I would use the highest fat-content butter I could find as supposedly THC binds to fat molecules, so the more of those, the more effective. But what do I know?! I’m just trying to get some sleep, not a chemistry degree! But I wasn’t taking any chances, and I’d simmer the butter and weed for HOURS on low heat- the longer, the better, until the butter became an evil dark-green-black shade the color of oblivion. Then I’d mix that into the cookie dough, and whip up a batch of sweet relief. And let me tell you, IT WORKED! I’d eat a small cookie before bed, and zonk right out. I did this for years, and the best part was, I could even travel with my medicine, since it just looked like Grandma’s homemade cookies. I had one of the most enjoyable transatlantic flights of my life that way – what I’d been dreading as a miserable ordeal from Dublin to Newark to LAX to Vegas became a dream; I popped an edible in Ireland, and promptly zonked out, upright in my economy-class seat. Every few hours

I’d be gently woken by a flight attendant bringing me a hot meal, which I’d gobble down in classic stoner fashion before passing right back out again. When I woke up in Vegas, it was as if no time at all had passed – with only a pair of severely puffy ankles to indicate I’d just hurtled 5,000 miles through space and time without moving anything other than my jaws. But over time, I learned that edibles must be approached with caution! This revelation hit me a few years ago, when I hiked Mt. Whitney. At 14,505 feet, it’s the highest peak in the continental U.S., and the trail to the summit is about 11 miles with over 6,000 feet of elevation gain—so you have to get an early start if you wanna make it to the top and back in a single day! To that end, most hikers camp overnight at the trailhead. That way, you can just roll out of your sleeping bag and into your hiking boots, and hit the trail at whatever ungodly hour you choose. My friend and I set 3am as our departure time (!!), which for me meant waking at 2am in order to be ready. We parked our cars at the trailhead the night before, and hit the sack as early as possible, but it was still 10pm by the time I lay down. No problem – I can summit Mt. Whitney on 4 hours of sleep, as long as I get 4 hours of sleep! To ensure my ability to pass out and not lie awake worrying, I took a tiny nibble of a Coma Cookie just before bed – just enough to metabolize over the course of 4 hours, I figured. Sure enough, when my alarm went off four short hours later, I was clear headed and ready to roll. I got dressed, loaded my pack, dialed in my camera gear (of course I was shooting all this for my YouTube channel) and hit the trail bright and early. Well, actually, dark and early, since it was still well before sunrise!
All went well at first until only a mile or two into the hike, I started feeling really lightheaded. Uh-oh - altitude sickness!! It’s a very real problem at this elevation, and a serious one. In my prepping for the hike, I’d read that at the first signs of altitude sickness, one should immediately abort mission, turn around, and descend to a safe elevation – which, in my case, meant giving up my summit attempt and driving back home. Noooooo! I’d done so much prepping and planning for this hike (not to mention getting the permit, which can be difficult). I refused to give up! So I pushed on anyway, despite worsening symptoms: now, in addition to being dizzy, I was also flooded with a heavy, overwhelming drowsiness that was so consuming, I just wanted to wrap myself in my Mylar emergency blanket and crawl under a bush and sleeeeeeep. Double uh-oh! By now I was getting really worried, and seriously considering the fact that I was going to have to turn around and give up – and then it hit me: I wasn’t suffering the effects of altitude sickness, I was just high! As a KITE, I might add – apparently, the little bite of cookie I’d eaten had not been metabolized as I slept, and it was only when I began hiking, and my heart started pumping, that the effects kicked in. D’oh!!! The initial relief I experienced at realizing I wasn’t suffering from altitude sickness was short-lived, however. The unpleasant reality that I was facing another 9 or 10 miles, uphill, with a fog-shrouded brain and what felt like molasses coursing through my veins drowned out whatever joy I might have felt.
But crawling under a bush in my Mylar blankie really wasn’t an option, so I slogged on, determined, through the pitch black of a moonless Sierra night. I felt like one of those undersea explorers, waaay down at the very bottom of the ocean, floating through inky darkness filled with who-knows-what kind of mysterious creatures. The only light was the dim, watery circle of my headlamp on the path before me, and the only sounds were the occasional twig snapping underfoot, and my own huffing and puffing. After awhile, I guess I got high enough to where it actually became kind of fun – I started really imagining myself as an undersea explorer, safe and cozy in my bathysphere, looking out into a mysterious new world. Or no – I was an astronaut, floating through the farthest reaches of outer space in absolute stillness and peace! Either way, I wished I had Pink Floyd’s Dark Side of the Moon on my phone – it would have been the perfect soundtrack. Finally, after hiking along like this for what felt like forever, the first fingers of light started peeking up over the mountains to the east, and soon the pale pink and purple petals of dawn blossomed in the sky. Oh my GAWD!!! I’ve never really been what you would call an early riser, so watching a sunrise was a special treat for me – I hadn’t seen many of them, let alone from 10,000 feet in the middle of the Sierra Nevada. It was spectacular!! Now remember, throughout all of this I was filming everything for YouTube – and once the sun really started coming up, and the whole sky lit up with that fabulous dawn alpenglow. I’m afraid my commentary became a bit…well, a bit goofy. Remember the Double Rainbow guy? The crying hippie who filmed that double rainbow in the sky over Yosemite, and ended up becoming a viral sensation for his homespun enthusiasm (“Oh my God!! It’s so beautiful...”)? Yeah, I was that guy. It’s kind of cringey to watch….but funny. Alas, my high eventually wore off, and I had to suffer the remaining 17 miles of the hike in miserable sobriety, but at least I wasn’t sleepy anymore! That first part of the journey, in the darkness, when I was foggy and drowsy and dreaming of cuddling up with a bristlecone pine – that was no fun at all, and hiking in the sunshine, stone-cold sober, wasn’t bad in comparison. And at least now, I could focus better on shooting quality footage for my video, not just hours of me looking at a pebble on the shore of a lake going “WOWWWWW!”

Anyway, after that experience, I vowed to be more careful with edibles and nowadays, I just use a vaporizer to get a little buzz before bed, and it seems to work just fine. But I still have four Tupperware containers full of Coma Cookies in my fridge, and who knows? Next quarantine, I might come to really appreciate the stockpile!

REDUCING AND REPLACING OPIOIDS WITH CANNABIS OIL Including a Recipe for Cannabis Oil

Last week while hiking with my dogs in the hills above my home, I tripped-up on a divet, face-planted and fractured my ankle, with the ankle popping out of socket.
spectacular for how serious the injury was, reconfirming what an excellent anti-inflammatory cannabis is.
As with my last fracture and broken bone prior, I was determined to use only cannabis oil and shun the pharmaceuticals once again.
Surgery included plates and pins, and promised unimaginable pain. I was out of cannabis oil, about to make a batch soon, scraping the last bit from the little jar given to me by a friend, who was making me another batch. (As far as we know, we are the only two in our community who know how to make it, leaving me eternally grateful for my friend and her skills.) The surgeon set me up in my hospital room with a cocktail of strong painkillers, including opioids, in an IV drip. As soon as I came to from surgery they gave me a dose - being aware that I was taking the cannabis oil. It didn’t take long to realize it was way too much with the oil. I passed out, literally, for a few hours, then never did the on-demand drip again.
As noted in my Daily Dose: Serious Wound Care with a Cannabis Protocol, a Harvard study noted that cannabis was not strong enough to quell broken bone pain. They were wrong. By the time we arrived at the emergency room I had already taken four of my own cannabis oil/guanabana/coconut capsules. These are my nighttime capsules, not strong enough for severe pain. (Guanabana is a South American superfood, also an immune system builder) They gave me a low-dose shot of morphine, after I explained to the doctor and nurse the cannabis oil will enhance anything else I do, and pharma should be reduced. Sure enough, in no time I felt completely wasted on the morphine. My body felt numb, and my head felt as though it was in a bubble. No clarity or focus, no being or feeling present, as with cannabis. I was also nauseous, feeling as though I would throw up. It really felt as though I could have done a lower dose of the morphine, but dosing is the greatest challenge - especially when you are telling medical staff for the first time that cannabis is an analgesic. How would they even know how to adjust dosage?

When the surgeon came in at the end of the day he was shocked to see that I didn’t need the cocktail, and was only doing one-third of the Tramadol (opioid) prescribed. Now he knows. In the meantime, I scrimped on the oil, taking it in tandem with Tramadol. The surgeon prescribed a 300 milligram dose to start, and then would raise it, as needed. Done in tandem with the oil, I found I only needed to take 100 milligrams with a piece of thick oil about the size of two grains of rice; reducing the opioids by onethird. A welcomed outcome. As detailed in an investigation by the Journal of the Association of Medicine (JAMA), When a state legalizes cannabis, opioid use drops substantially. Even if someone is just smoking, the efficacy of the pharmaceutical is raised. Even if they are eating an edible just to get high, they won’t need as much pain killers for that time period. Many teaching moments. This isn’t my first rodeo. My last fracture on the other foot was less than a year ago; the break before that with a serious wound was a little over a year ago. I’m happy to educate by example, but this is getting rediculous. As said, cannabis is an enhancer and can increase the efficacy of whatever else you are doing, including smoking while ingesting. The cannabis oil does the trick as far as pain, swelling,
inflammation, and tissue regeneration - not to mention, help with sleep, appetite, and more. As far as smoking on top of ingesting, it adds a much needed lift immediately. I say lift, because that’s where the word high comes from. We are not stoned, we are lifted. Stoned comes from the alcohol culture and has nothing to do with the way we feel while medicating, or medicating to recreate. And it has nothing to do with what happens physiologically, as endorphins are lifted and dopamine is created in the brain. So topping off with smoking or vaporizing cannabis adds another layer of relief. The cannabis oil also deals with any negative side effects of the pharma. With opioid use comes constipation and bloating following surgery. In the past, when I’ve come out from anesthesia, I typically throw up, as is common. But none of that happens when I take cannabis oil prior to surgery. I also have the anesthesiologist come in and tell him how it all works, but it’s hard to say how it works in tandem with anesthesthesia. The common thread is that medical professionals just do not understand how strong the oil is and how beneficial the plant itself is. This is my third time going under using cannabis oil, and there have been no complications. Chamomile also works well in tandem with cannabis. I typically have chamomile/coconut capsules on hand, but was out of them this time around, as well. Chamomile takes the edge off the high amounts of THC found in the oil (as does CBD), while calming anxiety - something I suffer from. Chamomile also acts as an antidepressant (per study) and raises endorphins, giving you a general overall feeling of well-being. Topical lotions add to the overall effect. I’m lucky enough to have had a bottle of CBD and citrus body lotion, made in collaboration with Honey Pot and Laganja Estranja, at the hospital and on my bedside at home. Citrus combats stress, anxiety and depression, and gives a lift just by deeply inhaling what’s called the limonene terpene.
Cannabis Oil Recipe 4 cups ground plant material (small buds, stem and leaf – whole plant) 1 liter grain alcohol (high proof, 90 percentile) Cover the ground plant material with the solvent, and let soak for up to five minutes.* Strain in a fine mesh or sheet and pour into a rice cooker, set it to warm, leave the lid open. It should take between three to four hours to cook down. There may be plant matter in brown chunks, do not use this. Tilt the rice cooker insert to pool the oil, and carefully uptake from the clear liquid. You will have a thick, brown resin remaining. These are the essential oils of the plant, where the medicine is. Just prior to the final reduction, add two tablespoons of coconut oil to the mix. This will keep it from burning (ruining the medicine). Adding coconut is also a good delivery into the bloodstream. I take a whiff of the mixture, as you can smell the alcohol if it hasn’t cooked off. With the coconut in there, it can sit a bit to make sure the alcohol has completely evaporated. Using a measured pipette, using a capsule holder, fill caps with 1 milliliter of the mixture. If there is any alcohol (or water from weak solvent) in the mix, the capsule will melt. Test by filling one up and checking. Keep in the refrigerator to solidify and keep fresh. This essential oil is precious, use it in a timely manner for freshness and efficacy. *Longer soaks have shown lower numbers of beneficial compounds, diluted by too much chlorophyll. I also had a bottle of Mary’s Medicinals CBD oil to top everything off for a little extra effect. CBD alone is good for pain relief, but this serious pain needs a whole plant, strong oil to be ingested. My friend dropped off a bottle of 30 cannabis capsules, with a strong dose of oil in each - about the size of two grains of rice. I ended up taking two every three to four hours, only adding one hundred milligrams of Tramadol, as needed. The thing is, I really haven’t felt any great pain. I’ve been more afraid of the anticipation of the pain that could come, knowing what all the hardware looks like under my skin. The most I’ve felt is a slight stinging until I can medicate. The cannabis oil takes about the same time to work as the Tramadol, about 20 minutes.

ad a wild ride planned out for this month, then I got word that we are focusing (which for many of us is a feat in itself) on edibles and cooking with cannabis. That’s something that I figured I would not be addressing any time soon, but since I am, let me tell you a tale.
I was home minding my business when a friend stopped by with some pot concoction she had made. Apparently, Robin, (my friend) has been involved with this for some time now and is efficient at it. She produced two jars of some pretty wild looking stuff and recommended I give a small dollop of it a try. Robin being familiar with my various muscle and joint issues (bodily joints – I’ve no issue with rolling a bomber now and then) suggested this will stop the pain, allow me a free and clear mind, and even a sweet body high; I was convinced. Trusting her as I do, I took a ‘dollop’ and sat back to play a bit of guitar while I found out whether this was a useful product for me to consider further dosing of. Before I expound upon the minutes of playing while waiting let me explain a ‘dollop’ to you. I’d say about the size of a sweet pea. Taste? I didn’t find it offensive or even bad. Would I say it tasted good? Not necessarily but without hesitation I can say it was not unpleasant and certainly edible. The consistency of her magical mud was that of a heavy cannabutter with a golden green color. I took my dollop in the form of half a magic mud muffin. The second and many subsequent times I’ve used the magic mud, I took it right out of the container with a shot of cran-grape as a chaser. So, there I was playing guitar while Robin frittered about in the kitchen. I played for some time before I came to realize I had played the same song about 4 times at different speeds all the while thinking it was the first time I’d done that song. I had no pain, no worries, and actually sounded good on the guitar. Of course, before the day was out, I had sampled (someone had to) the batches of bitty brownies and magic mud muffins Robin made with this concoction she created. All of which are worth their weight in gold and wish I could recommend where to buy them, but alas, she only makes them when asked

and takes donations to help make another batch. The taxman cometh otherwise. I guess if you contact me, I can turn you on to some of the things POE Creations Foundation has to offer including magical mini mud muffins. By the end of the night and after a half a brownie, half a muffin, and a dollop of pure magical mud, which by the way, she also refers to as, POE’s Ohmazing Emulsion, a 100% hemp product, I was in no pain, feeling very imaginative, and not allowing anything of the world interfere with my orgasmic guitar riffs. Oh, I mainly play rhythm but not on this night. The next morning proved to be a much better one than the day before. I questioned the process used and why her product has such a cleaner unfoggy effect than similar oils? She said she uses decarboxylation. Ok, that was a new one for me. According to my sources, decarboxylation is a chemical reaction that removes a carboxyl group and releases carbon dioxide. Usually, decarboxylation refers to a reaction of carboxylic acids, removing a carbon atom from a carbon chain. The reverse process, which is the first chemical step in photosynthesis, is called carboxylation, the addition of CO2 to a compound. If I’ve not lost you let me just say, her product is made from the whole hemp plant, rather than over processing it, thereby including high levels of beneficial cannabinoids and terpenes. Need I add that this process is the only one that does
not have any known adverse effects on the internal organs, something that I’m glad to know at my age. Decarboxylating the cannabinoids by cooking at a low temperature in organic coconut oil efficiently preserves and bonds fatty acids to the delicate cannabinoids. This allows easy passage through the blood brain barrier upon consumption. In other words, you get more benefits and faster. Contrariwise in the CBD oil extraction method, lab tests show that 99% of the terpenes are destroyed. Robin assures me that she does not extract the oil from the hemp plant thereby encouraging the "entourage effect", which highlights the exponential power in the full spectrum of the plant and preserves all terpenes and cannabinoids. I’ve experienced two forms of her magic mud concoction, one of which had a consistency similar to something I grew up around working as a heavy equipment operator on jobs with pipe fitters and welders, tobacco dip. A dip is placed between the cheek and the teeth allowing the nicotine to be absorbed into the body. No, I didn’t dip it, tobacco is something I don’t enjoy. This particular concoction, however, had that slight grainy texture but not course or uncomfortable and fortunately you can swallow it and I totally would not suggest swallowing tobacco dip juice or the tobacco. Once I realized that edibles were useful, I got a jar of hers and occasionally picked something up from the dispensaries. I’ve since taken my pinch (could be a dollop) with my cran-grape, eaten a brownie or two, continue to play music, and let life be sweet and fairly painless without a mental high that interferes with other daily activities. It also proves to be something that you can take without someone asking, “You stoned?” Thank you, Robin and all those pioneers in the field of edibles. In my day, you smoked, got stoned, avoided the cops, and played music freely. There were few edibles other than slipping some ground pot in the spaghetti sauce or creating a batch of pot brownies. We never figured it would be something that would be widely used for its medical benefits – look where we are today. I appreciate these changes in the times. Smoke is legal, people look for, purchase, and eat a variety of foods made with THC and other properties of the plant for recreation and medical purposes, and all’s well in my world. CANNABUSHI An Infusion Series Welcome back to another chapter in the infused culinary arts! Hope you all enjoyed last month's issue. This month we're going GREEN! That's because it's March Madness as well as St. Patrick's Day this month. So to celebrate, I'm going to share something created last year. Plus, something new for all of us! Seeing as how it's an Irish thing, I'll be making something for all your drinking needs...just with a twist. "Corned Beef" style like back in the day. Seeing as how I come from the family of McGraw let's do it right. Speaking of twists. Let me twist one up and let's get to it!
Erin Go Bragh Roll Pre-cooked (steamed) cabbage leaves 4-5 potatoes or more of your choice 2 lbs corned beef 1 cups water , maybe less depending on size of your slow cooker 3 cloves garlic , minced 1 bay leaf 1 stick cannabis infused butter 2 Tbsp cannabis infused sugar 2 Tbsp infused pink Himalayan salt 2 Tbsp apple cider vinegar 1/2 tsp ground black pepper ¼ cup cannabis infused sunflower oil 1 bottle of your favorite vodka 2-3 cans of kiwi apple Red Bull ½ cup of infused simple syrup 2-3 cans of Sprite First, cook your corned beef in a slow cooker. For this, add the corned beef, bay leaf, Garlic, Himalayan salt, apple cider vinegar, black pepper, infused sunflower oil and half a stick of the cannabis infused butter. Let this cook on low for 4-5 hours checking it halfway to stir. Make it with love and I assure you it will return the favor! (Be mindful of your temperature here) Low and slow while under 250°f. About an hour before the newly Infused corned beef is complete, grab some potatoes, peel the skins off and boil those until cooked. Add some regular salt to the water during boiling. After about 20-30 minutes, when the potatoes are done, stick

a fork inside one to test. Pour out the hot water and use your pot to make the mashed potatoes. Using a potato masher or mixer, start to mash up the cooked potatoes while adding some pepper, infused salt and infused cannabutter. Add a dash of milk/cream but not a lot. Put the mashed potatoes in the fridge and we will come back to it later. Your corned beef should be almost ready so this is a good time to tell you how I steam my cabbage leaves. I simply washed my cabbage, removed the core and placed some whole leaves in my crockpot to let them steam or steam them any way you like. You want the cabbage to be cooked but not over done. Grab a plate with a paper towel on it. Place your leaves on top while adding more paper towels to create layers in between. Let this cool to room temperature. Cover with some plastic wrap while you wait. Check your corned beef and yep, that does smell good. Now, cut some into ½ inch × ½ inch strips. Just make sure not to burn yourself. Plus don't forget the mashed potatoes in the fridge. Now that everything is complete. Place a nice sized square of plastic wrap onto your cutting board. Grab the leaves and put them onto your wrap. With a spoon or your clean hands, place small dollops in a horizontal line on the leaves. Place the strips of infused corned beef and gently push down towards the cutting board. Use your hands to "Roll it up!" Make sure you envelope all ingredients and use the plastic to keep it all together. Once rolled up, use your plastic wrap to keep it tight. You can even get more firm by twisting the ends of the plastic wrap and rolling it while pinching the ends like a sausage. Cut into six equal pieces and boom, you just made some infused Irish inspired sushi... You Go Bragh! Oh yeah this holiday is normally a good drinking one right???
Green Monster Shots In a shaker place some ice cubes in the bottom to around a third or halfway full. Pour 2.5 oz of your favorite vodka, 3 oz. of kiwi apple Red Bull, 2 oz. of infused simple syrup, and a splash of Sprite. Mix with a spoon and pour through a strainer or make a big batch of it because it's so good. Serve it over ice or as a shot. These are great tasting and infused so be careful. Please don't drink and drive. I hope you guys enjoyed the new recipes as much as I did. They definitely hit you hard so be safe. I just wanted to give a shout out to The High Budtenders! Crumble up the flower and place it on a baking sheet. Place in the oven for 60 minutes. When finished- set to the side. While the cannabis is in the oven, start the water boiling process and chop up the vegetables. By this time, the water should be ready for the pasta- cook for the amount of time that it states on the package. Season and saute your vegetables in a pan on medium/medium high until they are cooked to your preference. Don’t forget the cooking pasta! Set that to the side if finished before the vegetables. When the vegetables are finished, lower the temperature to low and add the pasta sauce. Let that warm and then finally- add the cannabis. Stir and enjoy! Plants are essential to life- they help cleanse air, mood, energy, and so much. They are nature's smile and the body's electricity. When plants are consumed as food and medicine, the body begins to heal and transform in ways unimaginable. Take it from a cannabis loving vegan, plants give us everything we need. My mission is to move everyone closer to plants and that’s what this piece is all about. We are taught to eat the animal, but are never told that the animal gets its nutrients from plants. Instead, we grow up thinking that we must eat animals to survive when many of the animals humans eat, only eat plants and grains to survive. We are lied to in the food pyramids. They show animal/meat for protein when most of the animals consume plants to get theirs. We don’t need food that came from parents, we can eat plants and be better than fine! There are some medical/health conditions and situations that won’t allow for a plant based diet. Always talk with your doctor if interested in how a plant based diet will work for you. For many, a plant based diet is very doable and very necessary, so here are three, plant on plant recipes- completely animal free and animal product free. There are a few twists though. Many think that cannabis infused means oil and other extracted forms. Below, you’ll see how to use cannabis flower, with zero extractions, for those plant based cannabis infused recipes.

Terpene Salsa, Infused with Raw CBD Flower
INGREDIENTS: 3 tomatoes 1/4 medium onion 1/4 medium green pepper 2 pinches of chopped cilantro 2 grams of raw and crumbled up CBD flower 1/2 lemon Salt INSTRUCTIONS: Chop tomatoes and add to bowl. Chop pepper and add to bowl. Chop onion and add to bowl. Squeeze lemon. Salt to taste and mix. Add cilantro. Add Cannabis. Mix it up Enjoy! You shouldn’t need more salt but if you find that you do- add a little more.
Elevated Spaghetti, Infused with Decarbed THC Flower INGREDIENTS: One box of your favorite noodle/pasta 1 jar of your favorite spaghetti/pasta sauce 3-5 of your favorite vegetables. I used onion, bell peppers, tomatoes, and zucchini. 2-3 grams of your favorite THC flower Your favorite herbs and spices INSTRUCTIONS: Start with turning on the oven to a temperature of 240 degrees to decarboxylate
CBD Infused, Fruit & Terpene Smoothie You’ll need a blender for this one. Ingredients: Your favorite blend of frozen fruit 1/2 of coconut or alkaline water Agave 1-2 grams of CBD flower INSTRUCTIONS: Grab the blender and add desired amount of frozen fruit (I let mine thaw out for about 40 minutes). Add water. Add desired amount of agave which plays as a sweetener (fruit is already sweet so go easy). Add half of the cannabis (if you don’t wish to garnish- throw it all in there to blend. Blend up. Add the rest of the cannabis if you chose to use some for garnish and little agave drizzle if the terpenes and cannabinoids are too tasty. Enjoy!

Super Tasty Treats BY MISTY LOWNIK Since Covid has hit, I think we could all use a delicious healthy energy snack to eat in nature. Inspired by one sweet human being, Kristen McDaniels, these super tasty treats are not only easy to eat on the go, but pack so much energy you’ll be able to climb lone mountain- not me, but you. Being in nature is very important in these times as it is what heals us from the inside out. I’ve made us up some deliciously infused energy balls to help us get that energy up. (Always respect Mother Nature and leave no trace). RECIPE: Dates (pitted & puréed) 2 cups Ground flaxseed 1/4 cup Hemp seed 1/4 cup Organic Vanilla extract 1 tbsp Infused coconut oil 1-2 tsp Organic peanut butter 1 cup Almond milk 2-4 tbsp (or whatever “milk product” you use) Walnuts 1/4 cup (pecans work great too) Almonds 1/4 cup sliced then crushed for coating Old fashion Oats 1/2 cup Pinch of salt for love, laughter and happiness Put all ingredients in a blender/Ninja and blend until smooth (just a few minutes). It's your preference for how smooth or chunky you like. Scrape down sides of blender/Ninja to ensure even blending. Scoop out using spatula into a medium sized bowl. Using a 1-inch ice cream scooper, scoop out about 38 balls and roll into crushed almonds. Place on parchment paper lined baking sheets and refrigerate until chilled. Keep in the fridge for up to 2 weeks. Enjoy!

Cosmic Muffin’s Canna-Cabbage Gratin
INGREDIENTS 6 Tbsp canna-butter + more for greasing 3 ounces bacon– optional 4 ounces fresh wild mushrooms or cremini mushrooms, chopped 1 small Spanish onion, thinly sliced 1 medium cabbage (about 1 1/2 pounds), cored and coarsely chopped 1/4 cup all-purpose flour 1 cup infused half and half, warmed 2 cups grated Gruyère cheese (about 3 ounces), divided 1 tsp each; salt/pepper or to taste 1 tsp dry mustard 1/4 tsp freshly grated nutmeg 1/8 tsp cayenne pepper, or to taste 2 ounces walnut pieces (1/2 cup) chopped flat-leaf parsley – garnish INSTRUCTIONS 1. Heat to 350°F. 2. Using some canna-butter grease a 2 1/2-quart gratin or baking dish/ casserole dish; set aside. 3. Place the bacon in a large soup pot or Dutch oven over medium heat until crisp and the fat is rendered. Transfer cooked bacon to a large bowl.
4. Pour all but 1 tsp of bacon fat + 2 Tbsp canna-butter into a small heatproof bowl; set bacon to the side. 5. Add the mushrooms to the pot, sautéing until browned and tender, about 4 minutes. Transfer to the bowl with the bacon. 6. Add another 2 Tbsp canna-butter to pot. Add onion a pinch of salt and cook, stirring occasionally, until softened. If the onions begin to scorch, add a splash of water to the pot and stir to loosen. 7. Add cabbage in batches, stirring after each batch just until greens begin to wilt before adding more. Cook until cabbage is crisp-tender, about 10 minutes. If the mixture begins to stick or scorch, add a bit more water and stir well. Remove pot from heat. 8. Heat 2 tablespoons canna-butter in a medium saucepan set over medium heat. Add flour and whisking until smooth and golden in color - about 2 minutes. Whisk in the warm canna-milk until smooth. Cook, until the sauce thickens, about 3 minutes. 9. Add 1 ½ cups of the Gruyère, salt, pepper, mustard, nutmeg, and cayenne. Stir until the cheese melts. Stir in the reserved bacon and mushrooms. 10. Transfer the mixture into the pot of cabbage and stir until coated. Transfer mixture into baking dish. Sprinkle the remaining Gruyère over the top. Bake until golden-brown and bubbling, about 30 minutes. Let stand for at least 10 minutes before serving. Garnish with walnuts and parsley Serves 4

Hello and welcome to the continuation of Elevated Dining. It’s a perfect time to focus on food this month as we reach the main courses of the elevated dinner party experience. After having some infused mocktails and light appetizers, your guests should be off to a great start to their journey of elevated dining. To ensure your guests continued enjoyment, make sure to offer a variety of beverages, both cold and hot. Also, before the main courses are served, you may consider offering your guests time to get up and walk around, prepare themselves for the next course, and allow yourself time to get ready. The following recipes are dishes you would want to have asked your guest selection before their arrival. Choosing this format, the plated dinner style, allows you to focus on detail and quality of the food you offer your guests. When choosing dishes for this type of dining, take into consideration the ingredients you are choosing. Can they be used in more than one dish? Try and look for dishes that work together, utilizing multiple same ingredients in multiple dishes. Also, look for dishes that you can prepare ahead of time and allow you then to quickly put together. Utilizing this will allow you to time your dishes more precisely and deliver more perfectly executed plates. With the wide variety of dietary needs from guests today, it is best to offer multiple choices for a dinner party. Give your guests options but then maintain boundaries. Maintain control when it comes to the guest ordering, keeping it your dish. You also want to notify the guests on where the infusions are within the dish. You do not want your guests getting any surprises. You can choose to offer side dishes, maybe items that are not infused to help balance out the evening. You can always offer extra drizzles of infused oils to guests looking for a more elevated experience.

Have fun when serving these dishes. Be proud of the food and be sure to offer a nice explanation of each dish. Be ready for guest questions, make sure you know about the product you are serving. At this point, your guests will be feeling what the evening has to offer. When offering different layers of infusion in your dishes, each guest's reaction will be different. Keep an eye on your guests and make sure to continue to offer plenty of beverages. If you haven’t already offered your guests a break, after finishing the main course, is a perfect time to do that. Listen for feedback and offer an explanation of what to expect in the final course, dessert.
2 – 6 oz Salmon Scented Rice (add garlic clove, ginger, thyme, shallot to rice before cooking) Root vegetable Cannabutter 3 tablespoons infused olive oil 2 tablespoons jalapenos, thinly sliced 2 tablespoons garlic, sliced 2 tablespoons ginger, julienne 2 tablespoons shallots, sliced 1/4 cup scallions, thinly sliced on a bias 1/4 cup cilantro leaves 2 1/2 tablespoons rice wine vinegar 1 tablespoon mushroom soy 4 tablespoons light Japanese soy 1/2 tablespoon sugar (Canna Sugar) 1 teaspoon fermented Chinese black beans (Combine all ingredients) In a hot pan get a great sear on the salmon. Flip salmon and place in the oven for ten to 12 minutes, until cooked through. While the fish is cooking, prepare the garnish. Starting with a cold sauté pan, fry the jalapenos in the infused olive oil until aromatic. Add the garlic and ginger and continue to cook until they just begin to brown. Toss in sliced shallots and remove from heat. The scallions and cilantro will be tossed in just before serving. To plate, place root vegetables, rice, and salmon on a serving dish. Pour the garnish over the fish. Deglaze the pan with the soy mixture and a little cannabutter. Pour pan sauce over the fish and garnish with cilantro and scallions. Serve immediately. This dish is amazing and there are several options to infuse this dish. Simply using infused olive oil is a great start. Also, canna sugar can be used in this savory dish. Finally, when finishing the sauce, using cannabutter will be a great way to bring the dish together.

Yield: 2 portions Prep Time: 40 minutes Total Time: 60 minutes 2 Large Organic Tomatoes Scented Rice (add garlic clove, ginger, thyme, shallot to rice before cooking) Fine Herbs (Parsley, Thyme, Tarragon, Chives) Infused Chimichurri For Tomato Fill a large bowl with ice cubes and water and set aside. Bring a large pot of water to a boil. Cut an X in the bottom of each tomato with a knife. Place prepared tomatoes in the pot of boiling water and cook until the skins begin to peel off, 10 to 40 seconds. Transfer tomatoes to the bowl of ice water and allow to cool for 2 to 3 minutes. Roll the skinned tomato in the chopped fine herbs. Place in a preheated 425 degree oven for 12-15 min. To plate, add the scented rice to the bottom of a bowl. Gently place roasted tomato over rice followed by a generous portion of infused chimichurri. This is a great vegan offering for any gathering. The infusion here is really in the chimichurri. It works so well with the roasted tomato. You may also drizzle the dish with infused olive oil as a finishing touch. A generous sprinkle of decarboxylated material over top would be a perfect finish to this dish.
