Letter to Our Readers
The holiday season is upon us and that means a lot of house parties. You’ll probably be invited to many and you might even be planning to host one or two yourself. If so, there’s nothing like a signature cocktail or impressive holiday drink to pick up the tone of the party. Our writers are presenting a number of spirited holiday drink recipes for your review in this issue’s main editorial feature. They’ve also given some ideas on accessories for your “personal pub.” In the mood for a versatile and talented musical duo for a change in listening pace? Then check out the Jay N Rob Duo, a couple of entertaining guys who have been playing at local Central NJ venues for the past four years. Their musical influences, backgrounds, camaraderie, and sense of humor are present at each and every show. Learn more in this issue’s Band Profile.
Who’s behind the bar this month? A woman who started out as a server and was asked by her njboss if she would njlike to “get behind theSbar.” She said yes, E N UE E N U E Sfound out she loves it and has built quite a following. Meet our Mixologist-ofthe-Month, Linda Connolly who splits nj nj her shifts E between P.J. Sweeney’s in N UES E N U E SBrick and Beach Tavern in Monmouth Beach.
Beer used to be simple. You asked your bartender or server for “a cold one”, then took a sip (or gulp) to quench your thirst. Things have changed. Today’s craft beer revolution has redefined how we now classify beers. But, what is a craft beer today? Take a moment to read the thoughts of “Bill the Brewer” in this month’s All That’s Beer feature. Now, let our contributing writer Steve O. introduce you to a Jersey born comic who got into the business as a result of a nasty divorce. This politically incorrect laugh man has worked in the tri-state area for the past 15 years. Read more about Tim Belford in this month’s Comic Relief feature. That’s it folks. Now go enjoy the season. On behalf of the entire staff at Venues NJ, we wish you all a happy, healthy & safe Merry Christmas and a Happy New Year.

It’s clean, fresh Italian in a hip atmosphere
BY CLARE MARIE CELANO 12
venuesNJ
It may not be located in Italy, but enjoying an authentically Italian meal at Tre restaurant in Freehold Borough, will certainly make you feel as though you have been transported there…magically. From its Old World murals on painted cinderblocks to its polished concrete floors, brick ovens and polished industrial setting, to its imported mozzarella and San Marzano tomatoes and authentically prepared Italian dishes, Tre is all about natural, all about flavor… all about Italy…all about family and friends…and you won’t need an airplane or a ship to get you there. The eatery occupies a previously unused building which lay dormant for over 10 years, says, Rob Kash, who owns the restaurant with partners Joe Mosco and Dennis Tafuri. The restaurant is brought to patrons by the same partnership that brought about Metropolitan Café in Freehold and Nonna’s and Rosalita’s Cantina, both in Marlboro. Mosco and Kash’s partnership dates back to 1992 when they owned and operated Café Colore, in Freehold Township and 75 South, Freehold Borough. “We wanted this design to depict an Old World theme, as if an old bakery was discovered in a warehouse. We created a polished industrial/natural table setting,” says Kash. “The surroundings are clean and pristine. Our walls are cinderblocks completely painted to look like old cinderblock. It’s clean, fresh Italian in a hip atmosphere.” Murals, by artists from Ruglio and Rhone Decorative Painters, Red Bank, are painted in monochromatic color in red and black. The eatery offers a casual Italian menu featuring the best fresh artisanal ingredients for its classically prepared dishes and uses an old world brick oven to prepare the authentic pizza of Italy. “ We use the highest quality freshest ingredients,” Kash says. “We fly our Buffalo mozzarella in from Italy and buy most of our produce from Beyond Organic Growers, Howell, where it is aeroponically grown with no soil, no pesticides and no GMO. It’s a more green way of growing. We patronize local growers and are trying to be ‘green conscious,’” he said, adding the restaurant does not serve bottled water but uses a high end water purification system, “Vivreau,” which he said is used at the White House. The pizza is baked in an 800 degree oven. Additionally, artisan handmade meats made by Salumeria Balesi, are served. Fresh roasted peppers, fresh dough for pizzas and pasta which are made from scratch to order are all available. butter is even churned here. The only dish that is not authentic is the specialty of the house, Chicken Parmigiana, comprised of a cutlet pounded into a 12 inch round very thin cutlet and served similar to a pizza with fresh mozzarella and San Marzano tomatoes. Patrons may add toppings similar to a pizza. Other dishes include “Pasta Amatraciana” with spaghetti, pancetta onion and tomato; “Porchetta,” slow cooked pork loin wrapped in pork belly in the true Italian style and homemade gluten free pizza and gluten free pasta; Neapolitan-style pizza featuring an authentic margarita pie with buffalo mozzarella, San Mariano tomato, EVOO and locally grown basil. “It’s a light crispy dough crust, the authentic pizza of Italy,” he said. Desserts are made “in-house” and include Tiramisu, Bread Pudding Cannoli and Flourless Chocolate Cake. There are also daily specials and nightly chef specials. Happy Hour happens every day from 3:30 p.m. to 6:30 p.m. with drink specials along with $5 white or classic pizzas. The bar, off the dining room, opens to a beer garden by way of a garage door. It offers hi-top tables, counter seating, and a pizza bar where diners can see the brick ovens open flames. Tre provides 15 large screen TVs for sports viewing. A bar menu includes sliders, traditional wings and Tuscan style chicken wings. The beer garden offers 16 beers on tap, and 20 beers in bottles. Additionally, a large selection of craft and local beers from small, local producers are available. Tre’s wine list includes over 100 wines, and over 20 by the glass. Picnic tables and seating is available on the covered porch with a fire pit, heaters and fans. A mozzarella bar offers three different types of mozzarella, Burrata, (soft center), Buffalo, and traditional fresh. Patrons can choose sides such as Prosciutto di Parma. Live rock and pop music is performed by duos Thursday through Saturday. Sunday brunch (al a carte) offers original Italian influenced items from 11 a.m. until 2 p.m. Tre can also cater private parties on location and off premises. Kash said children are welcome. “It’s all about family and friends,” he says. “We have a children’s menu but encourage the European ideal of dining and sharing with family. We have skee ball for the kids and young at heart alike as well as corn hole out on the beer garden.” Kash says, Tre is a place for “serious foodies and people who just want to eat, to enjoy a fun time in a hip casual atmosphere while enjoying true quality food and drink options.” venues.nj December 2015

For the last four years, the name Jay N Rob Duo has been on marquees throughout Monmouth and Ocean counties. Jay Robinson and Rob Muller have been offering up their musical talents to many of New Jersey’s hottest spots. Jay Robinson (vocals, percussion/drums, guitar) and Robert Muller (guitar, vocals) are much more than two guys strumming out tunes that are heard on the radio. Their musical influences, backgrounds, comradery, and sense of humor are present at every show. “We play everything from classic to modern, slow to upbeat and everything inbetween.”
together as Jay N Rob Duo was in the winter of 2012 at Jack & Mikes Brickhouse in Brick, NJ. The duo still performs there every Thursday night. Rob Muller is also currently a member of the band Lifespeed, while Jay performs only duo or solo.
Jay and Rob both live in Ocean County, New Jersey, and have known each other for many years, but were a part of different bands. During the 1990’s, their bands performed on the same Jersey Shore circuit, where musicians get to know one another. In 2012, Rob approached Jay, who had retired from the scene in 2003, with the idea of collaboration. That is when the Jay N Rob Duo was formed.
Jay and Rob also bring a diverse taste in music to their partnership. When asked about their musical influences, Rob described his as shoegaze. Loosely, shoegaze music can be described as being a part of the alternative rock genre. Conversely, Jay has a more mainstream influence, citing bands like Van Halen, Ozzy, Nirvana, Red Hot Chili Peppers, as well as The Beatles, Elvis, Chicago, The Doobie Brothers, etc.
There is no set playlist for the Jay N Rob Duo, basing their song choice on their audience and venue atmosphere. According to Jay, “We always play to what the crowd wants and we can go from mellow background music all the way up to a rock band sound and get people up and dancing. We can go from “Time After Time” to “Don’t Stop Believing” to “Smells Like Teen Spirit”. We also add in newer songs that you might not expect to hear from an acoustic duo, like “I Can’t Feel My Face When I’m With You”. We also throw in a little country, with some 60’s and 70’s”. “About 4 years ago, Rob came to me and asked if I wanted to start up a duo. I had been retired from playing since 2003, but I told him if I would be interested, I only wanted to play 2 times a month. It is four years later and we’re playing at least 4 times a week and played 5 to 7 shows a week this past summer,” according to Jay.
“I’m not sure I could pick out one show in particular. I would say that the summer of 2015 was probably the most memorable summer of all time. We played almost 100 shows between Memorial Day and Labor Day”, said Jay. You can find the Jay N Rob Duo at Bar A in Belmar every Wednesday; Jack & Mike’s Brickhouse in Brick Twp. every Thursday; and weekends you can find them at places like River Rock in Brick, Club Maggie’s in Lakewood, Bum Rogers in Seaside Park and Baker’s Water Street in Toms River. This fall, they have added Woody’s in Farmingdale to their calendar. Facebook.com/jayandrobduo Instagram.com/jayandrobduo Photos: Lori Widmer with L.A.M.B Photography, Instagram.com/Jayandrob
When asked about their most memorable experience playing together, neither could pinpoint just one. Rather, they did agree that there were many funny moments and truly enjoy playing together.
“It’s always fun when you get people up dancing, it’s fun when you get some drunks acting crazy. We had a guy bring us drinks Rob has been playing guitar since age 18 one time and he fell flat on his face into us. and a performing musician for over 20 years. We have also had some really great moments As for Jay, he started as a singer in local bands at some private parties,” says Rob. back in the ‘90’s. Their first performance 14

Two King Charles III

the wavering title character of “King Charles III,” Mike Bartlett’s flat-out brilliant portrait of a monarchy in crisis, which blazed open just last month at the Music Box Theater. Any echoes you may infer regarding a certain Danish prince are entirely appropriate to this dazzlingly drama, set in and around Buckingham Palace in a highly foreseeable future. Portrayed by Tim Pigott-Smith, Charles finds heroic dimensions in a misguided bid for greatness, as he holds only a pen … not a sword, and stares at the unsigned documents before him. But in that pen lies the power to divide a nation and to erase a king’s identity. Mr. Bartlett has the hubris to venture not only into the future but also into the minds of public figures who are
notorious for never revealing their thoughts. What could have been only a cleverly executed W A Y stunt is instead an intellectually and emotionally gripping study of the strangely enduring anachronism that is the British monarchy and of the contemporary, star-struck world that can still find room for its royals. Prototypes of Shakespearean plot, imagery and character are invoked with droll yet illuminating precision as we follow the fortunes of Charles and his family. And, yes, aside from his mum, the gang’s all here: Charles’s wife, Camilla, his sons, William and Harry; and his daughter-in-law, Kate, as well as a long-dead family ghost who still shows up on the covers of celebrity magazines. The plot is propelled by the quandaries of its title character.
Now that his mother has died, he is determined to fill dynamically what for centuries has been a passive, ornamental role. This proactive attitude takes the specific form of his refusal to sign a bill, already passed by Parliament that would limit the rights of the press in invading personal privacy. You would think that Charles — whose first wife, Diana, was killed while fleeing paparazzi — would be sympathetic to such measures. But a principle is at stake, he insists, as is his very essence. And his stubbornness grows into monomania. Such stubbornness is met with horror by the reigning prime minister and strategically mixed emotions by the leader of the more conservative opposition party. When the conflict between Charles and his government
is made public, chaos ensues that forces a nation as well as a king to wonder just who and what they are. Paralleling Charles’s quest for selfhood is that of a bewildered Prince Harry, and his hedonistic lifestyle, as he falls in love with a socialist art student, Jess, and the wide-open world of commoners. In the meantime, Prince William and his sharp-witted, strong-willed wife, Kate, try their best to ensure the future of the throne that will eventually be theirs. Charles’s tragedy is that he’s a prisoner of an ivory-tower notion of royalty. He finds himself pitted against a usurping politician, Bolingbroke, who understands that for the monarchy to survive, it has to accommodate changing times and the juggernaut of real politics

Beer
by Bill “The Brewer”
What IS a Craft Beer? To quote the great Bob Dylan, “The times, they are a changing.” The craft beer revolution is redefining how we classify beer. Less than a decade ago, categorizing a craft beer was easy. Google still has the antiquated definition of a craft beer as “a beer made in a traditional or non-mechanized way by a small brewery.” The huge growth of beers like Sam Adams and Sierra Nevada challenge this idea. Ask any beer guy if Sam Adams is craft beer, and unless he’s had a few pints too many, you will get a confident yes. Boston Beer Company, who brews Sam Adams, is also a nearly $3 billion business, hardly a small brewery. Sometimes it’s easier to define something by saying what it is not. We can say for sure that Miller, Budweiser and Coors are definitely commercial beers and not craft. However in the past few years we have seen these companies buying up small craft breweries, and changing little in the way they put out the beer. For instance, Goose Island was a small brew-pub from Chicago that was purchased by AnheuserBusch in 2011. AB still puts the beer out under the Goose Island label, they brew in the same brewery, and the recipe remains unchanged. Does this mean that December 2015

What’s the big deal with beingENU ES called a craft beer anyway? If you nj ask the Miller Coors Company itENU ES seems like a very big deal. Miller Coors was sued in a class action lawsuit recently for deceptive marketing of its wildly popular Blue Moon. The suit claims that Miller Coors intentionally leaves the Miller name off of everything associated with Blue Moon and brands the beer with the slogan “artfully crafted.” Miller Coors also charges up to 50% more for Blue Moon than other products.

Personal Responsibility Moral, legal or mental accountability; reliable, trustworthy; able to answer for ones conduct or obligations. It’s the end-of-year holiday season. Time to get together with friends and family to celebrate the happenings of the past year and to look forward to the events of the coming year. This is truly a time for fun and social activities. But, it can easily turn into a nightmare. While celebration and “good cheer” are certainly part of the end of year activities, a call for personally responsibility is a must. As we all realize, it is too easy to overdo when at a party and celebrate to excess. We all must remember Rule # 1: DON’T DRINK & DRIVE. As a consumer or “party go-er” this is paramount, not only this time of year, but always. If you plan to party to excess, or think you might, plan ahead … arrange in advance for a designated driver, a taxi or an Uber.
Head over to the Asbury Park boardwalk’s Grand Arcade (located in the Convention Hall) and make a fun holiday craft to take home, and visit with Santa! There is a $3 donation OR you can bring a nonperishable food item(s) for donations which goes to local charity Move For Hunger, helping families in need this holiday season. Limit one craft/toy per child.
What:
Kids Toy Making & Food Drive
When:
December 17 & 18, 2015; 12 Noon – 2pm
Where:
The Grand Arcade (Convention Hall), Asbury Park
Contact: Move For Hunger 814 Asbury Ave., Asbury Park, NJ (732) 774-0521 or The Grand Arcade (732) 897-6500
As a proprietor or owner of a venue where a holiday party is taking place, you too have both a personal and business responsibility. Make certain your staff (both bartenders & servers) are trained and understand the importance of recognizing a patron who may have been over-served or “had too much already.” Your business might depend on it! According to the NHTSA, over 1.5 million people are arrested annually in the U.S. for driving under the influence of alcohol or drugs. The results of such arrests and convictions can cause severe financial hardships including loss of license, legal costs, serious fines, insurance surcharges, possible loss of a job and even jail time. All this could cost you up to $15,000 - $20,000. So do not take it lightly. It’s not a laughing matter! So, enjoy the end-of-year holiday celebrations, have fun, but take personal responsibility … DO NOT DRINK & DRIVE.
About Move For Hunger: As you may be aware, many people throw out a good deal of “stuff” when they move. Unfortunately, a lot of this “stuff” is food that could be delivered to a family in need rather than thrown away. That’s where we come in …. by teaming up with relocation companies across the country, Move For Hunger is creating one of the nation’s largest year-round service programs. Our movers offer to pick up the unwanted, non-perishable food items from those who are moving and deliver it to their local food banks.
