Letter to Our Readers

This time of year is beautiful. The air is crisp, the leaves are turning and the weather calls for us to throw on that extra sweater. It’s also the time of year to reflect on all that we have been given and to consider how we can give back in order to show our gratitude. With this issue, our writers have taken this opportunity to show how others demonstrate their gratitude through community service, specifically, the actions of the NFL and our local regional teams. Take a few minutes to read this month’s main editorial feature Giving Thanks By Giving Back. On a chilly fall evening, what could be more appealing than the warmth and comfort of a welcoming Irish pub that offers Irish hospitality, great Irish fare and libations, sports viewing and is familyfriendly? Ocean County now has a venue that offers all this and more. Learn more about P. J. Sweeney’s Restaurant & Irish Pub in this month’s Restaurant Profile feature. Take five experienced and successful performers, put them together, and you get one very talented country tribute band: Big Hix. This popular and still rising band performs to honor all modern and classic country n music j rather than one njartist. But, they’re doing S it such a way as E U N E E N U E Sto be as true as possible to each artist. Read more about this group in this issue’s Band Profile. j Are you a beerndrinker a beer nj S beeror today E U N E aficionado? Understanding S E E N U an experience in tastes and flavors. the difference between ale and a lager? I consider myself a beer drinker, but honestly, I didn’t know the difference. But thanks to our newest contributing writer “Bill The Brewer”, I now can appreciate the basic difference. This month’s All That’s Beer feature will enlighten you. Born in New Jersey and Rutgers educated, this red-headed comedian has been honing her craft for over thirteen years. She’s been working clubs, colleges and both private and corporate events all over the northeast. This multi-talented performer also produces, sings, does voice overs and has been the voice of numerous audio books. She was also a finalist in 2014’s Atlantic City Comedy Competition at the Comedy Stop, Tropicana. Take a moment and let our contributing writer, Steve O. introduce you to Mollie Sperduto in this month’s Comic Relief feature. Beautiful weather …. good food …. tasty libations …. and great local musicians, it’s all out there for your pleasure. So, throw on that extra sweater and get out there and enjoy.

BY CLARE MARIE CELANO

What could be more appealing on a chilly fall evening than the warmth and comfort of a welcoming Irish pub that offers Irish hospitality, great Irish fare and libations, sports viewing and is family-friendly? And, Ocean County now has a venue that offers all this and more. The newly opened P.J. Sweeney’s in Brick, is your ticket to hearty food, a convivial atmosphere of family fun, sports viewing, camaraderie, entertainment and some of the best Irish dishes in the area. The atmosphere here says “cozy, comfy and casual.” The vibes here are fun, upbeat and cheerful. “We create an authentic Irish atmosphere that must be experienced. It’s a great place for friendly conversation and family,” says Eugene Gillespie, who owns P.J Sweeney’s with his dad, Gene.

The dining rooms feature a warm décor reminiscent of the quaint pubs found in Ireland complete with a stone fireplace. Gillespie says the dining rooms are set back from the bar area to provide a quieter dining experience for those who choose it. PJ Sweeney’s can be the perfect spot for a lunch or a leisurely dinner with friends and family. And, if sports is your thing, this pub-like atmosphere will provide plenty of sports action from football to hockey to baseball to all sports that can be viewed on any of the 22 LED TVs throughout the eatery. Watch your games while you enjoy great appetizers such as, “Blarney Rolls,” corned beef, cabbage and potatoes wrapped and fried, served with spicy mustard, or “Potato Skins, Dublin style,” with rashers and Irish cheddar or “Wings,” served on the bone or boneless with a variety of sauces or cheeses. For a real treat, try the “Not Sure Sampler,” which offers ultimate nacho portions, traditional potato skins, mozzarella sticks, Buffalo wings and chicken tenders and are served up accompanied by all the fixings for those who can’t make up their minds. Enjoy an evening cocktail with those appetizers and gather around the imported red mahogany bar with friends. Relax and settle in next to the stone faced fireplace and authentic Irish Pub façade as you view your favorite game, enjoy a night out with friends or listen to some great music.

“We are family-friendly and always welcome children,” he said, adding that many young soccer players visit the restaurant for a meal or a snack after their games. Over the years the Gillespie family have owned and operated a variety of bars and restaurants throughout the New York /New Jersey area, including the Blackthorn Restaurant & Irish Pub in Kenilworth. After 11 years in Kenilworth, the Gillespie’s decided to bring their “wee” bit of Ireland to Ocean County and opened P.J. Sweeney’s in Brick in August of this year, offering authentic Irish hospitality and cuisine. 12

Add to that list, “Guinness Beef Stew,” “Bangers and Mash” and “Corned Beef and Cabbage,” among others. Also on tap are “BBQ Baby Back Ribs,” juicy steaks, and “Grilled Atlantic Salmon,” among other dishes. Gillespie says the bar serves a variety of mixed drinks and cocktails and also has 40 craft, domestic and imported beers on tap, along with a selection of seasonal, specialty drinks. PJ Sweeney’s also features nightly entertainment on Fridays & Saturdays including cover bands and DJs; World Tavern Poker on Tuesday nights and Ladies Night on Wednesday. Irish music is featured on Sundays. Children and families are always welcome here at P.J. Sweeny’s, and the pub provides a menu just for its youngest diners which includes hot dogs, hamburgers, mac and cheese, pasta, grilled cheese and fish and chips. The eatery can also provide a wonderful venue to accommodate your private parties, holiday and corporate events and offers a special party menu for patrons to peruse. P.J. Sweeney’s is thankfully doing very well said Eugene, adding “People are leaving happy, and that’s what’s important.”

“We offer a little something for everyone,” said Eugene. Enjoy hearty Irish fare such as, “Fish and Chips,” fresh Atlantic Cod, beer battered, fried to a golden brown and served with steak fries, Cole slaw and tartar sauce, or “Shepherd’s Pie,” ground beef and farmer’s

Big Hix is one of the premier country acts in the northeast, bringing together a wealth of experience and talent to treat fans to a rocking show. They have now been together for three years and consists of Lauren Davidson with the lead vocals, Dale Toth and Jon Skibic on guitar, Pemberton Roach on bass and Dylan Wissing on drums. Every member of Big Hix brings experience Big Hix considers itself a tribute band, honoring all of modern and classic country rather than just one artist. There aren’t too many specific artists they can cover to hold an audience’s attention, so they chose to honor the entire genre. “We are doing material that of course is very familiar to our audience, but we’re doing it in a way that’s as true to each artist as can be, but at the same time, still bringing a little bit of flavor of each of us to that show or to that song or to that performance,” said Toth.

and success to the group from other bands and project. Wissing has played with artists such as Drake, Eminem and Alicia Keys, performing on her hit single “Girl on Fire.” Skibic is also a member of the alt-rock group The Afghan Whigs. Davidson has a solo career outside of the band and has been performing since she was 10. Toth plays acoustic duo and trio sets and Roach and also does solo shows from time to time. Sometimes the scheduling can be a bit hectic with each member performing other projects as well, but they are able to make it work as they all have the same goal of making Big Hix better and expanding their audience base. “We try to make sure that we cover ourselves not only in maintaining our own solo careers but knowing that the bigger picture is trying to get this band to move forward,” says Toth.

Though they are primarily a cover and tribute band right now, they are planning on recording original music next year. “One of the reasons is we feel that we have a great band in and of itself. I think we have all the right players to do something like that,” said Toth. “We are comfortable in the name that we gave the band and we think that it’s going to also help us introduce ourselves as a true country band. They are already in the process of writing songs with the hope this will open the door to playing bigger festivals and garnering an even bigger fan base.

not be the biggest country fan, but if you walk away having a great time at our show that’s one of the biggest compliments we can get and that’s a thrill for us.” Big Hix can be found often around Hoboken, Somerset and at Bar A in Lake Como as they often play country night with Thunder 106. They’re also playing before the Jets-Titans game at Metlife Stadium on December 13. So there are plenty of opportunities to go see this still-rising band. You don’t need to like country to go see Big Hix, you just have to be in the mood for a great show. Go to BigHix.com for their schedule, booking information and merchandise and be sure to like them on Facebook as well.

Unfortunately, country is seen as having a very specific audience, but Toth feels there are a lot more people out there who like country but who just don’t realize it yet. He does see all kinds of people enjoying their music. “There will be a country fan that maybe will bring a friend out to see our show and I can’t tell you how many people come up to us and say I don’t really like country music but you guys are great,” he said. “And honestly for me, and I know I speak for the rest of the band, we’re not concerned that you might

Beer

by Bill “The Brewer”

Beer Basics – Ales vs. Lagers As a beer guy, I’ve had quite a few conversations with people about their favorite styles of beer. More often than not, one of the biggest confusions seems to be what the difference is between ale and a lager. The short answer is that they are two different types of yeast strains however this answer normally doesn’t give much information to the beer novice. To get a better idea we first need to understand what makes beer. The magic of beer happens when sweet wort, a sort of tea made from the extracted sugars of malted barley, meets hungry yeast. Beer yeast eats the sugars in the wort and converts it into alcohol and flavor compounds. This process is what separates ale from lager. We’ll start with ale. Ale is the Tasmanian Devil of beer yeast. Ale is the more primitive yeast and the one brewers have been using for the longest time. Like a stoned frat boy, ale yeast eats everything in sight and fast, leaving a wake of debris and chaos. Ale yeast ferments quicker and at higher temperatures than lager. The faster, warmer fermentation results in a beer littered with all sorts of flavors. Ales generally have a party of smells, along with array of flavors compared to lager. Lager yeast came on the 16

scene later, as a hybrid of ale yeast. The word lager is German, which translates to storeroom or warehouse. This makes sense as lager beers need more time to ferment and are stored at colder temperatures. Lagers are the more reserved, the “business men” of beer yeast. They take their time to ferment and are more frugal with the flavors they produce. Lagers usually produce beers that are cleaner tasting and crisp. Some common mistakes when comparing ales and lagers are: to refer to the color, alcohol content

or bitterness. Both ales and lagers can range from dark black to a golden straw color, from easy drinking light beers to heavy and high in alcohol, and from sweet malty brews to bitter hop bombs. A good experiment for the taste buds is to try a lager and ale with similar hop bitterness and color. My suggestion would be to try Smithwick’s Irish Ale and Great Lakes’ Vienna Lager because they are good examples of similar beer styles that taste distinct primarily due to the yeast type. Come check me out at Fireside Grill and Bar in Marlboro for a tasting or give me a follow on Twitter @ TheBrewerBill. Cheers!

Bourbon Punch

• 1 liter Maker’s Mark® Bourbon • 1 cup Sugar, Granulated • 3 Lemon • 3 Orange • 1 liter Tea • 250 ml Champagne • Fresh Nutmeg • 2 ounces Chambord raspberry liquor (black raspberry liqueur) • 3 ounces cranberry juice Instructions - Peel the oranges and lemons, keeping the peels. Juice the oranges and lemons. Combine sugar and citrus peels in the bottom of a punch bowl. Muddle together until sugar starts to clump together. Let sit for about 2 hours (while not necessary, this does add a little complexity). Brew the tea for about 30 minutes, remove loose tea or tea bags and allow to cool. Add the juice of the peeled fruit, tea and bourbon. Stir. Top with champagne just before serving and stir gently. Top with freshly grated nutmeg and serve. If you can’t grate fresh nutmeg, don’t use the prepackaged powdered stuff. It will turn your punch into a paste. If fresh isn’t possible, garnish with citrus wheels or fresh fruit.

Giving Thanks by Giv NEW YORK GIANTS

Of all the major sports leagues -- the National Football League is without a doubt, the most charitable. The National Basketball Association, National Hockey League and Major League Baseball, of course, do tremendous work in the teams’ hometown communities, and each has, through the years, stepped up to do more.

The New York Giants participate in a large number of charities, including Rock and Wrap it Up!, Special Olympics of New Jersey, Read Across America, United Spinal Association, Tomorrow’s Children’s Fund, Adopt a Firehouse, Ronald McDonald House of New York City, Make a Wish Foundation, United Way My Sister’s House.

But the NFL has been superlative in its charitable efforts for decades now. The league itself has had a rich and storied partnership with The United Way, since 1973. Each year, thanks to community service projects and public service announcements, millions of Americans learn about United Way’s vital work and the unsurpassed volunteer spirit of the NFL.

Promoting physical fitness is the primary goal in the community for the New York Giants, in tandem with the National Football League. The Giants has partnered with the American Heart Association and New Jersey Education Association to bring the “What Moves U” program to our area’s middle schools, allowing teachers to incorporate physical fitness into their existing daily lesson plans. Giants players, including program spokesman, Eli Manning, encourage kids to play actively every day through public service announcements, school visits, and in-school materials.

Further, in concert with the American Heart Association, the NFL launched its “Play 60” campaign to fight childhood obesity and promote fun through healthy exercise. Also, the NFL and NFL Players Association support October’s National Breast Cancer Awareness Month with its “pink” on-field presence and a national breast cancer screening-reminder and fundraising campaign. In collaboration with the American Cancer Society, the initiative, called “A Crucial Catch: Annual Screening Saves Lives,” encourages women 40 and older to get an annual mammogram.

Also, Horizon Blue Cross Blue Shield of New Jersey and the New York Giants have teamed up again in 2010 for the Touchdowns for Families Program --each time the Giants score on the field, Horizon BCBSNJ donates $250 to the New Jersey YMCA State Alliance to use for the “Healthy U” initiative. “Healthy U” is the largest evidence-based, after-school childhood obesity prevention program in the nation with more than 20,000 children ages 5-12 participating at 414 after-school sites across New Jersey. Last season, Horizon BCBSNJ contributed $12,000 to the Touchdowns for Families program to benefit the “Healthy U” initiative.

Our regional teams --- The New York Giants, the New York Jets and the Philadelphia Eagles always have fundraising activities going on. As we give Thanks this month, Venues NJ feels it is appropriate to spotlight how our regional NFL teams are thanking their fans by giving back.

18

Big Blue does tremendous work in supporting causes throughout New Jersey, and the team is distinctive by having a head coach whose own foundation, Jay Fund, is one of the most visible and successful.

Meanwhile, Giants head coach Tom Coughlin is not only known for being a remarkable long-term leader, he is revered for his leadership of his Jay Fund Foundation, which provides assistance to families of children with cancer. Since its inception in 2005, this Fund has raised more than $3.75 million. On March 18, 2016, the Jay Fund will hold its Wine Tasting Gala in Jacksonville. “The New York/New Jersey area has responded in a big way, the services we provide families make a real and immediate impact” said Coughlin, who hosted the event. “Our players lend support to the cause every year and we feel blessed to have become a part of the charity fundraising landscape in New York City annually each fall.”

ving Back NEW YORK JETS

The New York Jets Foundation programs has raised or contributed more than $9 million to promote youth health, fitness and education for those in disadvantaged communities in the tri-state area. Even the wives/fiancées and significant others of New York Jet players and personnel started their own charitable foundation: In 2008 the Jets Women’s Organization and Atlantic Health partnered to form the Atlantic Health Jets Women’s Organization (AHJWO). Through this partnership the AHJWO can accomplish its mission of working together to build goodwill in the tri-state community through active volunteer participation. The New York Jets have been involved in the United Way of New York City since the partnership’s inception in ‘73, and has enjoyed working in many community outreach efforts such as the Hometown Huddle, an annual hands-on volunteer project with players, plus the Gridiron Gala, New York City’s premier charity event; and Tix for Kids, a charitable ticket program that gives unused tickets to disadvantaged youth. In partnership with the Alliance for Lupus Research, the New York Jets this year held its eight annual Walk With Us to Cure Lupus. Since 2001, the Jets helped raise more than $7 million for ALR through its walk events throughout the tri-state area, as well as from proceeds from its annual kickoff luncheon. As with all other professional football teams, the New York Jets also focus on supporting children’s futures. The Generation Jets Academy has served as the key of the team’s community relations program since its inception in 2002. This education initiative’s primary goal is to provide elementary school students with enjoyable learning experiences that enrich and enhance their literacy, math skills, creativity, self esteem and community awareness. Additionally, Gang Green and company have partnered with a unique initiative, “Rock and Wrap It Up!” a national non-profit organization whose mission is to feed the hungry using safely recovered edible leftover food from arenas hosting major concerts and sporting events. The Jets and the organization use local volunteers to deliver the Meadowlands stadium’s unserved food to neighborhood pantries and kitchens, after the home game is over, to local food shelters.

PHILADELPHIA EAGLES The Philadelphia Eagles last month completed its seventh year of raising money with its annual Eagles Tackling Breast Cancer campaign that has raised more than $1 million to benefit care and research in the region. Funds will also assist in completing construction at the Jefferson Breast Care Center. As part of its “Go Green” ecology mission, the team created the Eagles Forest, a 6.5-acre site at Neshaminy State Park in Bensalem, Bucks County. The Eagles Forest contains more than 1,500 trees and shrubs, including over 150 trees that have been purchased by Eagles fans. A group of GO ZERO trees planted in the forest will offset the team’s carbon emissions from away-game travel. Through the Eagles’ collaboration with The Conservation Fund’s GO ZERO program, they calculated that 870 trees and shrubs planted in the forest will offset those emissions.

Selena Coppock Mollie Sperduto by Steve Ortlieb

Mollie Sperduto, comedy’s redheaded stepchild, is a Jersey born and bred comedian who’s been honing her craft for over 13 years. She has been working clubs, colleges and both private and corporate events all over the northeast. This multi-talented performer also produces, sings, does voice overs and has been the voice of numerous audio books. Mollie was also a finalist in 2014’s Atlantic City Comedy Competition at the Comedy Stop, Tropicana.

Aisle A Review

The city of light is ablaze with movement in the rhapsodic stage adaptation of “An American in Paris” being performed at in NYC, O theNPalace Theater B R O directed A and D choreographed by Christopher Wheeldon, a gifted luminary of the ballet world. This gorgeous production pays loving tribute to the 1951 movie, to the marriage of music and movement, and to cherished notions about romance. Just about everything in this happily dance-drunk show moves with a spring in its step, as if the newly liberated Paris after World War II were an enchanted place in which the laws of gravity no longer applied. “An American in Paris” is very much a traditional Broadway musical, with a book by the playwright Craig Lucas that amplifies the movie’s thin story line. And while its two radiant leading performers, Robert Fairchild and Leanne Cope, are ballet dancers by profession, they also sing (quite well) and deliver dialogue (more than quite well). In the opening scenes, just after the Nazis have been routed, although the

on the

shadow of the occupation still hangs over the city, Mr. Crowley paints the streets in grisaille compositions that Wsuggest A flagging Y spirits just beginning to revive, and Mr. Wheeldon depicts Parisians standing sullenly in bread lines, or descending angrily on a collaborator. Jerry Mulligan, the ex-G.I. portrayed by Mr. Fairchild, is an avid witness to the city’s reawakening. An aspiring painter, he drinks in everything he sees with bright, inquisitive eyes and the joy that springs from his new sense of freedom. Jerry’s turns and leaps gain velocity when he captures glimpses of a beautiful brunette, Lise Dassin, slipping quietly through the streets of Paris. By coincidence — O.K., by sheer contrivance — Jerry and Lise are brought together when Jerry’s pal, the aspiring composer Adam Hochberg invites Jerry to sketch dancers at the ballet, where he works as a rehearsal pianist. Lise, it turns out, is a dancer who earns a living as a shopgirl. Also in attendance at this audition is Milo Davenport, an American heiress

who promptly whips out her checkbook and persuades the ballet impresario to commission Adam to compose a score for a new ballet to star Lise, whose sinuous movement and intuitive connection to the music dazzles just about everyone. Yes, this development has more than a whiff of hokum about it, but once this hurdle is leapt, the musical charges ahead like a swift horse in a steeplechase, with one vibrant song or dance number following another. Jerry woos a diffident Lise at the department store where she works to the jaunty “I’ve Got Beginner’s Luck” and later jokingly suggests she drop her French name when she’s in his company, to the tune of “Liza.” With each new meeting, Jerry and Lise draw closer, as expressed by the increasing intricacy and intimacy of the steps Mr. Wheeldon creates for them, classically based but imbued with a subliminal sexuality. As in the movie, Lise’s reluctance to

admit her attraction to Jerry stems from her allegiance to another man to whom she is attached: Henri Baurel, the heir to a textile fortune who secretly aspires to be a nightclub singer. Meanwhile, Henri’s mother asks if perhaps Henri’s hesitance to propose to Lise may derive from his homosexuality. Jerry, Adam and Henri engage in the occasional argument about whether art should reflect life’s darkness or dissipate it. But while these elements occasionally feel like dutiful attempts to inject contemporary gravitas into this nostalgically romantic musical, they certainly do not bring this airborne show down to earth for long. “An American in Paris” weds music and movement, song and story with such exhilarating brio that you may find your own feet fidgeting under your seat before it’s over, and your heart alight with a longing to be swept up in the dance.

Help Wanted

Giving Back To present voluntarily and without expecting ES ENU compensation; to bestow; to set forth, present ENU ES or to offer. The most common type of giving back is volunteer work or community service. I recently met a group of people who make volunteering a part of their daily lives. They started their work in 2005, traveling to New Orleans to help victims of Hurricane Katrina. Every year since, this group of thirteen travels to disaster areas within the U.S. and spend a week or so helping to restore and rebuild. They use their vacation time from their full-time jobs and travel at their own expense to conduct this disaster relief work. Being residents of the Detroit area of Michigan, they had come to New Jersey to help restore and rebuild the devastated area of Union Beach resulting from Superstorm Sandy. Working through a primary organization such as United Way, this group called Presbyterian Disaster Assistance has been performing their volunteering/ community service work every year for the past ten years and will do it again, somewhere in the U.S., next year. When asked why they do it, they simply replied “…. because it’s needed.” Another example of “giving back” I encountered was carried out by a gentleman within the Central NJ hospitality industry. A server working at his local area restaurant, who happens to be a single Mom, had mentioned to the owner that her son had just passed his driver’s test and got his license. However, the family did not have a car. The owner donated a vehicle them to, enabling the son to drive himself and his mother to work each day. When the proprietor was asked about his generosity, he simply replied “because I can and they needed it.” A third example involves an area woman who performs her charitable actions without expecting or seeking any recognition. Annually, about this time of year, she will go to a supermarket to buy food for the upcoming holidays. While there, she picks out a couple of shoppers who appear isolated, lonely or in need. Unbeknownst to the shoppers, she then approaches the cashier and asks that their bills be put on her tab without any recognition. As we approach the Thanksgiving holidays, remember to be thankful for all you have been given and stop to consider how you might “give back” to show your appreciation. “True Kindness Is Doing Something for Someone Who Can’t Repay You”
