Letter to Our Readers

Okay, enough with the cold weather and the snow! It’s time to get outside and start celebrating. And what better way to start than with the upcoming twenty-eight (28) St. Patrick’s Day Parades taking place within New Jersey this month. Additionally, there’s the iconic NYC Parade, held on “the Day” In keeping with the Irish “theme” this issue’s main editorial feature will offer you a couple of options for consideration: A detailed selection of traditional and authentic Irish food recipes for an enjoyable evening at home or a listing of Central NJ Irish Pubs for you to venture out and sample their food and drink offerings…Slainte. It’s warm, cozy, and comfortable and offers tasty tavern-style food. It’s also the place that many regular diners refer to as their very own “Cheers.” Anyone who remembers the iconic TV show featuring the Boston bar can certainly relate to gathering in a place that feels like a “home away from home.” And, for many in our area, that place is the Ivy League in Howell. Read more about this enjoyable eating venue in this issue’s Restaurant Profile feature. Everyone loves to be Irish during the month of March, and there’s no better way of celebrating St. Patrick’s Day than a day at the pub listening to great music. The Snakes are a band that has become one of the premiere Irish bands in New Jersey, and especially in the Central NJ area. Take a moment to read about this very talented Irish band and the music they perform. In the continuation of celebrating St. Patrick’s Day activities, I thought it worthwhile to revisit an Irish lass we introduced you to last year, Colleen Murphy-Cistone, our Mixologist-of-the-Month. Colleen bartends at the Pine Tavern in Old Bridge. She is always ready to greet you with a smile and a libation of your choosing. Stop in and say “hi” In this issue, our contributing scribe, Steve O. let’s us in on one of America’s funniest standup comics. He’s also a movie star, a TV celebrity and, formerly, the voice of the Aflac duck. Our Comic Relief feature this month will allow you to learn a bit more about Gilbert Gottfried and what he’s doing to keep busy these days. Enough said. For those who are Irish, and for those who “want to be Irish”, it’s March. Get out and enjoy all the festivities.

It’s warm, cozy, and comfortable and offers tasty tavern-style food. It’s also the place that many regular diners refer to as their very own “Cheers.” Anyone who remembers the iconic TV show “Cheers” featuring the Boston bar can certainly relate to gathering in a place that feels like a “home away from home.” And, for many in the area, that place is the Ivy League in Howell. It can also be that place for those seeking a new dining location that has been offering patrons hearty food, a comfortable ambiance and a relaxed cozy atmosphere for decades. The Ivy League is iconic. Situated on Route 9 North, its beautiful green and gold sign is like a beacon, and there is plentiful parking. In fact, this bar and grill has been a familiar and welcome respite for decades. New owners, Pat Fallon and her brothers Tom and Paul Jaspan purchased the business seven years ago, and continue to happily greet regular patrons and welcome new ones to visit, enjoy a meal with family, indulge in an appetizer and a cocktail and chill out at the bar. The restaurant is also a perfect venue for an intimate date to get to know each other. The owners’ philosophy is to offer “great food and quality service at a fair and reasonable value.” Families and friends are welcome to meet and share a meal, partake in Happy Hour or the nightly specials surrounded by warm wood paneling, a decorative brick wall and artifacts that the owners like

to say bring back memories of the “glory days.” Blackboard Specials are on tap for lunch and dinner, along with cut-toorder steaks, fresh seafood, delicious pasta and sauté entrees. Appetizers include such tempting treats such as the popular “Crab Meltaway,” the delicious hot “Maryland Crab Dip,” or the “Firecracker Shrimp.” Try the very popular “Ivy Angels” which offers bacon-wrapped shrimp and sea scallops with BBQ sauce and horseradish sauce and your taste buds will thank you. The Ivy League provides 20 beers on tap, and a wide selection of wines and bar drinks including specialty coffee drinks such as Irish coffee. The Ivy League offers dining room seating, located on the other side of a brick half wall and also offers plenty of bar seating with bar stools, booths and tables for your comfort. The Ivy League is a favorite of both families and night owls. The restaurant offers a wellrounded family-oriented atmosphere and changes it up some when the darkness descends providing a great place for an intimate date, a gathering of friends or sports watching in the bar amid a host of specials on drinks and appetizers. Monday night specials at the Ivy League include “Kids Night Out” where youngsters eat half price with the purchase of a dinner entrée beginning at 4:00 pm. Tuesday is “Half Price Burger Night” on any burger beginning at 7:00 pm. Visit the Ivy League on Wednesday night and enjoy “Fiesta Night” featuring mouthwatering tacos and other Mexican dishes plus Coronas for $3 and Coors Light for $3, and $3 Margaritas beginning at 4:00 pm. Thursday night, at 7:00 pm is “Yeung’s and Wings Night” with $3.50 pints of Yuengling and 35-cent wings. Three Olive vodka drinks are only $3. Friday and Saturday nights are

prime rib night dinner nights with prices starting at $17.99 for a full dinner complete with soup and salad. Sunday night is BBQ night with ribs and chicken specials starting at $17.99, beginning at 4:00 pm. During the week, Happy Hour is Monday through Friday from 11:00 am to 4:00 pm, when $2.50 Buds and Bud light drafts are offered. Monday through Thursday offers $2 domestic drafts, well drinks and $3.50 house wines from 4:00 to 7:00 pm, with the same specials on tap Friday nights from 4:00 to 6:00 pm. Named in honor of United States Army 1st Lt. Brian Brennan of Howell, who was seriously injured in Afghanistan in 2008 when an IED exploded under the Humvee in which he was traveling, the attack took the lives of two soldiers and a civilian. Lt. Brennan and Specialist Ryan Price of California were the only two survivors. Lt. Brennan suffered cardiac arrest, multiple fractures and traumatic brain injury. He returned home a double amputee. veryone loves to be Irish during March, and there’s no better way of celebrating St. Patrick’s Day than a day at the pub listening to great music. The Snakes are a band that has become one of the premiere Irish bands in New Jersey, and especially along the shore -- in seven years as a group. The Snakes always leave the crowd seeing the world through green-tinted glasses. Named after the legend of St. Patrick who famously drove the snakes out of Ireland and in honor of Shane MacGowan’s 1994 album The Snake, this quintet keeps New Jersey entertained all year long, not just in March. The band consists of Gary Shaller on bass, Jan on the banjo, mandolin and pin whistle, Vin on guitar, T-Bone on accordion and percussion, and drummer Scott -- and when they get together, every day is St. Patrick’s Day. The guys cover a lot of music from Irish bands

such as The Pogues, Flogging Molly and The Dubliners, but their set list also incorporates a lot of rock including Bruce Springsteen and The Beatles, but giving these songs an Irish twist. “We’ll do something like ‘Brilliant Disguise,’ but that’s got a mandolin and an accordion on it when we do it,” explains Shaller. “We try to pick those songs that lend themselves to our instrumentation.” They also write their own music as well. Their song, “I Love St. Patrick’s Day at the Jersey Shore” has become an unofficial anthem of the Ocean County St. Patrick’s Day parade. It is available on YouTube and has over 30,000 views and has become a popular hit for the group. “ You write a song and people bop up-anddown, but you don’t imagine that they know every word and they’re acting like they’re so happy to hear it. That always thrills us,” says Shaller. It’s also the first song they have fully recorded, but they will be working on laying down other original tracks once their busy March schedule is over in hopes of releasing their first CD by the summer. The Snakes travel all over the state, even spreading out into New York, Maryland and Pennsylvania several times a year. But the members say their favorite spots are all local, including St. Stephen’s Green Publick House in Spring lake Heights, the Crab’s Claw Inn in Lavallette, Connolly Station Restaurant and Tavern in Belmar and the Norwood Inn in Avonby-the-Sea. for one of New Jersey’s premiere Irish rock bands. They have nine shows scheduled for the month including St. Patrick’s Day at St. Stephen’s Green. This is the best time of year for any Irish band and two of The Snakes’ favorite shows to play every year are their post-parade shows. They play Connolly Station after the Belmar parade and The Crab’s Claw Inn after the festivities in Seaside. They also look forward to the New Jersey Irish Festival held at Monmouth Park every June. “This event is put together by some really talented dedicated people and to play there is always fun,” remarks Shaller. “You’ve got a great crowd, it’s full of entertainment and you’ve got your beautiful Monmouth Park. It’s a big Irish day right on the shore and we are kind of like the shore’s Irish band so it’s a perfect fit for us.” The Snakes are also busy in February and September when a lot of Irish organizations including the Bagpipe Association and different arts associations hold big dinner dances. The band also plays private events, including weddings, as many as three or four times a month. That they’re able to keep busy all year surprises some as they don’t really think about Irish music at any other time of the year. “It just shows you what good music can do so we have a good time with it for sure. Colleen Murphy-Cistone left the world of Wall Street on Sept 11, 2001…and never looked back. “I was working as an administrative assistant for JP Morgan on the 46th floor at 60 Wall Street in 2001. I saw it all. I lost a lot of friends that day,” she says, remembering the tragedies at the World Trade Center when terrorists took down the Twin Towers, killing thousands. “I was done,” she declares. Murphy-Cistone packed up her New York work life and returned to skills learned years before ... bartending. She has employed those abilities ever since. And, Colleen admits proudly, she has no intention of ever going back to the Wall Street lifestyle again. “I want to be close to home,” she says, a desire expressed by many who were witness to the tragedies. “I want to

be close to my two kids,” she adds. Both her 17-yearold and her 11-year-old are involved in sports. “I want to be there for them,” she said, adding that attending school events that her children participate in are important to her. “Once that time goes, it’s gone. You never get it back.” After attending Authentic Bartending Schools of New Jersey in Edison to brush up on new cocktails, she began bartending again in 2003. She took a position at The Pine Tavern in Old Bridge in 2007, a job she loves and one that allows her the flexibility to work and still be close to her family. Murphy-Cistone notes her dad, a retired New York City firefighter, bartended his whole life. She laughs, saying she must have inherited that bartending gene. “I love the job,” she emphasizes. “I love the people I work for and work with. I’m a people-person and well suited to bartending. Here, we work together like a team. We’re truly like a family.” Colleen, who resides in Old Bridge, adds that 15 years on Wall Street, with its frenetic pace and demanding responsibilities prepared her for bartending, where speed and accuracy are important. “On Wall Street, I worked under tremendous pressure with 35 people yelling orders at me all the time,” she recalls. “I learned how to say, ‘I got this.’ I guess I still hear

that saying in my ear, ‘time is money.’” H e r mantra at work today? “Keep m e busy. Keep

m e going.” She adds that her Wall Street job required a twohour commute -- each way. Her job at The Pine Tavern is a two-minute commute. “You don’t have to be a rocket scientist to figure out which one is better,” she quips with a grin.

Traditional Irish Recipes Corned Beef & Cabbage

Ingredients 2 to 2 1/2 pound Corned-Beef Brisket*, recipe follows 1 tablespoon coarsely ground black pepper 1 teaspoon ground allspice 2 bay leaves 2 teaspoons kosher salt 1/2 pound diced carrots, approximately 4 small 1/2 pound diced onions, approximately 2 small 1 pound potatoes, peeled and chopped, approximately 3 medium 1/4 pound diced celery, approximately 2 stalks 1 small head cabbage, chopped, approximately 2 pounds Corned Beef: 2 quarts water 1 cup kosher salt 1/2 cup brown sugar 2 tablespoons saltpeter 1 cinnamon stick, broken into several pieces 1 teaspoon mustard seeds 1 teaspoon black peppercorns 8 whole cloves 8 whole allspice berries 12 whole juniper berries 2 bay leaves, crumbled 1/2 teaspoon ground ginger 2 pounds ice 1 (4 to 5 pound) beef brisket, trimmed 1 small onion, quartered 1 large carrot, coarsely chopped 1 stalk celery, coarsely chopped

Directions Place the corned beef, pepper, allspice, bay leaves and salt into a large 8-quart pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, decrease the heat to low and cook, at a low simmer for 2 1/2 hours. After 2 1/2 hours add the carrots, onions, potatoes and celery. Return

to a simmer and cook uncovered for 15 minutes. After 15 minutes, add the cabbage and cook for an additional 15 to 20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately.

Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.

Yield: 6 to 8 servings Prep Time: 20 minutes Cook Time: approximately 3 hours

Preheat the oven to 400 degrees F.

Ingredients For the Potatoes: 1 1/2 pounds russet potatoes 1/4 cup half-and-half 2 ounces unsalted butter 3/4 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1 egg yolk For the Meat: 2 tablespoons canola oil 1 cup chopped onion 2 carrots, peeled and diced small 2 cloves garlic, minced 1 1/2 pounds ground lamb 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 2 tablespoons all-purpose flour 2 teaspoons tomato paste 1 cup chicken broth 1 teaspoon Worcestershire sauce 2 teaspoons freshly chopped rosemary leaves 1 teaspoon freshly chopped thyme leaves 1/2 cup fresh or frozen corn kernels 1/2 cup fresh or frozen English peas Directions Peel the potatoes and cut into 1/2inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds.

While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch sauté pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and sauté just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly. Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving. Yield: 8 servings Prep: 45 min • Cook: 45 min

The cake owes its moist, spongy texture to the same thing that gives the sauce its luscious consistency: Kerrygold Irish Butter made with grass-fed cow’s milk. The soft, creamy butter does double duty in this dessert, and the result is a dish that’s twice as hard to forget. Ingredients: 3/4 cup Kerrygold Pure Irish Butter 1 cup sugar 2 eggs plus 1 egg yolk 1/3 cup each: apricot preserves and sour cream 1 teaspoon vanilla extract 1 3/4 cups flour, divided 3/4 teaspoon baking powder 1/4 teaspoon salt 1 (7 oz) tube pure almond paste, crumbled 1/2 cup sliced almonds Apricot Brandy Sauce: 1/4 cup Kerrygold Pure Irish Butter 1 cup brown sugar 1/3 cup heavy cream 1/4 cup peach brandy 1/4 cup apricot preserves Directions: Preheat oven to 350° F. Lightly butter a 9-inch round cake pan; set aside. With a mixer, cream together the Kerrygold Pure Irish Butter and sugar until light and fluffy – about 3 to 4 minutes. Add the eggs one at a time, including yolk, beating well after each addition. Add the preserves, sour cream and extract and beat for 1 minute more. Stir together the flour, baking powder and salt; lightly fold into the batter with almond paste. Spread evenly in prepared pan and sprinkle with almonds. Bake for 35 to 40 minutes or until the center of the cake is firm when the pan is lightly tapped. To prepare sauce, in a medium saucepan melt the Kerrygold Pure Irish Butter. Stir in brown sugar and cook for 2 minutes. Stir in remaining ingredients and simmer over low heat for a few minutes more. Drizzle over cake slices. Makes 10 servings.

As Oembodied N by theBbrightRand bouncy O new A musical “Honeymoon in Vegas,” which opened last month at the Nederlander Theater, the world capital of gambling and neon is everything you want it to be. That means a little hip, a little square, a little dangerous, a little kitschy and a whole lotta delicioussh fun. But here’s the bonus, in which East (Coast) meets West: This production is also a real-live, old-fashioned, deeply satisfying Broadway musical in a way few new shows are anymore. Adapted by Andrew Bergman from his 1992 movie, with a swinging score by Jason Robert Brown and a smooth-as-Ultrasuede star turn by Tony Danza, this show offers the perfect sunny holiday for frozen Eastern city dwellers. “Honeymoon in Vegas,” which also felicitously stars Rob McClure and Brynn O’Malley as wide-eyed Brooklynites in Sin City and is directed with exactly the right syntheticsatin touch by Gary Griffin, was first staged more than a year ago at the Paper Mill Playhouse in Millburn, N.J. It generated great buzz and reviews to match. Theater pundits have worried that the show might have lost its momentum in the meantime. An overextended preview period in the dead

ofD a glacial WwinterAand Yall but invisible advertising haven’t helped. Besides, musicals about Las Vegas have seldom worked on Broadway So let’s pray that “Honeymoon in Vegas” doesn’t disappear before it finds its audience. Because what its creators have whipped up is an unlikely but scrumptious blend of cheese and caviar. And the career-high work here of Mr. Brown and Mr. Danza is so stealthily sophisticated that it takes you a while to realize the sly genius of what they’re doing. The plot, which closely follows Mr. Bergman’s screenplay, but it also detours, with extravagant swoops, into the realms of outlandishness and really good bad taste. The sweet nebbish Jack Singer wants nothing more than to marry his longtime, longsuffering girlfriend, Betsy Nolan (a charmingly selfdeprecating Ms. O’Malley). The problem is that Jack is paralyzed by the dying curse of his proprietary mother, Bea whose ghost keeps popping up to block his path down the aisle. So Jack and Betsy flee from

New York to Las Vegas, where they encounter an equally formidable obstacle. That’s Tommy Korman (Mr. Danza), a big-time casino shark who instantly falls in love with Betsy, a ringer for Tommy’s

late, lamented wife. The course of true love runs on parallel rollercoaster tracks in “Honeymoon.” Tommy pursues Betsy with every clean and dirty trick at his disposal, and winds up winning the chance to spend a weekend with her after beating Jack, a born pigeon, in a poker game. Poor Jack must overcome a mother’s curse, a powerful rival’s charm and his own wimpiness in an odyssey that takes him from Las Vegas to Hawaii and back. That’s a lot of real estate to cover. But Anna Louizos’s perky sliding sets miraculously keep pace with the speeding story line, which winds up deploying singing ancestral Hawaiian statues and an airborne squad of Elvis impersonators. Mr. Brown’s songs seamlessly propel plot and define character in the way numbers did

in the heyday of Rodgers and Hammerstein. But he often inflects them with the ring-a-ding swell and swing you associate with Frank Sinatra recordings from the late 1950s and early ’60s. My favorite song of Tommy’s is “Out of the Sun,” an account of how his wife, Donna, a sun worshiper, died of skin cancer, which has all the cool wistfulness of Sinatra doing “It Was a Very Good Year.” Just listen to the melancholy resonance Mr. Danza lends the word “saddlebags,” which is how the doctors described Donna’s skin at the end. The tightrope between high wit and low humor is walked most adroitly by a supporting cast that includes Catherine Ricafort as a Hawaiian Mata Hari in Tommy’s employ; Matthew Saldivar as Tommy’s sidekick, Johnny Sandwich and, best of all, David Josefsberg as both the unctuous M.C. of a hotel floor show and a deus ex machina of an Elvis impersonator. There’s an unswerving professionalism at work here that consistently turns excess into something sharp, sweet and surprisingly refined. Tommy might use a cruder metaphor for this alchemical process — maybe something ending with “shinola” — but he’d say it like the unimpeachable gentleman gangster he is.
