The Theater Project will present “Murrow”, a one-man show about the life of famed broadcast journalist Edward R. Murrow. The play, written by Joseph Vitale, traces Murrow’s life from his early days in radio, through his broadcasts from London during the Blitz, to the McCarthy broadcast of 1954 and ends with his departure from CBS News in the late 1950s. Camp’s Secret Weapon: The Buzz About Emotional Intelligence and Your Child By Posie Taylor

hy consider summer camp for your child? Perhaps you hope to raise another Michelle Kwan or Tiger Woods. Maybe you are desperate for an alternative to a summer of day care, chauffeuring, and video games. There is another even more compelling reason to consider a high-quality summer camp according to the child development experts at the American Camp Association. This reason, while it has been true for decades, is finally getting the attention it deserves. Children at summer camps are learning vital life skills that will help them grow— and will make their lives healthier and happier all along the way. It’s the new buzz word in educational theory that’s been at work in quality summer camps for years: Emotional Intelligence. Jeremy and Tony are excited to go fishing. Their counselor helps them to work out a way to share the one rod fairly without arguing. Their new-found ability to share without anger carries over to their cabin and who will operate the only working flashlight. Sarah’s nature counselor watches with delight to see this shy nine-year-old gently and competently organize her camp friends into teams for a wildflower search. At the beginning of camp, Sarah was too nervous even to express an opinion about whether she preferred hot dogs or burgers on the grill. Matthew and Valerie watch out for Robert as he maneuvers the climbing wall. They yell encouragement, cheering on their camp friend, who, unlike his cabinmates, struggles daily with juvenile rheumatoid arthritis. On Opening Day, these two teased Robert about his unstable walk and slow progress across the field. Cabin discussions about disabilities, a counselor’s careful example of kindness and respect, and just spending time together have helped the three form a strong friendship.

Emotional Intelligence: Nature or Nurture? These children all demonstrate sophisticated skills in areas scientists are suddenly watching closely. Observers are finding that a set of abilities, collectively called Emotional Intelligence, has much to do with how children grow and succeed. These skills—self-awareness, self-control, empathy, the ability to wait (delayed gratification), the ability to listen, cooperate, share, and work well with others— are actually better predictors of adult success and happiness than traditional IQ scores. In Emotional Intelligence, clinical psychologist and author Daniel Goleman, makes two important assertions, assertions that parents may not find surprising. He reports on new research showing that children whose Emotional Intelligence skills are well-developed tend to be more successful at school, have deeper and healthier relationships, grow up to have more fulfilling work lives, and become valuable and contributing members of their communities. Goleman’s second assertion is that these Emotional Intelligence skills can be taught. Children can learn and practice

these wonderfully valuable qualities under the guidance of thoughtful and aware adults—parents, teachers, and youth leaders of all sorts. The importance of this assertion is hard to overemphasize. Parents have long tried to teach courtesy and politeness to their children, but were never sure their teaching could overcome inborn capabilities. Certain life skills seemed innate in kids—like the traditional IQ, children seemed to be born with certain levels of ability in these areas. Parents and teachers have assumed that the patience children display naturally is probably most of the patience they can muster, or that they are good or bad sharers, gentle friends or playground bullies from birth. A group of researchers, led by Howard Gardner, a psychologist at the Harvard School of Education, have proved otherwise. They have shown that thoughtful teaching, conversation, modeling, and practice can develop and nurture these skills, especially when that teaching is consistent throughout a child’s day and year. The evidence is clear! There are ways to help kids grow up to be the happy and productive people parents hope they will be. And summer camp is a vital part of the puzzle.

It’s not just in your head, either; 14 percent of Americans suffer from the winter blues and 6 percent have the more serious form of doldrums known as Seasonal Affective Disorder (SAD), according to research published in the journal Psychiatry. The blues may make you cut back on social interaction, sleep more and engage in comfort eating - all actions that can make your depression worse. Instead, try busting winter blues by engaging with others and taking part in activities that exercise and soothe all five senses.

Scent as a pick-me-up Apple pie, a holiday meal, vanilla or roses — almost everyone has at least one scent they associate with comfort and positive feelings. While humans’ sense of smell isn’t nearly as acute as that of other mammals, research suggests that smell is directly tied to mood. In fact, at least one study published in the online journal Chemosensory Perception links poor olfactory function to mental disorders. And the ability of scent to positively influence mood is well documented.

Chef Mitchell Altholz

itchell Altholz, Executive Chef at Highlawn Pavilion for the past ten years, likes to test himself with food. On a cold day in late January, he decided to challenge himself with what he considers to be an underutilized game meat: rabbit. He came up with the idea of cooking the leg as conﬁt, which is a common method for cooking duck. Not content with just one type of presentation, Chef Mitchell also hand-cleaned the rabbit saddle and prepared it like a rack of lamb, as well as wrapped the rabbit loin in Serrano ham and caul fat. The result — Deconstructed Rabbit, served with fresh vegetables — was that evening’s mouth-watering special. For home cooks who want to try their hand at cooking rabbit, Chef Mitchell recommends making a stew. Ask your butcher to cut up the rabbit for you. Sear the meat in canola oil with some salt, pepper and a dusting of ﬂour. Place the seared rabbit into a stew pot with ½ cup of red wine, a diced onion, two large diced carrots and enough chicken stock to cover the rabbit. Simmer the stew on low for one hour and the meat will fall right off the bone. Enjoy with a glass of Chardonnay or Pinot Noir. The venison recipe featured is Chef Mitchell’s home cook’s version of a game meat menu staple at Highlawn. He notes that

venison should be cooked rare because it is extremely lean. To ensure that the venison is tender, cut it on a bias and against the grain. He also recommends using canola oil because it has a high smoke point and no ﬂavor to alter the natural taste of the meat. Chef Mitchell likes to showcase fresh ingredients at Highlawn, especially those grown on the farm at the restaurant’s sister property, the Pleasantdale Chateau estate. As part of his culinary training, he lived in Bordeaux, France for seven years, where he was part of the farm-to-table movement long before it came to our shores. He has imparted this appreciation onto his talented sous chefs Foley Dowd and Tristan Tevrow and all of the chefs in his kitchen. Chef Mitchell is very proud of the farm, especially the raw honey that is made there and sold to the public. He continually seeks ways to integrate the farm’s produce into daily offerings at Highlawn. Highlawn Pavilion is located within the Eagle Rock Reservation in West Orange. Venison with Currant Jam Ingredients: 1 lb. venison strip or tenderloin Salt and pepper, to taste 1 tbs. canola oil 1 tbs. butter Pinch of Fleur de Sel (hand-harvested sea salt) or kosher salt ¼ c. currant jam Directions: Preheat the oven to 400F. Remove the silverskin from the venison and season it with salt and pepper on both sides. Heat an oven-safe pan on high, and add the Canola oil. When the oil is hot, add the venison and sear it for approximately 2 minutes. Turn the venison to sear on the other side, and add the butter. When the butter melts, spoon it over the meat. After about 2 minutes, place the pan in the oven and cook for approximately 4 minutes. Remove from the oven and let rest for about 5 minutes before cutting on a bias. When plating, sprinkle the venison with Fleur de Sel and place the currant jam on the side for use as a dipping sauce. Serve with celery root puree or mashed potatoes and your favorite vegetables, such as Brussels sprout leaves and carrots with smoked bacon all sautéed in olive oil. A Bordeaux wine makes the perfect accompaniment. Serves 2.

Quiescence: The Quiet Quest

here is something fascinating about a great blue heron and how it hunts for its prey. It stands still for long periods of time and suddenly explodes with a thrust of its beak to catch a fish. The blue heron is calm, patient, intelligent, present, determined and resourceful. We can learn a lot from nature.

There is value in keeping still and really listening to what someone is saying, not just hearing their words, but recognizing the expressions and enthusiasm in their message. A big portion of my business involves helping clients gain access to high level contacts in a variety of industries. I challenge sales teams to put together a top 20 target account list. When working with some of the reps, I tell them we are going to call on the president and CEO of large companies and they look at me like I’m a little crazy. The key to this approach is in the research that happens before we make the call along with the ability to get the person to talk while you listen. Recently I worked with a sales rep and went to an office building with many companies. Before every call we research the name of the company, the CEO and anything else about the company that we think will be helpful. We made seven calls and met with seven owners, partners and presidents. Very rarely do we go seven for seven, but nobody calls the top level because they think the executives are unreachable. On the fourth call, we walked in and asked for the CEO by name. We did our research and knew his background. The CEO came out and the first thing I said was how impressive his ten rules for success are, pointing out a few of them on the wall where they were hanging

with the company’s mission statement. I told him the rule I liked best was the one about listening to employees and customers. He was proud of that list and started telling Barry Farber us how he did that many years ago. He was passionate about his business and we listened with genuine interest. Then After a few minutes he asked the question that anyone should ask when two people come in unannounced: “And why are you here?” I simply told him I do consulting work for an IT and Document Management company. My sales rep said, “We research the companies we approach and tell them about how we might add value to their company. We were impressed with the work you do and the article we read about you in a local business journal.” The CEO smiled and continued talking about some of the work they were doing in Paterson and about the amazing the history of that town. Because he was so passionate about his work, we caught his enthusiasm. Of course you can fake interest in someone’s work to be courteous, but there was no faking here. He was really interesting and exciting to listen to. We remained quiet and listened for 85% of the visit. At the end, he introduced the sales rep to the person in charge of their office equipment and said with a smile, “I’m not very happy about our current equipment. Maybe you can do something about that?”

Students will participate in classes held indoors and outdoors to explore, discover, and examine local and exotic wildlife. Session 1 is March 30-April 2; Session 2 is April 7-10. Classes are 9am-3pm. Each session will have activities appropriate for three age groups: kindergarten & 1st grade, grades 2 & 3, and grades 4 & 5. Summer Zoo Camp: Come to Turtle Back Zoo for our fun, exciting, and educational summer camps. This summer, we are offering the following activities: • Zoo Tales is a half-day program for children ages 5-6 entering kindergarten. Children will read a series of animal stories to learn about the changes that occur with the seasons and how animals survive the changes in weather. • Say What? Animal Communication is for children ages 6-7. Animal communication is not all barks, meows, or chirps. Zoo campers will learn about the different ways animals communicate with each other from sound, to sight, to smell, and more. • Growing up Wild: Animal Development is for children ages 8-9. Some young animals look like tiny versions of their parents, but some look completely different. In this zoo camp, students

will learn about some of the differences between young animals and their parents. • Backyard Conservation is for children ages 10-11. It’s not only rain forests and coral reefs that require conservation efforts. Zoo campers will become junior conservationists as they learn about conservation issues occurring right here in New Jersey and how they can help. • Zoo Crew: Training and Enrichment is for children ages 12-14. Come learn how the animals are kept happy and healthy through training and enrichment. Zoo campers will learn how animals are trained, participate in training, and build enrichment items for our zoo animals.
