Inside ESSEX Cloverleaf Tavern Named “Oldest Business in Caldwell”
R
ight after prohibition ended In 1933, George Dorchak Jr. bought a liquor license for his new gentleman’s bar. On December 5, 2015, 82 years later, Cloverleaf Day was celebrated in Caldwell to honor the tavern as the town’s oldest business.

Three generations of Dorchaks’ have steered the business into the new century — keeping the bar and restaurant communitybased. Ryan Dorchak is the current general manager and keeps the tavern true to their dedication as the “Place Where Good Friends Meet.” The Tavern sponsors local clubs and can be counted on to support community events. The restaurant hosts weekly burger nights and family nights as well as a monthly beer appreciation club. Cloverleaf Tavern is the perennial winner of Best Burger in Suburban Essex’s Best of Essex Contest. In 2015 they received a gold medal in our newest category, Best Craft Beer. Cloverleaf Tavern is located at 395 Bloomfield Avenue in Caldwell.
Local School Districts Make the Grade!
Block and Zuckerman Comes into Focus

he best school districts in the state have been ranked by Niche.com, and several in Suburban Essex are among the Top 100. In the area, Livingston ranked the highest, at number 9 in the state and 78th in the country. The next highest local school district was Glen Ridge, ranked number 29 in the state and 228 in the country. West Essex took number 35 in the state, and Montclair scored 43. The two other area school districts that rose to the Top 100 were West Orange and CaldwellWest Caldwell, at 82 and 87, respectively. Niche.com based its ratings on statistics, student and parent reviews, and expert insights. Ranking factors include state test scores, college readiness, graduation rates, SAT/ACT scores, teacher quality, student culture and diversity and school resources. The intent behind the rankings is to provide a comprehensive assessment of the overall excellence of the school district.

The New Jersey School of Dramatic Arts Marks 12th Anniversary

he NJ School of Dramatic Arts, located at 593 Bloomfield Avenue in Bloomfield is New Jersey’s premier acting school, with over 30 instructional classes for adults, teens and children. Caldwell Environmental Commission Announces 2015 Sustainability Awards
A
t the December 1st Caldwell Council Meeting, the Caldwell Environmental Commission recognized the following for their commitment to better sustainability practices in town.
Dough Artisan Restaurant owner, Ed Simmons, was acknowledged for partnering with local farmers and promoting sustainability to provide Caldwell residents with the freshest possible dining experience. He was also recognized for the community-supported Agriculture Program he provides — his on-premise garden is particularly notable. Meghan Moran, Associate Director, Office of Student Engagement, Caldwell University was presented an award in appreciation of her help with the coordination of student volunteers for the Personette Pollinator Garden and for the student and faculty help on the Caldwell Day of Service at Caldwell’s other open space properties. Robert Bellasalma, Administrative Assistant, Caldwell was presented his award to recognize his continual help with all Environmental Commission projects, especially the Personette Pollinator Garden. The Commission and the Borough of Caldwell appreciate all of their efforts to make Caldwell more sustainable.

Est. 1951 With these three steps, you can get a better picture of your cardiovascular health and identify silent, hidden risk factors (like plaque in your arteries) that you may not even know are there. Get your blood pressure checked. Blood pressure measures how much force a person’s blood is putting on the artery walls as the heart pumps. High blood pressure, or hypertension, occurs when your heart has to work extra hard to pump blood throughout the body. High blood pressure often happens when arteries lose their elasticity through hardening caused by cholesterol, plaque or scarring. Many people do not experience symptoms of high blood pressure, so it’s important to have your blood pressure checked periodically. Screening for high blood pressure involves placing a pressure cuff around your upper arm to monitor both diastolic and systolic blood pressure. A normal systolic reading is between 90 and 119, and a normal diastolic reading is 60-79. Get your cholesterol checked. A simple finger-stick screening measures total cholesterol as well as three different kinds of lipids in your blood (HDL, LDL and triglycerides), which are important in determining your heart health. Low-density lipoprotein, or LDL, is known as the “bad” cholesterol and can build up in the walls of the arteries that feed the heart and brain. Along with other substances, it can form plaque - a thick, hard deposit that can clog those arteries. High-density lipoprotein, or HDL, is known as “good” cholesterol because it carries LDL away from the arteries and back to the liver, where it’s passed from the body. A high HDL level helps prevent heart disease, while a low HDL level increases the risk of heart attack and stroke. Triglycerides are the most common type of fat. Like cholesterol, they circulate in blood but are stored in the body for extra energy. A high triglyceride level combined with a low HDL or high LDL can speed up the process of plaque formation in the arteries. Learn about other risk factors for cardiovascular disease. Many people in the early stages of cardiovascular disease are asymptomatic, meaning they have no symptoms to indicate their health is at risk. Some common risk factors include age (55 and older), family history, tobacco use and high blood-pressure, other factors, such as high cholesterol, aren’t as easily observed. Preventive health screenings, such as those provided by Life Line Screening, can give you a fuller picture of how risk factors may be stacking up. et’s look at the second definition’s “perceived obstacle.” Many times the obstacle we face is in our own mind and becomes built up as something bigger than any other obstacle we will encounter. It will block more achievements, discoveries, and personal growth than all the excuses we’ve ever heard or have given. That obstacle is fear. I interviewed someone who understands fear better than most of us and brings his insight from a unique perspective. Nik Wallenda, King of the High Wire, is a seventh-generation member of the world famous Flying Wallena family. He holds seven world records for his feats. New York Governor, Andrew Cuomo, signed a bill into law allowing Wallenda to walk a high wire over Niagra Falls between the United States and Canada in 2012. Wallenda is also the first person to walk across the Grand Canyon on a tight rope without a safety harness.

Nik Wallenda: What a lot of people call fear, I call respect. What I mean by that is I don’t fear heights, I respect heights. I realize there’s definitely a risk there, but I also know with the right training, preparation, skills, and ability I can overcome the fear.
A handful of wire walkers have tried to get permission to walk across Niagara Falls for the past 30 years and none of them succeeded. I think a lot of that had to do with fear. As soon as they had a door shut in their face they turned around and gave up. My greatgrandfather taught me to never give up. (If) you pursue your goal and you’re persistent about it, you will reach it no matter what the challenge. Fear is very debilitating; it takes the life out of you, no matter what you’re facing. The key is to be willing to face your fears, respect your fears, and know that you’ll make it through. BF: I’d like you to expand on that word, respect. What can people do in their daily lives to overcome more of their fears and grow in the process?
NW: The most successful people in the world are risk takers. Risk takers are also the most confident people. It’s all about the mentality of how you go into a situation in your life. My grandfather said life is on the wire and everything else is just waiting. Your attitude controls your thoughts, your emotions, and the level of your success. I’ve had many doors closed in my face but had to keep a positive attitude during the process. I look at the end goal and not try to focus on everything in between. BF: So respect means that you study your craft, you train and prepare so that you diminish the risk. That preparation in itself makes you more confident. NW: That is a huge part of it. Preparation is the key element leading up to the event; it’s also another reason why we were successful in convincing both governments to allow the walk. This situation’s challenge was dealing with two countries with
two different types of laws that are over 100 years old. In the history of my profession nobody’s ever had to change a law, let alone the laws of two countries. But I always knew if I went in there with the right attitude and I was prepared properly for it I would come out with the outcome I wanted.
It all relates back to being prepared. Most people say “this guy must be out of his mind, he walks on a wire for a living!” What is normal to me is not normal to others. I’ve only walked on the ground a year longer than I’ve walked on the high wire, which I started doing at two years old (Nik is 33 years old).
We planned and made sure we covered every detail. The naysayers ask, “What about your safety, the public’s safety? What about the land?” We are prepared for anything that’s going to come our way.
BF: All the preparation helps us stop thinking when the actual event comes to fruition. In martial arts we call this “mushin,” no mind. If I have to think of what type of kick or strike I’m going to use when someone attacks me I’ve already lost. You cannot think; you must be so prepared that you act without thinking.
BF: What do you think about fear being good for you if you learn how to control it? Boxing trainer Teddy Atlas once explained that fear is like fire: it can heat your home, warm you, cook your food, but it can also burn up everything around you if let it get out of control.

E
xecutive Chef Vincent Raith enjoys all aspects of the culinary arts, which shows in every dish he lovingly prepares. Born, raised and trained in France, he approaches his menus from a unique perspective, to the delight of patrons of The Manor. Raith created this halibut recipe specifically for the readers of Suburban Essex. Noting that people eat with their eyes first, Raith strives to make all of his dishes colorful. This recipe is no exception, with a brilliant green sauce that will brighten even the gloomiest of winter days. Recognizing that halibut is one of the most expensive fish on the market, he says any white fish would be a good substitute. If seeking an alternate, Raith suggests snapper, flounder, tilapia, cod or haddock. Cautioning that whatever type of fish used should not be overcooked, he recommends testing the filet for doneness by lightly poking it— when the resistance is gone, it is ready for the table. At The Manor, Raith offered a variation of this dish on his chef’s tasting menu. His special offering included pieces of pickled Meyer lemon 60

rind in the sauce, steamed broccoli and a mixed microgreens salad featuring tiny julienned red bell pepper that had been placed in ice water to make them crispy. When asked to compare his native country to his adopted home, Raith says, with a smile, that he met his wife here. Describing America at a “melting pot,” he enjoys the feeling of everyone trying to build something together. “The United States is so welcoming of many different points of view,” notes Raith. Incorporating this sentiment in his kitchen, Raith is known for collaborating with every member of his kitchen staff. He involves everyone from line cooks to sous chefs when creating The Manor’s chef’s tasting menu, which changes every two weeks. This way, everyone in the kitchen participates in the creative process, resulting in new and interesting creations. Raith graduated from Ferrandi, one of France’s leading culinary arts schools. After working for a decade in Paris at one- and twoMichelin star restaurants, he moved to New York City and honed his gastronomic talents at such locales as The Plaza Hotel and The Pierre Hotel. Prior to coming to The Manor in April 2015, he was the executive chef at Splashlight Studios, one of NYC’s leading photography studios. HALIBUT WITH RISOTTO “PAELLA STYLE”
(Serves 2) FOR THE RISOTTO Ingredients: ½ onion, chopped 1 garlic clove, minced 1t fresh thyme, chopped 2T olive oil, divided 2c Arborio rice ½t saffron 1½ quart vegetable stock Salt and pepper, to taste ½ lb. chorizo, small dice 1 red bell pepper, small dice Directions: In a small pot, sweat the onion, garlic and thyme in 1T olive oil over medium-high heat, stirring often, about 3 minutes until soft. Add the rice and toast for 2 minutes. Add saffron and the stock, one ladleful at
a time, until absorbed, stirring constantly. This will take approximately 25 minutes. Season with salt and pepper. Meanwhile, in a small pan, heat 1T olive oil, chorizo and red pepper. When cooked through, season with salt and pepper and stir into the finished Risotto. FOR THE HALIBUT Ingredients: 1 lb. halibut 2T olive oil Salt and white pepper, to taste Directions: Season the fish with salt and white pepper on both sides. Heat a sauté pan with olive oil. When hot, add the fish and heat, flipping once, until cooked through.
FOR THE SAUCE Ingredients: 1T olive oil 1 shallot, chopped 1/2 c white wine 1 c heavy cream 1t chives 1t fresh Thai basil Directions: In a sauté pan, heat olive oil over medium heat and then sweat the shallots, approximately 2 minutes. Add the wine and reduce by half, stirring occasionally. Add the cream and reduce until the sauce reaches desired consistency. Take the pan off the heat. When the sauce comes to room temperature, add the chives and basil and blend in a blender for 40 seconds. Reheat the sauce and serve over the fish.
