even Caldwell University students dedicated part of their winter break to help repair schools and churches in remote villages in southern Belize.
After seeing what the Mayan people go without in material terms, junior nursing major John McLaughlin now reminds himself, “Don’t complain.” Katlyn Houtz, junior education and psychology major, added that the atmosphere made “you take a step back from what you are used to.” Houtz said she was particularly impressed by a principal who had to relinquish her interest in mechanics and engineering to become a teacher. “Now she is focused on making education more readily available to girls.” Associate professor of sociology and counseling and trip chaperone Professor Thomson Ling noted that the students’ dedication was truly rewarding. He felt the trip underscored just how people are connected. “No matter distance or culture, there are commonalities that we share. Just because there were cultural or language differences didn’t mean we couldn’t come together and accomplish great things.”

he National Ovarian Cancer Coalition (NOCC)—NYC and NJ Chapters, are hosting their 1st Annual Run/Walk to Break the Silence on Ovarian Cancer®. Organized by local Chapter leaders and volunteers, this event celebrates survivors, remembers those we’ve lost to ovarian cancer, and engages the community to run or walk for a cure. Registration will open at 9am. The 5K Race (USTA certified) will start at 11am with the 5K walk starting at 11:30am. arents who seek an academically challenging curriculum, coupled with Christian principles, continue to choose nationally recognized Trinity Academy. Its Pre-K through eighth grade program is the only school offering a Catholic, faith-based education in the West Essex area. Principal Mary N. Cassels explains that religion and values are imbued throughout the curriculum. Children of any religious denomination may attend Trinity Academy, however. Cassels says, “The benefits of our individualized attention and ability to speak freely about moral and ethical issues makes a Trinity education right for a lot of children.”

She adds that eighth graders are prepared for the competitive entrance exams of Catholic and private high schools in the area, noting proudly that “they all get in.” Trinity Academy is not just academics, however. All students, Pre-K to eighth grade, utilize technology in the classroom with iPads, Chromebooks and Smartboards. “We continually upgrade our computer technology with the latest hardware and software.” Students participate in an array of activities such as music, art, drama and sports. These extra-curricular activities are inclusive; no try-outs, no cuts. Notably, Trinity does not solely require an entrance exam to qualify for admission. Cassels explains, “We accommodate children with different levels of learning ability and we respect the uniqueness of each child.” This is achieved through small class sizes, differentiating instruction methods and a collaborative effort among staff. The cumulative effect of this holistic approach has garnered Trinity Academy
recognition as a 2015 National Blue Ribbon School. Trinity was one of 335 schools nationwide, and one of only 50 private schools, to receive the prestigious award from the United States Department of Education. “We’re very excited for the recognition of the work we’ve been doing for a long time,” says Cassels.

C
elebrating 20 years in business, Il Vicolo is the definition of extended family. From the staff to the manner in which every customer is treated to the owners, this welcoming eatery ensures everyone leaves with a smile on their faces. Executive Chef Adam Caviello has been with Il Vicolo since it opened. Born into a secondgeneration Italian-American family, he was steeped in the Sicilian traditions of his grandfather from an early age. Chef Adam learned all about cooking from his grandmother and honed his craft at the Culinary Arts Institute, specializing in Italian, French and American cuisine. Knowing his customers’ palates, he creates dishes that are health conscious, nutritious and delicious. Chef Adam opts for lighter ingredients, such as this salmon dish, which allows the quality of the ingredients to shine. In addition, recognizing that people eat with their eyes, he always adds colorful vegetables and salads to the plate. He trains his 54

kitchen staff for consistency, so that diners always receive the same level of excellence at Il Vicolo. Born in Albania to a long-line of restaurateurs, Remy Qosja and his two brothers Benny and Jimmy opened Il Vicolo in June 1996. In 2011, the siblings branched out to Northern New Jersey when Benny opened Vicola in Old Tappan. Jimmy followed suit the following year, opening Limoncello in Waldwick. Qosja stresses the mission of his restaurant is to offer “good service and fresh food, and to treat our customers as family.” He notes with pride that all of the pastas and desserts on the menu are handmade daily on the premises. “It is our attention to all the little details that makes Il Vicolo the place to share special moments,” says Qosja. Pistachio-Crusted Salmon with Cranberry-Peach Sauce
FOR THE SALMON
FOR THE CRANBERRY-PEACH SAUCE
FOR THE SPINACH POLENTA
Ingredients: 8 oz. salmon, skin off ¼ cup fish stock Salt and pepper, to taste 2T white wine 3T pistachios
Ingredients: 2 peaches, halved, pits removed ½ t vanilla 1 cinnamon stick 1T brown sugar 4 cups fresh cranberries 2 cups sugar 2 oz. water 1 shallot, chopped 1T sherry
Ingredients: 2 cups semolina 1 shallot ½ cup fresh spinach, chopped Salt and pepper, to taste 1T extra-virgin olive oil 1T butter
Directions: Toast the pistachios in a 350°F oven for 3 minutes. Let cool and chop. Set aside. Preheat the oven to 375°F. Place the salmon, skin-side down, in an oven-proof dish, and add the fish stock, salt, pepper and white wine. Bake for 10 minutes. Drain off the liquid and cover with the chopped pistachios, patting them down to adhere to the fish. Bake another 5 minutes or until cooked to desired doneness.
Directions: Combine the semolina, shallot, spinach, salt and pepper, and form into a log. Wrap in plastic wrap and refrigerate for 30 minutes.
Directions: Combine fresh cranberries, sugar and water in a saucepot. Simmer for 2 hours. Preheat oven to 350°F. Place the peaches in an oven-proof dish. Add the vanilla, cinnamon stick and brown sugar, and bake for 30 minutes. Let cool and slice. In a sauté pan over high heat, heat the shallot, cranberry sauce, peach slices and sherry until heated through.
Cut the spinach-polenta mixture into ¼ inch thick slices. Heat the olive oil and butter in a sauté pan. Cook the slices for 10 minutes, flipping once. To serve, place two spinach-polenta slices on the plate, side-by-side. Carefully lay the salmon over the polenta. Put the peach slices on top of the salmon and drizzle the rest of the sauce around the plate. Serve with lemon slices and colorful vegetables.
