ARC of Essex County Opens Race Registration

he Arc of Essex County, a Livingston-based nonprofit that provides support to individuals with intellectual and developmental disabilities, has announced that registration for its annual 5K run/walk fundraiser is now open! The race is scheduled for Saturday, April 27 and will begin at The Waterfront Park in West Orange. All proceeds from the race benefit The Arc’s programs and services that help 1,500 individuals with intellectual and developmental disabilities and their families served each week. The race is open to all kinds of runners, whether casual or avid. It is the perfect reason to lace your running shoes up and show support for the amazing association that has been serving Essex County’s disabled citizens for 70 years. When you awake, think about oft-used muscles and extend each one for 15-30 seconds.

Cancer Support for Women

omen Inspiring Nurturing Giving Strength and Support (WINGS), is a program for women who have or have had cancer. The program was started in 2010 by women who met each other through a holistic nurse at St. Barnabas Hospital, while they were undergoing cancer treatment. WINGS offers educational programs in the healing arts and group support to help regain emotional, physical and spiritual health. The programs, which are open to all from any town, include educational and holistic topics, focusing on mind, body, and spirit. WINGS mission is to provide a positive environment for women with cancer,— before, during or after treatment—to alleviate stress and anxiety through the healing arts, such as writing to heal, reiki, tai chi, yoga, drumming, music and meditation. These modalities help heal the whole person.

The first half of each program is devoted to sharing a holistic modality with the group. Each month a different presenter will demonstrate his or her program. The programs are led by people who have made the Healing Arts their passion and graciously share their knowledge and inspiration. The second half of the program is dedicated to sharing support, where women may talk with others who have had similar experiences. All are

verything you liked about going to the Ironbound section of Newark for Portuguese food is now found in Suburban Essex right on Livingston Avenue! Enter Assado, which in Portuguese is “Grill”– as in, on a summer evening, “Let’s do an assado.” All of the classic Portuguese favorites you expect to find are here. And they’re all noteworthy. Shrimp in Garlic Sauce is served with Saffron Rice and Spanish-style Potato Chips, in a rich sauce with just the right amount of garlic, and shrimp which have been cooked to that perfect tender moment. Polvo Lagareio is Grilled Octopus, served with Roasted Potatoes, Onions, Garlic and Peppers, drizzled with Olive Oil. If you’ve never tried Octopus, this is the (continued on page 54)

SEAFOOD PAELLA INGREDIENTS: 4 cups of Chicken Stock 2 cups of Fish Stock or Clam Broth ¼ teaspoon of Saffron Threads, crumbled ¼ cup Extra Virgin Olive Oil ½ cup of finely Chopped Onion 3 large Garlic Cloves, minced ½ teaspoon of Smoked Paprika 2 ½ cups of Arborio Rice place to do so. There isn’t a more traditional Ironbound dish than Seafood Paella. Assado’s is a combination of Lobster, Shrimp, Clams, Scallops and Mussels served in a bed of Saffron Rice with select seasonings. It’s everything Paella should be and more so. When pressed, owner Wilson DeSoussa will tell you he’s a steak guy, and that his favorite dish is the Cowboy Steak, and it’s served grilled just right. Do save room for the desserts. Any of which is a delightful way to end the meal, but the Portuguese Flan is a stand out. Couple it with a rich Espresso and you know you’ve been there and done the job right. DeSoussa, born and raised in that storied section of Newark, has brought the best of it to his current hometown of Livingston. It’s in his blood: his family was in the restaurant and food distribution industry as he was growing up, and as soon as he was old enough he joined the family business and worked his way up from busser to the front end then to the manager’s position. After a stint in Maize, the in-house restaurant at the Robert Treat Hotel in Newark, he says, “I saw a need for Portuguese food in Livingston.” He says it’s always something different every day. He loves meeting people, interacting with people, and serving people. But what he likes best about being in the business is simply: “the food and the customers.” Assado is a BYOB welcoming place, with terrific food, plenty of parking, and a warm and gracious host. One 12oz. package of Cooked Chorizo, sausages halved lengthwise and crosswise 8 large head-on Shrimp 1 pound Little Neck Clams and Cockles ½ pound of Mussels ¼ cup of thawed Frozen Peas Chopped Parsley for garnish In a medium saucepan combine the chicken and fish stocks and crumbled saffron and bring to a simmer. In a 15 inch paella pan or large enameled cast iron casserole heat the olive oil. Add the onion and cook over medium heat, stirring occasionally until softened, about 5 minutes. Add the garlic and paprika and cook until fragrant, about 2 minutes. Add the rice and cook stirring until the rice is evenly coated in the oil, about 1 minute. Add the hot broth and stir the rice once to evenly spread it in the pan. Cook over moderate heat, without stirring but rotating the pan for even cooking until half of the liquid is absorbed, about 15 minutes. Reduce the heat to low. Nestle the chorizo and the shrimp into the rice. Add the clams, cockles and mussels hinge side down and cook turning the shrimp halfway through until the shrimp and shellfish are cooked through and all of the liquid is absorbed, about 20 minutes. Scatter the peas on top and let stand for 5 minutes. Garnish with parsley and serve.

ear will block more achievements, discoveries and personal growth than all the excuses we’ve ever heard or have given. Here’s someone who understands fear better than most of us and brings his insight from a unique perspective. Nik Wallenda, King of the Highwire, is a seventh-generation member of the world famous Flying Wallenda family. He currently holds 7 World Records for feats accomplished on the highwire and on “The Wheel of Death.” Barry Farber: What does the word fear mean to you? Nik Wallenda: What a lot of people call fear I call respect. What I mean by that is I don’t fear heights, I respect heights. I realize that there’s definitely a risk there, a danger there, but I also know with the right training, preparation, skills and ability that I can overcome the fear. BF: I’d like you to expand on that word, respect. What can anybody do in their daily lives to overcome more of their fears and grow in the process? NW: The most successful people in the world are the

ones that take risks. They’re the most confident people as well because they’re willing to take those risks. It’s all about the mentality of how you go into a situation in your life. I look at the end goal and try not to focus on everything in between. I like to relate it to relationships in general. When you’re dating, and you break up with someone you’re in love with, you feel like the world is over. You feel like life is not worth living. And then six months from now or a year from now you find someone else. If you’re able to look six months or a year ahead you would’ve never had that mentality in the first place. It just has to do with everything that you deal with in life. Your attitude controls your thoughts, your emotions and the level of your success. BF: So respect means that you study your craft, you train and prepare so that you diminish the risk. That preparation in itself makes you more confident. NW: And that is a huge part of it. Preparation is the key leading up to the event. I prepare for anything that’s going to come my way. BF: What do you think about fear being good for you if you learn how to control it? Fear is like fire, it can heat your home, warm you, cook your food, but it can also burn up everything around you if let it get out of control.

all relates to respect. When a fighter goes into the ring he definitely is not afraid of the fighter but he respects him. Many people would look at that and say does he respect him? Or is he afraid of him? There is a very close connection between those two in my opinion. Fear and respect. BF: Fear is an acronym that stands for False Evidence Appearing Real. We increase the fear by thinking the event is going to be much worse than it really is. NW: It all relates back to being prepared. In my line of work, I started walking the high wire at age 2 years old. Most people look at that and say this guy must be out of his mind. He walks on a wire for a living! My grandfather said life is on the wire and everything else is just waiting. What is normal to me is not normal to others. It’s just like walking on the ground. Obviously, it becomes more complex when you add in weather conditions and heights. I’ve only walked on the ground a year longer than I’ve walked on the wire. BF: So respect for the event so you prepare and control the fear, look at the end goal and keep a positive attitude through the difficult times. Some great advice from the king of the high wire.
