LIVINGSTON TOWNSHIP Marks Its 200th Year

S

ince its incorporation in 1813, Livingston township—which has a rich history of volunteerism— will honor its roots with a year of celebrations coordinated by the Livingston Bicentennial Committee. Events have been scheduled for each month of the year. The events began in January and February and honored the volunteers and families that founded the township. Future events include an April 11th visit from Governor Chris Christie, a Livingston native; a birthday party hosted during May’s Youth Appreciation Week; a larger fireworks display on July 4th; a town-wide picnic in September; and a Gala in October, where a book commemorating Livingston’s Bicentennial will be unveiled. Banners announcing the milestone anniversary will be displayed and daffodils will bloom throughout town. Additionally, pictorial displays and costumed residents will reenact moments from the township’s storied history and the library will hold programs and tours of historic areas of town. The Livingston Bicentennial Committee is located at 357 South Livingston Avenue and more information is available by visiting www.livingston200.com.

Century-Old Garden Thrives in Advance of Public Debut

S

hort Hills’ Greenwood Gardens will open to the public on a permanent basis on April 27th following completion of the garden’s first phase of restoration, according to Peter Blanchard III, Chairman of the Board of Trustees. “As a culture, we need places like Greenwood Gardens, where people can come together to spend time and relax,” Blanchard said. “Whether the definition of relaxation be sitting on a bench or practicing yoga in the open air.” The Blanchard family has owned Greenwood Gardens since the 1950s and Blanchard, his wife Sofia and their son began the pro-

cess of revitalizing the gardens in 2000. The garden is now one of only 16 exceptional gardens endorsed by the Garden Conservancy. Visitors can expect activities ranging from horticulture, garden tours, and morning bird walks to flower arranging classes and jazz picnics. Volunteers are invited on Mondays and Wednesdays to help tend to the gardens. Greenwood Gardens is located at 274 Old Short Hills Road in Short Hills and will be open on Sundays thru Tuesdays from April 28 through October 29. For more information on Greenwood Gardens, please visit www. greenwoodgardens.org call 973258-4026.

Local Resident Weds Couples Atop

EMPIRE STATE BUILDING

W

est Orange resident April Beer officiated the wedding ceremonies of three couples on top of the Empire State Building on February 14. The event, which was filmed as part of wedding guru Preston Bailey’s Valentine’s Day special, featured three separate ceremonies all officiated by Beer, an ordained Interfaith Minister and Life-Cycle Celebrant©. Beer, who’s friends and family have nicknamed her “The Rev of Love”, has been officiating wedding ceremonies for more than 8 years and was chosen by a member of Bailey’s team with whom she has worked in the past. Beer was given 10 days to work with the couples to design their ideal ceremonies. “It was a great honor being selected as the Officiant to preside over the Valentine’s Day Weddings at the iconic Empire State Building,” Beer said. “I had the pleasure of working with 3 wonderful couples, and created custom ceremonies that were based on each of their personalities, values and love for each other.” The show aired on the WE Channel on February 23 and March 2 at 8:30am. April can be reached at 973-865-3740 or by visiting www.AprilBeer.com.

Spring into Action Time to get outside and shake your lawn and garden awake

t

By Fran J. Donegan

hose first few buds and that unexpected mild day remind us how much we missed spring through the long winter. now that the warm weather is here, it’s time to get the yard ready for the hours you will enjoy outside. But because of the storms that hit our area last fall, this spring cleanup may be a little different from those in the past. “Many trees and shrubs were damaged and uprooted last fall,” says Jason Sponzilli of the Sponzilli Landscape group in Fairfield. “Many of those trees and shrubs will have to be replaced or an unsightly tree stump removed.”

once you have repaired the obvious damage, start making a list of how to improve your lawn, gardens and outdoor living areas. “one good thing to do this time of year is to power wash stone patios and walkways,” says Eric Von Hoffmann of Von Hoffmann Landscape Architecture in Montclair. “The power washer will blow out the dirt and weeds. Then you can add new stone dust to the joints to give the walk or patio a fresh look.” Here’s a checklist of other chores that our experts recommend: • remove winter debris from flower beds and lawns. • Dig any new beds you have planned. • Work compost into planting beds. • prune and fertilize roses • Look up and check for damaged tree branches before they are hidden by leaves. prune or have a professional prune away the damaged branches. • Edge planting beds. This makes the whole yard look better and makes maintenance easier later. • plan and make a note to order the spring bulbs you will plant in the fall to bloom next spring • Seed new lawns and reseed bare spots.

“For lawns, a good way to get started this spring is to put down an organic fertilizer and some crab grass control,” says Jason Sponzilli. “organic lawn care is becoming more and more popular.” Sponzilli Landscape group is an authorized BeeSafe dealer and applicator. BeeSafe is an organic turf care system that feeds and enhances a lawn without the use of chemicals. According to BeeSafe, organic treatments provide a rich, lush lawn that requires less watering and less mowing. “if you shop at a grocery store such as Whole Foods, you are mindful of what you are putting in your body,” says Jason Sponzilli. “if you have children or pets, you should be mindful of what you are putting on your lawn because it can get tracked into the house.”

MAJor iMproVEMEntS

For additions to your yard, such as patios, walkways and new flower beds, start jotting down ideas and drawing up plans. “technically, now is a good time to get started on yard projects like patios, retaining walls and walkways,” says peter De Franco of De Franco and Sons in pine Brook. “That way by the time vacation time rolls around and the kids are out of school, the project is done, the construction equipment is out of the driveway and the yard is yours.” As with any major home improvement, the materials, colors and style of a new outdoor living area and plantings should meet your needs and complement the style and look of the house and the neighborhood. For a design that contains multiple improvements, work in phases. “take the design and start with the phase that is most important to you and one that meets your budget,” says ron Lang of garden Masters in glen ridge. “it’s not like buying an expensive car where you can’t buy it in phases. if you are designing an outdoor living space or redoing your entire yard, you can do it in several different phases.”

gArDEn HELp

Because each yard has different needs, you may be unsure about what to plant, when to plant, or how to take care of your yard. For answers, you may visit the cooperative extension program at rutgers at www.njaes. rutgers.edu/garden/. There you will find lawn and garden information and contacts for the various Master gardener programs in the area. Master gardeners are people who have been trained at rutgers and who can answer any gardening questions you may have. s

Other Spring ChOreS

T

he arrival of spring signals a round of thorough cleaning and de-cluttering for many people. Often overlooked are the gutters and downspouts. Make sure they are free of debris and drain smoothly. A clogged gutter can allow water from heavy spring rains to back up under the roof shingles, causing leaks inside the house. To clear gutters, wear work gloves and make sure the ladder is level and stable. Spring is also the time to clean out attics, basements, sheds and garages. If possible, remove everything, clean the space and then install shelving and other storage devices to make the space more efficient. “Many people find it very stressful to go through and dispose of their unwanted items,” says Louis Mauriello of Champion Waste Removal. “We aim to take the pain out of the project by helping our clients organize their junk. We assist them in donating or selling anything that qualifies, and educate them on what we can recycle for them. Everything else is disposed of in the most eco-friendly way possible.” For hazardous materials, such as paint solvents, antifreeze and pesticides, take advantage of the Essex County Household Hazardous Waste Collection Day on May 4. Go to ecuanj.com/newsevents.html for a list of acceptable and unacceptable items. Morris County residents can call 973-829-8006 for instructions on dealing with hazardous materials. s

C

ustomer satisfaction is the hallmark of Stettler Builders, Inc. a company that prides itself on a large number of repeat customers. Stettler Builders, Inc., built its reputation by providing one-stop shopping, performing high-quality work, and being sensitive to the homeowner’s needs, all of which have allowed the company to not only survive, but also to flourish, for 33 years. Located in Montclair, the company is a full-service residential building contractor that provides general contracting services and also performs restorations and renovations of both vintage and traditional homes. Stettler Builders, Inc., provides one-stop shopping for these homes by performing interior and exterior work that includes additions and alterations, interior design, and decorating. “We’ve always focused on vintage homes and buildings and renovations,” says Dennis Sansiveri, President of Stettler Builders. “That’s what we specifically do. There’s never been a line of other things.” This laser-sharp focus has allowed the company to excel in its chosen area. Stettler Builders has its own custom cabinet

and millwork department, allowing the company to provide matching details that other companies can’t, according to Sansiveri. In addition, 33 years of experience gives the company a competitive edge. “We’ve seen everything in old homes that we’re going to see,” says Sansiveri. “We have experience in all aspects of the field, and we can match the existing details in a 100-year-old house.” As a result, Sansiveri says, “At the completion of the job, most homeowners say they can’t tell where the old house ends and the new house begins.” This level of attention to detail speaks for itself and is one reason Stettler Builders has many repeat customers. Sansiveri notes that the company has recently completed renovations for a customer who originally contracted with them 16 years ago. Stettler Builders has also worked on homes that were eventually sold and whose new owners hired them to come back and perform additional renovations. The range of exterior services provided by the company includes roofing, porches, patios, decks and siding, in addition to columns, steps, and railings. Stettler Builders can also build tennis courts, pools and spas,

Dennis sansiveri

and provide heated driveways and walkways. Interior services include flooring, ceilings, wine cellars, stairs, and railings. From great rooms and home theatres to mudrooms and gourmet kitchens, Stettler Builders can modernize entire homes or provide restoration, while maintaining historical elements. The company can also provide custom millwork and cabinets for kitchen and butler pantries, closets and dressing rooms, and curved staircases and railings. In addition, Stettler Builders provides built-in cabinets for dining rooms, bathrooms, and media centers. The company’s finishing services include tile and stone designs, interior designing and decorating, as well as space planning and layouts and house staging. As an established company that continues to be relevant in the 21st Century, Sansiveri notes that the greatest challenge the company faces is trying to keep the architecture and quality that homeowners want without allowing the cost of the job to be prohibitive. Sansiveri concludes, “It’s a delicate balancing act to do a great job on the client’s budget.” s Stettler Builders Montclair, NJ • 973-746-2719 www.stettlerbuildersinc.com April 2013

Window Designs by Michele Creates the Perfect Window Treatment

M

ichele Trechak has spent over two decades creating beautiful window treatments for homes throughout New York and Northern New Jersey. When working with a client, however, she considers herself both a detective and a designer. Michele, whose motto is “It’s all about you,” believes in really getting to know a client’s personality and lifestyle before making any specific recommendations during her free in-home consultations. She explains, “When a new client calls or e-mails me, I prefer to call him or her back, so they can tell me about the project in detail. Then, when I go to their home, I ask a lot of questions so that I can figure out what they want from their window treatment. Do they want privacy or light control? Warm layers, a light and airy look or a bold statement? On many occasions, a client has no idea what he or she wants. This is no problem for Michele; she simply does a bit more sleuthing. She also comes prepared, bringing to a consultation her own portfolio of previous projects, as well as sample books of shades and blinds or fabric swatches for curtains and drapes, depending on what the client has indicated during the initial phone conversation. Michele is a fan of the high-end Photo by Dan Epstein Hunter Douglas brand, carrying HD products and offering new clients who email her a free copy of their book The Art of Window Dressing. In addition to Hunter Douglas, though, she also carries lower-cost brands. Often, when going through the portfolio or sample books, a client will have an “aha!” moment. This makes Michele very happy: “I just love it when a customer says ‘Yes, that’s it!’ Then I feel like I’ve done my job. I really want my clients to have fun throughout this process.” She also wants them to be thrilled with the end product. To guard against any unpleasant surprises, she notes, “I will go to great lengths and expense to show them exactly what their order will look like.” These include photos, pieces of wood poles, and physical samples of the blinds or shades chosen. Once a client has figured out — Michele Trechak what he or she wants, Michele will take measurements and get back to him or her with a price quote, generally within a few days. When fabrication of the treatments is completed, the customer will be contacted by Larry Archambault to arrange an appointment for installation. Larry, who is a certified professional installer, meticulously installs every treatment to the customer’s satisfaction. Michele works with several drapery workrooms to custom-create the curtains, drapery and top treatments. Whichever type of treatment a customer chooses, Michele will work hard to ensure that he or she will be thrilled with the result. After all, she concludes, “This is not just how I make a living; this is my life.” For a copy of the Hunter Douglas book, please e-mail Michele@WindowDesignsByMichele.com. 

SpRING REvIvAL

By Fran J. Donegan

After four years of surviving with a faint pulse, the local real estate market shows signs of coming back to life.

T

he ice on the Orange Reservoir isn’t the only thing that has thawed as we go deeper into spring. The local housing market shows signs of loosening up and nowhere is this more evident than in the sales of new homes. “Believe it or not, the market is stronger than it has been in the last few years,” says Gary Hayum, one of the owners along with Joseph Feldman of Highview Development Associates LLC in Millburn. “There are a lot of young couples looking for the type of home we build.” A number of developers and realtors in the area echo those sentiments. Rich Romano of Royal Wave Development in Short Hills, whose company is developing townhomes and condos in Madison, says he is seeing interest from empty nesters. “These people are looking to simplify their lives,” Romano says. “They have a home here as well as Florida or somewhere else. They tend to travel a little more, and they don’t want to worry about mowing the lawn or shoveling snow, so townhome and condo living appeals to them.”

T

The Big Draws

What are the features the typical home buyer wants? Easy transportation to New York and good school systems are two draws to the area, another is layout. One popular design feature, according to a survey conducted by the National Association of Home Builders (NAHB) of over 3,000 new home shoppers, is a kitchen open to the family room. Seventy-four percent favored that type of layout. The desire for a formal living room is disappearing among new home shoppers, with 37 percent saying they would buy a house that does not have a formal living room. Other most wanted features include energy-efficient construction and appliances, laundry rooms, wireless security systems, home

theaters and wireless home audio systems. In kitchens, buyers want table space for eating, wood cabinets, natural stone counters and walkin pantries. Master suites should have a separate tub and showers, jetted tubs and double vanities. Outside, buyers look for exterior lighting and some sort of patio or deck for entertaining and relaxing. “The biggest change we have seen is that buyers today are more savvy then ever,” says Jodi Rubenstein of Coldwell Banker, Short Hills whose team has worked with Hayum on many of his projects. “They have access to more information because of the internet. When they come to look at a house, they arrive informed.” Another change is the interest in multigenerational housing. According to Karen Bigos, “Many buyers come from out of the area, and about 40 to 50 percent come from other countries.” Whether it is for an extended family living together or for visitors, “a nice bedroom or even a suite for parents on the first floor is a big plus, Bigos says. “When people from another country come to visit, they don’t come for a week, they often come for months.” s

QUALITY TRUmpS QUANTITY

he average new house grew to 2,5325 square feet last year, up from 2,362 square feet as recently as 2009. The typical buyer wants three or four bedrooms, a large master suite (sometimes two master suites), multiple bathrooms, storage space, media rooms and bonus rooms although this trend has modified somewhat. That is a national average. At the upper end of the market, houses tend to be larger. For exam-

“After a tough four years, banks are now lending, interest rates are still low, consumer confidence is higher and there is a shortage of inventory,” says Karen Bigos of Towne Realty Group in Short Hills. “The market is healthier. I think all of the train-line towns are healthier.”

ple, Highview Development Associates used to build 10,000 square-foot houses in Short Hills, they now concentrate on homes in the 5,000 square-foot range. Not small by any means, but considering the dynamics of the Short Hills market, cutting the typical house size in half is a major step. “people want to be in Short Hills because of the school system,” says Hayum, so they will take a smaller house with lower property taxes

so that they can live here. Instead of increasing the size of the house, we have raised the level of the interior finish work. In other words we provide quality rather than quantity.” That approach jibes with the respondents of the NAHB survey. When asked about tradeoffs, 62 percent of buyers said they would take a smaller house with high-quality products and amenities over a larger house. In the end, buyers want quality homes. s

HEALTH & BEAUTY By Julie Jacobs

LIVING WITH ARTHRITIS Know the Facts, Follow the Treatments, Feel Well ar·thri·tis [ahr-thrahy-tis] noun

acute or chronic inflammation of a joint, often accompanied by pain and structural changes and having diverse causes, as infection, crystal deposition, or injury.

It strikes one of every five adults, afflicts 300,000 children and, by all expert estimates, will affect 67 million Americans by the year 2030. Without question, arthritis has become one of the greatest public health problems and one of the leading causes of disability in the United States, costing billions in lost productivity and associated medical costs. With National Arthritis Awareness Month right around the corner in May, here’s a look at the country’s most prevalent chronic disease.

J

ust what is arthritis? It refers to the more than 120 conditions that involve the joints and their surrounding connective tissue. Among the most common forms are lupus, gout, fibromyalgia and especially osteoarthritis and rheumatoid arthritis. Osteoarthritis, which develops with age, breaks down the cartilage that cushions bones, resulting in misshapen and painful joints. In cases of rheumatoid arthritis, which can occur as early as adolescence, the immune system attacks body tissue, prompting joint inflammation and pain. The incidence of arthritis is highest among women and tends to run in families, and while advanced age is a risk factor, so too are obesity, joint injury and repetitive joint stress. Because many people become debilitated from arthritis and must curtail their personal and professional activities, early diagnosis is key for prompt treatment. Arthritis is typically confirmed through physical exam, lab tests, and imaging modalities like 50

x-ray, CT scan, MRI and ultrasound. Interventions including medications, physical and occupational therapies, and range-ofmotion and stretching exercises can then make a big difference in minimizing symptoms, promoting wellness, preserving independence and improving quality of life. Self-management techniques, such as following good nutrition, avoiding repetitive joint use, engaging in regular physical activity, and maintaining an appropriate weight, also can have a positive impact and avert the incidence and progression of the illness. Weight is particularly important, as the more extra pounds you carry, the greater the stress on your joints, particularly your knees. Finding ways to simplify doing tasks at home and running errands around town is critical to self-management as well. Try these tips: • Wear clothes and shoes with snaps, zippers or Velcro strips rather than buttons and laces • Transport cleaning items on a wheeled cart • Keep bathroom and kitchen equipment in easy reach • Use drive-through windows and delivery and online services • Employ assistive devices like walkers and canes, and pain-relieving ice packs and heating pads • Take frequent breaks throughout the day • Ask for help when needed You may want to complement your treatment regimen with alternative therapies such as yoga, acupuncture and transcutaneous electrical nerve stimulation (TENS). TENS involves stimulating the nerves near painful joints with mild electrical impulses that can interrupt the transmission of pain signals to the brain. When all traditional therapeutic measures have been taken, but chronic pain persists, joint replacement or joint fusion surgery may be warranted. Healthy living with arthritis is possible, but it’s important to know the warning signs, seek treatment early and understand your particular type of arthritis. 

Foods to Fight Arthritis If you suffer from arthritis, you may be able to find relief through what you eat. Omega-3 fatty acids, found in such fare as salmon and sardines, and resveratrol, contained in wine and grapes, can fight the inflammation of arthritis. Vitamin C, a nutrient in citrus fruits like oranges and grapefruits, helps promote healthy joints. And tryptophan, found in nuts, beans and lentils, can diminish pain. Nutritionists also recommend using olive oil, taking flaxseed and Vitamin E supplements, and reducing consumption of fried foods, meat and dairy. Helping You Look Your Best A Q&A WItH DR. JANet M. NeIgeL

O

ne of New Jersey’s top cosmetic surgeons, Dr. Janet M. Neigel brings more than 25 years of expertise to every surgery, whether plastic or reconstructive. Not only is she the founder of the Neigel Center in West Orange, she’s a board-certified ophthalmologist and ocular facial plastic surgeon and cosmetic professional who trains other physicians and continually keeps abreast of advanced techniques, specializing in working with the thin, delicate tissue of the eyelids and tear ducts. Here, Dr. Neigel explains what patients can expect from the Neigel Center. Dr. Janet M. Neigel

Q: What advice do you have for first-time patients? A: I recommend that they come into the office relaxed

and with plenty of time for their appointment. It also helps if they’ve done some research—although it’s not necessary—to get an idea of what type of procedure they’re interested in. They’ll speak with our cosmetic coordinator, Mary Jo Valenza, to get a feel for what they’re doing. It’s also a good idea to come in with a budget and a timeline, because both of those factors will determine what’s best for the patient. We’re happy to suggest other options that fit their budget or time constraints, but no matter what, we speak with them about which improvements would make them feel better about themselves. Age is just a number—a 40-year-old can look 25, while someone in their 20s can look like they’re in their 40s. It’s more of a visual aging process than chronological age.

Q: I’m interested in injectables—are they right for me? A: Some people are better candidate for injectables

than others. Some of our clients prefer to start with facial treatments in our spa, while for others, Botox, injectables or cosmetic surgery may be better options, depending on the situation. We offer lunchtime treatments, during which you can come in on your lunch hour, get treated and go back to work with no one knowing what you did—these treatments may involve minor swelling and some redness.

52

SUBURBAN ESSEX MAGAZINE

April 2013

Q: How safe are these procedures? A: I will not do anything I wouldn’t do to myself. On

our website, www.eyelid.com, you can see “before” and “after” pictures showcasing our fantastic results. Not only do I keep up on the latest techniques and products, but I also train and teach other doctors. A great physician will know all the nuances—what works best on different areas of the face.

Q: What are some of the injectable fillers you use? A: One of the best fillers out there is Sculptra, which

is my favorite product. It’s like a liquid face lift and is great for filling in fine lines in the face and to reduce sagging. It’s ideal for filling in cheeks, temples and the jowl areas and the laugh lines around the nose and mouth. I call it “delayed gratification,” because Sculptra stimulates collagen production, which then “grows” from within. For some people, it makes the surface of skin look better because it treats the fine lines that Botox can’t get. The best part is that Sculptra lasts up to two years, so it’s one of the best values in fillers. Juvéderm and Restylane also provide great results. s

Growing Lustrous Locks with Laser Precision Produces Favorable Results

I

t used to be that balding was an issue that was experienced primarily by men, but in recent years the numbers of women seeking solutions to thinning hair has grown, and according to the American Hair Loss Association, women now make up 40% of the population suffering through hair loss. With hair loss increasing and crossing gender barriers, treatment options besides spray paints or transplants are needed. Anagen Hair Solutions in Montclair is one such option, offering the latest in laser technology to boost hair growth. “There are no other hair growth methods available other than hair transplants,” says Elaine Magliacano, owner and operator of Anagen Hair Solutions. “Even with hair transplants, surgeons are using lasers both to grow the hair more quickly and for maintenance.” Anagen Hair Solutions opened in July 2011 and is run by Magliacano and her customer-care consultant in order to provide each client with the most personal service possible. Both are trained and qualified to administer the laser treatments. “The company from which I purchased my laser provided education and on-site training,” Magliacano explains. “I perform

the initial analysis and checkups involved. I have been in the hair restoration business for 15 years, am a member of the American Hair Loss Association and have various certifications.” After Magliacano provides a free consultation and determines if a client is a candidate for the treatment, a cool, lowlevel laser is used “to bring blood flow to the follicular unit, stimulating quicker hair growth, providing the follicle is still alive.” The process is painless and has no known side effects. The procedure’s success rate varies from client to client. “Everyone responds differently,” Magliacano states. “The earlier in the hair-loss stage that treatment begins, the better the results will be. Far too often, a person may be in denial, thinking the hair loss may stop, or they just may be ignoring the situation. It is imperative to take action when they see signs of hair loss. Caught in this early stage, we can maintain and reverse it.” While early intervention will yield the best results in slowing hair loss, Magliacano believes that to sustain favorable results, a maintenance program should be followed. “Once someone experiences hair loss— whether genetic, hormonal or whatever the

“Even with hair transplants, surgeons are using laser to grow the hair more quickly and for maintenance.” —elaine Magliacano, owner, anagen Hair Solutions case may be—that person will always be susceptible to losing hair,” advises Magliacano. “Like dieting and exercising, it is a way of life to maintain what you have achieved. Clients can come in once or twice a month, or purchase a laser comb, which I provide, to use for home use.” While not strong enough to replace laser treatment, the laser comb is an effective maintenance tool for clients. Additionally, Magliacano offers hair restoration products that can speed up results by up to 30-40% as well as hair replacement, another service, that uses the “finest, state-of-the-art hair systems” to replace lost hair. s Anagen Hair Solutions 89 Valley Road, Montclair • 973-746-0061 www.anagenhairsolutions.com April 2013

The Replacements

iPhones Set the Pace

A

study performed by physiologists at Simon Fraser University in British Columbia found that a very rhythmic beat could effect a runner or walker’s pace. This suggests that listening to music with upbeat tempos can help walkers and runners maintain faster paces than their bodies would normally move at. The scientists who conducted the study helped launch an iPhone app called Cruise Control, which adjusts the tempo of a user’s music to control his or her pace. The app scans the phone’s pre-existing music library for good running songs; then the user selects one of four running modes: Free Run, which automatically adjusts the rhythm of the music to match the runner’s rhythm; Pace, which adjusts music to a target speed set by the user; Heart Rate, which adjusts the music’s temp to the user’s set heart rate (requires a heart rate monitor) and Cadence, which adjusts music to a user’s target stride rate.

Or, instead of using sour cream in your Mexican dip, replace it with plain Greek yogurt and save 315 calories. Exercise What You Eat

H

eaded to the gym later? Did you know that what you eat—and when you eat—can have an impact on your workout and cause stomach cramps and other hindering side effects? Two hours before working out, avoid high-fiber veggies like broccoli, onions and beans, as well as foods that are high in fat, such as burgers and ice cream. This is the time to stick to foods with protein, carbs and healthy fats—a PB&J or grilled chicken, for example. If you’re fueling up an hour before the gym, avoid gas-producing fruits, like apples and melons. Instead, have a small bowl of cereal or a light, easily digested carb/protein-filled snack. For a quick bite 15 minutes prior to a workout, eat a banana or some applesauce and stay away from bagels, granola bars and other foods with large servings of carbohydrates, protein, fat and fiber. DIAMOND MINDS By Barry Farber

BUILDING A CHAMPION PART 2

An interview with New York Giants quarterback Scott Brunner

Barry Farber

(Continued from the March edition)

BARRY FARBER: Coaches and business leaders often say that we have to go back to the basics but if you stick to the basics, you never have to go back to them. SCOTT BRUNNER: Absolutely. Now football fundamentals are about ball handling and footwork. The easiest way to get benched as a QB is to turn the ball over through a fumble or interception. We therefore base all our movements around ball security. We really zero in on the specific moves that you need to make as far as handling the football and moving your feet in whatever situation you find yourself. However, we don’t want players to become robotic in their moves; we want them to retain their natural instincts to react more efficiently. By being efficient, the QB essentially slows the game down in his mind and gains extra time in the pocket to make necessary decisions. BF: What about football IQ? SB: We define that as “vision and decision”: what you see on the field, what decisions you

make, and how quickly you can link those actions together. The quicker you can see something and make a decision about it the more likelihood of success. A big concern for emerging quarterbacks is how they will adapt to the speed at which the NFL game is played. I tell quarterbacks, “No matter how fast an opponent might be, he cannot run as fast as you can think.” For a QB the mind is the great equalizer. BF: How do you prepare a quarterback mentally before a game? SB: As a coach of individuals—not of a football team—I have to be a little more agnostic in the way I approach training because they’re going to join a team with its own philosophy and plays. I try to give them an understanding of the game as a whole and how they can use the tricks that I gathered along my career.

on those consistent things. BF: Some people prepare themselves right before the game with different methods to get in their zone and focus. SB: That’s psychological preparation as opposed to mental preparation. With mental preparation you’re in the classroom learning the plays, going over the films, and visualizing the plays that are going on. Psychological preparation is how you deal with all this right before live play. You’re trying to project yourself into a live situation during the week but you’re not actually in the live situation. That’s where a lot of people end up choking. In the live situation they don’t trust what they’ve worked on the week before and they end up focusing on the result rather than the process. When the person is focused on the process the results usually take care of themselves.

I played for many different coaches with many different philosophies, yet I found many consistencies among them. So I try to zero in

lassy and elegant best describes the food at Bellissimo’s, and sleek and stylish best describes its décor. Add to these winwin dynamics attentive and smooth tuxedoed service, and the top-tier Little Falls restaurant, which recently reopened with original owner and chef David Gabbay and Maître De John Gonzales at the helm, is poised for a spectacular takeoff. Bellissimo’s large space is carefully divided into individual dining areas, each with its own personality. One mirrored wall of the spacious main dining area cleverly reflects the wine racks that line both sides of the adjoining Wine Room, while the toasty Fireplace Room adjoins a relaxing bar and lounge area with a South Beach atmosphere. Happily, the restaurant’s inviting menu is as creative as its attractive décor. A lovely red beets and goat cheese salad, artfully arranged on endive leaves, was a delightful starter, followed by a hearty and satisfying Pasta Fagioli soup that paid homage to the restaurant’s Italian roots. Salsiccia Luganica, a rare treat, featured the thin, coiled sweet luganica sausage typical of Northern Italy, here served with spinach and baked polenta. An evening’s special, a duo of jumbo shrimp lightly sautéed in oil and garlic, was complemented with a side of honey and almondcrusted brie, a winning combination of tastes. And our final appetizer, the luxurious homemade Ravioli al Porcini was, quite simply, the finest example of this dish I have yet sampled. Bellissimo’s kitchen gives the royal treatment to two boneless

chicken breasts in their Pollo alla Verona, elevating the dish with artichoke hearts, sun-dried tomatoes and mushrooms in a lemon-white wine brothinfused sauce that never overpowers the taste of the tender chicken. Fresh from the sea and respectfully treated by the kitchen, San Pietro, sautéed tilapia was fork tender and perfectly paired with a featherlight lemon caper sauce. All menu entrees are accompanied by a colorful and generous serving of broccoli, cauliflower and carrots, but the kitchen is flexible with sidedish substitutions. Contemplating the tempting specials included in our server’s prodigious recitation, we reluctantly bypassed the boneless duck breast in favor of the Venison, which earned a “10” on presentation and taste. Slices of medium- rare venison were plated with feathers of piped mashed potatoes, with a horizontal ribbon of sautéed wild mushrooms encircling the two. My favorite of all cheesecakes, the ricotta cheesecake, and a chocolate lava cake, were both excellent finishers, but it was the Bananas Foster that ended our evening with a special flourish. Gabbay is clearly still at the top of his game after coming out of a six-year retirement. When asked what prompted his return, he said without hesitation, “I did what I wanted to do—I traveled a lot and enjoyed it, but I missed the business. And I said to myself, ’It’s time to go back, because this is what I do.’ “ Judging from the many kudos from devoted former customers, diners who appreciate fine cuisine served in a sophisticated and welcoming atmosphere are delighted at his return. 
