Wild Bird Expert Teaches 4-H Club about Spring Migration

A

nne Fahey Garden Design and Consulting has been providing professional landscape design and installation services to area residents since 1997. Now, the Design and Consulting firm offers the installation of indoor plants in homes. “We aim to create a fun experience for our clients as we transform their home into a space they can relax and enjoy for many years,” says Fahey. Her designs have been featured on The Van Vleck Garden Tour and at the Brookwood Show House. “When selling a home, a few perfectly placed plants will enhance the atmosphere and entice potential buyers,” says Anne of the new indoor services that includes home staging for clients putting their homes on the market. Fahey is a horticulturist with a degree from Rutgers University and continues to takes classes at the New York Botanical Garden to stay current. Fahey works with each customer to create outdoor living spaces that reflect the taste of the homeowner and are consistent with the architecture of the home, no matter the style and preference. heobe Epstein of the Wild Bird Center recently spoke to the 4-H Environmental Kids Club at the Roseland Environmental Center about what to look for during spring migration. The participants were kindergarten and elementary school students. The Environmental Center is located at 621A Eagle Rock Avenue in Roseland and Wild Bird Center is located at 895 Bloomfield Avenue in West Caldwell.

Running 4 Answers A Race Against Alzheimer’s

T

he sixth annual 5K race and 2-mile fun run/fitness walk will once again take place on the beautiful tree-lined, rolling hill streets of historic Essex Fells on Saturday, April 25 (rain or shine). The race course is USATF-NJ certified and sanctioned and it is also part of the GRAND PRIX series (500 points). The race is chip-timed and scheduled begin at 8:30am at the Roseland Municipal Building, 19 Harrison Avenue in Roseland. All proceeds benefit Cure Alzheimer’s Fund (www.curealz.org). This organization was chosen for their concentration on research. The organization has contributed 8.5 million dollars toward research and has identified more than 70 genes linked to the disease…and they’re not stopping until there’s an end to Alzheimer’s. ant to set your home apart? You can add character and beauty to your home by learning more about your house’s architectural style and adding design elements to complement the look. With the right knowledge, it’s easy to transform any room of your home as well as the exterior. Experts offer some tips and guidelines to achieve an authentic, coordinated look throughout your home—inside and out.

Proportions matter. If you’re going to be adding shutters to your exterior, do a bit of math. The width of shutters used in pairs on a window should be half the width of the window, and should be the same height as the window.

• The higher the ceiling, the taller the baseboard should be. Additionally, the height of your baseboard moulding should always be larger than the casing, which is the frame around a door or window. Make a room feel taller by placing a chair rail—the moulding used to prevent the backs of chairs from rubbing against the wall—one-third of the way up from the floor. Chair rails should be 1/2 or one inch narrower than casings.

The Health Benefits of Gardening

A

side from improving the environment and having your own source of flowers, fruit and vegetables, the other benefits of gardening are often overlooked. Research shows that gardeners have an increased zest for life, have a lowered risk for osteoporosis and diabetes and sleep better. The physical benefits of gardening are often discounted because some people don’t think of it as real exercise. But gardening can actually offer the same benefits as other forms of exercise. When gardening, you can burn as many calories in 45 minutes as you can in 30 minutes of aerobic exercise. Different muscle groups are targeted as you increase your flexibility and strength. Gardening activities are also beneficial for the respiratory and cardiovascular systems. Gardening has another advantage over other forms of exercise: people are more likely to stick with it and do it often. According to a survey by Gardeners’ World magazine, 80 percent of gardeners reported being happy and satisfied with their lives compared to 67 percent of non-gardeners. The survey also indicates that regular gardening can help relieve depression. The sights, wsmells and sounds of the garden are said to promote relaxation and reduce stress. According to a scientist of environmental psychology, gardening is a form of meditation as it helps people forget their worries and feel relaxed.

Dress to Protect While Gardening Gear up to protect yourself from lawn and garden pests, harmful chemicals, sharp or motorized equipment, insects and harmful sun rays. • Wear safety goggles, sturdy shoes and long pants to prevent injury when using power tools and equipment. • Protect your hearing when using machinery. If you have to raise your voice to talk to someone who is an arm’s length away, the noise can be potentially harmful to your hearing. • Wear gloves to lower the risk for skin irritations, cuts and certain contaminants. • Use insect repellent containing DEET. Protect yourself from diseases caused by mosquitoes and ticks. Wear long-sleeved shirts and pants tucked in your socks. You may also want to wear high rubber boots since ticks are usually located close to the ground. • Lower your risk for sunburn and skin cancer by wearing long sleeves, wide-brimmed hats, sunglasses and sunscreen with sun protective factor (SPF) 15 or higher.

Trained at Tufts University and the Johns Hopkins Medical Center, Dr. Greg, who recently joined his dad in their practice, characterizes their continuum of care as “seamless.” “One could suppose that a longtime practice like my dad’s might be content with yesterday’s ways of doing things. The Josephsen’s office at 31 Harrison Avenue has been a pillar in West Caldwell since 1965 and the days of Dr. Roger Post, for whom Dr. Al took over in 1984 upon completing his residencies. Born and raised in town, it was a very natural transition for both Dr. Josephsens to practice locally. “Our West Essex area offers so many opportunities to give back to our community”, says Dr. Greg. “My dad served as the School Dentist here in town for decades and outside of the office, he has been coaching youth sports at a high level since the days that I played. Cooking with… Bill Hedge, Executive Chef, Kings Food Markets

B

ill Hedge, executive chef at Kings Food Markets, has just returned from a foodfocused trip to Cuba, where he visited many of the finest privately owned restaurants on the island country. The culinary and cultural tour included preparing an authentic Cuban pig roast with all the trimmings. Hedge admits he loves to travel and has driven across the country numerous times, sampling cuisine from the Carolinas, Texas, Florida and other states. He also “ate his way” through Paris with his wife on their honeymoon a few years back, and daydreams about future trips to Italy and Spain. But what Hedge looks forward to most is summer, when the avid fisherman rakes for clams in the bays and on the shores of Long Island every weekend through the fall. “I absolutely love shellfish,” says Hedge, who in part oversees all facets of research and development for the catering and food program at Kings. (He shares a Linguine with Grilled Clams & Pancetta recipe here.) “This recipe is a slightly different use of a backyard grill, allowing you to prepare a simple, yet delicious, seafood dish to use as a pasta side with a summer salad, or as the main event,” he says. Those who lack confidence when it comes to purchasing seafood should talk to their market’s seafood manager and tell him or her exactly what they are looking for, Hedge says. At Kings Food Markets Seafood Department, for example, home cooks are guided through the selection process with such simple, useful tips: “When selecting fresh fish and shellfish, always be sure to first look at the overall appearance of the fish,” Hedge explains. “Whole fish should appear firm with bright color, clear crisp eyes and have a clean, ocean-like aroma. When choosing shellfish, whether clams, oysters or mussels, always be sure the shells are closed tightly and smell fresh. Avoid any damaged or cracked shells.” The most important advice Hedge can give? Relax. “Cooking shellfish really is simple as long as you keep it simple, use ultra-fresh fish and keep yourself organized,” he says. As with all recipes, preparation is the key to success. Have the clams cleaned and prepped in aluminum ahead of time. You can also prepare the pancetta, garlic, red pepper flakes and herb sauce ahead of your guests’ arrival. Be sure to stage all other needs, such as a pot of salted preheated water, serving platters, utensils, etc., before you begin to cook and assemble the dish. The secret to the great flavor in this recipe, Hedge said, is the pancetta. “Everything tastes better with bacon on it, or in it.”

Linguine with Grilled Clams & Pancetta, featuring Kings Stewed Tomatoes INGREDIENTS: 8 oz pancetta cut into ¼” dice ¼ cup + 2 T Kings organic extravirgin olive oil 1 cup Kings Stewed Tomatoes 2 cloves Kings organic garlic, minced 1-2 tsp hot red-pepper flakes ¼ cup Kings organic fresh lemon juice with 1 tsp zest 1 sprig fresh Kings organic thyme 2 dozen Kings organic Little Neck Clams, scrubbed well to remove any excess sand 1 lb Kings organic dry linguine ½ cup chopped flat-leaf Kings organic parsley One 13x9x2-inch disposable foil pan

DIRECTIONS: Pre-heat gas grill to high on one side and on the other side keep on low. Cook pancetta in a 12-inch heavy skillet over medium heat until crisp. Transfer cooked pancetta with a slotted spoon to paper towels to drain. Reserving 2 T pancetta drippings, discarding the balance. Stir together ¼ cup olive oil, Kings Stewed Tomatoes, pancetta drippings, garlic, red-pepper flakes, lemon juice and thyme sprig in foil pan and put on grill over low heat. Wrap clean clams in a foil packet by wrapping clams in a heavy duty foil and seal well, grill clams over high heat, until they open, 5-8 minutes.

SERVES 4

Carefully open foil packet (watch steam) transferring clams and juice to foil pan containing the olive oil, pancetta mix and being careful not to spill their juices. (Discard any clams that remain unopened after 8 minutes and thyme sprig.) Cook linguine in a pot of well-salted boiling water until al dente, then drain, reserving half cup of the pasta water. Transfer cooked linguine to a large serving bowl and toss cooked linguine with cooked pancetta, Stewed Tomatoes, parsley, lemon zest and contents of foil pan, add salt and pepper to taste and drizzle with 2 T olive oil. Add in pasta water if needed to help moisten pasta.

The CONFIDENCE Factor

I

f you want to accomplish great things, break into new business, get the attention of key people, and take yourself to greater levels of success, you’ll need unshakable confidence. This kind of confidence cannot be faked. So how do you create core confidence, no matter what obstacles you encounter? These two strategies will make a difference:

Are you comfortable with yourself? Think about whether you are operating from your core belief system. Are you following your true instincts, taking the actions your gut tells you are correct?

You need to be well prepared to meet the challenges that will inevitably come our way when we begin any new project. And each action you take will contribute to your likely success—or failure. So it’s worth asking yourself some questions as you go along.

When you know who you are and what you believe in, you are in a powerful position. Most people don’t realize how powerful that makes them. For one thing, it means you’ll never have to stop in the middle of an important presentation, wondering what to say next or how to address a question. You say what you mean—and mean what you say.

How focused is your follow-up? Do you stop several times during the day and ask yourself, “What is the most productive use of your time right now?” Do you put your hearts and minds into everything you do? Do you take care of the details or fritter away your time and energy on senseless activities?

Where does hesitation come from? Why are we sometimes unsure? Because we don’t prepare enough, read enough, study enough, and work enough. Our strength comes more from knowing that we have put in the work and prepared for success than from what we learn from the actual preparation.

Think about it. Confidence is built by planting seeds for future opportunities and not becoming complacent when success comes along. As soon as we stop and coast for too long, our skills decay, and atrophy sets in.

Our hard work allows us to believe that we have earned the right to “core confidence.” And when I say “core confidence,” I am referring to the belief system and strength that lay deep within each of us. That core confidence will be tested as difficult situations arise. But it will prevail. Why?

1. Create confidence by continuous, thoughtful action.

People say that “success breeds success.” The reason? Success it the culmination of all the hard work that went before… and we’ve reached a high point. That inspires us and gives us the energy to keep building, keep working… and keep succeeding.

2. Make sure that your belief in who you are and the value of what you do is solid to the core. Don’t second-guess who you are and what you believe in. The goal is to improve who you are—not to try to be like someone else.

The English philosopher and economist John Stuart Mill once wrote, “One person with a belief is equal to a force of 99 who have only interest. One of the differences between people with interests and people with beliefs is that the people with deep-seated beliefs set goals and act on them.” Remember that the foundation of your character is built on preparation and action, coupled with the belief and passion for what you do. These are the building blocks of unshakable confidence.

Materials being collected at the Household Hazardous Waste Collection Day include pesticides and herbicides, automotive fluids (antifreeze, motor oil, steering fluids, etc.), gasoline and kerosene, paint thinners and solvents, household cleaning fluids, oil based paints and stains, darkroom and photographic chemicals, car batteries, chemistry sets, driveway sealer, home fire extinguishers, barbecue type propane tanks, aerosol spray paints, pool chemicals, fluorescent light bulbs and ballasts, Nicad and rechargeable batteries, and mercury and products containing mercury. We will not be accepting latex paint, unlabeled or unidentified materials, asbestos, regulated medical waste or infectious waste, commercial or industrial waste, empty containers, explosives, munitions, ordnance or reactive materials, smoke detectors and carbon monoxide alarms, and household batteries (AA, AAA, C, D, 9V).

Items being accepted at the Computer and Electronics Recycling Day are computers, monitors, printers, fax machines, scanners, telecom equipment, speakers, televisions, keyboards, main frames, VCRs, stereos, DVD players, toasters, irons and cellular telephones. We will not be accepting smoke detectors and carbon monoxide alarms.
