Ceremonial Super Bowl Tree Planting in Essex County Brookdale Park
E
ssex County Executive Joseph N. DiVincenzo, Jr. joined with the National Football League, New Jersey Tree Foundation and Brookdale Park Conservancy for a ceremonial tree planting on Friday, April 11th. The tree planting was the last official act of the NFL’s Super Bowl XLVIII Committee and passed the ceremonial shovel to Arizona, which is hosting next year’s big game.
T
This year, a Lacebark Elm was planted in Essex County Brookdale Park and in Arizona to link the two host sites with a permanent “green” connection. Four dogwood trees were also planted.
“There’s so much to look forward to this year! Many of our favorite local restaurants have returned and we’re pleased to have select out-of-town participants,” states Melody Kettle, founder of the Montclair Food and Wine Festival. “The Festival has curated a diverse cross-section of gastronomy; there’s something for everyone. Whether it’s oysters on a half shell, local BBQ, vegan, wines, craft beers and spirits, fine dining, grazing, or educational opportunities, we’re very pleased with the growth of the program in year two,” continues Kettle. The Montclair Food and Wine Festival is a volunteer, non-profit organization. A portion of the proceeds will benefit St. Joseph’s Children’s Hospital and fund the Montclair Food and Wine Festival Culinary Award. For more information about the festival, visit www.montclairfoodandwinefestival.org.

O
pen since 2009, Jumpnasium is, according to Ley, “the largest inflatable kids’ party center in New Jersey.” At 13,000 square feet, the facility includes a tower climb, bounce house, slides, climbing walls, basketball courts, an obstacle course, trampoline, air hockey, and more. While the center offers open jump time and also hosts fundraisers, field trips and summer camp programs, it is best known as a great place to hold a birthday party. Jumpnasium was voted the #1 children’s party place by readers of Suburban Essex in 2013; Ley estimates that he does over 1,000 parties per year. Kids love the equipment, while parents love the convenience. A Jumpnasium party runs just under two hours and includes the invitations, 70 minutes of private jump time, 40 minutes in a private party room with specially trained coaches, kid-friendly video games, and all set-up and clean-up. Depending on
the party package chosen, balloons, food and drinks may also be included. Food offerings extend way beyond basic party fare. Jumpnasium’s menu was recently expanded and now includes a wide range of salads, sandwiches, wraps, pasta and pastries. Halal and gluten-free items are also offered. Of course, there are still pizza (six varieties, in fact), soda and cake for traditionalists. Jumpnasium’s employees are another major factor in its success: Ley notes that “We train our staff every month and give out employee incentives to keep up motivation.” Staff training includes working with POAC (Parents of Autistic Children), so that Jumpnasium can offer sensoryfriendly open jump times. Ley believes that Jumpnasium’s two biggest selling points are its cleanliness and its customer service. Children’s hands are sanitized on their way into and out of
the play areas; there are also hand sanitizers throughout the facility. Employees follow a strict cleaning routine before closing up each evening, and a professional cleaning company comes once a week. Customer service is crucial to Ley’s primary goal: “I’m not trying to be the cheapest party venue, just the best.” He welcomes feedback from visitors and has in fact made changes based on it over the years. Since 48% of Jumpnasium clients are repeat guests, though, it is safe to assume that the majority of comments are positive. Ley’s favorite customer comment is one he hears regularly from parents: “I got to be a guest at my own party.”

Lose Weight, Look Good, Feel Great! Dr. Naveen Ballem helps patients regain their health and self-confidence
M
ore than 1,000 successful weight-loss procedures: that’s the track record of Dr. Naveen Ballem, who has been helping patients in the Glen Ridge area safely lose weight and improve their health for the past decade. While there are different bariatric surgeries, including gastric bypass and lapband, the gastric sleeve procedure results in weight loss that improves overall health and allows you to eat the widest variety of foods afterward. Want to know more about the sleeve procedure? Read on!
Dr. Naveen Ballem
Q: What is the gastric sleeve procedure? A: The procedure is an hour-long laparoscopic surgery that involves inserting a camera into small incisions. We take the stomach, which is about the size of a two-liter soda bottle, and remove the portion has stretched over time. We remove about 80% of the stomach, which leaves 20% behind. Taking out that much stomach sounds scary to many people, but we’re removing the part that stretched out, leaving you with a functional, sleeve-shaped portion that will re-stretch over time. When the stomach is smaller, the patient will eat less. The sleeve procedure results in reduced leptin and ghrelin hormones, which normally increase your appetite, so people don’t really feel hungry any more. They lose weight and maintain it because it changes their desire to eat.
Q: Who are the best candidates for this procedure? A: You have to be healthy enough to undergo surgery. The best candidates have a body-mass index (BMI) of 35 or greater, which is about 75 pounds overweight. Prior to the surgery, patients have about three months of education— three visits with a dietitian and one with psychologist. We also work with other doctors to get patients through the procedure as safely as possible. We really want patients to know what a healthy portion size is, so when the day of surgery hits, they’re ready to start their healthy living program immediately. People need to be compliant with their diet and exercise regimen in order to have the most successful outcome.
Q: How long will it take me to recover? A: The recovery time is relatively swift. After the operation, patients are generally up and walking around that day and discharged from the hospital within 24 to 48 hours. Once back at home, most people return to their normal routines immediately. The tough part is that they’re on a modified diet: two weeks of a liquid diet, and two weeks on purees; it’s a slow progression back to regular food. I think it’s the most challenging part of the recovery, but the purpose of the diet is to allow the stomach to heal.
Q: How much weight will I lose? A: With this procedure, the greatest weight loss comes by the end of the first year, when patients lose 70% of their excess weight, on average. Weight loss can improve hypertension, PCOS (polycystic ovary syndrome), sleep apnea and other health issues, but those with type 2 diabetes benefit the most— it can put the disease into remission. Remember, weight-loss operations are tools for people to get healthy and change their lifestyle for the better.

Though you may be most familiar with roasting or Mother’s Day braising, American lamb can be deliciously prepared a variety of ways. For example, this grilled lamb Reservation recipe pairs a zesty marinade with a hint of cacao for a fresh andToday! seasonal American lamb spread. Simple marinades and rubs will bring out the best in lamb, creating a fresh flavor that enhances and tenderizes the meat. Invest in a quality meat thermometer to avoid overcooking lamb. The key to tender and flavorful meat is removing the lamb from the heat when it reaches 135 degrees. Then, let it rest before cutting, bringing the internal Pan-Seared Scallops temperature to 145 degrees (medium rare). • Local Delivery Service • Daily Lunch Specials • Weekly Dinner Specials

anchovy fillets, coarsely chopped

cup pitted black olives, plus a few for garnish
2/ 3
cup flat leaf parsley leaves
2
tablespoons cacao nibs
3
tablespoons extra virgin olive oil
Pat sirloin dry and place in 8-inch square baking dish. Coarsely chop zest of one lemon and place in food processor or blender. Add juice of both lemons and remaining ingredients. Roughly puree by pulsing food processor or blender several times, until mixture is smooth with some small chunks. Rub puree over meat. Loosely cover pan with plastic wrap and marinate at least 2 hours in refrigerator, preferably overnight. Remove sirloin from refrigerator one hour prior to cooking to bring meat to room temperature. HOME & GARDEN Bringing Indoor Comfort Outside
Make Your Outdoor Space an Extension of Your Home
T
he arrival of summer, along with its sunny skies and beautiful weather, beckons homeowners to create a space to entertain guests and enjoy the great outdoors. Design an outdoor living room that merges style and function, and incorporates elements of indoor comfort. Whether entertaining for two or 10, the warmer weather provides an abundance of opportunities to lounge in peaceful, open-air surroundings. New offerings in decor and design breathe indoor inspiration into your outdoor spaces, creating a beautiful extension of your home for all to enjoy.
BE BRIGHT, ALL NIGHT The sun may still be shining when the guests arrive, but you’ll need something to light up the night and keep the party going all evening long. Create a delightful, welcoming atmosphere with a variety of outdoor lighting options, such as string lights, paper lanterns or floating LED candles placed around the patio.
Here are some stylish secrets to make your outdoor space an elegant living space worth sharing.
ARRANGE AWAY Treat your outdoor area as you would your living room. If space is limited, use sectionals to create seating in whatever arrangement fits best. If there is more room, add an investment piece. Finish the look by layering your favorite accessories, such as handcrafted trays, detailed lanterns and a colorful floral arrangement to create a cheerful centerpiece that makes your guests feel welcome.
TIE IT ALL TOGETHER To let you in on a little secret—outdoor rugs tie everything together and really bring a space to life. Simply layer a rug with a beautiful seating collection, colorful cushions and pillows, and you’ve got an outdoor area that makes everyone comfortable and happy.
EMBRACE THE BOLD Some might be afraid to create a statement outside because—it’s outside. But an outdoor living space lends itself to adventures with color and pattern, providing the opportunity to be bold and to go beyond your comfort zone. When shopping for the outdoors, remember—anything goes.
MAKE IT UNIQUELY YOURS Mix and match with color and patterns, and personalize your space with accents such as outdoor artwork, planters, umbrellas and more. A smart combination of accessories really transforms an outdoor space from simple to fabulous.
SERVE IN STYLE Al fresco entertaining always focuses on food, drinks and friends. A self-service food station or bar enhances the casual tone, freeing guests to grab refreshments whenever they please. This also allows you, the host, to focus on the fun at hand. So let the warmth of the season bring many memorable moments to your life and stylish elements into your outdoor spaces. For more great decorating ideas, visit www.pier1.com.
OUTDOOR-FRIENDLY MATERIALS Have you ever wondered how some products are suitable for the outdoors while others can only be kept inside? Various processes and materials give outdoor furniture and decor durability and weather-resistant appeal. -Family Features

Children & Diabetes
Type 2 Becomes Epidemic Among the Young By Julie Jacobs
T
ype 2 diabetes, once associated only with adults and old age, has been rearing its ugly head among the younger set. While children with diabetes typically are diagnosed with type 1, the prevalence of type 2 in kids has increased considerably in the past decade or so. Statistics from the Centers for Disease Control reveal that one in three children born in 2000 is at risk for developing type 2 diabetes. The reason? Perhaps the greatest link lies with obesity, a condition that has become widespread among children, thanks in large part to a more sedentary lifestyle fueled by computers and video games, as well as a frequent fast-food diet. The extra weight can interfere with the body’s production of insulin, a hormone necessary to metabolize food into glucose (blood sugar) to feed cells. With overweight kids, whose bodies are unable to use insulin effectively—clinically referred to as insulin resistance—the likelihood rises that they will have type 2 diabetes.

In addition to obesity, family history poses significant risk for developing type 2 diabetes. High blood pressure and elevated cholesterol and triglycerides also can trigger it. The disease is more common in girls than boys and presents more often in the African American, Hispanic/Latino, Asian and American Indian communities. wwAlthough symptoms develop slowly (and may even not appear at all), signs such as dry mouth, fatigue, increased hunger or thirst, frequent urination, itchy skin and blurred vision should be evaluated by a physician. In children, onset usually occurs during puberty, when blood sugar levels can fall prey to surging hormones and adolescent stress. If left untreated, type 2 diabetes in children can bring about long-term problems in young adulthood that range from blindness and neuropathy (nerve damage) to renal failure and heart disease. Numbness, particularly in the legs and feet, can result in slow-healing wounds and infections, and in some cases amputation. Nearly all children with type 2 diabetes exhibit acanthosis nigricans, a skin condition marked by velvet-like patches found typically around the neck, armpits and other areas where the skin folds. Young girls with the disease are prone to hormonal upsets that can generate facial hair and ovarian cysts.
Diabetes Control For growing children, living for years with type 2 diabetes can make an already complicated illness even more complicated, as well as challenging. Fortunately, early intervention through lifestyle changes, self-management and regular visits to pediatricians, endocrinologists, ophthalmologists and podiatrists can play a huge role in controlling the disease. Self-management involves monitoring for normal blood sugar levels and maintaining them by complying with medication regimens, eating healthy, paying attention to portion control and exercising daily. Good nutrition should encompass three low-fat, high-fiber meals each day, with diet soft drinks, water and skim or 1% milk replacing high-caloric sodas. Carbs affect blood sugar the most, so aim for healthy ones like fruits, vegetables, beans, and whole-grain breads, cereals and pastas. A ramped-up fitness routine should include 30 minutes of exercise a day and limited television and computer time. Regular workouts, which can help reduce body fat, improve blood sugar control and make insulin more efficient, are not only among the most effective measures for keeping type 2 diabetes in check, but also preventing it from developing. Losing just a few pounds, in fact, can enhance the body’s sensitivity to insulin. As little as a five percent decrease in weight can have a positive impact on blood sugar, and for patients with impaired glucose tolerance, a seven percent reduction in weight can lower the risk of occurrence by 30 percent. The American Diabetes Association helps children with type 2 diabetes and their families with self-management through one-on-one educational counseling, psychosocial counseling, meal planning, blood glucose monitoring, insulin pump therapy and family support. For more information: cdc.gov; diabetes.org; webmd.com; worldhealth.net
Here are a few delicious recipes that are low in carbohydrates and help maintain control of blood sugar levels. Club Wrap whole-wheat low-fat tortilla, 7" diameter 2 tbsp. light cream cheese 1 oz. lean and low-sodium turkey slice 1 oz. lean and low-sodium ham slice 1 oz. Swiss cheese slice 1 iceberg lettuce leaf 2-3 tomato slices Directions: Spread cream cheese on tortilla. Layer lettuce, turkey, ham, Swiss cheese and tomato on top. Fold sides of wrap and roll up.
Pizza Snack ½ whole-wheat English muffin 2 tbsp. no added sodium tomato sauce 2 tbsp. part skim mozzarella cheese 1 tbsp. fresh basil, chopped 2 tsp. tomato, diced Directions: Place English muffin on baking sheet, top with tomato sauce, cheese and basil. Broil until cheese is melted and sauce is bubbly.
Zucchini Noodles 3 zucchini or summer squash (6-8" long in size) 2 tbsp. of extra virgin olive oil ½ tsp. of salt ½ tsp. of lemon peel 1-2 tbsp. of freshly chopped basil Optional toppings: pasta sauce, Parmesan cheese, fresh basil, and/or fresh tomatoes. Directions: Scrub and clean fresh zucchini. Remove ends and julienne by hand or using a mandolin. In a skillet, add 1 tbsp. of oil on medium-high heat. Once heated, add half your zucchini noodles. Add ¼ tsp. of salt and ¼ tsp. of lemon peel. Toss and cook for 3-4 minutes. Half way through, add half of your allotted freshly chopped basil (approximately ½ to 1 tbsp. worth) and finish cooking until noodles are soft. Repeat with second batch of noodles.

DIAMOND MINDS By Barry Farber
Above the Strings And then, when you think you have learned everything… “It’s what you learn after you know it all that counts.”

he most successful people in every field know they can never fully master their craft; there is always something new to learn. There is never a time when you can say, “Ah, now I know everything about this subject.” One man who is a perfect example of continuous learning was former master violin maker Richard Menzel. He spent more than 30 years as an engineer at the Lockheed Corporation. yet he always made time for his love of music. When he left Lockheed to open his shop, he continued his quest for knowledge. Menzel used the standard tools of his trade, but often invented new tools to study areas of violin engineering no one else had explored. He created an instrument to measure the angle of your arm when you’re moving the bow from string to string so that you can gauge and improve your form. He also invented a machine to study the properties of horsehair used in making bows, asking, “How much pressure does it take to break this hair? How much does it stretch? How much does it expand
over time? Nobody knows, but I want to find out.” I remember once being challenged to see if I could learn to play the violin in 30 days. The violin Is known for being one of the most unforgiving instruments to learn. After seeking advice from Menzel, he advised me to take the violin home and for 15 minutes each day, take the bow and put it a quarter inch above the string going backand-forth from one end of the horsehair to the other very slowly, ensuring to keep the space between the bow hair and the string a quarter inch in distance apart at all time. By doing this exercise, I realized I was
training my hand, arm and muscles to move in a specific way. Then when I played the violin string with the bow, the tone and quality was much superior than before. Performing this tedious exercise helped me enjoy playing the violin a lot more. Menzel taught me a valuable lesson about the fundamentals of learning and how important they are to creating a strong foundation in music, sports, business or any endeavor. He taught me that successful people do the things that unsuccessful people don’t like to do.
“One who is careless in small things is careless in all and will never accomplish great things.”
