Sixth Annual David Harris Golf Invitational to Benefit Give the Kids Foundation

Give the Kids Hope Foundation, Inc., a 501(c) 3 charitable organization, directly benefits underprivileged children in New Jersey. This year’s benefit Golf Invitational will support needed funds for the renovations to Camp Hope’s recreation building in West Milford, NJ where over 2,700 underprivileged children from North Jersey attend at no cost every sum-

mer and will be used in part for summer programs for disadvantaged youth at Turtle Back Zoo in Essex County. Montclair Center Wins “Great American Main Street” Award By Teresa Akersten

D

iverse restaurants. Interesting shops. A thriving arts scene. Montclair Center has it all—and the country has taken notice.

Montclair’s Bloomfield Avenue corridor was recognized recently as a 2015 Great American Main Street Award winner by the National Main Street Center, part of the National Trust for Historic Preservation. The award re-cognizes the best examples of commercial district revitalization in the United States. According to the National Main Street Center, the Montclair Center BID utilized their trademarked Main Street Four-Point Approach and succeeded in creating a great place to live, work, play and visit. Efforts by the Montclair Center BID, such as making South Park Street more pedestrian-friendly and attracting national retailers like Anthropologie and Blue Mercury as well as independent shops, businesses and restaurants, helped turn around what was a depressed downtown in the 1990s. Retail vacancy has improved from around 50 percent at that time to 10 percent, and office space vacancy is only about 3 percent. “Montclair Center is a superb example of what we’re seeing nationally: Americans, in increasing numbers, are drawn to walkable, attractive downtowns with a lively arts, shopping and restaurant scene,” said Patrice Frey, president and CEO of the National Main Street Center.

Livingston Alumni to Headline at Bitter End in NYC

hree Livingston High School alumni, members of the band, The Howler Weary, will be headlining at the New York City venue The Bitter End in Greenwich Village on May 2. They will perform from their debut album, “Travel On.” 2010 and 2011 graduates Jake Levine, lead guitar and vocals, Trevor Fedele, drums and Henry Yavorski, bass guitar make up the band. With influences ranging from Sinatra and Nat King Cole to Led Zeppelin and The Beatles, the boys of The Howler Weary look to bring their own taste of Rock and Roll to a new generation. Tips for Preventing this Widespread, Chronic Condition By Julie Jacobs

T

he kidneys are busy little organs. They help produce red blood cells, maintain the right balance of body fluids, release hormones vital to various body processes, and filter and flush out waste products and excess water. When they are unable to do their job, chronic kidney disease and even kidney failure can develop, leading to dialysis or, in extreme cases, organ transplant, as well as related cardiovascular and bone density problems.

According to the Centers for Disease Control, more than 20 million adults in the United States have chronic kidney disease, with many living undiagnosed since symptoms typically don’t surface until the condition has reached an advanced stage. Diabetes and high blood pressure play a huge role in causing chronic kidney disease, as does family history and other risk factors. By leading a healthy lifestyle and taking the necessary precautions, however, you may be able to prevent chronic kidney disease or slow or stop it in its tracks. Here are the steps you can take right now:

• KNOW YOUR RISK: If you are 60 years of age or older, are obese, have diabetes and high blood pressure, and/or have a family member with chronic

kidney disease, your chances of developing the condition increase. Likewise, your ethnicity may be a factor. Although researchers have yet to pinpoint why, you run a greater risk for chronic kidney disease if you are African American, Hispanic, American Indian, Alaska Native, Asian and Pacific Islander.

• CONTROL YOUR BLOOD PRESSURE AND CHOLESTEROL LEVELS: The ideal resting blood pressure for adults is in the 120/80 mm Hg range, and the optimal cholesterol level, which represents a combination of “good” cholesterol (HDL) and “bad” cholesterol (LDL), is below 200 mg/dL. Diet, exercise and medication if warranted are key to keeping both numbers in check. For blood pressure, experts also advise cutting back on the amount of salt in your diet.

• MOVE AROUND: Maintain a regular exercise program, with your doctor’s okay, to help you stay at a healthy weight or shed pounds. Both the American Heart Association and the American College of Sports Medicine recommend at least 150 minutes of moderate physical activity per week. Thirty minutes a day over five days is best.


• EAT WELL:

• DON’T SMOKE AND LIMIT YOUR ALCOHOL INTAKE: Cigarettes and other tobacco products can contribute to atherosclerosis, a condition that negatively affects blood pressure as well as blood flow to the kidneys and other organs. And excessive alcohol can tax and irreparably damage the kidneys. If you do drink, do so in moderation—that means no more than two drinks daily for men up to age 65 and no more than one drink daily for men over 65 and all women.

• TAKE NONPRESCRIPTION MEDICATIONS AS DIRECTED: Overuse of over-the-counter pain relievers like ibuprofen, acetaminophen and aspirin can have an adverse effect on your kidneys. Be sure to read the label instructions and ask your doctor if you’re unsure about any safety issues.

• SEE YOUR PHYSICIAN FOR REGULAR TESTS: Because kidney disease can be detected early through urine and blood screenings, have your doctor take samples for testing when you go for your annual exam. A urine test checks for glucose, blood and a protein called albumin, the presence of which may indicate your kidneys are not filtering as well as they should be. A blood test measures the amount of creatinine, a waste product resulting from normal muscle activity. The creatinine level, along with such factors as your age, gender and race, is then used to calculate your glomerular filtration rate (GFR), which paints a clearer picture of your kidney function. A Boutique Practice That Provides Rapid Solutions—

T

odd Edelson established a physical therapy practice that is all about “I”: identification of the problem, intervention to correct it and instilling independence in patients so that they remain pain free post-treatment. Edelson, a doctor of physical therapy, is a proponent of skillbased, not time-based, treatment. He and his four-person staff treat more than 90 percent of patients in an average of six visits or less. They treat the gamut of neuromuscular sore spots including sciatica, back and neck pain, joint problems, muscle injuries, positional vertigo and deficits caused by stroke or traumatic injuries. He describes Montclair Physical Therapy as a patient-centered boutique practice that provides effective and personalized care that is value based. First-time patients undergo an hour-long evaluation with follow-up sessions of 35 or 45 minutes. “Patients are not kept on needlessly.”

His skills and values are rooted in the McKenzie Method®, a conservative approach to spine, orthopedic and neurological care. The method, developed by the McKenzie Institute International in New Zealand, is a mechanical diagnosis and therapy protocol. Its tenets include assessing the problem (classification), addressing the problem based on its unique attributes, treating it with a mechanical procedure and preventing it from happening again through patient education.

“I adhere to the belief to do as little as possible, but as much as necessary, to bring about a solution for my patients.” Another feature that appeals to Edelson is that once the problem is identified, intervention may involve just one exercise. “Patients become overwhelmed when you provide a long list of exercises to do at home. If the patient doesn’t respond to this treatment, it takes a long time to figure out which exercise is preventing improvement.” Intervention and independence are at the core of the McKenzie Method and Edelson’s philosophy about Physical Therapy. “We help patients get their lives back—being able to work again, with symptoms eliminated or under control; taking a long-planned trip despite previous pain, injury or surgery or finishing a high school athletic career after injury. ending a thank-you gift to one’s oral surgeon may be uncommon, but at The Center for Oral & Maxillofacial Surgery and Implantology in Nutley, it is an almost daily occurrence. As the center’s director, Dr. Philip Echo, explains, “Our patients appreciate that we truly care about them.” In practice since 1993, Dr. Echo treats a wide variety of oral issues. He removes lesions both on the lip and within the mouth; he

also extracts wisdom and other problematic teeth. In addition, Dr. Echo sees patients who are tongue-tied, a condition having nothing to do with shyness. In these patients, the membrane connecting the underside of the tongue to the floor of the mouth is overgrown, interfering with sleep, speech and, in the case of an infant, feeding. He uses radio frequency to incise the excessive muscle attachment, which is a quick and usually painless procedure. Dr. Echo also sees many patients seeking dental implants. He notes that there are health as well as cosmetic reasons to choose implants over traditional bridgework. Dental implants are made of titanium so they last longer; they also allow the recipient to eat more easily. In addition to new techniques and materials, Dr. Echo is also excited about his office’s new 3-D CAT Scan machine. He enthuses, “This is a powerful tool in both diagnosing and treating many conditions. It can tell us the size and location of a lesion, as well as the height and weight of existing bone if we are considering an implant. Determining the quantity of bone support in 3-D means that we can decide before the actual procedure whether or not a graft is needed.” In other words, he adds, “The beauty of a 3-D CAT Scan is that it eliminates guesswork. This machine allows me to do a procedure like placing implants into the bone on an x-ray first, rather than on a patient. I can actually see through the bone to the spacing between the implants and adjacent structures like teeth, nerves or blood vessels. Its capabilities are just amazing.” As amazing as the new technology is, it is the staff who make The Center for Oral & Maxillofacial Surgery and Implantation an exceptional experience. “Everyone who works here understands and keeps in mind the importance of how the patient perceives what is happening. You are made to feel special from the moment you walk into our office,” says Dr. Echo. However, elephants are renowned for their patience and wisdom, which are exemplified in this tiny café serving generous portions of mouthwatering delights. The Tiny Elephant Café is connected to Watchung Booksellers on Fairfield Street in Montclair.

If you want breakfast at any time, the Tiny Elephant has you covered. Choose from delicious Challah bread French Toast with 100% pure maple syrup ($9.50) or the creative Huevos Rancheros Wrap with scrambled eggs, avocado, black beans, pico de gallo and cilantro lime cream ($9). A different, individual sized quiche is made daily ($6).

Owned by ebullient sisters Alison Meade and Dana Bachan, the Tiny Elephant is a dream come true for them, but one they have not taken on lightly. Chef Alison cooked beside her grandmother from childhood, and is a graduate of the French Culinary Institute in New York City. She spent countless hours developing the Café’s tasty and fresh menu selections. Not to be outdone, Pastry Chef Dana’s creations tantalize the eyes and taste buds. Self-taught, she specializes in cookies, cupcakes, pastries, cakes and other sweet treats.

Not to be overlooked, the lunch menu offers soup, salads and sandwiches. The Fennel and Beet Slaw with goat cheese and balsamic vinaigrette, topped with the Tiny Elephant’s signature sunflower seed brittle, is beyond delicious, even for a non-beet lover ($9). The tasty BBQ Chicken Ranch Salad features a generous amount of grilled chicken, avocado and corn on a bed of romaine lettuce with Ranch dressing and BBQ sauce drizzle ($11).

The Café’s sandwiches are unique, especially the Cranberry Walnut Chickpea Salad with maple mayonnaise on a wholegrain bread ($8.50). The Grilled Steak Panini offers bitesized skirt steak marinated in balsamic garlic with caramelized onions and gorgonzola cheese ($10). The roster of Grilled Cheese sandwiches changes weekly; if you see Scamorza cheese, tomato and avocado, make sure you gobble it up ($9).


But you must leave room for dessert. The mixed berry bars are flaky and scrumptious, as are the delicious oversized cookies – especially the chocolate chip – and whimsical cupcakes in a variety of flavors ($2.50-3). The Café also features a full Kid’s Menu ($4.50-7.50) and hot and cold beverages include coffees, teas, espresso and lattes ($1.50-3.75).

Cooking with… Lou Seger, Chef/Owner of LuNello

S

itting in the beautifully appointed dining room of his Cedar Grove restaurant, Chef/ Owner Lou Seger talks excitedly about all the days he spent this winter skiing in the Catskills, his home away from home. But Seger is just as comfortable in this corner of Essex County, where he grew up and has operated LuNello’s since 2007. He points out the window to the mixed lettuces which have begun to peek through the soil. Herbs, asparagus and “lots of tomatoes” also grow on the property. On five acres in Hackettstown, he and his team plant peppers, broccoli, cauliflower, potatoes, eggplant, squash and the pumpkins he stuffs each fall, which customers have come to crave. For the recipe he is sharing, Loin of Lamb with Spring Vegetables, he is using Alpine Origin Merino lamb. Perhaps known for their wool, Merino lambs roam free on mountain pastures in New Zealand. A butcher should be able to get it for the home cook. “One lamb grazes on four acres on all organic grasses and alpine herbs,” Seger explains. The result is a lamb that lacks the stereotypical gamey, pungent flavor. It’s clean and lean and cooks easier, he says, warning, “You don’t want to cook it at a high heat.” Seger sources grass-fed meats because a lot of his customers are increasingly health conscious, but also because this is the way he eats. “Less is best” is his philosophy. “I don’t like to make it too busy. I want to taste the product.” The lamb is marinated with black peppercorns, rosemary, thyme and olive oil. It gets a coating of coarse kosher salt before going on the grill. Just four minutes on each side for medium rare, he says, using his hand to show how the meat should feel like the tender skin between the thumb and pointer finger. No prodding at the meat while it cooks, he says, and let it sit for five minutes before slicing. “If you start poking this, you let the juices out.” Seger recommends accompanying the lamb with the season’s freshest vegetables sautéed along with fava beans. In this case, a combination of spring garlic tops, puntarelle (a Catalonian chicory), English peas and wild ramps he picked himself along the fishing streams in upstate New York. You can keep it light or go heartier by adding spaetzle or rice. “It’s a perfect spring meal.”

Alpine Origin Merino Loin of Lamb with Spring Vegetables INGREDIENTS: ½ cup spring garlic tops ½ lb. wild ramps, cleaned well, soaked in water and chopped 2 cups fresh fava beans, peeled & blanched 1 cup English peas, peeled & blanched 1 head puntarelle cleaned and stripped (soak in cold water for an hour or overnight) Salt and pepper to taste 10-12 oz. Alpine Origin Merino loin of lamb marinated in black peppercorn, rosemary, thyme, olive oil and garlic

DIRECTIONS: Add chopped garlic and leeks to a pan coated in olive oil and lightly brown. Next, add the fava beans, peas, puntarelle, salt and pepper, and a cup of chicken stock. Mix and cook until the liquid reduces completely. Meanwhile, coat marinated lamb with coarse Kosher salt and cook four minutes on each side until medium rare. Let sit for five minutes.

The Perfect Pairing

I

f you prefer Old World wines, brunello and lamb go “hand-in-hand,” says Lu Nello’s sommelier, Christian Antonelli. The more adventurous wine drinker may choose an Aglianico or a Montepulciano di Abruzzo. A good bottle of chianti also works well. If you like to drink New World wines, go for a pinot noir from Sonoma or the Central Coast.

C

onstant training creates an unconscious competence. We build muscle memory that allows us to operate at our highest level. You might have heard this referred to as “being in the zone,” “in the moment” or “mushin’” as I’ve written about in the past, which means “no mind.” We are at our best when we are acting from our pure self. Yogi Berra asked, “How can anybody hit and think at the same time?” Once you start to think in the middle of action you have interrupted the natural flow of what you do best. All of your thinking, training and researching has to be done beforehand. It’s what gives you the confidence to act without hesitation. Public speaking is one of our biggest fears, but going live on QVC to sell out a large inventory for four minutes might trump that. Three months of training on my lines and key product benefits, along with video tests, kept me focused

and relaxed no matter what the caller or host asked during the live segment. Massive preparation diminished the fear of performing under pressure.
