INSIDE ESSEX “Random Acts of Kindness” Club at Memorial Middle School
S
tudents in Lia Caravella’s “Random Acts of Kindness” club at Memorial Middle School in Cedar Grove have been making an enormous impact on others through community service. Caravella, who has always dedicated time for volunteer work, says that “my rewarding experiences helping others make both myself and the people I help feel great.” Over the years, the club has grown from five to over forty students. Once a month they visit a nursing home and spend time with the residents playing board games, coloring, creating art projects, and even held an 80’s dance party and planted flowers for Earth Day. Another “Random Act” was that they also held a special Mother’s Day Spa Day for women and their children residing in a domestic violence shelter, which featured makeup, nail, hair and art stations, as well as baked goods and gift bags. They also dedicated some of their summer vacation time to handing out care packages to the homeless. Caravella and the students in her club make an important impact in their community and recognize that, as she tells the

students, “all it takes is one person and one act of kindness to make the world a brighter place.”
West Caldwell Appoints New Chief of Police
O
n September 22, 2015, at the regular meeting of the Township of West Caldwell Council, Captain Gerard Paris was promoted to Chief of the West Caldwell Police Department. In attendance were Chief Paris’s family and friends, many dignitaries from throughout Essex County and neighboring municipalities. Chief Paris was appointed to the West Caldwell Police Department in May of 1986 and assigned to the Patrol Division. During his service Chief Paris served as a Detective, Patrol Sergeant, Detective Sergeant in charge of Investigations, Lieutenant and Captain.

Chief Paris attended the Federal Bureau of Investigation, National Academy in Quantico, Virginia and graduated from the 208th session in 2002. Chief Paris has four children, Ryan, Michael, Erin and Jordan.

alt, or sodium chloride, is essential for life. In fact, no mineral is more essential to human survival than sodium because it allows nerves to send and receive electrical impulses, helps your muscles stay strong, and keeps your cells and brain functioning. However, sodium chloride (salt) is a nutrient that the body cannot produce, and therefore it must be eaten.
The average American eats about 3,400 mg per day of sodium, according to The National Health and Nutrition Examination Survey. You may have heard that this is too much, but according to new research, it may actually be on the low side of the healthy range. A 2014 study, published in the New England Journal of Medicine, tested sodium consumption in more than 100,000 people in 17 countries. The study found that the healthy range for sodium consumption was between 3,000 and 6,000 mg per day. Eating more than 7,000 mg per day of sodium increases your risk of death or cardiovascular incidents, but not as much as eating less than 3,000 mg per day. The low salt diet was significantly more harmful than the high salt diet.
Salt has many health benefits. The other component of salt, chloride, is also essential to survival and good health. It preserves acid-base balance in the body, aids potassium absorption, improves the ability of the blood to move harmful carbon dioxide from tissues out to the lungs and, most importantly, it supplies the crucial stomach acids required to break down and digest all the foods we eat.

Because the level of salt consumption is so stable, it is an ideal medium to use for fortifying other essential nutrients such as iodine. Iodized salt first produced in the U.S. in 1924 is now used by 75 percent of the world’s population to protect against mental retardation due to Iodine Deficiency Disorders (IDD). Iodine is an essential element in healthy human life, enabling the function of thyroid glands to produce needed hormones for proper metabolism. When children in the womb don’t get enough iodine from their mother, fetal brain development may be impaired. During pregnancy, iodine deficiency can cause a child to develop learning disabilities and mental retardation as well as developmental problems affecting his speech, hearing and growth.
Salt is also a vital component of hydration. After exercise, it is critical to replace both water and salt lost through perspiration during exercise. That is why all athletes make sure they are consuming sufficient salt during and after a workout. Expectant mothers and seniors, in particular, need to guard against under-consumption of salt. Higher-salt diets have also been used successfully to combat chronic fatigue syndrome. Asthma sufferers, particularly in Eastern Europe, are often treated by having the person spend time in salt mines or salt caves. This is because the unique microclimate, containing ultrafine salt particles helps clear the lungs.
Falls are one of the most serious problems for the elderly and about a third of people older than 65 fall at least once every year. Fall-related injuries in the elderly are associated with numerous psychological and physical consequences and are a leading cause of bone breakage and hip fractures, which can lead to complications and permanent disability or death. More than 5 percent of all hospitalizations in people older than 65 years are due to fall-related injuries. Sadly, the research shows that in assisted living facilities where almost all residents are given lowsalt diets, the rate of falls and fractures are three times as great as in the normal home environment.

Low salt diets can be especially harmful for the elderly. In older people, mild hyponatremia (low sodium concentration) is the most common form of electrolyte imbalance in the blood. Indeed, several recent medical papers found a direct relationship between hyponatremia and unsteadiness, falls, bone fractures and attention deficits. Elderly people on low salt diets often experience lack of thirst which leads to dehydration and they experience loss of appetite that leads to a host of health problems.
It is well documented that the Japanese and the Swiss enjoy some of the longest life expectancy rates of anyone in the world. It is less known however, that they also have among the highest rates of salt consumption. A review of peer-reviewed medical research around the world indicates that if people were to actually consume the low levels of salt recommended in the U.S. Dietary Guidelines, they would put their health at risk. Fortunately, most Americans—including the elderly—when left to their own choice consume salt within the healthy range. —(BPT)

Here are several of the questions that we were asked just this past week… “What should I do if my child’s permanent tooth is ever knocked out accidentally?” Don’t panic, but it is very important to seek your dentist for immediate treatment, as your tooth has its best chance of survival if you receive proper care within the first hour. • Try your best not to hold the tooth by the root, as there are very delicate cells along the root surface which are critical to successfully reattaching the tooth to the socket bone. You don’t want to damage these, so try to touch only the “crown” of the tooth – that “whiter”part of the tooth that you would see when you smile. • Don’t scrub it ! Instead, gently rinse off any debris with water. Always handle the tooth gently and minimally. • If you can, place the tooth gently back into its socket temporarily. If not, then the next best is to place the tooth into Hanks Solution, which you can get here or at your drugstore and have ready in your first-aid kit. Next best would be to place it in the mouth between your cheek and gum. If not, then in contact-lens saline solution, or milk. • In any such emergency, you can always go to www.DrJosephsen.com for a quick refresher course in what to do… but keep it moist, handle it gently, and get treatment quickly! “Why is my heart doctor concerned about my gums?” There is ever growing medical evidence to connect periodontal (gum) disease with cardiovascular (heart) problems. This is likely due to inflammatory proteins and bacteria from the gums entering your bloodstream, which may then have a harmful long-term effect on your heart and arteries. Medical and Dental researchers continue to search for the definitive link between the two. Meanwhile, most agree that of all the many factors involved, dental prevention is key, and may be the factor easiest to control. ill Hedge, executive chef at Kings Food Markets, has just returned from a food-focused trip to Cuba, where he visited many of the finest privately owned restaurants on the island country. The culinary and cultural tour included preparing an authentic Cuban pig roast with all the trimmings. Chef Corradino “Dino” Suriano’s love affair with food started at a very young age. He was only thirteen when he got his first job in a pizzeria, and his passion led him to open restaurants in Madison and Montclair. Although experience is a wonderful teacher, he decided to go to the New York Restaurant School at night in order to fill the gaps in his culinary education. He is now the Executive Chef at Rare, The Steak House.
What inspires him? Fresh ingredients. In fact, he regularly frequents farms in both Vineland and Hackettstown in order to procure the freshest local produce from which to make delicious meals. He often spends his mornings “playing around” with these ingredients to create recipes for the specials that will grace the menu that evening. Chef Corradino recommends that you make the preparation of this recipe a family affair. Kids will love getting their hands dirty (literally), and everyone will enjoy the unforgettable taste of fresh pasta. Butternut Squash-Potato Gnocchi in a Radicchio, Endive and Arugula Sauce For the Gnocchi: INGREDIENTS 1 lb. butternut squash 2 Tbs. olive oil ½ tsp. nutmeg Salt and pepper 1 lb. russet potatoes 2 lb. semolina flour
2 Tbs. grated Parmesan cheese 2 eggs Organic parsley One 13 x 9 x 2-inch disposable foil pan
DIRECTIONS: Preheat oven to 400°. Peel, seed and cut the butternut squash into cubes and place onto a cookie sheet in a single layer. Drizzle with olive oil, add nutmeg, salt and pepper (to taste). Roast for 45 minutes, until fork tender. Meanwhile, peel the potatoes and put them in a large pot. Cover with cold water and add a liberal amount of salt. Bring to a boil, then reduce to simmer for 15-20 minutes, or until fork tender. Drain. Put the butternut squash and potatoes through a ricer or food mill and place the mixture into a large bowl. Add the semolina flour, cheese and eggs. Mix with a spoon, then your hands, until a dough is formed. The dough will be a bit wet, but not so wet that it is sticky. If it is too wet, add a little more flour. Place a portion of the dough onto a floured work surface, form it into a log and cut into small pieces. You may add decorative lines to the gnocchi by using a grooved gnocchi maker or a fork. Repeat with the remainder of the dough. Blanche the gnocchi in boiling water for approximately 2 minutes, or until they rise to the surface. Drain. If you are going to eat the gnocchi later the same day, you can place them on a sheet pan and store in the refrigerator until ready for use. If you will not eat the gnocchi the
same day, place them onto a sheet pan, cover and freeze for up to 3 months. Cook as directed above, except note that the frozen gnocchi will take slightly longer to rise to the surface.
For the Sauce: INGREDIENTS 2 Tbs. olive oil ½ garlic clove, sliced 1 cup smoked and cured bacon, cubed (can substitute pancetta, bacon or turkey bacon, if preferred) 1 cup endive, sliced 1 cup radicchio, sliced
¼ cup white wine, chicken or vegetable broth, or water ½ cup arugula (can substitute spinach or broccoli rabe) 1 Tbs. grated Parmesan cheese Salt
DIRECTIONS: Heat a sauté pan over high heat. Add the olive oil. When the oil is hot, add the garlic and cook for 30 seconds. Add the bacon to the pan and render, draining off excess fat. Place the endive and radicchio in the pan with the bacon and garlic, and cook until wilted, about 1 minute. Deglaze the pan with the wine, broth or water, then add the arugula and gnocchi. Heat through. You can add a little water to the pan if the sauce seems too dry. Top with cheese and salt to taste. Serve immediately. Serves 10.
BONUS TIPS:
Feel free to make th e gnocchi with pu mpkin or acorn squash rather th an butternut squa sh. For a little crunch, add toaste d pine nuts (or your favorite nut) to the sauce. Instead of the sauce, serve the gnocchi with brown butter and sa ge.

A Cue From The King of Q Cards
H
e’s been on more Saturday Night Live shows than any actor, entertainer or celebrity. He works with Seth Meyers on the Late Show, writes some of his monologue jokes, and holds up the cardboard cue cards. As the owner of NYC Q Cards, which employs 15 people, he is the king of cue cards. And that’s what I called him when we sat down for coffee and a conversation about his experience. Live from New Jersey, it’s Wally Feresten!!! Barry Farber: Tell me how you got started. Wally Feresten: I knew what I wanted to do since the fifth grade. My goal was to always write for TV. The person who hired me, Kevin Kay, was running a show on Nickelodeon called Weinerville and that was my first writing job. From there I got a job on Cartoon Network but it wasn’t enough to support myself. So cue card work and bartending helped everything come around.
“Wally is a character in every sketch, you just don’t see him,” says Alec Baldwin, a 16-time SNL host who has also worked with Mr. Feresten on live episodes of “30 Rock.” BF: Many people would like to write for television and film. What are some tips you might have for them? WF: Passion is a key trait. I’d like to give the advice that my boss Seth Meyers gives when people ask him that question because I think it’s great advice. He says, “If you want to be a writer, to write as much as you can and then surround yourself with people that want to do the same kind of work. Write with them and do things with them.” If all of you are passionate about it, one person is probably going to succeed and then that person will help everyone else in the circle of connections. Then when people ask you if you know anybody who can write for a show, you can recommend someone in your circle. I see it happen all the time on Saturday Night Live.
BF: Great advice. Surround yourself with people who are immersed in the profession and have the passion. You will pick up ideas and connections from that group.

Is there anything interesting that you’d like to share about your experiences at Saturday Night Live? WF: A lot of times you can hear me laughing on camera. I have a very distinctive laugh and I’m so close to the mics and the actors that a lot of times my laughter bleeds through. My friends tell me they hear me laughing during certain sketches. If I’m laughing, it will be after I watched the sketch rehearsed twice on Thursday, three times on Friday, once on Saturday afternoon, then a dress through at 8 pm. By the 11:30 show, I’ve seen this sketch at least six times! The sketches are always changing from the time they come in on Thursday so there’s always a good chance that they will mix it up. That’s when you’ll hear me laugh. The audience always loves it when the actors break character or there’s a mistake. We think it’s funny and it makes our job fun. BF: What’s one important message you would like to have the readers take away from our conversation? WF: Leave every opportunity open. I went to school for writing, TV and film and never thought 25 years later I’d be the owner of a cue card company. It was the furthest thing from my mind. Don’t dismiss something just because it’s not something that you want to do. I wanted to be a writer so much but I was never able to really support myself. The experiences I have had through 25 years working with cue cards could never have matched the experiences I would have had as a writer. And I’m a better person for it and worked harder than I’ve ever worked before. Being a cue card guy gave me the opportunity to have new experiences and meet many more people than I might have as a writer. I’m the man to see when you need cue cards in New York City. I can say, and I’m not bragging, I’m the best cue card guy there is. I come through and my people come through. BF: Great advice. Be passionate about what you do, surround yourself with the right people and leave your options open to try new things.
