O
ver the course of the past decade or so, more and more attention has been brought to how the foods we eat directly affect our bodies and our health. Food is no longer just fuel; it’s medicine. Eating the right diet can stave off illness, cure health issues, even prevent chronic diseases or medical conditions that could devastate quality of life. Unfortunately, not everyone has access to these foods when they need them the most, and therein was the very inspiration for the Therapeutic Food Pantry (TFP) at Mary Bird Perkins Cancer Center. Opening the doors of its first facility in 1971, Mary Bird Perkins was created to fill the need for a community-owned, non-profit radiation center in the greater Baton Rouge area. In 1998, Mary Bird Perkins was asked to begin offering services on the Northshore to meet the needs of residents in this community. Currently, there are seven locations in operation throughout Southeast Louisiana and Southwest Mississippi, serving the needs of these communities for cancer care. Entwined in the care it offers is something so much simpler than the technologically driven treatment plans: food. “The inspiration for the TFP resulted from patients needing access to quality foods and ingredients during the course of cancer treatment,” explains Meredith Bechac, MS, RD, LDN, a Registered Dietitian at Mary Bird Perkins. “We saw the need to combat food insecurity within the communities we serve. The TFP helps to bridge these gaps and is so important in the fact that it not only provides patients and their families with food items they need, but it also provides food specifically tailored with radiation and chemotherapy side effects in mind. Our pantry is curated by a Registered Dietitian who provides individualized nutrition education and touchpoints during each visit, which makes this program unique.” 14

At its core, the mission at Mary Bird Perkins is to improve survivorship and lessen the burden of cancer. The TFP plays directly into that mission, working throughout the year to serve the needs of 250 unique patients. Since its inception in January of 2020, in fact, the organization has distributed food at 2,000 visits. With as great a need as it serves, the TFP naturally faces challenges. “Our biggest challenge is simply keeping food on the shelves!” says Bechac. “There are so many patients in need of this service.” Sandria, a patient who received assistance through the TFP, says, “There is nothing wrong with asking or taking help when it’s offered. We are our brothers’ keepers, and I feel that it’s important for people to understand that a lot of kind, generous people have donated time, food and energy to help see to the needs of their fellow man. Unfortunately, the stigma of asking for help is hard for many. We don’t know where they’ve been in life. But it’s okay to accept help from others. It took me a long time to learn that lesson.” Funding is always a concern for any non-profit, but the TFP has found great support. “Our funding comes from a combination of generous donors and
grant funding,” Bechac notes. “We receive philanthropy dollars from our wonderful local community. Many cancer patients face various barriers to care, including financial and food insecurities. Through the generosity of donors, we are able to provide support services that make a tremendous difference in patient outcomes.” Financial support is always helpful, but the TFP also welcomes donations from the community for food items, including fresh produce and shelf stable items. Like most community organizations, the TFP experienced the effects of COVID. “Due to the strain of the pandemic, we noticed an increased need for the food pantry,” Bechac explains. “Many patients were nervous to go to the grocery store or had recently lost their jobs and were experiencing unexpected financial burdens. The TFP helped to provide patients with a sense of relief, while allowing them to maintain a nutritious diet.”
As a member of the TFP team at Mary Bird Perkins, Bechac is part of the impact being made. “I love working directly with patients daily and helping to improve their outcomes,” she says. “This includes educating patients on the importance of quality nutrition during cancer treatment, helping them meet weight goals, teaching individuals how to utilize tube feedings or providing fresh fruits and vegetables from our pantry. Nutrition is such an important cornerstone of cancer care.” In feeding their patients, the TFP at Mary Bird Perkins is feeding them more than just food—they feed them life. They feed them hope.

Even with this increased need—and, in part, because of it—the TFP grew and was able to provide for its patients. “Over the past year, we have been able to explore community partnerships,” says Bechac. “This year, we have been able to partner with Second Harvest Food Bank of Greater New Orleans to expand our offerings in the food pantry, which has been essential in continuing to best serve our patients.”

ave you visited our parish’s only open-admission animal shelter recently? There’s been exciting things happening over at St. Tammany Parish Dept. of Animal Services, and all of them are great for the animals. Even though they turn no animal away and take in almost 4,000 stray, abandoned, ownersurrendered and cruelty confiscated animals a year; they’ve been working like dogs and became a “no-kill” shelter in 2021. That’s truly a remarkable achievement for such a high intake animal control facility.
Mardi Paws, the Northshore’s beloved pooch parade in its 29th year, has been partnering with the shelter to sponsor adoption initiatives, transports and specialized medical care for injured strays, and recently took on Project Play Yards so the pups can play all day while they wait for a forever home. Made possible by their supporters and the community, Mardi Paws has re-done the yards with lots of fun play equipment, pools, sprinkler pads and much more. Exercising and having fun provides much-needed socialization to make the pups more adoptable and gets them out of their kennels and into forever homes much quicker. If you’d like to see all the new improvements, stop by the shelter on Highway 36 in Lacombe. They also have a recently installed Pet Pantry donated by Girl Scout Kamryn Rouse for her Gold Award Project and welcome food, treats, and toy donations to keep it stocked for those needing a little help. If you’re thinking of welcoming a dog or cat into your home, please consider adopting an animal from them, they can’t keep up these remarkable achievements without the community’s support.

ooking back at past generations, dads have come a long way from the “hands-off” types who left all the child-rearing to the mothers and the men who stood outside smoking cigars in the waiting rooms while their wives huffed it out alone in the delivery room. These days, dads share the responsibilities of everything from feeding and changing to making dinner and vacuuming. Co-parenting really is co-parenting, and the example set by these dads who show up is an incredibly important way to create a new generation of strong individuals with strong values.
For Brandon Accardo, being a dad—one who is actively involved in his kid’s life—is an incredibly important job, one that he finds both challenging and rewarding. “I continually try to communicate and teach my son daily so he can be the best version of himself,” says Accardo, who works as a financial representative at Northwestern Mutual. JUNE/JULY 2022

SUPERDAD As different as financial planning is to parenting, there are takeaways from his job that Accardo applies to his role as a dad. “My biggest lesson in work is just listening more,” he says. “I find that, the more you listen, the more you will learn. Listening is also an important part of being a parent, because you learn about your kids and what they need from you.” As he and his wife work to support their family, Accardo knows that they are instilling in him some valuable lessons and principles. “My family sees what it takes to be successful,” he says. “I want my son to see our hard work ethics so he can learn the same attributes and build on this in his future. He sees the passion I have for my career, and I am certain he will find his path with the same burning passion. Finding that is important to finding fulfillment in what you do in life, and I want that for him.”

An Army vet who served in combat, Accardo takes a great deal of pride in his service to his country and preserving its freedoms. He also considers it to be a great source of his character. “This is where I learned my base foundation of who I wanted to be,” he explains. “I was groomed and educated by some highly respected mentors who impact me to this day.” As his son grows into manhood, Accardo hopes that he takes away memories of his childhood that never leave a doubt that he was loved. “I want my son to remember both the good times and the hard times and realize that tough times never last—tough people do,” he says. “And I want him to hold my love for him as close and as tight as he can when I am gone and give it all to his children, as I did for him.” As wise to the world as he is, Accardo has learned some things from fatherhood: “I have learned how to find my patience and remember that I was once just a kid like him!” 28

A
s the medical director for Northshore Dermatology, Dr. Eric Tabor has a schedule that keeps him incredibly busy—though he has learned, in his years of practice, the importance of balance. “I think my most significant accomplishment in my career is achieving a healthy work-life balance,” he says. “So many successful men choose work and end up missing out on time with their family. I have managed to grow and expand my business while maintaining quality time at home. Because I understand how important it is, I have recently decided to ensure a greater work-life balance for all of my employees by moving to a four-day workweek in the upcoming months.” While most men consider their elders or predecessors to be their greatest influence, Dr. Tabor sees things a little differently. “My sons are hands-down my heroes,” he says. “Through the trials of everyday life, I have witnessed their perseverance and determination to get where they are going. Their resilience is motivating. As they have grown into young men, I know that they have made me a better man myself, as well as a better father and now grandfather.” Even with the challenges that come with being in the medical profession, Dr. Tabor is still inspired by his work. “It’s pretty incredible to get to help others every day,” he says. “Each patient is interesting and different, and being able to take the time to help each of them in their unique situation is rewarding.”

s the owner of Zito’s AC & Heating, Inc., Jason Zito serves a great deal of the community’s needs, being welcomed into their homes and businesses to repair their HVAC systems and return them to comfort. As successful as the company is, it took hard work to get there. “My greatest achievement in my life has been my personal growth and creating a legacy,” Zito says. “I’m incredibly proud of starting my own business from the ground up. I had a vison early in my career to one day be self-employed, and I didn’t stop until I achieved that goal.” Part of achieving that goal was listening to others whose success could serve as an example. “A great influence in my professional life has been Mark Grillo, Sr., a business owner of 23 years,” Zito says. “Mark took me under his wing in in 2005 when he gave me an opportunity at his company. We traveled throughout the British West Indies and Grenadines Islands rooming and working together for about four years, doing HVACR work in many different supermarket chains. During lots of layovers and living on island time, he would often discuss with me how to run a successful business. Mark’s example encouraged me to start my own business in 2016.” To other aspiring business owners, he would offer this advisement: “Beat the sun up every morning. No matter what challenges occur in your life, never give up. Set a goal and do not stop until you achieve it. Although there will be hardships and struggles, don’t let them discourage you. Success doesn’t happen overnight or by accident.”

or anyone suffering from mood disorders, neuropathic pain or migraines, the advancements in treatment such as ketamine infusions can be life-changing. Dr. Brian Ball of the Ketamine Infusion Center has been on the cutting edge of bringing these options to the Northshore. Creating the practice with his wife, Kristy, Dr. Ball has started something that he is incredibly proud of. “I’m a results-oriented person,” he says. “The positive results we achieve at Ketamine Infusion Center are truly remarkable. Whether it’s pain or mood, we get patients back to functioning in life in a very normal way. It is inspirational to see the transformation over a two-week period from a person with no hope to one who is enjoying and engaging in life. We truly help patients get their lives back.” To his younger self—and really, to anyone charting their path in life—Dr. Ball would offer this sage wisdom: “Focus on your goals and don’t allow other people to discourage you with negative feedback. Be willing to fail without fear. Fear is your biggest handicap. Whenever one is fearful, I recommend confronting it. The reality of something you fear is usually not as bad as you imagine. Also, remember to surround yourself with smart and positive people.” A member of the Northshore community for nearly four decades, Dr. Ball currently lives in old Mandeville. “We are empty nesters and enjoy quiet, easy living here,” he says. “The area has a unique combination of cultural events, arts, dining and outdoor activities that we enjoy.” Dr. Ball is also a board-certified anesthesiologist and still practices PRN at Lakeview Regional Medical Center.

n a high-stress industry like law, creating an atmosphere in which people want to work can be difficult, but CEO and owner of Fleur de Lis Law & Title Jeff LeSaicherre prides himself on the culture he’s created within his firm. “I believe that it takes good people who enjoy their jobs, who they work with and their work environment to be successful,” he says. “I truly believe that success follows those things, and it proves true as we continue to grow and get better.” Even with the stresses of his work and running his own firm, LeSaicherre is still inspired by his work, every day. “I come to work every day with the opportunity to lead a great group of people, and I think that gives me the opportunity to be the best version of myself as a leader,” he says. “I consider it a blessing to have that sort of opportunity on a daily basis. The law and title work is not glamorous, but leading a company like this and helping others grow into leaders is very special. It took me a little while to realize that leadership is what got me up in the morning, but it inspires me every day to come to Fleur De Lis. I love every second of it.” Over the course of his life—both personally and in business— LeSaicherre’s father has left the greatest impact out of all the men he’s known. “He showed me how to work hard and instilled values like honesty and character,” says LeSaicherre. “Most importantly, he talked about setting goals, thinking positive, being generous and having fun in the things I do. Those are all lessons that I brought to my company.”

eing the owner and pharmacist at Alfonso Pharmacy, Dr. Bradley Alfonso is more than just a member of the business community—he’s an integral part of keeping his community as a whole on the path to health. “Being in business has allowed me the opportunity to meet so many great people and to participate in and give back to my local community,” he says. As detail oriented as his job requires him to be, the stress it sometimes brings is outweighed by his love for his work. “I’m inspired each day by trying to establish a rapport with each patient and give them the best care possible,” says Dr. Alfonso. For the husband and father, the greatest male influence in his life is actually much younger than he. “My son, Brady, is constantly an inspiration to me,” he says. “Brady was diagnosed with Autism shortly before his second birthday. Since that day, he’s been working nonstop, going to therapy year-round for five years straight. He has taken every challenge thrown at him in stride, never complaining or wanting to quit. Now eight years old, he’s doing everything we were once told he would never do: talking, socializing and attending a regular school.” To his younger self, Dr. Alfonso would impart some very valuable— and hard won—wisdom: “No matter how stressful or bad a situation may look at the time, things have a way of working themselves out. Eventually, we always end up right where we’re supposed to be.” An active member of the Northshore community, Dr. Alfonso is involved with a nonprofit organization called the Men of Steel, whose 100 members donate a total of $10,000 every quarter to a local charity.

The dream of becoming a doctor is often one instilled at a young age, when the realities of medical school are a distant worry, when the desire to heal or take away someone’s pain is the singular drive. For some, it is a dream that comes later, one inspired by seeing up-close-and-personal the impact that doctors have on the people they treat. For Dr. Faizan Malik, becoming a medical oncologist was a dream he shared with his best friend, Ali—an aspiration that, for Ali, was taken away just as it was about to happen.

li lost his life to Non-Hodgkin’s Lymphoma before learning that he had matched at his first choice, King Edward Medical University in Lahore, Pakistan,” says Dr. Malik, a native of Dubai. “We tried, desperately, to raise $35,000 dollars for his treatment, but failed in our efforts, and so my dear friend lost his life to cancer.”
That loss—coupled with his long-held desire to help people heal and resume living normal lives— deepened Dr. Malik’s passion to pursue oncology as a specialty. After attending King Edward Medical University, he completed his residency at Jefferson Health System in Philadelphia and his fellowship at University of Maryland Medical Center in Baltimore. In practice since 2013, he later established himself in Covington, where he has been on staff with Mary Bird Perkins Cancer 40

Center and a member of Northshore Oncology Associates since 2020. It is his deep-seated passion that makes Dr. Malik such an effective practitioner and so able to connect with his patients. “Although I know it can sometimes seem like an insurmountable challenge, I will offer endless effort until there is no sorrow, pain or suffering due to a lack of quality medical care,” he says. “What I find most fulfilling about my work is patient care. I especially enjoy the autonomy of the patient-physician relationship ingrained within the fabric of the Cancer Center. Our structure at Mary Bird Perkins allows us to do what’s right for the patient, every time. Community care and bonding with patients and their loved ones is special. We become a part of their families.”
COMMUNITY LEADER Naturally, oncology comes with a great deal of challenges, though Dr. Malik is tireless in his efforts to overcome those challenges. “Awareness about early diagnosis is a major difficulty that I face with my work,” he notes. “We need to diagnose more cancers early on, as it will provide us with the opportunity to cure more patients. The Cancer Center’s Prevention on the Go program provides free community screenings. I urge everyone to learn more about cancer screenings on our website.” With the challenges come the triumphs, and Dr. Malik deeply treasures those victories. “I have a wall in my office with notes of appreciation from the patients and their families,” he says. “Looking at those makes me proud and drives me to be better every day. They are a great reminder of what we work to accomplish here.”

Over his 13 years in practice, Dr. Malik has seen a number of changes in cancer treatment—advancements that have made the likelihood of survival so much greater. “Immunotherapy and targeted therapy are now frontline treatments and are much easier to tolerate than chemotherapy,” he says. “Also, outcomes for stage 4 cancers have improved from months to many years. Ongoing research like we do at the Cancer Center keeps bringing in new pathways to understand cancer mechanisms and better treatments. I’m incredibly proud to be a part of the changing face of cancer treatment.” During his time as a resident of Covington, Dr. Malik has created strong community ties, both through his work at Mary Bird as well as outside of the clinic. “I’ve been involved in fundraisers for cancer patients who are uninsured or under insured, as well as hunger relief efforts following Hurricane Ida,” he says. “I love being a part of this close-knit community, so I want to give back to it as much as I can.” During his time away from his work, Dr. Malik enjoys spending time with his wife, Kate, who is expecting their first child at the end of June, and engaging in physical pursuits including soccer, cricket and hiking.

I
n the daylight, the Pond House at Ten Oaks Farm is a sight to behold, a piece of modern art in architectural form, blending design and function in a way that is both unique and spectacular. With its façade of limestone textured stucco offset with opaque tongue and groove polycarbonate panels, exposed timber framing, and massive windows, the home is an artful blend of textures and finishes, almost a modernist homage to the prairie style of Frank Lloyd Wright in the way it seems to rise seamlessly from the surrounding landscape. But more than just its use of unique materials, the home’s shape is what gives it such allure. Three stories high, the structure sits over the edge of a pond, overlooking a peninsula of ten oak trees extending into the middle of the pond. Featuring an outdoor area on the first floor that includes a fireplace and outdoor kitchen, the second level comprises an open-plan living room, kitchen, and dining room with panoramic views of the magnificent location it claims. On the third floor, the master suite boasts an outdoor terrace. As a net-zero home, the structure is built to be ecoconscious, featuring a single-sloping roof that sheds rainwater into the pond, positioned to afford maximum sun exposure for the solar panels. Cantilevered at a 14-degree angle and south-facing towards the sun, the upper levels seem to almost float, and the roof sits perpendicular to the steel structure.

“What most people comment on when they see the Pond House is its uniqueness as a form and how it fits into the landscape,” says architect and owner Michael Holly of Holly & Smith Architects. Built in 2014, Holly describes its architectural style as Regional Modern— “Meaning, it is current and modern, and it fits with the place in which is resides.” Boasting 1,234 interior square feet and 755 square feet of exterior space, the home is spacious yet modest, using its every inch in a way that makes it feel expansive—a feeling heightened by its full walls of floor-to-ceiling windows. Natural light spilling onto its spaces reveals the art within its interior: the maple floor planks from leftover material used for a high school gym floor, ceilings of recycled 3/8-inch cherry wood cut from thicker boards intended for another project. A galley-style kitchen bucks the trend of massive open kitchen spaces while still managing to offer ample prep areas and storage. A long, linear island at the center is perfect for cooking and entertaining and features a Caesar Stone waterfall countertop. Custom cabinetry lies the lower back wall, with open storage above. Top-of-the-line stainless steel appliances add another element to the smooth sleekness of the stone countertops and the warmth of the pale wood cabinetry.

As the home’s sole bedroom, the master suite is modern minimalist but no less filled with architectural details. Overlooking an outdoor deck above the pond, the room has breathtaking views without—but also commands attention within. The ceiling form follows the roof slope, and the adjoining bathroom features a shower that is open to the rest of the space, with walls made of an opaque thermoplastic product that allows diffused light to flow into the space and over the 10-foot walls into the bedroom.

Clearly, creating a home that was completely unique was top of mind with the Pond House— and that uniqueness becomes even more apparent after dark. At night, the three-story structure becomes a glowing lantern, magically illuminating the water and offering a soft light to the landscape around it—a site chosen very thoughtfully. “We bought this property in 1994,” says Holly. “It was a former dairy farm pasture. We looked at it as a blank canvas and developed a master plan and then proceeded to implement it over time. All the trees, save a few live oaks and water oaks, were planted by us, and they have matured quite nicely. We do not spend a great deal of time doing manicuring—we would rather see in in a more natural state.”

LOVE IN CONCERT Story by Liesel Schmidt Photography by Madison Walters Both country fans, it seems that a meeting between Chelsea Loupe and Travis Hood at a Gretchen Wilson concert in 2018 was not chance, but written in the stars. “Neither of us were originally planning on attending, but nothing else was going on that night,” says Chelsea, who works as a physical therapist, while Travis is a businessman who moonlights as a bass player for Parish County Line on the weekends. “I was about to start PT school, not knowing what that would entail, so I said, ‘Heck, why not?’ Looking back, I’m sure glad that I did.”

ust shy of three years later, a concert once again changed their lives. “We were going with another couple—Travis’ best friend and his wife—to see Riley Green in Biloxi,” Chelsea recalls. “As I was finishing up getting ready, Travis came into the room at the condo and told me that we were going to join the other couple for a picture on the balcony, so I needed to hurry up before the sun went down. As we were approaching the balcony door to walk outside to take a ‘picture', the wife of the couple we were with said she had to finish putting her shoes and jewelry on, so Travis suggested we go on the balcony to look at the view. Travis has always had a way with words, so after just a few sentimental words, it didn’t take me long to realize what was happening. Just as the sun was setting over the beach behind us, Travis got down on one knee and asked me to spend the rest of my life with him. Of course, I said yes—but neither of us remember what he said prior to asking me to marry him because we were so present in the moment. The proposal was so simple, but also so very timeless and intimate and true, which is all I ever dreamed of.”

BRIDE Ten months later, they once again exchanged words that were timeless and intimate and true after Chelsea walked down the aisle at Maison Lafitte in Mandeville to meet Travis at the altar. Having been pronounced married, the couple joined their 275 guests for an on-site reception, where they dined on delicious food before getting down to the serious celebrating. “We wanted a fun party with all our closest friends and family there, and that’s just what we got.” Chelsea says. “No one left the dance floor, and that’s exactly what we wanted.” As unique as the couple is, the reception bore unique touches that reflected them: light-up cowboy hats, a white acoustic guitar as the guest book, and a sparkly, rock candy-filled Champagne welcome table. After so much dancing, everyone was ready for the late-night snack of mini pizzas—another detail special to the happy couple. “Pizza is our favorite food, and we actually do a ‘stuffed crust Sunday’ every weekend,” Chelsea notes. “So we did mini pizzas in mini pizza boxes with cute stickers that read, ‘All you need is love and pizza.’”
Naturally, the wedding could not be complete without cake—a plain white five-tiered confection with alternating flavors of strawberry buttercream and almond amaretto with a white silk ribbon tied around it with a bow. The groom’s cake bore a little more color: a funfetti flavored cake replica of Travis’ golf bag with their dog, Clyde, laying down beside it. After being sent off with the release of light up white balloons, the newly married Hoods left to honeymoon in Aruba. Now back home in Denham Springs, the couple is looking forward to a life together—and many, many more concerts.

Horse racing enthusiasts dressed to impress and set a course for The Anchor restaurant and bar on the banks of the scenic Tchefuncta River for the annual running of the Kentucky Derby. Saint Scholastica Academy hosted its inaugural blue dress run through Downtown Covington. It was the perfect Saturday to get outside and enjoy a nice run knowing it benefited Saint Scholastica Academy. After the run, Covington Trailhead hosted to an after party with live music by Bottoms Up. I
t was another quiet and peaceful morning sitting up in the deer stand, as two brothers watched the sun rise over the wet, dewy grass. They could often be found there on Paw Paw’s property unless it’s not deer season. Then, they are more than likely holding a fishing pole at their camp or playing ball. That’s when a new business idea hit them deep, and a partnership was born, mixing the great outdoors with the desire to become entrepreneurs.
Did I mention the brothers were only 12 and 15 years old at the time? Aubrey and Nathan Posey conceptualized Field and Fin Outfitters, a hunting and fishing apparel line. With a catchy logo that showcases a deer, duck, and fishing hook with the name strategically placed around the icons, the brothers were on their way to turning an idea into a dollar. The business officially launched a year ago in April 2021. Currently, the boys sell at markets and festivals; however, their goal is to have their merchandise in stores one day. “When starting a business, you need to think about all the aspects of running a business like knowing your customers and finding products they will love,” shared Aubrey. “In order to have a successful business, you have to work hard and get along with your partner,” said Nathan. “This isn’t always easy when your business partner is your brother.” 78

With the support of mom and dad by their side as well as the Northshore community as a whole, these brothers quickly learned the ins and outs of creating a brand and selling a product.
The Northshore community continues to support the growing business, and the brothers, in turn, happily support the Northshore through local cash flow.

Being so involved in their schools, means continuing to sell their product to the people they spend the most time with.
