2 cups Plain Flour
2 tablespoons Vegetable Oil
½ cup Salt
2 tablespoons Cream of Tartar
1 to 1 ½ cups Boiling Water
(adding it in increments until it feels just right)
Food colouring (if colour is desired)
Few drops Glycerine
6 drops Tangerine
4 drops Peppermint
2 drops Rosemary
Mix the flour, salt, cream of tartar and vegetable oil in a large mixing bowl.
Add food colouring to the boiling water then into the dry ingredients.
Stir continuously until it becomes sticky combined dough.
Add the glycerine and Essential Oils.
Allow it to cool down then take it out of the bowl and knead it vigorously for a couple of minutes until all the stickiness has gone.
If it remains a little sticky add a touch more flour until it's just right.
Place in a metal airtight tin.

Cherry Tomatoes halved
Fresh Mozzarella, cut in chunks
Fresh Basil Leaves
2 tablespoons Red Wine Vinegar
2 tablespoons Balsamic Vinegar
2 Cloves of Garlic, chopped
Salt and Pepper to taste
½ cup Olive Oil
3 drops Lemon
2 drops Basil

Place the tomatoes, mozzarella and fresh basil in a bowl and set aside.
Add the other ingredients to the blender and blitz until fully combined.
Pour the vinaigrette over the tomatoes, mozzarella and fresh basil and mix gently. Serve immediately.

½ a small Cauliflower broken into florets (about 2 cups)
½ - 1 cup (about a handful) Lentil Sprouts.
¼ of a medium size English Cucumber.
1 small Carrot.
6 Cherry Tomatoes.
¼ cup Fresh Peas
½ cup fresh sliced Green Beans
1 Spring Onion.
1 small Red Chilli.
1 cm thick piece Ginger. Juice of ½ Lime.
2 tablespoons Soy Sauce.
1-2 drops Lemongrass
Pulse the cauliflower florets in your food processor (or use a handheld grater) until the cauliflower resembles rice. Spoon the riced cauliflower into a medium size bowl.
Finely grate the ginger and put it into a small bowl and add the soy sauce, Lemongrass and freshly squeezed juice of half a lime. Give it all a stir then pour over the cauliflower rice and mix it all through to distribute the flavours evenly.
Chop the carrot, tomatoes, cucumber and green beans into small bite size pieces.
Finely slice the onion and red chilli. Add to the bowl with fresh peas and lentil sprouts. Stir everything together so that it's evenly mixed. Do a taste test and adjust the dish to your preference before serving.

Shortbread Crust
1 cup Flour
½ cup Butter cold
¼ cup Powdered Sugar
Pinch of Salt - omit if using...
Salted Butter

2 Eggs beaten
1 cup White Sugar
2 tablespoons Flour
½ teaspoon Baking Powder
¼ cup fresh Grapefruit Juice
5 drops Grapefruit
1 tablespoon lemon juice
Preheat the oven to 175 degrees celsius. Line the bottom & sides of an 8x8 baking pan with baking paper.
Cut cold butter into chunks and place in a food processor with flour, powdered sugar and salt. Pulse until fine crumbs are formed.
Press shortbread into the bottom of the baking pan and bake for 20 minutes.
In a mixing bowl combine all the filling ingredients and whisk well
Pour the filling over the hot crust.
Bake bars for 20-22 minutes until the centre no longer jiggles.
Allow bars to cool completely before dusting with powdered sugar. Cut into squares.

2 - 3 ripe Lychees, a bit excessively muddled
1/2 a navel Orange, juiced
1 tablespoon Simple Syrup (add more if you like your drinks on the sweeter side)
2 drops Tangerine
Soda Water
Crushed Ice
Optional for garnish: Lychee, Orange Slice & Mint Leaves.
M E T H O D
Muddle the Lychees well in the bottom of the cocktail shaker. Add the rest of the ingredients, except the soda water, to a cocktail shaker filled with ice and shake well.
Strain into an old fashioned glass, add some more crushed ice.
Top up the glass with sparkling water.
Garnish with a lychee, slice of orange, and some mint leaves if desired.

1 inch piece of Ginger, thinly sliced
2 Grapefruits, juiced

In a small pan, bring the water, honey and ginger to a simmer over a medium heat, stirring until the honey has dissolved. Remove the pan from the heat and let it cool for approximately 30 minutes.
Strain the syrup and add the Essential Oils.
Cool the syrup mixture and store in the fridge until needed.
Add the fresh juices to the syrup mixture and mix well.
Pour into ice filled glasses and top up with sparkling water.
Garnish with citrus fruit slices if desired.
