Dingle Business Chamber News Richie Williams Despite the inclement weather conditions the Other Voices Weekend went off very well attracting large audiences in St James Church and at all other music trail venues around town. The wall mural in Goat St really caught the eye and was complemented by the Christmas Street Lights erected just in time for what now is a major advertising outlet for Corca Dhuibhne. A huge Mile Buiochas to parents, pupils, teachers and the Fife and Drum Band for making the Lantern Parade in Feile Na Soilse one of the largest and most decorative to date. Also thanks to the lads who erected the street lights and separately the electricians and hoist operator for lighting the Christmas Tree in the storm and rain.

Sharon Crandall is again coordinating the Festive activities on behalf of the Chamber and doing a great job including feeding the crowd after the Parade. Events planned over the next few weeks include the Sceilig Hotel Craft And Food Fair on Sunday 13th featuring many local artists, craftspeople and producers from 11a.m. to 5p.m. The Santa Fun Run on Sunday 20th starts from the Marina at 2p.m.and proceeds this year will go to the Kerry/Cork Health Bus a facility used by many West Kerry people on a regular basis. The Dingle New Music Choir And Orchestra will host two Concerts in the Diseart on December 22nd and 23rd commencing at 7p.m. The Dingle Gospel Choir are also planning performances on December 13th and 15th at various venues. A joint Carol Service will be held in St James Church on Sunday 13th at 7p.m. featuring the choirs from St Marys and St James churches. The sale of horses and ads for the Race Night are still open at Sheehys Spar, Garveys Supervalue, The Surf Shop, Sweet Pea and Griffins Gift Shop.The Race Programme closes on Friday 18th so get your nag entered on time!!!.

Dingle Film Club Open to Everyone 8.45pm Tuesday Nights
The featured film at the next screening of the Dingle Film Club on Tuesday 15th december will be the British Historical period drama, Suffragette. The film tracks the story of the foot soldiers of the early feminist movement, women who were forced underground to pursue a dangerous game of cat and mouse with an increasingly brutal State. These women were not primarily from the genteel educated classes, they were working women who had seen peaceful protest achieve nothing. Radicalized and turning to violence as the only route to change, they were willing to lose everything in their fight for equality - their jobs, their homes, their children and their lives. Carey Mulligan stars as one such foot soldier, Maud. The story of her fight for dignity is as gripping and visceral as any thriller, it is also heart-breaking and inspirational. The film also stars Helena Bonham Carter, Brendan Gleeson, AnneMarie Duff, Ben Whishaw, and Meryl Streep. Note: There will be no film club the following Tuesday, 22nd December

Farming & Fishing News Louis Murchan Trade Mission to Africa with €50M of Business Deals. A weeklong trade mission to West Africa concluded with the aforementioned €50 million deal with brings a change to the one way trade direction between this country in previous decades. With a population of over 200 million, these markets provide a huge opportunity for Irish business sectors particularly in the areas of agri-food, technology, education and financial services. The Trade mission concluded in Ghana, celebrating ‘National Farmers Day’ with the National Vice President and the Regional Agriculture Minister for Greater Accra. This was a unique opportunity of celebrating ‘National Farmers Day’ in Ghana. The theme of this year’s event is aptly named ‘Transform Ghana: Invest in Agriculture. Key political figures from both in Ghana and Nigeria were met and invitations were issued to them to visit Ireland next year. So we can expect a colourful 2016 in terms of exotic trade and new produce on the Irish market. Of the over 40 companies that travelled, a significant number of companies concluded contracts this week with a value of over €50m. A number of key partnerships and business relationships were strengthen during the Trade Mission, which should prove vital for future business opportunities. In Nigeria, the Minister opened a new packaging and distribution centre for Ornua which will provide a gateway for developing business in West Africa. Ornua already have sales of €130m in 2014 and this facility provides a new route to very potentially lucrative markets. The Minister also launched a new product for another iconic Irish brand Guinness called Guinness ‘Africa Special’. Guinness Nigeria PLC imports Flavour Extract manufactured in Dublin, valued at around €60 million per annum. Additionally, a number of development related engagements including visiting the UN Humanitarian Response Dispatch Depot with the World Food Program*. * WFP - is World’s largest humanitarian organisation and currently serves approximately 80m beneficiaries in 75 countries across the world. It is a key strategic partner in Ireland’s efforts to tackle world hunger. Basic Payment Scheme Balancing Payments Commence With €700 million in payments already made to farmers, the balance of that due is now winging it way to farmers between now and Christmas. The rollout of balancing payments brings the total paid under the Basic Payments Scheme to over €1 billion and over 115,000 farmers have received a payment to date. In addition, just under 84,000 farmers have been paid almost €180m under the Areas of Natural Constraint Scheme to date. Payments under the Basic Payments Scheme and the Areas of Natural Constraint Scheme over the last few months represent a total payment of some €1.2 billion to farmers. This is a very significant financial boost for both individual farmers and the wider rural economy, and represents an important investment in the continued growth of our Agri-food sector. The Department is continuing to prioritise the processing of outstanding cases under both schemes, and it is hoped that this backlog can also be cleared before Christmas. However, while Rome wasn’t built in a day, farmers need to keep on top of their own situations, and put continuous pressure on the BPS section to clear their payment. If you don’t continuously contact the case officer dealing with your payment, they will assume that you are easy, and continue to process other peoples’ payments instead. Regular pay runs will continue to be run in December to this end. Given the difficulties faced in the sector this year, it is vital that all payments be received before the end of the year, as they are an essential element of a farmers income, and no other sector (bar myself) has to accept not receiving payment prior to the most expensive season in the year. Farmers who have been issued with “query” letters to respond to them, immediately. Payments under the National Reserve and Young Farmers Scheme will commence in mid December following the successful delivery of the Basic Payment Scheme Balancing Payments and will continue into January/ February 2016. If anyone received what they see is a small entitlement value, for their payments, they should consider appealing this. Considering the IFA’s track record in pay negotiations, they should consider contacting them to do the negotiations. Otherwise, just contact your agricultural advisor, and he should be able to assist. Other Payments Briefly, AEOS payments are due before Christmas, and will be at the normal rate. In 2014, this payment did not reach the farmer until 23rd December, due to both technical difficulties and manpower shortages in the payment section of DAFM. There is also the cynic among you who feel that some of these payments are withheld by the department, so as to allow interest accrue in the government’s own bank accounts, but let’s not hear of such talk. Those of you, in AEOS who joined GLAS in May, will receive a nine 12 West Kerry Live
month payment for AEOS, and “should seamlessly slip into GLAS” and receive a payment for the last three months of the year under GLAS. Considering that in most of these cases, the individual will have a higher GLAS Payment, their overall payment will increase, somewhat. Anyone in GLAS and not previously in AEOS, will just receive a payment for the last three months of the year (October to December, inclusive). This will represent a quater of the total annual payment expected for the next five years. On a final GLAS note, the closing date was extended since the last issue of this magazine, and was not therefore mentioned in these pages. This is now, Monday 14th December. If you haven’t considered joining at this stage, the suggestion is that you leave it until Tranche II, in May 2016. Deadline for Submitting Nitrates Forms is 31st December 2015 The Department of Agriculture, Food and the Marine is reminding farmers that Nitrates records for the movement of organic fertiliser, temporary movement of animals during the year or short term rental grazing agreements ( Records 3,4,5) must be submitted to Nitrates Section, Department of Agriculture, Food and the Marine, Johnstown Castle Estate, Co. Wexford on or before 31st December 2015. These forms are particularly important for farmers wishing to avail of such agreements in ensuring compliance with the limits of the Nitrates regulations. This reminder follows on from the recent provision of interim Nitrogen and Phosphorus statements for the period January to October 2015 which have been made available online to all farmers registered with agfood. ie. These statements, for cattle only, are beneficial to farmers, especially those that may have increased stock numbers in the past year. Based on these figures, farmers can make projections as to their approximate nitrogen per hectare figure at the end of the year. €241M EMFF Seafood Development Operational Programme As a slight change in Direction, but sticking to food production and harvesting, The European Commission has agreed and adopted Ireland’s new €241 million development programme for the seafood sector for the period up to 2020 co-funded by the Exchequer and European Maritime and Fisheries Fund. This is like the Cinderella Story. And it is intended to bring more news of developments in the fishing industry to these pages in 2016. Funds under the Programme will be distributed as follows: Sustainable Development Of Fisheries (€67 Million) Measures will be focussed on implementation of the Common Fisheries Policy, in particular the discards ban. Schemes will be implemented to support fishermen in implementing the landing obligation, to develop more selective fishing gear and methods to avoid unwanted catch, to decommission vessels in imbalanced fleet segments, to support sustainable inshore fisheries and to support implementation of the Habitats, Birds and Marine Strategy Framework Directives. Sustainable Development Of Aquaculture (€30 Million) Measures will be focussed on sustainably growing production, value and employment in the sector and on promoting knowledge, innovation and technology. Processing And Marketing (€33 Million) Measures will be focussed on promoting innovation, competitiveness and employment in the sector through increased value added processing of fish, promotion of new product development and increased scale. Fisheries Local Action Groups (€12 Million) Support to a maximum of 7 Fisheries Local Action Groups to develop and implement local development strategies for coastal areas to create growth and jobs in those areas, in particular by adding value to seafood products and diversifying the local economy towards new economic activities offered by the broader maritime sector. Control and Enforcement (€45 million) Supports will be focussed on implementation of the Common Fisheries Policy and will finance investment by the State in database systems, traceability systems, vessel monitoring systems, training and investment in new fisheries patrol vessels. Data Collection (€41 Million) Supports will be focussed on provision of scientific and economic data on the seafood industry to support decision making at EU and national level on implementation of the CFP, in particular research vessel surveys, contracting of scientific and economic resources, and outsourced expertise to survey, compile and analyse data. Integrated Maritime Policy (€10.6 Million) Supports will be focussed on developing a marine spatial planning system and other Integrated Maritime Policy measures. Chestnuts Roasting on an Open Fire! Irene Ní Fhlannúra
sweet chestnuts make sure there is no mould or brown spots on them. They should be firm to touch and not “give” when lightly squeezed. Store them like you would other vegetables, preferably in the fridge and they should keep up to two weeks. To prepare fresh chestnuts, make a slit in the brown outer skin and boil for 20 minutes. Leave them in the water while you peel them so the tough skin is easier to remove. To roast them, soak in cold water first for 30mins, make the slit on the plump side and roast in a hot oven for 25mins. Remove from the oven and wrap in a tea towel which will make moisten and loosen the outer skin. Dried chestnuts need to be soaked overnight before cooking and are a nutritious and delicious addition to soups, stews, stuffing and sauces. Ground chestnut (flour) is naturally gluten free and adds a depth of sweetness and flavour when added to other flours especially for cakes, breads, cookies and pasta dough. Did you know that like fruit and vegetables, every nut has its season? Fresh nuts are almost a rarity in this country with most nuts in the shops sold dried, powdered, puréed or canned. Nuts, in general, because of a high moisture content, do not store well and are nearly always dried before use. Sweet edible chestnuts are in season from now until after Christmas. Sweet Chestnuts (castanea sativa) grow on trees related to Oak and Beech and should not be confused with Horse Chestnuts (aesculus hippocastanum), which are of no relation at all - and are inedible. Horse chestnuts contain chemicals which are toxic to humans but some mammals such as deer, cows and horses (as the name suggests) can break these chemicals down and render them harmless. It is important to be able to distinguish between the two before you go-a-gathering! Sweet chestnuts are encased in a dense, spiny outer shell which looks like a small green urchin while the horse chestnut outer shell has shorter spikes with more spaces between them. Once the outer shell is opened and removed it is more difficult to spot the difference! Inside both types of chestnut are smooth, shiny brown seeds known as a “conkers” which provided many of us with hours of entertainment back in the day!

Extracts from horse chestnuts have been used for ages in herbal medicine. Taking horse chestnut extract may reduce the problems associated with poor circulation. This is due to a chemical, aescin, in the seed that support the integrity and strength of the vascular system and connective tissue. Horse chestnut seed extract is most often used for broken capillaries, varicose veins, hemorrhoids, swelling in the legs, itching and water retention. Remember, that raw horse chestnut seed, bark, flower and leaves are poisonous to humans and only specially formulated extracts from reputable sources ought to be used. Whole sweet chestnuts are mostly associated with the festive season, roasting on an open fire and all that. Throughout Europe they were a reliable food staple long before the spud because of their unusually high starchy carbohydrate content. They are lower in fat and calories than other nuts yet they are a rich source of monounsaturated fat - the type of fat present in olive oil. A diet rich in this type of fat is associated with the health benefits of a Mediterranean diet, famed for reducing risk of heart disease by lowering LDL cholesterol (bad) and raising the good HDL cholesterol levels. They are also high in fibre which is also a feature of the Mediterranean diet. The nutritional profile of these nuts reads like a prescription for great health - rich in B1, B2, B3, B6 and folates, important for energy, nerves and brain health. Chestnuts are unique in that they have a rich content of vitamin C, most other nuts do not have this claim to fame! Because of their tough outer skin, much of their vitamin C content remains intact even after roasting.

Killorglin Christmas Hamper Rides
Calling all cyclists - The annual Killorglin Cycling Club Hamper Rides will take place again on Sunday morning the 13th of December. Registration and sign-on will take place at Killorglin Sport and Leisure Centre from 8:45 am until 9:45am with the event getting underway just before 10:00am. The sign-on fee is €15 for Cycling Ireland licence holders or €17 for non-members of Cycling Ireland. The price includes hot food on your return to Killorglin. Hot showers and changing facilities are available at Killorglin Sports and Leisure Centre when the riders return to Killorglin. There are two routes to choose from. The first is a pleasant spin on a relatively flat course of 50km from Killorglin to Killarney, then on to Farrenfore, Firies, Castlemaine and Milltown before finishing in Killorglin. The second route is a more testing 75km spin that follows the first route as far as Farrenfore but there it continues towards Tralee before turning off for Farmers Bridge and up the hill to the main Tralee to Killorglin road. From there it is a straight run back to Puck via Castlemaine and Milltown. Both events are run at a controlled pace, behind a lead car, for about two thirds of the route. The pace is dependant of the conditions but the aim is to keep the group as intact as possible before the control is released. The control on the 75km spin is released at the bottom of the climb at Farmers Bridge and it is everyone for themselves from there home. The control on the shorter route is released just after Firies village and again the gallop is on from there. U16 if they wish can compete in the 50km route & will be entitled to a prize, no U16 is to ride the 75km on the day. While not a race there are a variety of hampers and prizes on offer. The first three riders home from the 75km spin have first choice of the hampers on display and the first rider home from the short route is next in line. After that the remaining prizes are drawn from a hat on the basis of the sign-on number. There will also be a youth cycle for the U12’s & U14’s with will consist of a loop in Beaufort approximately 35km there is a fee of €5 for this. This is a group ride with a steady pace intended to get kids used to riding together as a bunch.

Annascaul Singing Club The windows were rattling at the Annascaul Singing Club's November gathering at Patcheen's Bar in the village. Old friends and new got together and the place was packed as the songs flowed one after another throughout the night. We were especially glad to welcome members of the Dingle Folk Club along with the Dingle Ukulele Band. The latter was on its first outing since recently forming and the foursome delivered a fine performance. A couple of visitors from Newry who had been holidaying in Co. Cork when they spotted our Facebook page, traveled up, enjoyed a few songs and then stayed in one of our B&Bs. News of the village and our singing club is obviously reaching parts far from our own front door. It's worth noting too that the aforementioned FB page has recorded over a thousand views and likes in the few short months since it was set up to carry photos and news of the club sessions. As a result the role call of far-traveled interested parties who have come to sing with us since our first night last April is extensive. Folk from Strasbourg, Paris, Liverpool, Manchester, Dublin, Dingle, Limerick, Newry, London, Brussels, Glasgow, Cork. Killarney, Tralee and many points in between have enjoyed the hospitality of the club and Annascaul village.. All in all it's been a great nine months. We've established the third Thursday of the month as our regular night at Patcheen's Pub, The management and staff of the pub provide us with a home and West Kerry Live help us with publicity. But, it has all been made possible by the people of the village and surrounding areas who come in and gather round to sing their favourite songs along with.the core group of singers who contribute their talents and abilities faithfully and well each time we meet. The next gathering will take place on Thursday 17th December starting at 9pm As it nears Christmas we invite folk to bring seasonal songs and carols but also feel free to sing whatever takes your fancy. If you want to sit and listen, you can do that too. And remember, once more, it is free and its fun.

If children realise that they are really good at some sports or at a particular aspect of a sport then they can go ahead and pursue thatbe it Basketball Athletics, Martial Arts, Gymnastics, swimming…The list is endless and it is important to remember that all sports will complement each other. In particular, Bas-
ketball is very beneficial to GAA athletes-improving peripheral vision, hand eye co-ordination and of course agility and fitness. A qualified coach has commenced Basketball on Saturday evenings in the new Community Centre, Milltown. Children in 1st, 2nd and 3rd classes are catered for between 5 and 6 pm while 4th, 5th and 6th class children follow on between 6 and 7 pm. The Late John Mccarthy Ted Creedon The death occurred last month of John McCarthy, a native of Garrane, Dingle, in his 100th year. John was born on June 17, 1916, he told this writer at Béal Bán Races in June 2010 (Pictured opposite with artist Liam O’ Neill). "I rode in the races here in the late forties but the priest put a stop to Sunday racing. I was a wild young fella and I often went to the races in Dunurlin and Ballintaggart before that. I was farming all my life. My father died in 1947 and my mother lived to be 101. My wife, Eileen, died four years ago and now I live near my daughters Mary and Eileen near Youghal. We had a good night out on Friday because my grand-daughter, Kerry McCarthy, was a contestant in the Cork Rose of Tralee but she didn't win. Anyway, I'm off now to place a few bets and get a pint!" he said. John was celebrating his 94th birthday that week but could have passed for 80. He was President of Ballymacoda Coursing and Gun Club in Cork. He is survived by his daughters Mary (Lee), Ellen (Jackson), sons John, Brendan and Denis and sister Ellen. He was laid to rest in St Joseph's Cemetery, Ladysbridge, Co. Cork on Thursday, November 26.

The Children of the Finca Florencia Orna Dunlevy & Eddy Dieckmann Friday 11th December 7.30 pm in An Diseart In 2013, co-founder Eddy Dieckmann, spent a few weeks In the nutrition and health care centre CERNE in Chimaltenango where he got aquainted with the children and their families who work for the large landowner of the Finca Florencia. They told him about their daily routines which provided the material for this moving book which will be launched in An Díseart in Dingle on Friday 11th December at 7.30pm. A short film (approx. 9 min.) about the children will also be shown on the night. Hope Guatemala would like to thank all who contributed with their service to the success of this book; in particular The Rotary Club Dingle who contributed generously to it’s publishing.

News From the Díseart We had our end of year meeting of the Board of the Díseart on Friday 4 December. We had a new member appointed to the Board, Dr. Tadhg Ó Dúshláine of the Department of Modern Irish at NUI Maynooth. Another member retired after long and devoted service. We discussed how helpful it would be for Díseart to establish a serious relationship with some other third level institution. The facilities of the Díseart and of the local library are underused. SHU seems to have veered away from the courses we had originally on offer and seem to be satisfied with studying away from home but with their own teachers and following the home courses. The course in Irish Theology and Spirituality which was central to the Díseart has been discarded. But we still offer courses, run seminars and workshops in Irish language and literature, in art, in music, folklore, and early Christian archeaology. The very building and its gardens are redolent of these interests. I am excited that our Harry Clarke windows in our Neo-Gothic chapel has been awarded first place in the world in 2015 by Tripadvisor. Personally I myself am so happy to be honoured by the Irish Consulate in New York by a night in my honour for my contribution to Irish Language Literature, Art and Culture on Monday 14th December. Part of the celebration will be the showing of a thoughtful film on the beauties of Corca Dhuibhne and Iveragh Peninsulas with Skellig and Valencia islands in between. This film will be shown in a private club in Shoho and again will be part of the celebration on 15th of another accolade, an award by the Irish American Irish Historical Society which was set up in 1998 in honour of 30 West Kerry Live

An Taoiseach Enda Kenny T.D. launched this display at Oireachtas na Gaeilge in Dublin at the beginning of November, and it has been purchased since then by the Irish Office in Kerry County Council to display around Kerry as part of 2016 Centenary Commemoration.Athbheochan na Gaeilge & 1916 will begin its county wide tour in Tralee Library where it can be viewed over the next fortnight, during which the Kerry 2016 Commemorative Programme for the 1916 Easter Rising will be launched.

West Kerry GAA Breandán Fitzgerald West Kerry U16 Championship Final 2015 In the West Kerry U16 Championship Final Replay played in Annascaul on Sunday 6th December it was Dingle that got the upper hand against Annascaul/Lispole after their hard fought draw last week. With two goal coming from Joe Saunders, Dingle ran out winners on a score line of Annascaul/Lispole 1-8 to Dingle 2-11. Dingle had the better start and Deividas Uosis had them two points up after 5 minutes, one from play and one from a free kick. Colm Moriarty finished a good move for Annascaul/Lispole shortly after to score his side’s first point. Luke O’Connell responded with a point from play for Dingle and Deividas Uosis was unlucky when his shot hit the crossbar. Uosis put Dingle three up with a pointed free and Gearóid Lyne kicked a good point for Annascaul/Lispole to leave the score after 15 minutes, Annascaul/Lispole 0-2 to Dingle 0-4. Cathal Ferriter made it a one point game when he kicked a pointed free for Annascaul/Lispole with 20 minutes gone. Deividas Uosis restored Dingles lead to two shortly after. Annascaul/Lispole midfielder David O’Brien who was now operating at full forward after receiving an injury kicked a fine score from play to make it a one point game once more. With the first half nearly up Cathal Ferriter levelled the game with a pointed free for Annascaul/Lispole to leave the half time score Annascaul/Lispole 0-5 to Dingle 0-5. From the restart Conor Flannery put Dingle one up again with a good point from play. Shortly after Annascaul/Lispole lost James Ashe through injury from the heart of their defence, Dingles Mark Ashe played a great ball through the middle to Joe Saunders who calmly finished to the back of the net. Luke O’Connell added another point from play for Dingle before Seán Kennedy scored good two points for Annascaul/Lispole. Deividas Uosis kicked a fine point from play for Dingle to leave the score after 15 minutes of the second half, Annascaul/Lispole 0-7 to Dingle 1-8. Dingle scored their second goal on the 19th minute after good teamwork, Brian O’Connor fed Dylan Geaney and received the return, O’Connor then passed to Deividas Uosis, who played the ball across the square to the inrushing Joe Saunders who deftly kicked and scored his second goal. Annascaul/Lispole responded as only they know how and within minutes had the ball in the back of the Dingle net after James Ashe, back from injury, beat the Dingle keeper Eoin Brosnan. Dingle responded with three great points from Brian O’Connor, Luke O’Connell and young Dylan Geaney. Joe Kennedy kicked a fine point from play for Annascaul/ Lispole but when Referee Denis Sayers blew the final whistle the full time score was Annascaul/Lispole 1-8 to Dingle 2-11. Cathaoirleach Coiste na nÓg Chiarraí Thiar, Colm Ó hAiniféin presented the West Kerry U16 Championship Plaque to Dingle Captain Donnacha O’Siochrú who thanked his Management Team of Colm Geaney, John O’Connor and Fintan Ashe and praised the Annascaul/Lispole for the sporting manner in which they conducted themselves over the two games. West Kerry U16 Shield Final 2015 In the West Kerry U16 Shield Final played on Sunday 6th December in Gallarus it was An Ghaeltacht who overcame Castlegregory in a thrilling game, An Ghaeltacht 3-15 to Castlegregory 3-11. West Kerry Junior Championship Final 2015 An Ghaeltacht retained the West Kerry Junior Championship after a good win against Annascaul in Páirc Uí Bharóid, Lispole on Saturday 28th of November in the West Kerry Junior Championship Final 2015, An Ghaeltacht 3-12 to Annascaul 2-9. Following on from their recent West Kerry Senior Championship victory An Ghaeltacht had a little to spare with a six point win over Annascaul in the West Kerry Junior Championship Final. An Ghaeltacht playing against the wind in the first half were first to score with a point from play from Pádraig Óigí Ó Sé. From the restart Annascaul scored a point from play from Gerald Lenihan and Aidan Crean kicked a point from a free kick. An Ghaeltacht responded with a point from play from Tomás Breathnach and a pointed free from Pádraig Óigí Ó Sé. Annascauls Niall McKenna hit the upright after a great run and Johnny O’Driscoll was fastest to respond when he gathered the ball and kicked his second point for Annascaul. Aidan Crean added another point from a free kick for Annascaul to leave the score after 15 minutes of the second half, An Ghaeltacht 1-8 to Annascaul 0-9. In the next 10 minutes it was all An Ghaeltacht and goals from PJ Mac Láimh, Shane Ó Grifín and points from Tomás Ó Sé, Séamus Ó Muircheartaigh, Gearóid Mac an tSaoir and Gearóid Mac Gearailt put them firmly in the driving seat. Annascaul to their credit continued to take the game to An Ghaeltacht and with two goals coming from Cathal Ferriter and Seán O Hara there was an anxious few minutes for An Ghaeltacht before Referee Billy O’Shea blew the final whistle. Cathaoirleach Bord Chiarraí Thiar Muiris Ó Fiannachta presented An Ghaeltacht Captain Ciarán Ó Coileáin with the West Kerry Junior Championship Cup. Ciarán thanked An Ghaeltachts management team of Jimmy Ó Conchúir, Páidí Mac Gearailt, Eoin Mac Gearailt, Pádraig Mac Gearailt and Colm Ó Cíobháin for all their hard work and paid special tribute to the Annascaul team. Dingle New-Music Choir Dingle New-Music Choir and Orchestra were founded by Gábor Péli in September, 2014. They debuted in October 2014 in St Mary’s church, Dingle, singing at a Saturday Evening Mass. The Choir and Orchestra will return to their church music practice in January 2016. In December 2014 they performed their first Christmas Concert, and also performed at ‘Féile na Bealtaine’ in April 2015. They finished their first season by singing at the Cork International Choral Festival, performing two new Irish Choral pieces that were just written and finished for the Choir. This season the Choir and Orchestra prepares for their second Christmas Concert in the ‘Díseart Chapel’ on the 22nd and 23rd of December. The repertoire includes Vaughan Williams’ Fantasia on Christmas Carols, new arrangements of Christmas Carols and some new compositions. Tickets are currently on sale in the Díseart.

Sadly with all the HIQA inspection preparations we did not manage to have our annual craft-fair this year. How much we would have loved to host you all in our new craft-building. The HIQA inspection for reasons unknown to us was postponed in the last minute. I think in future I will refrain from posting any dates to do with dead-lines on this column as any such predictions are blown away by the fierce winds of this peninsula … We will instead share a stall at the Skellig Hotel Christmas Craft and Food Fair Sunday 13th of December from 11 a.m. until 5 p.m. You are welcome to choose your own Christmas Tree (€30 to €40 depending on size) from our own forest if you come to Doonsheen on Monday or Tuesday 14th or 15th December at 11 a.m. … and our delightful Shepherd’s Christmas Play will be staged at the Lab on Monday 21st December at 4.30 p.m. You are all welcome, including your children. - I am currently working on a number of cases with my KCC Colleagues, Cllr. Patrick Connor-Scarteen and Cllr. Séamus Cosaí Fitzgerald regarding improving safety in housing estates in Mid and West Kerry, particularly for vulnerable road users such as small children. - KCC is to review safety at Ballyfinnane Cross following a motion submitted by Cllr. Fitzgerald at my request at the most recent meeting of KCC. - Further to my work over a number of years on road safety at Keel Childcare Centre, I recently proposed the provision of Electronic Speed Indication Signs at this location, similar to those secured for Aughacasla. However KCC is to await the outcome of the speed limit review, which is underway following my calls, before further considering these new signs in Keel.

This recipe may seem like a lot of work but it truly is well worth it. It is a really comforting dish with beautiful sweet and sour flavours. I also have included a recipe for harissa paste if you want to make your own at home! In the next edition of West Kerry Live I will have Christmas Dinner recipes with plenty of new ideas! Ingredients 1 full chicken (cut into eight pieces or you can use chicken thighs)
Salt Method for harissa
Using the pestle and mortar mix in all the remaining ingredients. Put this in a jar and cover it with olive oil and it will keep for a month in the fridge. You can use it to spice up any dish. Method for the rest of the dish
½ tsp. fennel seeds, ½ tsp. coriander seeds & ¼ tsp. cumin ( put them on a dry pan and toast for two minutes then grind to a powder) 1 tsp ground black pepper
Preheat the oven to190ºC.
1 tbsp ground cinnamon
Remove the cooled chicken pieces from the lemon stock and pat them dry with kitchen paper. Discard the stock, as it can be very bitter if used again.

40g butter 2 cinnamon sticks Small bunch of thyme Dash of rapeseed oil Lemon Stock Syrup: 6 lemons in total, 4 quartered and two zested and juiced 650g caster sugar 2 litres water Bunch of thyme sprigs Small bunch of rosemary sprigs Salt and Pepper 1 bay leaf 2 heads of garlic cut in half Harissa 2 teaspoons of caraway 2 teaspoon of coriander

Spread the harissa paste evenly over the chicken pieces. Mix the spices together and sprinkle them well over the chicken and the season well with salt and pepper. Heat the oil and butter in a large pot over a medium-high heat. Add the cinnamon sticks, thyme and 3-4 lemon quarters from the stock syrup. Sauté for a few minutes until the lemons are slightly browned and the thyme and cinnamon and have been coated with the butter. Add the chicken pieces to the pan and fry for about 5 minutes over a high heat. Put this pan in the oven for a further 10 minutes. Remove form the oven and serve with some couscous or even with a creamy mash potato and buttered spinach.

Toast the spices and pound in a mortar and pestle
Put all the ingredients for the lemon stock syrup into a pot and bring it to the boil, then lower the heat to a gentle simmer. You can now add the chicken pieces making sure that the lemon stock syrup covers them all. Bring this to a simmer and allow it to cook for about 20 minutes on a very low heat. Turn off the heat and allow the chicken to cool in the syrup allowing the flavours to infuse.

Here are a couple of events for your calendar for the month of January: “Strictly” is coming to Castlegregory for one night only on the 23rd of January hosted by Clarissa Michaux. Also the Castlegregory Amateur Dramatic Society are putting on a pantomime over four nights from 28th – 31st January. Evenings of entertainment will be had by all. More information on both of the events will be posted nearer to the dates.
The Annual Christmas Flower Demonstration will be held on Monday 14th December in the Clubrooms, Castlegregory. If you would like to make an arrangement on the night, just bring foliage flowers, a container and oasis and the demonstrator will assist you. Everyone welcome. Sincere sympathy to his wife Eleanor with whom he had celebrated 60 years of Marriage this year and to all his family, relations and friends. May he rest in peace.
