Let’s Settle the Big, Fat Debate!

Of all the foods out there, nothing elicits more controversy and debate than cooking oil and fats. I am hoping that I can put the record straight and get some clarity around this slippery subject.

Which oil is best?

There is no one-size-fits-all answer to this question as the best oil to cook with can depend on a variety of factors, including cooking method, the temperature and personal preferences. Some oils are more heat-stable than others, meaning they can withstand high temperatures without breaking down and producing harmful compounds.

• Coconut oil: This oil is high in saturated fats and is particularly well-suited for high-heat cooking methods like frying.

• Ghee or clarified butter: These are forms of butter where the milk solids have been removed, making them more heat stable as the remaining oil is mainly saturated fat. Saturated fats, because of their chemical structure, are less likely to be broken down by light or heat, making them the more suitable for cooking, but not necessarily healthier. Lard and dripping also belong to this group of saturated fats.

• Avocado oil: This oil is high in monounsaturated fats and has a high smoke point, making it a good choice for high-heat cooking.

• Olive oil: This oil is high in monounsaturated fats and has a lower smoke point than previous oils mentioned. It is best used for low to medium heat cooking, as well as a finishing oil for dishes, and cold applications such as dressings and dips. Monounsaturated fats, because of their structure, having one (mono) double bond holding the molecule together, means that it is possible, at very high temperatures or aggressive processing, to break it down, but it is not easily done.

Other oils, such as rapeseed oil, sunflower oil, vegetables oil, flaxseed oil or hemp oil are not heat-stable and can produce harmful compounds when exposed to high temperatures and UV light. They are high in polyunsaturated fatty acids, meaning that they have several (poly) double bonds that hold this molecule together and the more bonds, the easier it is to break it down. This means that these oils are most unsuitable for cooking.

Another way to imagine these structures is to compare saturated fat with one piece of Lego. Monounsaturated fat is made up of two pieces of Lego (with one bond). Polyunsaturated fat is made up of several pieces of Lego, with several bonds. Which structure is most likely to be broken down with the least amount of effort? Answer = polyunsaturated; because of the multiple bonds keeping it together it is the easiest one to take apart. It is in the taking apart of these molecules of fat that dangerous and harmful compounds are created.

It is also important to consider the quality of the oil when cooking. Look for oils that are minimally processed, cold-pressed, non-GMO and organic when possible. Additionally, be mindful of how much oil you are using in your cooking and use alternative cooking methods, without frying, for most of your meals.

Polyunsaturated fatty acids, while not suitable for cooking, are crucial to our health. Omega 3 and Omega 6 belong to this group. They are referred to as “essential” fatty acids not just because of their significance but because the body cannot make these types of fat and rely entirely on the diet to provide them.

Omega-3 fatty acids, such as EPA and DHA are typically found in fatty wild-caught fish, such as salmon, sardines, mackerel. These fatty acids are known for their anti-inflammatory properties, which are beneficial to the heart, joints and brain. ALA is another type of Omega-3 found in plant sources like walnuts, chia seed and flaxseed. Plant-based Omega-3 is not as useful as the fishy type because the body must convert ALA to EPA and DHA, and that is not always successful. However, if you prefer to consume plant-based omega-3 have the walnuts and seeds regularly and top up with an algae-based EPA/DHA supplement.

On the other hand, omega-6 fatty acids, such as linoleic acid (LA), are commonly found in vegetable oils, nuts and seeds (and their oils). While they are also “essential” for health, they can have a pro-inflammatory effect when consumed in excess. The problem nowadays is that these refined oils are used in most cooking, food processing and mass food manufacturing. Research suggests that human beings evolved on a diet with a ratio of omega-6 to omega-3 of 1. Meaning, back in the day, we used to consume equal measures of omega 6 and omega 3. Nowadays, the typical Western diet the ratio is between 15:1 and 20:1, in favour of omega 6. This change in composition of fatty acids parallels a significant increase in the prevalence of obesity, chronic inflammation and metabolic disorders such as Type 2 diabetes, Cardiovascular disease, Cancer and Alzheimer’s Disease.

Many studies indicate that maintaining the ratio between 4:1 and 1:1 is one of the most important dietary factors in the prevention of obesity. Despite all the studies, knowledge and evidence the public are perpetually encouraged to consume omega-6 seed oils such as rapeseed oil, sunflower seed oils and vegetables oils in processed foods, refined cooking oils, breads, cereals, confectionary and countless other junk foods.

Here’s the short version - when it comes to oils, use saturated or monounsaturated fats for cooking. Correct the ratio between omega 6 and omega 3 in your diet. Reduce omega 6 intake by avoiding all refined seed oils and limit ultra-processed foods. At the same time, increase omega 3 foods in the diet or supplement if needs be to get the balance right. BISS 2023 UPDATE:

With the 29th May fast approaching, BISS applications are being submitted on a daily basis. However, The department of Agriculture have not updated approximately 40% of farmers’ ACRES details or commonage details, and there are some delays. Since the start of the SFP/BPS/BISS application process began, this has been the most chaotic campaign to date, and there have been some troubled seasons, in the past. There is no indication as to the reason for this delay, but with the deadline looming in just over four weeks, it is time that they got on with it. The Minister or his Department need to make some sort of statement to explain this to the farming public and the professional cadre of advisors who are working hard to complete all applications before the end of May. It now appears that there are some issues, and it is time for the minister to come forward and outline his strategy. He owes this to the farming community and the agricultural profession, who are implementing his schemes, (in good faith).

TOP TIPS FOR A SUCCESSFUL LAMBING:

Lambing has either kicked off or will be kicking off on farms right across the country, these tips will help you have a successful lambing season. Boost colostrum quantity and quality: Optimum pre-lambing nutrition is essential. This allows the ewe to produce good quality colostrum, but it also provides her with the nutrients she needs to support foetal growth so that she gives birth to strong healthy lambs. There is a relationship between the ewe’s energy intake over the last three weeks of pregnancy and colostrum production. The high energy levels and quality protein sources promote milk production on conserved forage and an elevated V

2. Adequate Colostrum intake:

Lambs are born with a weak immune system. Colostrum provides newborn lambs with nutrition, but also antibodies to fend off disease. Every lamb should receive 50ml/kg birth weight of colostrum or cows’ colostrum. Always ensure lambs receive a certain amount of ewes colostrum and then top them up with cows colostrum or Colostrum alternatives. Freezing colostrum when you have a ewe with an excess supply can be great for instances when a ewe may not have milk. Ensuring lambs get enough colostrum within the first 6 hours of life is crucial for their lifelong performance in terms of disease resistance and weight gain. After six hours, the lamb’s ability to absorb the immunoglobulins into its bloodstream has reduced, which is why it is important to get colostrum in quickly.

Be organised: The lambing season is a busy and stressful time for any farmer. Being prepared can be a great way to limit the pressure you put yourself under during this period. Having yourself stocked up on the essential items is a great way to have yourself organised in advance. The list of essentials is long but necessary and includes the following:- Gloves – Lubricant – Iodine – Needles & Syringes – Colostrum or Alternative –Marking Spray – Calcium Injection – Lime & Disinfectant for Pen – Jug(s) & whisk – Drinkers & Feeders – Castration Rings & Applicator.

Minimise stress and prolapse: Ensuring all ewes have adequate space to feed especially where concentrates are fed. On average ewes will require 0.5-0.6m of feeding space for concentrates. Where ad-lib silage is fed less space is required, and the feeding space for concentrates can be increased using troughs on the ground. This will prevent the ewes from getting hurt which can lead to ewes aborting but it also can lead to an increased likelihood of prolapse.

Have adequate lambing pens: Having adequate lambing pens in terms of size and quantity is key for a successful lambing season. You should aim to have 1 pen for every ten ewes lambing. If you have 160 ewes lambing you should have 16 pens. Having enough pens mean ewes and lambs have enough time to bond before being moved to ground pens or outdoors. Each pen should be at least 1.5mx1.5m. Ewes should have access to hay racks and water. Avoid using large buckets as this may pose a risk to young lambs.

Disinfecting and bedding lambing pens: You should aim to clean out lambing pens between each use. Pens should also be disinfected with Lime or other disinfectant products between uses. Maintaining this level of hygiene will greatly reduce the risk of infection for new-born lambs. Making sure pens are bedded down with adequate amounts of clean dry

straw will help keep lambs warm and dry. Avoid over bedding as young lambs may in excess straw.

Reduce lameness: Having lame ewes at lambing poses a number of threats. Firstly if a ewe is lame during gestation she may be less inclined to get up and go in for a feed, this may lead to a reduced condition which in turn can cause issues such as twin lamb disease, reduced milk production, and small lambs. Ewes who are lame at parturition pose a risk to their lambs, as they will spend lots of time lying down not letting their lambs suckle, they can also be more inclined toile on their lambs if they are lame. In non-slatted sheds, use adequate bedding to keep the lying area clean and dry. Apply ground or hydrated lime where the sheep stand and feed twice weekly before applying fresh straw bedding.

Have somewhere warm for weaker lambs: Lambs especially those who are small or may have had a difficult birth can easily become cold. Once a lamb's body temperature drops below a certain point its ability to absorb the essential nutrients in colostrum is reduced. It is important to heat cold lambs up quickly. Also ensuring that the lambing shed is draught free can prevent lambs from getting cold in the period between birth and getting up and suckling.

If you have a high scan with numerous triplets you will need to consider how you are going to support these lambs. If triplets are separated and feed effectively in the lead-up to lambing it may be possible for them to rear their own lambs, however, a lot of the time this may not be possible. Adopting surplus lambs onto single ewes can be a good way of dealing with surplus lambs without ending up with lots of pets, however, you must consider how you are going to do this and it may not always be successful. Where adopting is not possible you must have a plan for dealing with pet lambs. It is important to have a warm dry draught free space for them. Having automatic feeders can greatly reduce the workload where there are multiple pets. Pet lambs will require access to concentrates sooner than the rest of the lambs so this must also be considered.

Make sure you have enough help: The lambing season can be a very tiring time as it is both physically and mentally demanding. It is important that you have adequate labour on the farm over this busy period. It is true the old saying “many hands make light work”. As the lambing is in full swing having an extra pair of hands can make a huge difference especially when trying to get weaker lambs fed.

MULTI-SPECIES SWARD AND RED CLOVER SILAGE SCHEME:

The 2023 Multi-Species Sward and Red Clover Silage scheme is now open, with a budget of €2.5 million. It is hoped that this will improve the sustainability of farming and the hope is to expand the areas already established under last year’s pilot programmes. Funding has been increased to €2.5 million to allow for greater support in establishing these swards. A payment rate of up to €300/ha is also being provided for, which represents a significant increase on the rate of aid paid last year."

There are a number of key changes compared to last year’s Pilot scheme including:

• payments will be made directly to the approved farmer on a per hectare basis

• the payment rate has been increased significantly up to a potential €300 per hectare where eligible swards are established. A reduced payment rate per hectare will apply as appropriate if eligible applications exceed the available combined budget for the two measures

• to receive payment under either measure, an applicant must indicate the correct crop type on their 2023 BISS application

Payments will be made directly to approved applicants at a rate of up to €300 per hectare for the establishment of these swards. To keep the measures within the available budget, the payment rate per hectare will be reduced as appropriate if eligible applications exceed the available combined budget of €2.5 million for these measures.

To apply, an applicant/their agent needs to select “Multi-Species Sward and Red Clover Silage Measure on their designated plot(s) when submitting their BISS. In order to receive payment applicant must state whether the crop is Permanent Pasture (MSS measure) or Grass Year 1 (MSS measure).

Swards are not permitted to be sown on Commonage land, Natura 2000 sites, NHA designated land, Environmentally Sensitive Permanent Grassland or within archaeological monument buffer zones, such as ringforts, standing stones, hut sites, etc. To be eligible under these measures the swards must

be sown by 15 July and established by 30 September 2023. At claim stage applicants must indicate the area sown as multi-species/red clover and upload their supporting documentation online, that is, invoices and seed labels. Only seed purchased after the application is lodged on agfood. ie and before the final date for sowing the crop, 15 July 2023 is eligible under these measures.

AVOID POOR GRASS QUALITY IN MAY

The wet March forced many herds to be housed allowing grazing targets to come back in line that had been previously a head of target. The tides have turned and now is decision time regarding taking out paddocks that has not been grazed or have heavy covers. As we approach May growths rates are set to jump. Growth rates will be over 60kg DM/ha per day or more on some farms. Failure to take early action to increase demand at this time of year will be detrimental to grass quality intakes and utilisation and thus milk yield and proteins, and ultimately price you get paid for milk in May and June. If the loss of energy due to poor quality grass is not replaced through extra supplementation not only, will it impact milk but also fertility performance. To ensure high quality grass in May focus on the following:

• Walk the farm to set the farm up for when grass growths jump. There is large variation in growth rates at present so you must match demand to grass growth.

• Target grazing covers of 1200- 1500 kg DM/ha

• Ensure animals grazing to 4cm for excellent grass quality.

Excess grass is detrimental to grass quality and milk performance. If you have excess, make baled silage, it os a commodity as well as a feed source.

HSA LAUNCH FARM VEHICLE INSPECTION CAMPAIGN:

The Health and Safety Authority have launched a farm vehicle inspection campaign to combat the number of fatalities on Irish farms. The national inspection campaign will focus on the safe use of tractors and quad bikes on farms. The HSA has said that tractors and quads continue to be a leading cause of vehicle-related fatalities on Irish farms with 34 vehicle related deaths on Irish farms over the past 5 years.

Comhaontas Turasóireachta Chorca Dhuibhne / Dingle Peninsula Tourism Alliance Announces Sustainability Charter Focused on Preservation of Community

U.S. travellers visit Ireland primarily to experience its culture and heritage while connecting with the Irish people, according to a poll conducted by Comhaontas Turasóireachta Chorca Dhuibhne / Dingle Peninsula Tourism Alliance (CTCD/DPTA). Poll results were released as the CTCD/DPTA announced a Sustainability Charter to preserve the very reasons why people spend their holidays here.

The CTCD/DPTA Sustainability Charter values respect for host communities, the peninsula’s natural environment, its local culture and heritage with an emphasis on the Irish language, and the traditional hospitality of the region, said CTCD/DPTA Chair Shane Finn. He noted that 96 percent of Dingle Peninsula businesses are family-owned, and tourism is the primary economic driver in the region.

“Our U.S. poll found 66 percent of respondents cited culture and heritage as their reason for visiting Ireland, and a third of respondents said it was their primary reason for coming here,” said Finn. “Some 18 percent of those polled said connecting with locals was why they come here.

“In our view, the two findings go handin-hand,” he said, adding that 10 percent said they are attracted by activities, such as walking, hiking, cycling, fishing and just plain sightseeing, while 6 percent said they come to trace genealogy.

“All of these reasons confirm the importance of our sense of community across our towns and villages, as those who responded said they primarily want to experience our culture and heritage by connecting with us,” said Finn.

“Our Sustainability Charter will put us on a focused path to inspire Corca Dhuibhne’s hospitality in a way that restores and sustains the environment, nurtures our language, culture and heritage, enriches local communities, while respecting tourism’s importance to our economy,” said Finn. “Míle buíochas to the students of Pobalscoil Chorca Dhuibhne and West Springfield High School who stole the show

in presenting the values, vision and mission of the new Corca Dhuibhne Sustainability Charter”.

“As we set out on this journey, we have established a set of core values to respect our host communities, our natural environment, who we are as a people, and the integrity of our traditional hospitality. We will drive cross-business cooperation, as well as a sense of continuous and proactive learning and innovation,” he said.

The CTCD/ DPTA poll also found:

• About 85 per cent of respondents book their own trips

• More than 78 percent do their own research on what to do and where to go in Ireland

• Almost 68 percent use online search engines to do their research, and 11 percent use tourism sites, social media platforms and social media influencers to determine their itineraries

• About 20 percent of respondents visit Ireland frequently, some several times a year

• More than 79 percent said they visit Ireland infrequently

DPTA conducted its research online and at the Eastern States Exposition, commonly known as the Big E, the third largest U.S. fair and the only one in the United States that represents multiple states, encompassing all six New England states. The three-week event is also the third largest gathering annually in North America. More than 2,890 respondents participated in the poll.

From the 1911 Census in West Kerry

The 1911 Census of Ireland was taken on Sunday April 2. In this issue we’re going to feature the second of two items on families, from Camp to the Blasket Islands, who must have endured unbearable heartbreak when so many of their children died young.

The 1911 Census form had two columns that were not included in the 1901 Census. These were ‘Total children born alive’ and ‘Children still living’. The early deaths resulted from sickness and diseases such as scarlet fever, TB, measles, diphtheria and meningitis.

Kennedy

William Kennedy, 76, a ‘Naval Pensioner’ and his wife Hanoria, 70, lived in Emlagh West, Dingle, Their loss was one of the worst recorded in the census in West Kerry. Of their nine children born alive only two survived.

O’Gready (Census spelling)

Thomas O’Gready, 70, and his wife Margaret, 77, lived in the Commons of Milltown, Dingle, and were the only occupants of their home on Census night. Three of their eight children were still living.

Murphy

John Murphy, 56, and his wife Norah, 56, were a farming family who lived in Cloghanisheskeen, Castlegregory. Four of their nine children were still living.

Egan

Laurence Egan, 82, and his wife Catherine, 81, were a farming family in Cloonsharragh, Cloghane. Nine of their children were born alive but only three survived.

Guiheen

Farmer Michael Guiheen, 58, and his wife Kate, 60, lived in Ballynahow, Dunquin. Four surviving children, of the ten born alive, were living with them.

Higgins

Fisherman James Higgins, 42, and his wife Bridget, 44, lived in Gortadoo with the six surviving children of the thirteen born alive to them.

Moynihan

Meal and Flour merchant John Moynihan, 52, along with his wife Johanna, 52 and a National Teacher, lived in Annascaul. Only four of their eight children were still alive in 1911.

Russell

Michael Russell, 59, and his wife Mary, 56, lived in Caherscullibeen, Kilmalkedar. Their union had produced eleven children but only three were still living. Michael and his son John, 25, were both fishermen.

Lynch

Thomas Lynch, 83, and his wife Mary, 72, were the only occupants of a house in Garrywilliam, Castlegregory, on Census night and had been married for fifty-five years. Only two of their eight children were still living.

O’Sullivan

Farmer Patrick O’Sullivan, 52, and his wife Bridget, 40, lived in Tobernamoodane, (Kinard), with their five children. Seven others did not survive to 1911.

Keane

Farmer Michael Keane, 55, and his wife Ellen, 52, lived on the Great Blasket Island. Eleven of their children were born alive but five had passed away. Their son Maurice, 20, was a ‘Fisherman’. There were six Keane, or Ó Catháin, families on the island on Census night – the largest group of that surname.

Kennedy

Carpenter James Kennedy, 68, and his wife Hanoria, 68, lived in Castlegregory. The couple had lost six of their thirteen children, according to the census form.

O’Sulivan

Farmer Cornelius O’Sullivan, 56, and his wife Kate, 51, lived in Garrynadur (Minard). Fourteen of their children were born alive and eight were still living on Census night.

Sweeney

Julia Sweeney, 70, lived in Goal Street, Dingle. She was recorded as being ‘Married’ but there is no mention of a husband on the census form. Seven of her eleven children had died.

Kennedy

Farmer James Kennedy, 72, and his wife Norah lived in Coolnagoppoge, Ballynacourty. Norah had given birth to fifteen children and ten were still living.

Kelliher

Farmer John Kelliher, 52, and his wife Mary, 46, lived in Milltown. Five of their children were born alive but only one was still living.

Ashe

Farmer John Ashe, 68, and his wife Johanna, lived in Magherabeg, Castlegregory. Four of their ten children were still living.

O’Connor

Farmer Jeremiah O’Connor, 70, and his wife Nora, 66, lived in Farraneesteenig, Glin. Six of their eleven children had died, according to the census form.

Courtney

Farmer John Courtney, 70, and his wife Margaret, 58, lived in Castlegregory. Fourteen of their children had been born alive but seven had died.

Donegan

David Donegan, 45, and his wife Hanora, 44, lived in Ballyameenboght, near Dingle. David was a ploughman on on Lord Ventry’s estate. Their marriage had produced eleven children but only five survived and four of the five emigrated. (Family information).

While all of these losses were heartbreaking it must have been particularly unbearable for these next and final two entries.

Kevane

Fisherman Patrick Kevane, 40, and his wife Margaret, lived in Clogher, near Ballyferriter. Nine of their children were born alive but only one survived.

Ó, Caomháin

Dómhnall Ó Caomháin, 77, and his wife Máire lived in Murreagh. They had been married for fifty-one years in 1911 and their union had produced nine children. But, like the Kevane family above, only one child was still living.

Beehive Theatre Company closed last year after almost 30 years of producing theatre, workshops, classes, and all manner of cultural events – all made possible by the tremendous support we have been given by the West Kerry Community.

We are so grateful for the contribution of so many people – all those who gave their time and considerable talents as actors or worked in vital roles behind-the-scenes, the artists who collaborated with us on all sorts of projects and all the voluntary board members without whose input we could not have functioned. Special heartfelt thanks to board members Máire Uí Bheaglaoich and Áine Uí Dubhshláine and Company Secretary Padraig Foley who were with us from the very beginning.

Notes of a Ukrainian in Ireland: Art must live

In spring life on the Dingle Peninsula is filled with art. So, in April, the longest public art festival in the country "Easter Art Exhibition 2023" (Taispeántas Ealaine na Cásca 2023), started in Ballyferriter. The paintings of Ukrainian artist Tetiana Bonner were also presented at the exhibition. Her work "We" sensitively and expressively conveyed a personal story.

continued their journey to Ireland together. Only over time, Tetiana found the strength to renew her desire to return to art. For her new work, the artist chose sunflowers, as they are a symbol of life, energy and unity. Flowers, like women, are fragile beauty, vulnerable and strong at the same time. The canvas depicts three friends who are related by life path. Sunflowers filled with ripe seeds are the life filled with dreams and the energy. So hopefully, in the future, the inspiration received in Ireland, the experience and talent of Tetiana Bonner will help her create many more works of art and expand the geography of Irish cities in her creative biography! Her works are moving and pleasantly melancholic, filled with light, naturally reflecting the real world in its sensuality and harmony.

As well Tetiana Bonner is experienced in the field of graphic design, animation (tumblr.com/lovetanisyn) and mosaics (behance.net/ tanisyn40cf7b). The sites are currently the only opportunity to get acquainted with the works created in Ukraine, because all the works of the artist remained in Starobilsk and their fate is currently unknown. The artist also works with stained-glass, in her own original technique of painting with paints on glass, which she perfected over the years. Incidentally, An Diseart has a chapel where you can find twelve lancet windows created in 1924 by one of the greatest stained-glass artists of all time, Harry Clarke. As part of the Féile na Bealtaine music and arts festival (feilenabealtaine.ie), which takes place every year on the Dingle Peninsula, An Diseart will host a painting exhibition from 27 April to 2 May. So these days there is a chance to see with your own eyes Harry Clarke's stainedglass windows and contemporary art, and the canvases that the Ukrainian artist painted in Dingle.

Tetiana is from Starobilsk, a Ukrainian town in the Luhansk region, located on the left bank of the Aydar River. Due to the full-scale enemy invasion of Ukraine, Tetiana was forced to leave her home to save her own life. Even now, her hometown is under Russian occupation, so Dingle has become a refuge for the artist for a long time. On the way, she met kindred spirits, a mother and daughter, who left Kyiv in search of salvation. So the women

На весні життя півострова Дінгл наповнюється мистецтвом. Так, у квітні, стартував найтриваліший фестиваль громадського мистецтва в країні "Великодня мистецька виставка 2023" у Балліферітер. На виставці були представлені й роботи української мисткині Тетяни Боннер. Її твір "Ми" чуттєво та виразно розповідає особисту історію.

Тетяна родом зі Старобільська, українського міста в Луганської області, розташовано на лівому березі річки Айдар. Через повномасштабне вторгнення ворога в Україну, Тетяна вимушена була покинути домівку рятуючи власне життя. Та і наразі її рідне місто перебуває під російською окупацією, тож вже сталий час прихистком для мисткині став Дінгл. Дорогою, вона зустріла споріднені душі, мати з дочкою, які виїхали з Києва в пошуках порятунку. Тож дівчата продовжили шлях до Ірландії разом. Лише з часом, Тетяна знайшла в собі сили відновити бажання повернутися до мистецтва. Для своєї нової роботи мисткиня обрала соняшники, адже вони є символом життя, енергії та єдності. Квіти, як і жінки, то тендітна краса, вразлива і сильна водночас. Полотно відображає трьох подруг, споріднених життєвим шляхом. Соняшники, що наповнені стиглим насінням - то наповнене мріями та енергією життя. Тож сподіваємось, надалі натхнення отримане в Ірландії, досвід та талант Тетяни Боннер допоможуть їй створити багато інших витворів мистецтва та розширити географію ірландських міст у творчій біографії! Її роботи рухливі та приємно меланхолійні, наповненні світлом, природно відображають реальний світ у його чуттєвості та гармонії.

Та Тетяна Боннер досвідчена й у сфері графічного дизайну, анімації (tumblr.com/lovetanisyn) та мозаїки (behance.net/tanisyn40cf7b). Сайти наразі це єдина можливість ознайомитись з роботами, створеними в Україні, адже всі доробки мисткині залишились в Старобільську та наразі їх доля невідома.

Працює мисткиня і з вітражами, у своїй власній авторській техніці розпису фарбами по склу, яку вона вдосконалювала роками. До речі, в An Diseart є каплиця, в якій можна знайти дванадцять стрілчастих вікон, створених у 1924 році одним із найкращих вітражистів усіх часів Гаррі Кларком. В рамках фестивалю музики та мистецтва Féile na Bealtaine (feilenabealtaine.ie), що відбувається щороку на півострові Дінгл, в приміщенні An Diseart, пройде виставка живопису з 27 квітня по 2 травня. Тож цими днями є шанс на власні очі побачити й вітражі Гаррі Кларка і сучасне мистецтво, і полотна, які українська мисткиня написала в Дінглі.

The next Irish Whiskey society meeting in West Kerry will take place in Dick Mack's pub, Dingle on Friday May 5th at 7.30pm.

The featured whiskies will be from the Scotch Malt Whiskey Society who purchase spirit from a distillery, mature it in their own casks and launch it when they feel the time is right.

At that point, a panel of their experts come together to taste this whiskey, write down their tasting notes and submit them to be amalgamated and from there the name of this whiskey is born. There is only ever one single cask of that whiskey and it is released at cask strength. When it's gone, it's gone.

What are Atoms?

Everything on Earth, in the solar system or even in the whole universe itself is comprised of atoms, these were believed to be the smallest possible pieces which matter could be made out of. This view was changed in 1898 when JJ Thompson discovered the electron, a negatively charged subatomic particle which orbits the central part of the atom, known as the Nucleus. The Nucleus was later found to contain both Protons, positively charged particles and Neutrons, neutral particles. They are so small that any of the full stops in this article could fit about 20 million atoms in them.

INTERMEDIATE

How much EMPTY SPACE in an atom?

Atoms can vary in size and usually increase in size as you move to the right on the periodic table or as you go down the groups. To take two examples we can discuss Hydrogen and Uranium atoms in the context of Ventry Beach. If we had a Hydrogen nucleus the same radius as a digestive biscuit and were standing in the main carpark of Ventry Beach, the outermost electrons would be orbiting out as far as Cuan pier and these electrons would also be a third of the size of the smallest grain of sand on the beach. If we had a uranium atom which was scaled up by a similar ratio, the nucleus would be as big as a beach ball and the outermost electrons would be so far away that they would be moving through Dún Chaoin, Ballyferiter and almost making it all the way to Dingle. Everything in between these locations in an atom is mostly considered to be Empty Space.

How come the atom doesn’t collapse into itself?

Similar to opposite poles of a magnet the negative electrons orbiting the central nucleus will be attracted to the positive protons. But these electrons aren’t exactly particles like a grain of sand they are a probability wave where the physical manifestation of a ‘particle’ is just something we picture in our own limited view. It’s as if the particle will only appear when we look for it and this ‘wave’ wont collapse under usual circumstances. The electrons stay orbiting because of a trade-off between kinetic energy (moving) and potential energy (distance away from the source of a force field *in this case electrical attraction*). To simplify this: the particle must speed up when it moves closer to the nucleus or else it will violate the law of conservation of energy as no energy is being released from the atom.

Why should you never trust an atom?...

Because they make up everything!

FÉILE NA BEALTAINE. CÉAD MÍLE FÁILTE to all the participants and supporters who come to the Peninsula this weekend for Féile Na Bealtaine. The 5 day programme features up to 150 events including both indoor and outdoor activities covering music, song, dance, culture, and a host of literary readings , poetry sessions and talks and walks to suit all ages. Full details elsewhere in this issue. No excuses just get out there and be part of what is now most definitely one of the most enjoyable weekends of the year here in the Peninsula. DARKNESS INTO LIGHT WALK . Dingle is one of the many venues throughout the country where the Annual Darkness Into Light Walk to raise funds for Pieta House takes place this year. Walks take place on Saturday May 6th commencing at 4.00a.m.and participants can either register online beforehand or contribute at the event venues. Registration online at darknessintolight.ie.

CYCLE EVENT. The organisers of the Ride Dingle Cycle Event wish to thank all the 2000 plus cyclists who recently took part in their annual outing over the Slea Head and Conor Pass/ Camp circuits. Míle Buíochas also to the residents along the route who accommodated the road closures and motorists who encountered some delays while travelling at various times on the day. Thanks also to the many volunteers who manned feed stations and helped with stewarding at various points around the Peninsula. Most of the participants were high in their praise of all the help and encouragement along the route especially as the weather conditions deteriorated for a few hours that day. The good news is that most of the funds collected will be divided between local and national voluntary groups and charities.

SPORT. Congratulations to the Kerry Ladies Football team especially Niamh Ní Chonchúir and Louise Ní Mhuircearthaigh who played an outstanding part in the team's great victory in the All Ireland Ladies National League Division 1 recently. Go n-eírí libh sa Craobh Comortas anois!!!.

OUTSIDE THE BOX. This is title of the fourth CD launched by Laoch Sráid Eoin, Thomas O'Callaghan in Benner's Hotel on Friday evening last. The proceeds of all 4 recordings have been donated to various local and national voluntary groups and charities. The Kerry Cancer Support Group were presented with a cheque for €4700 at the launch. The CD is still for sale at the usual local outlets with all future funds collected going to the same group who provide free transport and ancillary services to people attending treatment sessions at hospitals in Limerick, Cork and Kerry. Thomas wishes to thank Laurence Courtney and his group for their musical support, also David Geaney who thrilled the audience with his wonder dancing performance and the Clare All Stars Band who performed on the night as well as supporting him on the recordings. TIDY TOWNS. With the growth season getting under way at this time of year it's time to reduce and gradually stop feeding the birds who should be able to survive without such human support from the end of April until late Autumn again.

We remind all our volunteers to get involved again and start by tackling weed growth, then freshening up flower and shrub beds and eleminating untidy spots in your own areas.

Dingle Community Games will take place in Dingle Sports Field Monday May 15th. Registration between 6.00pm – 6.20pm. First event starts at 6.30pm sharp. As we have a limited number of volunteers to run the event we would appreciate it if parents/guardians would stay with their child/children on the night. In order to cover the costs of the event we would really appreciate a €2 donation on the night. The Lee Strand West Kerry League Final 2023 will have to be played all over again after Dingle and Lios Pόil played out an entertaining draw in a hard-fought game in Páirc an Ághasaigh last Sunday, Dingle 0-10 to 2-4 Lios Pόil.

Lios Pόil started better and were awarded a penalty shortly after the start of the match. Lios Pόil’s Colm Ó Muirthile gave Dingle goalkeeper Gavin H Curran no chance when he converted from the penalty spot. Dingle lost Cathal Bambury with an injury shortly after to add to their woes. Donnacha Ó hUigín kicked a point from play for Lios Pόil and Dingle registered their first score through a Conor Geaney point from play. Tomás Sheehy added another point for Dingle with a kick from play. With 15 minutes

played in the first half of the Lee Strand West Kerry League Final of 2023 the score was, Dingle 0-2 to 1-1 Lios Pόil.

Two Colm Ó Muirthile points from free kicks extended Lios Pόil’s lead. Brian O’Connor kicked a point from play for Dingle and Marc Ó Mainnín kicked a point from a free kick for Lios Pόil. Dingle were reduced to fourteen men when Brian O’Connor was shown a red card. A great pass from Aaron Ó Muircheartaigh to Donnacha Ó hUigín gave him the momentum to round his man and score Lios Pόil’s second goal. Dingle responded with a Conor Flannery point from play and points from free kicks for Tomás Sheehy and Mikey Geaney. Fried Buttermilk Chicken with Red Cabbage and Fennel Coleslaw

Heat a fryer to 180ºC

Preheat an oven to 180ºC

Once it is marinated, remove them and place them on a wire rack over a bowl to allow the excess drain off. Meanwhile in another bowl, add the flour the rest of the paprika, rest of the curry powder and a pinch of both salt and pepper. Mix this well and then add the chicken pieces. Coat the chicken well with the flour and the spices and carefully place them in the fryer. Be careful not to overload the fryer. Fry the chicken for about 15 minutes and then remove them from the fryer and place them on a tray and put into the oven for about 10 minutes or until it is cooked.

Drain the chicken and season with salt and pepper.

For the coleslaw

Mix the mayonnaise, mustard, lemon zest and juice in a bowl and add a little cider vinegar to taste. Mix in the vegetables and mix well to coat. Season with salt and pepper and parsley.

Serve the chicken with a side of coleslaw.

Fried chicken when done well is so tasty. By allowing it to marinate over night in buttermilk will tenderise it slightly and will give it a slightly acidic flavour. What you are hoping to achieve is to have a really juicy chicken with a golden crispy crust. It will be crispier if you use the deep fat fryer but if you do not want to use the fryer you can place them in the oven (180º) for about 25-30 minutes.

The red cabbage coleslaw will give you an alternative to the normal cabbage coleslaw and is perfect as a side dish especially with fried food.

INGREDIENTS

for the chicken

10 chicken thighs or drumsticks

1 litre of buttermilk

2 tsp. paprika

1 tsp. curry powder

sea salt

ground black pepper.

200g flour

oil for frying

for the coleslaw

150g mayonnaise

1 tbsp. of wholegrain mustard

1 lemon zested and juiced

dash of cider vinegar

½ head of red cabbage finely sliced

2 carrots peeled and grated

1 fennel bulb finely sliced

2 sticks of celery finely sliced

Salt and Pepper

Parsley finely chopped

METHOD

Add the buttermilk, half of the paprika, half of the curry powder, 2 tablespoons of salt and a pinch of pepper to a bow. Mix this all together. Add the chicken pieces and allow this to marinate for at least 4 hours or overnight.

Solar..panels or tubes, what's the difference? Well they both provide hot water when heated by the sun’s energy, thus saving you energy, be it oil, gas or electricity.

A solar system will save up to 70% of your annual hot water bill. When it comes to tubes versus panels, the tubes are marginally more efficient than panels, but realistically the difference is small, especially when we have had such a great spell of sunshine. There is another "solar system" known in the trade as "Thermodynamic" this is a solar panel that works in the dark. Yes with no sunshine, you ask how!

Well the answer is simple really, it's not a solar panel it's a heat pump. The way it works is a panel is fitted to your roof which is connected to a unit and cylinder in your hot press. This is a compressor similar to what's found in a fridge, this unit pumps a refrigerant gas into the panel where it heats due to the fact that the gas has a very low boiling point of about -25 Celsius so this hot gas comes back into the unit, where the gas is compressed to make it hotter, the heat is then transferred to create heat. Temporary Business Energy Support Scheme

If you have experienced an increase of 30% in electricity or natural gas usage don’t forget the Temporary Business Energy Support Scheme!

The TBESS is business payment scheme introduced by the government which aims to assist qualifying businesses with their rising electricity or natural gas costs over the winter months.

To be eligible to apply for the TBESS, businesses must be able to show that the unit cost on their electricity or gas bills has gone up by 30% (this was originally as 50% but was reduced in April 2023). Businesses must also be eligible for a tax clearance cert, to apply.

The support available is 40% of the increase in the electricity and/or gas bill amount, and that applies for claim periods from September 2022 to February 2023, up to a limit of €10,000 per premises per month. And 50% of the increase in electricity and/or gas bill from March 2023 to May 2023 with a limit of €15,000 per premises per month.

The scheme operates on a self-assessment basis; you’re not required to submit any documents when making a claim. There’s no need to carry out calculations as the Revenue system will carry out all the calculations based on the details you input from the relevant electricity and/or gas bills – relating to both reference and claim periods. i.e., January 2022 and January 2023.

Where a business is operated out of the business owner’s home, and the MPRN or GPRN supplies both the business and the home, the business owner is required to input the percentage of ‘eligible use’

All you need to do is input the details from your bills and the system will do the heavy lifting for you.

Log into revenue online services (ROS) and click on the claim portal for TBESS. To submit your claim, the following details are required:

• Price (exclusing VAT) and unit information from your energy bills for both the claim and reference period (i.e., January 2022 and January 2023)

• Copies of your energy bills for verification

• Bank details (so that the TBESS payment can be sent to your account)

• MPRN or GPRN number

PRIMARY GAME: Well done to Cromane's Daragh O'Connor, a pupil at Scoil Réalt na Mara, Cromane, who represented Kerry in the Munster Primary Game during half time in the Munster SFC semi-final on Saturday. Well done Daragh, mighty day! A great honour for you and your family.

SENIORS: County League Division 4 result: Cromane 1-8 St Pat’s, Blennerville 0-8

The Cromane seniors continued their winning start in Division 4 of the county league with a three-point win in Cromane on Sunday.

A goal ten minutes from time from Liam O’Neill proved to be the difference. The goal gave Cromane a five-point cushion (1-7 to 0-5), the biggest lead of the game that they never lost.

It was a low-scoring first half with four points shared at the break, 0-2 apiece. Darren Houlihan and Donnchadh Walsh on the scoreboard for the home side.

Cromane started the second half well and had two points on the board in the opening two minutes, two fine efforts from Sean O’Sullivan (a free) and Mikey Houlihan from play.

St Pat’s were back level by the 39th minute but then Cromane enjoyed their best passage of football over the hour in a game that was a real battle throughout.

Points from Danny O’Shea and Tony Duffy followed before Liam O’Neill’s goal put Cromane 1-7 to 0-5 ahead.

The visitors managed to come within a goal entering injury time but another Danny O’Shea point sealed the win for Cromane.

Our seniors play round 5 of the county league next weekend in Ballyduff.

SAFEGUARDING: Coaches and club officers from Cromane GAA Club attended a Child Protection in Sport Awareness (Safeguarding 1) Workshop in Cromane Community Centre last Friday evening and Saturday morning. Many thanks to our Children’s Officer Sandra Healy for organising. The club’s Designated Liaison Officer is chairman JP McCarthy. Our thanks to tutor Colette Murphy for presenting the workshop in an accessible and informative manner.

The following are selected works by participants of the creative writing workshop Writing Identity in Ireland, which was offered for the first time this semester to Sacred Heart University students on study abroad in Dingle. Many students were writing creatively for the first time. But for all of them, Dingle has offered a rare opportunity to step back and reflect on themselves. This unique environment has inspired students like Karen, Grace, and Angelina to write poems directly about the impact Irish culture and landscape has had on them, and the questions this poses about their place in the here and now. Provocatively, experiencing life in a foreign country has inspired students like Gloria, Meghan, and Bryce to confront traumatic circumstances from a new perspective, taking in issues like the unavailability of healthcare in America, the ever-present threat of school shootings, and culture shock and homesickness. Immersion in the creative arts helps all of us to uncover sides of ourselves we weren’t previously acquainted with, and it has been an absolute privilege for me to meet these six new writers.

‘Thursdays’ by Gloria Huitzil

“It’s time mommy, it’s time!” I yelled as I ran to my mommy’s bedroom.

Dismissing the trampoline outside, I jumped on her bed and began to dance along with the vibrations bouncing off the walls.

Holding onto Thursday as if it’s the last Thursday I’ll ever get, savoring the feel of it, and repeating the words on the screen.

28 minutes of life a defibrillator cannot imitate.

“Please stop jumping,” my mother says.

Often not thinking about the consequences of excitement, if I had known thrill would take over, I would have tamed my enthusiasm. From afar I could see mommy’s concerned face with her tense shoulders.

She comes up to sit next to me, facing me and we’re silent. So silent I can hear the heart monitor of the elderly man from across the hall.

At the moment she didn’t have the heart to lecture me, but the silence was the harshest I told you so.

‘February 9th’ by Meghan Bennett

The ominous sounds of the battlefield, sprayed with bullets a minute ago, but now, nothing but silence. No one to be seen. The lone soldier blindly steps out from behind his barricade, fearful of rounding the corner. The location of the enemy is unknown. He can hear the sound of his heartbeat, practically leaping out of his chest. His breath, uneven, his hands, cold and shaky. As he inches closer to the chaos heard a minute ago, he pauses. The realization of a life-or-death moment. One that is seen in movies, read in books, and taught in history class. He can hear the sounds of the citizens, whimpering, as their short lives are at risk of ending. It crosses his mind that he is their protector, this is his duty. Most heroes are dead, he thinks. Amidst the fear, comes a wave of tranquility. Coming to peace with the possibility of death. Suddenly, the backside of the assailant meets his horizon. He is met with a choice. Do I run? Do I run for my wife and my children? Or, do I advance, so other families don’t get a knock on their door or a dreadful phone call? The choice was a simple one for the solider. Within the feeling of peace, came strength. His slow advance turned into a sprint. A sprint towards death. The assailant, easily spooked, uses the only defense he knows… the trigger on a shotgun. Cowardness, unable to articulate his feelings, so instead, they shoot out through a small metal barrel. The solider, wounded, the blood seeping out of his clothes. Confusion crams his brain, he is unsure of where he is, who is around, and how much consciousness he has left. Then, a small hint of normalcy on cue, the lunch bell.

It's hard to fathom that while being surrounded by a ceaseless sea, one could miss the ocean this endlessly. How could it be? Constantly I wonder, while it's the same body of water my mind seems asunder. Maybe because of this endless emerald does the Sapphire sea seem so far away from me? Almost as if I'm trapped upon this observatory, gazing out into the boundless home of mine that now seems like a purgatory. I can't quite place my finger onto it, the landscape is serene, the air crisp, the locals friendly and welcoming, yet something seems broken. How could something so comforting to me now seem like an unforgiving abyss. I hope to find out why, but for now I'm lost in my refuge adrift.

It’s All In The Mind: Just A Thought…

Are you paying attention?!

The latest research shows that the average attention span of a human being has markedly decreased in the past 20 years. In 2000, it was 12 seconds while today it has shrunk to just 8.25 seconds. In fact, scientists believe we now have a shorter attention span than the humble gold fish which comes in at 9 seconds. So while goldfish seem to be happy enough with their lot, we humans pay a price for our unfocused awareness: scattered thinking and emotional reactivity are bound to make us feel anxious and on edge.

For example, in a car we can sometimes drive for miles on ‘automatic pilot’ without really being aware of what we are doing. In the same way, we may not be really ‘present’ moment-by-moment, for much of our lives. In fact, we can be ‘miles away’ without even knowing it. On automatic pilot we are more likely to be reactive. Throughout the day, stimuli from people and events around us can set us off. Thoughts, feelings and sensations in the mind (of which we may only be dimly aware) can trigger well worn thinking and behavioural patterns that are often unhelpful and may lead to worsening mood and energy levels, keeping us trapped in a loop of negativity.

We tend to heap suffering on top of our painful experiences by dwelling on the past, going over again and again how we could have done things differently, reliving events, feeding regrets and nursing grudges ; or we dwell in the future, worrying and planning, catastrophizing when things don’t go our way. We often want things (including ourselves) to be different in some way. Things are not what they “should” be like, not “good enough” or not what we wanted or expected. This can leave us feeling dissatisfied with life and we may end up constantly blaming ourselves or others for how things are. Our natural negativity bias leads us down paths in our mind like a well worn groove or a strong habit where we have little or no agency.

And to add fuel to the fire, we find ourselves living in a new era of the Attention Economy. Our attention is a resource to be exploited for economic gain by social media platforms such as Google, Tiktok, Youtube, Amazon etc. No matter how much time we spend on the internet, there is a limit to our attention : the more information there is, the less attention there is to go round and so it has become one of the scarcest commodities in business. These billion dollar companies are all vying for our attention using whatever means necessary to get it. Tristan Harris, co-founder of the Center for Humane Technology, former ethicist at Google and longtime mindfulness practitioner, warns us against the deliberately addictive design of these social platforms. Our average screen time is now 7 hours per day and growing exponentially year on year. The internet is robbing us of our free will : by taking us away from present moment awareness we lose the freedom to choose where we want our attention to be.

But this is not inevitable and we are not helpless. When we wake up, when we see clearly, we can begin to harness the power of awareness to enact positive change.

We can regain our freedom if, as a first step, we simply acknowledge the

actuality of the situation we find ourselves in - without being immediately hooked into our automatic tendencies to satisfy cravings, judge, fix, or want things to be other than they are.

When we pause, become quiet and still, we can observe the mind and body: we see our thoughts and feelings and sensations are impermanent, they are transient - constantly changing, like clouds passing through the clear blue sky of our awareness. Emotions come and go; no matter how intense our pain, eventually it shifts or transforms. We rely on the mind for critical thinking and problem solving of course, but our thoughts can often be destructive, judgemental, self critical and when we identify with them ,a source of great suffering. It is so liberating to discover that while our thoughts may be real they are often not true! We do not have to believe them - our thoughts are mostly unoriginal and repetitive (every day the brain processes about 70,000 thoughts) and they do not define us. We do not always have to take them so seriously! A whole new vista of possibilities and potential opens up when we are released from the limiting thoughts and beliefs of the mind. We are so much more than our small contracted ego - ’we contain multitudes’ (Walt Whitman)

Mindfulness means being awake/aware: we develop awareness so that we know what we are thinking, feeling and sensing directly.

NEWS FROM ABROAD We are all very proud of Campman Gavin O'Brien Kilteenbane playing with New York in Gaelic Park and all the Kerry players flying the flag high for the County in the Big Apple.

Gavin is the Great Grand nephew of the great Kerry footballer of the 1920’s Charlie O'Sullivan, Upper Camp.

Also Kevin Moriarty, Curaheen is a selector with New York. Kevin did a marvellous interview following the New York victory over Leitrim recently. Well worth tuning into on Youtube.

Kevin is a Grandson of the famous Kerry Footballer of yesteryear Dan Den Moriarty who played with Kerry in the 1920’s. In fact Dan Den played with Camp too in those days according to the late Eoghan Ó Duibhne's account in his book on Camp Football. In July 1924 he played in a 7-a-side in John Beag Deanes field to raise money for Camp School. Teams from the entire peninsula took part in the tournament. There were special trains to Camp Junction from Tralee and Castlegregory running for the day. Eugies book is certainly a treasure to have these days. Congratulations all, go n-eiri an t-ádh libh!
