FOOD FESTIVAL. The 16th Féile Bia Daingean Uí Chuis was a tremendous success with over 60 Taste Trail offerings and 50 plus market stalls dotted throughout the town over the weekend. Saturday's weather was rather mixed but with less crowds it made for a more pleasant experience for attendees and for outlets to explain the contents of their produce and business to customers. The crowds certainly turned up on Sunday and together with multiple entertainment groups and mouthwatering aroma in the air created a real carnival atmosphere for all age groups.

Judging by the noticeable reduction in the amount of litter going to lLandfill after the festival the vision and aspirations of being a zero waste to landfill of Féile Bia are very much achievable within a few years. Well done to all involved especially the team of volunteers who put in many hours behind the scenes ensuring such a huge event ran smoothly in promoting Dingle as the best food town in Ireland and among the

LITERARY AWARD. Congratulations to Siobhan Prendergast of Dingle Publishing and Máirín Ní Chonchúir author of the recently launched book Crainn Agus Toir which scooped the Gradam Uí Shuilleabháin Award at the Oireachtas na Gaeilge Literary Awards in Galway a few weeks ago. This Irish Language publication is certainly one to consider as a special present for Christmas or indeed any other occasion and is available in local bookshops.

EVENING CLASSES. Pobalscoil Chorca Dhuibhne are offering a great range of evening classes in a wide variety of subjects again this autumn. DEVELOPMENT WORKS. Kerry County Council staff have been very active in Dingle Town over the past few months with ongoing maintenance work and the replacement of sections of the footpaths which needed attention especially for safety of pedestrians.

Other building and renovation works also visible in almost every street and laneway which is a sign of the continued prosperity of our town.

It’s Time to Butter Up to Butternut Squash!

As the crisp air of Autumn settles in, it is the perfect time to embrace the seasonal delights of butternut squash. This vibrant fruit, belonging to the Cucurbita family alongside courgettes and pumpkins, has become a staple in our kitchens over the last decade. With its peak harvest between late September and November, butternut squash is not only delicious right now but also packs a powerful nutritional punch that can help combat common health issues such as cancer, cardiovascular disease, arthritis, and diabetes.

A single cup of baked squash delivers a generous serving of beta-carotene, converting to over 10,000 IU of vitamin A—more than double the recommended daily amount! This essential vitamin is crucial for repairing and rejuvenating our body's mucosal linings, protecting our lungs, sinuses, gut, and colon, making it an ideal ingredient for warding off colds and flu during this season. Its bright orange hue is a clear sign of its beta-carotene content, a compound also found in carrots and pumpkins, which are equally abundant this time of year.

The Science Behind Beta-Carotene

Numerous studies have highlighted the health benefits associated with consuming beta-carotene-rich foods. For instance, research published in the American Journal of Clinical Nutrition found that a diet high in beta-carotene is linked to a lower risk of chronic diseases, including cardiovascular disease and certain types of cancer. The antioxidants in beta-carotene help neutralize harmful free radicals in the body, which can lead to oxidative stress and inflammation, two major contributors to chronic diseases.

Another significant study revealed that higher dietary intake of betacarotene is associated with improved immune function. The study participants who consumed more beta-carotene showed enhanced responses to vaccinations, suggesting that foods like butternut squash can help bolster our immune defences during the colder months and when people are more likely to receive vaccinations. Interestingly, the same studies failed to show the same results when participants took beta carotene as a supplement, suggesting that there is more to eating wholefood sources of beta carotene than meets the eye (pun intended!).

In addition to beta-carotene, butternut squash is rich in antioxidants like lutein, lycopene, vitamin C, and manganese. A study published in the European Journal of Epidemiology demonstrated that high levels of dietary antioxidants are associated with a reduced risk of developing chronic diseases such as heart disease and certain cancers. This finding underscores the importance of incorporating antioxidant-rich foods, like butternut squash, into our diets to promote long-term health. Although categorized as a starchy carbohydrate, its high fibre content

ensures slow digestion, making it perfect for maintaining stable blood sugar levels, ideal for those managing diabetes or looking to lose weight. It also boasts an impressive range of B vitamins, including B6 and folate, along with omega-3 fatty acids and magnesium—an anti-inflammatory dream team for supporting cardiovascular health and easing arthritic conditions. This warmth-inducing fruit is particularly gentle on the digestive system, making it suitable for everyone from babies to the elderly, a true all-rounder in a curvy body!

Choosing and Storing Butternut Squash

When selecting butternut squash, look for smooth, matte skin without blemishes or bruises. A heavy squash is a sign of good moisture content, ensuring its vitality. Store it in a cool, dark place for up to a few weeks, and once cut, wrap it tightly and refrigerate for up to five days. The best ways to enjoy butternut squash are by steaming or roasting it, but it's also a fabulous addition to soups, risottos, stews, and casseroles—perfect comfort foods for the season.

Butternut squash shares its spotlight with other seasonal treasures available in Ireland this autumn. Sweet potatoes, for example, offer similar benefits with their rich beta-carotene content and versatility in both savory and sweet dishes. Carrots, too, bring their own delightful sweetness and health benefits, complementing butternut squash beautifully in a myriad of recipes. Don’t forget about pumpkins and parsnips, which also share that comforting warmth and nutritional richness, making them perfect companions in your autumn meals.

Cooking Tips

To roast butternut squash, simply cut it lengthwise, remove the seeds and fibres, and place it on a baking sheet. Drizzle with olive oil, sprinkle with seasoning, grated nutmeg, cinnamon, or your favourite herbs. It pairs wonderfully with warming spices like ginger, nutmeg, turmeric, cumin, and cinnamon. After roasting for about 20 minutes at a moderate temperature until tender, scoop the baked flesh from the skin and serve. Don't toss those seeds! Rich in omega-6 fatty acids and oleic acid, butternut squash seeds are an excellent snack, boasting anti-parasitic qualities. Rinse them, dry gently, and bake at a low temperature for 15-20 minutes. Season with tamari, seaweed powder, or grated nutmeg for a delicious, healthy treat—even if you don’t need them for medicinal purposes!

Once Upon a Time in the Southwest

Castlegregory Murder

-Wexford Conservative, 01 April, 1846

On St. Patrick’s night last, Mr. John Fitzgerald, a respectable farmer residing near Castlegregory, was so seriously assaulted that he has since died. It is reported that on the night in question he went into a public house in the village of Ballyduff, accompanied by his servant boy. They left together after a few drinks but neither returned home that night. The next morning Mr. Fitzgerald was found in a dyke with eight cuts on his head. Also, he had a compound fracture on the back of his head and another on his temple, severing the artery.

The servant boy has been arrested and lodged in jail for this murderous assault. However, he alleges that the master was attacked by three men and that he ran away. But it is strong presumptive evidence of the boy’s guilt that he passed by his master’s house without giving any information of the attack.

Mr. Fitzgerald had £17 on him and the knowledge of this must have induced his assailant or assailants to attempt his murder in order to rob him.

(Ballyduff is on the main road near Stradbally. Who knew the victim had £17 on him? The article supports the possibility of more than one attacker. What age was the ‘boy’?)

Prepare Your Coffin

-Dublin Evening Packet, 04 February, 1845

A Rockite Notice was posted on the door of the police station in Ballylongford on Sunday night last.

It contained a threat to Constable Egan that if he continued to make himself so officious by his night patrols or attempted to prevent people from gathering or cutting seaweed at Carrig-island then he should have his coffin prepared.

Sub-Inspector Fletcher of Listowel showed the notice to the magistrates sitting at the petty sessions and then forwarded it to the Government. Ballylongford is seen as a seditious place.

(Rockite Notice – Rockites were the followers of a mythical hero named Captain Rock in the 19th century who targeted landlords for raising rents. They were similar to the Whiteboys and were responsible for threatening letters, arson and murder.)

Fatal Accident

-Kerry Examiner, 07 March, 1845

A respectable farmer named Jeremiah Harah, who lived near Ballyhar Chapel, Killarney, was on his way home on foot from Tralee a few days ago. After darkness fell a neighbour of his came along the road on his horse and cart. He invited Harah to take a seat beside him which he did. They had travelled only a short distance when Harah fell off the cart onto the road. The wheel of the cart rolled over his body and he was so badly injured that he died a few days later. The poor man leaves a wife and seven children to mourn his untimely loss.

(The surname Harah was known in Scotland and Yorkshire.)

Attempted Murder

-Wexford Conservative, 25 March, 1843

George Hewson of Ennismore, near Listowel, was returning home in his tax-cart after a visit to friends. When he was about two miles from home he saw two men on the road ahead dressed in women’s cloaks. As he neared them the older of the two drew a gun from his cloak and fired at Hewson who threw himself into the well of the tax-cart. The second man then produced a gun.

But Hewson still had hold of the reins and drove off as fast as he could. He had recognised the two men, a father and son named Drury who lived about two miles from his home. On reaching home he saddled a fast horse and rode to Listowel.

He reported the incident to the Chief of Police who went to the Drury home and arrested the gunmen. It appears the attempted murder was the result of a dispute over fishing rights on a neighbouring river. The Drurys were found guilty by a jury and were sentenced by Judge Ball to 15 years transportation.

(They were probably sent to Australia or Van Dieman’s Land, later Tasmania. A tax-cart was a two-wheeled cart with springs which attracted a small tax.)

Dingle Postman Attacked

-The Pilot, 22 July, 1829

On Monday night, Sweeney, the Dingle Postman was attacked about seven miles from Tralee by two men named Crowley and Houlihan and the mail taken from him.

The Dingle mail is dispatched every night between 11 and 12 o’clock from the Tralee Post Office and is due in Dingle every morning at about 8 or 9 o’clock. The Postman is obliged to travel all night and to walk a distance of about 30 miles.

On Monday night Sweeney met the two Dingle men who were going to Dingle by horse and cart and decided to take a lift with them. They drank some whiskey and soon quarrelled. Crowley threw Sweeney off the cart and the pair fought on the roadside. Sweeney got the worst of the exchange and the two men left him there and headed off with the mail which was recovered by the police later.

To each Male Emigrant, a Free Passage to this Fine Country will be granted; together with his Clothing, Lodging and Food; besides a small Weekly Allowance, until he shall be placed in possession of a Cottage and 25 acres of Good Land, Rent Free for Ever; together with a Yoke of Bullocks and a Milch Cow.

In addition to this, each Emigrant will be paid a Gratuity of £2 Sterling the instant he embarks. No Families or Females can be sent out now; but the families of such Emigrants who decide to remain in the country, shall have a Free Passage provided for them next year.

(The word ‘Yoke’ is in common use in Ireland today. But it probably meant a pair of bullocks. It was also the name of the yoke! or device used to harness the animals together.)

The Dingle Way is a beautifully scenic long distance walking trail on the world famous Dingle Peninsula. At approximately 176 km (109 miles) long, the hiking route officially begins and ends in Tralee, the county capital, and takes in some of the world’s most breath taking scenery. You can join the trail at any number of points along its length as it hugs the coast along the Wild Atlantic Way. There are also many short loop walks and many mountain hikes and trails off the main Dingle Way offering excellent walking alternatives to cater for all interests.

The Magharees (an Mhacaire) , as the peninsula is known locally, is home to the Natterjack Toad, a rare species that has a yellow line running down its back Reaching the head of the strand the Dingle Wa y passes through the small commun ity of Fahamore where you can avail of refresh ments and a bite to eat The trail curves around Scraggane Bay to the north offering views o f the Seven Hogs islands which litter the bay and of which Oileán an tSeanaigh with its monastic site is best known Continue northeast towards Cill Seanaigh where there is an ancient site of St Senan with its rare slab Chi -Rho cross and colourful stone arrangements, before starting to come back down the eastern side of the loop along another stretch of beach which lasts another 2.5km. The trail then takes you back to the final stretch of road to lead into Castlegregory (Caisleán an Ghriaire) , which offers the walker a good variety o f acco mmodation, restaurants and pubs.

Four Peaks Challenge for Kerry Hospice

Six individuals from West Kerry, all keen hill-walkers and memebers of Dingle Coast Guard—Karen Nicolson, Ursula Vickers, Niall Flannery, Patrick Sheehy, Maurice O'Halloran, and Mark Murphy—will be taking part in the Four Peaks Challenge on Sunday 27th and Monday 28th of October to raise funds for Kerry Hospice. The challenge involves climbing the highest mountains in each of Ireland’s four provinces: Carrauntoohil (Kerry), Mweelrea (Mayo), Slieve Donard (Down), and Lugnaquilla (Wicklow).

This challenge is being done to support the care that Kerry Hospice provides to patients with serious illnesses and their families. Donations are being requested to help raise important funds for this great cause. Any donation, no matter the size, will be greatly appreciated and will make a meaningful difference in supporting Kerry Hospice. The Dingle Distillery International Film Festival (DDIFF) announces it will host an unmissable weekend of Masters’ Talks and film screenings at the Dingle Skellig Hotel from Nov 8th to 10th, 2024. Presented in association with Screen Ireland, this special weekend event will feature five different talks with leading film industry figures as well as three evening film screenings—including the Dingle Peninsula premiere of the smash hit film ‘Kneecap’, showing on Sunday, Nov 10th at 8pm.

Kicking off the weekend on Friday Nov 8th at 2pm, local legend Philip King, the multi-talented musician, broadcaster and producer of ‘Other Voices’, will share insights from his successful career and discuss his recent experience producing the acclaimed film, ‘That They May Face the Rising Sun’. Philip will also present a screening of this beautiful film on Saturday night at 8pm.

On Saturday Nov 9th at 10am, Hollywood feature film producer and local resident Ned Dowd will reveal the process and core principles of turning a 120-page film script into a finished film. Ned will present a screening of his “funny and touching” film ‘Wonder Boys’ on Friday evening at 8pm.

On Saturday afternoon at 2:15pm, renowned film producer Winston Azzopardi will discuss his experiences making blockbuster “epic movies” on his home of Malta, one of the world’s most popular shooting locations.

The weekend continues Sunday morning at 10am with legendary Casting Director and Dingle resident Ros Hubbard. Ros will be joined by Maureen Hughes, one of Ireland’s leading contemporary Casting Directors. This will be an entertaining and illuminating session that explores the casting process and the art of film acting.

Rounding out the talks on Sunday afternoon at 2:15pm, three awardwinning Irish documentary directors (Mark McLoughlin, Brenda Ní Shúilleabháin, and James Byrne) will share their different perspectives on non-fiction filmmaking.

Wrapping up the weekend on a high will be a screening of the smash hit film of the year, ‘Kneecap’, playing at 8pm on Sunday night.

Bake Off 2024

This year's bake-off competition was a great success, with entrants creating a wide variety of delicious chocolate cakes. From classic brownies to decadent three-layer chocolate sponges, the entrants showcased their creativity and baking skills. All entrants should be commended for their hard work and dedication. Encouraging young girls and boys to participate in baking competitions is a vital way to recruit young people to embrace the festival. Local schools can play an important role in supporting and showcasing this event, providing a platform for future bakers and committee members. The winners of the competition were:

Maharees Conservation Association Win Cultural Heritage Award

The Maharees Conservation Association were announced as inaugural winners of the "Micheál Ó Muircheartaigh – Gradam Dúchais", a new Intangible Cultural Heritage Award, for their currach making demonstration during National Heritage Week. The O’Leary family, who have been making currachs in Maharees for five generations gave the demonstration and those who attended their event learned how the currachs have connected and sustained the communities living in Maharees and around the Tralee Bay area. The award which was presented by Tánaiste Micheál Martin, recognised the group's celebration and preservation of our rich traditions, crafts, skills, customs, and practices.

Thanks to all who attended the Clean Coast Clean-up on Saturday 21st September!

A community biodiversity survey of the Inch dunes will take place on Friday 11th October at 1pm with ecologist Cathy Eastman (Biodiversity Partners) as part of the Inch Community Biodiversity Action Plan funded by Community Foundation Ireland. Meeting point: outside Sammy’s.

Katie’s Coffee for cancer: Join us for Coffee, Cake, and Traditional Music at Inch Coffee (V92 FY51) on Saturday, October 19th at 11am. All proceeds will go to Recovery Haven Tralee and National Breast Cancer Research Institute. Please support this cause and help to spread awareness. Everyone is welcome!

Kids Halloween Party: Sunday 27th October 4-6pm at Inch Community Centre. Kids Disco – Prizes for best fancy dress. Come and meet Kenny the Clown! €6 entry.

The Inch-Annascaul Community First Responders are trained volunteers that live locally. When an ambulance is called to an address within a radius of 8-10km of Inch Beach, Co Kerry, Community First Responders received an alert, and any available responders will attend with a defibrillator.

The responders receive alerts specific to Cardiac Arrest, Stroke, Choking, and Chest Pain. The aim of the Community First Responders is to reach a potential life-threatening emergency in the first vital minutes before the ambulance arrives.

If you think you would like to volunteer to train to become a Community First Responder, the next round of training begins in November. For more information or to sign up for training please contact Niamh on the following number 0857126947.

Inch Community Council will be hosting a fundraiser bingo on Thursday October 24th at 7.30pm to raise much needed funds for the InchAnnascaul Community First Responders. These funds will be used to buy new defibrillators.

Senior citizen community lunches at Inch Community Centre V92HK31 on every second Tuesday at 1pm including the 22nd October and 5th November. All are welcome.

Inch Farmers Market will take place on the following Saturdays from 10am-2pm at Foley’s Beer Garden: 12th October, 9th November and 7th December.

Beimid ag iarradh an cleas a imirt arís an Geimhreadh seo chughann, ach daoine a fháilt atá ag smaoineamh ar crainn, no fál, a chur…. It’s often been said that trees don’t grow well in West Kerry. We’ve proven that this is not at all true, as last year a diverse group of west Kerry planters put down over 6,000 trees in all sorts of fields, housing estates and gardens all over the peninsula, and most of them have survived (the trees are doing really well too!). We surprised ourselves with the success of this project: we learned a bit about planting and growing in West Kerry, we met up with new friends and neighbours, we helped each other, we had fun, and we ended up with something that we can all be proud of and benefit from.

Trees enrich our community, by supporting many forms of life, and bringing nature back into our own nature-depleted lives. They’re good for our mental and our physical health, and they will protect against the ravages of storms, and of floods. They help nourish the land too and can support and benefit farmland.

Trees On The Land – who donated the trees for free– were so impressed with our project that they have this year promised us even more! If we can find willing volunteers, we can plant 7 or 8 thousand native Irish trees this winter. We can ask for a wide range of trees to suit our sites – this will suit small scale areas (less than a quarter acre), and hedging, and will include a mix of oak, birch, hazel, scots pine, alder, rowan, hawthorn, Crab apple, wild cherry, spindle and guelder rose. We might also get a small number of apple trees if available. If you think you might be interested, just get in touch with us, let us know what area (or length of hedging) you might want to plant. Give us your exact location on a google-map, and we’ll receive the trees around February. Some people might want help with planting, and we had great fun running meitheal’s last year, others might want advice on what to plant, and we’ll do our best to help with that too.

HARVEST THANKSGIVING

On Sunday September 29th, over 60 hardy souls braved the lashing wind and rain and gathered at Kilgobbin Church to give thanks for the harvest and celebrate the 200th anniversary of the Church building. Surrounded by a lovely display of flowers, jams, eggs and produce, the ecumenical congregation sang, prayed and took a collection for the Church Mission Societies work in Africa. The Village Voices of Castlegregory and the stellar Maire Begley provided the music.

The Rev. Jim Stephens recounted the economic changes of the last 200 years in the state and County and listed the clergy who served Kilgobbin in living memory. He reminded us that the people are the real history, present and future. The celebration continued at the Old School with fellowship fuelled by sweets and sandwiches, much appreciated by the children and one unnamed soul who sampled the church’s birthday cake before the candles were added. NATIONAL HERITAGE AWARD

The Maharees Conservation Association has won the new Heritage Council award named after the late Micheál Ó Muircheartaigh.

The legendary GAA commentator from Dún Síon died earlier this year at the age of 93, and the Heritage Council has now created the Micheál Ó Muircheartaigh – Gradam Dúchais, or Intangible Cultural Heritage Award.

This is awarded to an event or project that encourages a greater appreciation of an element of our intangible cultural heritage, including crafts, skills, customs, or practices.

The Maharees Conservation Association has been announced as inaugural winners today for its currach-making demonstration during National Heritage Week with the O’Leary family. The award was launched today by Tánaiste Micheál Martin at a special event in Cork, and all heritage winners will be honoured at a ceremony in Dublin on November 15th. Congratulations and well done, it is great to see the expertise and craftsmanship involved in the making of a Curragh being acknowledged and the O’Leary family who have kept this old tradition to the present day recognised for their work and expertise. This is wonderful.

CAMPFEST

CampFest is celebrating 20 years and the organisers are looking forward to a great weekend in the Railway Tavern, Camp on the weekend of 18th - 20th October. It is always a great weekend for all the locals, some who get involved and others who enjoy the spectacle of watching a hundred or more VW cars and buses travelling in cavalcade through the peninsula on the Saturday morning. There is an auction on Saturday night in aid of a charity and that is good fun too. There is plenty of music and entertainment over the weekend. The Junction Bar facilitates parking and the visitors always enjoy the good food and ambience at Fitzgeralds too.

Garda Youth Achievement Awards

Congratulations to last year's Transition Year class from Meán Scoil Nua an LeithTriúigh, Castlegregory who won the group award at the Lee Strand Garda Youth Achievement Awards last Friday for their outstanding contribution to the environment, their school and their community.

Four students represented their class at the award ceremony Lucy Finn, Ciara Butler, Saoirse McCarthy and Daniel O'Mahony and later collected the award on behalf of their class.

Last year this amazing group of students embarked on four different environmental and community based projects.

The four groups were as follows:

Fixing Fashion raised awareness about fast fashion, organised a clothes swap shop and raised money for SVP as well as organising a shoe drive to send shoes to Africa.

COP Castlegregory linked in with the Dingle Hub and advised local businesses on how to become more environmentally friendly.

Solar Soldiers had all the groundwork done on pricing and sourcing solar panels for our school which are now in situ and reducing our electricity bill

and finally Eco Empire Expanded built a pond in our Geopark which is enjoyed during lunchtimes by students. They also secured a container for storing gardening equipment for our polytunnel.

This amazing group of young people put in such hard work last year and are worthy recipients of this Lee Strand Garda Youth Achievement Group Award.

Congratulations to each and every one of them and their teachers Ms Ilona O' Dowd, Mr Diarmuid Begley and Principal Ms Karen Blennerhassett for their guidance and encouragement.

Pathfinder Survey Winner Announced

Dingle resident Lorcan Fingleton was the lucky winner of a 2kW solar PV system for his home at the prize draw for the Dingle Peninsula Pathfinder Survey.

Lorcan was attending choir practice at An Díseart on Monday night when his name was drawn by nine-year-old Eoin McNamara from Ceann Trá. The draw which was held downstairs at An Díseart was independently observed by accountant Seán O’Sullivan.

Local energy solutions company Solar Beo generously sponsored the prize, giving the winner the choice of a 2kW solar PV system for their home or an electric bicycle.

On hearing the news of his win, a delighted Lorcan had no hesitation which one he would opt for.

“Solar panels are the way to go and it was very much part of the plan to get them anyway so I’m delighted,” he said.

Lorcan was one of 385 people who completed the survey which will inform the Corca Dhuibhne National Sustainable Mobility Pathfinder Project. The project is led by Dingle Hub and aims to identify and advocate for easy, affordable and integrated travel options that will lessen our dependency on private cars. Its objective is to help cut emissions, support climate change goals and improve quality of life on the Dingle Peninsula. It follows the successful introduction of Transport for Ireland (TFI) Local Link bus services on which 46,000 journeys were completed last year alone.

Dingle Hub was helped by volunteers from Corca Dhuibhne Community Forum to promote the survey.

Forum chair Dr Peadar Ó Fionnáin said the Pathfinder Project was all about figuring out ways to get around without driving everywhere and Dingle was once again leading the way.

“We’re going to show the rest of the country how that’s done outside a city, in a rural area,” he said.

“The Pathfinder Project started out with a survey where we were trying to find out how we travel, why we travelled the way we do and help us figure out how we can proceed and what type of interventions are going to work around here,” Peadar added. He said the whole project was managed by Dingle Hub but with very few resources allocated for it, community involvement was crucial.

“We need people who are living here in West Kerry to be part of this. The Community Forum is involved and we’d really welcome anyone else who wants to come along to talk to the Hub or talk to the forum about getting involved.

“By making some serious changes, we’re going to be a healthier community, a more sustainable community, a happier community and show the rest of the country how that’s done,” he said.

We were delighted to do a trial in Dingle town for the ToGoCup returnable cup scheme over the Dingle Food Festival. This trial gives consumers and businesses a chance to try out a returnable coffee cup scheme. Thanks to all the businesses who took part, and we will be circulating a questionnaire to get feedback on how it went. Thanks to the public who went out and brought their own cups and used the returnable cup scheme. Let’s all support the businesses and choose to use a returnable cup.

Green Curry, Lentil and Sweet Potato Soup

A creamy and fragrant soup.

This soup is so pleasing to make. Start slowly and your kitchen will fill with the comforting aromas of onions and garlic as they soften. Once the ginger and lemongrass are added, the scents will change to citrus and make you want to cook this more often. Make sure to cook the curry paste for a few minutes to open and release all of the flavours. The mild pepper and creamy flavour of the lentils and the sugars of the sweet potato are the reasons that these two always work. The key to knowing when this soup is almost ready, is when you taste the lentils and there is a slight bite to them. Bring this all together with the richness of the coconut milk (go for the full fat one) and season with a little Thai fish sauce (available in all shops).

I hope you enjoy cooking this as much as everyone will when they taste it.

Ingredients

1 shallot, diced

2 cloves of garlic

about inch of ginger, peeled and diced

1 lemongrass stalk, outer layer removed, bottom piece sliced

2 tsp. green curry paste

150g brown lentils

2 small sweet potatoes, peeled and cut into large dice

500g stock (chicken or vegetable)

1 tin of coconut milk

a few broccoli florets, cut in half

dash of fish sauce

small bunch of coriander, chopped

Method

Heat a pot over low to medium heat. Add a little oil and add the shallot and garlic. Let this cook slowly for about five minutes. Add the ginger and lemongrass and let this cook slowly for a few minutes. Stir in the Green curry paste and cook it for about 2-3 minutes. Add in the lentils, sweet potato and stock. Simmer this for about 20-25 minutes. Check to make sure the lentils are cooked but still have a slight bite to them. The sweet potato should be cooked at this stage too.

Add the coconut milk and broccoli to the pot, cook for about 5 minutes. Use fish sauce to season. Add chopped coriander to serve.

Solar..panels or tubes, what's the difference? Well they both provide hot water when heated by the sun’s energy, thus saving you energy, be it oil, gas or electricity.

A solar system will save up to 70% of your annual hot water bill. When it comes to tubes versus panels, the tubes are marginally more efficient than panels, but realistically the difference is small, especially when we have had such a great spell of sunshine.

There is another "solar system" known in the trade as "Thermodynamic" this is a solar panel that works in the dark. Yes with no sunshine, you ask how!

Well the answer is simple really, it's not a solar panel it's a heat pump. The way it works is a panel is fitted to your roof which is connected to a unit and cylinder in your hot press. This is a compressor similar to what's found in a fridge, this unit pumps a refrigerant gas into the panel where it heats due to the fact that the gas has a very low boiling point of about -25 Celsius so this hot gas comes back into the unit, where the gas is compressed to make it hotter, the heat is then transferred to create heat. However, this unit is dependant on electricity to operate so while saving money on heating hot water it does so at a cost.
