Mary Ferriter Caroline Boland Dingle Peninsula Tourism Alliance

the loss of more football teams across the peninsula to emigration – the Distillery and the people of the Dingle Peninsula were her anthem as she travelled across the world. As a much-valued member of Dingle Peninsula Tourism Alliance Council, Mary brought much shared vision, positivity, support and encouragement to the organisation and its members. Always on hand to explore new opportunities, she delighted all who met her through her unbridled enthusiasm for the Distillery and peninsula. She represented pure authenticity, the Dingle Peninsula way of doing things, the warmth and genuine hospitality she gave to all she met, and left each person, lucky enough to meet her, feeling blessed. She was a lady with the mischievous twinkle of a fun-loving child, the wise ‘oul owl’ with the sense of adventure of an explorer, the respected business acumen well earned, and the heart and soul of a caring member of our community. One of her favourite sayings was “Ar scáth a chéile a mhaireann na daoine”, “We live protected under each other’s shadows”. Her roots were firmly embedded in Dingle’s fishing community, her love of the peninsula’s cultural heritage and Irish language always on display, and her sense of integrity was matched only by the way she could make your day brighter with her beautiful smile. Her gift was the gift of friendship – a word of encouragement, a listening ear, her amazing talent for remembering you, and making you feel like the most important person in the world. It’s no wonder she is loved the world over!

It is with such heartbreak that we all learned of the loss of our wonderful friend, colleague and community member, Mary Ferriter, who passed away suddenly at home on December 2nd. Full of vitality and life, Mary was a powerhouse whose passionate mission was to introduce the world to the Dingle Distillery and Dingle Peninsula. Her story never wavered, that by growing success and global acclaim for the Distillery, it would provide precious jobs in Dingle and prevent

But Mary’s ultimate role, that she took such enormous pride in, was as loving and adoring wife and mother. What an enormous loss for her family. Our thoughts and sincere condolences are with Paddy Joe, Bridget, Patrick, Christopher, siblings, extended family and friends at this time. A bright light has gone out in our community but Mary’s warmth will live on within us, both here at home in her beloved Dingle and across the world through her global network of friends. “Ní bheidh a leithéid arís ann”

More Ho Ho Ho, Less Oh No No for a Healthier Christmas Day! Irene Ní Fhlannúra

Retain the health properties of these veg by keeping cooking time to a minimum, leaving them crisp and fresh looking on the plate. Carrots are rich in betacarotene, another well-known cancer-fighting antioxidant and vitamin C. A colourful selection of vegetables serves up many healthy nutrients to minimize some of the ill-effects of over-indulging during this time! Potatoes, washed and cooked in their jackets are fibre-rich and a good source of vitamin C. Serve with a little mashed sweet potato and avoid the feeling the effects of too much spuds during this meal. Roast potatoes cooked in duck or goose fat rack up the calories. Reduce the amount of fat absorbed by keeping the pieces big and serving size small. If you fill half your plate with colourful vegetables, dividing the other half between the meat and potatoes - you will get the perfect balance! Gravy too, has its place on a healthy Christmas menu. Make your own stock from the turkey neck and giblets, adding celery, onion, carrot and bayleaf to the stock water. Pour the turkey juices from roasting tin into a jug and allow the fat to come to the surface before scooping it off. Add to the strained stock a splash of red wine and allow to reduce to enhance flavour. Thicken with a little cornflour and season with herbs, salt and pepper. Ready-made gravies are notoriously high in salt and other additives and are best left on the shelf along with the elf!

Preparations for the biggest feast of the year are underway with just over a week to go before we sit down to tuck into the long-awaited Christmas Dinner! It has been a tough year to say the least and letting loose on Christmas Day might sound like the perfect tonic after months of restrictions. Before you fill your trolley with booze, selection boxes and party-pack canapés put the wellbeing of you and your family at the top of your Christmas list. According to all the food and drink ads, Christmas is not typically associated with healthy eating. However, most of the culinary crimes committed during the holidays the ones which leave us feeling wretched, can be prevented with some last minute "menu-tweaking". It's good to know that the traditional fare served up on Christmas day is essentially a wellbalanced meal and has many positive things going for it. A little extra of the good stuff could be the recipe to keep you shining all the way through to the New Year! Christmas Morning is a noisy, chaotic and exciting time, especially if there are small children in the house. Make breakfast extra-christmassy by doing something different yet keeping it healthy at the same time! For example, try this warm berry drink, rich in vitamin C – it’s simple to make and tastes delicious. Whizz some raspberries and blueberries in a blender. Add boiled water or warm orange juice, slices of lemon and oranges (studded with cloves), a little honey and stir with a cinnamon stick (you can leave the cinnamon stick in the liquid until serving). Follow with a protein-rich meal such as boiled or poached eggs with wholemeal toast or a rich, eggy french toast with honey or maple syrup. Remember, too much sugar first thing in the morning is a bad idea if you want the happy Christmas to last through the day! The main event of day, the Christmas dinner, is typically high in calories, salt and saturated fat. You can serve a healthier version without compromising on the basic ingredients or taste. Turkey is an excellent source of low-fat protein and vitamin B12. As most of the fat found in turkey is found mainly in the skin and some in the dark meat - avoid eating the skin and go for the lower-fat meat from the breast. Turkey is also a fantastic source of aminoacid tryptophan, which converts to mood-enhancing serotonin - another good reason to keep turkey on the menu during the dark months of Winter. Ham is also a good source of protein and some B vitamins but can be very high in salt and saturated fat. Soak in cold water over night to reduce some of the salt. Throw away the soak water and use fresh water to cook it. Trim as much fat off your slice before digging in. Brussels sprouts are probably the nutritional highlight of the Christmas Dinner! They belong to the brassica family of vegetables, the plant equivalent of super heroes. Other brassicas include cabbage (red and green), broccoli, cauliflower and kale. Love them or hate them, their cancer-fighting nutrients and antioxidants protect our health and their undigested fibre is lapped up by our good gut bacteria, a win-win for everyone! 8 Corca Dhuibhne Beo

Give traditional stuffing a healthy makeover by using wholegrain breadcrumbs, onions and garlic, plenty of fresh sage, thyme, rosemary and parsley and keep fat to a minimum by substituting some of the butter with a little turkey stock to keep it moist. Other festive trimmings such as cranberries and red currants can boost the health benefits of the Christmas dinner if you buy fresh and make a simple compote (simmered in the juice of an orange, a little brown sugar, balsamic vinegar and spices such as cloves, star anise and mace). Christmas cake and plum pudding are high in sugar, so keep portions small. The main ingredients of dried fruit and nuts are on the nice list, but not so much the packet of custard, brandy butter or cream. Without sounding like the gourmet Grinch of Christmas - excess fat, sugar and alcohol is a recipe for wilting energy levels, indigestion and mood swings. The traditional lesser-known place names of a locality are rooted in its topography and cultural history and reflect the close relationship between a community and its immediate environment. The names of fields, rocks, inlets, bótharíns, landing places, humps hollows and so on contribute immensely to the rich tapestry of times past. Through a study of their etymology, some of the layers of our history can be partially unveiled. ‘Urlann’, ‘Páirc an Ráithín’ and ‘Cathair na Faithche’ reflect the presence of pre-Christian forts while ‘The Bán’ and ‘Gort na Sciath’ depict past agricultural land use. Calaithe an Bháid, Calaithe an Ghrin, Calaithe Léin and the Cé, all landing places, indicate the importance of the sea for fishing and as a means of transport for the inhabitants of Oileán tSeanaigh. A time when names such as Carraig na bPréachán; Leac a’ Stóra; An Eitir; Portcáinín Coyle and The Raithneach Bank tripped off the tongues of the local people is but a memory. Changes in land ownership, farming patterns, and a general drift from the land associated with increased urbanisation and emigration, have all increased the decline. The use of modern technology in the fishing industry has replaced dependence on the use of named markers as navigational aids. This has all been compounded by a change in the spoken word. Many place names which originated in the Irish language have become disguised in a phonetic English spelling which conceals their original meaning. Dramatic changes to the coastline over the centuries has also obscured the reason why a location acquired its name. . The book, produced by Martin Lynch and Eoghan ó Loingsigh for Maharees Conservation Association with funding from FLAG South West, will be launched shortly. A specially constructed website will accompany the publication.

Paudie Fitzgerald – from the Dingle Races to the Olympics Ted Creedon (30 years after the sensational events at the Melbourne Olympics in 1956 Ted Creedon interviewed Paudie Fitzgerald about his competitive cycling years) Much has been written about Paudie Fitzgerald’s enterprising and daring escapade at the Melbourne Olympics, but where did it begin for the adventurous Lispole native.

would not be pressured and refused to budge. “Eventually, the police got a warrant for our arrest and we were removed from the track. We were 'held in custody' until half-way through the race and then released.” Their protest was world-wide news and the intense publicity led, eventually, to both cycling associations being reconciled but at a cost to Paudie. When he returned home he was banned from international competition. “I continued to compete in local races for a while but became disillusioned and retired - my heart was no longer in the sport.” Even now - thirty years later - Paudie is reluctant to talk about Melbourne and what might have been. He had dearly wanted to be part of an allIreland team - as are our rugby players. But did he rate his chances? Could he have won an Olympic medal? He smiled and said, "We were very fit, very strong and very dedicated. You'd never know what might have happened on the day. You'd never know."

“It all began at the Dingle Races in the early 1950s. In those days the races were The late Paudie Fitzgerald not just for horses but also consisted of cycling events. I competed in a cycle race from Lispole to Dingle and won”, Paudie recalled. Pleased with local success he entered the County Championship, which was staged in Kenmare, and came second to Killorglin cycling star Gene Mangan. The first Rás Tailteann was held in Dublin in 1953 and Paudie travelled to the capital city for the first time. It was only a two-day event and despite being somewhat inexperienced he showed considerable potential by coming fifth overall. This encouraged him to greater achievement and he competed at every opportunity. All was not accident-free though. He was injured in a crash in Ennis and spent some time recovering in a Limerick hospital. By 1956 Paudie was in his prime. He captained the victorious Kerry team in the Rás that year, taking the individual award, the King of the Mountains Award as well as the team award. The National Cycling Association (N.C.A) was impressed and nominated Paudie to represent Ireland at the Melbourne Olympics along with Tom Flanagan and Tom Gerrard.

But there was a hitch. The N.C.A represented cyclists North and South all of Ireland - but was not, itself, recognised by the Olympic Committee. That committee did recognise the Irish Organisation of Cyclists (I.O.C.) whose members were from the 26 counties only. So the N.C.A would not be allowed to compete officially in the Olympics. Undaunted, and encouraged by massive support, both financial and otherwise, Paudie and Gerrard set off for Australia – a journey of over 13,500 miles. “We flew from Shannon to the Azores, then on to Boston, New York, Chicago and arrived in San Francisco where we linked up with Tom Flanagan. The three of us then went island-hopping across the Pacific to Sydney and eventually arrived, exhausted, in Melbourne.” They were given a warm reception at the airport by the Irish Association of Australia and were whisked away to a five-star hotel. There they were royally treated while they recovered from the journey and prepared for the race. On the morning of 7 December, just two days after his 23rd birthday, Paudie and his companions arrived at the Olympic grounds for the Road Cycle Race and somehow managed to avoid detection as illegal entrants. They joined the other international competitors on the track. “We were surrounded by the best cyclists in the World. We took off our track suits and looked at each other – wondering if we’d get away with it.” Suddenly, the track was invaded by reporters and photographers who had spotted the Irishmen's green jerseys with 'Ireland' emblazoned on them. Then all hell broke loose. The Olympic officials recognised the illegal competitors and rushed over to them. Paudie and his teammates were asked to withdraw but they refused to leave the track. The officials threatened to call the police but the Irishmen held their ground. By now the track was thronged with reporters and newsreel cameras as well as cyclists and officials. The race was delayed. The protest was blaring over the public address system. Then the police arrived and asked them to leave. They were sympathetic to the trio but firm. However, the Irishmen

FARM SCHEMES ROLL OVER FOR 2021: Farmers, especially those in GLAS will be wondering what the situation is regarding their scheme in the coming year. The good news is that all, or most schemes will rollover into 2021. Remaining in these schemes is a “No-Brainer”. Anyone interested in remaining in any of the said schemes should contact their advisor. Better still, if you wish to withdraw from the scheme, you should call him, but if you wish to remain in the scheme, just stay still and quiet, and he will re-enter you in the scheme. It seems incredulous that the Department of Agriculture should pull this rubbish, again, leaving it to the last minute to launch a scheme or a scheme-renewal. But they did. But fear not, your position is safe in the scheme, as the deadline will be met despite DAFM’s best efforts. Many will wonder how to re-join. You will have the option of doing it yourself, according to DAFM, but this runs the risk of making a mistake. A very costly mistake. Better to engage the services of an advisor. Schemes which have been given the green light to continue next year include the: Green Low-Carbon Agri-environment Scheme (GLAS); Areas of Natural Constraint (ANC); Beef Data and Genomics Programme (BDGP); Sheep Welfare and Organic Farming Scheme. DAFM provided a breakdown of how farmers can do this, which is as follows. GLAS:- Farmers with GLAS 1 or 2 contracts which expire on December 31, 2020, will be offered an extension of one year, according to the department. A letter to each participant is being posted on Monday, December 14, 2020, advising them of their options and how to apply. There will be two ways in which they may extend their contracts: 1. By text message: A text message will issue on Wednesday, December 16, to each participant who is registered with the department to receive texts, giving the option to reply ‘DAFM Y’ (for Yes) or ‘DAFM N’ (for No). Participants will have 72 hours from receipt of the text message to reply; 2. By logging on to agfood.ie – to go live on Tuesday, December 15, an application may be submitted via agfood by the participant or an agent authorised to act on his/her behalf in relation to GLAS – the options provided are ‘yes’ or ‘no’. Any queries farmers have can be sent to the GLAS section at glas@ agriculture.gov.ie or to ring: 0761-064451. The losing date for receipt of their response is December 31, 2020. Organic Farming Scheme:- Farmers with Organic Farming Scheme contracts which expire on December 31, 2020, will be offered an extension of one year. A letter to each participant issued yesterday (Thursday, December 10), expected to arrive over next few days, advising them of their options and how to apply, according to the department. There will be three ways in which they can extend their contracts: 1. By text message: A text message will issue on Monday, December 14, to each participant registered with the Department to receive texts, with the option to reply ‘DAFM Y’ (for Yes) or ‘DAFM N’ (for No). Participant will have 72 hours from receipt of the text message to reply; 2. By email to organic@agriculture.gov.ie advising that they wish to apply for an extension to their Organic Farming Scheme contract; or 3. By registered post to Organic Unit, Department of Agriculture, Food and the Marine, Johnstown Castle Estate, Co Wexford, Y35 PN52. Any queries can be communicated to the Organic Unit at: 0761-064451. The closing date for receipt of their response is December 31, 2020. BDGP:- Letters will issue to the relevant farmers from week beginning December 14, offering them the opportunity to apply for a further year in BDGP. Farmers will be able to apply by logging in to agfood.ie, or by replying to a text that will issue from the department if they are registered to receive texts. The application process will be open from December 14, 2020, to January 15, 2021, and the relevant information will be included in the letters issuing to farmers next week. 14 Corca Dhuibhne Beo

Sheep Welfare Scheme:- Applications for the Sheep Welfare Scheme in 2021 will be done in the same way as in previous years. The department will be writing to participants shortly with more details, the authority concluded. NEW RULES FOR FARM ROADWAYS TO TAKE EFFECT IN 2021 New requirements on farmers to prevent direct run-off of soiled water from farm roadways will come into effect from January 1, 2021. These are in the form of the Department of Agriculture’s Specification on Farm Roadways S199. Waters as defined in Specification S199 include all water bodies and open drains that can carry water, even if only at times during the year, Somers noted. Under the new specification, all farmers must prevent direct run-off of soiled water from farm roadways to waters. In terms of measures to prevent this direct run-off to waters, Teagasc first notes that in most situations it will be a matter of allowing or directing run-off from the farm roadway at regular intervals onto a field where it can soak away. Care must be taken to avoid directing run-off into paddock entrances, it was stressed. Roadways near watercourses may be level or may have a cross fall (slope) towards the watercourse. A cross fall can be created away from the watercourse. The cost of creating this cross fall will be approximately €13.50 per metre run for a 4m wide road. An existing road that is not in good order may need an extra 50mm stone which would add €5.50 to the cost per metre, Somers says. Where roadways have a significant fall to the watercourse, it may make sense to evaluate an alternative solution such as a barrier. It might even be a good idea to relocate the roadway to another location, which in some situations might be an opportunity to improve infrastructure such as paddock access. Creating an earthen bank or barrier alongside the stream/open drain can be a useful physical barrier to prevent the entry of road run-off. This runoff will need to be piped, channelled or directed back onto land. In cases where a farm roadway crosses a waterway at the point of a dip in the land, it’s important to ensure a buffer zone is adhered to where animals enter a paddock adjacent to a stream. The gateway into the paddocks should be moved a minimum of 6m from the top of the bank of the stream or open drain. Where a farm road slopes down towards a public road and where there are waters running parallel with the public road, provision shall be taken to ensure that run-off from the farm roadway does not enter the watercourse or open drain. Steps should be taken to convey the soiled water to a suitable soakage area, Somers concludes. PAYMENTS START ISSUING UNDER 2020 BDGP SCHEME Payments under the 2020 Beef Data and Genomics Programme (BDGP) have commenced. The BDGP has also introduced genetic technology into the national herd thus improving farm profitability. Payments have started issuing and will continue over the coming days and into next week. It expected that approximately €37 million will be paid out to over 21,000 farmers. BDGP payments will continue to be issued on an ongoing basis as more farmers verify their compliance with the 2020 scheme requirements. All farmers are urged “to return all surveys and genotyping samples and/or complete the carbon navigator update as soon as possible to facilitate payment”. European Commission approval had been received for the continuity of farm schemes in 2021, including BDGP. They will receive formal letters and SMS text messages. I want to ensure that I am protecting farm family incomes with the minimum of paperwork. For now, farmers should consider whether they wish to continue in schemes in 2021, and be ready to reply when they are contacted by the department. 2020 SHEEP AND GOAT CENSUS Annual sheep and goat census forms have issued to over 47,000 sheep and goat keepers registered with the Department of Agriculture, Food and the Marine (DAFM). The Department selected Friday 31st December as the 2020 census date. Keepers are required to record the census data on their flock registers. Keepers should be aware that completion and return of the census is a legal obligation. Completed forms returned by post must arrive no later than 1st February 2020 at the address printed on the envelope provided with the census form. It is not permitted to submit forms by post through any office of the Department. It is up to the flock/herd keeper to


make sure that completed census forms are received on time. In the case of dispute regarding postal returns, the only acceptable proof of postage is a Registered Post receipt. A postal certificate or express post receipt is not acceptable as proof of postage. The Department is encouraging keepers to return census data online on agfood.ie. An extended deadline of 15th February 2021 applies to online returns. Online submission of the annual sheep and goat census information is straightforward and provides real-time confirmation when the information input has been submitted successfully. The benefits of using the on-line census facility include: • ability to view census history; • peace of mind that 2020 census details have been submitted successfully, to ensure compliance with any scheme requirements; • no additional inconvenience or costs associated with registering a postal return; and

A step-by-step guide to completing the Census on-line is provided on the back of the 2020 Census form. The closing date for receipt of completed 2020 census forms by post is 1st February 2021. However, respondents submitting a census return on-line via agfood.ie may avail of an extended closing date to 11.59 p.m. on Monday 15th February 2021. From The Archives Edited By Ted Creedon Four Drowned on Christmas Eve From - Bognor Regis Observer, 1 January 1896 A tremendous storm and associated torrential rain raged across Kerry on Christmas Eve. Four men, believed to be farmers, were travelling from Annascaul to Tralee when they came to a river in full flood. In their attempt to cross the river they got into difficulties and were swept away by the current and drowned. Their bodies were recovered quite some distance down stream. The four were named as McKenna, Dowling, Sullivan and Shea. [There is no information on the location of this tragedy or if the men were walking or travelling by horse and car].

Schooner Makes Safe Haven in Ventry From – Tralee Chronicle, 17 February 1874 As the schooner Rambler was sailing from Liverpool to Galway she ran into heavy weather off Cape Clear. Her sails and spars were ripped away by the force of the storm but she managed to make safe haven in Ventry Harbour. Her master, Captain O’Connor, went to Dingle and secured the assistance of the coastguard who supplied him with canvas and other materials. He returned to his ship with the Dingle pilot John O’Flaherty and succeeded in bringing the Rambler into Dingle harbour whereshe has now been repaired and is safely moored.

Dingle Workhouse Supply List From – Tralee Chronicle, 9 January 1857 The Dingle Union Guardians, at their meeting next Thursday, will receive and consider proposals to supply the Workhouse, free of the expense of transport, in such quantities as may be required for Twelve Months, with Tea, Sugar, Coffee, Pepper, Wine, Whiskey, Porter, New Milk, Salt, Malt, Hops, Soap, Candles, Starch, Dye Stuffs, Paint, Paint Oils, Rape Oil, Lime, Black-Lead, Sweeping Brushes, Locks and Hinges, Pints and Platters and best Oaten Straw. Tenders accompanied by samples will be received up to 12 o’Clock on that day. By Order, P. Kennedy, Clerk of the Union, Dingle, Jan. 1, 1857.

Ballinskelligs wreck From – Kerry Evening Post, 22 December, 1847 Caherciveen, Dec. 17th. – The barque Benin, of Liverpool, 360 tons burthen, while on her passage from the west coast of Africa to Liverpool was forced into Ballinskelligs Bay at 3 a.m. this morning. She is carrying a cargo of palm oil and ivory and is lying on Inny Strand. Sixteen of those on board have been rescued and they include the captain, his crew and one passenger. Their rescue is due largely to the efforts of the local people who risked their lives to reach the vessel through the surf. They formed human chains to bring the victims of the wreck ashore. However, one man drowned while attempting to reach the shore, a second man died of exhaustion after being brought ashore and a third person died on board the vessel.

The Chief Officer of Castlegregory Coastguard, Lieut. Davies, left the area last Tuesday to take up a position as Inspecting Commander of the Blue Hill station near Bantry. He has been stationed here for more than a year and a half. During that time it was said of him that he ‘acted as a father to the orphan and a husband to the widow’. His leaving is a matter of great sadness and regret to the community and especially to the poor residents of Castlegregory. He instructed the local butcher to provide every poor person in the village with meat for Christmas which amounted to considerable cost on him. [Some of the information in this article differs from Admiralty records. Lieut. John Davies was transferred from Castlegregory on 8 December 1843 to Whitehorse coastguard station in West Cork where he was promoted to Inspecting Lieutenant].

Murder on Ventry Strand From – Belfast Commercial Chronicle, 21 December 1833 (Taken from the Kerry Evening Post) Ten days ago a young woman was murdered on Ventry Strand, County Kerry. Her name was Mary Jeffers, the wife of waterguard [coastguard] Richard Jeffers who is stationed in Ventry. It appears the couple were returning to the station on the night of Wednesday the 11th of December in the company of another waterguard, named Stephens, when they met with a travelling pedlar named Trant. Jeffers and his wife were walking ahead of Stephens and the pedlar when they heard a cry of pain. Richard Jeffers left his wife to see what had happened. He met Trant who rushed past him. Jeffers found Stephens lying injured on the sand. He said Trant had assaulted him. Then they heard a scream from Mary Jeffers in the darkness. Her husband rushed to where he had left her but there was no trace of her. Her body was discovered later that night some distance away. An inquest held in Dingle returned a verdict of murder against John Trant who has been committed to the county jail. Dingle Parish Message from Fr Michael PP Dingle. Christmas is a time when we reflect on the past and look forward to the future. For many 2020 has been a very long year. New words have entered our vocabulary: Covid 19, Corona Virus, Lockdown, Pandemic, Pods, Level 5. Plans we made for 2020 quickly fell by the wayside. Plans to travel, plans to visit family and friends – even plans to eat in a restaurant were all affected by Covid 19. Covid touched all areas of our lives. It showed 32 West Kerry Live us how little control we can have. It also brought forth the goodness in people who reached out to those in need and those who continued to work on the front line. Some people turned to prayer to ask God for strength and peace. It is important for each of us to reflect on what the year was like for them. Was it a year of worry, fear, loneliness or a year when we felt supported by others even though we could not physically meet with them? At this time, we think of our family and friends at home and overseas and wish them a peaceful and happy Christmas. On Christmas night the rush comes to an end, and quietness and peace descends over our town and countryside as we prepare to celebrate our Saviour's birth. It is an opportunity to renew our friendship with Jesus, to ponder on what his coming on that first Christmas night means to us. Maybe like an old friend from our past, we have neglected to keep in touch with him. We may feel a bit embarrassed or ashamed to renew our friendship. It’s important to remember that Jesus is not concerned with how long we have been away. He came to show us the way to the Father, by walking the way before us and living life with all its joys, pains and sorrows. He invites us to walk in his footsteps. In the same way Covid 19 affected most aspects of our life, our relationship with Christ can transform our lives and the lives of those we meet. restaurants and Churches would be closed for a significant period of time in 2020. As we look to the year ahead, we pray for a successful vaccine and a return to life as we knew it, taking on board any lessons learned during 2020. We can support each other on our journey as we struggle together to follow Christ. We know that it is in following him that we receive a deep inner peace and joy that He alone can give. WALSH’S PHARMACY - 90 YEARS For as long as most people in Dingle can remember, Walsh’s Pharmacy has been a fixture on Green Street. The original shop, opened by Tom Walsh in 1930 and trading as Walsh’s Chemist was located opposite St. Mary’s Church. The business moved to its current location in 1937. The pharmacy has been in the Walsh family for three generations. Two of Tom’s children; Jack and Dee studied Pharmacy in The School of Pharmacy, Dublin. Both returned to Dingle after they qualified and worked in the Chemist shop from the 1960’s until their retirement in 2010. The third generation to work in the pharmacy are Jack’s children; Claire and John. John, a pharmacist currently lives in Perth, Australia where he is a partner in a pharmacy company – however, he is still very much involved in the overall management of Walsh’s Pharmacy and enjoys meeting his customers and old friends on his regular visits home. Claire manages the day to day running of the pharmacy with the help of a superb team of pharmacists, technicians, and front of shop staff. Thus continues the legacy and ethos of the original pharmacy started by Tom Walsh 90 years ago. To serve the growing population in Dingle and the thriving tourism market, the shop was extended and refurbished in 2005. Walsh’s Pharmacy has been in existence for 90 years. The business environment in this time has witnessed many significant changes - but nothing like the current pandemic. The Covid 19 pandemic has been a challenge for people locally, nationally and internationally. At Walsh’s Pharmacy, the pandemic presented a unique challenge, but with the guidance and assistance of our valued staff and the understanding and patience of our loyal customers, we have prevailed thus far. It has been the privilege of the Walsh family to serve and look after you, the people of Corca Dhuibne. To our staff, all fondly remembered past and present, we would not be where we are today, without your dedication and hard work. The essential support given by our fellow medical professionals has been a constant and for this we are truly thankful. Cost Saving Energy Tips at home

Q: I’ve been hearing a lot of talk about saving energy in the home and I’d be interested in some tips on how I can do this and save money at the same time. What would you advise?

A: You can reduce your energy consumption and save money on your energy bills at the same time. Firstly, you should shop around. Switching your gas and electricity providers only takes a matter of minutes and the average consumer can save around €300 by switching from standard tariffs to the cheapest on the market. For accredited price comparison websites go to www.bonkers.ie or www.switcher.ie. Secondly, you should try to reduce your usage. Remember to switch off all appliances when not in use, whether it’s the microwave or the TV, and make sure to switch them off fully and not just leave them on standby. This could save up to 20% of your appliances’ energy use, or between €50 and €100 a year on an average household electricity bill.

You should only put as much water as you need in the kettle, so if you’re only making a cup of tea, don’t fill the kettle to the top. Electric ovens are expensive to run, so where possible keep the oven door closed during cooking. Use a toaster instead of a grill to make toast at a fifth of the cost. When buying new appliances choose the most efficient model you can afford.

Your Complete Guide to Cooking the Traditional Ch

Christmas dinner is special and especially this year with the year we all have just had. Each year I keep this guide very similar, I hope it will help everyone from experienced cooks to someone who never has cooked the Christmas dinner before. Try not let the task of cooking it daunt you, even if it is your first time cooking it or if you feel that you are not a great cook. Two pieces of advice that will help you really enjoy cooking on the day are to 1) make a list and plan everything and 2) on the day focus on the hour before serving (magic hour).

To stuff or not stuff the turkey

People always have different views on the stuffing, whether to stuff the bird or to make stuffing and leave it out. My advice would be to cook the stuffing separately to ensure that there are no uncooked juices of the turkey in the stuffing and I always find that when I keep the stuffing separate I can adjust the seasoning more easily. Cooking Times for the Turkey I have had a look at several charts and cooking times but I think below is the most straightforward guide to follow, providing you with perfect results: (for an unstuffed turkey) Calculate 20 minutes per kg + 100 minutes.

Once you are happy that the turkey is done take it out. Wrap it in tin foil and leave it in a warm place for at least an hour or so (Magic hour). This will give you plenty of time to get everything else finished off. Once the turkey is out, turn the oven to 210ºC to finish all of the rest of the food.

The Ham

Ingredients 1 ham (smoked or unsmoked) Method Place the ham in cold water and bring to the boil. Change the water and repeat, then turn down to a simmer.

Every year I still take out a notebook and write down all the jobs to be done, and what ingredients are needed. Then try to give yourself some idea of when each job will be done. Please note, the timeline at the end of this guide will help you with all of this.

THE MAGIC HOUR

This can be made the day before if you prefer.

One of the greatest pieces of advice to help bring it all together and get it to the table all hot, and on time, is to have the turkey out of the oven for at least an hour before you serve it. Once the turkey is out of the oven cover it with foil and keep it in a warm place in the kitchen. Not only will this time allow the turkey to be so juicy but it will give you a magic hour or so to finish everything off; finish the ham, potatoes, roast vegetables and sauces.

The Turkey

Place the turkey on the vegetables.

Before you start, make sure you have a large tray, which is big enough for the turkey, and ensure the tray (and the turkey) fits in the oven. It is worth buying a temperature probe to test if the turkey is done.

Place the tray inside the oven and cook to the times as listed above.

Know the exact weight of the turkey (your butcher will help here). Before cooking, make sure the turkey comes to room temperature, this means having it out of the fridge at least two hours before you want to cook it. 30 Corca Dhuibhne Beo

Preheat the oven to 180ºC (fan) Add the onions, carrots, garlic and herbs to a tray, drizzle a little oil over them. Season the turkey with salt and pepper all over and make sure to season the inside too. Drizzle some olive over the turkey and use your hands to rub it all over.

How to know if the turkey is done To test if it’s done, make sure the juices run clear when you pierce the thigh where it meets the body and if you have a temperature probe use it to check if the temperature reaches 75ºC. If not, put it back in the oven for another 20 mins, then test again. The next step is one of the most important steps to prevent your turkey from drying out.

For example, 5.5 kg turkey = 110 minutes + 100 minutes = 210 mins (3.5 hours)

Put this in a hot oven, 210°C, and bake for about 30 minutes.

You can cook the ham the day before and glaze it on Christmas day if you prefer.

So, the following guide will help your break down each job to be done and will take the stress out of cooking it and putting it all together.

Cooking the Turkey

over the ham.

Allow 50 minutes per kg or 20 minutes per lb. Once it is done, remove it from the water and allow it to cool a little. If you are doing this the day before make sure you cool down the ham as quickly as possible to get it in to the fridge. Honey, Mustard Glaze

finely grated zest of ½ orange 20ml balsamic vinegar

Small bunch of rosemary and thyme salt and black pepper Method Preheat the oven to 190°C. Boil a large pot of salted water and add the potatoes, then cook for around 15 minutes. They should be half-cooked at this stage. Drain them and leave them in the colander for a few minutes to remove as much moisture as possible. Put an empty roasting tray in the oven and leave it there for about 10 minutes, remove and add the goose or duck fat. Put this back in the oven for a few minutes (this will help the finished potatoes to crispy). Carefully remove the tray from the oven and add the potatoes and garlic. Season with some sea salt and pepper. Return the tray to the oven. Cook for about 25 minutes and then shake the tray and add the herbs. Cook for another 20 minutes or so. Once ready to serve place them in a large bowl and season well with salt and pepper.

Brussels Sprouts with Bacon and Toasted Hazelnuts

Method

Ingredients

Mix all of the ingredients except the mustard together to a thick paste. Bring this carefully to the boil to allow the sugar to dissolve. Lower the heat and simmer for a few minutes until you have a dark syrupy glaze. Keep stirring to make sure that the glaze doesn’t burn.

1 large bag of Brussels sprouts

20ml water 2 tbsp. English mustard

To Glaze the Ham Place the ham on a tray, to make a criss-cross/diamond pattern on the ham, use a sharp knife to lightly score it, only cutting into the fat and not the meat underneath. Brush the ham with the mustard. Place a clove in each diamond and pour the glaze

200g bacon(rashers) cut into small strips 1 tbsp. sherry vinegar 2 tbsp. hazelnuts, toasted and crushed rapeseed oil salt and pepper Method Prepare the sprouts by taking off any loose or yellow leaves, then cut them in half and use a small knife to pierce the stem (this helps them cook evenly).


hristmas Dinner -the turkey and all the trimmings! Bring a large pot of salted water to the boil, then add the sprouts (if you have a smaller pot you may have to do this in two stages). Cook in the boiling water for about 2-3 minutes. When you pierce them with a knife you should feel little resistance with the knife. Once cooked, strain them. NB If you are preparing this the day before add the cooked sprouts to a bucket of cold water for about 5-10 minutes. Once cool place them in a container with a lid in the fridge until needed. If you are doing these on Christmas Day carry on to the next step. Heat a large pan over medium heat, once hot add a little oil and then the bacon, allow this to brown for about 2 minutes now add the sprouts. Fry them for over a high heat for 2-3 minutes. Season with salt and pepper, to serve add the roast hazelnuts.

Roast Parsnip and Carrots with Local Honey and Thyme Ingredients 600g carrots, peeled and halved 600g small parsnips, peeled and halved 3 tbsp. olive oil bunch of thyme, leaves picked 2 tbsp. local honey 2 tsp. lemon juice parsley, chopped Method Add the carrots to a large pot of boiling salted water and cook them for about 8 minutes. Repeat this process with the parsnips. NB You can do this the day before or in the morning, if so once the 8 minutes is up, add them to a bucket of cold water, leave them here for about 10 minutes. Strain them and keep in a container with a lid in the fridge. When ready to continue To roast them preheat the oven to 210°C. Place the carrots and parsnips in a large roasting tin with the thyme and salt and pepper, and drizzle with oil. Roast them in the oven for 25 minutes, tossing occasionally in the oil during cooking, until tender and

golden. Add the honey and lemon juice to the tray and return it to the oven. You might want to shake it after 2 minutes or so to allow the honey to coat the vegetables evenly. Cook for another 5 minutes or so. To serve season and add parsley.

Red Cabbage Braised in Cider You can do this anytime 4 days before Christmas Day and just needs to be reheated on the day.

pine nuts and the lemon zest and juice. Season with salt and pepper. If you have made this the day before, place it in tin foil and place in the oven for about 10-15 minutes (do this while the potatoes are cooking).

Gravy Ingredients 1 onion, finely diced 1 carrot, finely diced 1 clove of garlic

1 head of red cabbage, sliced very finely

pinch of flour - use gluten-free if you can’t have gluten

2 apples, core and sliced

100ml red wine

1 red onion, sliced 2 tbsp. cider vinegar

500ml stock - use the juice from the turkey tray

1 tbsp. rich dark brown sugar

salt and pepper

handful sultanas

Method

400-500ml cider (dry cider works best)

Once the turkey has been cooked and you have removed it from the tray, skim off the excess fat from the roasting tray. Put the tray on the hob over a low heat and add the diced onion, garlic, herbs and the diced carrot to the existing vegetables that were there while the turkey was cooking. Add the red wine and cook it until it has reduced by half. Make sure to scrape the tray to help remove all the bits. Stir in a pinch of flour and add about 500ml of stock. Cook it for about 10-15 minutes, I usually strain it into a pot so it can be warmed and seasoned with salt and pepper when needed. Once you are ready to serve the meal heat the gravy and pour it in to a warm gravy boat.

Pour in the cider until it comes about ¾ way on the red cabbage, cover the cabbage with some parchment paper and cook very slowly for 2 hours. The Billy Riordan Memorial Trust www.billysmalawiproject.org Since opening in August 2004, more than 350,000 men, women and children have been treated at The Billy Riordan Memorial Clinic in Cape Maclear Malawi. As 2020 draws to a close The Billy Riordan Memorial Trust, in common with many other charities, has experienced its most challenging year since its foundation. Volunteer medical staff primarily from Ireland and the United Kingdom, generous donations from individuals and fees from medical students pursuing their elective placements have allowed the clinic to continue and expand over the years. When Covid-19 began in March 2020 all our volunteer medical staff and elective students left Malawi. They returned to work on the front line in hospitals in their respective countries. Currently we employ three professional Malawian medical staff, one Dutch doctor, one British nurse and 35 local non-medical staff so we can continue to provide the only healthcare available to the community of 18,000 people. We do not expect the return of volunteer medical staff or medical elective students before mid 2021. In these circumstances the monthly running expenses at the clinic continue to remain unusually high. The ongoing purchasing of PPE is also an unexpected but essential expense. All donations are now used to offset these continuing additional expenses. The Covid-19 situation in Malawi remains fluid. Confirmed cases now stand at just over 6,000 with less than 200 recorded deaths. How reliable are these figures ?. The overall death rate in the country has not increased hugely but because death certificates are not generally issued and many deaths have always remained unaccounted for ….it’s difficult to get a true picture of the situation. Staff at the clinic are not seeing a marked increase in mortality in the community. Despite our efforts with education and trying to create awareness around the pandemic, mask wearing outside the clinic environs is almost non-existent and social distancing is unheard of practically speaking. The clinic is coping well so far. We are continuing to educate people about social distancing and the importance of wearing masks and hand washing. There has been a small number of patients presenting with symptoms and they are sent to Monkey Bay Community hospital for observation. The testing situation is still far from ideal but some testing takes place at Mangochi District hospital. That hospital is more than 100 kilometres from Cape Maclear with a catchment area of over 1 million people. So testing in Malawi is very much hit and miss. The new government appears to be making an effort to keep the situation under control but with vastly overcrowded living conditions, very poorly resourced medical facilities and less than 10 ventilators in the country( population 19 million) Covid-19 remains a potential disaster for the country. Recently we took a direct lightening hit on the solar system here in the volunteer centre. Electrical storms are commonplace at this time of year and being hit directly by lightening is not unusual. The clinic itself has been hit twice in the last few years. Once resulted in a fire in the roof (we were lucky not to lose the entire building) and the second time all the electrical wiring was burned out. This time it was the turn of the solar system in the volunteer centre to take the hit and it bore the brunt of the strike. The solar people have ordered the replacement parts from South Africa. Mains electricity is very unreliable so we need the solar system repaired as quickly as possible. No fans at this time of year is very unpleasant. when the average temperature is 38 degrees. However nothing in Africa happens quickly so we have to content our souls and ……wait !!! On a positive note Malawi registered a wonderful victory for democracy and the upholding of constitutional law less than 6 months ago. The overturning of the results of the Presidential election of 2019 which was deeply flawed and the subsequent holding of a fresh election, both potentially explosive events, seem to have been achieved in a fair, free and non-violent fashion. This has sent out a positive message of hope to all small African nations in the grip of corruption and political instability. The new President Lazarus Chakwera and his very visible Vice President Saulos Chilima have taken over the reins of power and so far their efforts at cleaning up the nepotism and the unbelievable levels of corruption across all aspects of official and unofficial life in Malawi appears to be supported by the majority of the citizens. On a personal note, I managed to get back to Ireland for a short time during the summer. After a long wait I got a repatriation flight to Frankfurt. I did 32 Corca Dhuibhne Beo

not intend to return to Ireland for Christmas but with the option to take a Covid test after 5 days quarantine and the airline prices now approaching normal levels, I will make the trip. We are experiencing unusually high temps here, up to 50 degrees some days. I long for the rain and wind of West Kerry !! The Trust is currently in talks with the Catholic Diocese of Mangochi with a view to entering into a partnership next year. Nothing has been committed to paper as yet but I am hopeful that we will establish a good working partnership. Having spent almost 20 years fundraising and keeping the project financed, I feel it's time to let go some of the financial pressures. My grandchildren are growing up and I miss them a lot. I want to spend more time with them while they are still small enough to think grandparents are great !!! I will continue to recruit the volunteer medical staff and oversee standards at the clinic. The Trust will continue to fund capital expenses but day to day running costs would no longer be my sole responsibility. The people pictured at the lakeside in Cape Maclear is the local "fire brigade” made up of some our watchmen. There are very many houses in the village which have straw or thatched roofs including our own volunteer centre. The clinic has a metal roof. Electrical storms pose a real threat of fire in buildings with non- metal roofs. Because the volunteer centre is in the middle of the village and close to the lake, we are tasked with storing and keeping the only fire hose and pump in working order. There is no fire brigade in the area, the pump and firehose are all we have to fight fires. If a fire is less than 30 yards from the source of water, ie the lake, we can use the fire hose and pump to fight the fire. Andrew Walker is in charge of this “"fire department”. He holds training with the local men on a regular basis.

With careful financial management we continue to provide 24 hour medical care in the community for less than €200,000 per year. After more than 16 years we still remain the only healthcare facility in the area. Without the Billy clinic there would be no access to healthcare for more than 18,000 men, women and children. In the 21st century this is both unacceptable and immoral. Due to Covid-19 restrictions we could not have any fundraisers this year. We will be very grateful for any donations made to the project. WAR IN THE WEST 1918-1923

It names the many previously unknown Volunteers and members of Cumann na mBan who put their lives on the line during these revolutionary years. Key figures come to light, among them Annascaul man Tadhg Kennedy, who built an intelligence network in Kerry that rivalled that of his mentor, Michael Collins. Said at the time to be “the best intelligence officer in Ireland,” Kennedy – whose cover was his day job as accountant at Kerry County Council – later left a comprehensive record of these years of underground activity.

By Noel Ó Murchú War in the West uncovers the hidden history of the War of Independence in West Kerry. In doing so, it offers a unique record of how the struggle for independence was advanced in a particular region of the country. Using vivid eyewitness accounts of events as they happened, War in the West brings to light: • The organisation of the Volunteers and Cumann na mBan on the peninsula – and the forces ranged against them • The strategy adopted by the IRA to clear the area of all elements of the Crown

War in the West recounts the tense and sometimes tragic incidents he was forced to deal with, and his enduring friendship with Michael Collins, who asked Kennedy to accompany him to the Treaty talks in London. It also reveals the role he played in providing Collins with intelligence on Britain’s build up to renewing the war if the talks failed, and his efforts to avoid civil war in the wake of Sinn Féin’s division on the Treaty.

IRA commanders and the men of the flying columns are also brought to life. Principal among them was 4th Battalion O/C Tadhg Brosnan, Castlegregory, who was at the forefront of guerrilla action on the peninsula from 1916 on. Having cleared his battalion area of enemy outposts by early 1921, Brosnan subsequently refused to take command of Kerry’s No. 1 Brigade in a bitter stand-off between the Kerry IRA and GHQ Dublin, and later took the republican side in the Civil War. War in the West examines the schism that developed between Kerry and the capital in the last months of the war, the strange circumstances that lay behind it, and the tragic consequences that followed in the Civil War. The book lays to rest the myth that Kerry played little part in the War of Independence. It shows, in fact, that though they faced an enemy with far superior arms and military resources, the Volunteers could rightfully claim – as they did – to have “complete control of the western districts” by the time of the Truce in July 1921.

Ambush sites are illustrated with location maps, while a fold-out map charts every major incident between 1918 and 1923. It names the Volunteers involved in all the ambushes in West Kerry as well those involved in the Glenbeigh Railway Station ambush, the Killorglin Barracks attack and the Castlemaine ambush and gives a detailed description of all these.

Justin Burgess, Máire Uí Bhriain, Shane Finn and Maria O'Mahony Shane Finn handed over a cheque for €250 to Maria O'Mahony of Gairdín Mhuire Daycare Centre recently.The money was raised through a unique collaboration with Bean In Dingle. The Dingle coffee outlet are selling a new organic coffee which they have sourced from a small family operation in Brazil. Named "Cnoc Bhréanainn", the team at Bean are donating €1 from every bag sold to the Gairdin Mhuire Meals On Wheels service. The initiative was thought up by Shane Finn on one of his regular runs up Mount Brandon, he approached Justin Burgess in Bean In Dingle who was more than willing to run with the suggestion. Since the Covid pandemic began Gairdin Mhuire have been providing meals on wheels from Dunquin to Inch and it is a service they plan to continue providing alongside their normal daycare service in the future. The Centre's remit has broadened during recent times, not only with the provision of delivered meals but also providing a prescription collection service, shopping delivery and advice on keeping active in the home. The continuation of the meals on wheels service will be made possible by €16,500 funding from Clár, support from the HSE and the ongoing donations from Bean In Dingle.

Dingle Notes Richie Williams BUSINESS CHAMBER. The Business Chamber wishes to express its sincere sympathy to the families of two great individuals and very active members of the Dingle and West Kerry business community whose deaths occurred recently. Paudie Ftzgerald played a huge part in the sporting and business development of the Peninsula and was recognised at national and international level for his successes in his favourite sport cycling. Mary Moore has been involved in a number of successful business ventures in the Peninsula most recently as General Manager and Global Ambassador for the Dingle Distillery. Good news hot off the airwaves this week that Murphys Ice Cream are to create an extra 15 permanent jobs in the Peninsula in 2021 with backing from Údarás Na Gaeltachta. Thomas O'Callaghan has taken to the recording studios again and the proceeds of his third CD titled Songs of Kerry and Others will be donated to Recovery Haven in Tralee. It promises to be a great insight on how different life was growing up in Dingle in the 1950s and 1960s. Former Lispole man Mike Joe Fitzgerald left the Peninsula to join Sr Stan in her wonderful charity works a good number of years ago. He has now recorded a CD titled Songs I Like To Sing including 15 ever popular favourites to cater for the tastes of people of all ages. The proceeds will be donated to the Irish Lung Fibrosis Association and Kerry Cancer Support Healthlink Transport group through an account in Dingle Credit Union. OTHER VOICES. Congratulations to Philip King and his crew who once again produced a very successful programme of Other Voices against all the difficulties thrown up by the Covid restrictions. Special mention for the participants who really put on tremendous performances especially without any audiences present in the various venues. The streaming of such shows may be with us for some time yet but the positive publicity for our Peninsula really helps to keep us on the tourist map all year round.

St. Joseph’s Church, Inch:

The town of Dingle was shrouded in a mantle of deep sadness at the recent passing of two much loved members of the community. Paudie Fitzgerald is remembered in the Dingle Peninsula for the gentleman and true legend that he was. Paudie was All Ireland Cycling Champion, Winner of the prestiguous Rás Tailteann challenge in the 1950's bringing honour and glory to his native County Kerry and the Dingle Peninsula. Sympathy is extended to his wife Joan, daughters Mary and Helen, sons Dominic, Patrick, Thomas and John, step-daughter Aisling, step-sons Dan, Fergal and Justin, sister Joan,sons in law Peter, Denis, Paul and Aidan, daughters in law Eileen, Edel and Louise, nieces, nephews, his 26 loving grandchildren, 2 great-grandchildren, relatives, neighbours and many dear friends.

The annual walk was as festive as ever and some people went home with a few sprigs of Gleann na nGealt Holly to adorn their homes this Christmas. The is a lovely tradition and custom and we are so glad that the the club were able to come again this year. Afterwards the club enjoyed some delicious food at The Junction Bar and Restaurant, Camp. Paudie was predeceased by his first wife Eileen, his daughter Christina and brother Tomás. Rest In Peace. The sudden death of Mary Ferriter (nee Moore) on Monday occasioned deep shock and sadness in Dingle town and throughout the peninsula and beyond. General Manager and Global Ambassador of Dingle Distillery, Mary has travelled all over the world and was a wonderful Ambassador for the Dingle Peninsula. Mary's hard work on this earth is done but her legacy lives in all she has achieved for the Dingle Peninsula at home and abroad. Brendan and Peggy McCormack, Curra, Camp and their 7 children were living in Belturbet at the time and experienced the terrible atrocity first hand. Gerry O'Sullivan Radio Kerry talked to Peggy and Brendan on Tuesday morning. Peggy and Brendan recalled the terrible events of that night, the bomb exploding outside their Chip Shop causing terrible damage to the premises and sadly resulting in the death of two young people. Small Changes: Christmas 2020

naturalists, books on wildlife gardening, sustainability and the natural world for all ages, that it would be impossible to recommend just a few. Instead I would suggest that you peruse the book shelves of any of Dingles three bookshops and try to choose something that will reflect and encourage the interests of the recipient while supporting independent booksellers.

In my experience, any conversation focused on Covid -19 usually concludes with a variation of ‘shure, aren’t we very lucky to be living here’. A close knit and supportive community following guidelines has certainly contributed to our good fortune at keeping infection rates so low but the landscape of West Kerry and the nature that it supports have been integral to maintaining our sanity for the past 9 months. With this in mind here a few ideas for last minute sustainable Christmas gifts for anyone who became more conscious of what the great outdoors has to offer this year and some which will help to enhance and support biodiversity. All are available to buy locally/in Ireland and some you could even make yourself.

Subscriptions and memberships of local and national groups supporting research and conservation of the landscape and wildlife are also a good alternative gift (see websites below as examples).

Bird Food, Feeders & Accessories People engaged more actively with nature during Covid-19 lockdown. The National Biodiversity Data Centre for example reported an increase of 60% on 2019 in the number of volunteers contributing observations and recordings on biodiversity through its Citizen Science Portal. Attracting birds into the garden is a great way to get closer to wildlife and winter is an ideal time to observe them. The Irish garden bird survey run by Birdwatch Ireland (www.birdwatchireland.ie) began on the 30th of November and runs right through to February. This website has great advice on the diversity of food and feeders you can source to attract the greatest diversity of birds to your garden as well as advice on where best to locate nest boxes. In addition to food and shelter, fresh water is needed by birds for drinking and bathing so if you are setting up a feeding station don’t forget to provide a water drinker or a bird bath. Birdwatch Ireland has an online shop on which you can purchase these items but all can be sourced locally in shops selling Irish crafts, hardware shops, garden centres and agri-business outlets. Furthermore, there are many templates online which you can use to make your own nest box and feeders. Wildlife Shelters Birds are not the only wildlife that can be supported and attracted into your garden or farmyard. Boxes can be made or purchased for hibernating hedgehogs and roosting bats for example. You can buy a lodge for ladybirds, a villa for bumblebees or create a small pond for frogs. There are so many templates available to use to make your own insect hotels which will support a range of important pollinator species. There is a wealth of information on the websites listed below or there are a number of information leaflets and books in the library that you can consult if you wish to construct these shelters. If you would prefer to buy them then most can be purchased locally. Trees and Plants Adding trees and plants to an otherwise bare garden has been reported to reduce stress levels by the same amount as 8 mindfulness sessions. Furthermore, they increase biodiversity as they provide habitats and become a food source for wildlife, they enrich the soil and they reduce CO2 levels. Winter is a good time to take hardwood cuttings of native trees, hedgerow bushes and fruit trees (with permission of course) and cuttings sourced locally are more likely to grow as they are already acclimatised to the area. If you would prefer to purchase a tree, then online suppliers such as www.futureforests.ie (Co. Cork) and www.fruitandnut.ie (Co. Mayo) have a great range of native and sustainably sourced trees and hedging plants while the many nurseries and garden centres in Kerry have a range of gift options to gift (if you have missed the last delivery dates for Christmas then a voucher for trees and plants is a good alternative). There is also the option of sponsoring a tree to be planted in a managed forest in Ireland from a number of providers i.e. www.treecouncil. ie; www.nativewoodlandtrust.ie. Experiences There is no better way to foster a love and appreciation of nature and the outdoors than to gift an experience. Again we are spoiled for choice with outdoor activities in West Kerry and vouchers are available to take part in marine tours, foraging workshops, guided nature trails, canoeing, guided hikes and walks, gardening workshops, fishing, sailing and paddle boarding but to name a few. Alternatively gift membership to one of the many outdoor pursuits clubs on the peninsula. Taking the initiative to organise regular walks, cycles or hikes with friends is a great gift for mental and physical health or if mobility is an issue there are so many beauty spots to sit at and observe wildlife from. Spending quality time with family and friends after a year of being socially distanced is the best present of all. Consultants/Specialists noted that the internal walls of the beehive hut were remarkably dry in the main and that the skill displayed in the masonry work showed a high quality of craftmanship. Builder, Michael Griffin of Wild Atlantic Way Construction agus a fhoireann, painstakingly repointed the buildings and the beehive hut with mud mortar. The buildings are favourably commented on by all that see them. We are pleased with the result and the buildings are there for all to see and appreciate. The project was certainly worthwhile and we are glad that the buildings are preserved for future generations. Joe and Helen would like to acknowledge the encouragement, support and guidance of James Byrne, conservation consultant/archaeologist with Southgate Associates and the advice and help of Eimear Connery of Teagasc. They believe the grant for restoration is a good incentive and it is such a privilege to retain the beautiful old skills and buildings of our forefathers for future generations.

Joe and Helen Buckley are participants in GLAS (Green Low-Carbon Agricultural Scheme)and as a result were eligible for the Traditional Farm Buildings Grant Scheme. A grant of up to 75% (max €25k) is available under the scheme. On evaluation of the proposed works, the Heritage Council noted that the buildings in question are of strong heritage value. This restoration would not have been possible without the help and advice of Anna Meenan of the Heritage Council and the Heritage Council grant. The restored buildings consist of a beehive hut (clochán), a dairy and outhouse and a churn stand. As part of the grant conditions, these buildings were restored and pointed using the original construction techniques and materials that is mud mortar and stone.

Leaf and Larder Keeps it Local Two sisters Selina O'Connor (Killorglin) and Monica Walsh (Lixnaw) are following their lifelong ambition and opening their own business in Killorglin. The Leaf and Larder Bakery and Delicatessen opened its doors to the public on Friday 4th December. Both grew up in a house where good quality home grown produce was readily available as well as fresh meat, milk and eggs from their nearby farm. This coupled with their mother’s ability to turn these items into tasty and wholesome meals and baking is what has inspired them from a young age. Over the past few decades, Ireland’s wealth of producers, makers, and growers have been the foundation on which Ireland’s food industry has blossomed. Both Selina and Monica feel that an integral ingredient in the transition from little known producers to artisanal heroes are businesses such as the Leaf and Larder that choose to source, stock and showcase them and their goal is to support them in more ways than by simply propping them up on there shelve. The vision for the Leaf and Larder is to use the best of local produce to produce, healthy robust salads, baked and confectionary items, freshly made gourmet sandwiches, ready to eat take away meals. There will also be a shop and this will be stocked with Local Kerry Produce and

Annascaul Notes Masses on Christmas week Masses on Christmas week will be celebrated as follows: Monday 21st in Camp, Tuesday 22nd in Inch and Wednesday 23rd in Annascaul at 7pm each evening: Christmas Eve: Camp at 6pm; Annascaul at 7.30pm; Christmas Day: Annascaul at 9.30am; Inch at 10.45am & Camp at 12noon. People are encouraged to consider going to one of the earlier masses that week as these also fulfil your Christmas obligation and it may not be possible to cater for everyone on Christmas Eve and Christmas Day. New year's eve celebrations We would like to take this opportunity to thank those who have marched in the Corca Dhuibhne-based Terra Nova Pipe Band, all members of the U.S.-based Saint Columcille United Gaelic Pipe Band: Bob Wade, Terry Harrison, Colleen Yorke, Thomas Novicki, George Hayes, George King, Matt Glackin, Greig Martin, Will King, Brian Counihan, Ben Bolger, Courtney Bolger, Erik van der Leeuw, Ken Ventry, Mike Glackin, Seán Piersen. For the last number of years the band have been traveling from the United States of America to celebrate with the Annascaul local community and visitors to ring in the new year. Bob and his Corca Dhuibhne Terra Nova Pipe Band was one of the highlights of the

Dingle Peninsula and was looked forward to by many over the years. They have led the parade over a number of years to thousands of people along with lit torches, bell ringing and county flags which brought huge crowds to the village of Annascaul. A great friendship has been built up between the Annascaul community and the pipers and will be greatly missed this year due to the covid 19 restrictions. Hopefully we can resume normal celebrations next year and we would like to wish Bob and the rest of the band a happy Christmas and peaceful new year. Stay safe and we look forward to 2021. Sandra Hickson set the record for Fastest Mile with a 40lb Backpack (female), with a time of 8 minutes and 5 seconds.Her partner Nathan Missin, going for his first world records, claimed the record for Fastest Mile with a 100lb Backpack, and for Fastest Mile with a 60lb Backpack, with times of 7 minutes and 29 seconds, and 6 minutes and 54 seconds respectively.Jason Hickson and Nathan Missin then set a new record for Fastest Mile with a 50kg Person on a Stretcher, with a time of 10 minutes and 52 seconds.The Hicksons’ successful world record attempts were in aid of the GOAL mile,
