Dingle Notes Richie Williams December has certainly been a busy month so far here in the Dingle Peninsula. Other Voices, Feile Na Soilse, School Concerts,Carol Singing on the streets, Farmers Markets, Local Craft Fairs, Choir Recitals, Music Concerts and Santa Fun Run to name but a few events all of the highest quality and all well supported by locals and visitors alike. And it continues with the Dingle New Music Choir And Orchestra Concerts in An Diseart this Thursday and Friday at 7p.m. With just a few big shopping days left before Christmas the Business Chamber appeal for your support in Thinking Local And Shopping Local.We have a great range of outlets offering a wide variety and choice of goods and services in the Peninsula and remember that every €10 spent in a locality travels two and a half times more in that same locality through wages etc. Yes your money spent locally means so much to the continued employment of so many people in your neighbourhood. The Holiday Period offers us all time to relax but some hardy souls will no doubt be looking forward to the Christmas Day Swims at various beaches around the area. Ask the usual suspects for times and venues which are also mentioned elsewhere in this edition. The Wren Groups are inviting extra members and particularly young people to join in with their groups and really make St Stephens Day another wonderful traditional days entertainment here in the Wren Capital Of The World. Come on join in the fun or at least bring the family out and support the huge effort made by all participants to collect funds for various local organisations and charities. Barely time to recover then when along comes the New Years Eve Celebrations and what an occasion that has grown into over the past few years.

The Fireworks Display at THE PIER is a great family occasion and creates a wonderful atmosphere to help us forget the year gone by and look forward to better times and new challenges in the year just dawning. To ensure the traffic does not build up we appeal to people to come as early as possible and avoid unnecessary delays at the last minute. Then at 11.30p.m.the Dingle Fife And Drum Band will start their traditional march from Bridge Street to An Droichead Beag to ring in the New Year under the Time Clock which counts down from 6p.m.that evening. The Band then take to the streets again to complete a full round of the town finishing around an hour later at An Droichead Beag to rapturous applause and appreciation from their loyal supporters. What a wonderful tradition not copied in any other town in Ireland if not in the World!!!. The Business Chamber are organising a Race Night to raise funds for the Fireworks Display and your support would be very much appreciated. Horses can be purchased at Sheehys Spar Supermarket in Green Street and the date of the Race Night will be announced shortly. Community Hall--- A number of people have asked me over the past while why Dingle does not have a proper Community HalL like most other towns and villages throughout the county and indeed country now. I really could not tell a lie and say we do not need one because in my opinion we certainly do need a purpose built hall to cater for a wide variety of activities and larger crowds than the existing facilities allow. I am not condemning any of the facilities we are so lucky to have here in town. But a Community Hall could be a focal point or centre for so many activities which are a big fragmented at present and could build up the much needed community spirit which we lack in comparison to our neighbouring parishes and many other areas in Kerry. Dingle Film Club Open to Everyone 8.45pm Tuesday Nights

The feature at the next Dingle Film Club at the Phoenix Cinema on Tuesday 3rd January will be Queen Of Katwa. The film tells the story of 10-year-old Phiona and her family

who live in the slum of Katwe in Kampala, Uganda where life is a constant struggle. Her world changes one day when she meets Robert Katende , a missionary who teaches children how to play chess.

Dingle Christmas Day Swim Nuala Moore The Christmas Day swim is a super tradition, however over the last few years we have struggled to get enough sand on Beenbane beach with the Southerly storms. This year is no different. The sand level has dropped 10 feet in the last 2 weeks and with the wind coming this is unlikely to improve, therefore it is planned to take place in Doonshean which provides more shelter. However, tradition does not trump safety and the forecast at the moment is for a very strong westerly storm so we will confirm closer to the day on Facebook or by contacting me on 086-6049656 It is planned to have the swim at 12 pm. Méan Scoil student in the top 0.06% in Chemistry in Ireland Meán Scoil Nua an Leith Triúigh 5th year student Lucy Walsh was selected to compete at the Irish EU Science Olympiad held in DCU recently. Following the exam she was ‘Highly Commended’ by the Irish EU Science Olympiad meaning she was in the top 0.06% in Ireland in Chemistry. Lucy was chosen for this event based on her Junior Certificate results where she received 10 A’s. Lucy had to study the entire Leaving Certificate Chemistry course in preparation for this event and was given huge support from her Chemistry teacher Mr. George Lenihan and indeed by her Junior Cert Science teacher Mr. John O’Callaghan. Lucy has elected to study Physics, Chemistry and D.C.G for her Leaving along with the core subjects and we wish her every success in what should be a very bright future.

Irish farmers can avoid Nitrates Stocking Rate Penalties Each year a small proportion of Irish farmers lose income by exceeding stocking rate limits in the Nitrates regulations. Farmers can avoid these penalties by taking action during the year. Options include exporting slurry during the year to less intensively stocked farms or renting extra land and submitting the appropriate forms to the Department of Agriculture, Food and the Marine (DAFM) Another option is monitoring their livestock numbers throughout the year and reducing them where there is a risk of exceeding the limit. The Department for Agriculture, Food and the Marine has encouraged all farmers who exported slurry, rented extra land or temporarily moved cattle to another holding to submit the appropriate forms as soon as possible (not later than 31st Dec) to the Nitrates section, Johnstown Castle, Wexford . To help farmers comply with the stocking rate limits the Department provides interim N and P statements informing farmers of their stocking rate from cattle to date. Those farmers that are most likely to exceed the limit based on DAFM data have received a text message outlining their stocking rate to the end of October. Any farmer that is unsure about their position should contact their local agricultural advisor or Nitrates section at 053-9163444. Drive towards BVD eradication There is now increased supports for the early removal of PI (persistently infected) calves under the national Bovine Viral Disease (BVD) Eradication Programme in 2017. The progress to-date in the eradication effort, which has seen the incidence of PIs fall by 75% since 2013, has resulted in very substantial savings to farmers, currently estimated at €66m per year, and these savings will increase further in the years ahead as the incidence of the disease continues to decline. The new support arrangements are as follows: €150 if the female dairy and dairy cross calves are removed within 21 days (3 weeks) of the first positive or inconclusive test. €35 if the female dairy and dairy cross calves are removed between day 22 & 35 (the 4th and 5th week) of the first positive or inconclusive test. It is also proposed to offer €30 towards the disposal of the dairy bull PI through the abattoir or knackery within 21 days of the first positive or inconclusive test. €185 if the beef calf is removed within 21 days (3 weeks)of the first positive or inconclusive test. €60 if the calf is removed between day 22 & 35 (4th and 5th week) of the first positive or inconclusive test. Taking account of the views put forward DAFM will impose a system of automatic restrictions that will apply 5 weeks following the date of the original positive or inconclusive test. This avoids an immediate unanticipated close down of the herd, provides a window such that animals may be retested if required and acknowledges the bio-security concerns about retention of positive animals. Automatic de-restriction will follow removal of the PI. Disease Risks associated with mixing of cattle in “B & B” Arrangements Farmers are advised of the significant disease risks associated with the mixing of cattle from different sources in housing sheds, which are colloquially called “Bed and Breakfasts. While these arrangements can offer advantages in terms of management, farmers should be aware of the significant disease risks that can ensue. Farmers availing of B&B facilities should ensure that they themselves and B&B operators take every possible precaution to minimise the disease risks to their stock and to their own livelihood. Where possible, cattle from different farms of origin should be kept separate so as to minimise the risk of disease transmission. Cleaning and disinfection and general hygiene in the B&B should be of the highest possible standards. Farmers should not risk putting their stock in substandard facilities. Movements to and from a B&B must conform to the same test requirements as sale/mart movements. She also stated that keepers moving animals to or from a B&B must obtain a Certificate of CMMS Compliance prior to movement. Confirmation of the movement must be sent to the Cattle Movement Notification Agency within seven days of the movement. All movements must be recorded on the herd registers of the sender and the receiver. The notification of movement and proper record keeping are paramount in the event of a disease outbreak where prompt tracing of all potentially exposed or infected animals is essential. Also, in advance of sending animals to a “B&B”, a farmer should agree with the B&B owner the arrangements to be to put in place in the event of the animals being disclosed as reactors in the B&B and/or sent directly for slaughter from the B&B. Such agreements should take into 12 West Kerry Live

account the procedure for accepting valuations assigned to reactor animals before removal from the B&B to a meat factory as well as payment arrangements with the meat factory. In relation to Brucellosis, the mixing of pregnant female cattle should be avoided. The Department’s advice at all times is not to place pregnant female cattle into a B&B situation. Where this is unavoidable, farmers should minimise the risk by seeking out facilities where they will be the sole occupier. It is a legal requirement that all eligible animals must be blood tested for Brucellosis within the 30 days prior to movement into and again before moving out of the B&B. A post movement test is also highly advisable and indeed is essential in order to be considered for a higher level of compensation in the event of disease breakdown. She also stressed that, as always, pregnant animals should be isolated until after they have passed a post-calving blood test for Brucellosis. For disease tracing purposes and to fulfil EU requirements, any calves born on B&B holdings must be tagged and registered by the keeper of the B&B, using eartags appropriate to the holding of birth - i.e. the B&B holding. GLAS Payments With the closing date for GLAS III come and gone, the Department are as busy as Santa’s elves, trying to get GLAS I and II payments. Initially they were supposed to be out on 1st December, and then on the 5th, and even then on the 19th December. It is not the 20th and we are going to print, but there is no sign of the payment, yet. DAFM still maintain that it will be made before Christmas, or the end of the year, at any rate. Here’s hoping, and when you get it, don’t forget to spend it. And pay a few bills. Keep the suppliers happy, too! ........and Finally. With Christmas almost here, everyone is going fast and furious, getting ready to celebrate Christmas, the Birth of the Baby Jesus, The coming of Santa, and meeting with friends and family. As the old Loudon Whitewright III song goes, “Christmas comes but once a year, but goes on for two months”. But, what about it? It’s fun! So, let it last, and have some fun. We have had a hard time over the past few years, and are making a recovery. Spare a thought for those 100 years ago today who fought bravely for our freedom in the trenches and on the streets of Dublin. Both should be remembered. Some such as Emmet Dalton, even fought on both fronts, and served both causes, to ensure that we remained free today. Ireland and Europe 100 years ago was much different from what it is now. The Keiser had his own view of how to start a united Europe, but this was nothing like the 1973 EEC Referendum. In those days it was tougher politics. Christmas 1916 occurred right in the middle of the First World War. The year 1916 was an appalling one. Over one million soldiers had died in the epic battles of the Western Front by that time. At Verdun and at the Somme, the armies of Britain, France and Germany had been involved in titanic struggles. In the case of the Somme, which began on July 1, 1916, over 60,000 British soldiers were killed and wounded on the opening day of the battle. The Battle of the Somme would peter out into a bloody stalemate in November, and with very few of the overall objectives reached, a sense of futility was beginning to settle in the minds of some. That year in Ireland, Pearse, Connelly, McDiarmuid and about 1,600 more rose in rebellion in Easter 1916, which ultimately saw the beginning of the long struggle for Irish self-determination. And so, at Christmas, of that year, they were in make-shift prisons in Frongoch, Wales, freezing and even hungry. In other theatres of war involving the British there were no great advances. In the Middle East, the British Army was fighting the Turks, as they were in Greece at Salonika, as were the Italians in the Alps. German Uboat sunk many British merchantmen, and by the summer it was reckoned there was only six weeks of grain supply. The French had taken huge losses that year, the Russians were on the brink of collapse and America was yet to enter the war. Christmas 1916 was a year of food shortages, bad news from the front and the worst weather for over 30 years. It must have been a miserable time. The people of the area were now engaged in a total war and news from the front was eagerly sought. But they emerged to tell the tale, and to live, and have children, and those children did the same, and the same and the same, and we are here now. So before you blow out the Christmas Candle, on Christmas Eve, spare a thought for those who suffered in the past, and those who suffer today. And hope that all this suffering is alleviated, because we know it will never be gone for good. Pray that they learn to cope, and that someday, their time for peace will come. Peace to You ALL. Then he’d move on to our land and do Quinn’s land and so on and maybe spend three weeks around the village and then move off to some other village. He was wise enough not to trap all the rabbits so that he’d be needed again in a couple of years. People looked forward to him coming because he’d have news from everywhere and there was nobody to contradict him!

Growing up in Dúnsíon I suppose at the time you either grew up on the farm or you were connected with fishing. There was hardly any industry around at the time so it was very natural to work on the farm. We were looking at fields all our lives and the young people helped out from a very early age. I always liked the saving of the hay. It was very clean work and there was some finality about it - getting it up before the rain into the wines or the cocks. There was a sense of victory about that - it was a race against the clock. My father and all the old timers were good to feel rain on the breeze as they used say. They might climb up to the high fields and look back at Mount Eagle and if there was the least little cap on Mount Eagle that would mean it would rain before nightfall. Gach aon duine ina bheirt, they would say, every man to do the work of two now and we’ll get it finished before the rain. The day of the thrasher was a great day as well because all the neighbours came. A day like this was called a meitheal. That’s a terrific word and I don’t think there’s a word in any other language that can encapsulate the meaning of it. Everybody came to help and everybody had a part. There might be anything up to twenty people there and it would be a social day, a day of great fun and also a day of great gaisce. Some people would want to prove they were as good as three men by how quickly they could fork the corn it into the big thrasher and lift twentystone (127kgs) bags of grain. The way they did that was to back in under the bags and maybe two people would lift the bag onto their backs. I saw people carrying those bags up stairways and then spreading the grain out on a loft floor. Nobody would give in but, fortunately, I never volunteered to go under a twenty-stone bag! We had stacks that might be there for four or five weeks before the thrasher came and if the weather had got cold you’d find rats had made their nests around the bottom of the stack. So as the stacks came lower and lower and as the sheaves would be thrown into the thrasher the kids and the dogs, and maybe somebody who didn’t like working would be in charge of the dogs and the rats would be jumping out. So the dogs would get them and if they didn’t the rats would make for the next stack. I remember in the field outside where we’re speaking now there was a meitheal one time cutting corn. Three horses, rest one horse, the other two under the machine, two men on the machine cutting and sheaving and I remember counting seventeen men binding all the way around that field that day. I was about seven years of age then and I thought I was as good as anybody there. I wasn’t, obviously, but the feeling was there on the day of the meitheal. In those days you met everybody because you walked. We might be walking to town some days and we’d go by Baile an tSagart and you’d meet the Sheehys or the Kellihers, the Rohans or the Connors. If you went the Bóthar Dubh you’d meet the people from Bin Bán, the Leahys, the Ferris’s, the Rayels and you had time to speak. But the coming of the motor car changed all that. You just might salute them on the road. I was going to school during the War and there was a great scarcity of meat in those days in England so rabbits were big business. So on the way to school we’d check the snares and the traps and if we had a few rabbits after the night we’d take them into Dingle and sell them before going into school for about one shilling and sixpence which was big money at the time. Some people made as much money out of rabbits as they made out of cattle at that time. There were plenty of rabbits down around the sandbanks near Dún Síon strand and up along the cliffs. Before the rabbits became valuable a farmer had to hire somebody to trap them. A man used to come from Inch every two years. He was known

We always looked forward to the Wren’s Day. We’d set off walking in the morning maybe before seven. I remember heading off with twenty people from the village. We even went to the trouble one year of making our own uniforms. Máire Quinn made them for us out of flour bags and dyed them red. We’d start in Bin Bán, then on to the lighthouse where the Sullivans lived. It was out of the way but they’d be offended if you passed by without calling in. From there to McDonnells in Lough and up along the foot of the hill and then down to Sheehys late in the day and finally Dún Síon, totally exhausted. But I remember one day it was a disaster because we’d have been wanted at home. The greatest storm that ever blew was on the night of Christmas Day - I can’t recall exactly when but it was in the 1940s. We were gone with the dark the next morning. But what we didn’t know was that when the tide went out the Short Strand was absolutely black with seaweed. The storm was so bad at sea that they say the seaweed has never grown properly since at sea. It was stacked up on the strand so when all the elders woke and saw it they had to tackle horses and try to save it because it was such a valuable fertiliser. They were lamenting all day that all the young men and young fellas weren’t there when they were wanted. We could see this ferocious activity down on the strand when we were going along that day. There must have been forty horses there and they all drawing and piling it up and getting it in to safety. It was the greatest sight I ever saw. It was actually black when the tide was out. We had a right-of-way through the racecourse from Dún Síon and the right-of-way is still there. There are a few steps onto the fence at the side of the road and I remember my father always walked it once a year to maintain that right. I’d say the right-of-way was there on account of the pre-Christian burial ground there as well. The first sign of the races in those days were not the horses coming but the travellers or the tinkers as we called them. Of course, they were all tinkers by trade. They mended the buckets and things. They’d be gathering for two weeks before the races and we knew every one of them like Danny Coffey and Mikey Coffey, Patsy Sheriden, Rosanne and Mary O’Brien. People would be glad to see them coming to the house because they were tradesmen, musicians, and maybe with no inclination to work but basically great fun. They came to the races with their little stalls and tried to make a few shillings. Rosanne O’Brien’s mother used always say she was born at the races but I think she was born in Dún Síon in an outhouse belonging to the Farrells and she was born on the morning of the races. Rosanne was a lovely looking girl and her mother used always say that the racecourse in Dingle was Rosanne’s address! They were different times, they were friendly people and they were welcomed and they stayed with the local people. There was a golf course where the racecourse is now and the little gate lodge going in to Ballintaggart House was the clubhouse and there’s a photograph of all the members taken outside that gate lodge around 1926. Then they moved the golf course to Dún Síon, a nine-hole course, and it was in use from about 1930 to 1970. Tim Kevane was the green keeper there and you wouldn’t get the greens cut as well in Augusta National as Tim Kevane did in Dún Sion by hand. He had a roller that was pulled by a donkey. About a year ago Pat Ryle from Dingle was captain of the Greystones club and he found a photograph in a drawer one day of Tim Kevane driving his donkey and roller along the green and it was a mystery to him how it got there. We used to have great games of golf there. We often went to dances in Lispole by boat. We’d go across to Tobar and leave the boat there and walk to the dance. There used to be a huge dance on the 29th of August every year, a very late dance. A crowd of us went by boat and came home by boat around five o’clock in the morning and Thomas Kennedy noticed that the net was missing from the rocks where it was always spread out. A most unusual thing happened on that night, it was a very fine night and fish almost gave themselves up on the strand. There was a story that they were following some sort of a fly and that they were stranded in a big shoal. So, just like the Wren’s Day, it was only the elders that were left in the village and they came to get the boat and the boat was gone. But the net was there and they brought it down on their shoulders and waded out into the water and hauled enough fish to feed themselves for the winter. It was like the Sea of Galilee but there weren’t any prayers said for whoever was gone with the boat!

We took part in a wide range of activities which included, Art, Chess, Singing, Music, Swimming, Soccer, Rugby, Gaelic Football, Skittles, Project and Atheletics. We had great success in many of these compititions with the highlights being the gold medal won by Laeth Foley in the U12 Ball throw and the Pewter medals won by our Project team at the National Finals held in Athlone.

Christmas is a time of remembering when we recall and celebrate the birth of Jesus, the Lord and Saviour of the world; an event that changed the course of human history. Christmas is also a time when we recall important and significant moments of the year past; and this Christmas, in the Diseart, our thoughts, and the memories they evoke, are dwelling on the life of Monsignor Padraig O’Fiannachta who sadly left us to receive from God his eternal reward on Friday July 15th at the West Kerry Community Hospital. On behalf of members of the Board and Staff of the Diseart I would like to offer our deep sympathy and condolences to members of his family and to friends who are still grieving his sad loss and to pray that the Lord will send his Spirit to comfort and console them. Since his death his scholarship and academic achievements have been widely acclaimed, so there is no need to dwell on them here. However, we would also like to acknowledge and pay tribute to the posthumous publication, by An Sagart, of Pope Francis’ Encyclical Laudato Si: Care of Our Common Home; which was launched at the Diseart on December 15th by Mícheál de Mórdha. This was a first; the first publication of a Papal Encyclical in the Irish language, commissioned by the Bishops of Ireland; and also the first publication of An Sagart by its new editor Tadhg Ó Dúbhshláine. Monsignor Pádraig had a deep, passionate love and respect for nature. In the spirit of early Irish scholarship he saw God’s presence in all things; magnificently displayed in the workings of nature, constantly giving glory and honour to its creator. Nature for him was the source of his spirituality and the inspiration for his poetry and writings. He believed that the abuse nature and misuse the natural environment so characteristic of our age was a grave sin against God and against humanity. He was so delighted with the publication of Laudato Si and its message that the task entrusted to him by the Irish Bishops was truly a labour of love. The Irish language is so rooted in nature and in its love for God, and is so rich as a result, that I jokingly suggested to him that his work of translation would be akin to changing water into wine; he smiled but didn’t comment which indicated to me that he saw a grain of truth in what I said. We are very grateful for and indeed very proud of this his final work, of love, and we wish the publication the wide readership it merits. It was crackling and glowing as I sat on my seat It had natural convection as well as radiant heat The house was warm for the first time in years I was so happy I almost shed tears My Cremur Stove burns coal and wood I stand back in awe like anyone should.

This was a fantastic opportunity to engage with other countries, learn new ways to attract tourism to the area and further our local community and Ireland as a whole. There were participants from Italy, Romania, Germany, Croatia, Spain, Turkey, Latvia, and Bulgaria as well as Macedonia.

This year’s festival was named by International Travel Blog Trivago as one of the top 6 things to do in UK and Ireland during the Easter Break. The Irish Times also encouraged people to attend the festival. Plans are well underway for the Cloghane-Brandon Hillwalking and Music Festival 2017. Festival Organisers are hoping to add to the action-packed weekend by introducing a Mindfulness Hillwalking event and encourage more families to get involved in the family walks. The 2017 festival will be taking place on the 15th and 16th and 17th of April 2017. The festival details will be announced early in 2017.

Representatives from all of the State Agencies met in Halla Le Chéile on the 01.09.2016 for an historic meeting. Delegates from NEWKD, Údarás, Fáilte Ireland, Kerry County Council and Brendan Griffin T.D met to show their support for the 5 Year Community Development Plan. Following the completion of the plan and negotiations with the various State Agencies (Kerry County Council, Údarás na Gaeltachta, Fáilte Ireland, local Politicians and Meitheal Plean Teanga, Dingle Peninsula Tourism Alliance and NEWKD) it was confirmed that Mount Brandon Base Camp will be the driving force for the implementation of the Community Development Plan. It is estimated that Mount Brandon Base Camp will be opened in 2018. The Irish Times encouraged people to attend the Felicity McCoy Book reading which was a great success

Corn Uí Rinn Talent Competition had people travelling to enter the competition. There was a wide variety of talent on display, from ballet, to piano and Irish dancing. The talented children also took part in Tinteán Ceoil.

The Tug of War competition saw the two parishes getting very competitive; the competition was so high there was not a sinner in the pub, everyone crowded onto the beach to see who would be victorious.

The Curragh Display competition attracted visitors from all over the world to see the traditional rowing race. The weather did not dampen the spirits of the visitors.

The play performed on the opening night by Frank Houlihan and The Hy Breasal theatre group continues to be a success.

Glór na Gael celebrated the years Fr Leahy spent in the parish on Saturday night. It was a fantastic event!

Students from Meán Scoil nua an Leith-Triúigh, Castlegregory know the meaning of compassion. These kind, generous and thoughtful students have yet again surpassed all expectation by raising a whopping €3,800 in aid of Cancer Research by participating in the Shave or Dye event. Many students and teachers, including Principal Aodán MacGearailt, dyed or shaved their hair for this most important cause. Some female students also cut their beautiful long hair for The Princess Trust. The Princess Trust takes donations of hair which will be made into hairpieces for children suffering hair loss through serious illness. The students who participated and their teacher Miss Sallyann Leahy cut 7" off their hair. This was then sent to London where it will be made into wigs for children. This event means so much to little kids who become self conscious about their hair loss, one less thing to worry about while battling serious illness. Miss Leahy who organised both events stated that the students of Meán Scoil can be very proud of their achievements. She would also like to thank Louise Kelliher who dyed, shaved and cut all the volunteers hair. Without Louise's help these events would have not happened. Sallyann also wanted to acknowledge the generosity of the school community and the community from Brandon to Camp and its surrounds. A phenomenal amount of money has been raised. Local Pop/Funk band Strange Attractor have been supporting the work of Dingle based charity Hope Guatemala for the past 2 years with the sales of their debut album "Wacky World". A portion of each album sale goes directly to the charity to help fund the vital work in a Children's Nutrition Center in the impoverished region of Chimaltenango. They plan on keeping this relationship going with their upcoming single releases due for next year. 2017 promises to be very successful for the group after this years shows at Electric Picnic, Cork Jazz Festival, Other Voices and sell-out shows in venues, such as the Sugar Club, Dublin. They play Nelliefreds in Dingle on the 29th of December. Your Complete Guide to Cooking the Christmas Dinner Mark Murphy - Dingle Cookery School

I would like to take this opportunity to wish all the readers of West & Mid Kerry Live a Happy Christmas and New Year, thank you for reading my recipes and I always love it when I meet people on the street and they tell me they tried a certain recipe and loved it. Method Place the turkey on a large tray. It is good to put some onions, carrots and herbs under the bird as this prevents the turkey from sticking to the pan and also the vegetables will soak in juices, which will taste good when making the gravy. Now you should be ready to cook the turkey using the timings from above.

Christmas dinner should be a very special meal so if you follow this guide it will help you to have a successful meal without the stress. The two best pieces of advice that will help you enjoy cooking the Christmas dinner are: 1) Make a plan, write down a list of everything that needs to be done and 2) Plan to have the turkey cooked about an hour or hour and a half before you plan to serve it (just wrap it up well in foil and keep it in a warm part of the kitchen). During this time you have the opportunity to finish the ham, potatoes, roast vegetables and sauces. In the following I have included a cold starter (go for a cold starter and make it the day before) and then the guide will take you through the rest of the cooking from the turkey all the way to the trimmings.

Prawn and Avocado Salad - starter

Ingredients

15-20 prawns Poaching Liquid: to cook the prawns (you can use this to poach any shellfish or whitefish) 150g fennel, diced 150g celery, diced 100g leek, finely chopped 1 garlic clove, sliced 200ml white wine 100ml orange juice 1 tsp. orange zest 1 tbsp. fennel seeds

dash of Tabasco sauce 1 avocado, finely diced salt and pepper Method In a large bowl mix all of the ingredients together and season well with salt and pepper. Serve with some shredded cos lettuce.

The Turkey Cooking the Turkey Before you start, make sure you have a large tray, which is big enough for the turkey, and ensure the tray (and the turkey) fit in the oven. It is worth buying a temperature probe to test if the turkey is done. Before you start get the exact weight of the turkey. Make sure the turkey comes to room temperature, this means having it out of the fridge at least two hours before you want to cook it. Before you cook it, rub the skin with olive oil and sprinkle with salt and black pepper and some chopped herbs such as thyme or sage. Have the oven turned on to 180ºC before the turkey goes in. People always have different views on the stuffing, whether to stuff the bird or to make stuffing and leave it out. My advice would be to cook the stuffing separately to ensure that there are no uncooked juices of the turkey in the stuffing and I always find that when I keep the stuffing separate I can adjust the seasoning more easily. Cooking Times for the Turkey I have had a look at several charts and cooking times but I think below is the most straightforward guide to follow providing you with perfect results: If the turkey is over 4.5kg/10lb, calculate 20 minutes per kg + 90 minutes. If the turkey is under 4.5kg/10lb, calculate 20 mins per kg + 70 mins.

The Ham - This can be done the day before Ingredients

1 ham (smoked or unsmoked) handful of cloves water Method Place the ham in cold water and bring to the boil. Change the water and repeat, then turn down to a simmer. Allow 50 minutes per kg or 20 minutes per lb. Once it is done, remove it from the water and allow it to cool a little. It is best to remove the outer layer of skin while the ham is hot and then use a sharp knife to score the fat in diamond shapes and place a clove in each diamond. Your ham is now ready to be glazed. If you are doing this the day before make sure you cool down the ham as quickly as possible to get it in to the fridge.

Honey, Mustard & Sherry Vinegar Glaze Ingredients

2 tbsp. honey 100g demerara sugar 50ml Madeira or a dry sherry 1 tsp. mustard powder 25ml sherry vinegar Method To make the glaze, put the sugar, Madeira, sherry vinegar, and honey into a pan and stir over a low heat. Whisk in the mustard powder. Bring this to the boil to allow the sugar to dissolve. Lower the heat and simmer for a few minutes. Until you have a dark syrupy glaze. Keep stirring all the time to make sure that the glaze doesn’t burn.

Method Put all the ingredients except the prawns in a pot and bring to to the boil and simmer for about 10 minutes, then add the prawns and poach them for 3-5 minutes. Remove the prawns and allow to cool. Chop them finely.

To test if it’s done, make sure the juices run clear when you pierce the thigh where it meets the body and use the temperature probe to check if the temperature reaches 75ºC. If not, put it back in the oven for another 20 mins, then test again. The next step is one of the most important steps to prevent your turkey from drying out. Once you are happy that the turkey is done take it out and put tin foil over it and leave it in a warm place for at least an hour or so. This will give you plenty of time to get everything else finished off. Ingredients

Place the ham on a tray and pour the glaze over the ham. Put this in a hot oven (210°C) and bake for about 30 minutes.

For the salad

1 turkey

3 carrots, roughly chopped

small bunch of tarragon, finely chopped

1 bulb of garlic, split in half

goose fat or duck fat

1 tbsp. mayonnaise

Plenty of herbs such as thyme, sage and rosemary some chopped and the rest left whole

salt and black pepper

1 tbsp. coriander seeds 1 tbsp. ground black pepper 1 star anise 2 tbsp. salt 700ml water

To Glaze the Ham

Crispy Roast Potatoes Ingredients 1.5kg large maris piper potatoes or roosters


Method Preheat the oven 190°C. Peel the potatoes, then cut into quarters, and place in a bucket of cold water. This can be done the day before. Boil a large pot of salted water and add the potatoes, then cook for 15 minutes. They should be half-cooked at this stage. You can now drain them and leave in the colander for a few minutes to remove as much moisture as possible. At this stage place the tray in the oven with goose fat or duck fat. Shake the potatoes in the colander to roughen the edges, Remove the tray from the oven and add the potatoes and place back in the oven. After 20 minutes you can add the rosemary, thyme and garlic. Continue to roast for a further 20 minutes or so shaking them every 5 minutes to cook evenly. Season with sea salt and black pepper.

Ingredients

100ml ruby port 100g fresh cranberries 75g brown sugar finely grated zest and juice of 1 orange ½ cinnamon stick 1 star anise Method Place all the ingredients in a pot and cook over medium heat for about ten minutes. Make sure that there is some liquid still in the pot so that the sauce does not burn, if it is drying up add a little water or a little orange juice. Taste and adjust the seasoning if required. Remove the cinnamon and star anise and place the sauce in a blender and blend until it is the consistency required. Place this in a jar and keep in the fridge for up to one week.

Method In large pan add some of the butter and cook the onions slowly without colour for 4-5 minutes. Add the garlic and herbs, then add the mushrooms and leeks and cook for further 5 minutes. Add the remaining butter and breadcrumbs. Ideally you want to keep the mixture moist.

Cook the ham and remove it from the water and score it

2 tbsp. hazelnuts, toasted and crushed

Method Heat oven to 210ºC (you can cook this when you are glazing the ham) Cut the bottom off the Brussels sprouts, and slice each in half top to bottom. Heat a pan over medium heat; once it is hot place the sprouts cut side down in one layer in pan. Put in garlic, and sprinkle with salt and pepper. Leave the sprouts here until they start to brown. Once they start to brown add a little butter and put them in the oven. Roast them in the oven for about 15-20 minutes remembering to shake them every 5 minutes or so. When they are done season them well and add in the vinegar, toss the hazelnuts over them and serve.

Roast Parsnip and Carrots with Local Honey & Thyme Ingredients 600g carrots, halved 600g small parsnips, halved 3 tbsp. rapeseed oil Bunch of thyme leaves picked 2 tbsp. local honey 2 tsp. lemon juice chopped parsley Method Add the carrots to a large pot of boiling salted water and cook them for about 8 minutes. Once they are par-cooked place them in cold water. Repeat this process with the parsnips. (this can be done the day before if you want) To roast them preheat the oven to 190°C. Place the carrots and parsnips in a large roast-

• Have the ingredients ready for the glaze • Peel the potatoes and keep them in water • Do the same with the carrots and parsnips •

On Christmas Day: •

Bring the turkey to room temp.

Cook the turkey

500ml stock - use the juice from the turkey

When the turkey is done allow it to rest for up to one hour or more. Once the turkey is out of the oven turn the heat up and glaze the ham and return it to the oven

Prepare the sprouts

Method Once the turkey has been cooked and you have removed it from the tray, skim off the excess fat from the roasting tray. Put the tray on the hob on a low heat and add the diced onion, garlic, herbs and the diced carrot to the existing vegetables that were there while the turkey was cooking. Add the red wine and cook it until it has reduced by half. Make sure to scrape the tray to help remove all the bits. Stir in a pinch of flour and add about 500ml of stock. Cook it for about 10-15 minutes, I usually strain it in to a pot so it can be warmed and seasoned with salt and pepper when needed. Once you are ready to serve the meal heat the gravy and pour it in to a warm gravy boat.

This time will allow you to cook the vegetables, including the potatoes.

Q: Anonymous, Maharees. I had my satellite dish replaced early this year by my service provider, but it is already beginning to look like an ugly brown stain on my house. Is there anything I can do? A: Not a lot you can do with that one apart from replace it with a quality dish and just as importantly a quality bracket. The dish you receive as part of a subscription service is almost always an economy dish that will quickly become a "brown stain" on your house. It is very difficult for you as a customer to know if the dish you are getting is good quality or not. Even requesting a particular brand may not do, as brands tend to make both premium and economy models. Also, it is difficult to tell them apart visually until it is on the wall for a few months. Some dishes are advertised as suitable for seaside location because they have a plastic frame, often you will be left with the plastic frame, the tin disc on it has rotted around its anchor bolts and gone with the wind. There is one dish type that you can check for yourself if it is genuine. These are fibreglass dishes which have stainless steel frame and bolts. The "disc" will look like plastic and a magnet will not be attracted or only slightly attracted to the metal parts depending on the grade of stainless steel used. These fibreglass dishes are often twice or more the cost of a quality galvanized dish. However, the simplest way to ensure you get a quality good value dish that will work and look good for a reasonably long time is to get a good honest installer to put it in. But how do you know who is or is not such a person. Talk to a couple of neighbour who seem to have good dishes and are happy with the service provided by the person putting it in, or ring saorview, they have a database of installers who are competent and reputable around the county. The Blasket Centre Archive received a very valuable and interesting bestowal during the year when the relatives of the late Canon Jack McKenna, Dingle, donated a collection of material amassed by the Canon during his lifetime of study and research to the Archive. Amongst the material are documents, manuscripts and notes, facsimiles of historic documents, along with a collection of audio and video tapes and photographs taken by Fr. Jack himself. The collection has been catalogued and is now available to anyone who wishes to spend some time studying it.

Fr. Jack McKenna was born in Dykegate Street, Dingle, on the 6 March 1920. He spent his youth in his native town, and was ordained a priest in 1946. Apart from his vocation and his studies on local history his passion was Gaelic football; he won Munster titles with the Kerry minors in 1937 and 1938, and was a member of the famous Dingle team who won numerous county championships during the late 1930s and 1940s. Fr. Jack won 5 county titles during that period. Fr. Jack served as curate in Paróiste an Fheirtéaraigh under Fr. Tom Moriarty, was Chaplin in Coláiste Íde and was curate in Dingle Parish for 2 years. He transferred to Abbeydorney, and later to Sneem, and finally to Castletownbere in Co. Cork. He was an authority on the history and heritage of West Kerry. He authored 2 books – Dingle and Dingle: Some of its Story – on this subject, and the collection includes some of his study notes and material gathered as research for these books. He passed away in January 2013. The collection includes transcripts of letters written during the latter part of the 19th century by the Dingle Antiquarian John D. Nagle; some articles and papers written by Fr. Jack

himself, including reminiscences (in Irish and English) of his time serving the people of West Kerry as a priest (amongst them a beautiful account of visit the Blasket for the Station Mass); documents relating to some of the better known historical families of the area such as the Rices, and a great many of documents relating to historic events and occurrences. The audio interviews with some of the local people, such as the aforementioned Fr. Tom, Mrs. Crean and Stephen Falvey, contain a wealth of information. His collection of video tapes is also very interesting; they include recording of important events such as the visit of President Childers to Dingle and the visit of President de Valera to the town to mark the 50th anniversary of the death of patriot Thomas Ashe in 1967, the pageant held in Dún an Óir to mark the 400th anniversary of the massacre of 1580, and various other local events. The Blasket Centre is very grateful to the relatives of the Rev. Canon Jack McKenna for their very generous gesture in donating the material to the Archive. The Archive aims to foster study not only of the Great Blasket itself, but of the history, lore, culture and heritage of the Dingle Peninsula in general. The Canon Jack McKenna Collection is a fantastic addition to the Archive, and we would welcome anyone who is interested in West Kerry to spend some time studying the collection. A Year in Dingle

imagine the camaraderie a hundred years ago , when there was no guarantee of a morrow.

In May I saw him, the harmonious black sleek God of the harbour; Fungi. That vision of otherness made the sensual spiritual experience of Féile na Bealtine complete, the fire was lit in my heart and soul. Summer had come and I was here in a writers paradise, in my mind Daingean Uí Chuis should be twinned with Hydra, Greece, where Mister L Cohen meandered daily down to the harbour for morning coffee before heading back to Marianne, type writer and guitar.

All I had was my memory stick and my memories when I set out on foot from Annascaul to Dingle town. In was an auspicious date for the last leg of the journey, the twentieth day of January; the first day of Aquarius my star sign and the first day of my move to Dingle from the Big Smoke. Weather wise, a high pressure cold front had settled coating the Macgillycuddy reeks in a dappled white and Dingle Bay with a azure sheen. Walking; my rebuff to globalisation and its 'time is money principle', I felt the freedom of the nomad, my footprint was light. When I reached the remnants of the Lispole narrow gauge railway viaduct I could feel something, a gravitational pull, a recognition of destiny, the end of the road was near, metaphorically I tore up the tracks behind me. To quote this years poet laureate “I came in from the east with the sun in my eyes” and I did. As I crossed on to the old Connor Pass road the sun was in fact in my eyes and Daingean Uí Chuis was waiting yonder, like a first love, a Cathleen Ní Houlihan: her smell of wild flowers and sea shore triggering evocations of promise and romance, the mist rolling across mount Eagle, peninsula's end: her shawl. There is something about the people of Chorca Dhuibhne; the essence of Irishness, that deep tradition of welcoming, the default poetry in their idiomatic speech. It seems they still have folk memory and connection to the land; more gentle, more confident more pragmatic more accepting and their capital city Daingean Uí Chuis is a metropolis where artists thrive in the rich cultural milieu. I came here to write the book.

As each summer month unveiled itself a festival was close behind, I volunteered as a bike race checker for the DAR challenge in June. July August and September brought food fairs, regattas and folk music. When the low Atlantic mist and the driving western rain overstayed their welcome, I kept on telling myself not to feel too morbid and got some writing done. Exhilaration and wonder is the only words I have to express at the sight of the clear early morning sky, post rain and mist, with yellow super moon gently descending behind the hills due west, and still sinking beyond the Three Sisters. In this a place of geographical certainty the same moon re-appears over Dingle Bay at night fall. The year was in its final quarter when I had to edit, slash and burn. Out of the ashes I put meaning to my work, a type of synopsis to be performed, the living word. Think fire side on a winters night, think singer and song.... I'm going to start again/In a town that has two names/A stream a hill a pier the sea/Somewhere I can breath and feel free. As the days turned into weeks and the changing arc of sunrise and sunset became longer, I immersed myself in the creative wellspring. Stepping out of the garret for rest and recreation. The streets had a festival for every occasion. February had its Burlesque show in the Grey Lane Bistro, then March and the spring equinox. During Lá Fhéile Pádraig I fell in and followed in group rhythm the pipe band as they injected the streets with the timbre of Irish marching songs. The flash of their bright apparel heralding the new season of more light and hope. And in April on Easter Sunday at the grotto on the Mall stood solemnly in communion as the Proclamation reading was re-enacted, the mood was one of homage and magnanimity: to the fallen and makers of history who craved freedom. I took an active role in the revolution of commemoration by walking again, this time through the night on An Siulóid Mór in the foot steps of forty seven volunteers who took that long march from Baile an Fheirtéaraigh to Tralee via Dingle to be with Roger Casement. It was a night of great camaraderie. Can your

Obituary The death of Pat (Paddy) Healy, Meenascorthy, Camp occurred on Saturday, December 10th. A dedicated Community man and a GAA man all of his life, Paddy gave over 30 years sterling service to Castlegregory and West Kerry GAA, being former Chairman of Castlegregory and honorary President of West Kerry GAA up to the time of his death, he was also trustee of the local Castlegregory GAA pitch. A Corkman himself , Paddy met and married a local Castlegregory woman Mae Rohan from Stradbally in New York returning with Mae to West Kerry in 1966 where the young couple settled easily into farming and bringing up their family in Meenascorthy, Camp. Paddy was highly respected in the farming community too and he was a great neighbour. Community and GAA guard of honour attended on both days and the American Flag, symbolic of his services to the United States draped his coffin as did the local Castlegregory GAA Jersey. The huge attendance at the removal from Lynchs Funeral Castelgregory to St.Marys Church, Castlegregory and again at the requiem Mass and burial in Killiney graveyard on Monday gave full testimony to the esteem in which Paddy was held in the local community of West Kerry and beyond. Paddys wife Mae predeceased him. He is survived by his sons, John, Patrick and Matthew and daughters Maureen and Joan, sister Kit and brother Sean, Grandchildren and extended family, relatives and friends to whom sympathy is extended. Lisa Smidtke of Aurich, Germany and Ballygarrett,Camp passed away peacefully on November 12th. in Aurich. Lisa loved her home in Camp and she and her husband Klaus made many friends here. Housing Assistance Payment Question How does the Housing Assistance Payment work? Answer The Housing Assistance Payment (HAP) is a form of social housing support for people with a long-term housing need. It is administered by local authorities and will eventually replace long-term Rent Supplement. You must be on the local authority’s housing list (which means that you qualify for social housing support) to be eligible for HAP. HAP is being introduced in phases. From March 2017 the final phase will bring it fully into operation in the last three local authority areas – all in Dublin. Under the HAP scheme, you find your own private rented accommodation. Although the local authority administers HAP, you will not be a local authority tenant. The rental agreement will be between yourself and the landlord. This means that you will have certain rights and obligations, as will your landlord. The rent must be within the HAP rent limits, which are based on your household size and the rental market in your area. Additional flexibility is provided where a household cannot find suitable accommodation within the HAP rent limits. The Homeless HAP Pilot in Dublin offers further flexibility for homeless people. The local authority will pay your landlord directly and you will pay a differential rent to the local authority. This means that the amount of rent is based on your income and your ability to pay. If you are getting a social welfare payment at a post office, you must pay the local authority through the Household Budget Scheme. If you take up a job or increase your working hours, you will still be eligible for HAP, provided that you meet the other conditions of the

scheme. People who are on the housing list and currently getting Rent Supplement will be transferred to HAP on a phased basis. If you are on the housing list, living in a HAP area and getting Rent Supplement, you can now apply for HAP. Detailed booklets and other information about HAP are available on housing.gov.ie. Castlegregory Soccer Results: Ballyhar 1 - 2 Castle. This tough away encounter on Sunday last was settled by two penalties in truth - one scored by Castle’s Shane Kenny and one saved by Castle’s Declan Owens. With Ballyhar in flying form Castle were cautious in their approach to this game but played the better football in the opening period with Micheál O’Dowd, Brandon Hoare and Maurice Slattery causing problems for the Ballyhar defence on several occasions, while Damien Finn saw a headed effort cleared off the line as Castle mounted good pressure. The home side created some chances too but it was Castle that took a deserved lead with 35 mins gone when Alan Mcnamara arrived from midfield to hammer home an Enda Whelan pull back to the roof of the net. Then Castle’s lead was doubled after Mícheál O Dowd was taken down in the box and Shane Kenny coolly slotted home the resulting penalty with one minute left to the break. However, Ballyhar pulled one back immediately to leave the HT score at 2-1 to the visitors. In the second half Castle played on the counter attack and allowed the home side much of the ball at the back. Shortly after the break, Ballyhar were handed a lifeline when awarded a penalty but Declan Owens in the Castle goals read it and saved it well. Castle were unlucky on a number of occasions not to extend their lead with Micheál O Dowd hitting the outside of the post and a Damien McMahon volley that flew inches wide while Steven Speirs was denied by a fine save. Castle closed the game out well and seemed to be home and dry deep in injury time but Ballyhar created one last gasp effort that was luckily cleared over the bar by Shane Kenny to secure the 3 points for Castle. Overall, a great end to 2016 that sees us on 16 points after 8 games, 4 points off top (pending results) and several games in hand. Best on the day for Castle were man of the match Alan McNamara, Declan Owens and Dominic Spillane. Looking forward to a few weeks break and a great 2017! No fixture until after New Years.
