THE LOST PORTS OF THE ZWIN
The stunning Zwin landscape we see today looked vastly different in the Middle Ages. For many years, Ghent University carried out archaeological excavations in the Zwin region, where the medieval outer harbours were once located. The Lost Ports of the Zwin come to life in an inspiring way via the VR viewers in Bruges, Damme, Sluis and Knokke-Heist. From the excavations and after sifting through the old toll rates, surprising finds came to light.
The Food Archaeologist Jeroen Van Vaerenbergh dived into the overflowing pantry of the medieval Zwin and worked with local chefs and entrepreneurs to make contemporary creations with medieval ingredients or to search for the hidden medieval elements in existing products.

In collaboration with the chefs and entrepreneurs, The Food Archaeologist dived ever deeper into the delicious past of The Lost Ports of the Zwin. What they uncovered was an inexhaustible source of culinary inspiration from which more and more new taste sensations emerged.
We are not talking about heavy medieval fare but of flavours literally rooted in the soil of the Zwin terroir. They are flavours that lead to surprisingly contemporary creations with an aftertaste of a sustainable future.
