BETTING ON JUSTICE

Sometimes justice can feel like a gamble. Incarceration isn’t always the answer, and victims of crime can feel removed from the process just when they need control the most.

It’s a great event for those who just want to be casual, hang out with friends, have fun, and support a local charity. Great Canadian Gaming is a major sponsor, providing blackjack tables and dealers for the event. All proceeds raised from the event go toward the programs that CRJYAA has been running in the Upper Fraser Valley Region since 1998. The catchment area reaches from Chilliwack up to Boston Bar, 114 kilometers of territory. Their best-known program, Restorative Response, brings those responsible for crime and their victims together to repair the harm done. The outcome is a mutually-agreed upon resolution agreement. PUBLISHER’S NOTE

Spring has arrived! If your New Year resolution fell through, not to worry! Spring is the time of blossom and bloom; a renewal. What better time to hit the reset button than the time of brighter, warmer and more colourful days. Check out Tulips of the Valley’s 13th annual Chilliwack Tulip Festival opening in April. Get more information at www.tulipsofthevalley.com/rates-dates-hours/. Spring is also a time to get out of hibernation and get back to supporting your local non-profit organizations. This year I am happy to announce that I have joined the Fraser Valley Health Care Foundation in hosting a Gala event in November with funds raised to support our 4 most critical hospitals - Chilliwack, Hope, Abbotsford and Mission.

Thank you all of Chilliwack, for your ongoing support!

An Authentic Mexican Cuisine It all started here... The Garcia family immigrated to Canada in 2002 from Cuernavaca, Mexico and found themselves making new family roots right here in Chilliwack! There wasn’t any Mexican Restaurants in Chilliwack, so in 2011, Hugo Garcia began a food trailer and called it El Pueblito, “Little Town in Spanish”. He wanted to bring a part of Mexico to Chilliwack with the authentic taste of Mexican Cuisine. Hugo’s food trailer quickly gained loyal customers so he moved to a larger location, inside a local gas station and changed the name to Hugo’s Mexican Kitchen and became a fast favourite among those who were hungry for a taste of Mexico. Most of Hugo’s recipes are rooted from Hugo himself and he continues to add “a few things as we’ve gone on”.

Everything is made in house, we like “ to do things the hard way using the best QVOZMLQMV\[ VW ÆI^W]Z MVPIVKMZ[ WZ MSG .

To make the dough: Heat the milk in a pan until hot but not boiling. Remove from the heat. Add the butter stir until melted. When the liquid has cooled to tepid, beat in the egg and half the orange zest. Mix the strong flour, yeast, 1/2-1 tsp salt (depending on taste) and the sugar in a large bowl. Pour in the liquid and stir to make a soft dough. Knead the dough for 5-10 mins on a floured surface until smooth and elastic. (you can use a mixer with a dough attachment if you have one). Oil a large bowl and place the kneaded dough inside it, then cover with oiled cling wrap. Leave in a warm place for about 1 hr or until the dough has doubled in size. Place the raisins and half the orange juice in a small pan and simmer gently for a few minutes. Allow to cool completely. Mix the cinnamon with 2 tbsp sugar and the remaining zest. Turn the risen dough onto a floured surface and press it out to a large rectangle, approx 12” x 9”. Scatter it evenly with the drained raisins, and cinnamon-sugar mix. Roll the dough around the filling, then knead it well for a few mins until the fruit and spices are evenly spread. Grease and line a large baking sheet with baking parchment. Divide the dough into 12 equal pieces. Shape each piece into a bun making the top as smooth as possible. Place the buns, smooth-side up, on the baking sheet, leaving room for rising. Cover loosely with oiled cling wrap and leave in a warm place for 30-45 mins or until the dough has risen and doesn’t spring back quickly when prodded gently. Meanwhile preheat oven to 190C/170C fan - 375F/350F fan - gas 5. Make the paste for the crosses by gradually stirring 6-7 tbsp water into the flour to make a smooth, thick paste, then put in an icing bag or small plastic food bag then snip off the corner to about 0.5cm / 0.2”. Pipe the crosses, then bake for 20-25 mins until the buns are risen and dark golden brown. Mix the remaining orange juice with the remaining sugar and let it dissolve. Brush the syrup over the buns while they are still hot, then leave to cool. Eat on the day of baking or serve toasted the next day. 18

Chilliwack Military Museum

A

fter the Chilliwack base was shut down in 1997. A few residents planned to try to remedy this loss, the CFB Chilliwack Historical Society (CFBCHS) was created at an informal meeting in October 2000. In April 2001 we were incorporated as a non-profit society and registered with Canada Revenue. The goals and objectives of CFBCHS focus on the preservation of the history and heritage of the military presence in this Fraser Valley community. We have just moved to downtown Chilliwack to open the new Chilliwack Military Museum. We hope to share military history with our exciting story telling displays,

and events; but more than a place to learn from past experiences, we cultivate a space for veteran’s and family members to come sit have a coffee and share their stories and contribute to our meuseum. We want to extend a thank you to all of our supporters, partners, sponsors, donors and community members, we couldn’t do what we do without your dedication to us.
