Vanilla Panna Cotta with Raspberry Sauce A Pretty Dessert For Valentine’s Day

Preparation time: 1-2 hours

Ingredients....For the panna cotta 3 gelatine leaves or unflavored vegan jel by Natural Desserts 1 1/8 cup/250ml/9fl oz cows milk or plant based milk 2 1/4 cups/250ml/9fl oz double cream or plant based cream 1 vanilla pod, split lengthways, seeds scraped out 1/8 cup/25g/1oz sugar

For the sauce 3/4 cups/175g/6oz sugar 3/4 cups/175ml/6fl oz water Splash raspberry, cherry or blackcurrant liqueur 2 3/4 cups/350g/12oz raspberries

And to serve Sprigs of fresh mint and blueberries (optional)

Method To make the panna cotta, soak the gelatine leaves in a little cold water until soft. Place the milk, cream, vanilla pod, scraped seeds and sugar into a heavy-bottomed pan and bring to a simmer. Remove the vanilla pod and discard. Squeeze the water out of the gelatine leaves, then add to the pan. Remove from the heat and stir until the gelatine has dissolved. Divide the mixture between four pretty glass serving bowls and set aside to cool. Place into the fridge for at least an hour, until set. To make the sauce place the sugar, water and the splash of liqueur into a pan and bring to the boil. Reduce the heat and simmer, stirring until all the sugar has dissolved. Remove the pan from the heat and add the raspberries. Use a hand blender to blitz the sauce until smooth. Pass it through a strainer to remove the seeds. To serve, pour the sauce over the panna cotta and garnish with the blueberries and a sprig of mint. Alternative serving method - pour the panna cotta mix into oiled moulds rather than serving dishes, and set in the fridge as before. Blitz half the raspberries into the sauce and strain through the strainer, then stir in the remaining raspberries. When the panna cotta are set, dip the moulds in hot water for a few seconds and turn the panna cotta out on to a plate, spoon over the sauce and decorate with blueberries and mint. Easy Cheesy Delicious Valentines’ Dinner For 2 Shrimp (or Chicken) Alfredo Garlic Linguini

What you will need:

3 tbsp butter, divided 3 cloves garlic minced 1 lb raw medium or large (if you really want to impress) shrimp, peeled and deveined OR 2 raw chicken breasts chopped into bit sized pieces 3/4 cup 2% milk 1/4 cup chicken broth 1 cup shredded mozzarella 1/4 cup plus 2 tbsp freshly grated Parmesan WEVS Ă RXU Pepper to taste Salt to taste Pkg linguini 2 tbsp fresh chopped parsley, add a bit more for garnish

1. Cook linguini according to package directions. Drain (save Âź cup of pasta water) and set both aside. 2. In a large skillet, over medium heat, melt 1 tbsp of butter. Add garlic, shrimp (or chicken), parsley and season with salt. Cook until shrimp are pink. If cooking chicken, cook until no longer pink. 3. Transfer shrimp/chicken to a plate but keep the juices in the skillet. 4. Add remaining 2 tbsp butter to skillet and let melt, then stir LQ Ă RXU DQG VWLU IRU PLQXWH $GG PLON EURWK DQG EULQJ WR D simmer. Stir in mozzarella, Parmesan and season with salt and pepper. 5. Add shrimp (or chicken) 6. Add pasta water to the cooked linguini and toss until combined (this helps sauce stick to pasta). 7. Add linguini to mixture, if mixture is too thick, add a splash of milk. 8. Garnish with parsley before serving (optional but looks awesome!).
