Pecan Pie - A Classic! Preparation time: 20 minutes + chilling time Cooking time: 1 hour 15 minutes Serves 8-10

Ingredients 500g pack ready-made sweet shortcrust pastry 1/3 cup / 75g unsalted butter, softened 2/3 cup / 100g golden caster sugar 1/2 cup / 175g golden syrup 1/2 cup / 175g maple syrup 3 eggs, beaten ½ tsp vanilla extract 3 cups / 300g Pecan nuts halves Double cream, or good quality ice cream to serve
Method Lightly flour the work surface. Roll out the pastry and use to line a 9” / 23cm loose-bottomed tart tin. (Top tip - I always keep left over pastry in case I need to fill any cracks after the blind baking!) Prick the pastry base with a fork then chill for 30 mins. Heat oven to 375F / 190C / gas 5. Line the chilled pastry case with greaseproof paper, fill with ceramic baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return to the oven for 5-10 mins until the base is set and the pastry is golden. Leave to cool. Increase the oven temperature to 400F / 200C / gas 6. Beat the butter and sugar together with an electric whisk until light and fluffy. While the beaters are still turning pour in both of the syrups. Gradually add the beaten eggs, 1/4 tsp salt and the vanilla, and whisk until combined. Then stir through the nuts and pour all of the mixture into the tart case. Bake for 10 mins. Turn heat down to 325F / 160C / gas 3 and continue baking for 30-35 mins – the pie should be golden brown but the filling should wobble a little in the centre when shaken. Leave to cool completely in the tin. Serve with cream or ice cream!

ACTIVE AGING – IS WALKING A PAIN? A
ging and inactivity have long been synonymous with the dependent stage of life, but baby boomers are changing the face of aging. Okay, I’m not exactly talking plastic surgery or Botox! Although many of the 50+ generation take advantage of these superficial fixes to get “the look”, there is nothing like good old exercise to keep us mobile and slow down the fate that invariably awaits us all. Good posture speaks volumes to the way a person looks as they age. If you want to take years off of your look, change your posture. There is no doubt that we are enjoying better health and longer lives. All this increased longevity comes at a price however. We have all known someone that we describe as “frail”, and yet there are those who seem to maintain strength and mobility throughout their lives. Are we all fated for “frailty”? Time and research will tell. What we do know, is that you are never too old to start. True, there are factors that we have little control over as we age like illness, disease or disability, but for the most part research has proven that we can control and maintain a certain level of functionality with just a little work. You must admit that if the effects of exercise could be put into a pharmaceutical, it would be on the best-seller list for sure. Alas, until that day, simple exercise can help us address many ailments. Impaired range of motion (ROM), diminished muscle capacity and bone loss to name a few. There is a trick to growing old gracefully and that is to keep moving. We call it “active aging”. Find something you enjoy doing and get going. Keeping active while you age is the key. “The best exercise is the one you will do!” – (Covert Bailey, Nutritional Biochemist, MIT). One of my favorite quotes of all time.

It is one of the simplest ways to get active and stay active. If foot, joint and back pain are holding you back, know that you have options. Scientific findings, however, suggest that the feet – not the shoes – must provide the support. Keep in mind that your feet are your foundation. Foot strengthening is seldom included in modern treatments. What is needed is to bring back our natural ability to absorb shock. Your arches are your natural shock absorbers. We need to align, strengthen and restore movement patterns and function naturally. There are non-surgical interventions available. Improving your ability to balance by separating your toes, reducing the ground forces, foot strengthening and walking with comfort are just a few concepts to investigate. Walking barefoot on soft natural ground would be ideal, but ultimately not always practical. If walking is a pain, find an option that works for you. t’s already been a record season for the Trinity Western men’s hockey team, as the BCIHL-leading Spartans having put together a campaign that is on pace to be the best season in the program’s history. A program record 11-game mid-season winning streak vaulted the Spartans to top spot in the six-team league, earning the Langley-based side, who play out of the Langley Events Centre, a 16-4-0-0 record with five games still to play in the regular season. Thanks to that impressive streak, the Spartans are knocking on the door of another piece of history. In 2014-15, which marked Spartans head coach Barret Kropf’s second season at the helm, TWU finished atop the BCIHL standings with a 17-5-0-2 mark, which, at the time, was the program’s high water mark. That leaves TWU just two wins from setting the Spartans all-time wins mark and just five points shy of setting TWU’s all-time record for points in a season. Indeed, it’s already been a season to remember. With a whopping 89 goals for and 46 goals against through 20 games, the Spartans have proven to be both the best offensive and defensive team in the league. That success has arrived thanks to unprecedented depth, unparalleled speed and unrivalled goaltending. From top to bottom, the Spartans team speed and depth has consistently overwhelmed the opposition with offensive waves continually rolling in from all four lines and each of TWU’s three defensive pairings. The evidence of the Spartans team-wide success is in the numbers. TWU has four players in the top 10 in league scoring and seven in the top 20. Second-year forward Evan Last, who hails from Surrey, B.C., leads the team in

scoring with nine goals and 14 assists, while Calgarian rookie Brayden Brown is second on the Spartans in points, with a team-leading 14 goals and eight assists. Rounding out TWU’s top four offensive stars are a pair of Aldergrove products, in first-year Brandon Potomak, who has six goals and 15 assists and second-year Kade Vilio, who has 10 goals and nine assists. And that’s just TWU’s top 10 contribution. A little further down the line and you have veteran forward Dirk de Waal of Lethbridge, Alta. (7G and 10A), defenceman Stefan Gonzales of Surrey, who leads all BCIHL blueliners in scoring (4G and 13A) and Davos, Switzerland-born Florian Niedermaier (11G and 5A), who also recently set TWU’s career record for goals, with 31 and counting. Indeed, there’s no shortage of talent amongst the TWU’s skaters. Oh and about the “unrivalled goaltending” – well, TWU has the luxury of relying on fifth-year goalie Silas Matthys. The product of Wollerau, Switzerland, is the league’s alltime career wins leader, with 48, and this year he has been as good as ever. Amongst regular starters, not surprisingly, he leads the BCIHL with a 2.25 goals against average and a .925 save percentage. With five games left in the season, the stretch drive has begun. And with a hungry Spartans side that is in search of its first ever league championship, indeed, this team has its sights set on creating one more piece of history. The Spartans have two more home games in the regular season (Feb. 17 vs. Selkirk – 7 p.m. and Mar. 2 vs. Victoria – 7 p.m.), with the playoffs opening the weekend of Mar. 8-10.

o puppies shed? Yes, they do! Shedding can turn into a big hairy deal but is normal. fur does not grow all the time but is continuously renewed in a cycle of growth, rest, and loss is shedding. The length of the hair growth period varies from breed to breed. Most dogs have a seasonal shed in the spring and/or during the fall. Some breeds such as Poodles and some terriers are referred to as “non-shedding” but they do shed. Their hair grows for years before it sheds. However, they don’t tend to shed all at once. You won’t notice clumps of fur all at once because they only lose a few hairs at a time. Breeds that have heavy coats that shed in clumps are more prone to developing mats which can be quite painful. You can’t stop your puppy from shedding, but you can reduce the aggravation to your pet and yourself. You don’t have to live with piles of fur with these simple tips.

You don’t have to groom the whole puppy at one sitting. Spread out grooming sessions over several days, this will help to keep your puppy happy. You as well =) Comb and brush your puppy regularly. ometimes all it takes is a bit of sunshine and warmth to perk up our spirits and bring us outdoors. But as you venture outside, you may notice that the increasingly spring like weather has also perked up your lawn and plants, a bit of cleanup needs to take place. No worries. With a little incentive and a thoughtful plan of action, your yard will soon be ready for the growing season ahead. As to the incentive? You'll be saving yourself a lot of time and energy later by getting your garden in shape right now. 1. Start your spring lawn prep by using a rake to remove any leaves and other garden debris that have accumulated over winter. Once the debris has been cleared, give your lawn a boost by spreading a thin layer of compost.

Raspberry & Pistachio Victoria Sponge Cake
Serves 4-6 Â&#x2021; Prep time less than 30 mins Â&#x2021; Cooking timee 30 mins to 1 hour
Ingredients Cake

Knob of butter, melted 1 1/8 cup / 220g super fine sugar 1 cup / 220g butter, + extra for greasing 4 free-range eggs, beaten 1/2 cup salted chopped pistachio nuts 1 3/4 cup / 220g self-raising flour 1 tsp vanilla extract
6 tbsp strawberry or raspberry aspberry jam or a carton of fresh rasberries berries 500ml/1 pint whipped cream
Decorate Fresh rasberries, chopped pistachio nuts, whipped cream
Method Preheat the oven to 190C/375F/Gas 5. Grease and line two 23cm/9in cake tins with the melted butter. Line the bottom of the two cake tins with a circle of greaseproof paper. Inn a large bowl, cream together the butter and sugar until pale and creamy, using an eelectric whisk or a wooden spoon. Beat well to get lots of air into the mixture (this should take a couple of minutes). Beat in the eggs one at a time and the (thi vanilla extract. Add a tablespoon of flour if the mixture curdles. Fold in the flour van and then the pistachio nuts (leave some for decorating). Pour the mixture equally between the two cake tins. Place in the oven and bake for about 20 minutes, or bet until the cakes spring back when pressed gently with a finger and are pale golden in unt co colour. Remove from the oven and take them out of the tins after about 5-10 minutes. Place them on a wire rack to cool completely (for about half an m hour). Spread the sponge with the jam or fresh raspberries and whipped cream, then carefully sandwich together. Decorate the top with whipped cream, a sprinkle with chopped pistachios and dot with fresh raspberries.

Math Tips for Parents Part 1: Counting T
hese strategies can be started as early as kindergarten, grade 1 or grade 2. They are appropriate for any person of any age who needs help with basic mathematics concepts and skills. The trick is to do these exercises both orally and visually, with little or no writing. Pictures can be used as visual aids. Real-world objects (coins, blocks...) can be used as appropriate. The most basic skills in math are counting and grouping (learning to "see" numbers in groups). To develop counting skills, help children learn to count from any number, to any number, by any number. Do all counting forward and backward. • Count by 1s, starting at 0 (0,1,2,3...250...) * then starting at any number (e.g. 28, 29, 30...49...)
