Tuna Fishcakes (makes 4 big fishcakes) 185g tin tuna 1 x large potato - cooked and dry mashed 2 tsp Djon mustard 4 spring onions - finely chopped 50g cheddar - grated Salt & pepper to taste METHOD Gently fry the spring onions in a knob of butter until soft. Mix the tuna into the potato along with the mustard, spring onions and cheese. Season to taste. Leave to cool down. Either shape into four fishcakes and shallow fry until golden brown both sides - or for a healthier option, shape into four fishcakes, top with breadcrumbs, drizzle with olive oil and bake at 200°C for 20 mins or until golden brown.
Tuna & Tomato Pasta (serves 2 to 3) 185g tin tuna 1 x 400g tin chopped tomatoes 1 tbsp olive oil 1 x onion - chopped 1 x clove garlic - crushed 150g pasta Pinch of chilli flakes (optional) Grated cheese to serve Basil leaves (optional) Salt & pepper to taste METHOD Heat oil in a large pan, gently fry onion and garlic til soft. Add tomatoes and chilli, season to taste and let bubble and reduce for 10 mins. Meanwhile cook pasta until al-dente. Mix tuna into the tomato sauce and stir into the pasta. Sprinkle with cheddar and basil and serve. Quick and easy.
Warm Tuna & Potato Salad (serves 3 to 4) 500g new potatoes 185g tin tuna 150g green beans 125g ball mozarella - cubed 4 x spring onions 1 ripe avocado Mixed salad leaves Baby plum tomatoes 4 tsp pesto (any flavour) 2 tsp olive oil Salt & pepper to taste METHOD Cook potatoes until just tender, add beans for last 3 minutes. Meanwhile prepare salad leaves, halved tomatoes, chopped spring onions and avocado on plates. Mix olive oil with the pesto. Drain potatoes and beans. Slice spuds in half, put back in pan and add mozzarella pieces, tuna and pesto. Stir well, season with salt and pepper and add to salad plates. SFU’s Philosophers’ Café is a series of informal public discussions in the heart of our communities. Since 1998, this award-winning program has engaged the interests of scholars, seniors, students, philosophers, and nonphilosophers through stimulating dialogue and the passionate exchange of ideas. Cafés are held all around Metro-Vancouver from North shore to White Rock. Beginning in April, Philosophers’ Café’ is launching a new Book Salon Café series that offers an opportunity for indepth conversations about a particular book chosen by a café moderator. The chosen books are easily accessible and have important links to current debates and the history of ideas. The six book salons, which run at various venues from early April to late June, supplement the regular cafés. Anyone with an interest in ideas is encouraged to read the book from the reading list and come join in the conversation. All cafés begin at 7pm. The Tea will be held in the Maple Ridge Art Gallery (at The ACT) The Plant Sale will be held on the front steps of The ACT
Time: 11-00 a.m. – 4:00 p.m. (approximately) TEAGARDEN is a community event, dedicated to raising awareness of the Maple Ridge Art Gallery. As a constituent of the Maple Ridge Pitt Meadows Arts Council, the Art Gallery is looking at new ways to support exhibition programming and other costs associated with operating the Gallery. Although the Gallery receives some funding from the District of Maple Ridge and continues to seek funding from granting organizations, it must locate further funds if it
is to continue to fulfill its current mandate: “to present stimulating and diverse displays of artwork by local, regional and national artists and artisans. It also offers talks, workshops and other presentations intended to broaden and enrich the public’s appreciation and understanding of visual culture in its many forms.” TEAGARDEN comprises two main activities:
Tea in the Gallery: This will be a ticketed event. Guests will be offered 2 seatings (maximum 50 at each sitting). They will be served tea and a plate of distinctive sweets/savories. The ticket price will include a draw that will include donated items from various plant and garden retail and wholesale outlets in the Districts of Maple Ridge and Pitt Meadows. Funds permitting, we will provide live music.
Plant Sale: Plants will be collected from both retailers and members of the public and made for sale. The plant sale will not be ticketed – anyone is welcome to purchase plants.
Highlighting the oppportunity to Give to the Gallery: The event will lend focus to a new campaign aimed at gaining further support from individuals and businesses in the community. Every guest will receive a card outlining ways to contribute to the gallery, and the tax benefits of doing so. Adopt a cat! B is one of a kind. Not only is this Bart guy big and handsome but he is also g one o of the most laid back cats you will ever meet. Nothing fazes this guy. e Bart B is a diabetic and requires insulin twice a day but we can guarantee you t he h seems completely unaware of the injections. Because he is a diabetic Bart will be adopted out as a permanent foster. This means that while you get to hang out with one of the coolest cats in town we will pay for any vet bills associated with his condition. Bambi came to us over 3 years ago B after she lost the only home she'd a ever known. She was terrified and e devastated when she suddenly d found herself in a shelter. Bambi has f adjusted somewhat to the shelter and a enjoys visits with people, but her tension level is always high because she shares the space with several other cats. She is never truly at ease at the shelter. She shows all the potential to be a wonderful little companion but she needs to find a home where she can relax and be at peace.

Antioch Medival Fair Date: May 11, 2013 (9:00 am - 5:00 pm) Location: Memorial Peace Park - 11925 Haney Place, Maple Ridge This is a free event • Visit Medieval Europe Without Leaving Maple Ridge! Members of the Society for Creative Anachronism (SCA) invite you to step back in time and spend the day with them at Antioch learning about medieval fighting, arts and science as well as music. Fully costumed participants will be representing all areas of Europe in the years 650 to 1650. In addition to period dancing (you can watch or join in), you can listen to authentic music played on recreated instruments. You can learn about medieval sciences, watch embroiders and painters at work and maybe try your hand at calligraphy. One of the highlights of Antioch is watching the demonstrations of different fighting styles. Rapier is similar to the fencing you might see in The Three Musketeers while other combatants don hand-made authentic leather and metal armour to participate in fighting you might see on a medieval battleground. There will be prizes for the best combatants so you will certainly see some excellent fighting. This free, family oriented event takes place at the Haney Farmers Market in Memorial Peace Park on May 11 from 9 am to 5 pm. Pitt Meadows Day The annual community celebration now over 70 years old This event draws the largest single day attendance for a Festival in the City of Pitt Meadows and the District of Maple Ridge. Originally, centered on May Day the event was shifted to the first Saturday in June to better address the need for farmers to get their crops planted. June 1st is Pitt Meadows Day this year.
Pitt Meadows Day is chock full of activities for residents and visitors alike. The Pitt Meadows Day Society provides the anchor around which a broad partnership is built to plan for and ensure a safe day with much fun for all. Both the City and Parks & Leisure Services are actively involved in working with the society to conduct a seamless celebration. One partner, the Lions Club starts the day off with a Pancake Breakfast at the Heritage Hall at Harris Road Park. Even while it is still underway dozens of parade entries with several hundred participants are mustering for the Parade kick-off at 11 a.m. Others are busy setting up in Harris Road Park to provide free rides for children, exhibits ranging from community services, 4-H Club displays, bird nest building, sporting activities, with a range of food vendors on site who will share their gross with the Society to help fund the day. Local crafters will have several dozen booths to display their wares.
Outdoor stage entertainment follows the morning festivities and opening ceremonies. The Rec Center will host activities all afternoon and families can dance at Heritage Hall. As the afternoon winds down, the preparations for the Salmon/Chicken BBQ are well underway outside the Heritage Hall from which the suppers will be served. After the BBQ some will head home to relax, visit with family and neighbors while many will head south to the Pitt Meadows Athletics Park west of South Bonson in anticipation of the day closing Fireworks at dusk. In all some 20,000 people attend one or more of the day’s program elements...more people than live in the city because former residents return home, some bringing granchildren and visitors plan their trip to Pitt Meadows to enjoy the day too!
