I am Irina Zusman from Edmonton, AB and I have been diagnosed with breast cancer. I went to FUEL in Mission, to do light therapy to relieve pain in my body. I did two 30 minute sessions daily for 6 days and 2 reiki sessions. After my pain significantly receded, enabling me to be more active and full of energy to this day. A Load of Cobblers Cobblers are an old-fashioned dish - either savoury or sweet. Served in a deep dish they have a scone or cake like topping. Here are some favourites....

Mince Beef Cobbler

For a veggie option just use mince soya and veg stock. 1tbsp sunflower oil Method 500g mince beef Heat oven to 200°C/GM 6. Heat oil in a large 1 onion - finely chopped pan. Cook onion and carrot for 10 mins. Add 2 carrots - finely chopped mince and brown. Add worcester sauce and 500ml beef stock flour. Stir well and add stock. Season and 1tsp worcestershire sauce simmer for 30 mins. Stir regularly to prevent 2 tbsp plain flour sticking. Meanwhile make the cobbler - mix 140g frozen peas flour, cheese & mustard then rub in the butter salt & ground black pepper with fingers. Beat the egg and milk and add Topping to the dry mixture. Mix well. It should be quite 140g plain flour a firm dough. Add peas to the mince and 140g grated cheese place in an ovenproof dish. Take handfuls of 1 tsp mustard powder the dough, roughly flatten and place on top 30g butter - diced of the mince. Cook for 30 mins until golden 1 egg and bubbling. 1 tbsp milk

Chilli Bacon Cobbler

Also delicious with chorizo! 12 rashers bacaon 2 onions - finely chopped 1 tbsp olive oil 400g can chopped tomatoes 150ml chicken stock 400g tin butter beans tabasco & seasoning Topping 85g cold butter - cubed 225g self-raising flour 175ml milk 2 tsp paprika 1 red chilli finely chopped

Method Heat oven to 200°C/GM 6. Cut 2 rasher of bacon into small pieces & set aside. Cut rest into large pieces. Heat oil in a large pan, fry onion until soft, add large bacon pieces and fry for about 6 mins. Add tomatoes & stock, bring to boil & simmer for 20 mins. Add beans, a splash of tabasco & season. Tip into ovenproof dish. For topping, rub butter into flour until it resembles breadcrumbs. Add paprika & chilli. Stir in milk and pinch of salt. Spoon topping over sauce add small bacon bits and bake for 30 mins or until golden.

Fruit Cobbler

You can use any fruit - I used apples and blackberries. Delicious! 150g caster sugar 2 tbsp cornflour 500g chopped & prepared fruit 1 tbsp water 15g diced butter 1 tsp cinnamon

Method Heat oven to 200°C/GM 6. Place prepared fruit in a pan. Mix caster sugar & cornflour and add to pan. Heat gently, stirring until fruit is soft. Place in a suitable oven proof dish. Sprinke with cinnamon & dot with butter. For topping - sift flour, sugar, baking powder & salt into a bowl. Rub butter in until it resembles breadcrumbs. Mix egg & milk and add to dry mix. Mix well and spoon on top of fruit. Sprinkle with sugar and bake for 30/35 mins until golden brown and bubbling. Serve with ice cream, cream or custard.
