The Maple Ridge Public Library will feature the photos of local nature photographer Albert Perkin during the month of January.
Al is a native Vancouverite, born in the mining community of Brittania Beach in 1930, living in Vancouver, Surrey and most recently Maple Ridge, with wife Teresa and his two daughters. By trade, Al worked as a master plumber until his retirement in the early 1990s. Throughout his life he has spent thousands of hours photographing the natural side of the Greater Vancouver region, including local scenery, wild life and birds, and flowers in green houses and in the wild. His portfolio includes both black and white and colour photography. He built his own darkroom by the age of 15. Following his retirement, he volunteered many hours at Enver Creek High School in Surrey, teaching photographic and darkroom techniques to senior classes.”

Katies Place Rosser has tested positive for FeLV so he MUST be an indoor only kitty. FeLV is not transmissible to people or dogs, it is only contagious to other cats. Rosser and his 7 siblings came to Katie’s Place from another shelter and so far only 2 have found a permanent foster home. Rosser and his litter mates will likely not see their 2nd birthday. For now they are happy, playfull, crazy little kittens who need a loving home that will spoil them even if it is for a short time. Sonny came to Katie`s Place with his brother Wills in 2011 after their original owner abandoned them. Sadly, Wills passed away at the shelter, but Sonny is as lively as ever, waiting for someone to take him home. Sonny is a gentle, good-natured, chipper and chatty fellow. He is in good health, has good litter-box habits, and enjoys being brushed. If you’re looking for a lovable feline companion, please visit with Sonny. SPICE up your life LOW FAT DOESN’T HAVE TO MEAN BORING. HERE ARE THREE VERY LOW FAT RECIPES - PACKED FULL OF FLAVOUR. HEALTHY EATING HAS NEVER BEEN SO MUCH FUN!!! Chicken Curry
Spicy Prawn Noodles egg noodles 2.5 ml sesame oil 1 fresh red chilli - chopped 5 mls fresh ginger - grated 2 cloves garlic - crushed 1 red onion - halved & sliced 4 spring onions - chopped 1/2 lb king prawns - cooked beansprouts 15 ml - lime juice 15 ml - soy sauce 15 ml - sweet chilli sauce 50ml chinese rice wine/sherry Fresh coriander
method
Heat a wok or l a r g e non-stick pan, add sesame oil. Once hot add chilli, garlic & ginger. Fry for 1 minute. Then add red onion & spring onions. Fry for 4 minutes. Finally add prawns, beansprouts, lime juice, soy and chilli sauce, noodles and rice wine/sherry. Stir until heated through. Sprinkle with fresh cilantro and serve.

method
Whiz the onion, ginger & garlic in a blender or food processor then add to a non-stick pan and dry fry until the onions are soft, add a bit of water to prevent sticking. Add the puree and spices - stir for 3 mins to prevent sticking. Add chicken and stir fry until sealed. Add chillies & tomatoes. Simmer for 15 mins. Add water if too thick. Season with salt to taste. Add fresh cilantro and serve with rice.

method Add the mustard seeds to a warm pan; once they start popping add all spices and stir for a few seconds - then add the ginger, garlic, onions, carrots & stock. Bring to the boil and simmer for 10 mins then add lentils; simmer for another 30 mins until veggies are soft & lentils cooked. Season to taste. Garnish with cilantro. Delicious with nan bread.

Maple Ridge : Eco School As we enter into the second year of our Interactive Hot Lunch Program with the Environmental School Project, we are excited about the opportunities for expanding the students’ relationship with food. We are thrilled with the success of the first year of the program, it exceeded even our own expectations! We learned that the students really will try anything if they have been part of making it – a sampling of items that the students made from scratch last year included amaranth zucchini pancakes, succotash salad, as well as leek and sunchoke soup.
Lunch Day the students made butter by hand, and were asked to research and think about questions such as if the change from cream to butter was physical or chemical? How many times would you have to shake it before it became butter? And what did they use all that fresh butter for?
