Raspberry & Pistachio Victoria Sponge Cake

Serves 4-6 ‡ Prep time less than 30 mins ‡ Cooking timee 30 mins to 1 hour

Ingredients Cake

Knob of butter, melted 1 1/8 cup / 220g super fine sugar 1 cup / 220g butter, + extra for greasing 4 free-range eggs, beaten 1/2 cup salted chopped pistachio nuts 1 3/4 cup / 220g self-raising flour 1 tsp vanilla extract

6 tbsp strawberry or raspberry aspberry jam berries or a carton of fresh rasberries 500ml/1 pint whipped cream

Decorate Fresh rasberries, chopped pistachio nuts, whipped cream

Method Preheat the oven to 190C/375F/Gas 5. Grease and line two 23cm/9in cake tins with the melted butter. Line the bottom of the two cake tins with a circle of greaseproof paper. Inn a large bowl, cream together the butter and sugar until pale and creamy, using an eelectric whisk or a wooden spoon. Beat well to get lots of air into the mixture (this should take a couple of minutes). Beat in the eggs one at a time and the (thi vanilla extract. Add a tablespoon of flour if the mixture curdles. Fold in the flour van and then the pistachio nuts (leave some for decorating). Pour the mixture equally between the two cake tins. Place in the oven and bake for about 20 minutes, or bet until the cakes spring back when pressed gently with a finger and are pale golden in unt colour. Remove from the oven and take them out of the tins after about 5-10 co m minutes. Place them on a wire rack to cool completely (for about half an hour). Spread the sponge with the jam or fresh raspberries and whipped cream, then carefully sandwich together. Decorate the top with whipped cream, a sprinkle with chopped pistachios and dot with fresh raspberries.

“My family, consisting of my wife, three daughters and I arrived in Canada on the nines. The 9th day, of the 9th month, of 2009. Coming to Canada my goal was always to be in the media industry as it was my background in Trinidad & Tobago. After working for two of the largest and wonderful media organizations in Canada, Corus Entertainment, owner of radio stations including i l di CKNW and d CFOX, CFOX and d Glacier Gl i Media, M owner of newspapers including the former TriCities Now, the TriCity News and the Burnaby Now, the opportunity has presented itself for me to utilize the training and experience that I have received, and marry that with the world of entertainment that I have always loved. Being an avid movie buff, even at one point hosting my own movie review website, having this magazine will be a great way to marry my expertise of media sales, with my love of the entertainment industry, that includes movies, music and local events. Also, being an entrepreneur in the industry that I have known for more than two decades will mean that it is more than just a job for me. I will be doing something that I intensely love to do. And I’m glad to realize that dream with What’s On! Coquitlam South. Working with Glacier Media I was able to work within the Coquitlam community and assist in producing publications including the Coquitlam Program Guide put out by the City of Coquitlam, the TriCities Health Guide, and the TriCities Chamber of Commerce Map, so getting to know the various business and establishing those connections and servicing their needs are a great part of why I look forward to providing a new outlet to help them establish their goals. I’m also looking forward to meeting all the community groups in a community I love and am proud to call home! Our Mission Statement: To provide an entertaining voice to the community and to deliver a viable additional outlet for local businesses to reach and interact with potential customers.�

World Travels 1. You travelled to a number of places throughout the world this year for business and personal. What would you say was your favourite place to visit? Why? I love Paris, the people, culture and history make Paris a magical place. I am also impressed with how the City of Paris is taking a leadership role in the world on creating a liveable city that is reducing its impact on the environment.

2. Had you ever been to any of these locations before? I’ve never been to Vietnam before, it was a wonderful experience to learn about a new culture. 3. What did you learn from these other cultures that could benefit Port Coquitlam? I am always learning from my travels, I take pictures, read and learn how others run their cities. One common theme in Europe and Asia is the way people get around and engage. In North America we have built our cities around the automobile, we need to learn how to make our neighbourhoods focus on people and people movement.

4. You travelled to Vietnam for a personal trip. Why did you choose this country to visit? Had you always wanted to travel there? This wasn’t something we were planning, friends invited us to join them on a tour, it seemed like an opportunity we couldn’t pass up. Erin and I had an amazing time, the people in Vietnam were so happy and friendly.

5. Your trip to London was related to transit. Did you learn anything from their transit systems that we could implement over here? The governance of Transport for London is unique, the greater London region elects one Mayor. This allows the Mayor to set a direction and the public gets to hold the Mayor responsible. Speaking with staff from Transport for London, they spoke about how Mayor Johnson has inspired the staff and citizens to cycle and walk more, this also included investing into this infrastructure. 6. How was it travelling to Paris so soon after the terrible tragedy they had just experienced? This was an emotional experience, we were able to visit the makeshift monument. It was an honour to say a prayer for the families of the victims and the people of Paris. 7. What was your favourite memory of all the trips? When we were in Vietnam in their capital city of Hanoi, there were millions of scooters and pedestrians. Although it looked like chaos, it worked. 8.Any trips planned for 2016? We are looking forward to our first visit to China in the Spring, then in the Fall we will be going to Bogota, Columbia.

Centennial Community Garden is seventy-two organic vegetable garden plots

Centennial Community Garden is seventy-two organic vegetable garden plots maintained by seventy gardeners of the Centennial Community Garden Society, and their families, on a third of an acre of City of Port Coquitlam land bounding the south end of Central Park. With its third season beginning this spring, Centennial Community Garden was built by society members, community and business volunteers, and with the generous contributions from the city, businesses, and community organizations such as the Rotary Club. Society members earn the privilege of operating a plot through good standing. This includes residency in the City of Port Coquitlam, a nominal annual fee, a minimum number of volunteer hours in the maintenance of the garden’s non-plot areas, actively gardening their plots during the cultivation period, and operating their plots respecting their neighbouring gardeners and the garden as a whole. Centennial Community Garden’s first mission is to promote and encourage gardening. However, the resulting garden, built from community contributions, demands a responsibility on the society to return otherr ttangibles to the community.

• Food Bank: In its first two seasons the garden has averaged some 500 pounds of produce contributed to the local food bank. This is accomplished from the harvest of two plots, maintained by garden members and dedicated specifically to the food bank, and from contributions from member plots. In our second season the Centennial Community Garden broken new ground for contributions to the food bank with the cultivation of herbs. Efforts will be made in the coming seasons to increase contributions by maximizing production and contribution from individual member plots. • Sustainability: Wherever possible, reusing and recycling materials, composting, and responsible water use. • Promoting Community: Nestled in the heart of the condominiums and townhouses of central Port Coquitlam, the garden offers the opportunity to foster engagement between local residents that are gardeners, and convert a disused area into a valued enhancement for neighbouring buildings and park users. • Promoting Community Gardens: The experience the garden has learned from getting started, building, and operation,, ccan be a valued contribution ooking ok g to launch a co to other g groups looking community n their area. ea ea. garden in

COMMUNITY INVOLVEMENT AN IMPORTANT FOCUS FOR ART FOCUS ARTISTS’ ASSOCIATION Art Focus traditionally participates in various community activities and enthusiastically agreed to respond to an invitation by ArtsConnect to be part of a special exhibition honoring Riverview. Twenty-seven members put their skills to canvas and painted images of the beautiful landscape, arboretum trees and heritage buildings that are found at the Riverview Hospital lands. The artists’ thoughts and impressions were recorded on 3 of the panels as well. The canvasses were then assembled into cubes to form 3 towers having swivel plates between the cubes permitting them to rotate. This collaborative project, which forms part of “Riverview: Our Iconic Landscape” is on display at the Pendulum Gallery on West Georgia St. In Vancouver until March 5, 2016. Art Focus members are now preparing for a Spring Art Show, to be held on April 29, April 30 and May 1st to coincide with PoCo’s May Day Festival. The Art Show will feature original works in oils, acrylics, watercolors, mixed

media, etc. Art Focus Artists’ Association is hosting a Demo by mixed media artist and Art Instructor Kristin Kimmel on March 23rd, and on April 27th AF Demo features wellknown professional local artist Sue Cowan. All Demos are 7-9pm, at The Outlet in Leigh Square, downtown Port Coquitlam.
