Intr oducing new owner/publisher!

Sarah

Ridge Meadows

PUBLISHER’S NOTE I couldn’t be more excited to be involved with What’s On! Ridge Meadows again, this time as the Owner/Publisher! In 2011 I started working with this publication, back when it was called the Blueberry Local and had the chance to get to know this community and the amazing people that live and work here. However, as it sometimes goes, life happens and things change and I moved on to other adventures. When the opportunity came round again, I knew I had to say YES! I am really looking forward to getting reacquainted

with all of the great non profit organizations and businesses as well as finding out what’s new and exciting in the community! A huge thank you to all the groups and businesses that are just as excited as I am for our relaunch of the September/October issue! Your support is greatly appreciated!

Let’s do this Ridge Meadows!

Pear Tart Tatin

Pecan Pie - A Classic! Serves: 6 Preparation time: 1 hour 20 minutes

What’s Recipe Page On! TM

Ingredients

FXS J R] H[WUD À QH VXJDU 1/8 cup / 40g / 1 1/3 oz cold butter, chopped 1/2 tsp ground ginger 1/2 tsp ground cinnamon 3 large pears, peeled, cored and cut into wedges 375g / 13 1/4 oz all-butter puff pastry Double cream, to serve

Method

Preheat oven to 400F / 200C / gas 6. Put a 8 inch / 21cm diameter frying pan with an ovenproof handle (this bit is important!) on a burner over a medium heat. Add the sugar to the dry pan and heat, stirring constantly until it turns a lovely caramel coloury. Add the butter, ginger and cinnamon and stir well to combine. Place the pears in the caramel and spoon over the mixture.

Whats On! • www.whatsonridgemeadows.ca

Turn the heat down and cook for 5–10 minutes until the pears are just tender and cooked but retain their shape. Remove from the heat and cool slightly. Arrange the pears to form an attractive pattern in the pan. Roll out the pastry to about 1/4 inch / 5mm thick and cut a disc slightly bigger than your pan (about 10 inch / 24cm). Place the pastry disc on top of the pears and caramel, then carefully tuck it snugly around the outside of the pears and down into the sides of the pan. Bake the pie in the oven for 30–40 minutes, or until the pastry is golden brown and puffed up. Remove from the oven and leave for 10 minutes. Run a knife around the edge, place a large plate over the top and carefully turn the tart onto the plate. Serve with cream. 21
