Summer is HERE! Everywhere you look there is something fantastic going on in our amazing community! July and August is packed full of family friendly events, starting off with Canada Day celebrations in both Maple Ridge and Pitt Meadows. The Haney Farmer’s Market continues every Saturday, rain or shine! The BIA (Business Improvement Association) of downtown Maple Ridge has event after event planned to keep you busy these next two months, look for them in the listings and also throughout the magazine!
Country Fest in July and Caribbean Festival in August are two crowd favourite, both being held at Albion Fairgrounds! Look for the full page of info on both within the magazine. Whether you take in the Lunchtime Concert Series or head to Memorial Peace Park for the Movie Nights @ 9pm, there is something for everyone this July/August. Outdoor Club
If you enjoy getting your exercise in the great outdoors the Ridge Meadows Outdoor Club may be of interest to you. We have a range of activities to suit many levels of fitness interests; from hiking and cycling to backpacking and adventure travelling.
All year we have an easy (3 hour) hike on Monday mornings in the UBC Research Forest and a longer local hike on Wednesdays. Weekends activities may include longer hikes, a bike ride, a kayak paddle, an overnight backpack trip, snowshoeing or skiing. Activities are member-led and many of the more experienced members
are always willing to share their knowledge and experience.
The club members have also organized several trips outside of Maple Ridge and Pitt Meadows. We enjoy excursions to Manning Park and Whistler summer and winter. For the more adventurous there are trips farther afield. Over the years members have organized outings to many places including New Zealand, the Grand Canyon, Wells Gray Park, Kokanee Glacier, Strathcona Park, Saltspring Island, Nova Scotia and Europe.

With so many people turning vegan most recipes can be easily adapted by swapping ingredients for vegan alternatives... Preparation time: 15 mins Cooking time: 15 mins plus cooling time Serves 4
Ingredients 1 1/3 lbs / 600g waxy potatoes, approx 2 large potaotes 1/2 tsp Dijon mustard 1 tbsp red wine vinegar 2 tbsp vegetable oil 1 tbsp extra virgin olive oil 1/2 cup / 115g mayonnaise or vegan alternative Vegenaise 1 tbsp wholegrain mustard 3 spring onions - sliced thinly Small bunch chives - finely chopped Small bunch mint - finely chopped
Method Boil the potatoes in salted water for 15-20 minutes until tender. While the potatoes are boiling place the Dijon mustard and the red wine vinegar into a bowl and whisk them together, then whisk in the oils. When the potatoes are cooked cut into chunks. Pour over the dressing, mix well and leave to cool. Mix the remaining ingredients with the mayonnaise but reserve a few of the herb for garnish.
