Why we wear poppies Scarlet poppies grow wild all over Western Europe wherever the soil has been disturbed. The battles of the First World War churned up such vast areas of earth that millions of poppies germinated and bloomed, often around the bodies of the fallen soldiers. A Canadian surgeon named John McRae wrote the poem In Flanders Fields in which the poppies symbolize the deaths of those who fought. It is a haunting memorial to those soldiers who have died in any war. Why do we have a two-minute silence? It was on the eleventh hour of the eleventh day of the eleventh month that the guns of World War I fell silent. Four years of fighting and devastation finally ended. The following year, ceremonies of remembrance took place on what was known as Armistice Day. An Australian journalist, Edward George Honey first proposed a respectful silence to remember the dead.

He wrote a letter to the London Evening News which was brought to the attention of King George V. The king then issued a proclamation which called for a two-minute silence. - SERVES 4

PORTOBELLO WELLINGTON WITH RED WINE SAUCE INGREDIENTS FOR THE WELLINGTON 2 cups baby spinach 1 3/4 cups shiitake mushrooms 1 cup white button mushrooms 3 shallots, peeled and roughly chopped 3 cloves garlic, peeled and roughly chopped 2 sprigs fresh tarragon, stemmed 2 teaspoon vegan butter (Becel vegan butter is good!) 1/4 cup vegetable stock Black pepper to taste 4 portobello mushrooms 1 sheet vegan puff pastry

INGREDIENTS FOR THE SAUCE 1/2 cup red wine 1 3/4 cups low-sodium veg stock 2 tablespoon date syrup

METHOD 1. Preheat the oven to 400°F / 200°C or Gas Mark 6. 2. Add spinach, shiitake, button mushrooms, shallots, garlic, and tarragon to a food processor and pulse until finely chopped. 3. Add the vegan butter to a large sauté pan and set over medium heat. Add the mushroom mixture and vegetable stock and sauté for 10 minutes until most of the liquid has evaporated. Season with a pinch of black pepper and set aside to cool. 4. Gently scrape the gills from inside the portobello mushrooms with a spoon. Place the mushrooms on a baking tray lined with parchment paper or use a non-stick baking tray. Bake in preheated oven for 10 minutes, then set aside. 5. Cut the pastry sheet into four equal parts. Using a spoon, cover each mushroom with a layer of the mushroom / spinach mix, making sure to fill the cavity of the mushroom. 6. Place one mushroom in the centre of each pastry sheet, cavity side up. Fold the pastry around the mushrooms and press down lightly with fingers to make sure it is sealed completely. Place the mushrooms, with folded side down, on a baking tray lined with parchment paper. And cook for in the oven until the pastry is golden brown - about 20-25 minutes. 7. Make the red wine sauce by combining the red wine and vegetable stock in small saucepan. Simmer uncovered for 20 minutes. Stir in the date syrup and set aside. Reheat on low right before serving and drizzle over the wellingtons. 8. Serve with roasted potatoes and glazed baby carrots.

Instead of a Q&A, I thought I would take the time to introduce myself! Hi, Iʼm Kymm! Iʼm a mom to a smart and spunky 10 yo boy and bright and sweet 8yo girl, and wife to an amazing, supportive husband. I always experimented with my hair. Bleach blond, purple, short, long, black, red- almost every colour under the sun. I cut and coloured my friends' and familyʼs hair. Then my parents suggested I go to hairdressing school! Of course! After a month long bus trip across Canada, I returned and started school at the Hair Art Academy in South Surrey. After graduating I started immediately at a busy, trendy salon (because I pestered them so much they gave in)! After 6 years it was time to move on, but after being at the next salon for 6 months I wanted to see what the Tourism Industry had for me, because who doesnʼt love travel? And potentially doing it for free? Thats when I started going to peopleʼs homes to do their hair. Tourism school in the day, hair at night. As much as I enjoyed Tourism school, I wasnʼt thrilled by the potential jobs (my dream job of travelling the world and getting paid wasnʼt available), and the mobile part of my business was really taking off, so I didnʼt pursue tourism and went full bore into my hair business. I was mobile for 15 years! I would go into peopleʼs homes and learn about them and their families, play video games or dolls with the kiddos. I felt very welcome. In 2018, we sold our townhouse in Langley and bought a house in Abbotsford. I didnʼt want to be driving all day long so I looked into renting a chair within salons. I spent a couple years trying to find the right fit. I found an upbeat trendy salon I thought I would be spending a few years in at least, but then this damn pandemic hit and threw us all for a loop. I set out with my favourite Realtor and we found the most perfect space for me to open my own private, little studio. I am so excited for this new venture, and so thankful to everyone that has helped and supported me over the last 23 years! Hopefully I will see you soon in my new salon!
