Publisher's Update I'M KIND OF A GRINCH ABOUT WINTER... It’s starting to get dark at… what? Noon? The time change is coming as I write this. But, getting an extra hour of 2021, as I saw someone comment online, is like “getting a bonus track on a Yoko Ono album” -- for sure.

I am much more of a “dog days of summer” person. As far as I’m concerned, pumpkin spice is for pies, not coffee. The “crisp chill in the air” and “sweater weather,” please… give me a T-shirt, and air that isn’t freezing. Everyone says we need the rain, but I don’t, I need a house in Australia for winter – where it’s not winter. Due to my lack of lottery winnings however, here we are. It’s not all bad though, Turkey Day is coming, and soon after, Santa. I’m looking forward to stuffing, and the family, and gravy. And I guess football, although I’m way more of a tennis fan, which is played in the summer, when it’s not raining. Also on the horizon, Black Friday. This year, might I suggest, instead of risking being trampled by the giant screen TV hoards, shop at our local small retailers? We’ve got some great gift suggestions from our locals in this issue, and remember, when you shop at a local

small business, you’re supporting the community – not supporting billionaires who are using their (your) money to play spaceman with Captain Kirk. On the home front, we’ve got some delicious recipes for holiday sides, and treats. As everyone knows, it’s the sides, not the Turkey we all look forward to! Let someone else gnaw on the Clark Griswold style, dried, de-flavorized turkey while you feast on roasted Delicata squash, and Coffee Cake (recipe from Michelle Ashley Custom Cakes in Salem - Thanks Michelle!). Of course, the turkey embargo doesn’t apply to next-day sandwiches. If you're you're prone to cabin fever, this issue features an article that lists a bunch of things to do in the winter/indoor months you might like. Also on the home front, if you’re falling over each other trying to cook and enjoy your holiday break, Heidi from Powell Construction has some tips to make your home more holiday friendly. Michael Gibbons, Oregon's Artist LAST YEAR, OREGON LOST ONE OF HER MOST TALENTED NATIVE SONS, MICHAEL GIBBONS.

to the central Oregon coast. He began to pursue painting fulltime and never looked back.

A fifth generation Oregonian, Michael spent his life visually documenting Oregon’s most beautiful and scenic areas on canvas, and he left behind a record for all to enjoy for years to come. U.S. Senator, and former Governor of Oregon, Mark Hatfield said it best: “this man has interpreted a land we all know and love, giving it back to us in a form we can understand.”

He began painting scenes of Newport, and the surrounding area, creating his reputation as a renowned regionalist painter. Portable field equipment, solitude and intense focus on a limited geographical area have helped him create his very personal, intimate works depicting the land he and his wife, Judy, have called home for more than 30 years.

Michael A. Gibbons, a self-described “poet with a paintbrush” whose art evoked the beauty, wonder and mystery of nature, passed away on July 2, 2020, at home in Toledo, Oregon, because of complications from a stroke he suffered in 2016. He was 76.

While Michael’s most meaningful art was created in and around the community he called home, he visited many other locations to gain additional inspiration. He painted scenes in Washington, California, Arizona, Florida, Pennsylvania, and Connecticut, as well as in England, Scotland, Ireland, France, and Mexico.

A self-taught painter, Michael Gibbons was born in Portland in 1943. Experimenting with art as soon as he could hold a crayon, he began painting in oils while still in elementary school. He would later attend Benson Polytechnic Institute, where he attracted the attention of the Oregon Society of Artists. At the age of 16, he was the youngest person to be invited to become a member of the society. By the time he graduated high school, he was awarded all honors in the Scholastic Art Awards competition. After graduating high school in Portland, he invested in a small manufacturing firm and worked as a designer of specialty automotive accessories. Yet, he knew what he was meant to do with his life as far back as he can remember. When he was 25, Gibbons quit his job in Portland, packed his bags and relocated

The ocean was a constant source of inspiration for Michael and his seascapes are among his most vital works. His painting re-creating the moment when the submersible “Alvin” discovered the hydrothermal vents off the Galapagos Islands in 1977 was given to Dr. Robert Ballard, who was a diver on that expedition. (Ballard gained worldwide fame for his discovery of the wreck of the “Titanic” in 1985.) As longtime Toledo residents and civic leaders, Michael and Judy found constant inspiration in the town’s history and setting amid the naturally beautiful Yaquina River region. “Life is an endless series of opportunities brilliantly disguised as hard work,” was one of Michael’s favorite maxims. Oregon State Representative David Gomberg of district 10, Oregon's Central Coast, drafted a resolution to honor Michael and his life's achievements as an outstanding Oregonian. Gomberg provided an amusing story of our state leaders enjoyment of Michael's work: “I admired Michael as an artist and cherished him as a friend. Michael had the unique ability to find and preserve beauty. I’ve enjoyed retelling the story of when Governor Brown was first elected and invited legislators to the Governor’s mansion. I was talking with the Governor and gestured to the large painting dominating the room. 'Governor, this beautiful painting was created by one of my constituents.' 'Oh Representative!' the Governor replied. 'Let me take you up to the second-floor landing and show you our other Michael Gib-

Michael was a signature member of the Oil Painters of America and the Laguna Plein Air Painters Association. He also was a member of the Allied Artists of America, the Copley Society and Christians in the Visual Arts. He was a member of Sacred Heart Catholic Church in Newport and the Knights of Columbus. Thankfully, a part of Michael will live on in his work that celebrates the stunning beauty of our state, captured profoundly, by an exquisite gentleman. Art in the Mid-Valley By Brian Egan Here we are in the waning days of 2021 and our lives still revolve around a pandemic that has re-defined the word normal. Artists were hit hard in 2020 when art festivals and other sales outlets were cancelled and this year has not been much better. The term “starving artist” has taken on real meaning for many creative folks so please remember local artists when doing your holiday shopping this year. One of the most meaningful holiday gifts for loved ones, or for yourself, is something handmade by a local artist. Corvallis, Philomath, Albany and other nearby towns are fortunate to have a thriving arts community with artists creating basketry and fiber art, ceramics, photography, jewelry, oil, alcohol ink, acrylic and watercolor paintings, metal sculpture, printmaking, glass, mosaics, pastels, turned wood and so much more. Most years the local holiday shopping season begins when the Teal Gallery opens in a downtown Corvallis location at the end of October. Then the Southtown Art Walk and the Memorial Union Holiday Marketplace take place during the first weekend in December. All have been postponed until 2022. Last year with everything closed down for most for the year, it was particularly hard on artists who rely on art shows and galleries to sell their creations. This year, all of the tours, galleries and marketplaces had hoped to return, but Covid 19 safety concerns have forced the organizers of these events to cancel or go virtual again this year. These decisions were difficult, particularly since it means another year with limited income for artists. Participating artists would like to encourage potential customers to check the websites for each of the events or galler-

ies to see examples of their work and to get contact information and websites for each individual artist if there is interest in making purchases. Most artists are prepared for on-line sales or email inquiries that might lead to sales.

Oregon’s visual artists are invited to apply to exhibit artwork in “Imagine the Future”, a juried art show at the Philomath Museum from January 28 – March 5, 2022. Artists are challenged to envision the future and attempt to delineate the steps to get there in 2D or 3D format. Artist submissions are due on November 19th. Winter Boredom Busters for Women: Fun Ways to Keep Your Energy and Spirits High by Kimberly Blaker DOES BEING COOPED UP THROUGH THE LONG WINTER MONTHS HAVE YOU FEELING DOWN AND LETHARGIC? Staying physically and mentally active is essential to maintaining your energy and keeping your spirits high. So give the following boredom busters a try. Go skating. Ice, inline, or rollerskating is excellent cardiovascular exercise and an effective energy and mood booster. It also improves balance and coordination. Not to mention, it's just plain fun. So find a rink to get your blood pumping. Film festival. These are often held during the winter months at independent theaters, museums, and on college campuses. If the festival has multiple films you'd like to check out, it likely offers discounted passes to see multiple or unlimited movies during the event. Join a gym. Get your cardio workout on treadmills, stationary bicycles, stair climbers, arc trainers, indoor rowers, and elliptical trainers. Then hit the weight machines every other day to tone and strengthen your muscles. Just think how great you'll look come summer! Attend a sporting event. Get tickets to a football, hockey, or basketball game. If watching team sports isn't your thing, you might enjoy a boxing or martial arts match or ice skating competition.

Try a new sport. Get your game on with a wide variety of indoor sports. Raquetball, martial arts, tennis, rock climbing, swimming, volleyball, ice hockey, boxing, bowling, and basketball are but a few. Check with your local YMCA, recreation centers, or community parks and recreation offerings. Spa treatment. Revitalize by scheduling a day at the spa, or give yourself a home spa treatment. Bask in luxury with a facial, manicure, pedicure, and hair treatment. A new hairstyle, color, or highlights is also a great way to lift your spirits. Form a weekly or monthly card-playing group. Ask friends, neighbors, coworkers, and family to join you in a regular evening of bridge, euchre, poker, or rummy. Ask everyone to bring a snack to share, and take turns with other players hosting the event. A weekend away. Are you feeling cooped up? Take a long weekend away someplace warm, or even just a lively city nearby. Look up attractions and entertainment before you go to make the most of your weekend stint. Go to a concert. Check out large venues near you. But don't forget about smaller community venues that often bring in national and international independent artists of a wide variety of genres such

as bluegrass, folk, jazz, Celtic, rock, R&B, blues, Latin, and much more. Smaller venues are great because they provide a more intimate experience. Check out a museum. Look for museums and galleries in your community, the big city, and on college campuses. Art, history, and science museums are a fun, fascinating way to spend a day. Visit the library. If you like to read, many libraries offer cozy reading nooks. So it's an excellent way to get out of the house for a while and still relax. Add to that, libraries offer so much more than books. They house extensive collections of magazines, DVDs, video games, and music CDs as well. Do a jigsaw puzzle. This is the perfect indoor activity for relaxing while exercising your brain. Before you begin, cut a piece of wood or cardboard a little larger than the dimensions of the puzzle. That way, if it takes a while to complete, you can store it out of your way. Volunteer for a local charity. Choose your favorite charity and volunteer your time and service. Whether you want to help the elderly, poor, sick, homeless, kids, pets, or the environment, there's something out there for everyone. Just choose something meaningful to you.

Getting (and Staying)

Healthy NO, BAD FORM

By Nathan Haines THE NEW YEAR IS FAST APPROACHING, AND WITH THAT COMES EVERYONE’S PROMISE TO THEMSELVES THAT THEY ARE GOING TO IMPROVE AN ASPECT OR ACHIEVE SOMETHING MISSING IN THEIR LIVES: NEW YEAR’S RESOLUTIONS. For the majority of adults in the United States, 2021 will be “the year I finally get healthy.” The most common two resolutions are “I’m going to exercise more” and “I’m going to lose weight.” These can be broken down into much more specific goals and pledges, but the bottom line is that more than 50% of Americans want to be healthier and both goals share a common theme: a structured exercise regime of some sort. So why do 80 percent of these New Year’s resolutions fail by the second week of February and what can we do to be more successful with exercise adherence in general? The main reason more people don’t stick with a fitness routine is simple. Exercise in itself isn’t fun, and we just don’t like it. Exerting oneself, getting sweaty, lifting weights, etc. is not on the top of the list most people look forward to each day. For those who do enjoy it, adherence is not a problem. And while I believe it is the biggest reason why more people aren’t regularly exercising; it is the hardest barrier to crack. Tackling other reasons such as lack of time, fear, no experience, injury, and laziness can help fight our overall disdain for fitness and have easier solutions, at least in theory. Once you get started and begin to see results and feel better, exercise will become much more tolerable. The most common answer to the question, “why don’t you exercise?” cites a lack of time. It’s the easiest excuse and the one that will get the least amount of pushback form ourselves and others. People often associate fitness routines with spending hours in a gym at a time, but the truth is that even 10 minutes a day of moderate intensity exercise can reduce the risk of cardiovascular disease, and that 30 min of moderate exercise per day can lead to substantial health benefits. The great news is that it doesn’t have

to be consecutive, either. If you can’t get to the gym one day, taking three 10 min walks can keep you moving and keep you motivated. Passing the gym on your way home because you only have 20 minutes is no longer an excuse and making sure you DO stop in will help overcome other barriers as well. Fear and lack of experience often accompany each other as a major barrier to exercise, especially in a gym setting. Walking into a crowded facility with music blaring, weights clanging, and people grunting is not a welcoming image for someone new to exercise. The fear of embarrassing oneself because of their current lack of health or experience is a very common barrier to not only exercise adherence, but simply getting started. Combat this by finding a fitness center with a comfortable atmosphere and a knowledgeable staff that can set you up on a program that is right for YOU. A lot of fitness centers offer free trial memberships and some even offer free sessions with an exercise coach. Take advantage of it. Even if you must invest a small amount of money for a personal training session to get started, the value of having a routine specifically designed for you will be huge on your path to exercise adherence. The same can be said for injuries. Whether it’s a long-standing ailment or something resulting from a poorly planned exercise routine, seeking out a professional with experience in what you are dealing with can help you overcome it. Physical therapy can be a great bridge to regular fitness by helping get past that first initial barrier. Finally, the biggest barrier to exercise in my opinion: laziness. Not wanting to exercise or simply wanting to do ANYTHING else (or nothing at all) is also the hardest hurdle to overcome. Most of us are extrinsically motivated and need some sort of goal, reward, or outside influence to help us stay on track and that isn’t always the easiest to set when it comes to exercise. Here are some final tips when it comes to keeping moving and motivated: • SHOW UP – simply getting to the gym is usually the hardest part.

YES, HEALTHY & FIT Even if you can only be there for 10 minutes, do it. Keeping the habit will make it much easier when you have more time. • Use the buddy system – having accountability to someone else is a huge motivator. Create an exercise challenge with a friend and go to the gym at the same time. It’s more fun to celebrate a goal with someone else, anyway. • Set realistic and measurable goals – instead of listing “getting healthy” as a goal, use something more specific and achievable. And start small; “go to the gym three times a week” is much more realistic than “run a marathon this year.” • Avoid burnout – listen to your body and allow yourself rest, or “easy days,” but don’t let yourself to get out of the habit. If your tired or lacking motivation on a scheduled workout day, simply do some stretching or light walking at your normal time. Keep on schedule. If you are one of the many people who are struggling to start or keep a healthy exercise routine, remember, you are not alone. Millions of people will be claiming 2021 as their breakthrough year. Do yourself a favor and give yourself a leg up on everyone else - DO NOT set a New Year’s resolution. START NOW. Make exercise a healthy lifestyle change and feel good about yourself in February while everyone else has retreated back to their couch!

Holiday Traditions For You and Yours to Treasure By Kimberly Blaker WHETHER YOU CELEBRATE CHRISTMAS, HANUKKAH, KWANZAA, EID AL-FITR, BODHI DAY, OR THE WINTER SOLSTICE, HOLIDAY TRADITIONS ARE A FUN WAY FOR FAMILIES TO BOND AND CREATE FOND MEMORIES. The traditions you choose are limited only by your imagination in the way you and your family carry them out. The following are a few fun traditions to consider.

Romantic evening. Couples often forget to take time out for each other during the busy holiday season. Plan an evening for two and reserve a table near a fireplace or a different romantic setting. Take a horse-drawn carriage ride. Don’t forget blankets and your favorite hot beverage for warming your lips and hands.

Decorate the bathroom in holiday candles, fragrance, and holly. Throw on some holiday or other relaxing music. Then enjoy a long bubble bath and give yourself a full salon treatment. Include a manicure, pedicure, deep hair conditioning, facial mask, and body buff. TRADITIONS FOR ALL Stockings for adults. Fill stockings for your partner, parents, or grandparents to discover. Stuff them with treats, beauty products, postage stamps, lottery tickets, and other inexpensive or usable items. Help a needy family. Deliver a box of groceries, or supply a family with gloves and hats. Ask your children to make room for their own new gifts by donating good, unwanted toys. Offer the toys to the needy family to leave from Santa, or wrap them yourself and leave them on the doorstep.

A special ornament. Buy a new tree ornament each year that signifies something important such as your baby’s first Christmas or solstice. If it’s your first season in a new home, find an ornament that represents it.

TRADITION TIPS Discontinue holiday traditions that have lost their appeal and usefulness or that create too much stress. Talk to your family members or friends who share in the tradition, explain your feelings, and ask for input. They may feel the same. Even if they don't, you can try to reach a compromise that satisfies everyone. Don’t overdo it. It’s easy to get carried away with customs. Be selective and choose those that mean the most to you and your family. Most traditions require some investment of time, energy, or money. Taking on too many can cause stress and lead traditions to lose their appeal. When you choose traditions, divide the responsibilities. Women often take sole responsibility for holiday activities, which can be overwhelming and interfere with their ability to really enjoy the season. So try not to strive for perfection, and allow men and children to help in the preparation. Grape Pickin' At the end of every Willamette Valley summer Tom Johns, the owner of Emerson Vineyards affords the opportunity for a few (lucky?) people to come out to the farm and help with the harvest. This year, we thought we'd give it a try. On the surface, it seems easy right? Kind of a "European Vacation" day. Sophia Lauren. The romance of the vineyard. Well it kind of is that, but with a whole lot of hard work! Our day on the farm gave us, and I think everyone there, a whole new appreciation for just how hard this work is. We've picked all kinds of stuff, but our main summer picking event is usually blueberries. They're a whole different technique. Blueberries require just a wave of your hand, and they rain into your bucket. You can fill a huge bucket pretty quickly. Grapes are a different story, they hide from you, way down low.

Picking grapes requires a pair of razor sharp clippers that will happily cut your finger off just as soon as they'll clip a grape vine. And the grapes are in tight clusters, so it takes the skill of a neurosurgeon to actually get the clippers in position to clip the vine without wrecking the plant. I think we all did pretty well though. When it was said and done, and the grapes were hauled back to the barn, we ended up with about 900 pounds of fruit. Not bad for a morning's work. We thought, until it was revealed to us that professional grape pickers would pick about that much every hour. So, my hat is off to you professional grape pickers. By noon Tom had prepared a delicious lunch and of course, it was accompanied by wine-- now we know where it comes from.

If you find yourself in Northwest Portland, take cover in the Hilton's Canopy Hotel's restaurant, Vaux. We recently attended a show in Portland and happened across this delightful eatery.

The dining room was pleasantly low on diners, and the space is cavernous, yet still it emits a very cool mid-century vibe. Service was quick and our server was very personable. The menu lists a number of seasonal, northwest-inspired dishes, all at surprisingly palatable prices. There is also a selection of pizzas for those observing a "Mediterranean diet" -- that's what that is, right?

Salads are 1. The Ceasar with Boston Bib lettuce, croutons, and Pecorino cheese, and 2. A Seasonal Beet and Hazelnut -- we had both, and both were delicious. The Ceasar with bib lettuce was a nice change up from the standard Romain. It was smooth against the croutons. My steak was marinated (overnight in a citrus marinade), and cooked perfectly, and her shrimp and grits entreé was great. Two thumbs up. Go check it out.

Maple Glazed Delicata Squash Delicata squash is naturally sweet and moist with tender skin (no need to peel!) This simple and delicious recipe makes a perfect side dish, whether for a school night meal or as a part of your Thanksgiving day banquet. Use only the best, locally grown organic delicata squash from First Alternative Co-op! * 2 lb delicata squash * 2 Tbsp. olive oil, divided * 1/4 tsp salt * 1 tsp chopped fresh rosemary

* 1 Tbsp. maple syrup * 1 Tbsp Dijon mustard Preheat oven to 425. Cut squash in half lengthwise, scoop out seeds, then cut into 1/2″ slices. Toss with 1 Tbsp oil and salt in a large bowl. Spread in an even layer on a baking sheet. Roast, stirring once or twice, until tender and beginning to brown, about 30 minutes. Combine remaining ingredients in a small bowl. Not everything needs to be homemade, in fact, some things should definitely not be.

Reminder! Corvallis' Le Patissier will be taking orders again this year for Chef Didier's fabulous bûche de Noël holiday cakes. A little context: "Pre-Christian Traditions The earliest bûche de Noël in France can be traced to Celtic Brittany. A log was lit at the winter Solstice ceremony honoring the sun and marking the end of the dark days of winter. Medieval French Christmas Traditions A custom of French culture, the bûche de Noël French Christmas tradition is thought to have stemmed from a Medieval feudal tax levied at Christmas. Called the “right of the log”, the peasants on Christmas Eve had to bring a large piece of wood from the forest to the feudal lord’s manor house. Years later they began to bring the wood to their own house. The log was blessed and lighted with a special ceremony. From “The Book of Days” 1869 Robert Chambers’ The Book of Days (1864) tells us that this not just a French Christmas tradition but also traditional throughout Europe and the British Isles. The burning of the Yule log is an ancient Christmas ceremony, transmitted to us from our Scandinavian ancestors, who, at their feast of Juul, at the winter-solstice, used to kindle huge bonfires in honour of their god Thor. The custom, though sadly shorn of the 'pomp and circumstance' which formerly attended it, is still maintained in various parts of the country. The bringing in and placing of the ponderous block on the hearth of the wide chimney in the baronial hall was the most joyous of the ceremonies observed on Christmas Eve in feudal times." You won't be expected to venture into the woods, or light any giant fires, but you can still enjoy your dessert in honor of Thor if you want, that's kind of awesome. Get your orderes in early though, these are made to order and they are not frozen for pickup later. Dider arrives in his kitchen in the wee hours while you are still sleeping (like Santa), prepares these special desserts for you, and you pick them up, just in time!

"Lighten Up" - Vegan Sides

Sweet and Savory Corn Muffins

Ingredients - Potatoes

1 cup non-dairy milk 1 tsp. apple cider vinegar 2 tbsp. ground flaxseed 6 tbsp. water 1 1/2 cups fine cornmeal 1 1/4 cup all-purpose flour 1 tbsp. baking powder 1/2 tsp. salt 1/4 tsp. cumin 1/4 tsp. smoked paprika 1/4 cup vegetable oil 4 Tbs real maple syrup

Ingredients

Roasted Brussels Sprouts, Butternut Squash, Walnuts and Cranberries with a Maple Cinnamon Glaze

2.5–3lbs red and/or gold potatoes, peeled 1/2 cup vegetable broth 1/2 cup almond milk 1 tsp garlic minced 1/4 tsp each sea salt and pepper 1 shallot sliced fresh herbs such as thyme, basil, etc. Olive oil or almond milk to thin. 1/2 tsp sea Salt or garlic salt and pepper

Ingredients

For the White Bean Puree:

3 cups Brussels sprouts ends trimmed, and halved 1 ½ lb butternut squash peeled, seeded, and cubed 2 cups walnut halves 5 tablespoons olive oil 3 tablespoons maple syrup ½ teaspoon ground cinnamon 1 cup dried cranberries Sea salt and freshly ground pepper

15 oz can cannellini beans, drained and rinsed 2 Tablespoons olive oil 1/4 cup vegetable broth 3 sage leaves - stem removed

Place potatoes, broth, almond milk, garlic, salt and pepper in slow cooker.

Preheat the oven to 400 degrees F. Spray a muffin pan with cooking spray. In a small mixing bowl, whisk together the non-dairy milk with apple cider vinegar. Let sit for 5 minutes to curdle, this will give the muffins a buttermilk taste. In another small cup, mix together the water and flaxmeal and let rest until gelled together.

Instructions

Next make your white bean puree by placing ingredients in blender or food processor, blend until creamy, pour atop potatoes mixture in slow cooker.

In a large bowl or stand mixer, add the cornmeal, flour, baking powder, salt, cumin, paprika, and sugar. Stir until combined.

Cover and cook on high for 4 hours.

Combine the flaxmeal mixture to the apple cider vinegar mixture and add the oil and maple syrup. Whisk together and then add to the cornmeal mixture. Stir until fully combined.

1. Preheat the oven to 400°F. 2. Arrange the vegetables and nuts on a large baking tray, drizzle with the olive oil, season with salt and pepper, and toss to coat. Bake in the oven for 45 minutes, tossing everything halfway through so the ingredients cook evenly, until the vegetables are tender and the nuts are toasted. 3. In a large bowl, combine vegetables, walnuts, cranberries, and remaining ingredients, mix to combine.

Instructions

After potatoes have softened enough, mash potatoes to desired consistency. If potatoes are too thick, add more oil or 2-4 tbsp of almond milk to thin. To finish, fold in remaining herbs, and then add salt and pepper to taste.

Divide the batter into the 12 muffin cups, filling about 2/3 fill. Bake for 15-20 minutes until golden brown and a toothpick inserted into the center comes out clean.

2/3 cup flour 1 cup packed brown sugar 2 teaspoons cinnamon 4 Tablespoons unsalted butter, melted

For the Cake • • • • • • • •

1 cup unsalted butter, softened 2 cups granulated sugar 2 large eggs 1/2 teaspoon vanilla extract 1 cup sour cream 2 cups all purpose flour 1 teaspoon baking powder 1/2 teaspoon salt

For the Glaze • •

Instructions 1. Preheat the oven to 350 degrees. Spray a 9x13 pan with nonstick spray. 2. In a medium bowl, mix the dry streusel ingredients together. Add the melted butter and stir until it looks like wet sand. Set aside. 3. In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Mix in the flour, baking powder, and salt. 4. Spread half the batter in the prepared pan. Sprinkle half the streusel over the batter in the pan. 5. Drop the rest of the batter on top by spoonfuls and gently spread it out with a flat or angled spatula. 6. Sprinkle the top with the remaining streusel. Bake 45-50 minutes. 7. Remove and cool. 8. Stir together the powdered sugar and milk. Spoon into a small Ziplock bag and cut one tip off. Drizzle over the top of the cake. Let set before cutting

This means people have ample time to relax and achieve a bucket list of dreams. However, the flip side is that retirees need to ensure they have enough savings to last through their lifetime. One complicating factor is that inflation is a fact of life, and it can result in meaningfully higher expenses over time.

Since 1982, inflation has only been higher than 5% in one calendar year (1991) until now.2 While another decade-long inflation threat is unlikely, living costs in the near-term may continue to rise at a fast pace.

As you’ve likely seen in recent headlines, inflation rates are the highest they’ve been in many years. Inflation creates challenges for all consumers, but it can be particularly difficult for those who are retired and living on a limited income. Higher inflation can throw off the assumptions for regular expenses reflected in your retirement plan. It’s unknown whether this uptick in living costs will persist, but you should prepare for the impacts of inflation regardless. Here are a few things to know and do: Keep it in perspective Today’s inflation rate of 5% is high by recent standards, but nowhere near a

POINSETTIAS ARE ARGUABLY THE FLOWER MOST ASSOCIATED WITH CHRISTMAS. Amaryllis, holiday cactus and cut red roses may be favored by some but when the sea of red, pink, and white poinsettias arrive at the nursery, I can’t resist purchasing at least one or two. Some say that the star-shaped bracts on this native of Mexico are symbolic of the star of Bethlehem. Then there’s the legend of the poinsettia: a little girl, lacking money for a gift, picked weeds to take to church on Christmas Eve. When she placed them at the nativity scene, they transformed into beautiful red poinsettias. To me poinsettias are simply beautiful, colorful, traditional decorations. The colorful part is not the flower, it’s a “bract” or modified leaf. The true flower is the small yellow center of the red, pink, or white bract. The propagators continue breeding them and they are available in peach, burgundy, true pink, pure white, speckled, and with variegated leaves. Growers now use plant-safe spray paint to turn white bracts into “Fantasy” poinsettias in all sorts of unnatural colors. I must admit I’m fond of the turquoise ones!

Care: They look best the longest if they are in a sunny window at 55-70 degrees. Avoid placing them near heaters, drafts, or cold air vents. Poinsettias prefer to be lightly and evenly moist. Do not let them dry to the point of wilting but don’t overwater either. One grower stated it best, “If your plant feels heavy when you pick it up and the soil looks dark and moist on top, it does not need water. If it is light when you lift it and the soil looks light and dry on top, it needs water. If it is in-between those two extremes wait and check it again the next day.” Also, if the plant is in festive wrapping, sitting in a saucer or cachepot with no drainage, make sure to go back after watering and empty the water that has drained out. You do not need to fertilize them while they bloom. The gorgeous, large bracts we enjoy during the holidays are difficult to replicate but if you want to keep a poinsettia, cut it back in March or April to 4-6 inches. Water and fertilize as you would any other plant. They can rebloom if they receive 14 hours of continuous darkness a day between Oct. 1 and Dec. 15. Best wishes for healthy, happy gardening in 2022.

Daily gratitude will help you attract more of what is working in your life. A gratitude journal is an excellent place to start. See if you can write down 5 things that you are thankful for each day. If journaling isn’t your thing, then say them out loud. Set a reminder up on your smartphone

Yet, there is a key component to Thanksgiving that we should be incorporating into our everyday routine. That is of Giving Thanks. It used to be, that I only thought about gratitude on Thanksgiving Day. But being thankful on the daily is something that can help improve our lives on every level. Gratitude is a high vibration thought, which induces a positive feeling in our bodies. Thereby improving our health on all levels. I’ve been in places and times in my life when it was difficult for me to think of something to be grateful for. Maybe that’s you right now. If so, that’s okay. Especially when times are difficult, our thoughts tend to reflect our current struggles and worries about the future. I know I’ve said this before in my articles here, but it’s always a worthwhile reminder that “what ever we dwell upon, grows”. This quote by Bryan Tracy has stuck with me as a reminder to check in with my thoughts. I ask myself, is what I am thinking about something that I want to have happen or to continue happening in my life?

Now that my thoughts are aligned with gratitude, hard times are fewer. And when they do arise, I am much better equipped to handle them because my mind won’t be so consumed with the worries, and I am better able to respond.
