ON THE COVER

At Calais Estate, you’ll discover a range of very insta-worthy grazing picnics and unique experiences just like this one on our cover. Read more on page 14.

Nov–Dec

There’s something about this time of year that warms the heart. Buds are bursting, the sweet smell of jasmine and other blossoms fill the air, and everything is coming back to life. Never has there been a more perfect time than now to get outside, soak up the sunshine, and enjoy a picnic (with a glass or two of wine, of course), and we may have just found the perfect picnic destination!

Originally a dairy and cattle farm, Pokolbin’s Calais Estate became a vineyard in 1971, with the winery established in 1975 and the cellar door built a few years after that. Fast forward to 2022, and the estate has become one of the largest boutique wineries in the valley.

With a growing reputation as a wedding venue par excellence, an extensive hand-crafted wine list, a cellar door that’s won more than its share of awards, a homewares and gift store and an abundance of insta-worthy picnic spots (with picnic grazing baskets to die for), it’s the perfect place to wile away a lazy afternoon. Read more on page 14.

The Hunter Valley is full of great places to eat, made so because of the people behind the plates and the exceptional food they create for all of us to enjoy. This month we caught up with the team at

Lovedale’s newest establishment, Jimmy Joans. Offering uncomplicated, honest and wholesome food from Michelin-trained owners, it’s a blend of a fine-dining restaurant with a bar and a casual eatery that’s also family-friendly! Read more on page 12.

If a peaceful country drive is what you’re after, then jump in the car and take the picturesque drive to Luskintyre, where you will find Tranquil Vale. Set along the banks of the Hunter River, this small boutique vineyard, winery and cellar door bears the perfect name for its picturesque setting and offers some unique experience and total tranquillity. Read more on page 18.

With peace and quiet top of mind, a visit to Broke and Winmark wines is another excellent option. In addition to some superb Chardonnays, they also have a sensational art gallery that is home to some renowned Australian and international artists and a Sculpture Walk that provides the perfect opportunity to stretch your legs in the Spring sunshine. Enjoy!

TASTE

How would you define modern Australian cuisine? If your first thought is throwing a 'sanga on the barbie', then you might need to book yourself a table at The Cellar Restaurant. Walking up the steps towards the glorious arbour that serves as the entrance to the Village, it is difficult to miss the rustic sandstone building with its wisteria-surrounded courtyard. The aesthetic of the restaurant shouts colonial Australian with a contemporary flair. Located in the Hunter Valley Gardens Shopping Village in Pokolbin, The Cellar Restaurant defines modern Australian cuisine as 'slow cooked pig cheeks with blood orange, zucchini flower, goat's cheese and drizzled in a buttermilk sage dressing' which can be found on their new Spring menu, available now. For more information or to book, visit www. the-cellar-restaurant.com.au

Visiting Hunter Valley Gardens Shopping Village for the first time is an experience often likened to a trip through one of Northern America's many historic, quaint, charismatic townships. The Village exudes charm and sophistication with the architecture and landscaped gardens perfectly placed amongst the wineries of the Hunter Valley. With over 23 boutique shops, cafés, restaurants, and a playground, the Village is the ideal place to visit if you're looking to interrupt wine tasting with a bit of retail therapy. As we all start to think about Christmas, the Shopping Village is brimming with boutique fashion, handmade giftware, jewellery, antiques, toys and more. But most importantly, the Hunter Valley Christmas Shop carries a curated collection of Christmas decorations that won't be found in the big chain stores. That is the beauty of these kinds of shopping villages; it's the experience and the quality of the unique products that are displayed on the shelves that make it a worthwhile visit. 325 Pywells Road, Luskintyre Tel 4930 6100/0421 401 288 www.tranquilvale.com.au

The property is owned by Kim and Mick Starkey, who have a long history as publicans, owning Customs House in Newcastle and The Stag & Hunter in Mayfield. When Thomas and Eliza Boyd went looking for a space to run their catering business, the two couples developed the business idea for Jimmy Joans and a new star on the hospitality scene was born. The catchy name of Jimmy Joans is a nod to Kim Starkey’s grandparents, Jim and Joan Moyle and evokes a sense of family.

Both Thomas and Eliza are locals who are Michelin trained in London. Thomas worked as head chef at Margan’s for three years before the couple decided to start their own catering business in 2021. Jimmy Joans offers uncomplicated, honest and wholesome food available all day from 8am to 9pm. It’s a blend of a fine-dining restaurant with a bar and a casual eatery that works a treat.

The menu includes casual snacks, share-style main courses and gastro-pub classics that are in season and beautifully seasoned with a focus on local produce. The menu often changes, so locals can always find something new to savour – like the Scotch Egg, super tasty and served with piccalilli or Mussells in White Wine served with tomato, fennel and sourdough.

The wines are served by the glass and have been chosen to provide something for every taste, with many local wines and some interesting out-of-area offerings. There’s an extensive cocktail and mocktail list, and White Rabbit Dark Ale is on tap because Jim Moyle loved his dark beer. Every Sunday from 2pm to 5pm, there is live music by local artists.

Going against trend, no reservations are required for the bar and outdoor areas at Jimmy Joans, and it’s family-friendly, with plenty of space for the little ones to run around and enjoy themselves. There are also accommodation options on the property, and the vibe is relaxed, fun and friendly.

Jimmy Joans can be discovered on Wilderness Rd in Lovedale and is open Thursdays through Sundays from 8am until late. Visit www. jimmyjoans.com.au for more info.

After more than two decades teaching the next generation of aspiring artists, Karen Scott’s career as a painter has gone to the dogs – literally! The Martinsville woman has switched from teaching art to selling it, putting her skills into practice as a pet portrait artist, sculptor and muralist.

From humble beginnings painting her own pooch’s portrait, she now has a flourishing business – Karen Scott Murals – which sees her create custom sculptures and portraits for doting pet owners and murals for homeowners and businesses.

“I spent 21 years as a high school visual arts teacher travelling to the Central Coast to teach daily,” Karen said.

“And while I thoroughly enjoyed teaching artmaking skills to aspiring young artists, I rarely had the time to enjoy creating my own art. Never in my wildest dreams did I ever dare to imagine that one day I would resign from teaching to pursue my passion for art and actually create my own small business from it!”

Owners email a photo of their pet to Karen, who then creates a realistic acrylic on canvas portrait, or small 3D sculpture of the pet in their pet bed, on a base with their name, or even on a beautiful Rainbow Bridge to commemorate those pets who have passed on. She also sculpts small Christmas decorations called Doggy Danglers, which are head-only sculptures designed as a special keepsake to hang on the Christmas Tree each year.

Tapping into people’s love of animals even further, Karen has also created a huge range of mini pet portraits, hand-sculpted Teacup Pet Sculptures, Pet Stones, and Doggy Danglers. But she doesn’t just cater for dog and cat owners, as she has now expanded her collection to include her newest creations, which are a quirky line of upcycled teapots featuring polymer clay birds and animals!

Aside from the custom commissions, Karen sells her unique range of artworks and teapots at the Handmade in the Hunter Markets, regularly held on the grounds of Sobels Wines

“I love market day and look forward to every single one, along with the promise of meeting new clients who would like their fur-children painted sculpted or painted as a treasured keepsake!” she said.

Why not stop by Karen’s stall at an upcoming Handmade in the Hunter Markets (see dates on page 5).

Seamless Integration

OF UNIQUE FOOD & WINE EXPERIENCES

Richard and Susan Bradley bought Calais Estate in 2000 with the idea that they’d like to retire to a small vineyard and maybe make some wine. Fast forward 22 years, and they are now running one of the largest boutique wineries in the valley that enjoys a growing reputation as a wedding venue par excellence, an extensive hand-crafted wine list, a cellar door that’s won more than its share of awards, a homewares and gift store called Come What May and Restaurant Kawul, the onsite restaurant with the gorgeous verandah and stunning views over the Brokenback ranges.

Richard Bradley grew up in farming communities in Victoria and Queensland before moving to Sydney to become the founder and CEO of a software IT company. Never one to be away from rural life for long, Richard and his wife ran horses and cattle on a property in the Yarramalong Valley, raised their three daughters and dreamt of running a vineyard one day. Warned against even attempting to grow grapes on their farm in Yarramalong, they were surprised to receive an offer for their property which spurred them on to purchase Calais Estate.

Originally a dairy and cattle farm, Calais Estate became a vineyard in 1971, with the winery established in 1975 and the cellar door built a few years after that. When Richard and Susan took it over, they worked hard on renovating the grounds and the cellar door. They used what

they could find on the estate and reclaimed materials, resulting in a rustic, bucolic charm and character that creates the ideal backdrop for everything the estate offers.

“The cellar door is built from convict-hewn sandstone,” said Richard.

“When it was built, it repurposed materials from a pier in Pyrmont and from buildings in The Rocks for the beams and other things. The verandah is from an old pub in Newcastle; we’ve got bricks from an old train station. There are even fossils found on the property, and of course, there are the old dairy vats that were converted to winery vats.”

Richard and Susan have not had to do everything alone, however. It’s a family-run business, and their daughter Joanne who previously worked in film and television as well as hospitality and for the PGA Golf, was excited by the opportunity to work on something that was stable and that didn’t require a lot of travel. She is the General Manager and has been on deck since the very beginning. Her sister Katrina took a bit longer to be lured away from Melbourne, where she worked in IT. It was nine years ago that she had the idea of running her own homewares and gift shop so that she could put her love of shopping to good use, and the onsite store Come What May was created with a focus on vintage and locally made products. Katrina also works as the Calais Estate Marketing Manager.

“I’ve found a way to shop for my career,” laughed Katrina.

“I thought I’d do it for a year, but here we are nine years later. It’s easy

to get hooked. It’s an engaging and lovely industry to work in. Everyone is out to have a good time, they’re on holiday, and it’s lots of fun. Wine is also a fabulous intersection of science meets art.”

The vineyard comprises twenty acres planted with the Hunter Valley classics of Shiraz and Semillon as well as Cabernet Sauvignon but also sources premium fruit from other first-class vineyards. Winemaker Adrian Sheridan joined Calais Estate in 1997, and when the Bradleys took over the estate, he became the Senior Winemaker. The winery offers personalised winemaking services to other producers as well as developing a wide range of traditional wines and rare varietals under its own label.

The restaurant space began as a function centre before becoming The Verandah Restaurant, which ran for twelve years. Restaurant Kawul which has a strong native influence utilising natural bush flavours and spices and a focus on local produce, moved into the space - and then Covid happened.

“We did some more renovations during the first Covid lockdown,” said Richard.

“But the biggest change during this period was that we bought Restaurant Kawul, which enabled us to seamlessly integrate everything –the food, the wine, the experiences. It’s been a great thing for business. All the front-of-house staff in the restaurant know about the wines and can share their knowledge with our customers. Most of our experiences include a food component – Grazing Picnics, the Winery Long Lunches, our Locals Nights and, of course, catering for our wedding clientele.”

The property is situated on Wonnarua land, and the connection with local indigenous elders is something the team are keen to celebrate. The restaurant and shop, Come What May stock local indigenous art produced by three generations of the same family. There is also a focus on planting natives in the gardens.

At the heart of Calais Estate is the experiences that it offers visitors.

“We’ve got a full range of very insta-worthy grazing picnics and unique experiences,” said Richard.

“The opportunity to make your very own sparkling wine is something that is very unique to us. We call it the Bubbles Bonanza. It’s for groups

Other popular experiences include:

• Guided tasting, including cheese platter for $25pp;

• Group tasting for groups of 15 or more, including cheese platter and one bottle of wine per person at $45pp;

• Grazing picnic with a beautifully styled charcuterie selection for $60pp;

• Garden tasting with wine and cheese, including digital tasting notes for $15pp;

• Guided cheese and wine matching for $35pp; and

of 8 or more, and people get to hand-make their own sparkling, going through the process of disgorging and dosaging before enjoying the fruits of their labour over a picnic. It’s very popular.”

But for the genuinely in-depth experience, nothing can beat the Winery Long Lunch. This unique experience includes an opportunity to explore behind the scenes with an access-all-areas tour led by family members, the chance to create your own sparkling wine in the traditional French style, then canapés and a five-course degustation meal by Restaurant Kawul with matching Calais Estate wines.

Another long-standing tradition at Calais Estate is the monthly Local’s Night which began many years ago. This popular event is not just for locals. It’s a discounted night of food and drink prepared by Restaurant Kawul and served at a big, long table with a different menu each month

based around a wine variety. People get a chance to meet others in a convivial, fun atmosphere.

“It’s a fabulous way to meet new people,” said Richard. “We even encourage BYO, although, of course, Calais Estate wines are available to buy on the night at a discount. It’s lots of fun for people to taste each other’s wines. And the restaurant staff get to be even more creative. It runs on the first Friday of every month and is just $60pp.”

A quick look at the social media of Calais Estate provides insight into one of the most successful areas of the business. The spectacular Barrel Room is an extremely popular wedding and events venue.

“The space is a working barrel room,” said Katrina.

“It has to be set up every time it’s hired out. By the time we have it all styled and set, it looks like a wonderland. It’s so rustic, you can smell the oak, and with the fairy lights, it gets you every time. No matter how often you see it, I’m always in awe. It’s a truly beautiful space.”

The homewares and gift store at the estate, Come What May, sells some of the produce used in the picnics and tastings, such as jams, chocolates and condiments, as well as personalised gifts that are popular with the wedding clientele. The chocolates are made by a local women’s refuge as well as many other locally made products. Katrina also offers a personalised design service to source homewares for customers according to their interior styling requirements. There is a range of candles, vintage homewares, indigenous art, gift items, kid’s wear, blankets and Christmas decorations.

Some changes are being planned for the near future on the estate.

“We are looking to make a few changes, move a few things around,” said Richard. “We’re looking to create a private tasting room and private dining area to further expand on our customer experiences. We’ve got a blacksmith working on wrought iron gates, but I’m not spoiling the surprise – you’ll just have to watch this space!”

With so much on offer at Calais Estate – from wine tastings, picnics, shopping and Restaurant Kawul, nothing could be easier than spending a whole day soaking up the atmosphere and enjoying the food and wine in this picturesque setting. There’s no need to go anywhere else.

A LEAP OF FAITH | Tranquil Vale

Set on the banks of the Hunter River opposite the birthplace of Hunter Valley wines, is a small boutique vineyard and cellar door with the perfect name for its picturesque setting in peaceful Luskintyre –Tranquil Vale.

The origin of Tranquil Vale is a story in itself. Owners, Lucy and Phil Griffiths, bought the former dairy property in 1996, with an extraordinary leap of faith and determination, sight unseen.

Once upon a time, the young Lucy and Phil Griffiths spent their honeymoon in the Napa Valley of the USA, exploring the many wineries.

Which sparked the beginnings of a dream to own a vineyard one day in the future. A few years later, living in London with two children and a busy husband who was seldom home, Lucy found an advertisement in The Weekend Australian newspaper.

"It was in the days before the internet," said Connie Griffiths, the couple's daughter and now winemaker at Tranquil Vale.

"Dad was working too much, and they started to dream of escaping. Mum went to Australia House to access the Australian newspapers. She was interested in Australia because she had lived there briefly in the 1980s. She saw a tiny little advertisement with no image, mentioning that the property was opposite Wyndham Estate at Dalwood.

Mum had been to Wyndham Estate and knew that it was good grape-growing country. A friend travelled from Sydney to the Hunter Valley to view the property, which was just a paddock - and Mum and Dad bought it!"

With the help of experts, the property was planted with traditional Hunter Valley varieties, Semillon, Chardonnay and Shiraz. Two years later, the family moved from London to Luskintyre permanently, and that's when the hard work really began.

"Mum and Dad both studied viticulture at TAFE, and then Dad went on to study winemaking, following that working at Monarch, now First Creek, for a vintage to gain valuable experience."

Part of the original vision for the property was to include familyfriendly accommodation as Phil and Lucy had noticed a lack of wineries that catered to wine lovers with families. The family built the cellar door with a loft bedroom above and the three two-bedroom cottages that all overlook the vineyards.

There is a pool, tennis courts, playground and BBQ area and also some farm animals, so plenty to keep all ages happy and engaged.

The wines have won their share of awards over the years, particularly the Semillon and Shiraz. All the wines are small batch and estate grown. Tastings are $5pp and include homemade sourdough served with delicious, infused olive oils. Bookings are recommended.

If it's a tour you're after, at just $25pp, one of the family will take you through the vines to gain a deeper understanding of the wine making process followed by a wine tasting.

A unique experience that Connie offers is the opportunity to learn sourdough bread making, a passion of hers.

"I started baking when I was on maternity leave in 2016 and I just love it. We use the bread in our accommodation breakfast packs and in the cellar door during the wine tastings. I came up with the idea of teaching others as I have a teaching background and we offer sourdough breadmaking experiences for small groups – everything from demonstrations only, to a full masterclass".

Located on the Lovedale side of the valley, just a twenty minute journey from Pokolbin or Maitland, the drive is pretty and the experiences are unique, family-run and personalised, particularly worthwhile for those looking to learn more about wine.

SHIMMERY & DELICIOUS Just Like Summer!

WORDS DI VON ESSEN

Small Mouth is a small family-run distillery specialising in hand-crafted, quality spirits, including shimmering vodkas and gins, using only premium and organic ingredients. The vodka boasts a full flavour with a long, smooth finish. But that's not all you'll find in their tasting rooms at Hunter Valley Gardens.

Small Mouth Vodka has been online for years, but since the tasting room in Pokolbin was opened early in 2019, the team has been working hard to expand the range available for tasting and purchase.

"Small Mouth is a hand-crafted, premium spirit that is organic and vegan friendly. Our produce is distilled in traditional copper pot stills and uses freshly captured rainwater. In addition, we add edible glitter to our products so you can shimmer on the inside just like you do on the outside!" said co-Manager Jaydan Addis.

"Since the tasting rooms opened, we have grown our range and now have a fleet of gins, vodkas and liqueurs to offer customers."

Jaydan adds that he and the team have been surprised by the range of customers that walk through the doors, with everyone from freshfaced 18-year-olds to 92-year-old connoisseurs lining up to taste!

"For us, this is evidence that we are on the right track. We aim to create a premium and innovative product that can be used to make even simple cocktails unique and delicious. We're dedicated to providing a product that excites all ages," said Jaydan.

Small Mouth offers gins, vodkas, and liqueurs, ranging from 45%, 40%, and 20%. All products include edible shimmering glitter, so when you add any mixer with bubbles, the glitter will continuously move in your drink. Top sellers include the Shimmering Passionfruit Vodka, Shimmering Caramel Vodka, Shimmering Watermelon Liqueurs, and Shimmering Espresso Liqueur (which is perfect for cold winter nights). All are delicious on the rocks or with your favourite mixer.

Visit www.smallmouthvodka.com (for some Summer inspired cocktails, check out their recipes page), or drop in for a taste at Hunter Valley Gardens Shopping Village on Broke Road in Pokolbin and pick up everything you need to wow your guests at your next cocktail party.

INSTA-WORTHY & UNIQUE IN EVERY WAY

What’s a weekend in the Hunter Valley without finding that special place that we take great pleasure in sharing with the world – flooding our socials as we enthusiastically rave about our new find? While the Hunter Valley is not short of beautiful scenery, wonderful wineries and unique wine – there is now a fascinating and ultra-cool cellar door located in the picturesque hamlet of Broke that is, in a word – unique!

Ex-jockey turned winemaker David Fromberg opened his cellar door for his Running Horse Wines label in 2018 – almost two decades after he planted vines on his family’s 56-acre property at Broke. With such a beautiful landscape around him, David knew his cellar door had to be something special so that visitors could appreciate and experience the stunning views while enjoying his wine.

David is one of the few vignerons in the region specialising in aged wines, with his range including varieties of Semillon, Verdelho, Rosé and Shiraz.

“You can go through hundreds of cellar doors and never get to look at a range of wines that are so different,” David said.

Discover what everyone is talking about – it truly is a remarkable place to sit and enjoy some fantastic wines. For more information, visit www.runninghorsewines.com.au

Running Horse Wines cellar door provides a new look and experience to the Hunter wine region.

We at Running Horse Wines have been ageing our entire range of wines and have amassed an impressive, unique and true age worthy wine list that will take you on an adventurous ride to an unprecedented tasting experience.

The opportunity to taste and buy wines from 2005 to 2012, and also now just releasing the 2014 vintage, is very rare. Our classic aged range is comprising of the Hunter’s finest Shiraz, Semillon, Verdelho, Rosé and a Sparkling Rosé also being aged on lees for 6 years!

Running Horse Wines is open every day from 11am to 6pm.

From Monday to Thursday, please do not hesitate to call and confirm arrival as these hours can fluctuate.

Art & Wine Combine at Destination Winmark

Winmark Wines has a rich viticultural history, with a vineyard that has produced extraordinary fruit for more than 50 years. But did you know they also have a sensational art gallery that is home to some renowned Australian and international artists and a Sculpture Walk that provides the perfect opportunity to stretch your legs in the spring sunshine?

More than just a premium Chardonnay producer, Winmark is a destination in Broke that is well worth the visit, and with Christmas fast approaching, you may just find a bottle or two of Winmark wines, a painting, sculpture, print or piece of jewellery that could all be wrapped under your tree!

Owner and vigneron Karin Adcock, the former founder of Pandora Australia, never lost her passion for fine jewellery, and it was not long before the beauty of the Chardonnay leaves inspired a unique collaboration with TuaMea to produce exquisite pieces ranging from silver cufflinks to earrings, bracelets and sterling silver charms.

Karin has also curated a generous gallery offering framed posters to original paintings, superb wood grazing platters to small table sculptures, pottery vases to ceramic collectables.

And, of course, there’s the Chardonnays!

For half a century, the Winmark site has grown exceptional fruit with a proud history of producing highly acclaimed Chardonnay. Winmark’s recent win of the NSW Small Winemakers Best Young Chardonnay trophy is just the start of the praise for the Chardonnays being produced since Karin purchased the former Pooles Rock property and re-established the vineyard with a wine team of genuine and award-winning experts.

For the savvy wine enthusiast, the iconic Winmark 7 2 Chardonnay is the perfect addition to add to their collection. The icon ‘seven two’ heralds the move to produce a Chardonnay exclusively using premium fruit from block 4, planted with Penfolds clone vines in 1972.

With Winmark focused purely on producing Chardonnay, the Winmark 7 2 Chardonnay keeps fine company with Rusty’s Run, Winmark Expressions and the Single Vineyard Reserve Chardonnay.

Enjoy a tasting at their Cellar Door, explore the Art gallery and sculpture walk with a barista coffee in hand. You won’t regret it! Open 7 days; visit www.winmarkwines.com.au for more information and opening times.

Lobster & Semillon SPRING POP-UP

Mount Pleasant has launched its sensational spring lobster roll and Semillon pop-up at The Laneway at the Cellar Door on Marrowbone Rd in Pokolbin. Every weekend throughout spring, guests can enjoy a lobster roll and a glass (or bottle) of the 2017 Lovedale Semillon and 2022 Estate Grown Semillon. Mount Pleasant's famous Semillon.

Lovedale and Semillon are one of the best wine-land combinations. Planted by Maurice O'Shea in 1946, the Lovedale site is a true viticultural marvel. Having been considered completely inhospitable for growing vines, O'Shea recognised this section of ancient sandy sea-bed for its true potential. As a result, Mount Pleasant is now famous for its Semillons.

Curated by Justin North in collaboration with head chef Kyle Whitbourne, the kitchen team has sourced local Eastern Rock Lobster and chosen an artisan milk bun to create the ultimate lobster roll to pair with and showcase Mount Pleasant's Semillon offerings. The divine bites will be available for just $19 (wine additional).

"We wanted to create the perfect spring pairing for this limited-time offer. Taking into account the balance of flavours required between food and wine, we chose to use creamy yuzu mayonnaise and semi-sweet bun to help to offset the dry Semillon," said North.

"Because of its acidity, our Semillon is the perfect match for the sweet flesh of shellfish and seafood, especially lobster. We wanted to introduce it as a special offering to showcase our wine's versatility and the broad range of foods they can be paired with," added Chief Winemaker Adrian Sparks.

Due to the popularity of the pop-up and demand for lobster rolls, they've now been added as a regular menu item in the cellar door as part of the wine-tasting experience. The Laneway will be open for the pop-up every Saturday and Sunday from 11:30am-2:30pm until the end of November.
