T
here are few things more satisfying to watch in the art world than a sculptor at work. To witness creation from imagination, right in front of your eyes, what wasn’t previously there. I’ve always been amazed at what the human mind can do, and artists remind us daily of its limitless possibilities. But there is something to be said about a sculpture. Have you ever watched the hand and eye coordination of a sculptor at work? It is truly breathtaking. And they make it look effortless. As I said the word “sculptor,” did you not, in your mind’s eye, picture a man with clay and a knife carving away to create some vase or statue? What if I told you the sculptor I'm talking about has a hand full of glass, and from that glass he creates wonders. His name is Dale Chihuly. Maybe you’ve heard of him. But if you are new to his work, as I was not long ago, let me explain. He is a glassblower. He heats glass up until it becomes a limbo melted form, ready to be bent, twisted and molded into any shape. Then, he uses human air and colors to create fascinating objects. Who is the Glass Man? Dale Chihuly was first exposed to glass as
an art while studying interior design at the University of Washington. He then enrolled in the United States’ first glass program at the University of Wisconsin. He has been making visual miracles ever since. Chihuly Garden and Glass The Chihuly Garden and Glass exhibit in Seattle displays much of this artist’s amazing works. There are many attractions to see while inside, such as the glasshouse, garden and galleries. You can also attend an audio-directed tour. From the first sight of the glasshouse, I could only describe it as a “visual wonderland.” It looked to me as a candy shop would to a toddler — a world of whimsical fascination! The Magic Starts Before You Enter the Glasshouse Chihuly often works with crystals, and he uses them for the centerpiece entrance at the exhibit’s glasshouse. He creates statues of rough blue- and pink-shaped crystal rocks, which are placed on top of one another to create a beautiful doorway entrance piece, with some reaching as high as the glasshouse itself. The statue of crystal teases more creative masterpieces inside. But once inside, the promise is delivered.

Inside the Glasshouse of Visual Wonders Inside the glasshouse hangs a trail of red and orange flower-shaped objects gleaming from the glass window. This view is especially beautiful at night, as the light from the trail of floating flowers illuminates the ambiance. The trail follows your every move, stretching from the beginning of the glasshouse to the end, hanging almost in arm's reach of visitors. The Visual Wonderland Garden Chihuly finds his inspiration in nature, and his exhibition garden proves it. He blends glass objects with the natural garden, making every piece fit as it belongs. Green and red glass objects in the shape of large tulips grow from the ground beside the many live plants. His glass tree mixes so perfectly with those of the natural garden you’d need to touch it to distinguish the difference.

Learn While You Explore The guided audio room tour has a variety of colorful flowershaped objects implanted above the inside glass ceiling, teasing for touches. The view is satisfying, and entices the visual senses. It resembles a burst of colorful bubbles just as they are beginning to lose form. Chihuly uses a rainbow of colors, and it is perfectly pleasing. There aren’t enough words to describe such an experience — the magic is in being there in person. Come on by and try a meal you will want to keep, not just eat. When I first walked into Sushi Bay Kitchen & Sake Bar, the clean, modern interior immediately caught my eye. Hanging from the high ceilings were three-dimensional, triangular lights that dangled above black leather booths and chairs. The seats were spaced out and arranged around quality, textured wooden tables. I was greeted and seated in the far left corner by a large, glass window. Each table had a clear dish in the center with little flowers inside, paired with black chopsticks, laid over a folded napkin with a rose printed on it. My server was professional, sweet and attentive. I ordered the lunch special, which came with miso soup and two classic rolls. The sushi arrived in a timely manner, served on a rectangular black stone platter. Each piece of hand-rolled sushi was neatly stuffed and wrapped. Everything looked, smelled and tasted fresh. Restaurant owner and head chef Chen told me he aims to catch first the customer's eye, then their taste. The menu features a variety of a la carte sushi rolls, sashimi, appetizers and hibachi. Vegetarian and gluten-free options are available. A popular fan-favorite appetizer is the signature Sushi Taco. Beverage options are also varied. They even offer milk teas,
which you can add bubbles to, if you please. Must-try desserts include the many different flavors of Mochi Ice Cream. Chen and his wife Mossy opened Sushi Bay restaurant in October 2020. Chen was trained by master sushi chefs for more than 15 years. His first master chef once said to him, "If you work hard, you cannot fail." That is why the couple puts so much thought and care into all aspects of their business. From management to customer service, to food and cleanliness, the restaurant does a phenomenal job at expressing Chen and Mossy's values of personal connection and high quality standards. They invest because they care. Their business is their baby. And once you meet them, you will see why they are the heart of Sushi Bay.

I
magine acres of land full of vibrant colors from fruits and vegetables, sweeter than the supermarkets and with 75% more hydration in every bite. Best of all, the crops are free from pesticides and chemicals. To some, this remains a dream, but to Paul Gautschi, an organic gardener with more than 55 years of experience in natural gardening, this has become an everyday reality. He is locally and nationally known as a master arborist, a garden guru. He has assisted millions in taking their health into their own hands by teaching the benefits of healthy eating and natural gardening, and by allowing people all over the world free access into his garden. I had the honor of speaking with the man responsible for such wonders. The man who revolutionized the gardening world, simplifying it to exist without fertilizers, cultivation, pest control, crop rotation or watering.

The garden of your dreams is closer in reach than you think. It doesn’t matter whether you reside in the countryside or inner-city, or If you have ample or limited amount of space, you too can have an all-natural garden. Gautschi has given us the master tool to achieving this, a key that unlocks into a garden of ease, so you can enjoy the abundant fruits of your easy labor and close the door to soil tilling and other grueling gardening activities. The tool is: “covering.” Yes, covering, preferably with woodchips, but I will explain later. Or better yet, Gautschi himself will explain later. But before we dive in, here is a little background on the
man who discovered the master tool and how he did it. A GARDENING DISCOVERY Paul grew up in Los Angeles to two parents who grew their own produce. After he married and had a family of his own, he no longer felt Los Angeles suitable to raise a family. He migrated to Seattle, but his gardening journey wasn’t initially easy. His yard was covered in rough gravel with little water drainage or room for soil ventilation. Growing frustrated, he asked God to show him another way. While standing in the woods behind his backyard, he looked down and saw the ground covered
in leaves and woodchips. He peeled back the covering to find soil so rich and moist he nearly screamed. All his hard work, and the answer was simple and resting in his own backyard.
Gautschi immediately went to work covering his backyard with everything from leaves, rocks, grass-clippings, and woodchips. He found woodchips to provide the best results as they retain moisture when needed and release it in drought. Discovering this, he switched solely to using woodchips. He said he learned that soil is like a “living organism.”

"Just like any other living organism, the soil needs covering for protection,” Gautschi said. “Humans have skin, animals have fur or feathers, and fish have scales. Cover the soil and it will live, don’t cover it and it dries up and dies. It’s as simple as that.” If you were to take a walk in the woods, forest or park, you would notice the soil is never exposed and that plants grow in abundance without the interference of man. No one fertilizes, waters or tills the soil out there, and still, these places produce such massive greenery. Nature knows exactly what to do. There is a natural cycle that completes this process. Leaves grow around spring, and come fall, the leaves turn brown, falling from the branches and covering the soil. They begin to break down into the soil, making it richer than before. It is a beneficial cycle to the existence of life. As gardeners, if we follow this same process in our backyards, we will reap the same rewards. NO LIMITATION, NO EXCUSES Contrary to popular belief, you can accomplish this without a massive backyard. Gautschi has a one-word solution for those in inner-cities, apartments and small spaces. That word is “containers.” “Get containers, just like you would with a house plant, then lay woodchips or some other type of covering over the soil.”

And if you find yourself without good clean soil or the means to obtain it, Gautschi recommends “putting woodchips on the ground. They will break down over time, returning back to dirt. The beautiful thing about nature is nothing is ever wasted.”
ORGANIC
GIVE ME ORGANIC OR GIVE ME…
The market for organic food has grown significantly since the 20th century, becoming a multi-billion-dollar industry. But not everyone feels the same about the label “organic.” As Gautschi has so openly said, “the word organic has become eroded. Organic food just doesn’t taste good anymore because it’s lacking in minerals.” “When people tour my garden, they are amazed at how sweet the kale is. They never had sweet kale, but everything in my garden is sweet, because it has minerals,” he said. “Food can lose minerals in as little as 10 minutes after being pulled from its root, and dead food cannot give life, only live food gives life.” Studies show that most fruits and vegetables are harvested before they are ripped for longer shelf life. But in doing so, some think, as Gautschi would agree, it also sacrifices the nutrients and flavor of our food. When asked if he goes to grocery stores at all, he lovingly chuckled and said, “I go for dog food.” ARE WE OVEREATING TO OVERCOMPENSATE FOR LOSS MINERALS?
Most Americans enjoy a large breakfast followed by a lunch and dinner, and a few snacks in between. But not Gautschi. His typical day consists of an apple for breakfast, no lunch, and for dinner, he goes picking through his garden. “When you have nutrient-dense food, you don’t need to eat as much,” he said. “When people find themselves eating a lot or constantly hungry, it is because they are eating foods lacking in minerals.” Could this be the reason behind the three meals a day with snacks in between health advice we Americans so often receive?

The people who toured his garden wanted him to write a book, Gautschi said, but he is “ not a good multitasker” and didn’t think he could tend to his garden while writing. “I was standing in my garden one day talking to God, asking how I can get this information out to the world,” he said. “Then shortly after, a friend of my wife, from our church, came by to see the garden and said, ‘This needs to be documented.’ That was the start of [the film].” The film's success was astonishing: it hit 50 million views with no advertising. “People still reach out to me today, some people that have just seen the film for the first time, looking for information and advice on how they can do the same with their garden,” Gautschi said. “Back to Eden” documents Gautschi’s journey to establishing his garden. It acts as a step-bystep guide to achieving an all-natural garden
with groundwork in the beginning and less maintenance than traditional gardens thereafter.
WHAT IS THE BACK TO EDEN GARDENING METHOD?

The “Back to Eden Gardening Method” is simple. It follows the natural flow of nature — the same process you would find in areas where man has not been. It starts by peeling back the soil to place the seeds in the ground. Once the seeds have been planted, do not add covering until the they have sprouted above surface. Until then, continue to water as usual. Once the seeds sprout, add a covering to the soil. It can be rocks, leaves, grass clippings or woodchips. Then allow nature to take over from there. Nothing else is needed but to harvest in due season and to add compost, of your own making, from food scraps and natural brown material, every three to six months. Compost will increase the condition of the soil until it becomes what gardeners like to call “topsoil.” Not only does this process protect the soil, but it eliminates the need to water, fertilize and cultivate, leaving the soil richer than before and producing a better yield each year. As Gautschi says: “Your soil will get richer and your food will get sweeter.”
