VIRGINIA TECH DUCK POND by Ghada Scotto
>>
Looking for a new picnic site? An outdoor wedding venue? Virginia Tech Duck Pond is a marvelous site to explore. Ducks come from all around to visit the pond because of its size and location — it is a resting area for migrating ducks when winter subsides in Blacksburg, Virginia. Virginia Tech Duck Pond was artificially made in the 1930s and is home to Canadian geese as well as a variety of ducks and fish. The pond is used for educational purposes throughout the university. The duck pond has a gazebo that many localists enjoy using. It faces the water and is the focal point for many pedestrians. It is attached to the trails that many joggers and bikers benefit from.
The house by the duck pond, Solitude, is one of the oldest structures believed to date more than 200 years ago. It served as a residence that was on a 250-acre farm that became a part of Virginia Agricultural and Mechanical College in 1872. Stroubles Creek runs through these lands, which are made up of northern Virginia springs. A large black willow tree, a favorite among students, lies in the main branch of Stroubles Creek. Virginia Tech Duck Pond has a lot of history running through it and is a beautiful site to see, to say the least. It is a peaceful and joyful park filled with many families, students and active joggers. Make sure to stop by and enjoy the wonder and beauty that the Duck Pond has to offer.

THE CHERRY BLOSSOMS
are blooming By Orianna Soriano
I
t’s officially spring. The sun’s out and if you're anything like me, you want to head outside, start up your car and hit the open road. My main suggestion is to drive to a place where there’s flowers beginning to bloom for the springtime. Cherry blossoms are breathtakingly beautiful during this time. A prime location to fully witness them is Washington D.C., as there is an annual festival to view the process of a cherry blossom bloom. Early April is always a good time to go and take as many pictures as possible. I love driving to the nation’s capital because no matter where you're coming from, you likely have the opportunity to also travel through other states. While taking in the views during the drive is an important step, there will also be plenty of places to stop for some sight-seeing. For me, this drive takes me through Pennsylvania, and as a history buff, it's always great to stop to see the Liberty Bell. Once in the capital, I love to stop at the many historical sites best known to our country, including the White House and Lincoln Memorial. Washington D.C. is also known to house international favorite fastfood chain, Nando’s, one of my personal favorites.

But perhaps you are not very interested in driving and would like to hop on a plane to travel and sight-see. Another obvious destination for watching the cherry blossoms bloom is Japan. A beautiful country with a rich and vibrant culture, the hours-long flight will be worth it once you touch down.515My highest Beach Road, recommendation Sarasota, FL 34242 on where exactly to go in Japan is Tokyo's Shinjuku Gyoen (941) 346-7196 | innonsiestakey.com

After years of civil war, Sir Lanka has pretty much fallen off the travel radar for a lot of people, however, in the last few years, tourists have started to return to the island nation in the Indian Ocean.
If you ever decide to take a trip to the beach, don't think local. Think outside the box. There are all kinds of beaches to attend, but the best ones have crystal blue water. That's why you should head to Half Moon Cay, Bahamas.
One of the many things that bring thousands of tourists to Florida every year is the weather. Escaping the teethchattering cold of winter or just the picturesque idea of a summer vacation on the beach is appealing to many.

hat is your favorite place to travel to? Where was the first place you flew to on an airplane? I'm sure a lot of people remember these experiences, as they are once-in-alifetime moments. For me, the first time I flew on an airplane, I was both nervous and excited, but, honestly, who wouldn't be? It was something so new that I didn't know what to expect. I remember what the airport terminal looked like that day, what the weather was like, and most importantly, what the destination looked like that I had traveled to — The Bahamas.
My family and I had decided to go to The Bahamas less than four months prior to the trip, so we were left having to book a flight with a layover and the room we had at the hotel was fairly small. But it was completely worth it. We left in November of 2015, and I was 14 years old. I remember the feeling of the airplane taking off and lifting into the air; it was magical. I remember getting these tiny bags of pretzels and a cup of soda midway through the flight. I stared out the window as the plane began to exit the United States and fly above the Caribbean Ocean — what a sight. The ocean water started turning blue, like really blue, like the type of blue you only see in movies. I had been to the Caribbean before, but I was so young that I don't really remember much about it. This color of the ocean began to turn into something more and more frequent as we neared closer to The Bahamas. By the time we were less than five minutes away from landing, the ocean turned into such a clear blue color that I almost couldn't believe my eyes — what a beautiful part of nature! It is so amazing to see how beautiful this world is. There are so many places I have yet to see and so many things I have yet to experience and I can't believe this world is completely filled with beautiful places like this.

I live about 40 minutes south of New York City, and even though I have pretty easy access to The Big Apple, that doesn't mean I'm there 24/7. There's nothing wrong with traveling to New York, of course; it's always a great time, but I personally just don't travel there as much as my neighbors and friends do. New York City is such a wonderful and amazing place to be, yet I've really only seen the touristbased parts of it such as Times Square and The Rockefeller Center. Though beautiful, especially during the holiday season, I really don't know much about either of them. I know that tourists travel here from all over the world just to see The Statue of Liberty and The Empire State Building, but there is so much more to NYC than New York pizza and Broadway.
As tourists, we tend to only want to see what the media tells us we want to see, but New York City is one of those places that offers so much more than that. This goes into my point about The Bahamas. I traveled there already knowing what hotel I would be staying at and what activities were nearby, and came in with this expectation of what the hotel would be like because of the countless reviews I read on travel websites. However, I got to experience so much more than what those reviews told me. One of the most interesting and beautiful parts about my trip to The Bahamas was an excursion my family took to an island about an hour away from the mainland. Not only was this one of the best decisions we made while in The Bahamas, but it is something we continue to talk about to this day. We booked a last-minute excursion to Blue Lagoon Island, a small island off of the mainland that had restaurants, stores, water activities and dolphin encounters. The ocean water was significantly clearer than by the mainland and there was practically no noise — just the sound of small waves crashing onto the beach and the sound of families enjoying their vacations. Nothing could top that moment.

It was here that I realized how much of this world I haven't seen. We all say we want to travel the world, but very few actually get to. Here, I realized how lucky I am. I have had many difficulties presented throughout my life, but this moment made it all worth it. I remember standing in silence on a small boardwalk that overlooked the ocean. There was no sound, no noise, no voices; just waves, just nature. I remember taking my phone out and snapping as many pictures as I could get because I knew I had to remember this very moment exactly as it happened. Being able to see the ocean waves crash onto the rocks at the shoreline made me truly appreciate this trip and my life. This moment was so peaceful and calming; I wish I could go back in time to it every day. The hotel we stayed at was nice. It wasn't great, but it gave us a place to sleep and eat, and that's all we really needed. Needless to say, the food at the hotel was amazing.
The hotel offered a number of dining options, one being the buffet, which was open for breakfast and dinner to all guests and there was a smaller restaurant where guests could get lunch right next door to the buffet area. The breakfast buffet had many typical options such as pancakes, cereal and muffins. However, the dinner buffet was always different. . The hotel offered different types of foods from different countries each night, which was great. Not only were we able to eat delicious food, but we were able to experience new cultures and try foods we may have never had the option to try if the hotel hadn't done this every night. There was always a dessert section, too. The food is definitely something that would make me want to stay there again. One thing I loved about this hotel was the nightlife — and I don't mean bars and clubs, but the atmosphere late at night. The hotel had late-night shows for guests to watch in a room near the bar, along with a number of outdoor seating options for use at all hours of the day. Honestly, this was one of the nicest features of the hotel: being able to sit outdoors any time of day without fearing that the area might soon close I honestly think traveling to The Bahamas was one of, if not the best vacation my family and I have ever taken. Besides our trip to California, this trip was definitely something I wish I could go back to.

Europe Chronicles.qxp_Layout 1 4/13/21 2:38 PM Page 2
If you like visually stunning buildings, then you must check out Vienna, Austria, where you will be smitten with old-century-style buildings. And beyond just city's buildings, this gateway to Eastern Europe offers many activities, too. To cover all of Vienna's top attractions, it would take about a week or two depending on your pace. The city is quite touristy, so you will find every tourist trap there is. From the huge chapels to palaces that will make you melt in wonder, Vienna boasts a lot when it comes to architecture. Two great spots to check out are the Vienna State Opera House and The Hofburg. Some attractions are right next to each other, so find other attractions along the way as you go throughout the city. If you have a sweet tooth, you must stop at one of Europe's oldest bakeries. Demel was established in 1786 and is still going strong. The long line is certainly worth getting a bite from this historic bakery, especially if you get the Sachertorte, a chocolate dessert that will make you stay for another slice.
Don’t let all that this city has to offer stop you from visiting the rest of the country. The Austrian countryside is a nice complement to the city. I unfortunately didn’t get to visit this part in my journey, but hope to go back in the future. Here are some photos a friend of mine took that make me jealous of not having gotten the chance to visit this wonderful countryside. Overall, Vienna is a great city, but the only downside is that there are a lot of tourists. But, this does mean you'll see and meet people from many different countries. Vienna is an easy place to travel to, and whether you fly to the Vienna International Airport or take a European road trip, you will have a blast. Take the chance if you have it because Vienna, Austria will be a good time well spent.

Chateau Morrisette WINERY Chateau Morrisette winery is one of the most beautiful wineries I’ve ever had the pleasure to encounter. This wonderful winery is located in Floyd County, Virginia. It is set to face the Blue Ridge Mountains at an optimal viewpoint of 469 miles, which sets a romantic and breathtaking scenic view.

It wasn’t until 1981 that the winery's name was changed to Chateau Morrisette Winery. Four years later, Chateau Morrisette began wholesaling their locally crafted wines. The winery offers a wide selection of wines to please an array of pallets. Just behind the main entrance are the grape vines, where you could enjoy a leisure stroll while enjoying some hand picked grapes. Two main buildings comprise the Chateau Morrisette establishment. KEUKENHOF HOLLAND THE GARDEN OF EUROPE
H
ave you ever pictured yourself walking through a heavenly field of flowers while enjoying the cool, spring air in a small, European town? If that is the type of vacation you are looking for, then look no further. Keukenhof Park is a breathtaking flower garden located in a town called Nisse in the Netherlands. It is also called the Garden of Europe and is considered one of the largest and most beautiful flower gardens in the world. There are millions of flowers of different varieties, but the park’s most special flowers are the seven million spring-flowering bulbs. With relaxing boat rides, cycling through the garden and fun activities for the kids, Keukenhof Park is the perfect place for anyone to enjoy their European vacation with family and friends. HISTORY OF KEUKENHOF PARK The park dates back to the 15th century when Countess Jacoba van Beieren picked fruits and vegetables from the Keukenduin (kitchen dunes) for the kitchen of Teylingen Castle. The castle was built in 1641 and grew to encompass around 494 acres. The landscape architects, Jan David Zocher and his son Louis Paul, restored the castle gardens in 1857. That same park, in the English landscape style, is still a part of the basis for Keukenhof. In 1949, a group of 20 flower bulb growers and exporters created a plan to use up the estate and exhibit the spring-flowering bulbs, which is how Keukenhof was born. It is now one of the world’s most popular attractions. 2021 will be the park’s 72nd anniversary, with "A World of Colors" as its theme.

INSPIRATIONAL GARDENS These are just a few of the flower gardens Keukenhof Park has to offer that will surely bring some joy into your day:
1. Tropical Beach Garden
2. Green Tea Garden
3. Cottage Garden
This tropical garden will make you feel as if you are actually on a beach surrounded by emerald green palm trees and tropical flowerbeds. Take a nice stroll through the soft sand and even relax on a hammock if you are feeling a little tired.
Have you ever wondered where exactly tea comes from? This garden will definitely answer that question. The Green Tea Garden has a huge selection of various herbs that are used in teas such as mint, lemon balm, chamomile and chocolate mint. You can also enjoy a cup of tea or coffee in the garden’s greenhouse. What better way to spend your vacation than sipping tea in a beautiful European garden?
If you are really into the cottage core aesthetic, then you should surely visit this garden. The Cottage Garden has a colorful variety of indigenous wild plants and flower bulbs that will light up your day. It is the perfect place for anyone to tell fairytale stories, have a picnic and play music after having a long day outside.

“TONE OF THE MOST ROMANTIC SPOTS OF THE PARK IS THE RED ROMANCE GARDEN,.“
RED ROMANCE
4. Mystical Garden This garden is what I would like to call the epitome of serenity. The Mystical Garden has a combination of serene beauty and peace that will soothe your soul and mind. Become one with nature and relieve your body of life’s stresses. 5. Red Romance Garden One of the most romantic spots of the park is the Red Romance Garden, where you can share your love with your family, friends and significant others. It is an excellent place to have a romantic photoshoot with your partner as well, with a statue of Cupid in the background. THINGS TO DO Whisper Boat Ride and Cycling After having a hectic day from strolling around the park, you can sit back and relax with a peaceful Whisper Boat ride that takes you through the Dutch landscape around Keukenhof in an electronically propelled boat. The trip is around 45 minutes, and while you enjoy the beautiful landscape, the boat will enrich you with infor-
mation about the flower region. You can also have an amazing view of the surrounding area by cycling (tandems are also included) and is available for both adults and children Children’s Activities There are also many fun activities for kids to enjoy at the park, including running around the playground, getting lost in a maze and petting animals at the meadow. There's also an exciting adventure with a scavenger hunt that you can pick up at the entrance. The sheet is full of facts, challenges and brain teasers about tulips, and once they are done, the children can pick up a gift from the information desk at the entrance. Keukenhof Park is probably one of the most beautiful destinations you will ever visit, and is a mustsee for anyone who travels to the Netherlands. With its colorful range of flowers and plants, any traveler will fall in love with the park’s natural beauty and wonder. The park will be open from March 20 through May 9, so make sure you book your tickets soon. For more information on the Keukenhof Park, you can visit their website keukenhof.nl/en/.

OREGON'S N AT U R A L ES C A P E
E
ugene, Oregon is a quaint college town with a culture all its own. The city is made up of several quirky neighborhoods, and one of my personal favorites is the Whit. A hip little neighborhood a few blocks west of Downtown, it serves as home to many of the local artists, multiple breweries, tasting rooms and yummy food. When I’m in the area, my first stop of the day will be to the Wandering Goat Coffee Co. I’ll grab a caramel steamer, open up my journal and relax outside. My favorite part about this place is that people will start a conversation with you. From tarot card readings and books about spirit animals to a great game of Connect 4 with a stranger, this place has a knack for attracting people who will open up and share a story with you. After enjoying my coffee and interactions, I'll waltz over to explore the Owen Rose Garden, which reaches its peak from midMay to mid-July when more than 400 varieties and 4,500 roses are in full bloom, according to the website. It’s refreshing to relax in the rows of roses and smell all the potent scents, take a leisurely stroll along the Willamette River and enjoy people watching. The river is a hot spot in the summer for inner tubing, swimming, fishing, barbeques and feeling the wind in your hair on the best bike trail in town.

COLLEGE
EUGENE, OREGON IS A QUAINT COLLEGE TOWN WITH A CULTURE ALL ITS OWN.
After a full day of outdoor activities, spend the night cozied up at Izakaya Meiji Company, where east meets country western. Settle up with some Japanese comfort food and a selection of more than 100 whiskeys. For a change of scenery and some live music, head out to Sam Bond’s, which was voted “Best Bar of Eugene” in 2020. It would truly be a travesty of a trip to Eugene, though, if you didn’t make it to the Saturday Market. Wake up early Saturday morning for local music, artisans and a surplus of fresh food. I can spend hours here getting lost in all the entertainment and high-quality items including homemade kaleidoscopes and hand-painted cards. From there, a short walk can have you spending the afternoon hiking around Skinner’s Butte for amazing views of the valley below. Skinner Butte is a prominent hill on the north edge of Downtown named after the city founder Eugene Skinner.
After this relaxing adventure, head back down to the Market District and check out the Smith Family Bookstore, one of the oldest independent bookstores in Oregon. For dinner, grab some fish 'n chips at Steelhead Brewery & McKenzie Brewing, a local brewpub with a British atmosphere. Another great option is hiking up to Hendrick’s Park, the city's oldest park, where you can see the city from another point of view. The 78-acre park is a little over a mile away from the University of Oregon, and contains a mature forest, a 12-acre rhododendron garden and a native plant garden. Afterward, you can enjoy a stroll around the University of Oregon. Then grab a slice of pizza and a garlic knot at Sy’s New York Pizza and watch an indie flick at the local Bijou Art Cinema.

S TAY U P ALL NIGHT IN ORLANDO by Shivani Goswami
H
ave you ever found yourself in a huge city like Orlando, Florida with your friends, and you are trying to figure out some fun things to do at night, but you can’t decide where to go? I totally get it. I don’t blame you for being confused. Orlando has so many nightclubs, bars and hangout areas to visit that you can’t figure out where to go first. Well, I am here to help: here is a list of some of the coolest and most popular nighttime attractions in Orlando that will have you partying till the early hours of the morning.
1 DRIP Prepare to get messy with paint as you become a part of this unique painting performance called DRIP. This one-of-a-kind show is a full-on theatrical love story with dancers performing in paint, flying water and sand with a live rock band in the background. The performers splatter paint everywhere, including on the audience, so make sure to wear clothes you're willing to get messy. This venue is only for people 21 and over, and is inside an industrialstyle dive bar. Upon entering, you'll get a DRIP white T-shirt that you can paint with your friends and enjoy some colorful drinks based on the performance. You cannot miss out on this unique, interactive nightlife experience that will leave you a colorful mess. If you would like more information about DRIP, you can visit their website ilovedrip.com.

Universal’s CityWalk
2 ICEBAR ORLANDO If you are looking for some stimuHave you ever wondered what it would be like party in an igloo? Well stop wondering and say hello to the ICEBAR Orlando. The ICEBAR has been named the largest ice bar in the world with more than 70 tons of carved ice! It has also been featured as one of the top 10 bars on the Travel Channel’s “Extreme Barhopping” and “America’s Best” on the Food Network. You'll enter through a Fire Lounge, where you will be greeted by an Ice Princess, who will prepare you for the Arctic journey that lies ahead. Make sure you wear warm clothes because it is icy cold in there. (You will also be provided with thermal coats and gloves.) Once you have entered
the bar, you can kick back, relax and enjoy some delicious, chilled cocktails. The ICEBAR is probably one of the coolest (and I mean that literally), most exclusive bars in town, so if you're looking for a fun but unusual attraction to visit, this is the perfect place for you. For more information about the ICEBAR Orlando, you can check out their website icebarorlando.com.

UNIVERSAL’S CITYWALK
Along with the thrilling, adventurous Universal Studios and Islands of Adventure, Universal also has an amazing hangout area called CityWalk, which is considered the "Epicenter of Awesome" in Orlando. If you thought Universal Studios and Islands of Adventure are wild, CityWalk gets even crazier at night. There are so many clubs, restaurants and
other fun activities to try out, you will never get bored. Grab a margarita from Jimmy Buffet’s Margaritaville, marvel at the enormous Willy Wonkainspired chocolate factory Toothsome Chocolate Emporium & Savory Feast Kitchen, and have a rocking dinner at the Hard Rock Café. I have been to the Chocolate Emporium many times, and it really does feels as if you have stepped into a mini Wonka factory with several types of candy and chocolates surrounding you. It can satisfy anyone’s sweet tooth. But don’t forget to check out the other activities like becoming a singing star at CityWalk’s Rising Star or enjoying a game of mini golf at Hollywood’s Drive-In Golf. Whatever you choose to do, you are surely going to have an unforgettable time. For more information about Universal’s CityWalk, you can visit universalorlando.com/web/en/us/themeparks/citywalk.

RAGLAN ROAD IRISH PUB Nobody parties big like the Irish do! If you are looking for a grand old time filled with drinking, singing and Irish dancing, then come on down to the Raglan Road Irish Pub. This pub, located in Disney Springs, really comes alive at night starting at 5 p.m. with the Raglan Road troupe entertaining the crowd every hour on the hour. Along with the crazy entertainment, enjoy old-fashioned Irish dishes such as Bangin’ Bangers and Mighty Mash, Shepherd’s Pie, Fish and Chips, and classic Irish beers, whiskey and wines. Anyone will love this pub and have such a good time, whether you are Irish or not. You can visit the Raglan Road Irish Pub website at raglanroad.com for more information.

“ORLANDO IS SO FULL OF
EXCITING
EXCITING
NIGHTLIFE THAT YOU
WILL NEVER HAVE A HARD TIME FINDING SOMETHING TO DO.”
5 DISNEY SPRINGS Now this is one of my personal favorite hang-out spots in Orlando, mainly because it is Disney related! Disney Springs is the official downtown hang-out area of Disney, and it is one of the best ways to get all the Disney magic without paying for the parks. There are various kinds of restaurants, shops and entertainment that will definitely leave you with magical memories. Satisfy your sweet tooth at the new and massive M&M store, try out different Coca-Cola flavors at the Coca-Cola Store Beverage Bar or have a tropical style meal at the famous Rainforest Café. I would also recommend going to the Ghiradelli Chocolate Shop and pick up a chocolatey treat or even try their beverages at their Soda Fountain. I love getting the Ghiradelli Root Beer float because they put a nice, cold scoop of vanilla ice cream on top that will satisfy your taste buds after a hot day. They also give out free chocolate as you enter the store. And if you're looking for Disney merchandise, there are stores at every corner where you can buy any and every kind of Disney product.
Hop on over to UNIQLO for a more stylish (and affordable) take on Disney clothes or visit the World of Disney for the typical, touristy merchandise. As much as I love Universal’s CityWalk, Disney Springs always hits home for me more since I am a Disney girl. If you would like more information about what else Disney Springs has to offer, you can check out their website at disneysprings.com. Orlando is so full of exciting nightlife that you will never have a hard time finding something to do. With unique bars to try out like the ICEBAR, entertaining nighttime performances and lively hangout areas like CityWalk and Disney Springs, you will literally be up all night partying until morning. I hope this list will help you find that perfect place to spend your night or go ahead and visit all of them. Wherever you decide to go, you will definitely have the time of your life.

Athens' best kept secret is tucked an hour and a half outside of the city. It’s worth every second of the super adventure you’ll experience through the various sights and sounds of city transit. This is truly the best day-trip you can experience if you’re on a long travel adventure and need a break to decompress and relax from it all. Tucked away from the shallow beaches of the peninsula, Lake Vouliagmeni is a short walk down winding paths along pristine shades of cool blue and green waters. At the entrance, you’ll pay a small fee of 12 euros and be given a locker to hold all your valuables. Then you’ll find a Mediterranean daydream of half-dressed locals sunbathing in beach chairs on the wooden deck surrounding the shores of the lake. Upon entering the waters, you’ll squeal with glee when the tiny fish start nibbling at your feet — boasted as the best natural pedicure in Athens. If you’re a bit squeamish, no worries, a few yards out and you’ll forget they even exist as you bask in the Mediterranean sun and bathe in the replenishing natural waters. All your cares will drift away and you’ll wonder how you ever discovered a place so magical on this planet called Earth. Travel doesn’t always
have to be such hard work. According to the official Lake Vouliagmeni website, “The imposing rock, thermal waters, the labyrinthine underwater tunnels and the lush vegetation create a unique geological phenomenon. The lake’s present form was created after the roof of the cave fell because of erosion caused by the high temperature of the running water running. The lake is included in Greece’s national NATURA 2000 network and as a Site of Outstanding Natural Beauty by the Ministry of Culture.” Open year-round from 8 a.m. until 6 p.m., the best time to arrive is 1 p.m. to enjoy the breathtaking views and a cool swim before taking in all the afternoon sunshine all while enjoying the haute cuisine from the café restaurant and bar NERŌ. After lunch, you can further explore the crystal-clear waters and digest while floating under a clear blue sky. Then you can finish off the evening relaxing by the waters on the fresh wooden deck. Finish the day off with a sunset stroll along the Athenian Riviera and a quick dip in the Mediterranean before embarking on the relaxing journey back home. So dive right in. The air is warm, the waters cool and the tiny fish tickle your toes while they nibble your feet.

Katz's Delicatessen.qxp_Layout 1 4/13/21 2:01 PM Page 1
////////////////////////
Katz's Delicatessen Brooke Abernathy
by Brooke Abernathy
Standing in Katz's Delicatessen, New York's oldest Jewish deli, is a snapshot back in time, soaking in more than 130 years of history. I found myself admiring the old photos hanging on the walls that tell this iconic institution's story. Jewish deli food dates back to the late 19th and early 20th centuries, when a mass exodus of Eastern European Jews migrated to Manhattan's Lower East Side, bringing along their traditional Eastern European values and culinary heritage. Deli owners introduced their neighbors to foods such as latkes, matzo ball soup, cured meats and pickled vegetables. Avid food explorers welcomed the chance to try something unexpected and inviting, making delis the new culinary playgrounds where old Jewish traditions met new American values.
Katz's deli is the nexus for Jewish nostalgia and tradition; it's the beacon that observes and upholds Jewish food customs. One way that Katz's protects its legacy is that it still cures all meats on-site. A salt brine enriched with pink salts helps preserve the pastrami and prevent it from spoiling. The pink salts also keep the pastrami a rosy color and enhance the flavor while the pastrami cures for two to three weeks.
Next, a flavorful spice rub consisting of pepper, garlic, onion, coriander and a few other secret ingredients are massaged all over the pastrami.
Katz's Delicatessen.qxp_Layout 1 4/13/21 2:01 PM Page 2
Now it's time to send the pastrami off-site to get smoked. Believe it or not, the smoker is about the size of a New York studio apartment, allowing Katz's to smoke thousands of pounds of pastrami at once, using their unique blend of wood chips. After cooking for two to three days at a low temperature, the smoky flavor permeates the meat and forms the crusty black bark on top of the pastrami. After the smoking process, the pastrami returns to the deli and is placed in boiling water for three to four hours to loosen the meat even further.
Steaming the pastrami for 15–30 minutes is the final step to get it as tender as possible, making it easier to carve by hand. Any Katz's veteran pastrami whisperer could tell you when the pastrami is ready to eat by just a few gentle touches. The pastrami process is a labor of love that takes three to four weeks to turn this unwanted fatty, tough-cut of beef around the navel into one of the most tender, juicy and flavorful pastrami ever to be made. Serving these sought-after sandwiches are the talented staff behind the seven old-school deli stations. They don't just make you a sandwich; they give you an experience. As you watch them build your massive sandwich, you notice how the cutter skillfully slices the meat thinly against the grain with exact precision and impressive knife skills. Nearly 2,000 people visit Katz's Deli every day and Katz's serves 10,000 pounds of pastrami a week, making the pastrami on rye with mustard — their most popular sandwich. This pastrami alone merits a trip to the Lower East Side to visit this treasured landmark. Make sure you bring your appetite to Katz's Delicatessen, not only for a meal, but an old-world experience.
