Lex on Tech 85 years of restaurants, technology and WRA By Lex Nepomuceno, executive editor This month’s cover of Washington Restaurant Magazine features artwork licensed from the Norman Rockwell estate. It is an actual cover of a 1957 Saturday Evening Post and represents so much of the differences and similarities between then and now. Let’s begin with the differences. If Norman Rockwell had created this cover today it may have had a multicultural presence. One of the characters might be a person of color, or the scene may take place in a Mexican restaurant or Asian café serving bubble tea. This type of cover artwork would likely include a web address, QR code or hashtag somewhere on the menu board or on one of the props. There also is a strong possibility that one or both of the kids would be sporting a smartphone. The food establishment would probably reflect more branding, a digital menu board and a point-of-sale system in the background. The food, the people, the props and the entire scene would likely be very different from what is depicted in this month’s cover. However, looking more closely, you will find more similarities than differences. Things like hospitality, relationships and the fact that these types of precious human interactions are taking place in a restaurant are the same today as they were 85 years ago when the Washington Restaurant Association was established. To this day, restaurants remain a “go-to place” for marriage proposals, big announcements, first dates or just family time. Regardless of color, culture or religion, restaurants remain a staple of communities no matter how big or small. This is the point we wanted to establish by featuring this delightful Norman Rockwell Saturday Evening Post cover for this month’s magazine. With all of the technology and trends we pay attention to as restaurant owners and business leaders, it is important to remember why we do what we do. Starting and running a restaurant is perhaps the most difficult type of business endeavor, yet we do it anyway. Despite rising costs, regulations and competition we choose to invest our time and money in the hospitality industry. 85 years is certainly a long time. In 1929, Scotch tape was invented, sunglasses hit the market and the car radio was introduced. These days, we have robotic vacuum cleaners and Netflix. However, all of the aforementioned innovations share one thing in common – they all improve people’s lives in some way. And restaurants? “Hospitality” is still in demand and there is no shortage of restaurateurs determined to meet that demand. Meanwhile, the Washington Restaurant Association remains just as committed to helping its members succeed today as when it started nearly a century ago. Here’s to another 85 years! ■

It’s been a special year for the whiz kids from Bonney Lake High School. This talented group of Washington students placed fifth in May at the National ProStart Invitational, the country’s foremost high school competition for restaurant management and culinary arts with participants from 43 states and territories.
“These kids are amazing. The amount of heart they put into this competition is tangible. We are so proud of them,” said Anthony Anton, president and CEO of the WRA. “This event is just one part of a program that teaches students about teamwork and real experience in the kitchen. The competition will be a life-long memory, and it’s a memory of achievement.” The competition is an annual milestone within the ProStart education. ProStart is a school-to-career program offered by the Washington Restaurant Association and the National Restaurant Association. It is designed for high school juniors and seniors. Students get classroom experience, training in workplace and food safety, paid internships with industry professionals and college credit while learning the art of cooking. ■ State unemployment at lowest level since 2008 The state’s unemployment rate dropped to its lowest level since the Great Recession started in October 2008. The state’s jobless rate is now 6.1 percent, according to data released last week. According to the state’s Employment Security Department, 7,700 new jobs were created in Washington, during April, on the heels of a revised gain of 8,300 jobs in March. With an average of 6,900 new jobs being created each month so far in 2014, Washington’s economy is generating jobs at a rate not seen since employers created roughly 7,000 jobs per month in 2005. “We are encouraged to see 11,000 new jobs in the restaurant industry over the past year,” said Anthony Anton, the WRA’s president and CEO. “We’re really interested in seeing next month’s Department of Revenue quarterly business review to see if this employment is being driven by restaurant growth or by a backlog of depressed hiring left over from the recession. The optimist would be impressed by the overall unemployment rate. The pessimist would be worried by the apparent volatility of the market.” For more information, go http://wra.cc/wra0614a. ■ Many restaurant customers reluctant to try new items A recent survey found that 70 percent of respondents order items they’ve had before when they visit a restaurant. Indeed, restaurant customers typically have such entrenched ordering habits that only 30 percent of customers will try a new
item in spite of heavily promoted new items and limited-time offers often used by chains, in particular, to introduce these products. Consumers generally try unfamiliar menu items based on perceptions of how they might look or taste, according to The NPD Group, the New York-based market research firm that conducted this study in October 2013. Customers also, however, may look at other factors like the healthiness of an item, its price point or healthfulness, the research found. For the full article, go to http:// wra.cc/wra0614b. ■ Restaurant spending, traffic looking up for 2014 After a flat 2013, restaurateurs can look forward to improvement in spending and the number of visits during 2014. “Although consumers are expected to be cautious about their spending in the coming years, our forecast for traffic and dollar growth for 2014 shows improved performance compared to 2013,” Bonnie Riggs, a restaurant industry analyst with the NPD Group, a New York-based market research firm, said in a statement. “Despite overall industry demand holding steady, there will always be winners — or those who can win the battle for market share.” While overall foodservice traffic was flat between Sept. 2012 and Sept. 2013, in comparison to the previous year, average spending rose 2-percent during this time frame. In 2014, however, overall restaurant traffic should increase by 1-percent while average spending should rise by 3-percent, according to NPD’s forecast. We’re really not that different after all
The first step toward recovery is admitting you have a problem. My name is Anthony and I am a numbers guy. So when several Seattle City Council members and staff requested Seattle-specific data on restaurants and the impact a higher minimum wage will have on local restaurants, we had to go out and get it. We had lots of valid statewide data but not city-only info. I was actually excited to learn the P&L differences between “high-priced” Seattle and the rest of the state. For years, rural and suburban restaurants would boldly state that their model was different than the “Big City,” and downtown restaurants would dismiss non-Seattle restaurant models as incomparable to what they have to go through in the Emerald City. Certainly there are differences between Seattle and those outside the shadow of the Space Needle: customer concentration, rents, parking issues, feasible menu prices, competition concentration, etc. I saw this in my dorkily miswired brain as a numbers “MythBusters” and looked forward to the results. More than 400 Seattle restaurants responded to the survey making the numbers extremely reliable. What did we learn? See for yourself:

It’s exactly the same. So, yes, the average Seattle restaurant does close to 150k more per year, but the costs offset the higher gross and at the end of the day, when you account for margin of error, it is exactly the same basic formula (this is where I get all giddy on the statistical probability of it).

So why am I telling you all of this? It’s because Seattle restaurants are about to dramatically change their core business model due to the new minimum wage. The full survey results (available on warestaurant.org) reveal what you already knew; the existing restaurant model fails a $15 mandate, and the model must change. If 2015 for Seattle is at all similar to 1999 for Washington as a whole, there is a predictive series of events that is likely to occur; everyone will try everything in order to survive. But after about three or four years, trends will emerge showing what the new model and industry mix will look like. The challenge will be that, unlike in 1998, the core labor force is much skinnier. We already employ three fewer employees per unit than the national average, so simply cutting staff won’t be easy, and the past six years of dramatically increasing food prices has also forced most restaurants to get really creative at controlling food costs. So with the low-hanging fruit wellplucked, we will likely need to turn to our partners for new ways to do business, and they will need to know your challenges to adapt to our industry’s new needs. The WRA’s annual Buyer’s Guide is meant to give you an industry-specific “Yellow Pages” on resources that can answer the following questions: How can technology help you get more efficient? What services can you outsource to control labor costs? If labor costs climb higher than 40 percent, what can be done to get that “other” 30 percent down? What legal and financial services are available to explore creative options? What are your other options for purveyors who no longer treat you like a valued partners and you can no longer ignore it? If you are in Seattle, please start asking yourself these questions today, and use the Association and this guide to help find answers. If you are outside of Seattle, remember that as of this moment in time, your core formula and those of your brethren in Seattle are likely very, very similar. The lessons that your vendors will learn in Seattle in the next few months can either be great efficiencies to help your business thrive, or roadmaps for navigating the political challenges in your near future. Surviving tomorrow will very much depend on the numbers. ■

Eighty-five years later, WRA still fueling restaurant success By Heather Donahoe, managing editor In 1929, a group of hospitality industry professionals began what is now the Washington Restaurant Association (WRA). They wanted the same thing their modern-day successors want—to be successful. That desire has buoyed the WRA’s endeavors for the past 85 years. Naturally, the decades have brought significant changes— both internal and external. Restaurant operators have evolved, grown, struggled and adapted in order to survive. As part of its simple mission—to help members succeed—the WRA provides important tools for the restaurant journey. Today, the WRA’s more than 5,000 members have come to rely upon the Association’s guidance in four key areas: political advocacy and representation, news and information, training and education and cost-saving programs. The WRA leans heavily on the restaurant industry’s wisdom and experience when setting its organization priorities. Every decision is influenced by the needs and challenges of the WRA’s more than 5,000 members. A series of memberled committees and boards ensure that each of the WRA’s departments set clear priorities and stay on track. Furthermore, the WRA’s close relationship with the National Restaurant Association provides dual membership with both organizations, expanding the volume of resources available to industry professionals. Political representation Every day while the state’s restaurant operators are hard at work, decisions are made in Olympia that can determine the success or failure of business operators. That’s why the WRA government affairs team monitors the state and federal political and regulatory landscape so restaurant operators can focus on their businesses. The WRA GA team is comprised of veteran -lobbyists, committed to giving the hospitality industry a voice. Over the past 85 years, this group of legislative professionals has developed the reputation, relationships and skills that are essential for defending the hospitality industry against damaging laws while promoting the regulations that make it easier to do business in Washington state. Government Affairs Team works to ensure you’re heard By Stephanie Davenport, communications advocacy manager
State restaurateurs are represented by one of the top political teams in Washington. This highly effective team was more important than ever this year as the industry faced battles on minimum wage increases, liquor pricing and regulatory issues such as the Washington state food code. And that was just 2014! Every year hundreds of bills are proposed at the state level that could harm or help your business. The WRA government affairs team is your voice on the Hill and in the hearing rooms where these measures are being considered. Even when the legislative session is over, the team continues to make sure WRA members are represented with state agencies and that your needs are considered in the rulemaking process. The government affairs team works daily to ensure the WRA’s 5,000-plus members succeed through proactive and responsible political representation before the Washington State Legislature and committed promotion of restaurants’ interests year-round.
TOOLS FOR SUCCESS AT YOUR FINGER-TIPS Grassroots: The WRA has a sophisticated and effective grassroots network thanks to our members’ involvement! The Grassroots Network is made up of members representing all sectors of the industry. You can participate! Grassroots volunteers vary in time commitment and duties. While the WRA lobby team works tirelessly it is important to remind elected officials who the WRA represents: real people and real businesses. Encouraging a dialogue between our members and elected officials is one of the most effective forms of communication you can take part in – you can be a part of the lawmaking process. Action Alerts: Part of what makes the WRA’s Grassroots Network so effective is the use of action alerts. The WRA relies on a sophisticated grassroots tree, separated by business type and legislative district, to place phone calls to legislators when a bill is reaching action in the Legislature. Look for these updates and help by taking action! The Political Action Committee: The WRA Political Action Committee (PAC) is a leading political action committee in Washington state. Utilize statistics and resources to incite change. MEET THE GOVERNMENT AFFAIRS TEAM Bruce Beckett Government Affairs Director Bruce Beckett is the head of the WRA government affairs team. He is accountable for overall leadership, strategic direction to the lobby team and ensuring WRA members are fully informed and engaged in the development of WRA positions and tactics. Bruce has been with the WRA since 2009. He brought with him more than 27 years of public affairs experience, including 17 years leading Weyerhaeuser Company’s Western Region and Washington State public affairs teams. Bruce also served as the director of public affairs for the Cascade Land Conservancy’s $20 million Cascade Agenda campaign. He has served on the boards of numerous business organizations, including the Association of Washington Business, as a deputy to the Washington Roundtable, TVW, the Washington Forest Protection Association, Northwest River Partners and the Washington Research Council. Josh McDonald State and Local Government Affairs Josh McDonald is the “boots on the ground” representative in local municipalities for the WRA team. This year he has been in Seattle dealing with every aspect of the minimum wage issue, from conferences with the mayor and City Council, to one-on-one meetings with individual members, analyzing their books and helping provide an array of opportunities to have their voice heard at City Hall and in the community on this important issue. Due to his continued efforts, hundreds of local restaurants are communicating with city government regarding the right set of solutions for business owners, operators and employees. Josh is focused on building and maintaining a strong industry presence at the city and county level; he has made huge inroads with local governments on paid sick leave and
numerous packaging, recycling composting issues. He has been with the WRA government affairs team since 2007; and also has experience as a contract lobbyist and on numerous congressional, state and local campaigns. Julia Gorton Government Affairs Manager Julia Gorton in the point-person on several issues including tourism, the Retrospective Rating program (Retro) and the continued debate surrounding the state’s evolving liquor privatization issue. She is the number-one resource for the WRA’s ongoing discussion with the Liquor Control Board on liquor pricing for restaurants. Julia has been a member of the Washington Restaurant Association’s Government Affairs team since 2007. Julia significantly grew and strengthened the WRA’s Grassroots Network, which was directly responsible for the WRA’s protection of the pop syrup tax credit and Retro. Additionally, Julia was responsible for establishing the WRA’s Ambassador training program, which gives restaurateurs tools to communicate with their elected representatives. Stephanie Davenport Communications Advocacy Manager Stephanie Davenport is responsible for marketing and communications programs on behalf of the GA team to external media and also to WRA members, informing them of GA activity on their behalf. She is also responsible for research and acts as a liaison between the communications department, government affairs and President/CEO. Stephanie is a new addition to the WRA, having rejoined the team in April 2014, after a previous stint at the WRA from 2004 to 2005. Prior to returning to the WRA, Stephanie was a public information officer in the Washington State House of Representatives, communications coordinator for the American Institute of Architects and a legislative liaison for the Washington Retail Association. Morgan Hickel Local Government Coordinator Morgan Hickel joined the WRA team in January 2014, and already has already cemented herself as a key asset in the WRA’s work on minimum wage in Seattle. In just a few months, she has built the most organized and effective grassroots program of any industry in Seattle to ensure our restaurants’ voices are heard at City Hall. Morgan also works directly with the Seattle Restaurant Alliance, helping keep our Seattle members informed and
pushing them to stay an active part of city politics. Prior to joining the WRA, Morgan was the campaign manager for the Stop Higher Utility Taxes Campaign Committee, worked in government affairs on behalf of the American Frozen Food Institute and held successful internships for the TacomaPierce County Chamber of Commerce and the Federal Way Chamber of Commerce.
Contract lobbyists Denny Eliason Denny Eliason is regarded by much of Washington’s legislative community as one the most accomplished lobbyists on the Hill in Olympia. Among other significant wins, Denny’s hard work yielded the B&O tax credit on pop syrup taxes that saves restaurants across the state an average of $3,000 annually. Denny is the founder of Alliances Northwest, a business-oriented government relations firm emphasizing representation before the Washington State Legislature and local governments in Washington. Denny has experience working on a number of issues, including banking, energy, employment, environment, finance, growth management, health care, insurance, pharmaceuticals, retail, securities, taxes and transportation. Some of Alliances Northwest’s other clients include Puget Sound Energy, Nintendo and Amazon.com. Kim Clauson Kim Clauson is a partner with Denny Eliason at Alliances Northwest. Kim’s primary focus is workplace and labor issues. She is also a strong force on the front lines for the Washington Restaurant Association on some of the industry’s toughest issues. She routinely delivers results on issues that affect restaurateurs’ bottom lines. Kim has landed the state’s restaurateurs their biggest proactive wins in the past five years, which include tackling issues such as workers’ comp, gift certificates and pushing the obesity lawsuit prevention bill past the governor’s desk. Kim has defended WRA members against a series of bills that, if enacted, would have increased the overall costs of benefits for UI, thereby leading to higher UI taxes for employers. ■

The annual buyer’s guide edition of Washington Restaurant Magazine puts in your hand a listing of more than 300 allied vendors, most of whom are local and, as members of the WRA, committed to your success. As this edition is about purchasing, the WRA recognizes that restaurateurs’ purchasing decisions are driven by a multitude of factors, one of which is consumer preference. In NRA’s recent 2014 Industry Forecast, local sourcing is a top menu trend and consumer interest. More than 64 percent of adults are most likely to visit a restaurant that offers locally produced food items. This carries over to supporting local businesses for services other than food. Ninety-three percent of US consumers believe it’s important to support the local small businesses that they value in their community. So, the next time you need a vendor, the WRA encourages you to utilize the 2014 Buyer’s Guide to the fullest.

Washington Restaurant Association Education Foundation keeps industry trained, informed By David Faro, contributing editor The Washington Restaurant Association Education Foundation (WRAEF) is a 501(c)3 charitable organization helping the hospitality industry grow through training and education for current and future employees.
Hospitality Workplace Safety Program ServSafe Manager Certification ServSafe Alcohol (mandatory server training) ProStart school to career training. Hospitality Workplace Safety Program On January 1, 2014, the WRA Education Foundation launched one of the most comprehensive safety initiatives ever aimed at the hospitality industry in Washington state—the Hospitality Workplace Safety Program. This program was developed by the Washington Restaurant Association Education Foundation as a tool for owners, managers and supervisors in the hospitality industry who are responsible for training their employees. The purpose of the program is to help improve employee safety in the workplace, with the goal of reduced injuries, and to decrease workers’ compensation premiums. Saving your business time and money Work related injuries and illnesses are costly and damaging, both for the employee who gets hurt and for the business who employees them. For hospitality employees, job injuries result in pain and potential loss of income. For the employer, on the job injuries and illnesses contribute to higher employee turnover, absenteeism, higher workers’ compensation costs and an unhappy, less productive staff. Why safety training improves staff morale and feelings of security One of the best strategies to help prevent on the job injuries and illnesses is to provide regular health and safety training for all employees. Establishing regular training helps employees learn how to avoid hazards, keeps lines of communication open between managers and employees, regarding problems and hazards that managers might unaware of, letting employees know that safety policies are top priority. This program was designed to be a stand-alone training 20 | warestaurant.org
curriculum that can be used with all segments of the restaurant and food service industry ranging from quick service and full service restaurants to large institutional kitchens and small independent catering businesses. This program also was meant to provide the next training phase for high school culinary arts students who have participated in the ProSafety Culinary Arts workplace health and safety curriculum (available at http://www.uwworksafe. com/request/#culinary), which is currently being used in ProStart culinary arts programs in many Washington state high schools. For establishments with an existing employee health and safety training program, this program can be used to build on what is already working well in a workplace and supplement existing training with additional material and information. The WRAEF supports the industry Restaurants base success on the skills and knowledge of their employees. The WRAEF provides the industry with the highest quality certification programs so establishments remain at their best. The WRAEF offer the following training programs with significant member discounts: ServSafe Manager ServSafe Manager is a National Restaurant Association (NRA) training program for foodservice and hospitality personnel. ServSafe allows foodservice establishments to offer the highest standard of advanced food safety training to their staffs. This manager-level certification not only keeps customers safe with advanced safety knowledge, it also helps food service establishments comply with the Demonstration of Knowledge requirement within the Washington State Food Code. Training is available online or in a classroom setting. ServSafe Alcohol Training (mandatory alcohol server training) The WRAEF partnered with the NRA to create a Washingtonspecific ServSafe Alcohol program that is approved by the Washington State Liquor Control Board (WSLB) and is designed for restaurants and hospitality businesses. This award-winning program can be administered in a classroom
setting at a member location by either a WRAEF instructor or an in-house trainer (approval required), OR online at www. SSAwashington.com. All students who successfully complete the training will receive a Class 12 or Class 13 permit and a nationally-recognized ServSafe Alcohol certificate. Both certifications are good for five years.
Achievement, opening the door to scholarships, tuition reduction, and careers. Students in the ProStart® program leave with practical, employable skills. Students also have the chance to participate in the annual ProStart® competition in either management or culinary categories. First place winners go on to National to represent Washington.

Using the mystery statement for a healthy business By Rick Braa, CHAE
Q:
My bookkeeper does a good job of inputting data. That said, he doesn’t know how to help me with the numbers. When I was poking around in our financial system I printed a balance sheet. I know it’s important; how can I use it as a tool?
A:
There are three financial statements most commonly used in business. The Income Statement, (commonly called the Profit and Loss or P&L) the Statement of Cash Flows and the Balance Sheet. The most relied upon report is the P&L; the least analyzed is the Statement of Cash Flows; and the most mysterious and ignored is the balance sheet. All these statements interplay with one another, and all are important. The basis for accuracy for all financial information is the balance sheet. It’s broken down into three areas: Assets (what you own), Liabilities (who you owe) and Equity (what’s left in the business after everything is purchased, depreciated, paid and saved). Assets equal Liabilities plus Equity, as of a certain date, usually the end of a period. Every account on the balance sheet needs to be reconciled and accurate at the close of each period. If items are left unreconciled, you may see sudden adjustments to the P&L in future periods. Check with your accounting professionals to ensure this important work is being performed at each period close. Once you know your accounts are reconciled, move to analyzing the statement. Simple balance sheets are broken down into simple categories. Assets consist of current assets, fixed assets and other assets. Liabilities consist of current liabilities and long-term liabilities. The equity section depends on the company structure and is often money contributed and drawn by ownership, current year net income and retained earnings. Use the information on the balance sheet to assess the financial health of the business. The first ratio to assess is the number of days’ sales of cash on hand [cash on hand/average daily sales]. Days’-saleson-hand should be greater than 14 days or two weeks. To prove this out, payroll typically runs between 30 percent and 40 percent of sales. If payroll is paid every two weeks, 60 percent and 80 percent of one week’s sales will be used. There are still other bills to pay with the rest of the cash on hand. Dipping below two weeks of sales in free cash flow will cause timing issues. The perfect storm is right around the corner of payroll, vendor payments, rent, debt and tax payments all colliding around the beginning of the month.

The perfect storm will consume a fair share of two week’s worth of sales. If you have less than 14 days of sales in cash on hand, it’s time to build cash and reduce spending. Secondly, determine the current ratio [current assets/ current liabilities]. This signifies the ability of the business to meet its obligations in the short term. Current assets can be converted to cash within one year and current liabilities need to be paid within one year. If this ratio is less than 1:1, vendors and employees are contributing more to the business than the business itself, or too much cash is being taken out. If that ratio slips to 0.5:1 the business is in need of a cash infusion, and unless the ratio is reversed, the business will struggle from payroll to payroll. Poor cash positions drain the resources of the organization away from focusing on what’s most important. Thirdly, compute the days’ sales of inventory [food inventory / average food cost of goods sold]. Inventory is cash converted into items held on the shelf. Too much inventory can drain cash. Keep food inventories at seven days or less and beverage at 35 days or less (substitute beverage in the equation above). Too low means too little storage and too many deliveries driving your cost structure up. Too high means product is not being converted into cash to pay bills. Finally, evaluate equity [total assets – total liabilities]. Equity shows how much residual asset value you have left in the business and should be a positive number. Negative numbers indicate more liabilities than assets, signaling that you are living on your vendors and your employees—a dangerous predicament. The balance sheet is a useful analytical tool.
