Swing into Summer Nantucket Arts Council and Nantucket Dreamland Film and performing Arts Center present the concert finale of its spring 2015 Downtown Celebrity Concerts when The Artie Shaw Orchestra appears on the Dreamland main stage this Sunday, May 31, at 4 pm. Starting in the 1930s, Artie Shaw pioneered and has since epitomized swing music—the rhythmic, infectious, and popular style featuring bass, drums, and brass instruments lifting listeners in syncopated, “swing time.” Swing music dominated American music from the mid 1930s through the late 40s, with big bands and orchestras of up to a dozen players. Sometimes violins, guitars, and pianos joined in the fast tempos, with lilting melodies from front of band singers. Artie Shaw remains in the pantheon of founders and leaders of those bands, with Glenn Miller, Count Basie, Wood Herman, and fellow clarinetist Benny Goodman. Shaw appeared in what’s considered among the first public swing concerts in 1936 in New York City. Soon after, he recorded a huge hit version of composer Cole Porter’s “Begin the Beguine,” which won him the moniker “King of Swing.” Around the same time, Shaw was the first bandleader to hire a black female singer, Billie Holiday. He married eight times including, famously, to actresses Lana Turner, Ava Gardner, and Evelyn Keyes. Shaw, who died in 2004, assembled the new Artie Orchestra in 1983, originally featuring virtuoso Dick Johnson on clarinet. Today, saxophonist and clarinetist Matt Koza, who has toured worldwide in jazz, symphony, and other orchestra venues, is the featured player and serves as director of The Orchestra. Many listeners will find the music made popular by Shaw and fellow swing musicians familiar to them. On Nantucket, the group’s playlist of more than two dozen songs includes titles by great composers of what’s often called the “American Songbook”: “S’Wonderful,” “Frenisi,” “Begin the Beguine,” “Stardust,” and lesser-known compositions. Fandango by Robert P. Barsanti So, I was cold. May fools and frustrates the best of us. On a bright and cloudless Saturday afternoon, when the Red Sox were hitting home runs out of Fenway and the Figawi sailboats zipped before the wind on their way over from Hyannis, I took off my Polarfleece for the second time this spring and left it in the back seat of my car. My boon companion bounded from the door and cut back and forth across the grass in the Middle Moors. I tucked a bag of treats into my pocket, adjusted the sunglasses and trailed behind him, as I always do. Five minutes later, in the wind of May, I felt how stupid I remained after all of these years. The Middle Moors, just south of the Airport radio beacon and north of the Milestone Road, have been transformed over the last few years. A healthy mix of clear cuts and fire have destroyed the alien scrub and and pine and brought the moors back to the bare and wind-whipped ground that existed out here for centuries. If we could drop a hundred or so sheep into the middle of these empty fields, the ground could stay empty for a few more centuries. Right now, in mid-conservation, it appears as if an acre wide machine had chewed up everything over six feet high and buried it deep. My boon companion found the open space both thrilling and confusing. Now, he had a clear path for any sorts of darts and feints, but no convenient bushes for his business. When the time came, he sprinted a hundred yards over to the still standing pine trees, paused behind the high brush, and then came bounding back. For most of my time on island, the Middle Moors grew untended and unhinged. Pine trees, scrub oak, miscellaneous bushes were all knit together by ticks and poison ivy. I thought nothing of them as we went bouncing along the sand roads to one pond or another. Of course, the scrub wasn’t any more natural to the island than deer or rosa rugosa. Someone brought all those seeds here and forgot about them. But my only experience with the Middle continued on page 21

It doesn’t matter what kind of party you are hosting on Nantucket, there is always sincere thought and consideration thrown into the mix of your planning and preparation for the event. When it comes to tasting wine, the glass you use will have a much greater effect on what you smell and taste in the wine than you might at first think is possible. You’re probably thinking this sounds like a bit of a stretch of the imagination, but let me explain how this can enhance your overall experience. Let’s start by what you should look for in your drinking vessel. Also known as drinkware, there are a wide variety of choices available. The Bowl. The shape of the bowl will affect what aromas and scents you smell as you gently swirl the wine in the glass. A wide bowl will have more surface area that allows the wine to ‘breathe’ and expose it to air in order to release aromas. The type of glass commonly used for bigger style wines, such as those made from Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, and Malbec, is referred to as a ‘Bordeaux’ glass in homage to the region where these grapes originate. This glass can also be used for Sauvignon Blanc, a white grape which also hails from this same area. A so-called “Burgundy” glass, also named from the region in France in which certain grapes are known, is typically used for Chardonnay and Pinot Noir. While this glass has a slightly larger bowl than the aforementioned, the rim of the glass is smaller. This allows for the accumulation of aromas in these more delicate grape varieties. It is also suitable for use with other thinskinned red varietals such as Nebbiolo, Sangiovese, and Grenache. There are a number of options for white wine glasses which very greatly in size and shape in order to accentuate the different styles and characteristics of the wine. A safe all-purpose choice is one with a more narrow bowl that has less surface area that is ideal for wines with a softer bouquet that do continued on page 11

Spring has sprung, the island is filling with people, and warm sunny weather is erasing memories of a long hard winter. This is a perfect time to become aware of how your actions can effect our harbor and ponds. Nantucket’s sandy soils do not grab onto and restrain septic leachate or fertilizer like the rich soils on the mainland. If researchers at the Nantucket Field Station can measure excess nitrate or phosphate in groundwater, marsh water, ponds, and the harbor (and we can), that indicates that you may be flushing money down the drain when you improperly or over-fertilize your lawn. Landscapers are now required to be certified to treat lawns using the procedures described in our island’s “Best Management Practices for Landscape Fertilizer Use on Nantucket Island” (BMP). If you are doing your own lawn maintenance, you should be following the same rules. All the best management practices are common-sense rules that will save you money, reduce tick and mosquito habitat (I am looking at you, over-irrigators), and will ensure that your family has a safe healthy yard to play in while reducing the adverse impacts on our harbors and ponds that promote dangerous algae blooms and shade out the eelgrass habitat for scallops and other marine life. Our deep groundwater, located out of the reach of septic systems and fertilizers at a depth of 40 feet or deeper, is very clean and provides a source of safe drinking water. Nantucket’s location out to sea and away from many mainland sources of pollution like power plants and industrial sites means that our sole source aquifer is safe from most external dangers. Nantucket Whalers in Europe by Amy Jenness author of On This Day in Nantucket History On June 1, 1796, the British brig Swallow received a “Letter of Marque,” which gave it the authority to capture French ships. The Letter of Marque and Reprisal is a government license authorizing privateers to attack enemy vessels (Britain and France were at war at the time) and bring them before admiralty courts for condemnation and sale. Six years later, in December of 1803, the Swallow captured the French whale ship Hero off the coast of Portugal, and its captain, Stephen Rawson, and its first mate, William Morris, hailed from Nantucket. While the American whaling industry exploded in the post American Revolution years, both the French and English hoped to also capitalize on the profits of a whale hunt. The two governments courted American whaleship owners to establish European whaling ports and also outfitted whaling fleets of their own. But neither England nor France was ever able to dominate the industry the way Americans did. Yet, it was not unusual to find Nantucket mariners, more in tune with life on a ship than to governmental borders, on their ships. The whaling industry grew rapidly after the first American whaleship rounded Cape Horn in 1791 and killed whales in the Pacific Ocean. Within 10 years, hundreds of whaleships from all over the world were hunting in the Pacific Ocean and Arctic Sea waters. And, after its capture by the British, the whaleship Hero would be one of them. Late in the year of 1802, the Hero, an American cargo ship, had landed in Le Havre, France just as Napoleon Bonaparte was visiting. The emperor bought the ship and refitted it as a French whaleship. In early 1803, the Hero went south on a whaling voyage with a mixed crew of Americans, Frenchmen, and Englishmen. The British took Hero back to Britain and First Mate Morris testified before

the British Admiralty Court. On June 1, 1804, records state that twenty-fiveyear-old Morris “answers that He was born and has always resided, save when subject at sea, and now lives with his wife and family…at Nantucket.” In his testimony, Morris said he was not an owner of the Hero but had the usual 1/25 interest in the profits from the voyage. After extensive testimony, the court claimed the Hero a lawful prize of war and condemned it. In September 1805, it was sold and renamed the Atlantic. By 1806, the Atlantic was a British whale ship captained by William Swain of Nantucket, who would have one of the longest careers in the British whale fishery.

THE MILFORD HAVEN EXPERIMENT The American Revolution was a time of hardship for Nantucket. The independent and tiny island far out to sea made both sides wary. England and the patriots banned Nantucket ships from fishing and established trade embargos on the island. Adding to the tension was the island’s dynamic mixture of staunchly pacifist Quakers, who refused to take a side in the conflict, and loyalists who sided with England. By the end of the American Revolution the people of Nantucket were starving and without supplies or heating fuel. When the war ended, Nantucketers went right back to whaling and soon the island bustled again with maritime and whaling-related trade. But England, by far the biggest consumer of spermaceti whale oil (the most lucrative whale commodity), levied a heavy tax on imported whale oil products. In 1783, when they grew tired of the hardships imposed upon their business, prominent Nantucket whaleship owners began to leave the island. Timothy Folger and Samuel Starbuck, Sr relocated to Nova Scotia, an English-owned province and therefore free of the import tax. William Rotch and his sons continued on page 20

Spring Garden Treats by Leah Mojer It’s been far too long since we have done more than just dream of the garden and of the smell of thyme and rosemary on our hands. Too long have we waited to plunge our trowels into the dirt and see lime green buds stretching from the branch tips of our trees. There is still a time before tomatoes, corn, and peaches, but I revel in what spring has to offer. The sweetest peas, vegetal fiddleheads, earthy morels, garlicky ramps, and fresh herbs. This is the purest, most delicious season of eating. Everything feels new to the tongue and no pea tendril, thyme sprig, or chive stem is taken for granted. These flavors are the aperitif; the precursor for what’s to follow. Let’s celebrate our tender spring offerings and say good bye and (don’t let the door hit ya on the way out) to winter!

not need to aerate as much. As for bubbly stemware, there is great debate as to what the preferred vessel of consumption may be when drinking Champagne (or other forms of sparkling wine). The flute is a stem glass with a tall, straight-sided narrow bowl. This bowl is designed so that the signature bubbles found in these types of wines stays effervescent by limiting the amount of surface area at the top of the glass. The tall cylindrical style of the glass also allows you to view the visual effect of the mousse (ie the ‘frothiness’) of the sparkler. In comparison, the shape of the coupe, which is storied to be modeled after Marie Antoinette’s breast, is a shallow bowl like shape with a much larger surface area than the flute. This allows the bubbles to dissipate at a higher rate then the flute and also when using even a standard type of wine glass. A perfect balance in between these two types of stemware is a typical white wine glass. This allows the drinker to experience more aroma from the sparkler than would be found from a flute and also less dissipation of the bubbles than from a coupe. The Rim. Most wine glasses have a tapered rim that allows the aromas of a wine to concentrate at the top of the glass without disappearing into thin air while the glass is being swirled. The shape of the channel in which your aromas flow will determine how much you can get on the nose. Much of what you smell in a wine is able to alter the taste as well. A flared rim in which the glass flares outward rather than inward is also an option, but not as preferred as the aromas are not trapped in the glass then and seem to get lost. The thickness of the rim will also determine how the wine lands on your tongue. A thin rim can be equated to the elegance of a performance by a gold medal winning Olympic skater such as Dorothy Hamill in which the wine smoothly glides onto your palate. A think rim is more similar to when your wine hits a speed bump and comes crashing down onto your tongue in a harsh, abrupt, unpleasant manner and just splashes everywhere. The Stem. of the saturated zone around the island (between 0-35 feet or so) in some areas around the island contains evidence of what we flush and what we put on our lawns. We can find this evidence when we measure the contaminants in samples of groundwater. We can also see this contamination when we measure ponds that are downstream of sources. Instead of exotic dangers like heavy metals or radioactive pollutants, our primary culprits are garden variety hazards such as nitrate and phosphate from leaking septic systems and fertilizer applications. Wells located only 100-200 feet apart may have very different amounts of contaminants. Out in the field, we measure nitrate and orthophosphate, which are the more bioavailable (easier to use) nutrient species of nitrogen and phosphorus. Nutrients are exactly what they sound like: minerals and elements that are needed for growth and normal plant and animal processes in small amounts that, when administered in large amounts, can “overstuff” a pond. Some of our ponds are having Thanksgiving dinner almost every day! Pond health is very similar to our health and you can overfeed a pond or harbor by supplying excess “food” in the form of nutrients. What we try to do is measure where the excess “calories” are coming from and then put the pond on a diet to help it slim down. Some ponds, if they are really “fat” and have stored way too much food, must be liposuctioned by removing the packaged food or fat hanging out in the form of huge algal mats. But just like removing fat without stopping the intake that got you there in the first place, “liposuction” should be done after the diet is successfully (and permanently) in place. Not that I am one to be lecturing a chubby pond...who knows, it could be genetic. This summer Hummock Pond will be liposuctioned in the form of harvesting of large submerged aquatic vegetation as recommended by the Nantucket Pond Coalition, who have also talked with island conservation groups and the Town of Nantucket’s Water Quality team and obtained a Conservation Commission permit. A large water based harvester which looks a bit like a boat/lawnmower hybrid will remove some of the plants currently impeding navigation in the pond. All over the island, groundwater that has been contaminated from septic systems or fertilizers can be 100-1000 time background levels. But in many areas, groundwater levels are refreshingly low, and can be in the range of 0.01-0.1 mg/L for nitrate and phosphate in areas near conservation land or in soil that is effectively filtered the groundwater. Many homeowners are being more diligent about pumping and inspecting their septic tanks (thanks to the efforts of the Health Dept) and reducing unnecessary fertilizer applications so we are seeing reductions in nutrient load in a few areas. Please be proactive and make sure that your landscapers are following the rules, if not, find a different landscaper! If phosphate and nitrate are getting into the groundwater, that is compromising the harbor and ponds and lowering your property value in addition to pouring money down the drain. If you are applying fertilizers yourself, you, too, must follow the BMPs as they are currently Board of Health Regulations. Here are some useful fertilizer tips and details on exactly what your landscaper should be using on your lawn as developed by the BMP committee: Fertilizer should be applied for plants to use as quickly and effectively as possible. Excess nutrients will harm Nantucket’s water, therefore only apply soil amendments and fertilizers between April 15 and October 15, so that plants can use the nutrients while they are actively growing. Do not apply fertilizers before

a strong rain that will wash it into water sources and avoid excess irrigation. Avoid wetlands and other areas defined by the Conservation Commission as nofertilize areas. On the topic of compost, the BMP reminds us that we are still on Nantucket and our “soil” is different and needs to be treated differently. Many of our amended lawn and garden soils have enough phosphate for plant growth, therefore adding more might harm fresh water ponds and the groundwater. Animal manures and animal-manure-based composts are rich in nitrogen and phosphate; leaf litter composts are less so and are preferred. Native levels of organic matter (OM) are lower here than elsewhere. Compost is important to develop organic matter in soil and is a source of carbon and other nutrients. Compost retains moisture, and hosts beneficial bacteria and insects. Remember: while compost is important for raising organic matter levels, it should be applied slowly. Raising soil organic matter much above native levels can result in nitrogen and phosphorus leaching. The BMPs also state it is critical to test the soil and see what you need before you add material that will be leached away because the turf or your garden plants cannot use the nutrients (just like overeating adds fat if it the calories are not burned for fuel). Read labels when buying and applying fertilizer. Labels list the ingredients as follows: Nitrogen, N, as elemental nitrogen, Phosphorus, P, as P2O5, and Potassium, K, as potash, K2O. All fertilizers whether they are synthetic, organic, or hybrids list the amount of the nutrients they contain on the bag, usually as a percent of weight. Also be aware that many fertilizers contain pesticide and herbicides components, which is why I advocate that organic pesticide free products be used on lawns in which pets or children may be playing. The BMPs state that no more than 3.0 pounds per 1000 square feet of nitrogen can be applied per season for turf. Nitrogen should be applied at two week intervals (or longer) and in quantities of no more than 0.5 pounds per application. In addition, no more than 0.25 pounds per 1000 square feet of quick-release nitrogen is allowed per application. The regulations also state that a single application for trees, shrubs, herbs and other ornamental plantings shall not exceed 0.5 pounds of actual nitrogen per thousand square feet and the annual rate shall not exceed 2.0 pounds of actual nitrogen per thousand square feet. Phosphate application limits: The BMP for the island recommends that no phosphorus be used in any fertilizer unless a soil test shows it is needed. Excess continued on page 22

Drizzle the skirt steak with olive oil, so it will not stick to the grill, and sprinkle with salt and pepper to taste. Place skirt steak on grill and cook on each side for approximately 3-4 minutes. Once cooked, slice thinly across the grain and drizzle with ramp pesto.

EASY HERB SALT This is super easy and oh so satisfying. Whip up a cup or two and keep in the fridge to preserve the bright green hue this herb salt takes on. Use in place of regular salt. Mix 2 C Kosher Salt (I am a Diamond Crystal Salt fan myself) with 1 handful assorted herbs: thyme, tarragon, rosemary and parsley makes a nice mix.

Add the onion and 3/4 teaspoon salt and cook, stirring often, until tender, 6 to 8 minutes. Add the broth and bring to a boil. Place the peas and mint in a blender and add the hot broth mixture. (Because hot liquids expand when blended, hold the lid firmly in place with a kitchen towel before blending.) Blend until smooth. Return to saucepan to heat through, if necessary. Serve with a dollop of your favorite creme fraiche or sour creme and a dusting of lemon zest.

moved their operations first to Dunkirk, France and later to London, England. In 1791, a British entrepreneur got government funding to create a new town on the Wales coast called Milford Haven, which would become a whaling port. The government offered Nantucket families political and financial incentives to help it establish whaling there. Among them were Folger, Starbuck, and Rotch who all agreed to move their whaling operations to Milford Haven. The Nantucket settlers gave the English a list of requirements in exchange for their participation and among them were: a request for a Quaker Meeting House, specific plans for docks and wharves, and a declaration that they would not farm the land (they would be solely focused on whaling). The town was supposed to have been built by the time they arrived in 1792, but it was not. The buildings that grew up in those first years strongly resemble the architecture of Nantucket’s simple, shingle-clad houses. and street names contain island family names like Starbuck and Bunker. For a time Milford Haven developed into an international whaling hub. Ships came or left for whaling grounds around the world. The Milford Haven whaling ships were provisioned in Nantucket and New Bedford because it was cheaper. Although Milford Haven whaleships did hunt in the southern fishery, the transplanted Nantucketers profited considerably from their toehold in England. Folger traded foods like corn, wheat, rye, and barley. Rotch traded in American whale oil and Nantucket-made spermaceti candles. The Milford Haven whaling experience was short lived. The town created to turn Britain into a whaling powerhouse actually became an outpost for American mariners, particularly Nantucket whalers. By 1800 Milford Haven was better known to England as a Royal Navy dockyard than as a whaling center, and today it is England’s fourth largest commercial port. By 1814 the whaling at Milford Haven was finished, in part due to financial setbacks in the industry and to the British government’s preference for supporting English whaling, which was based in London.

Moors was dense, low lying vegetation, not empty sheep-cropped grass. Now, in runway sized strips, the moors are “back” to the way they are supposed to be. The ticks have been burned away, the deer scared into the remaining hundreds of acres of thickets, and the poison ivy reduced to blackened scraps. To me, of course, this doesn’t look natural or real. Had I lived on island before World War II, I would feel differently. On the other hand, If I lived here back then, I would have bought a lot more land and a few dairy cows. If I knew then, what I knew now, I would be a lot richer, a little happier, and I would have remembered to bring my polarfleece. I am closing in on my fiftieth year and my AARP membership. An aged man, as the poet said, is a paltry thing; each year adds a few more “never agains” to the list. Every day you wake up with an appreciation for the things you don’t have anymore. Wisdom is a cheery way of saying regrets. I miss the people who used to sit downtown with me, I miss waking up with a roll and a step, and I miss the extra few yards on my drive (even if the ball now stays in bounds). After dinner on Saturday, a young couple half my age asked me to tell them three things they didn’t know about my life. At their age, those three things would be celebratory, at my age those things, a valedictory. My age and my gray hair weighed deep on me on Saturday when a Red Cup Nation Hockey Team hopped over the Almodobar’s fences at Five Corners. The men wore shorts, blue buttoned down shirts, backward’s baseball caps, and Dad’s golden graduation gift on their wrists. The women wore considerably less. The Hockey Team would want their sweaters or a polar fleece after the Chicken Box closed that night. Or perhaps they wouldn’t. My memory of my ignorant youth doesn’t include too many shivery nights. The old man who currently occupies the front part of my brain frowned and grumped at their trespass. Get off their grass. The young man, currently resting in the infirmary of the medulla, sized up the height of the fence and looked for the proper take off spot. Never again. First: I now know what it is like to look out your front window to see young people in places that they shouldn’t be, doing things that you rather they wouldn’t. Second: I have tripped over enough fences to know what it feels like to land face down. Red Cup Nation doesn’t know that. They also don’t know that this moment blows away and takes their friends with them. Fandango is the privilege of youth. When you are young, you don’t know any better. Carrying a thirty pack of Bud Light is something that you do, not something that you don’t. With years come wisdom; you know that you don’t want to be that guy with the whale shorts, pork pie hat, and two full hands with sixty electric blue cans of bad beer. Or, perhaps, the years just bring regret that you can’t do that anymore without feeling like a fool. On Friday night, two men my age stood on the bar at the Straight Wharf and led the Red Cuppers in song. I was embarrassed for them moments after I recognized that it would have been me on the bar, many, many years ago at Thirty Acres. When I was young, I figured that everything was the way it was supposed to be, and the way it would stay, whether it would be middle age or middle moors. With age has brought the sad wisdom that I can’t forget the lessons I want to and I can’t remember the things I should. Like wearing a sweater.

phosphates affect fresh water life. No phosphorus is permitted unless need is indicated by a soil test. If soil tests show phosphorus is low in the soil, new plantings and moved plantings may receive phosphate. In a nutshell: keep excess phosphorus from lawns, gardens, and farms out of the ponds. We already have plenty of phosphorus in our sandy soil and excess is not used by the plant so it goes straight to the shallow groundwater. Organic fertilizer should also be used sparingly and should contain low phosphorus. Manure may contain a lot of phosphorus, so just because something is organic doesn’t mean you should go to town using it. Look at the shampoos and detergents you use and make sure they have no phosphorus. Effective lawn care can reduce the need for fertilizer. For instance: Let your grass grow longer, 2 ½ to 3 inches long. The plant is healthier and can take up fertilizer more effectively. grass stays greener during the heat of summer better. A 3-inch high lawn can take up and use nutrients up to ten times as effectively as a 2-inch lawn. Leave the clippings on the lawn. They equal a pound of fertilizer per 1,000 sq. ft. per year that you do not have to apply. Cut the grass more often. Never remove more than the top 1/3 of the length. Your lawn will be healthier. Using native plants is a simple way to reduce nutrient inputs to our soils. Site planning and landscape designs incorporating or preserving native plants, which do not require fertilizer, are encouraged. Here are a few native plants that work well on Nantucket: • Meadow grasses, including little bluestem and Pennsylvania sedge; • Shrubs, including bayberry, inkberry, winterberry, and blueberry; • Trees including red maple, tupelo, American holly, and oaks. Regulations are at nantucket-ma.gov/DocumentCenter/Home/View/649 and the whole BMP can also be found at the Nantucket Town website. According to Lucinda Young, Chairperson of the Article 68 Work Group who wrote an eloquent and effective preface to the BMPs: “If everyone who applies fertilizers to turf or garden plants on Nantucket applies the information in this BMP to their practices, the threat of landscape-related fertilizers entering ground water, ponds, and our harbors should be significantly reduced.”

Always Something New at Sushi by Yoshi

For decades, the tiny eatery tucked away on a short side street in the heart of downtown has served award-winning sushi by Tokyo-born chef Yoshi Mabuchi. In a location too hidden to stumble upon, Sushi by Yoshi became a destination—for some, a meal by Yoshi was the only reason to venture into town. For many young Nantucket residents, their first bites of sushi were prepared by Yoshi; he introduced an entire generation of island kids to Japanese food. When fire swept through Sushi by Yoshi in November of 2013, there was a huge outpouring of sadness and good wishes for this beloved island restaurant and for owners Yoshi and Donald Noyes. No one had been injured in the electrical fire, but the restaurant was gutted. Throughout that winter and the following spring, the restaurant remained boarded up, and residents were unsure of when (or if) it would reopen. Slowly the plywood nailed over the entrance door filled with graffiti: “You make miso happy!” “Must have sushi now!!” “You're our roll model.” “We love you Yoshi, please return.” As the weather grew warmer, activity on East Chestnut Street made it clear that Sushi by Yoshi would return. By August, the restaurant was open for business with Chef Terry Noyes taking the place of his Uncle Don and Yoshi working his usual long hours: tending the garden where he grows Japanese vegetables he uses, mixing spices, crimping dumplings, and creating new recipes. “Yoshi is a bundle of energy,” Terry commented. “He’s up every morning by 5 am, and by 10 am we have a new invention,” added Colin, our enthusiastic server. Sushi is the jewel in the crown at Yoshi’s, but the menu also offers Japanese dishes (both hot and cold) from spring rolls and miso soup to curry, tempura, rice, and noodle dishes. There’s always something new on the Daily Specials board that often features seafood fresh from the docks (we’ll never forget the sweet & savory bay scallop rolls offered a few seasons back). Yoshi’s is BYOB, but they are happy to chill your wine or heat your saki.

The new interior is bright and airy, with high ceilings and a relaxed, open feel. The small sushi bar was sacrificed for additional table seating in the renovation—good thing, because it's first-come, firstserved, no reservations. The menu at Sushi by Yoshi is familiar to patrons and includes island favorites like their Nippon Soba beautiful Rainbow Roll, simple Negi Hamachi, and summery Aloha Roll, plus a few named after loyal long-time customers (yes, Mitchell, we’re talking about you!). The Nigiri is beautifully draped and the Sashimi fresh and shimmering. New items are frequently added, usually successful specials such as the Tempura Sweet Potato Roll and Nantucket Ocean Roll. New for this season is a 3-course Lunch Special. For just $15, you may order miso soup or salad then add gyoza or spring roll or shrimp shumai and finish with a California Roll or a Dynamite Roll or a Nantucket Tuna Roll. Chicken Teriyaki

Yoshi favorites during our dinner last week, but every evening there’s a tempting new dish to try. We often begin a meal here with one order each of Spring Rolls, Shumai, Crab Rangoons, and Spicy Edamame to share. But on this evening we started with Yoshi’s new Lemon Grass Gyoza. Each plump dumpling was stuffed with a finely minced filling of lemon grass, chives, cabbage, and pork The light and flavorful filling was delicious in the crunchy fried wrapper. Terry and Yoshi traveled to Tokyo this winter, a journey filled with family, memories, and more than a little food research. One of the results of that trip is Tokyo Ramen. There are thousands of ramen restaurants just in the city of Tokyo alone. Whether you are of the opinion that ramen is all about the broth or all about the noodles, this soup is hearty and delicious. We ordered the vegetable version (shrimp or chicken were the other choices), the miso broth filled with noodles and topped with mushrooms, carrot, cabbage, broccoli, and scallion. We were instructed to slurp quickly, as they eat ramen in Japan to not let the noodles become mushy. No worries, Colin, there was no way this tasty soup was going to last more than five minutes at our table. If you prefer more noodles than broth, it’s the Nippon Soba you want to order: a tangle of buckwheat noodles in soy flavored broth with vegetables, fish, or chicken. And the chilled Hiyashi Soba tossed in sesame dressing with shrimp and crabstick is perfect for a summer picnic. In addition to the noodle entrees, there are several other cooked dishes, featuring chicken, salmon, and shrimp for your friends who shy away from eating raw fish. Far more than just afterthoughts to appease the uninitiated, these entrees are quite good. We were very happy with the Chicken Teriyaki and found the emphasis is on the moist bite-size chunks of chicken anointed with what we would call a teriyaki “glaze” rather than a puddle of sauce. The Chicken Curry is also satifying—a generous portion of tender, moist chicken breast with a crunchy coating of panko with curry sauce that has more deep flavor than fire. Be sure to introduce those timid friends to the sushi at Yoshi’s—perhaps you can talk them into a simple Vegetable Roll or a Tempura Shrimp Roll, or, even better, a colorful and crisp Caterpillar Roll with asparagus, cucumber, carrot, and marinated kanpyo (a type of gourd) inside and creamy layers

of very thinly sliced avocado overtop. Either one of these sushi rolls could start them on a journey of discovery. Yoshi’s sushi has long been ranked among the best. For more than 30 years he has been perfecting his technique, starting with Yoshi and Don’s award-winning restaurant Hatsune (named for Yoshi’s mother) that they opened and operated for a dozen years in Connecticut before settling on Nantucket. Yoshi’s sushi chefs are expert. According to Terry, “all the really good sushi chefs on Nantucket have come through here.” At Yoshi’s the sticky sushi rice has just right tinge of vinegar, the fish is cut with precision to maximize flavor and texture, and the rolls are shaped (not mashed) with a firm but light touch. The star of our recent meal was their special Double Dragon Roll. The chef shaped this special roll with glistening fresh tuna and salmon on the inside nestled next to a chunk of fresh avocado, and tuna and salmon draped overtop. A dusting of panko, thin rings of jalapeno, and tiny globes of bright tobiko add more color, flavor, and texture. This roll is not always on the menu, so when it is, don’t hesitate to order it! For now the downtown location of Sushi by Yoshi is the only place you can buy Yoshi’s sushi, but come July their superb sushi will be available fresh daily in Sconset at the Sconset Market and in Madaket at Mille’s Market.
