Nantucket Style In the 1960s, Nantucket Island experienced a influx of artists and artisans who rejuvenated the art colony born on here fifty years earlier. Collectors Andrew Oates and Bill Euler were at the heart of this transformative period. In honor of these two men and their influence on Nantucket, the Nantucket Historical Association (NHA) has collaborated with the Artists Association of Nantucket (AAN) to present an exhibition exploring the estate of collectors Andrew Oates and William Euler and their vision for a “life well lived” based on the beauty and simplicity of cottage-style living. Entitled Nantucket Cottage Style: Drawing Inspiration from the Oates-Euler Collection and curated by Robert Frazier, Curator of Exhibitions at the AAN, this exhibition features works and artifacts donated to both organizations and is on display in the McCausland Gallery (formerly the Peter Foulger Gallery) at the Whaling Museum, 13 Broad Street. The Nantucket Cottage Style exhibition includes such artifacts as antique weaving looms, furniture, paintings, photographs, glassware and ceramics from the Oates-Euler estate, giving visitors an unparalleled glimpse at this robust collection. The show also includes a lush audio-visual presentation featuring several decades’ worth of photographs pertaining to Nantucket style. After Oates and Euler were approached to help with the renovation of what is now the historic Jared Coffin House hotel, they purchased a property at 16 Main Street to use as a weaving workshop. This became Nantucket Looms, a business dedicated to handmade Nantucket crafts. “For Andy Oates and Bill Euler, it was a perfect example of being in the right place at the right time,” says exhibition curator Bobby Frazier. “The island was expanding into a chic tourist destination, and the arts were rapidly becoming the downtown attraction.” Oates and Euler became central figures in the revitalization of Nantucket during this pivotal time in the island’s history. They provided residents with modern furnishings while maintaining the spirit of casual and quaint living. Considered to be connoisseurs of culture and art, they started collecting local art and quality crafts for their home on Madequecham Valley Road, known as “The Shack.” Oates and Euler decorated their home and business in a way that reflected these tastes.

This style eventually became known as “Nantucket Cottage Style.” “Nantucket Cottage Style is certainly a celebration of the life and style of a memorable pair of men, but it is also a time machine, a window on an era whose spirit continues to thrive,” says Frazier. “Bill and Andy’s true legacy may well have been their caring mentorship of a surprising number of creative locals. Free Screenings at NCH Health Fair Nantucket Cottage Hospital’s Health Fair, the annual event that includes free medical screenings, consultations and information sessions with the island’s health leaders, will take place this year from 8 to 11 am on Saturday, May 3 at the hospital, 57 Prospect Street. The Health Fair, sponsored by the Peter M. Sacerdote Family, is an opportunity for island residents to take advantage of free health screenings, learn about important public health issues like tick-borne diseases, meet the island’s physicians, nurses and caregivers, and discover all the health and wellness services available to them at Nantucket Cottage Hospital. Hospital caregivers and staff will also be joined by experts from our affiliates, Massachusetts General Hospital and Partners HealthCare, to offer an array of health services throughout the morning. The free medical screenings and tests available at this year’s Health Fair include: cholesterol test (point-of-care lipid profile), dermatology screening, glaucoma screening, blood pressure testing, body fat analysis, postural, chiropractic screening, glucose testing, and hearing screening. Pre-registration for the Health Fair is not required but is recommended. Registration forms can be found at the front reception desk of the hospital and on the NCH web site. by Robert P. Barsanti We don’t accept the reality of spring too easily on this island. The calendar, the stars, and even the Red Sox suggest that winter has slipped away. However, the wind shifts to the east, the clouds wash back in, and February rolls over in the bed and blinks its eyes in the sunlight. It shuffles down the stairs, sips a cup of coffee, and wonders when he can put his boots away for the season. Underneath the back hedges, on the north side of the house, one last cocktail sized glacier remains. Dirt has speckled it, warm air and rain have glazed it in ice, and the lengthening day has slowly peeled away its layers, yet it remains. One night of wind and snow, along with the excitement of the Weather Channel and island photographers everywhere, has been commemorated in that one last frozen cork. The rest of the yard, and marsh, waits for it to go. The grass stays brown, the bushes unbloomed, and the gray branches litter the yard. The beauty of winter blooms on a couch under a blanket. In the damp and wind-whipped cold, you “can’t” go outside. Outdoors is like outer space; you suit up and exit for the car, then you return. Perhaps, in moments of peril and pain, you shovel out the walk and the snow bank, but mostly you go back inside, and watch the wind blow the branches off the trees. As long as the falling branches don’t knock the power out, it’s good day. And then, today, it changed. I stood outside on a polar fleece morning and watched the steam rise from the last scab of winter. Just over the dirty snow, heat waves shimmered in the morning air. The rest of the brown yard softened, and gave way, gently underfoot. By tomorrow, the sunny southern yard would green slightly and the great grinding gears of the season would change. Soon, the plastic would come down from the windows, the snow shovels would hang in the shed, and the daffodils would crack the skin of the world. At the moment, the season hangs in the balance. I would like to push back on the reality of spring. The season of hope and rebirth needs a snooze button and an extra cup of coffee before it can be engaged fully. Time seizes in the snow and cold and leaves us in the familiar moment. Our world is still in its place. New buildings remain unbuilt, trees remain uncut, and the new stores have not filled in the slots where our old friends failed. Then the great grinding gears of spring force us forward into the next year and the next, until all of our friends and fundamentals are stuck in the calendar behind us. We putter about the yard picking up sticks on an island that is at once familiar and also strange and alien. Every daffodil rises from the unwanted future. But the season will not be held off. It leaks in through the door and the gaps in the window frames until the snow is gone, the flowers are in bloom, and the sky has turned blue again. Downtown, stores and restaurants have begun to put out their new wares and have printed the new menus for the new season. To them, winter ends with the ring of a cash register and the swipe of a credit card. Behind the bar, a couple have been drawing and illustrating spring and summer weekends for months now. The tables will go here, the seats will be red, and I really hope he can be continued on page 10

Awaken Your Palate by Carri Wroblewski BRIX Wine Shop After a winter that seemed like it would never end, I’m ready to shed my glasses of rich reds and uncork fresh, aromatic whites and rosés and lighterbodied reds. I’m ready to awaken my palate. There is something special about those first spring sips. Maybe it’s that rosé does taste better while being sipped outside. Maybe it’s that white wines are more delicious when the ocean is in sight. Maybe. But what I love about spring wines, are the foods that we pair with them. Spring offers up the first fresh flavors of the year. From asparagus to artichokes and fennel to fiddleheads. We start tucking away our cookbooks filled with rich, savory dishes and dust off our recipes that lean to the lighter side. And that’s what we do with our wines. It’s not so much that we stop drinking reds (we love reds); we just start drinking lighter ones. We seek out whites that are bright and crisp and find rosés that have more minerals than viscosity. We refresh. So with Daffodil Festival in mind and a tailgate menu at hand, I started thinking about food-friendly sips for the spring. Punta Crena has been owned by the same family for over 500 years. The vineyards of Punta Crena sit just 1,200 meters from the ocean, on the Mediterranean coast of Liguria in Italy. Named for the large point that protrudes from the sea, the 2012 Punta Crena Pigato ‘Vigneto Ca da Rena’ is a fresh and aromatic white made from 100% Pigato grapes. Loaded with minerals and due to its close proximity to the water, this wine has a hint of salinity, making it the perfect pairing with seafood—a natural on the Nantucket table. Grüner Veltliner—this could be spring’s calling card when it comes to wine. Hailing from Austria, Grüner Veltilner is known to be extremely food-

friendly and a favored wine among chefs. It has a natural way of pairing with some of wines ‘less favorite’ ingredients, such as asparagus, leeks, and artichokes. So being that this is spring’s bounty, finding a favorite Grüner at this time of the year is as much about need as it is about want. And trust me, you’ll want a sip of the 2012 Weingut Steininger ‘Steven Holl Loisium’ Grüner Veltliner. This bottling, named after New York architect Steven Holl, who owner and winemaker Karl Steininger pursued to build a new winery and hotel amongst his vineyards, is a hot shot within the category. Weingut Steininger is a family run winery located in the Kamptal region of Lower Austria, where Grüner Veltliner can be made into a wine of different styles—from a light and easy-drinking Grüner to one with age that you could mistake for White Burgundy. All of the fruit comes from a single vineyard and it has spicy, white pepper notes. I love this wine with grilled fish, but you’ll also find me sipping it on spring afternoons with nothing to eat at all. And speaking of spring afternoons, as I started to plan my menu for the Daffodil Weekend tailgate in Sconset, there is one wine that will reign king at my table, and that is rosé. Pink wine encountered a bad rap over the years. Once the “Coca-Cola” of the 80s (a.k.a. white zinfandel), many people associate rosé with being sweet. And I don’t blame them. Good, dry rosé used to be hard to come by. But luckily now, from Provence to Piedmont you can find delicious rosés in just about every price point. If you’re reading this right now, you’ve probably sipped a glass or two of pink wine on this island. Unlike most places, Nantucket is no stranger to rosé. I myself love rosé, whether it’s Domaine Ott or Chateau Peyrassol, I’m in. So when I tasted the Clos Cibonne Tibouren Côte de Provence Cru Clase continued on page 12

Bees are in the news and on the minds of people all over America as we evaluate how we fertilize and protect our crops and gardens and ensure food ends up on our tables. Both the imported bees we depend on for our honey and crop pollination and the native bees that pollinate our diverse flora are in trouble from a variety of attacks. Almost everyone has heard of colony collapse disorder, which is the sudden and widespread disappearance of adult honeybees from hives in the U.S. Last year the United States Department of Agriculture (USDA) released a report that shows that a variety of issues are likely involved in CCD and their executive summary listed the following culprits which work in tandem to impact bees (www.usda.gov/documents/ReportHoneyBeeHealth.pdf). • The parasitic mite Varroa destructor remains the single most detrimental pest of honey bees, and is closely associated with overwintering colony declines. • Multiple virus species have been associated with CCD. A new virus called Tobacco ringspot virus has just shown this year to be found in many bees by the USDA (link to article below). • Varroa is known to cause amplified levels of viruses. • The bacterial disease European foulbrood is being detected more often in the U.S. and may be linked to colony loss. • Nutrition has a major impact on individual bee and colony longevity. • Research indicates that gut microbes associated with honey bees play key roles in enhancement of nutrition, detoxification of chemicals, and protection against diseases. • Acute and sublethal effects of pesticides on honey bees have been increasingly documented, and are a primary concern. Two Nantucket High school students decided they wanted to know more about the risks bees may be encountering as they fly around Nantucket. As
a rule of thumb the foraging area around a beehive extends for two miles (3 km), although bees have been observed foraging twice and three times this distance from the hive. Bees don’t know if the plant they are visiting is one that has been dusted with pesticides in a garden, or a wildflower that has been untouched by humans. Without pollinators, which include birds, bats butterflies, moths, and flies, many plants simply would not be able to reproduce. Bees are one of the most important and effective pollinating insects and their interdependence with plants makes them an excellent example of the type of symbiosis known as mutualism, an association between unlike organisms that is beneficial to both parties. They are found on every continent except Antarctica, in every habitat on the planet that contains insectpollinated flowering plants. When we think of bees, we usually think of the European honey bee which was brought over to pollinate our crops and produce honey and wax. We usually forget about the over 20,000 other species of bees (honey and otherwise) that pollinate everything from red cedar trees to blueberries to almonds supporting a $15 billion dollar industry in the U.S., $150 million of that is honey alone. North America and Canada are home to approximately 4500 species of bees. The domesticated European honeybee was introduced to North America 400 years ago by colonists at Jamestown and Williamsburg to provide their settlements with honey; few bees native to the continent produced enough honey to make harvesting viable. Since then, the honeybee has spread into every farmable corner of North America. Crops that depend on bees for pollination include: apples, oranges, lemons, and limes, broccoli, onions, blueberries, cherries, cranberries, cucumbers, cantaloupes, carrots, avocados, and almonds. A Honey of a Hobby by Sarah Teach Giddily we break out our picnic baskets, yellow hats and antique cars. We hug friends we haven’t seen in months, and the sun offers its first bashful smiles to us. But we aren’t the only ones dizzy over daffodil season. Our least obtrusive and most important island neighbors rely on daffodils (and the rest of their bulb cousins) for early season pollen and nectar. While we’re busy relaxing in ‘Sconset, Nantucket’s honeybees are buzzing with anticipation. Despite not getting an invitation, honeybees usually end up at our Daffy Weekend picnics. (“Hey, guys! Free sugar!”) Not so fast with that flyswatter, though. By now, most of us have heard that honeybees are in trouble. In the mid 2000s, beekeepers worldwide began reporting atypical population depletion within their colonies. Dubbed Colony Collapse Disorder (CCD), the reduction is believed to be partially due to agricultural pesticide use. Though the whole of CCD’s causation remains undetermined, we do know this: our planet needs bees. According to the USDA, one-third of our favorite foods are reliant upon bees’ cross-pollination activities, not to mention the annual $15 billion of U.S. agricultural assets that are tied up in bees. For bliss, benevolence, and of course, bounty, a few Nantucketers have taken to keeping bees on their property. Scientists agree that the presence of bees causes greenery to flourish, flowers to grow more vibrant, and vegetables and herbs to increase their yield. When bees roam freely and gather a variety of pollen, the earth behaves as she should. And as for you? You, my friend, get your own honey. Everybody wins. If you want your own signature honey but aren’t so keen on executing the nitty-gritty, many island beekeepers will install and maintain your hive for you. Honeybees are hardy continued on page 21

a decent cook. Every morning they have come downtown to spend money they don’t have. Of course it will be a success, they think with crossed fingers and held breath. They can’t think of those that went before them. They can’t look at their spanking new sign and compare it to all of the other signs hanging in the Rose and Crown. The trees come down, the roads get dug up, and the past erases itself behind them. They can’t afford to be historians, they have to be restauranteurs. The ads go into the papers, the foods come into the walk-in, and the staff shows for the pre-season meeting. To stand behind that bar is to feel the power of the daffodil. In a month, they will know whether this will be a summer of hope and heartbreak, or a summer of success. By the time that the leaves fill the elms and the cars line the streets, their future will be known to them. The bet they made with the bank’s money will come through and each evening will be filled with glasses of top shelf bourbons and French wine, or they will be watching ice melt. But now, in the suspended silence of spring, they can only wait for the opening to happen. And, perhaps, they still feel the chill in the air, the clouds rolling in from the east, and they wish for just a little more time before the judgement passes and the bank comes calling. As the afternoon fades, the sun remains high in the western sky. The shadows lengthen and remain hours after they should have faded into the dark. Into that evening, the dog and I went for a short walk along West Chester. He had made the winter his own. He porpoised through the drifts, shook snow from his coat, and stood, proudly, up to his belly in the white stuff. Now, in the warming spring, he putters and fusses amid the still brown and gray weeds and grasses. The wind frees a water bottle from a brown bush, and he goes scampering after it. Then, in the still evening light, the peepers begin. First one, then a few, then a traffic jam of frogs peeping into the gathering evening. The dog darts to the edge of the road and peers into the dark water. Then, as only a dog could, be barks his own reply to the lusty chorus of spring.

A Moveable Feast for the Senses by Leah Mojer I was quoted last year in the Inky with an answer to a question so cliché it hurts. When asked about the best part of daffodil weekend, as I hurried up Main street in far too little clothing for an April day, I grimaced in pain to come up with something witty, or memorable. “The Cars!” I blurted out, instantly flushed with embarrassment that I didn’t pull some Shakespearean prose out of thin air about spring or rebirth or renewal of the seasons. I hurriedly gave my name and walked on, unable to shake the dumb smile from my face, nursing the horrifying thought that hundreds would read my response in a mere few days. After some thought, (and a few weeks) I realized that the answer I gave was absolutely genuine. THE CARS. It is about the cars! As a reckless collector and lover of all things Vintage, this should have been clear. These machines of my parent’s and grandparent’s youth are nothing but pure joy, innovation, and decadence. Nothing it seems, is built so well out of heavy, shiny chrome and steel, or, as far as the Daffy enthusiasts are concerned, as well-cared for in the decades I have been around. It’s mesmerizing, to see such old hulking engines that still run! I wonder endlessly about the technology, the vision, and confidence they had to build such interesting and beautiful machines. Now, I think if I actually participated in the parade, you know, with the picnic and everything, I might be endanger of simply leaving my earthly beings behind & floating into the sky, having suffered tremendously of the ailment, “died and gone to heaven.” Picnics are to me something I hold higher in my imagination than most things. They are a culinary spectacle, being part fashion, part food, part long lost love story. It’s a way of life and leisure that has seemed to have been

RosÊ a few weeks ago, I knew I had stumbled upon something special. At first glance, you wouldn’t think this was rosÊ at all. Packaged in a tinted bottle, a departure from the clear glass that most rosÊs come in, it isn’t until you pour it that you are reassured of its rose-colored brilliance. A historic property, Clos Cibonne dates back to 1797, when the Roux family purchased the estate from Jean Baptiste de Cibon, captain of the royal marines of Louis XVI. Nantucket doing a variety of research projects for science fairs, class projects, and for citizen science efforts here at the Field Station. During the past two years, I have been working with Nantucket High School students Mia Silverio and Sophie Davies on their research project on the concentration of carbaryl in Nantucket honey bees. They decided to investigate the amount of carbaryl (instead of neonicotinoids which are more well known bee toxin) in our island honey bees and honey and combs because it was the most frequently listed material in various herbicides and weed and feed products at Marine Home Center. From their abstract: “In this experiment, dead honey bees, honeycomb, and honey were tested for the pesticide carbaryl through the process of HPLC with UV detection (EPA method 8321B). Carbaryl is an insecticide sold at Marine Home Center on Nantucket that is mainly used to control moths, beetles, cockroaches, ants, ticks, and mosquitoes. Carbaryl is toxic to honey bees when in a concentration of 1540 nanograms, and toxic to humans when in a concentration of 0.0028 ug/ng. Concentrations of 1540 nanograms were not found, meaning that bees on Nantucket are not at risk for carbaryl poisoning. The highest concentration found was 13.51 nanograms in sample 13, a sample of honey from Kelley Road, followed by 12.31 nanograms in sample 18, a sample of honey from 52 Millbrook Road. Six of the samples contained carbaryl levels that were below detection.” They ground up bees and honey and honeycomb collected from various beekeepers around the island, then these materials were dissolved into solvents in a process called extraction that could then be refined and passed through a machine called a High Performance Liquid Chromatograph with a Ultra Violet detector that can sense the amount of various pesticides and contaminants in samples based on the molecular weight of the material. This type of information is important for two reasons; you want to know where to place your hives and what is in your honey. In a nutshell, they found very low levels of pesticides in the honey bees and honeycomb here on Nantucket, likely some of the lowest levels in the continued on page 20

country! But in some samples, enough carbaryl was found to show that bees are harvesting plants that have been treated with pesticides or are close enough to treatment areas to pick up pesticide residues they found the highest levels in honey and less in the bees or honeycombs. Summer and spring honey had higher levels of pesticides than fall honey. These levels were nowhere near the amount that could harm bees, but there is a chance that even low levels could compromise the bee’s ability to fight off mites or viruses and other harmful agents. Last year’s research had slightly higher levels of carbaryl in the same general locations with another “hotspot” near Wauwinet. These pesticides are not only found in some chemicals used on farms that don’t use organic practices but also in many consumer products. Next time you go to the store, look at what you are buying to treat your roses or hydrangea—you may be surprised to see the alphabet soup of chemicals used for mite and aphid control. Mia and Sophie’s research project took first place at our Nantucket High School science fair and they’ll be going on to the State Fair! Go cheer them on by attending the public exhibition this Saturday, May 3 from 12:30 to 3 pm at the Johnson Athletics Center at the Massachusetts Institute of Technology in Cambridge Massachusetts. I’ll post their abstract and graphs and pictures of their work when they get back and we are hoping to combine their work into one more year of collection to produce a peer reviewed science paper. This is an accomplishment that often doesn’t occur until a student is in graduate school. Nantucket is home to several dozen beekeepers who have rekindled a beekeepers group to exchange ideas about hive maintenance, bee health and bee-havior (* sorry, I am allowed one pun per article). Unfortunately, many of us (including this author) have been traumatized by media portrayal of “killer bees.” According to local bee experts, such depictions land miles from reality. Don't harass a beehive, and bees won't bother you.” Nantucket’s rugged, unrestrained landscape lends itself to bountiful flora, making the island an ideal home for honeybees. And the purity of island honey is incomparable. Daily attests to this: “Nantucket is unique in that we don’t have factory farms putting out massive amounts of harmful chemicals. We don’t have to worry about genetically modified crops tainting our honeybees’ pollen sources.” Since honey is produced from the nectar of flowers, its taste and color changes with the seasons. Nantucket’s spring blossoms (such as our guest of honor this week, the venerable daffodil) produce a light, flowery honey; whereas fall brings a dark, rich honey made from the likes of ragweed and goldenrod. As Nantucket beekeeper Joe Manning puts it: “Spring honey is like a lager; it’s light amber. Come autumn, you’re getting a dark stout; the Guinness of honey.” Manning, a roofer by day, cites a simple incentive for beekeeping: he likes honey. It's a good thing, too, since he estimates that a decent hive produces 100 pounds per year. Also, Manning swears by the allergy-assuaging faculties of local honey. Severe allergy sufferers practically sneeze upon hearing the word “ragweed.” Theoretically, ingesting tiny bits of your body’s least favorite pollen can build your immunity against that allergen. Manning says just a spoonful per day can

Carl Keller and Tori McCandless, owners of Boatyard Farm, a new local honey producer, also love having honeybees on their property. “They’re very calming, actually,” says Keller. McCandless adds, “Knowing that you’re contributing to Nantucket’s ecosystem and the reestablishment of the natural order. That’s a good feeling.” Daily leads bACKyard Beekeepers, a group that gathers at the UMass Field Station on the first Sunday of every month from 11 a.m. to 12:30 pm. Each meeting, which usually includes about 15 people, covers a loosely organized beekeeping topic. Daily says, “We are fortunate that we get at least two or three highly experienced beekeepers at every meeting. It’s a real community. Once you meet somebody who knows how to keep bees, it’s not that hard. Featured Restaurant: American Seasons
A Culinary Tribute to Spring After a winter that seemed colder and longer and darker than any we had experienced in a decade, Nantucket’s celebration of spring this week promises to be particularly joyful. One of our favorite traditions for welcoming the change of season is a visit to American Seasons. There’s a comforting, homey feel to this neighborhood eatery that envelopes us from the moment we step under the arbor onto their sheltered, candlelit patio. It’s just a little too chilly yet for a seat here, though during the summer months these are prized tables. As we walk through the bar to the main dining room, there are cheery smiles and Seared Day Boat Scallop warm greetings all around. Staff at American Seasons has changed little over the years: they’re professional yet welcoming. Dining here is like spending time with friends. Chef/owner Michael LaScola cooked at American Seasons for 12 years before he and his wife and general manager Orla Murphy-LaScola purchased the restaurant in 2004. During the past decade the LaScolas have refined the concept and made it their own. Orla is an impressive sommelier: her wine list is culled from some of the best American-produced wines across the country, including many hard-to-find bottles, and her selection of spirits is impressive, particularly in the realm of whiskey, with more than two dozen single malts, bourbons, single barrel, and rye. Many of American Seasons’ patrons (and there are many of those) have a favorite spot in the dining room...one of the the tall-backed booths, the “backgammon table,” or the back corner with a full view of the room. When we’re not dining at the bar (the perfect spot for a casual meal of bar plates and a cocktail or two),we love the front table by the window. No matter where you’re seated you’ll have a good view of the unique mix of art, antiques, and quirky touches that comprise this restaurant’s decor of country elegance. Be very careful when dining at American Seasons: there are half a dozen ways to spoil your appetite here. A big cone full of crunchy Pig Ear Fries with chili, lime, and cilantro, Cracklin’s that were still crackling when brought to table, and the savory Fried Sourdough with creme fraiche, dill, and trout roe are just three of them. Then there are the slices of freshly baked baguette (sourdough, pretzel, or something else entirely) and focaccia (often herb or onion or parmesan) that is your first taste of the talents of pastry chef Cristina Vallardi. We know to practice restraint (even if we don’t always succeed) because Chef Michael LaScola’s cuisine is designed so that everything on the plate adds to and enhances everything else. Here you want to be an enthusiastic member of the “clean plate club.” Another thing we love about Chef LaScola is his adventurous spirit: every time we dine here, there is an ingredient or a preparation or a combination that we have never tasted (and we are no strangers to dining out!). And we will happily devour Tête de Porc or Cotechino or Pea Porridge or Foie Gras Creme Brulee because we know that whatever it is, in this chef’s talented hands, it is going to be tasty. This is the only restaurant on Nantucket where a dear friend (a trained chef himself) once told our waitress to just “bring whatever.” Chef LaScola is that good. The opening menu at American Seasons always seems to us to celebrate spring while remaining mindful that it’s not yet summer. Fresh early produce— asparagus, peas, ramps, greens— are in abundance with bright flavors and colors, but the rich comfort of smoked foods, confit, pork belly, and the like still make an appearance. We started our meal last week with two pairings of land and sea, a classic combination with ingredients anything but classic. Kim-Chee Pancakes have just enough heat to accent the succulent and slightly smoky shrimp that are propped up by a thick slice of sweet-and-smoky barbecue pork belly. A drizzle of sesame dressing and a sprinkle of sesame seeds emphasize the Asian accents. Seared Day Boat Scallop appetizer is one we’ve had at American Seasons in a number of versions. This spring, Chef LaScola is nestling the large seared scallop next to a patty of housemade cotechino sausage. The crispness of the fried patty with the moist sea scallop is a delicious contrast, and a smear of spring pea puree, slices of radish and pickled kumquat, and a drizzle of browned butter add the mellow-tangy-sweet-hot sensations that are a hallmark of LaScola’s culinary combinations. Too tempting to resist was the evening’s special Kim-Chee Pancakes appetizer. Spring on a plate, this included an asparagus terrine with citrus creme fraiche and spirals of fried spring onion, cured salmon belly, cubes of pink early beets, radish, grilled ramp, a few sprigs of thistle, and the surprise of a tempura egg yolk that spread sunshine over the plate. I wish we could eat every season like this. While both are tributes to springtime, our favorites among the appetizers are

two very different dishes. The Rye Cavatelli in spring pea broth with English peas, fresh wild mushrooms, plenty of green garlic, bits of s m o k e d almond, and crunchy crumbs of rye, warmed our bellies with more robust flaPineland Farms Grilled Beef Rib vor than we’ve ever before enjoyed in a pasta dish. This went round the table twice, with the last taster looking for a spoon to finish the final drops. The cold Rabbit & Foie Gras Terrine is a delightful combination of tender meat and creamy indulgence. Juicy wedges of blood orange brighten the savory terrine, and carrot confit, mustard seed, hazlenuts, radish sticks, and crisp pumpernickle crumbs add a kaleidoscope of color and a fun crunch. There are so many ways to approach this dish that there is new pleasure in every bite. The meats served at American Seasons are from a small farm collective, grass fed, naturally raised, and distinctively flavorful. The Pineland Farms Grilled Beef Rib is delectably marbled, tender, and served with deeply flavored accompaniments of smoked King Oyster mushrooms, sweet roasted leek, nutty fregola pasta, wilted greens, and tracings of bordelaise. Very satisfying! This is the first time that we’ve seen chicken on one of Chef LaScola’s menu and the first time we’ve tasted this humble bird in a LaScola preparation. We’d happily order this again and again. The Buttermilk Brined Chicken is moist and tender, served over greens and hearty Faroe Island Salmon yellow-eyed peas with a dollop of pimento cheese that softens in the heat and adds creamy flavor. Flaky little biscuits with hints of cheese are scattered overtop. Smoked chicken hocks and giblet gravy add another flavor spectrum. We’d not seen Monkfish on a Nantucket menu in ages, and we’re happy that the chef is bringing this meaty fish back to the fore. Served bone-in, the fish is moist enough to have been braised, but with a crisped skin. It’s served on a porridge of spring peas with hand-shaped tortellini stuffed with a tasty pancetta filling. The final nod to spring are a carrot, an asparagus spring, and strips of

lemon zest for a bright zing. Table favorite this trip to American Seasons was the Faroe Island Salmon. Moist and buttery smooth fish under wonderfully crisp skin, the salmon is served on a fondant of smoked potato that is the perfect compliment to the richness. Fuschia dots of red onion creme fraiche add flavor as brilliant as their color, and salmon roe adds a crown of salty pops. We were happy to discover that Cristina Vallardi, Monkfish who took over as pastry chef, is still at American Seasons preparing creative desserts that are the perfect finale to Chef Michael LaScola’s cuisine. Her Chocolate “Funk” is pure, chocolate bliss: a log of chocolate ganache divided with cocoa tiles and pistachio bark and a scoop of chocolate sorbet that will send you into ecstasy. We also enjoyed the ice cream sandwich made from Speculoos Cookie and Coffee Ice Cream, a tasty mix of cinnamon, g i n g e r , cloves, and coffee. Best of all is Vallardi’s grownup version of B a n a n a Buttermilk Brined Chicken Split, with coconut, chocolate, and malt ice creams, brownie bits, and spiced bourbon poached bananas. Daffodil is that one special chance each year when we Nantucketers and visitors can pay homage to the absolute decadence of The Picnic. We pay tribute to the fabulous machines of days gone by where things weren’t to be thrown away after a few years of service, and when a little arrogance in design was welcomed in a larger-than-life attitude that all was pleasure and leisure. Although I am younger in years than most of the Cars that hum down the cobblestone streets in the Parade, I am more than grateful and appreciative to cheer them on, and anticipate with great excitement the one day pass of unapologetic leisurely picnicing to follow.
SPRING PEA & RICOTTA SPREAD Because of the simplicity of this spread, be sure to use the best ingredients you can procure or afford. 4 C. Frozen Peas,thawed If using fresh, Blanch 5 Minutes in salty boiling water and shock in an ice bath, drain.
2 C Maplebrook Ricotta, or any full fat Ricotta 2 Cloves garlic, minced 1 Shallot, minced 2 T Extra Virgin Olive Oil 1/2 C grated Parmigiano Reggiano Salt & Pepper, to taste Fresh Chopped Herbs like Tarragon, Chives, or Thyme Saute garlic and shallots in olive over medium heat until fragrant and translucent. Let cool in the oil in the pan. Put peas, ricotta, and garlic shallot oil mixture into a food processor and pulse until peas are mostly pureed but the spread is still a bit chunky. Add salt, fresh cracked pepper, parmigiano and fresh herbs and pulse until just incorporated. Serve with herbed crostini, Cape Cod Potato Chips or mix into blanched pasta for a very easy pasta salad.
HERBED CROSTINI 1 Baguette, preferably day old, but no older—sliced on the bias into oval slices, the longer the better. Extra Virgin Olive Oil. A lot of it. Salt & Pepper Fresh Thyme Sprigs Preheat oven to 375. Place sliced baguette rounds into a large bowl. Generously coat rounds with olive oil, salt and pepper, tossing to coat. Place in a single layer on sheet pans or cookie sheets. Lay thyme sprigs liberally over the rounds. Bake 8 minutes or until golden brown and crisp. Allow to cool. Discard thyme sprigs, letting the thyme leaves fall onto the crostini. Seal tightly in bags or containers.
Quiche is an instant crowd pleaser, wine soaker-upper, hunger stomper. It also doesn’t need to be hot, which is of the utmost importance while picnicing.
POTATO, BACON & LEEK QUICHE CABOT CLOTHBOUND CHEDDAR
WITH
1 9 inch pie shell, pre-baked 2 Yukon Gold potatoes 6 slices cooked & crumbled bacon. Buy the good stuff. Or make your own. Boar’s head will do in a pinch.
2 Leeks, white & light green part only 5 cage free (organic) eggs 1 1/4 C Heavy Cream 1 Garlic Clove microplaned Kosher Salt & Fresh Cracked Pepper, to Taste 1/2 C Cabot Clothbound, or any great aged cheddar, grated. Do these steps ahead of time so assembling the quiche will be a snap: Boil the potatoes in salty water, cool them, then slice them into 1/4-inch rounds. Slice the leeks lengthwise then into halfmoons. Soak in water to shake the dirt loose. Dry well. Season them with salt and saute in oil until fragrant and translucent, about 10 minutes on medium heat. Layer cooked potato rounds, crumbled bacon, wilted leeks and Cabot cheddar in the prebaked pie shell until fairly full to the top. Whisk eggs, cream, microplaned garlic, salt and pepper until well incorporated. Pour the mixture into pie shell all the way to the top, until almost overflowing. Carefully place in a preheated 375 degree oven for 20-25 minutes or until the quiche is puffed way up in the middle and is semi firm when shaken. Let cool completely. Cut and wrap in waxed paper for the perfect handheld joy-ride snack! April is always fooling us into thinking summer is around the corner. Us seasoned daffy dayers know better. Soup is a must on most years, even on the sunniest of Parade days.
CREAMY WILD MUSHROOM SOUP
WITH
PECORINO CHEESE
2 Big yellow onions, Julienned 2 T Butter 2 T EVOO 1/2 lb. Cremini Mushrooms, sliced 1/2 lb. Wild Mushrooms, torn. 1 Big Russet potato, peeled and coarsley chopped 1 T chopped flat leaf parsley 2 t salt 4 C Vegetable or Chicken Stock 2 t worcestershire 1/2 C. light cream 1/2 C grated Pecorino Cheese Saute onions in butter and oil in a large pot, seasoning with salt, over medium high heat. Cook until onions are soft and translucent, about 15 minutes. Add mushrooms, seasoning with a bit of salt and saute for another 15 minutes, stirring often. Add potato, parsley, salt & pepper, & saute uncovered 5 minutes. If you are drinking a glass of wine, red or white (or beer for that matter), this is a great moment to throw some in, letting the pan deglaze and the alcohol to cook off, leaving you with another wonderful layer of flavor for your soup. Add stock and bring to a boil. Lower heat and partially cover with a lid until potatoes are tender, 20 minutes. Let soup cool slightly. Then, puree in a blender in batches until smooth, making double sure the lid is on tight! I like to put a kitchen towel over the lid and hold down firmly. Strain back into the pot and whisk in cream, worcestershire & pecorino. Pack into thermoses, and off you go. No spoon needed, just sip, shmooze, & take in the sights!
