Exploring the Island’s North Shore by Julianne Adams It is fitting that Frances Ruley Karttunen has taken on the project of recording the history of Nantucket’s North Shore. A 12th-generation Nantucket native, Karttunen’s own history is wrapped up in the island’s. Her family reaches back to the English families who settled into Madaket Harbor in the mid 1600s. For the next three and a half centuries, her lineage traces through some of the most storied Nantucket families up into the modern age and her prolific historical career. Over the past decade, following an impressive career in linguistics at the University of Texas at Austin, Karttunen has been recording the history of Nantucket. As Karttunen says, “I have been dedicating myself to telling Nantucketers and visitors unfamiliar stories about the island or, when I tell an oft-told story, I have sought to approach it from a new perspective.” Her previous books, like The Other Islanders (2005), Law and Disorder in Old Nantucket (2007), Moses Tapped the Washing Pond (2012), look at aspects of the island less often seen. In her series Nantucket Places and People (20072010), Karttunen takes the reader on a guided tour of various points of the island, in town and beyond. In her delicious culinary memoir, Good Things from Nantucket’s North Shore (2011), Karttunen shares the story of her upbringing on the island and how food played a significant role in her Finnish-American home. This work, helped inspire her current release, Nantucket’s North Shore: A Neighborhood History, which Karttunen has actually been thinking about for many years. “I inherited a collection of old Nantucket recipes in 1994 and felt I should do something with them.” For Karttunen, writing about the North Shore was a logical choice. “The Nantucket Historical Association was holding neighborhood games to acquaint people who had recently continued on page 11

The Power of Fatherhood by Robert P. Barsanti Several colleagues and I got together this week at the Brotherhood for a “Last Sipper.” We slipped inside in the early evening, before the summer sun was near the horizon and far before the lines had formed at the Juice Bar. A young Spanish teacher intermittently flashed a smile while he fondled his phone. His wife has slowly been swelling throughout the spring and the date was now approaching. So we sat inside at seats that we had sat in many times before, drinking beer we had also had many times before, laughed as we always had and thought of something worthwhile to say. Which I failed at. Advice is a fool’s game. The longer I live, the more foolish the advice that I was given seems. And the advice that I have handed out seems even more foolish. I told him that “This too shall pass…” as my father used to say. But, two sips of beer and one long moment later, I realized how silly that would sound to a young father. To him, everything is about to change. His past life of guitars and golf clubs wait in the bed of his pick up while the dump looms just in front of him. I should have told him that this will not be the last sipper. He will join us for many more evenings. Those evenings may pass on his porch, or at a bar, or in a beach chair at Fortieth Pole. The world changes a lot less than we fear; evolutions are enormous and slow. All of the great changes in my life, whether they be marriage, divorce, or children, drip from a leaky pipe into a bucket. I only notice the bucket when it overflows and soaks the bathroom carpets; all of the drips fell somehow between the third inning and the fourth quarter. Life passes while you are making other plans, then the bathroom floor is soaked. This too shall not pass. Instead it will mildew, warp, and rot. You can check out the upstairs bathroom if you want to be sure. I have been a father for fourteen years but I don’t really know what the job entails, other than dumping out the pail of dripping water or, conversely, fixing the pipe. At one time, a father imparted knowledge and skills to his children. You taught them how to shoe a horse, how to set a net, or how to rebuild a carburetor. You appeared dirty and smiling at the outer door of the house, cleaning the grease from your hands and still too dirty to come inside. It’s easy to think that a father’s job is to walk the perimeter. The fathers remain outside the warm secrets and tears that mothers traffic in. The babies don’t know our heartbeat and our smells. The two of them fall asleep on the sofa together while you go out to get the diapers and the wipes. The infants hide behind their mother’s legs before stepping out with an outstretched hand ready to “shake.” Instead, you circle the house and look for intruders. You peer and prepare and make sure the car is gassed up and ready. Everything else is happening inside. She get’s pregnant, her body swells up, something is kicking and punching inside her, and you are the same old you that washed out of college football and has too many extra donuts during break. Nothing seems to happen to you. Too many men stay out on the perimeter; too many slip into the tree-line, high rough, and deep water while the family builds without them. The danger

Through Rosé Colored Glasses by Jenny Benzie Advanced Sommelier + Certified Wine Educator, Proprietress of Épernay Wine & Spirits Forget about St. Tropez and St. Barts. We have it all here on Nantucket right now, including the same dry rosés you were sipping on in those other locales. Rosé wines come in all shapes and sizes these days. Just like Champagne, there is an appropriate rosé to offer for every situation on Nantucket: a beach day with friends at Ladies Beach, entertaining on your boat at Tuckernuck or just having a simple glass of wine at your favorite oyster bar. Figuring out which ones you like can be easy with a few key hints that help you to decipher what is in the bottle before even opening it. For starters, does a pale hue color mean a better wine? Not necessarily. The difference in color is a result of several factors, including the composition of the grape itself, the region or climate where the grapes are grown, and the specific winemaking technique that is used. The color extraction in rosé wines varies based on what grapes are used to make the wine. According to “The Rosé Barometer” developed by Chateau d'Esclans (more on that winery later), colors can range from light pink, rose petal, coral, cotton candy, cherry red to blush. Think about the red wines you drink and the color of those wines in the glass. To make rosé wine, you typically take these same red grapes and press the juice off the skins right away so that very little color is extracted from the pigmentation of the skins. Leaving the skins in contact with the juice for 24-48 hours can also increase color extraction. Grapes that are thin-skinned (think Pinot Noir) tend to make a lighter shade of wine than one made from a thick-skinned grape (think Cabernet Sauvignon). Most Italian grape varieties (Nebbiolo, Sangiovese) have a bit of an orange, salmon-colored hue. Grenache is a grape that is highly oxidative, so its wines are copper or a bit rusty in color. What if the rosé is made from a blend of grapes? Then look to see on the label where the wine originated. Wines from cool climate areas will have more acidity (that mouth watering sensation you feel after taking a sip of wine) which makes the wine pair exceptionally well with the acidity in food. Warm climate wines will have moderate acidity, making them perhaps more quaffable on their own, but with a little more richness, texture and depth on the palate. Wines grown near the seaside come from sandy soils that drain well, so the vines have to work harder to get nutrients from the earth. They also have to deal with the elements of being near the sea. (Think Grey Lady.) These tough conditions result in a complex, layered wine that is guaranteed to please even if you hold on to it for a couple of years. How does winemaking affect rosé? While most rosés are made in stainless steel tanks and meant to be consumed young and fresh, a few are aged for a longer duration of time in seasoned (i.e., used many times) oak barrels to add length and texture to the wine. On my fall visit to Provence, every single producer offered us at least two different rosé wines: one young & fruit-forward and the other a 'gastronomic' selection that was drier. Sometimes a third selection was offered: either from a specific vineyard or specially selected as the winemaker's personal favorite from the cellar. I am sure you see now that not all rosés are created equally and there really is a difference in what you find in the bottle. Here a few rosés to try from across the spectrum that will show you how different rosé wines can be. Domaines Ott is one of (if not the most) well-known producer of rosé from Southern France. New in Nature by Dr. Sarah Oktay Director, University of Massachusetts Nantucket Field Station Spring has sprung and summer is almost upon us. Everywhere you look onisland flowers are blooming, turtles are crossing the road, and insects are waking up to enjoy the warm, sunny days. Several notable natural occurrences, many of which are linked to the weather and warming temperatures are the subject of this week’s column. I’d thought I’d hit the highlights and, in the case of mosquitoes and for some people the Eastern Tent Caterpillar, the lowlights, of what to look for in nature this week. Scientists look for the rhythms of nature in blooming plants, animal migration, and larval development of insects in order to evaluate how the seasons are progressing. Phenology is the study of periodic plant and animal life cycle events and how these are influenced by seasonal and interannual variations in climate. It is something that is virtually impossible NOT to do here on Nantucket. The word is derived from the Greek phainomai, which means “to appear” or “come into view.” So we can see that phenology is specifically concerned with the dates of first occurrence of biological events in their annual cycle. Everyone I have talked to this spring has commented on the huge occurrence of the Eastern Tent caterpillars (not gypsy moths, their scientific name is Malacosoma americanum (Fabricius, 1793). I wrote about these little guys just last year (yesterdaysisland.com/dang-it-i-am-not-a-gypsy-moth/), but this year I would say their population is at least ten times larger, which makes sense as this year’s crop is based on the eggs laid last year. These creatures use polarizing light special effects, biochemical weapons, and advanced scent trails as their secret weapons for making it to adulthood as a moth. I am sure you have seen these hideous bags of caterpillars wrapped around cherry and apple tree limbs, quickly defoliating the leaves during the day, and retiring to their baglike homes each night. On June 7 I saw a virtual stampede of them at Windswept Cranberry bog, and most of the ones at the Field Station have just now fled their nests to generate their individual cocoons and pupate. These caterpillars are very social, and in the early spring a cohort of newly hatched caterpillars (typically between 50-200) build a silk tent together, in which they live during their larval phase. When they are full-grown, larvae leave the host trees and disperse to form loose cocoons in protected places where they pupate. The adult moths (imagos) emerge about two weeks later. They are strictly nocturnal and start flying after nightfall, stopping to hang out and rest a few hours before dawn. Mating and oviposition typically occur on the same day the moths emerge from their cocoons; the females die soon thereafter. If it is any consolation (obviously not for the moth), the Infestations tend to be cyclic in severity, worsening for several years until their populations crash to low levels, then slowly rebuild. A colony of Eastern tent caterpillars can quickly defoliate small ornamental trees, but trees usually recover with a new growth of leaves later in the year, since the species is univoltine (only has one generation per year). They are not responsive to most pesticides, so if you want to control them, just remove the branch they were on, or even better, look for their eggs and remove them. The blue flag iris (Iris versicolor) is blooming now around the Nantucket Field Station Pond. These are also known as wild irises, harlequin blueflags, common blue flags, and northern blue flags. Look for them in swamps, marshes, and pond edges; the cranberry bogs are a reliable habitat for these late spring beauties. The Iris versicolor is an example of a rhizomatous plant which means it can reproduce using rhizomes underground. While vegetative reproduction is a convenient way for plants to spread, they may also depend on sexual reproduction. Insects attracted to the sepals (pretty parts) must crawl under the tip of a style and brush past a stigma and stamen, thus facilitating pollination. The combination of the two parents' DNA creates genetic variation that has been shown to provide plant populations with resilience against predators and disease. I found a wonderful book with the longest title and subtitle (you thought that was a new phenomenon, apparently not!) called “ The Island of Nantucket: What it Was and What It Is, Being a Complete Index and Guide to this Noted Resort, Containing Descriptions of Everything On or About the Island in Regard to Which the Visitor or Resident May Desire Information Including (still going with the subtitle) Its History, People, Agriculture, Botany, Conchology, and Geology with Maps of the Town and Island” compiled by Edward K Godfrey in 1882 on Google books, which lists both Iris versicolor and Iris Virginica as found on Nantucket. They are almost gone but if you look quickly you may still see some lovely pink lady slippers (Cypripedium acaule) around the island. Please don’t pick any continued on page 10

make a different wine at each spot? You will be sure to recognize their trademark bowling pin shaped bottle that has been replicated by others to show the authenticity of a wine from the Côtes de Provence region. Another unique fact is that Ott is the only winery in Provence that uses a family name instead of the name of the estate. Therefore, Monsieur Ott had to add the star to his name when he wanted to trademark the brand. You will also see that the name actually reads Domaines with an “s.” Each of these wines will have the brand name on the label along with the name of the property and the region where the grapes were grown and wine produced. (Côtes de Provence - Château de Selle, Clos Mireille; Bandol - Château Romassan.) Château d'Eslans is another well-known Provencal winery. The property is owned by Sacha Lichine, whose father was the famous wine writer Alexis Lichine. They make four different Rosés, all from the same property. The further up the hill you go in the vineyard, the better quality of grapes you’ll find, as quality is based on increased elevation and the older age of the vines. The higher end selections, “Les Clans” and “Garrus” (Latin for Bear, referring to the bears that used to roam the area), are aged in oak. The“Whispering Angel” is a huge hit at the Nantucket Wine Festival. Drink too much of it and you might become a “Screaming Devil!” Pascal Jolivet, a well-known winemaker from the Sancerre region of the Loire Valley in France, decided to follow the rosé lead of his good friend Sacha Lichine. Having spent a lot of time in South Beach and St. Barts, he knew the popularity of dry rosés. He took the grapes he used for Pinot Noir production and designated them to make his own pink wine. This has all the fruit of Provence with the minerality that is evident from Sauvignon Blanc of Sancerre. This is the rosé of summer and a musttry, whether you are new to the pink scene or a professional pink drinker. For everyday drinking, look no further than the Hecht & Bannier from Côtes de Provence. Not only does it come in a sleek, contemporary package, it is sealed with a glass stopper that is re-useable on most other bottles in place of a cork. This winery buys the best juice from small local vignerons who grow only enough to make a small amount of wine for themselves, then sell the rest of their grapes. I am a sommelier, and the most common rosé questions I receive are as follows: should rosé only be consumed in the summer, and must it be the current release? My answers are always the same. No, neither is necessary. Especially if you want to reminisce about when you were drinking it during your Nantucket summer escapades, no matter where you may be.

of these showy members of the orchid family as they are relatively rare and susceptible to deer browse and overharvesting by people. Frost damage on scrub oak, bayberry and pretty much any other plant that was exposed (including poison ivy, yay!) can be seen in several low “valleys “or depressions around the island. These low spots are call frost pockets. The frost occurred on the evenings of May 29 and 30, when the low temperature hit 42 and 40 degrees F respectively (average is 50 degrees). You might recall that the frost pockets themselves can be ten degrees cooler, which is right at the freezing point. The lower areas off Polpis Road and around the island now show up as big brown patches as the unsuspecting and unprotected leaves of emerging plants were damaged. Hopefully you’ll take advantage of thousands of acres of protected conservation land on island and hike the trails while you look for these low spots. Spotted, painted, and snapping turtles are heading to their nesting spots this week, so please keep an eye out for them on the road. On June 7, I came across 4 painted turtles crossing paths on the Land Bank Stump Pond trails and “scurrying” across Polpis Road. Also in the news are the arrival about a month ago of the horseshoe crabs, which come up during May and June to breed. Look for them in Madaket, at the Creeks, around Coskata and other areas around the harbors. We are continuing the 5th year of horseshoe crab monitoring as are citizen science groups led by the Maria Mitchell Assoc. and the Nantucket Conservation Foundation. And of course it is mosquito season and we have had a few impressive rains bookended by relatively long dry spells and high tides, so it should be an interesting season. The Town of Nantucket has hired a professional company, Vector Disease ControI International with trained entomologists (bug gurus) who are researching, monitoring, and treating island mosquitoes using safer biological controls. We will host a mosquito talk by Emily Hibbard, our on-island VDCI expert at the Field Station in a few weeks and I hope you’ll come join us. The Nantucket Field Station is also providing lab space to VDCI. acquired property to learn about the history of their neighborhoods. We didn’t do one for the North Shore, but it gave me the idea to write a book-length neighborhood history.” As a North Shore native, Karttunen looked no further than her own neighborhood. “I couldn’t write a book like this about any other part of Nantucket but this part where I grew up.” Karttunen’s kinship with the North Shore helps mold Nantucket’s North Shore into a heartfelt history. As it moves through the centuries, North Shore reads like the family story, which in many ways it is for Karttunen. “What this project has done,” she writes, “is to give me the opportunity to explore memories of mine that were just on the edge of my consciousness, to check them with somewhat older people like my cousins and North Shore neighbors, and establish firmer foundations for them.” The book goes beyond recent memories, back to the beginning of Karttunen’s island ancestry. Beginning with the 1669 arrival of English settlers in Madaket Harbor, North Shore details the surprisingly complex and rich development of the northern part of the island. Conveniently for Karttunen and her book, the settlers and their descendents moved east in a linear fashion. In 10 chapters over 144 pages, Karttunen follows the men and women of Nantucket from Eel point, past Sunset Hill and Lily Pond to end on the north side of Cliff Road. Over the pages, Karttunen retraces the development of the island, known as Sherburne until 1975, into a community. Each chapter looks at a particular section of the North Shore from its beginnings settlements to the 21st century. Karttunen’s thorough details bring us right into the past. We learn how the names of roads, homes and ponds came to be. For example, in the 1700s, Wyer’s Pond, named after nearby resident Nathanial Wyer, became what we know as Maxcy’s Pond. At the heart of Karttunen’s book are people like Nathanial Wyer, who shaped the island in ways small and large. From the Brooks family, whose farm delivered milk to North Shore residents through the mid-1900s, to whaling captain Richard Gardner III, whose 1722 house on West Chester Street is preserved to this day. continued on page 20

Physicians, whalers, government employees, innkeepers, artists and more, including the wealthy, influential North Shore residents called “nabobs,” all make up part of Karttunen’s historical journey. Along the way, there were a few surprises for the knowledgeable historian. When asked what she did not expect to discover, Karttunen mentioned a past moment with ongoing effects. “[I]t was artist Eastman Johnson who first tampered with Sachem Spring so that it ceased to flow from one spot and broke out all along a section of the Cliff, causing slumps that go on to this very day despite efforts to rectify the situation.” To capture the lives, work and mishaps like those of Eastman Johsnon of these Nantucket residents, Karttunen weaves together historical facts, anecdotes, letters, newspaper archives, photos and recipes. Most of the over 200 photos were carefully selected from Nantucket Historical Association’s image archive. The photos show Nantucket residents at work and play. One riveting set taken in 1915 from the roof on the Jethro Coffin House sweeps over a baseball game and its onlooking crowd, which includes a man with a horse-drawn carriage. The lovely 19th and 20th century portraits of people and homes, as well as maps documenting the island changes, are accompanied with personal photographs from Karttunen as well as over a dozen new photographs. Taken by active Nantucket resident Allen Reinhard, the photos provide a fresh lens to the historical images. The recipes collected throughout the book compliment the photographs and the areas that they capture. Alongside a picture of a 1880s clambake are instructions for a traditional clambake and recipes for ‘Mock Cherry Pie’ and ‘Cranberry Jelly.’ These three and many of the 27 others are adapted from Esther Gibbs, the beloved aunt of Karttunen. For more than two decades, Gibbs ran the North Shore Restaurant, where served up American and Swedish dishes (Gibb’s mother was Swedish). Karttunen writes that Gibbs, to whom she has dedicated some of her previous work, “styled herself the Town Mother.” Karttunen uses the recipes from her aunt and others to delve deeper into

of walking the perimeter isn’t that something will attack from the dark, but that you walk away from the change within. Just because you can’t catalog the changes in the mirror, doesn’t mean something hasn’t happened. Instead, your life has changed by a pair of eyes, a pair of ears, and some smooth skin. Someone is always watching; you never know what is going to sink into that little skull. Every thing they feel becomes a little ball of dough that will rise and bake into something deep into their own character. A good father knows this, feels this, and does his best under the constant appreciation of a rapt audience. Next door, the summer visitors have settled in, opened the refrigerator, and found the charcoal briquets. Under the oceanic blue sky, he flipped the steaks, sipped his beer, and enjoyed the singular pleasure of being a man in full. His German Shepherd puppy was enjoying that as well and in our backyard. So he called “Nala! Come! Goddam it, Come!” His daughter rolled over from her toys, stuck her little head in the hedge and repeated what her father said, word for word, tone for tone. This too shall pass. My father wouldn’t have yelled at the dog like that, nor would I. But that little girl, twenty years down the line, might. It was a lesson written in sand, then pressed into stone. Nothing that dog could or would do in my backyard would threaten the Republic or cost him a dollar. But I couldn’t say the same for his little girl. My father, for all of his gifts, left his own legacy. In my youth, he ventured to help me with my golf swing twice. Each time, he said the same thing; “Hands, then hips, Hips, then hands.” As the advice is not particularly useful, I have not become a particularly good golfer. Yet, I have had my moments. One of those moments came on the ninth hole at Miacomet. I had bested him over the first eight holes, with the power of youth overcoming the wiles of age. Then, as I stood over the ball on the tee, he gave me a small piece of advice: “I think you are hitching your hands at the top of your swing.” I drove into a garage door, he won the hole and the match. That is the power of fatherhood.

local history. The recipes she uses “are bits of history,” she explains. “For the most part they don’t work with what we have on hand today. The corn pudding just turns out a runny mess with today’s super sweet, juicy corn. In its time it was made with much starchier yellow corn. Candy made from flag root is mildly toxic. I don’t recommend it. The old recipe I love, just for all its associations, is Dr. Folger’s Mother’s Nantucket Indian Pudding.” Like the portraits and detailed stories, the recipes create a personal connection to a different time. When reading over the 1870 recipe for Egg Gruel, or reading Alice Albertson’s 1921 words on boys selling flag root candy in the street, Karttunen inspires an intimacy with the reader and Nantucket. After finishing Nantucket’s North Shore, it is hard not to walk away with a deeper appreciation for the many people and places that have made the island what it is. As a further nod to the community that she chronicles, Karttunen has turned to Kickstarter to help fund this passion project. Contributors will help Karttunen see through the printing of her book, which is being published by Spinner Publications. The aim, too, of Nantucket’s North Shore is to remember and celebrate the history of the island. On the cover of the book is a photo of the Nathaniel Paddack House. Karttunen writes, “The Nathaniel Paddack House stood up on Sunset for a couple of hundred years. It was there when my mother and her brothers and sisters were children. They must have played there. When it was torn down in 1927, everyone apparently forgot it overnight. Nobody, not even my mother, ever mentioned it. Only several photos and a painting remained. I am happy to bring it back into public memory.” Karttunen hopes her book will inspire residents to discover, appreciate and hold on to local memories that are so easily lost. Through donations, accepted until June 17, readers can become a part of this effort and help develop a new history of cultural preservation. Nantucket’s North Shore will be released on Thursday June 19. At a book launch that evening from 5-7 pm in the Nantucket Hotel and Resort, Karttunen will sign books and talk history.

Fabulous Cuisine in a Casual Café As we scoot between tables to settle in on a comfy bench seat, the couple next to us greets us warmly and the women two tables down smile and start a short “hey, how are you, it’s been a while” chat. We’re not surprised that even in June we know most of the people in the dining room at Island Kitchen—this mid-island eatery has become a favorite among island residents. With dozens of high quality restaurants within a 10-minute drive and not a McDonald’s in sight, Nantucketers have high standards when they go out to eat. Island Kitchen is much loved for their fine dining cuisine served in an easygoing café ambiance. Why deal with summer crowds and parking frustrations when you can enjoy a meal here that measures up to the best of downtown dining? Executive chef/owner Patrick Ridge was head chef at Le Languedoc before opening his own place last season, and the creativity, attention to detail, and perfect technique that this CIA-trained chef honed at that classic Nantucket restaurant are what keeps his Island Kitchen patrons coming back for more. Every morning from 7am, Island Kitchen serves breakfasts well worth getting up, getting dressed, and going out to enjoy! Wake up with freshly squeezed orange or grapefruit juice as you peruse the menu. The “Morning Essentials” include omelets, scrambles, pancakes, french toast, and classic benedict, all consistently delicious and served with the best breakfast potatoes on the island. But we usually order from the House Specialties section, where you’ll find delights like Blue Cheese, Apple, & Bacon Omelet (order this with the potato cake) and a Roasted Turkey Warm Goat Cheese Spinach Salad Hash that has all the hearty flavors of a turkey dinner. The Finnan Haddie has been our favorite among the house specialties since we first tasted this dish last summer: the smoky haddock filets seared and bathed in an herbed cream sauce are delicious for lunch and even better with two poached eggs for breakfast. But this week we discovered Chef Ridge’s new version of eggs benedict—Panko Eggs Benedict. For this, a pair of perfectly poached eggs that have a light crispy coating of panko are served on English muffins topped with sausage patties and spinach and drenched with rich hollandaise. You’ll not see this dish on the menu (not yet, anyway), but it is a regular morning special. Island Kitchen serves breakfast till 2 and lunch until 3, then at 5:30 pm, they reopen for dinner featuring dishes full of clear, honest flavors that are

sophisticated without being pretentious. Order a basket of bread as you look over the menu: there’s nothing like a thick slice of a peasant style bread studded with soft, mellow cloves of roasted garlic to pique your appetite. Chef Ridge changes his dinner menu seasonally and adds a miminum of Breakfast: Panko Eggs Benedict three specials every evening to the regular offerings. We started our recent meal with his Warm Goat Cheese Spinach Salad. Like many of his dishes, this is simple and simply delicious. Very fresh, tender leaves of spinach tossed in an excellent housemade red wine vinaigrette serve as the bed for a large cake of goat cheese. The cheese is rolled in panko so that the golden-brown exterior is has a tasty crunch, and the cheese inside kept warm and creamy. His patrons will probably never permit Chef Ridge to remove the popular Tempura Avocado from his dinner menu. Somewhat of a cross between a salad and an appetizer, the thick slices of avocado dipped in batter and fried are crispy and creamy and very good. Don’t ignore the chipotle cream served alongside for dipping: it adds a nice spark of heat. After you devour the avocado, you have a good sized salad of fresh greens tossed with the superb house vinaigrette. Calamari is offered on many island menus, and it’s one of those foods that is either really good or really not. The deft hands at Island Kitchen know Veal Sweetbreads just how to han-

dle this delicate seafood. The rings and tentacles are cooked just right so that the light breading is crisp but the squid is tender. Olives, diced tomato, and bold banana peppers are tossed with the calamari and add extra flavor, a salty kick, and a touch of heat to each bite. If Chef Ridge is offering his Veal Sweetbreads the evening you dine at Island Kitchen, don’t hesitate to order this Grilled Sirloin Steak special appetizer. To us, this dish embodies the wonderful mix of sensibilities at this restaurant: fun and fancy, haute cuisine and casual café. The bite-sized sweetbreads are sauteed and nestled into a light and creamy polenta flavored with blue cheese but not overpowered by it. A pool of dark, rich veal demi-glaze surrounds the sweetbreads and crispy onion rings are stacked on top. Entrees at Island Kitchen are comfort food with a touch of something extra; each one we tasted was very satisfying. Portions are generous and prices are very reasonable. We’re hard-pressed to think of another island restaurant that serves a thick and juicy, perfectly Grilled Sirloin Steak with classic bearnaise, grilled asparagus wrapped in bacon, and a potato croquette for just $26! Last season, Chef Ridge reintroduced us to his modWiener Schnitzel ern version of an old-fashioned favorite: Wiener Schnitzel. For this he drapes thin and tender cutlets of veal with a golden-brown crumb crust over roasted yukon gold potatoes. A gorgeous veal sauce with garlic, lemon, caramelized onion, and herbs adds the perfect finishing touch. Another deliciously homestyle meal with a decidedly different twist is the Roasted Statler Chicken Breast. The aroma is enticing and the first bite doesn’t disappoint! Nor do the second or third... The skin is salty, seasoned, and sinfully crisp while the meat underneath remains moist and suc-

culent. The breast is served on chunks of roasted potato in a richly flavored apple curry sauce that emphasizes flavor over heat. Chef Ridge’s fish dishes often appear as evening specials so that he can take advantage of the island’s fresh catch. We decided to try his new Pan Seared Fluke, and it turned out to be a dance of superb yet subtle flavors—each distinct, Roasted Statler Chicken Breast but none overpowering the others. Thick filets are expertly seasoned and golden. The fish is moist, flaky, and sparklingly fresh. Sauteed slices of porcini mushroom garnish the top and a delicate creamy mushroom sauce is underneath. Sauteed spinach cuts the richness of the sauce with a pleasant garden greeness. Dessert at Island Kitchen, if you have any room left after the generous entree portions, changes frequently. We finished our meal with a smooth, cool Banana Cream Pie on graham cracker crust, a Flourless Chocolate Torte, dense and chocolately with great mouthfeel, and the Island Kitchen Bread Pudding, sweet and Pan Seared Fluke fruity, prepared using delicious made-from-scratch blueberry and raspberry muffins. The next time you go out for breakfast, for lunch, or for dinner, avoid the rush of downtown and head to Island Kitchen, which has the soul of fine dining in the body of a casual café.
