It’s hard to become cool when everyone knows you started square. Reading

interesting books, going to galleries, and attending rock concerts may be one formula. You can take the cool kids out and get drunk with them, posting group photos on social networks. Money could provide all sorts of ways to broadcast

coolness to the world, from flashy cars to clothes from avant-garde designers, though such things can seem awkward on a conventional businessman, for instance.

Established hotel chains are facing similar challenges. Younger consumers

may not patronize chains perceived as corporate, boring. They seek the unique,

memorable and quirky. Cash-strapped Western youth prefer airbnb and do not want cocktails in the lobby bar, but young finance types avoid five-star chains unless there is an expense account involved. They don’t want to be seen with all the old squares.

This may seem Western-centric to China-based managers used to provincial

businessmen and officials ashing on the f loor before dinner with Chateau

Lafitte mixed with Sprite. But locals are becoming hipper even faster than their counterparts in the West - partially to distance themselves from the vulgar arrivistes. Chinese consumers are allergic to all that is dated and unsophisticated.

A new class structure is solidifying with very pronounced stratifications. Hotels

need to be planned with this evolving customer in mind. Today’s bumpkins have children studying design at Parsons and Central St. Martins may well be prospective customers in five years.

For existing properties, it’s hard to change. Cavernous lobbies with marble

floors and massive chairs are permanent. Slightly more surmountable are the

obstacles of corporate structure, with the command structures, internal politics, approval processes, and auditing requirements. The experience starts with the

people and the people are the main problem from waiters on up. It’s hard enough, especially in China, even to train staff to give acceptable service. Now they have

to be interesting, informative and fun! Wooden, uninspired floor staff and lame PR managers who’ve never been to Williamsburg or Dalston won’t do the trick with this new type of consumer.

Getting hipper staff, an inspired playlist, artisanal cocktails, collaborations

with concept stores and hipster CEOs may be ingredients for turning a stale chain hotel into something more relevant. But they still might not work if the basics like location and design are lacking. There may be a risk that in the effort to get a new

energy old values are lost. Trying to look cool might seem silly on a successful

hand to interiors, teaming up with the quintessentially British lighting brand Anglepoise. This iconic

lamp was designed in 1932 by car designer George

Carwardin. The balanced-arm design was inspired by vehicle suspension systems. For this 21st century version, Paul Smith puts a twist on the usually

monochromatic design with the signature Paul Smith tones.

imported to France in the middle of the twentieth century were required to have “Made in Switzerland” on the dial.

My fans are used to my neat bangs and it’ll take time for them to adjust if I make a big change. I do experiment sometimes; I did try different bangs in my music videos. I heard that you call your singing “Wu-Style”? Actually, Guo Degang (a Chinese comedian and xiangsheng actor) named my singing this. It’s probably because people of my style are not expected to be stars. I am special but not weird; there are lots of singers abroad who have strong identities. I just sing from my heart; I may seem changeable, but I just want to always sing freely, following my heart. Some love your style very much while others find it unbearable. What do you think about that? I don’t really care about that, you know, people change all the time, and a person’s image can transform in the twinkling of an eye. I am a singer and my goal is to do a good job and for that, I am optimistic that my future holds success. What is your dressing style like in real life? It’s very flexible. I would like to try interesting, funny or exaggerated things, and I hate to set many restrictions or bars on myself at the very beginning. People may think my style is ‘weird’, but that’s only for my stage performances. What’s your dream trip? I haven’t thought about that seriously yet, as I haven’t had many chances to travel, so I can’t tell exactly what my dream travel is right now. However, wherever I go, I want to feel relaxed, free and joyful. The world is so big and amazing and I am glad that I have an entire lifetime to know it. What hotel do you like to stay in most while you are travelling? I’ve been to many different places and stayed in many different hotels due to work. Everything is in the details, so I value hotel details very much, especially the interesting, artistic and well-designed ones which are a hotel’s characters. Right now the World Cup is the hottest event worldwide. Will you watch the cup games? Which team do you think will take the crown? Yes, I watch sometimes, but I rarely watch a full one. Given that lots of surprises have already happened in the World Cup this year, it’s really hard to tell, but I would like to choose the team with the most handsome players, ha-ha!

As the CEO of Lalique Global, how do you think of the brand’s future in China? Ten years ago, we had handed Lalique’s brand over to some agencies, but two years later we decided to take it back, because the Chinese market is huge. We take mainland China as being one of the most important markets for Lalique. The first step was to open a retail store in Shanghai’s ICC in January 2014, and shortly after that we opened another flagship store of about 400 square meters in Shanghai’s IFC Mall. We are opening these stores in order to showcase Lalique’s diversified products and to increase our brand awareness in China. Wellknown artists around the world are invited to design for Lalique, which is a great way to create crossover artworks. What are the criteria of selecting the qualified cooperators for Lalique? Have you ever considered cooperating with Chinese artists or brands? For potential partner brands, they must be the top brands in the industry and there should be the possibility of mutual integration in terms of concepts and craft. As for the artists and designers, what we are looking for is the uniqueness of their taste. Someone with extraordinary creativity will be the chosen one to reinterpret our crystal products. Since China will be the mainstay of our future sales, we would consider cooperating with Chinese artists, designers and brands. Among all of the Lalique collections, which one is your favorite? I like drinking, so I prefer Lalique “100 POINTS”. “100 POINTS” is a simple but goodlooking piece with the quality granted by James Suckling, an American wine expert. And I like Bacchantes as well, which was created by the founder of Lalique René in 1927 and is a representative of perfect combination of transparent crystal and frosted crystal. It is one of the earliest designs that are still in production today and also the bestselling series. Why was the “Equus’ series chosen to be the gift for the Chinese President and Foreign Minister when they visited France? As the “national gift”, Lalique is often seen as being the gift of choice. When we heard that the Chinese President Xi Jinping and Foreign Minister Wang Yi were about to visit France in the year of the horse and the government staff would come to Lalique to choose gifts for them, we were overwhelmingly flattered. We finally selected “Equus” and “Cheval Mistral” for Chairman Xi Jinping and Mr. Wang Yi respectively.

beautiful selection of art pieces, furniture, textures and materials for the hotel’s new look.

Eager to showcase French artistry and craftsmanship

throughout, François Champsaur commissioned French visual artist Jean-Michel Alberola to paint a fresco on the bar’s ceiling;

interestingly, the same artist has designed the bar’s carpet, where

the art above seems to ‘reflect’ the design below. Other ‘artistic’ touches include the Carrara-marble ‘Deconstructed Bar’ as well

as the way the room numbers resemble artworks in the corridors, placed on individual pedestals, lit from above.

ootprints is Kelly Hoppen MBE’s latest project, and is situated on the exotic island

of Barbados in the Lesser Antilles. Drawing

inspiration from the tropical climate and idyllic views of its location, the result is a 7,000 square feet beach house with a light and inviting atmosphere. The interior was designed with entertainment and

comfort as guiding values – big and open living

spaces were a prerequisite for this property in which people can smoothly filter from an open terrace, through a covered dining room and into an indoor sitting room.

With Footprints, Kelly managed to create an

interior that is universal in style, yet embraces the local environment. Her signature palette of neutral colours is present in every room of the property,

and the use of materials such as planking on walls, ceramic, linens and stripes ensure the house is in keeping with the Barbadian surroundings.

Being previously divided into several apartments,

the main challenge was to create a space that is both practical and functional. Kelly had to reinvent existing features, such as the column in the middle of the living room. As an essential structural part

of the building, it was impossible to remove it,

but instead of creating an impediment to the open space it was recreated to support shelves between the column itself and the wall. Spread over four

floors, basement included, the residence comprises

five bedrooms, all of which are en-suite with the exception of one, and two spacious living areas

on the ground and first floor. Terraces, covered or uncovered, are present on each floor with the one

on the lower level giving direct access to the beach

creating a harmonious transition between indoor and outdoor space.

Kelly’s ever-evolving style is underpinned by a subtly

coordinated fusion of East meets West; clean lines and neutral tones, blended with charming warmth and sumptuous opulence.

Kelly is honoured to be the recipient of copious design

awards and the proudest point in her career to date came in

2009, when she was made an MBE for her services to interior design. In December 2013 she was awarded the Natwest Everywoman Ambassador award for inspiring more young

women to excel. She puts her stamp on the homes, yachts and jets of private clients, as well as select commercial projects the world over, including hotels, restaurants, offices and aircraft.

Some of her most recent projects include a collaboration with

Pearl Motor Yachts and the design of LUX* Belle Mare hotel resort in Mauritius.

editorial team is based. Rainbows of butterflies, graphic prints, contemporary Chinese furniture, and stylish sales staff transformed the lobby of the Four

Seasons Hotel from May 23 to 29 as design boutique Wuhao introduced guests to its unique curatorial

approach to fashion, furniture, and accessories. Much more than the usual pop-up, this installation and temporary shop was a first for five-star hotels in Beijing, the Four Seasons Hotels and Resorts, and

Wuhao. Hotel guests and visitors got the chance to

mingle with Beijing’s style set - designers, editors, and fashionistas - while browsing through Wuhao’s

unique product mix: avant-garde fashions from Shanghai’s He Yan, London’s Christopher Raeburn

and many others, furniture from Xiao Tianyu and Pili Wu, and yak horn accessories from Smith &

Norbu. There was even something for babies with the charming children’s wear of Tang Roulou, by a China-based Parisian design duo. The pop-up was an a chance for cross-pollination of two very

different worlds that clearly belonged together. The elegance of Beijing’s top luxury hotel and its guests

meshed perfectly with the bohemian independent spirit of Wuhao and its line of designers. 5 stars to

this homegrown expression of Beijing’s emerging aesthetic, in one of its finest hotels.

Singapore’s Sofitel Hotel. Collaborating with locally-based French designer Isabelle Miaja, Lagerfeld’s touch is to be seen throughout the hotel through a variety of objects including hotel collaterals from correspondence

cards to check-in folders and doorknockers. Notably, Lagerfeld’s aesthetic is seen in the library (whose books Lagerfeld selected himself) and the hotel staff, who are dressed in Lagerfeld-designed uniforms.

When asked about his inspiration, Lagerfeld discussed the legendary discovery of the city by a Sumatran

prince, and the tigers which once stalked the land which is now downtown Singapore, but also the way that

the city has transformed into a modern powerhouse. Updating Parisian elegance to the context of tropical city-state, the collaboration between Lagerfeld and Sofitel So Singapore is a coup of hotel design.

Interestingly the hotel was also featured in the 1933 film Flying Down to Rio.

从厨师到酒店总经理的成功转型,需要从哪 些方面重新认识自己? 从厨师到行政总厨,我意识到精湛的厨 艺是远远不够的,我必须接触管理;从行政 总厨到总经理,管理又与之前不一样,得纵 观全局。我有很多东西要学,比方说财务, 作为一个总经理,财务业绩是排在第一位的 事情。对内对外的沟通也不能忽略。对内协 调各部门关系,让大家为共同的目标合作努 力;对外则要面对客人、业主、当地政府部 门以及新闻媒体等,这些都意味着厨师必须 洗掉手上的油烟味,把舞台延伸出去。 作为厨师界的明星人物,你对于酒店管理的 理解是怎样的?如何发挥自身的优势? 酒店的运作必须有条理、有系统。这个 理念很简单,但是不容易做到。首先要从酒 店品牌文化出发,制定与之相适应的标准, 遵循统一的标准,便成就了成熟的系统,才 能保证酒店有条不紊的运作,为客人呈献专 业的产品。举例来说,客人觉得上次吃的某 道菜味道很好,于是他又来了,但是这次感 觉味道很糟糕,那说明酒店没有统一的标准 或者没有很好的系统去执行标准。所以我们 要把酒店的标准通过培训清楚地传达给每一 个员工,这样才会有信心给客人提供水平始 终如一的服务。我自身的优势大概是从做厨 师时起,就很讲究细节和系统,这也很适用 于管理整个酒店。 你对酒店餐饮部门有什么创新的想法? 宁波有很多非常好的本地食材,我和我 的厨师们会发掘这些很有江南气息的食材, 按照不同季节分类,融入自己的实践经验和 灵感,在酒店季节性的菜单中呈现出来。除 了菜品本身,在哪儿吃、怎么吃也是客人体 验美食的一部分,这一点在宁波柏悦酒店是 得天独厚的。在华东地区乃至全国都很难找 到像茶苑、红吧这样依山傍水,又有 500 年 和 700 年建筑历史的餐饮场所。Dining Boat 也是独一无二的,五星级酒店里唯独我们有 五星级的膳舫。在船上用餐,既有五星级酒

还有其他规划吗? 就像很多厨师一样,我想自己开一个餐 厅。餐厅的每个部分都倾注我自己的灵感, 倾注我做酒店、做餐饮二十多年来对客人、 对市场的理解,再加上自己想要的风格。菜 品不一定要多么华丽,不一定要得到所有人 的认可。我想要的是当客人们来到我的餐厅, 看到、品尝到我的菜就会感觉出来,“对, 这就是 Peter Zhou 做的东西”!

For example, imagine if there was one dish that was especially preferred by some guests, which resulted in more guests being attracted to our restaurant. However, if there was no standardised method of preparing the dish, its perfect flavour could not be achieved as before. What I should do as manager is convey the concept and the standards to all of the staff at Park Hyatt Ningbo through training. As for my advantages as a chef, I care about details and systematic rules very much, which is also useful for managing a hotel.

Now that your transition from chef to general manager has been successfully completed, how do you see yourself and your work? As I went from chef to executive chef, I realised that merely possessing exquisite cooking skills was far from enough: I needed to learn what management is all about. My next big step was to take a position as the general manager of the hotel, and then everything became different. Being a general manager meant that I had to learn some unfamiliar things, such as financial management. Financial performance is the top priority for a hotel’s general manager, although internal and external communications are very important too. The internal coordination of different departments must be achieved through me, so that we as a team can strive for a common goal. What’s more, I also have to deal with all of the external problems associated with guests, owners, the local government and media... all of this meant that I needed to master interpersonal skills.

Do you have any innovative ideas for the food and beverage department of Park Hyatt Ningbo? There are a lot of local culinary traditions and ingredients in Ningbo, and my chef colleagues and I have dedicated much of our time to exploring Jiangnan flavours, according to the different seasons. With our practical experience and professional inspiration, the seasonal menu at Park Hyatt Ningbo will surely surprise the guests. Aside from the dishes themselves, the way of preparing and enjoying them also matters, which makes Park Hyatt Ningbo so outstanding. In eastern China - and even the whole country it is hard to find such nice restaurants as our tea house and our Red bar, which are picturesque and vibrant with history at the same time. Our dining boat is quite unique among all the five star hotels. Having a tailor-made yet exclusive dinner on the boat, while enjoying magnificent lake views at the same time, makes for an absolutely special experience.

How does your background as a star chef impact your understanding of hotel management? And how do you take advantage of your former role as a chef? The operation of a hotel must be systematic. The concept is simple, but it is not easy to put it into practice. Based on the brand culture of Park Hyatt Ningbo, I accordingly set appropriate standards first, and built up a well-organised system (as the criteria requires) which guarantees

Do you have any other upcoming plans? Like many chefs, I would like to run a restaurant of my own, which would be in my own style; in terms of the design and the menu. I would devote all of my professional experience and my understanding of the industry to each part of the restaurant. The food may not be necessarily be flashy, but as soon as my guests see the plates and get a touch of the flavour, they would easily recognise that this is Peter Zhou’s.

It’s neither a gallery nor a modern art museum. It is the all-day dining restaurant Yi Cafe at the Shangri-La Hotel, Ningbo. Ever since it opened on 29 April 2014, guests entering Yi Cafe for the first time could think that they were in a fashion exhibition. Its new design is by Mr. Fabrice Canelle, described by international magazines as “a unique choreographer”. Guests can enjoy a feast on a journey of food and art in a theme of fun, artistic, colourful dining experience all bundled into one. The red and white scaffoldings incorporated in the triangle decorations on the ceiling greet guests at the entrance. The simplicity of the triangles in different colours, materials and poses creates a space filled with renovation and vision. The wall of 3D lips behind the hostess dressed in Tiffany blue represents both intellect and sex appeal. Walking to the dining area, guests will find that this is a restaurant beyond food. The ceiling takes on the popular Tetris game twinkling above, taking guests back to their childhood. At the same time, ‘children’ descend from the sky with small red backpacks with umbrellas. Yi Cafe provides a fantastic dining experience far beyond one’s imagination. The Yi Cafe presents visual entertainment together with high-standard food quality, not to mention the emotions from the heart of the chefs and the sincere Shangri-La service. “Before I came, Yi Cafe had been the most popular restaurant and people came here for food. 亚洲画廊艺术博览会圆满闭幕 Art Asia Shanghai 2014 Closes

北京首家完美太太进化学校“太太悦团” 前不久举行了开课仪式。“太太悦团” 以提升女性优势气质、完美女性个人生 活为精神和进取目标,是一所为都市女 性所建构的、以提高生活美学素养培训 为核心的“完美太太精华学校”。开课 仪式当天邀请了日本著名插花师和数十 名与时尚、美食、艺术及高端生活方式 有关的媒体朋友共同参与。

在中法建交 50 周年之际,法国蔚蓝海岸 大区随滨海阿尔卑斯省代表团于 5 月 26 日至 31 日在北京、上海和杭州进行为期 一周的访问交流活动,推广蔚蓝海岸大 区丰富的旅游资源。据统计,在单国游 行程中,蔚蓝海岸与巴黎是近年来最受 中国游客欢迎的法国旅游目的地。近 3 年来,到蔚蓝海岸旅游的中国游客数量 翻了一番,2014 年有望达到 10 万。

为期四天的 2014 亚洲画廊艺术博览会于 6 月 8 日在上海市徐汇区龙美术馆(西岸 馆)圆满闭幕。本届博览会共有 17 家画 廊参展,吸引了近 3000 位来宾。韩国阿 拉里奥画廊展出的日本艺术家名和晃平 的《方向 #24》,共五张大幅布面油画作 品出售给一家大型美术馆;其代理高磊 的作品也受到追捧,先后有数位藏家订 购。在展会期间举办的题为“艺术创作”、 “画廊与艺术家的关系”及“我的收藏 之路”的讲座或对谈受到了听众的积极 参与和肯定。
