I
was asked not long ago about the best trip I’d ever taken. Hands down, it was my recent trip to Africa, and for several reasons. During the trip, I visited the wine regions of South Africa, which felt akin to being in France or Spain. Our group stayed along the waterfront, making us feel as if we were lodging in Lahaina, Hawaii. And, the famed waterfalls of Zimbabwe and Zambia— Victoria Falls – were simply spectacular. They even outshined Niagara Falls – the falls I grew up visiting from my hometown near Buffalo. And finally, I was enthralled with African wildlife; it was the icing on my already spectacular cake.
There are so many answers to the question about why my trip to Africa was the most amazing trip of my life. The food was incredible, the people were warm and friendly, the adventures were simply off the charts and the wildlife was everywhere. For example, while we stayed in a beautiful game lodge right in Chobe National Park, Botswana gave us the opportunity for the most remarkable views of elephants, hippo, antelope, kudu, Cape buffalo and many more creatures…it’s hard to name them all! We even saw a cheetah and giraffes roaming about. When I tell people about my trip to Africa, this is what I tell them: Africa stole a piece of my

On my first trip to Spain, I went into Barcelona and fell in love with the bustling streets, markets of Las Ramblas and Spanish architecture. Gaudi is the famed architect of Barcelona, and you can see his works everywhere. My travels throughout Spain are what made me fall in love with wine and tapas. I believe that without my first visit to Spain, being immersed in the culture and food the way I was, I never would have acquired quite

such a love for travel and wine the way that I have. Further, I probably would not have as thoroughly enjoyed my wine farm visit in South Africa quite as much had I not had that first wine experience in Spain all those years ago. Now that I’m home from Africa, I am ready to go back to Spain, my
first love. In fact, I’ll be going in September to enjoy the traditions of the flamenco dancers, Gaudi architecture, the people of the country and, of course, the food, wine and tapas. What was your best trip ever? If you don’t have one yet, what are you waiting for? Go see the

Integrity on Ice:
Joseph Dallanegra’s Legacy
B
orn on Feb. 6, 1933, Joseph Dallanegra was raised in New Jersey as the son of two ambitious attorneys; his mother was a researcher and his father was a trial lawyer. Some of Dallanegra’s most vivid
recollections of his formative years involve his parents and their passion for the law. That’s because, in the Dallanegra house, dinnertime conversations often involved an impromptu discussion of the hot legal topic of the day. “Each night, they would talk about how the cases were going; my brother and I wound up hearing Supreme Court arguments every time we ate,” he said. Dallanegra says this unique upbringing – and access to many zealous discussions of justice and truth – gave him a different perspective on law than most people
have. This perspective would be a cornerstone of the way he has lived his 85 years. Dallanegra‘s blossoming passion for legal justice and Americans’ constitutional rights laid the groundwork for his pursuing a legal career of his own. Upon graduating with his bachelor’s degree from Rollins College in 1956, his plans included heading straight into law school. But, the wartime draft would delay Dallanegra’s ambitions for at least four years. Like many young men his age in the early 50s, Dallanegra was drafted into the United States Army. He completed his basic training in Fort Knox, Kentucky, and promptly was whisked away to the northernmost military base in the world: Thule Air Command Base – as it was named at the time – in Greenland. Greenland’s summer was a far cry from the Florida heat, and even the New Jersey winters he grew up with couldn’t compare with its cold. Dallanegra remembers it all vividly. “In Greenland, there were no trees for 2,000 miles,” he said, “and we had to wear parkas and have animal fur over our faces (when we went outside). Our skin froze in about 30 seconds.”

“We lived inside a refrigerator,” he added, “and we had three minutes for a hot shower. We ran out of hot water all the time.” He recalls summertime in Greenland, when 40-degree weather would be just enough to encourage his fellow soldiers to brave the chill and wear T-shirts. He remains baffled as he recalls generals being eager to visit the base in the summer; they thought it was the posh place to visit and be driven around. Often, Dallanegra was the one assigned to such a duty. During Greenland’s winters, it was always dark. And in the summers, it was never dark, recalled Dallanegra. But, this Florida transplant used his time well at Thule anyway. That’s what you do when you have integrity. Thule is 750 miles north of the Arctic Circle. Most notably, the base and its men are responsible for supporting and operating a ballistic-missile early-warning system, which is designed to detect and track missiles launched against North America. In the late 50s, when Dallanegra was stationed at Thule, United States B-52s made frequent flights from the base to the Soviet Union to inspect its defense system. Dallanegra was a member of the 100-man strategic air command (comprised of 95 draftees like |8|
Dallanegra) that supported the dispersal of B-36, B-47 and B-52 aircraft. Its radio communication tower, built in 1954, was the tallest structure north of the Arctic Circle in the western hemisphere at that time. PFC Dallanegra was a fine soldier from the start. Though not at all thrilled to be drafted, he made the most of it, earning commendations from his superiors time and again. He remembers that he was a soldier “who did exactly as he was told.” In many ways, he was a leader via his obedience and dedicated follow-through. “I was treated very well as a soldier; I became soldier of the month at Fort Knox as I was undergoing basic training,” said Dallanegra. “The active general gave me the day off pass during basic training, so I could go see a girl, who also was Rollins graduate,” he remembers proudly. Dallanegra’s dedication to excellence and consistently impressive performance earned him the ranking of highest noncommissioned officer in the battalion at Thule, he said, and he proved to be worthy of the rank. At this “top of the world” base
in Greenland, Dallanegra served with the transportation corps. Many of the men were responsible for communicating with “icebreakers” – large cargo ships that were charged with breaking an ice path through the Arctic waters to allow other ships to bring supplies to and from Thule. Dallanegra was the only college graduate in the transportation corps, and within the unit he was tasked with operating the telephone system at the base, as well as being his Lt. Major’s personal transcriptionist. As Dallanegra recalls, the Lt. Major was judged completely by his supervisors on his writing abilities. “So, he had me write a lot of his letters for him,” he said. One fateful day, after he had finished with the letters and after the phone calls had paused, Dallanegra – who had been promoted to Sgt. Major of the base by the Lt. Major – walked out of his
office and by a soldier who was monitoring the emergency radio. That’s when Dallanegra heard the
United States Coast Guard’s icebreaker SOS call. Startled at the soldier’s lack of concern over the radio message, Dallanegra asked him pointedly, “What are you doing?,” and probed him about why he wasn’t reporting the call. “It’s some guy messing around,” the soldier replied, shrugging off the SOS as a prank. jor was with him, said the OOD, and Dallanegra exclaimed, “Then you tell him that Sgt. Major PFC Joseph Dallanegra is reporting an SOS from the icebreaker on the bay!” Then the line went dead. Within minutes, the Lt. Major had arrived at the phone post. He already had deployed a helicopter to take w a t e r pumps to the ship. It turns out that the SOS really was from an icebreaker that had recently left the base. It had hit a pinnacle – a sharp stone that darts upward from the ocean floor. The pinnacle had pierced a thinner part of the ship’s hull, and the vessel was taking on water. Ultimately, the ship and its crew of 50 souls were saved due to Dallanegra’s insistence. It’s this high level of integrity that forms much of Dallanegra’s legacy. “If I were to describe my father to someone, I would tell them that he is a person with courage of convictions,” said Hope Clark, his daughter. “He believes in going above and beyond to adhere to the truth.” Dallanegra honorably completed his years of service in the U.S. Army alongside his drafted and volunteer soldiers. Though it was
not the course he had planned as he was pursuing law, he eventually returned to higher education to earn a law degree from the University of Miami. Dallanegra’s dream of pursuing legal justice like his parents did ultimately came true. He lived as his parents
had taught him to live through their stories at the dinner table: pursue truth, seek justice, and be a leader the world needs. Dallanegra and his wife, Barbara, married in 1963. Together they had four children – Dawn, Mead, Hope and Joseph III, and today have 10 grandchildren. They live in Cleveland, Tennessee, most months, and snowbird in Venice, Florida, in the winters. Dallanegra made a name for himself in the career he passionately pursued, but also as the lesser-known Sgt. Major PFC Dal-

lanegra in the United States Army. It turns out that Dallanegras are known for leadership; bishops and renowned Venetian painters even share the name. Future Dallanegra generations can be proud of the strong name, too, and highlight on their family tree the story of the man who followed his instincts through integrity and dedication to excellence, ultimately saving
American lives off the shores of Greenland following WWII. It’s a humbling example of doing your best in any situation, even if you didn’t choose it for yourself. Top 3 Heart Healthy Meals Make an Impact with Food LIVING WELL BRANCH

espite advancements in medical and surgical care, heart disease is still the #1 worldwide cause of death for both men and women. It accounts for 40% of deaths in the United States, nearly half of these
women, which is greater than all forms of cancer combined. No symptoms are present for 50% of men and 64% of women prior to death from a cardiac event. Even our children, as young as 12 years of age are showing signs of hardening of the arteries. These statistics are real and so is the opportunity to positively impact these with attention to nutrition and lifestyle. The food we eat everyday can offer support toward our healthy heart goals. Generally speaking, lots of vegetables, healthy fats and oils, whole grains, minimally
processed foods and fruits are a great place to start. Those with certain immune conditions, celiac disease or insulin challenges will need to adjust accordingly. Eliminating trans fats and processed foods, avoiding nitrites/nitrates and decreasing sodium intake are great ideas at any age. The 2015– 2020 Dietary Guidelines for Americans recommend that Americans consume less than 2,300 milligrams of sodium per day, less than a teaspoon. If blood pressure and cardiac issues are present, this number may be decreased to 1,500 milligrams. Check with your health care provider to determine their recommendation for you. Most of the excess sodium in our diet often comes from processed foods and snacks so cutting back/eliminating this source will greatly impact our daily sodium intake. In my practice I see a high motivation to make dietary changes to decrease the risk of cardiac events or to heal from one that has occurred. Adopting a new approach to meals can be overwhelming. Here are three of my favorite heart healthy meal swaps for breakfast, lunch and dinner.
Heart Healthy Overnight Oats

In a large bowl, toss together the broccoli, squash, carrots and zucchini garlic powder, 3 tablespoons olive oil and 1⁄2 teaspoon black pepper. Pour the vegetables onto a large baking sheet in a single layer. Bake until the vegetables are softened and lightly browned about 30 minutes. Bring the chicken stock to a boil, add quinoa and cook according to quinoa package directions. In a small skillet, brown the chicken in the remaining 2 teaspoons olive oil until cooked through. Vinaigrette: Add the olive oil, vinegar, oregano or herb blend to a small jar, tightly close and shake. To assemble the bowls: Evenly distribute the quinoa, vegetables and chicken into 2 bowls. INGREDIENTS: 10-14 large garlic cloves ¼ cup extra virgin olive oil 2 tablespoons finely chopped dill or oregano ¼ + ¼ teaspoon of salt ¼ + ½ teaspoon ground pepper 6 cups brussel sprouts, trimmed

salt and pepper. Halve the remaining garlic and toss with the brussel sprouts and 3 tablespoons of the seasoned oil. Roast for 15 minutes in a large roasting pan, stirring once. Add wine/broth to the remaining seasoned oil. Stir the vegetables and place the salmon on top. Drizzle with the wine/broth mixture. Sprinkle with the remaining oregano/dill, salt and pepper. Bake for 5-10 minutes more until salmon just cooked through. Serve with lemon wedges.

INSIDE ADVISOR Legal - A Useful Resolution: Medicare, Medicaid and Long-Term Care– What will they Pay?
They sound alike, but they aren’t. Medicaid and Medicare are quite different programs. Everyone who is age 65 and over (some younger) that receives Social Security benefits also receives Medicare. Medicaid, on the other hand, is a program that helps pay for long-term care for individuals with limited income and assets. To be eligible for Medicaid, you must meet the program’s income and asset guidelines. Also, unlike Medicare, which is federal, Medicaid is a joint state-federal
program. Each state operates its own Medicaid system, but this system must conform to federal guidelines The biggest difference between Medicare and Medicaid is that Medicaid covers the cost of a nursing home (and some homecare or assisted living), while Medicare, for the most part, does not. Medicare fully covers 20 days of rehabilitative care in a “skilled nursing” facility that follows a stay of three or more days in a hospital. But for days 21 through 100, you will have a co-payment of $167.50, unless you have a supplemental policy. And if you stop making “progress,” Medicare will stop paying. When it comes to long-term care, Medicaid has become the long-term care insurance of the middle class. Lacking access to

alternatives such as paying privately or being covered by a longterm care insurance policy, most people pay out of their own pockets for long-term care until they become eligible for Medicaid. But that could have been avoided had they planned. The best results happen when someone plans at least 5 years before they need Medicaid. his month’s article will address a few issues that you should be aware of when you dive into the social media pool. Signing up for a social-media account is very easy, and it’s free. To start, type www.Facebook. com or www.Twitter.com in your browser, fill out the required infor-

mation, press the “sign up” button and you’re off and running. Most social-media sign-up prompts ask for similar information about you, but not all of it is required to open an account. In fact, I recommend that you not share some information. The reason is that social-media use can have good, bad and ugly outcomes; you must be careful about how you use it. Here’s my take on the good, the bad and the ugly of social media, and tips to make it a better experience for you.

of social media is this: It has illegitimately given permission for some people to be rude, mean and vile. (I write “illegitimate” because having a platform to say what you want to say doesn’t mean it is right or good for you to say it!) Safety First Let’s look at three things you might want to consider when you first sign up for a social-media account. 1. Consider not using your real name, birthday or (if asked) zip code. In setting up an account in a name other than your own, make sure to tell your friends and family what this name is so | 20 |
they will not ignore your “friend” requests, posts or Tweets. 2. Consider using an alternate e-mail address and have the e-mail from this account forwarded to your real e-mail address. Doing this will help hide your online identity from those who may be ill-intentioned. 3. On Facebook, be aware of some of the posts you comment on, too. Anything that’s asked online about your first car, teacher, place of birth, etc. may be used to help unlock your security questions. Also, never, ever post pictures while on vacation; wait till you get home. (If you post while you’re away, people know you are away!) It’s also a good prac-
tice to never announce that you are going somewhere; you make your home vulnerable in the same way. And finally, think before you type. All posts and tweets are kept on a server somewhere; they don’t vanish after you can’t see them. You never want something to come back and bite you. Be mindful, respectful, kind and considerate

Continuous care, during a brief period of crisis, can be available for up to 24 hours a day. When patients or family members have questions or concerns after business hours, they can often get immediate answers and help by calling an after-hours service. 3. What is the role of family members when their loved one is on hospice care? Family members play an
important role by providing personal care to their loved one when hospice teams are not present. The hospice team does not “take over.” Instead, they teach and support families so they can provide the best in-home care possible. Hospice teams realize that no one knows the patient better than their family. 4. What does hospice care cost? Does insurance cover it? Medicare pays for hospice services. Many states have established Medicaid coverage for hospice, and almost all private insurers and managed care plans provide coverage for hospice care as well. A Brief History of Stem Cells and Regenerative Medicine The first recorded use of stem cells was nearly a century ago, when physicians gave stem-cellrich bone marrow by mouth to patients with anemia or leukemia. Although this primitive attempt failed, advancement soon came through another major discovery. During the 1950s, scientists removed bone marrow from a healthy mouse and safely transplanted it to another that had defective bone marrow. Researchers soon discovered that bone marrow contained two types of stem cells: hematopoietic and mesenchymal. Thus, for decades since the discovery, adult hematopoietic – “blood-forming” stem cells
found in bone marrow – have been used in transplants to treat leukemia and other blood-based diseases. The relatively new field of regenerative medicine focuses on mesenchymal stem cells, also called MSCs. MSCs are found in bone marrow, as well as many body tissues like the amniotic membrane and umbilical cord. MSCs carry the unique ability to generate into bone, cartilage, and nerve cells, which help our bodies grow new tissues and heal damaged ones. Q: Why won’t the VA fix my teeth? Tim - Lake Helen Unfortunately, the laws authorizing and funding VA healthcare do not include comprehensive dental services for all enrolled Veterans. Though many of the larger VA clinics have dental services, they exist to serve those who have suffered a dental trauma in service or that have dental problems caused by a service-connected condition. For example, diabetes can contribute to certain dental conditions. Dental conditions caused by treatment of a service connected condition can also be covered – cobalt radiation, for example. Those who VA deems 100-percent permanently and totally disabled also are afforded dental services.
Q: If my service connected disability gets worse, can I get more compensation? Mike - DeLand Well, it depends. Disability percentages are assigned based on the specific symptoms of a given condition. For example, while joint injuries may be rated on the limitation of range of motion, skin diseases are rated by the amount of skin covered by the disease. The best advice is to seek the counsel of a Veteran Service Officer. Ask him or her to research your condition in the VA regulations, and explain to you what symptoms must exist to be assigned the next higher disability percentage. If you feel you meet the higher criteria, they can assist you in asking the VA to assign a higher rating.
Q: Can I reserve a spot in a VA cemetery now? Gerry - Osteen While you can’t stake out an exact plot, it is possible to get a preneed determination of eligibility for burial in a VA cemetery. That means the VA will verify that you meet the criteria to be buried in a VA cemetery before you die. And, while the VA will make every effort to ensure that those eligible are interred, it may not necessarily be the cemetery closest to your home.

Strawberry Shortcake This recipe may take a little effort, but well worth it. Can be made with fresh or frozen sliced strawberries. After we go to the you-pick-it strawberry By Lisa Buckner patch we hurry home and make this to go with dinner...That is if there are any left after the drive home.
DIRECTIONS:
Prep time 20 minutes Bake 15-18 minutes at 450 degrees Mix together dry shortcake ingredients. Cut in butter until mixture resembles coarse crumbs. Beat together egg and milk. Add to dry mixture all at once and stir to just moisten. Use cooking spray to grease a round 8x12 pan (glass pan is recommended); or place a parchment circle in the bottom of pan and grease the sides. Spread dough in prepared pan, building up edges slightly. Bake at 450 degrees for 15 to 18 minutes. (Be careful not to let it get too dark.)
