Esta claro que es el fruto del trabajo bien hecho y que esto solo se consigue con la implicación de todos. El pueblo dominicano cumple un rol importante en este logro pues solo ellos saben acoger al turista y hacerle sentir mejor que en su propia casa. Decimos mejor porque por lo general, ¡nadie quiere irse!

It is clear that it is the product of a job well done and this is only achieved with everybody’s involvement. Dominican people play an important role in this achievement because only they know how to receive tourists and make them feel better than in their own home. We say “better” because generally, no one wants to leave!

Algo habremos hecho bien. Desde las altas instancias han realizado una labor de promoción del país a la altura de los mejores. La naturaleza nos ha proporcionado una isla espléndida pero la industria turistica ha sabido innovar, organizarse, atraer al turista y a lo largo de los años han logrado situarse como el destino preferido del Caribe. No en vano, sabemos de buena tinta que muchos de nuestros vecinos nos miran con admiración e intentan implementar nuestra organización turística.

We must have done something right. Due to high requests, an advertising plan has been developed for the country, comparable to the best in the world. Nature has provided us with a splendid island. In addition, hotel industry have been able to innovate, organize and attract tourist. Over the years they have managed to position the island as the preferred destination of the Caribbean. As a result, we do know that many of our neighbors are watching us with admiration and are trying to implement our tourism organization.

Con Europa sumida en una profunda crisis, te paras a pensar si la actividad y la forma de vivir la vida de las personas no tendrá mucho que ver…

Cuando ves a los dominicanos esforzarse en un trabajo que le reporta lo justo para subsistir y aun así no pierde la sonrisa, disfrutan de un momento alrededor de una fría o ves como comparten lo poco que tienen como si les sobrara, llegas a la conclusión que en muchos países se han perdido los valores más básicos que nos permiten alcanzar la felicidad sin recurrir a nada material.

With Europe caught up in a deep crisis, we stop to think whether it has a lot to do with people’s activities and their way of living. When you see Dominicans doing jobs that only give them the necessary to survive and yet they keep smiling, they enjoy their moments with beer and they share the little they have as if it were abundant, you come to the conclusion that many countries have lost the most basic values that allow us to reach happiness without the need of anything material.

CRISIS Y CONTEXTO DE LA GUERRA DE ABRIL 1965 a historia conducente a la Guerra de Abril de 1965 estuvo signada por los siguientes elementos: La intensificación de los conflictos socio-políticos y la creciente ingobernabilidad de la transición posterior a la caída del régimen de Trujillo, ejemplificada por el golpe de estado contra el gobierno de Juan Bosch en 1963.

El surgimiento de voraces elites económicas anteriormente excluidas por la dictadura del poder del Estado y de la acumulación de capitales que éste facilitaba y dispuestos entonces a apropiarse del ámbito público.

La emergencia, organización y movilización contínua de sectores populares y profesionales demandantes.

La ambivalencia política exterior norteamericana, moviéndose entre la primacía del anticomunismo y el impulso liberal de la Alianza para el Progreso.

Estos factores nacionales e internacionales se entretejieron entre 1961 y 1965 constituyendo un dramático escenario de contradicciones, crisis, desplazamientos políticos, guerra e intervención militar.

Durante los primeros 14 días del enfrentamiento, la Fuerza Aérea Norteamericana dedicó todo su transporte aéreo no involucrado en el Sudeste Asiático a la República Dominicana. El 17 de mayo, 21,900 soldados estadounidenses habían desembarcado en Santo Domingo.

En aquel momento un joven médico, apasionado por la fotografía no dudo en arriesgar al máximo y captar con su ojo, imágenes de la realidad que estaba viviendo el pueblo domincano. Una imagen vale más que mil palabras.

HISTORIA / HISTORY CRISIS AND CONTEXT OF THE APRIL 1965 WAR he historical events leading to the Dominican War of April 1965 were marked by the following elements:

The ambivalence of United States foreign policy, fluctuating between the preeminence of anticommunism and the liberal élan of the Alliance for Progress.

The intensification of socio-political conflicts and the growing lack of governability during the transition folloving the fall of Trujillo’s regime, exemplified by the 1963 coup d’état against the government of Juan Bosch.

These national and international factors intertwined between 1961 and 1965 and constituted a dramatic scenario of contradictions, crises, political shifts, war and military intervention.

The emergence of voracious economic elites previously excluded by the dictatorial government from State power and the accumulation of capitals it facilitated, and eagerness at this point to take hold of the public sphere.

During the first fourteen days of the conflict, the United States Air Force devoted all of its transport aircraft not involved in Southeast Asia to the Dominican Republic. On 17 May, 21,900 American soldiers had landed in Santo Domingo.

The emergence, organization and continuous mobilization of demanding popular and professional sectors.

At that time, a young doctor who was passionate about photography did not hesitate to risk it all and capture with his eye images of the reality the Dominican people were living. A picture is worth more than a million words.

Miembros de la División 82 Aerotransportada, utilizando un rifle sin retroceso de 105 mm, hicieron un hoyo para hundir este barco en la entrada del puerto, evitando que los rebeldes lo sacaran a la mar. Fue ese el primer y único “encuentro naval” de la División 82, combatiendo desde los techos del edificio de Molinos Dominicanos. Quién sino Cristobal Colón dió a conocer el tabaco al mundo? Según relata en su diario, “…unas hierbas secas (cojiba) metidas en una cierta houja seca también a manera de mosquete…, y encendido por una parte. Por la otra chupan o sorben, y reciben con el resuello para adentro aquel humo, con el cual se adormecen las carnes y cuasi emborracha, y así dicen que no sienten el cansancio. Estos mosquetes…llaman ellos tabacos.”

De hecho, la palabra “tabaco” es de origen taíno y hace tres mil años que los índigenas lo utilizaban, aunque para muchos países el consumo de tabaco se inicia tras el descubrimiento de América.

In fact, the word “tobacco” is of Taino origin and three thousand years ago the indigenous used it, though for many countries the tobacco consumption initiates after the discovery of America.

El TABACO DOMINICANO Tras la llegada de los españoles al Nuevo Mundo, todos los esfuerzos en cuanto al desarrollo del sector tabaquero se refiere, se centraron en Cuba. A principios del siglo xx se importan semillas cubanas a República Dominicana y las plantaciones se multiplican por toda la isla. Este tabaco se exporta principalmente a Europa y EEUU para elaborar cigarros a máquina, pues se consideraba suave y de aroma sutil. Tras el bloqueo de EEUU a Cuba en la década de los 60, se redujo de manera drástica la producción y exportación de puros habanos (se denomina habano a todos los tabacos o puros en los cuales el 100% del tabaco utilizado es cultivado y manufacturado en Cuba).

DOMINICAN TOBACCO All efforts in regards to the development of the tobacco industry were centered on Cuba after the arrival of the Spanish colonists to the New World. Cuban seeds were imported to the Dominican Republic in the beginning of the plantations begin to multiply around the island. This tobacco is mainly exported Europe and the US to manufacture machine made cigars, because it was considered soft and with subtle aroma. There was a drastic reduction in production and exportation of Cuban cigars because if the US’ blockade on Cuba in the 1960s. “Habano”is a given to any cigar 100% made with tobacco cultivated and manufactured in Cuba).

A whole generation of Cubans was obliged to move to the Dominican Republic, amongst them the tobacco specialists, who cultivated more adequate species for this new environment.

In the beginning, the US’ which consumed 80% of the cuban tobacco, started looking at countries like Honduras, Nicaragua, among others to supply their need for importing tobacco.

The Dominican government didn’t lay back and began to organize that industry, creating the Tobacco Institute of the Dominican Republic; which is exclusively dedicated to the agricultural investigation of the plant. Furthermore, a group of farmers and artisans were hired to work in the factories.

EN PORTADA / COVER Toda una generación de cubanos se vio obligada a emigrar a la República Dominicana entre ellos los especialistas en tabaco, quienes cultivaron variedades más aptas para este nuevo entorno. En un principio, EEUU que consumía el 80% del tabaco cubano, miró hacia paises como Honduras y Nicaragua entre otros, para suplir sus necesidades en importación de tabaco. El gobierno dominicano no se resignó y comenzó a organizar esta industria creando el Instituto del Tabaco de la República Dominicana, quien se dedica exclusivamente a la investigación agrícola de la planta. Asimismo se contrató un gran número de campesinos y artesanos para las fabricas. La isla estaba preparada para acoger a las grandes corporaciones tabaqueras. Finalmente, las inestabilidades políticas que azotaban Honduras y Nicaragua contribuyeron a que las grandes fábricas internacionales se fijaran en el país.

Desde 1969 hasta 1990 la llegada de grandes empresas ha sido un goteo constante, en su mayor parte de origen americano. De este modo, un pais inicialmente poco reconocido internacionalmente en la industria del tabaco puede competir con las mejores marcas cubanas.

En una segunda etapa, la guerra abierta por EEUU en un origen, contra el consumo de cigarillos hizo que las ventas de los mismos descendiesen estrepidosamente mientras que las ventas de cigarros (puros) no cesaban de aumentar. Nació una nueva clientela.

A principios de los años 90 las exportaciones anuales rondaban los 55 millones de unidades, superando en la actualidad los 300 millones de unidades, haciendo de República Dominicana uno de los mayores exportadores de cigarros premium del mundo. Cada año nacen nuevas marcas y este crecimiento imparable no parece tener fin.

Finally, the political instability that Honduras and Nicaragua were facing contributed to the establishment of the bigger international factories in the country.

From 1969 to 1990, renown tobacco companies have been trickling in, mostly American. Because of it, a country not very well known for its tobacco industry can compete with the best known Cuban brands.

In a second stage of this industry’s development, cigarette sales plummeted due to a fierce US campaign against smoking; regardless cigar sales kept increasing. A new clientele base was born. At the beginning of the 90s, annual exportations were around 55 million units; currently surpassing the 300 million units per year, the Dominican Republic is one of the main premium cigar exporters in the world. Each year new brands are created and its growth seems never-ending.

Cibao Valley: The Land of Tobacco The province of Santiago is the leader in national tobacco production and produces 80% what is exported.

The Cibao Valley has special qualities the favor tobacco cultivation.

A diversity of soil, microclimates, and seeds that produce a tobacco with a variety of aromas and flavors and organoleptic properties that differentiates them from other countries.

El Valle del Cibao tiene características especiales que favorecen el cultivo del tabaco, posee una diversidad de suelos, micro climas y semillas que producen un tabaco con variedad de aromas, sabores y propiedades organolépticas que los diferencian de otros países.

Otra de las fortalezas está en la mano de obra. República Dominicana posee grandes artesanos, también llamados torcedores. Prender un puro es todo un ritual, como sostenerlo, cortarlo, dar “el golpe” y sobre todo saborearlo y disfrutarlo. Para dar respuesta a las inquietudes de la sociedad la gran mayoría de las fábricas ofrecen en República Dominicana visitas guiadas donde los expertos le explicaran todo el proceso de elaboración de los puros. Es una inmersión cultural importante pues fumemos puros o no, no deja de ser una tradición centenaria.

Lighting a cigar is a ritual within itself; how it is held, cut, tapped and moreover tasted and enjoyed. In an effort to satisfy society’s curiosity, the majority of the factories in the Dominican Republic offer guided tours where the experts explain the elaboration process of a cigar to the group. It’s an important cultural immersion since, smoke them or not cigars are a centenary tradition.

El eterno “play boy” dominicano The Eternal Dominican “Play Boy” a leyenda de Porfirio Rubirosa, aun hoy, 47 años después de su muerte, ha dejado huella en la memoria de medio mundo. Dicen que no fue un hombre guapo, pero sí un gran caballero hasta el final, romántico empedernido, con un don de palabra inusual fué capaz de enamorar a las mujeres más famosas y poderosas del momento traspasando todas las fronteras.

he Legend of Porfirio Rubirosa made its mark in the memory of half the world even today, 47 years after his death. People say he was not a handsome man; however he was a great gentleman, a hopeless romantic, a sweet talker that was able to woo the most famous and powerful women of the time, transcending all boundaries.

Cabe destacar que esta leyenda dominicana, fue fuente de inspiración para Ian Fleming para la creación del personaje de James Bond. Rubi, como era conocido en la jet set, nace en San Francisco de Macorís en 1909 y fallece en París el 5 de julio de 1965 víctima de un fatídico accidente de tráfico a bordo de su Ferrari.

Note that this legendary Dominican, served as inspiration for Ian Fleming in the creation of the James Bond character.

Rubi, as he was known among the jet set, was born in San Francisco de Macoris in 1909 and died the victim of a fatal accident aboard his Ferrari in Paris on July 5, 1965.

Su infancia transcurre en París donde aprende el arte de la conquista femenina codeándose con la alta sociedad parisina. Posee una personalidad arrolladora con un encanto sin igual. Con 17 años su padre es destinado a Londres pero él decide permanecer en Calais donde forjará una gran amistad con el Príncipe Ali Khan que durará toda la vida.

Todas estas vivencias le otorgan una visión cosmopolita de los placeres mundanos.

He spent his childhood in Paris where he learned the art of seduction while associating with Parisian high society. His personality was captivating and he possessed unparalleled charm. When he turned 17 his father moved to London but Rubirosa decided to stay in Calais where he began a life-long friendship with Prince Ali Khan. All these experiences gave him a cosmopolitan view of all worldly pleasures.

Tras el regreso de su familia a Santo Domingo fallece su padre y abandona los estudios. En ese momento pasa a formar parte de la guardia personal de Trujillo. Un tiempo después conoció a Flor de Oro Trujillo, la hija mayor del mandatario y en 1932 se convirtió en la primera esposa del legendario seductor. El amorío no fue fácil ya que al principio hubo oposición por parte del padre de la novia, pero finalmente, los ruegos de Flor de Oro prevalecen y Trujillo accede al matrimonio.

His father died shortly after the family returned to Santo Domingo and Rubirosa withdrew from school. At that point he became part of Trujillo’s personal guard. Sometime later he met Flor de Oro Trujillo, the dictator’s eldest daughter, and in 1932 she became the first wife of the legendary seducer. The affair was difficult at first because there was opposition from the bride’s father, but eventually, the pleas of Flor de Oro Trujillo prevailed and Trujillo accepted the marriage.

Rubirosa held several diplomatic positions, initially in Germany and then in France. There he was able to associate with the entire European jet set, but at the same time this is where his marriage begins to crumble reaching its end in 1937. His relationship with Trujillo was only affected in the beginning, in spite of the divorce

Rubirosa ostentó diferentes cargos diplomáticos en un primer momento en Alemania y posteriormente en Francia. Ahí tiene oportunidad de relacionarse con toda la jet set europea pero también es donde su matrimonio comienza a deteriorase llegando a su fin en 1937. A pesar del divorcio, su relación con Trujillo se resiente solo en un principio.

Fue miembro de una generación que logró plasmar la realidad de un país en un momento en que las transformaciones eran parte de su día a día. ¿Qué aspectos marcaron su infancia e influyeron más en su etapa adulta?

Sin duda fue la pérdida de mi madre, a penas tenía 6 años. No tuve consciencia de lo que le pasó hasta que tuve más de 50 años.

Fue precisamente mi padre quién me regaló mi primera cámara fotográfica. ¿Cuál fue el siguiente paso como artista?

Vivía cerca del Palacio de Bellas Artes, así que siempre andaba por ahí, los profesores ya me conocían y me dejaban entrar a sus clases.

Ahí aprendí a dibujar y pintar. Esto siempre me ayudó a ver las cosas con otros ojos, a ver los detalles que otras personas no podían ver.

Pase mi juventud en la época del régimen, vi como se fue deteriorando con las invasiones del 14 de junio, la muerte de las hermanas Mirabal y yo en esa época estaba en la universidad, lugar donde había mucha efervescencia política y se respiraban otros aires, se sentía el final de Trujillo. ¿Cómo te marcó esta etapa como artista?

Muchísimo. Hice muchos trabajos antes de la caída de Trujillo que reflejaban la inconformidad de la gente, la obra “Pueblo Triste” lo describe perfectamente.

He was member of a generation who has managed to convey the reality of a country at a time when changes were part of their daily lives.

IWhat aspects have marked your childhood and influenced more on your adult stage?

Without a doubt it was the loss of my mother, I was barely 6 years old. I had no consciousness of what had happened until I was more than 50 years old. It was my father who gave me my first camera.

What was the next step as an artist?

I lived near the Palacio de Bellas Artes, so I was always around, teachers already knew me and they would let me go to their classes.

There I learned how to draw and paint. This always helped me see things with a new pair of fresh eyes, so I could see the details that other people could not see.

I spent my youth in the era of regime. I saw how it deteriorated with the invasions of June 14, the death of the Mirabal sisters. At that time, I was in college, where there was a lot of political effervescence and you could breathe a different air, you could feel the end of Trujillo.

How did this stage affect you as an artist?

A lot. I made many works before the fall of Trujillo that reflected the dissatisfaction of people; the work “Pueblo Triste” describes it perfectly.

Una vida entre sus dos pasiones: la medicina y el arte, dos visiones muy distintas de un mundo que en el fondo tienen mucho más en común de lo que cualquiera se podría imaginar. ¿Qué influencia tuvo el Grupo Proyecta?

Fue muy interesante porque esta organización cuestionaba mucho la forma en que se criticaba el arte aquí. De ese grupo aprendí la disciplina del trabajo y cómo montar exposiciones. ¿Cómo has logrado combinar la medicina con el arte?

Hacíamos disecciones y había que dibujar los tejidos, lo que uno veía a través del microscopio. Luego aprendí a dedicarle un tiempo a cada uno.

Has sido pintor, dibujante y fotógrafo ¿Cómo llegas a entenderte también con la cerámica?

Uno de mis profesores, Paul Giudicelli hizo por encargo del Gobierno unos murales para exterior (porque a Trujillo no le gustó el concepto abstracto y pensó que si los murales se pintaban fuera se deteriorarían muy rápido). Sin embargo, Giudicelli se las arregló para conseguir cerámicas, haciendo murales que se conservan hoy en día. Todas sus enseñanzas quedaron en mí. ¿Cómo nació el tema de los cilindros?

Había un constructor antiguo que hacía cilindros, al igual que los mayas, eso me inspiró para usar esa figura. Luego me puse a pensar que este año (2012) se cumplen los 500 años de la construcción 36 bacana

Entonces se me ocurrió que podía aprovechar esto para motivar a que la gente investigue y aprenda sobre la historia del país, así fue como se me ocurrió esconder cilindros en lugares específicos y en mi página de Facebook comencé a dejar pistas para que la gente las siguiera y encontrara los cilindros y los conservara. Es un juego que ha tenido mucha aceptación, una especie de búsqueda del tesoro. Ya llevamos casi 50 cilindros escondidos en sitios históricos y la gente ha reaccionado muy bien. ¡Hace unos días escondimos uno bajo el agua y hasta allá llegaron los buzos buscándolo! ¿Cómo es el mundo perfecto para un artista?

Es un mundo conflictivo por excelencia. Los problemas impulsan la creatividad del artista, puede ser el amor, una mujer, la pobreza o la guerra. El artista se debe a la presión de su sufrimiento. En mi caso soy muy impulsivo.

Con humor y tolerancia, hay que aceptar lo que te toca, la vida es un instante y solo cuando han pasado los años nos damos cuenta que hay que aprovechar el tiempo, trabajar y aprender de los errores, con el tiempo esos “defectos” se convierten en una forma distinta de hacer las cosas, al final eso es lo que cuenta.

What influence did the Grupo Proyecta have?

It was very interesting because this organization questioned a lot the way in which art was criticized here. From this group I learned about work discipline and how to build up exhibitions.

How have you managed to combine medicine with art?

We did dissections and had to draw the tissues we saw through the microscope. Then I learned to dedicate time to each one.

You’ve been a painter, cartoonist and photographer. How do you get to understand pottery also?

One of my teachers, Paul Giudicelli was assigned by the Government, outdoor murals (because Trujillo didn’t like the abstract concept and thought that if the murals were painted outside, they would deteriorate very fast).However, Giudicelli arranged to have ceramic, doing murals that are preserved today. I was his apprentice, he taught me how to mix the colors, how to work the ceramics and regardless of Paul’s death in 1965. All of his teachings are still in me.

How was the topic of cylinders born?

I found out that there was an old constructor that makes cylinders like Mayas. That inspired me to use that figure. Then I began to think that this year (2012) is the 500th anniversary of the construction of the Primatial Cathedral. So, it occurred to me that I could take advantage of this to motivate people to investigate and learn about the country’s history. This was how it also occurred to me that I was going to hide cylinders in specific locations and on my Facebook page I was going to leave clues for people to follow them and find the cylinders and keep them. It is a game that has been widely accepted.

It is sort of a treasure hunt. There has been almost 50 cylinders hidden in historical sites and people have reacted very well.A few days ago we hid one under water and divers went searching for it!

How is the perfect world for an artist?

It is a troubled world by excellence. Problems push the creativity of the artist; it can be love, a woman, poverty or war. The artist is due to the pressure of their suffering. In my case, I am very impulsive.

It is the humor, the tolerance of accepting what you get. Life is an instant and only when years have passed we realize that we must take advantage of time, work and learn from mistakes, because with time these “defects” change in a different way of doing things. In the end, that is what counts.

A XVI century Mediterranean corner in the middle of the Caribbean ltos de Chavón is a hidden jewel in one of the most exclusive residential areas in the Dominican Republic where nature, art and luxury congregate.

It is simply an architectural wonder, the perfect replica of a XVI century Mediterranean villa set centered in the Caribbean. It was designed by Jose Antonio Caro and the film producer Robert Coppa. DESTINOS / DESTINATIONS La construcción se inició en 1976, cuando a raíz de la cimentación de la carretera del Este, el presidente de la empresa americana Gulf & Western Corporation y en aquel momento dueño de la productora Paramount Pictures, Charles Bludhorn, tuvo la genial idea de aprovechar la piedra sobrante para construir y recrear una villa italiana del xvi.

Con sus callejones en piedra, estructuras medievales y casitas con encanto, los visitantes son testigos que ningún rincón del lugar se dejó al azar.

Fueron muchos los artesanos que con su trabajo construyeron el espíritu de este magnífico lugar, entre ellos el herrero José Ignacio Morales, conocido como El Artístico. Otros muchos hicieron los caminos de piedra, los muebles, los encantadores edificios, reviviendo algunos trabajos en metal y piedras talladas de otros tiempos que parecían olvidados. Un espectacular trabajo pues cada piedra, cada hierro, cada madera fue cortada a mano y fue realizado íntegramente por artesanos dominicanos.

Pero Altos de Chavón es mucho más. En la localidad se organizan exposiciones dedicadas a la promoción de la cultura nacional, exhibiendo lo mejor del arte dominicano.

Otra de sus atracciones es el Museo Arqueológico que cuenta con una incalculable colección de artefactos precolombinos que muestran indicios sobre cómo vivían los indígenas antes de la conquista, una verdadera experiencia cultural que los visitantes no pueden perderse.

Mientras se camina por los callejones, se puede observar una gran cantidad de tiendas, todas adaptadas al entorno y en el que se pueden encontrar finas joyas realizadas con materiales del país, moda, cigarros, manteles bordados a mano y todo tipo de artesanías.

Justo en el centro de la villa esta ubicada la iglesia de San Estanislao, cuyo nombre fue escogido en honor al Papa Juan Pablo II. Esta majestuosa edificación fue consagrada en 1979 cuando el Papa Juan Pablo II envió las cenizas del Santo patrón de Polonia, San Estanislao y una estatua tallada a mano de Krakow para conmemorar la inauguración de la iglesia. Se celebran misas con regularidad y sin duda alguna es un lugar de ensueño para celebrar matrimonios o cualquier otra actividad religiosa.

Que le hubiera enviado el avaro de Scrooge a su empleado Cratchit si la acción del célebre “Cuento de Navidad” se trasladara desde el nubloso Londres a las costas del Caribe? Sin lugar a dudas, Dickens hubiese cambiado el descomunal pavo por una hermosa bandeja de pasteles en hoja.

La escena hubiera sido así: en un amplio salón con la ventanas abiertas, la cálida brisa baña una engalanada mesa repleta de empanadas de yuca, pierna de cerdo asada, moro de guandules, ensalada rusa y arroz de navideño; sin embargo el lugar más privilegiado, el sitio de honor, los dominicanos se lo hubieran reservado a sus estimados pasteles en hoja.

Con un origen poco documentado, no cabe duda de su procedencia africana. De los chickwange del Congo tomaron el envoltorio de hoja de plátano y la cocción en agua hirviendo; aunque fueron enriquecidos al cruzar el Atlántico con carnes y condimentos, dándole esa combinación de hidratos de carbono y proteínas que caracteriza la dieta criolla.

Certainly, Dickens would have changed the plump turkey for a beautiful tray of “pasteles en hoja,” a kind of boiled root vegetable and plantain dumpling wrapped in plantain leaves.

This would have been the scene: A large room with the windows open and the warm breeze caressing a table full of cassava empanadas, roasted pork leg, a rice with pigeon peas called “moro de guandules”, potato salad and a Christmas rice; however, the most privileged spot, the place of honor reserved by Dominicans would have to be for the “pasteles en hoja”.

With very little documentation about its origin, most likely the original dish comes from Africa. The plantain leaf wrapping and the cooking in boiling water were taken from the Chickwange of the Congo; it was later enriched with meats and condiments per crossing the Atlantic, giving it that combination of carbohydrates and protein that characterizes the Creole diet.

Pero no crean que la familia de los pasteles en hoja termina aquí, su íntima relación con los tamales lo convierten en una tipología de plato presente en toda América latina, adquiriendo matices en su preparación y apelativos tan variados como hayacas, bollos, guanime, montucas o humitas según nos adentremos en una región u otra del continente.

Nevertheless, the “pastel en hoja” family does not end here, its close relationship with tamales makes it a type of dish present in all of Latin America, taking on variations in its preparation as well as its multiple names such as “hayacas”, “bollos”, “guanime”, “montucas” or “humitas” according to the different regions in the continent.

Su parentesco azteca lo sublima a estar relacionado con los dioses, la laboriosidad de los tamales pre-colombinos los equivalían simbólicamente a la complexión del cuerpo humano y los hacían dignos de protagonizar ceremonias, rituales y ofrendas. Era el reconocimiento divino a un preparado tan discreto como sabroso.

Its Aztec heritage sublimates it to be related to the gods. The detail that went into the making of the pre-Columbian tamales equaled them to the human body complexion, while making them worthy of starring in ceremonies, rituals and offerings. It was a divine recognition to a concoction as discreet as it was tasty.

No obstante, lo extraordinario de los pasteles en hoja es como conforman la expresión más visible del mestizaje de la gastronomía dominicana. Cada ingrediente tiene sus raíces: la hoja de plátano usada por el negro africano es el maravilloso envoltorio que lo cobija. Al descubrirla, traemos al presente el ayer taíno, pues la masa de yautía, coloreada con la bija, es la que nos recibe con su esplendoroso color amarillo. Luego, en su interior, se deja apreciar la llegada de los españoles a estas tierras: carnes de gallina, cerdo y res, aceitunas, alcaparras, pasas…. todo separado y ensamblado, con sabores que se mezclan pero prevalecen en su identidad, encarnan el fantástico mestizaje de la cultura criolla.

However, what makes the “pastel en hoja” so extraordinary is that it is the most visible expression of the fusion of cultures in Dominican cuisine. Each ingredient has its roots: the plantain leaf that serves as the wonderful wrap reminds us of the African influence. As we unveil the “pastel en hoja” the Taino roots are made present with the mass of malanga colored with annatto that greets us with its magnificent yellow. Then, we move towards the interior where we can appreciate the Spanish heritage. Chicken, pork and beef fillings, olives, capers, raisins.... everything separate and assembled, with flavors that are mixed though their identity prevailing, to embody the fantastic mixture of Creole culture.

Pastel en Hoja LEAF CAKE Ingredientes

Ingredients

• 1 plátano verde, ¼ lb yautía blanca, ¼ lb yautía amarilla, ½ lb de ñame, 3 rulos (guineos pequeños maduros),1 cucharada de manteca de cerdo, 1 cucharada de café de bija, 4 cucharadas de jugo de naranja agria, sal, pimienta blanca molida.

Relleno de carne:

• 1 green plantain, ¼ lb white malanga, ¼ lb yellow malanga, ½ lb yam, 3 rulos (small type of ripe banana) 1 tablespoon lard, 1 teaspoon annatto, 4 tablespoons sour orange juice, salt, white pepper.

For the meat filling:

• 3 cucharadas aceite de girasol, 1 cebolla mediana picada, 2 dientes de ajo picados, 1ají verde a daditos, ½ lb carne de res molida, 2 tomates rojos rallados, pizca de comino en polvo, sal, pimienta negra molida Los pasteles:

• 3 tbsp of sunflower oil, 1 chopped medium sized onion, 2 minced garlic cloves, 1 cubed green bell pepper, ½ lb ground beef, 2 crushed ripe tomatoes, a pinch of ground cumin, salt, ground black pepper For the dumplings: • 8 x 8” plaintain leaves, butcher rope to tie them up.

PREPARACIÓN Para la masa de víveres: rallar finamente y juntar en un recipiente el plátano, la yautía blanca, la yautía amarilla, el ñame y los rulos. Condimentar la masa con la manteca, la bija y el jugo de naranja agria. Salpimentar y mezclar bien todos los ingredientes.

Para el relleno de carne: en una sartén con aceite rehogamos la cebolla y el ajo. Añadimos el ají y rehogamos, añadimos la carne de res y salteamos. Agregamos el tomate rallado, el comino y salpimentamos. Cocemos a fuego vivo hasta que se evaporen los jugos. Retiramos del fuego y dejamos entibiar.

Para los pasteles: extender los cuadrados de hoja de plátano, colocar cuatro cucharadas de masa de víveres en el centro y extenderlo un poco, colocar una cucharada de relleno de carne en el centro, cubrir con 2 cucharadas de masa de víveres.

Envolver el relleno con la hoja de plátano y atar con el hilo de bramante de forma que quede como un paquetito. Hervir en agua con sal por media hora.

Servir bien calientes

Preparation: To prepare the root vegetable mixture: Finely grate and mix all root vegetables, plantain and bananas in a bowl.

Condiment the mixture with annatto, sour orange juice and add the lard. Add salt and pepper and mix all ingredients well.

For the meat filling: In an oiled pan sauté the onions and garlic, then add the bell pepper and ground beef. Add the crushed tomato, ground cumin, salt and pepper. Cook on high heat until the juices evaporate. Remove from the stove top and let it sit until cool.

For the dumplings: Set the leaf squares, fill the center with four tablespoons of the mixture and extend it outward a little. Place a tablespoon of the meat filling, cover with two tablespoons of the mixture. Fold the plantain leaf around it and tie with a butcher rope so it looks like a small package.

Boil in salted water for half an hour. Serve hot.

Pastel en Hoja (la nueva versión) LEAF CAKE (NEW VERSION)

Para nuestra versión del pastel en hoja hemos cambiado algunas técnicas del proceso tradicional, aunque respetando los sabores y la esencia que tanto caracteriza a este navideño preparado.

For our version of “pastel en hoja” we have changed some of the traditional techniques in the process, while respecting the flavors and essence of this Christmas dish.

Para empezar no someteremos el conjunto a una cocción común sino que trabajaremos la masa y el relleno de carne por separado para ensamblarlos en el montaje final. Los víveres (plátano, yautía, auyama y ñame) los coceremos en el horno a baja temperatura, pero para guardar el perfume característico de la hoja de plátano conservaremos su envoltura. El relleno de carne será con una cocción bien rápida y con un corte muy meloso -utilizaremos churrascopara que le de jugosidad al conjunto. Una primera capa crujiente le añadirá textura y tres condimentos: uno cremoso a base de queso en hoja, otro ligeramente picante y un tercero a base de polvo de parmesano darán el juego de sabores a nuestra propuesta.

For starters we will cook the mixture and the meat filling separately to assemble them in the platting of the dish. The root vegetables (bananas, plantains, malangas, pumpkin and yam) will be cooked in the oven at low temperature; however, we will keep the original wrapping to save the distinctive perfume of the plantain leaf. The meat filling, flap steak, is cooked lightly to make the ensemble juicier.

A first crunchy layer will add texture and three condiments; a creamy one made with string cheese, another slightly spicy, and parmesan powder based one that will give our proposal a play on flavors.

Para la masa: 1 plátano verde, ¼ lb yautía blanca, ¼ lb auyama, ½ lb de ñame, 4 pedazos de hoja de plátano para envolver, 1 cebolla mediana, 3 cucharadas de mantequilla, sal, pimienta blanca molida.

Para el relleno de carne: 2 cucharadas aceite de oliva virgen, 2 dientes de ajo picados, ½ lb churrasco de res cortada a dados pequeños, 2 cucharadas de tomate triturado, sal.

Para la crema de queso en hoja: ½ lb de queso en hoja, ¼ taza de nata líquida, sal.

Para el tomate picante: 3 cucharadas de aceite de oliva virgen, ½ cebolla mediana, 1 cucharadita de pimentón picante, la pulpa de 6 tomates (sin piel, agua ni semillas), 1 cucharada de concentrado de tomate, pizca de azúcar, sal.

Para el ensamblaje: 2 plátanos verdes a láminas finas, gotas de aceite, tiras de hoja de plátano, parmesano rallado.

For the mixture: 1 green plantain, ¼ lb White malanga, ¼ lb pumpkin, ½ lb yam, 4 pieces of plantain leaf for wrapping, 1 medium size onion, 3 tbsp melted butter, salt, white ground pepper.

For the meat filling: 2 tbsp extra virgin olive oil, 2 minced garlic cloves, ½ lb cubed flap steak, 2 tbsp crushed tomato, salt.

For the cheese cream: ½ lb of string cheese, ¼ cup heavy cream, salt.

For the spicy tomato sauce: 3 tbsp extra virgen olive oil, ½ medium onion, 1 tsp spicy paprika, the pulp of 6 tomatoes (without liquid, seeds, or skin) 1 cucharada de concentrado de tomate, pinch of sugar, salt.

For assembly: 2 green plantains sliced finely, drops of oil, strips of plantains leaves, grated parmesan.

PREPARACIÓN

For the mixture: pre-heat the oven to 140ºC (285ºF). Peel the root vegetables separately and wrap individually in the sheets of plantain leaves and then in aluminum foil (to protect them while cooking. Bake until tender. Mix all baked root vegetables, add salt and pepper, and mash together with a fork until a homogeneous (yet not to fine) mix is achieved.

Para la masa: pre-calentamos el horno a 140ºC (285ºF). Pelamos los víveres y los envolvemos –por separado- en la hoja de plátano y, sobre esta, papel de aluminio (para protegerlos de la cocción). Los horneamos hasta que queden blandos.

En un recipiente juntamos los víveres horneados, salpimentamos y trabajamos con un tenedor aplastándolos para que se mezclen y formen una masa homogénea aunque no muy fina.

Para el relleno de carne: en aceite doramos los ajos, incorporamos los dados de churrasco y salteamos a fuego vivo.

Salamos y condimentamos con el tomate triturado.

Para la crema de queso: calentamos la nata líquida en un cazo (no debe llegar a hervir), fuera del fuego le incorporamos el queso en hoja, dejamos reposar hasta que entibie y trituramos con batidora. Rectificamos de sal.

Para el tomate picante: en una sartén calentamos el aceite y rehogamos la cebolla. Cuando esté bien rehogada añadimos el pimentón y enseguida la pulpa de tomate para que no se queme. Añadimos el concentrado de tomate y dejamos cocer a fuego medio hasta que quede bien seco. Salpimentamos y rectificamos de acidez con el azúcar. Pasamos el conjunto por el pasapurés para que nos quede una crema fina y consistente.

Para el ensamblaje: en una sartén con gotas de aceite doramos las láminas de plátano verde. Para montar nuestro pastel en hoja usaremos un corta-pastas y colocaremos una base de masa de víveres, sobre esta el relleno de carne y otra capa del puré de víveres. Rematamos con las láminas de plátano crujientes. Envolvemos una parte del pastel con una tira de plátano y terminamos con el parmesano rallado.

Ya en el plato colocamos la crema de queso en hoja, el pastel y el tomate picante.

Preparation:

For the meat filling: sauté on high the minced garlic in olive oil and add the cubed flank steak. Add salt and condiment with the crushed tomatoes.

For the cheese cream: heat the heavy cream in a pot without allowing it to boil. Remove from the stove and incorporate the cheese, let it stand and run through the blender and check the salt.

For the spicy tomato: Sauté the onions. Add the tomato pulp when they are clear so they don’t burn. Add the tomato concentrate and let it simmer until it dries out a bit. Add salt and pepper and check the acidity with the sugar. Make sure the mix is very smooth and has body.

For the assembly: fry the plantain slices until golden brown in a pan with oil. To assemble, use a pasta cutter to set a layer of the root vegetable, over it a layer of the meat filling and then another layer of the mixture. Layer the fried plantain slices on top, tie the plantain strip around a part of the “pastel en hoja” and sprinkle with parmesan.

Layer the cheese sauce on the bottom of the plate, lay the “pastel en hoja” and over it the spicy tomato.

Arroz Navideño Christmas Rice Y como no íbamos a dejarles sin un acompañamiento, les propongo este arroz exclusivo de la navidad dominicana.

Ingredientes Para el arroz: 2 cucharadas de aceite de girasol, 1 puerro picado, 4 tazas de arroz, 5 tazas de caldo de verduras, ¼ de taza de pasas rubias, ¼ taza de dátiles sin hueso troceados, ¼ de taza de ciruelas pasas sin hueso troceadas, ¼ melocotones secos troceados, sal y pimienta molida.

Para el salteado: 3 cucharadas de mantequilla, ¼ de taza almendras enteras, ¼ taza de nueces pecanas, ¼ de taza de semillas de cajuí.

PREPARACIÓN Para el arroz: en una olla con aceite doramos el puerro picado, añadimos el arroz y lo removemos hasta que adquiera un color nácar. Le agregamos el caldo vegetal y cuando arranque a hervir bajamos el fuego.

Salpimentamos y cocemos durante 15 minutos removiendo a menudo. Cuando quede poco caldo agregamos las frutas secas troceadas (pasas rubias, dátiles, ciruelas pasas, melocotones) y cocemos durante 5 minutos más. Reservamos fuera del fuego.

Para el salteado: en una sartén calentamos la mantequilla. Añadimos los frutos secos (almendras, nueces pecanas, semillas de cajuí) y doramos ligeramente. Agregamos el arroz ya cocido y salteamos ligeramente.

Rectificamos de sal.

We couldn’t leave you without a side dish, so we propose this exclusive Dominican Christmas rice.

Ingredients

For the rice: 2 tbsp sunflower oil, 1 chopped green onion, 4 cups of rice, 5 cups vegetable stock, ¼ cups golden raisins, ¼ cup chopped pitted dates, ¼ cup chopped pitted prunes, ¼ chopped dried peaches, salt and ground pepper.

For the saute: 3 tbsp butter, ¼ cups whole almonds, ¼ cups pecans, ¼ cups cashews.

Preparation For the rice: sauté the green onions in a pot, fold in the rice until it becomes translucent, add the vegetable stock, and bring the heat to low as soon as it begins to boil.

Add salt and pepper and move frequently. When little stock is left we will add the dry fruit (raisins, dates, prunes, and peaches). Let cook for 5 more minutes. Reserve.

For the sauté: heat butter in a pan, add the nuts until golden brown.

Fold in the cooked rice and check the salt.

El gavilán de la Hispaniola The Hispaniola Hawk

na maravillosa especie de aves única en el mundo que solo se encuentra en algunos hábitats de República Dominicana y Haití. Habita en los bosques, selvas y montañas.

Su nombre científico es Buteo ridgwayi. Su cuerpo está cubierto de plumas en tonos marrón posee un porte imponente y una mirada tan aguda que es capaz de detectar a su presa a grandes distancias.

FLORA Y FAUNA / FLORA AND FAUNA Su dieta básica consta de lagartos, culebras, ratas, murciélagos, sapos, insectos y aves pequeñas. No es muy grande, comparado con otros ejemplares de su especie, mide cerca de 15 pulgadas y el macho suele diferenciarse de la hembra por un parche marrón ladrillo en el hombro, siendo este más pequeño.

Se trata de un esfuerzo que empieza a dar sus frutos pues debemos proteger y fomentar todas las especies únicas del país.

Curiosamente, cuando este ave anida, suele compartir el espacio con la cigua palmera.

Tras una importante inversión y un largo período de formación en EEUU ofrecen a todo el público pasear en globo y conocer desde el aire rincones que desde la tierra no se pueden acceder.

Un grupo de personas aborda el globo a la salida del sol con idea de disfrutar de la magia del vuelo, el lugar de aterrizaje esta impuesto por la velocidad y dirección del viento, la actividad esta programada para durar entre una hora y una hora quince minutos.

La actividad total entre la recogida en los hoteles, el inflado, vuelo, brindis y retorno a los hoteles lleva aproximadamente 4 horas.

Se vuela a nivel del suelo, casi rozando las copas de los árboles que se encuentren en el camino, y luego se asciende a alturas que permiten tener una perspectiva de casi toda la provincia La Altagracia.

Pero cuando el problema viene principalmente del bolsillo, siempre hay opciones que les permiten, por unos“chelitos”, disfrutar de una cervecita o un roncito con los amigos.

Son pequeños locales donde se puede comprar prácticamente cualquier cosa que falte en la despensa de casa. Como suelen ser locales relativamente amplios, permite que la gente se pueda sentar y tomar su bebida en el mismo lugar. No puede faltar la música, altavoces a todo volumen con una bachata y merengues clásicos forman parte inherente de este ambiente. Los más grandes tienen un pequeño espacio reservado para los bailarines, pero en su mayoría la gente se las arregla para hacer a un lado la silla de plástico y bailar bien apretadito a su pareja.

Desde tiempos remotos, la navegación ha sido una necesidad para el ser humano. Muchas técnicas fueron ideadas como medio de transporte necesario para expandir el comercio de las primeras civilizaciones. La navegación es una herramienta de defensa y de exploración, así llegaron los indígenas, los primeros habitantes de La Española, desde las cercanías del río Orinoco en lo que hoy es Venezuela y Colombia.

Sin embargo, la utilización de las naves como elemento deportivo se remonta sólo a la última década del siglo XIX, fecha en la que existen registros concretos de carreras organizadas en las que competían pequeños barcos de vela.

Uno de los exponentes que más ha destacado en este deporte es Raúl Aguayo, un joven que tiene en su experiencia más de 70 competiciones dentro y fuera del país. Entre ellas, los Juegos Olímpicos de Beijín en el 2008. Gracias a su disciplina y el apoyo de su familia, Aguayo se encuentra entre los mejores veleristas del mundo en su categoría.

Desde muy pequeño se vio envuelto en el mundo del velerismo influenciado por su padre quien también es gran aficionado a este deporte, poco a poco se fue dejando seducir por el mar y sus encantos hasta convertirse en lo que es hoy: el mejor velerista del Caribe. “Uno se siente muy libre de poder navegar por cualquier camino en el mar, además de la paz que te acompaña pues solo escuchas el viento y las olas, acompañado de una buena dosis de adrenalina” agrega.

“Me gustan muchos las condiciones para navegar en Cabarete, es uno de los lugares favoritos de muchos navegantes a nivel mundial” concluye Aguayo.
