... y miramos hacia otro lado ...and we look the other way uando echamos la vista atrás, nos preguntamos como fue posible que el mundo, da igual el continente, haya mirado hacia otro lado con las barbaries vividas en determinados países. Aquí una vez más, da igual el origen, la raza, el color o el sexo, hemos conocido las masacres hitlerianas o las de los balcanes por citar algún ejemplo en Europa, donde supuestamente el viejo continente está más avanzado en derechos humanos. ¿Y que hicimos? Mirar hacia otro lado... Podemos pasear por África y no entender como los niños se mueren de hambre y de las enfermedades más absurdas que llevan años erradicadas en otros países. No entender, como se puede seguir sometiendo a las niñas a la mutilación genital, con el único fin de que no conozcan las sensaciones y el placer sexual, por citar algún ejemplo. ¿Y que hacemos? Mirar hacia otro lado... Entre estas dos situaciones solo ha cambiado el tiempo del verbo hacer. Pero así podemos citar todos los continentes, Oceanía o Asia donde más de 6 millones de niños sobreviven en condiciones de extrema pobreza infantil. ¿Y que hacemos? Mirar hacia otro lado... Por último y no menos importante dejamos

a América donde las diferencias son abismales entre países ricos, pobres, desarrollados y subdesarrollados. No hace falta que vayamos muy lejos, apenas en nuestra frontera o a unos cientos de miles de kilometros. Cada día, son miles los venezolanos que cruzan a otros países, con o sin permiso legal. Desde 2004, este paso lo han repetido incesantemente familias completas o personas solas, pero todas con un denominador común: encontrar una vida digna más allá de las fronteras. Paraguay, Uruguay, Colombia, Ecuador, Argentina e incluso Dominicana... todos estos países, en mayor o menor medida, tenemos necesidades básicas que cubrir y que mejorar. ¿Y que hacemos? Mirar hacia otro lado... ¿Realmente en el siglo XXI, con todo el avance y conocimiento que tenemos, no podemos ayudarnos los unos a los otros? Con la cantidad de organismos internacionales dedicados a la pobreza infantil o a los refugiados, ¿no somos capaces de encontrar un nexo de unión para poder combatir las lacras de nuestro siglo? Desde aquí, desde nuestras humildes líneas, enviamos todo nuestro afecto, todo nuestro apoyo y nos sumamos al movimiento de mejorar la vida de la humanidad.

And what did we do? We look the other way... We can walk around Africa and not understand how it is possible there are children dying of hunger and by the most absurd diseases that have been eradicated in other countries many years ago. We can’t understand how some people can still subject girls to female genital mutilation, with the only purpose of don’t permitting them know sensations and sexual pleasure, just to name an example. And what do we do? We look the other way... Between these two situations the only change is the time of verb “do”. But we can take examples from all the continents like Oceania or Asia where more than 6 million children survive in extreme child poverty. And what do we do? We look the other way... Last but not least, we have America where the differences are huge among rich or poor, developed and developing countries. We do not have to go so far, just on our border or from a few hundred thousand kilometers. Every day, thousands of Venezuelans cross over to other countries, with or without legal permission. Since 2004, this journey has been repeated incessantly by whole families or by people going alone, but all they have a common purpose: to find a dignified life beyond borders. Paraguay, Uruguay, Colombia, Ecuador, Argentina and even the Dominican Republic... all these countries have basic needs they need to cover and improve, to a greater or lesser extent. And what do we do? We look the other way... Is it really in the 21st century, with all the advancement, technology and knowledge we have, and we cannot help each other? We have so many international organizations dedicated to child poverty or refugees, and we are not able to find a link to fight against the scourges of our century? From here, from our humble lines, we send all our affection, all our support and we join the movement of improving life of humanity.

n mensaje que se constató en hechos cuando, a finales de los años 30, los judíos que abandonaban una Alemania, asediada por las zarpas del nazismo, buscaron refugio y protección en República Dominicana. En concreto, el amparo de la bahía de Sosúa, al noroeste de la isla, donde alrededor de seiscientos hombres y mujeres de origen austriaco y alemán, encontraron un cálido abrigo. A priori, el número parece considerable pero estaba muy por debajo de los cien mil que el dictador Leónidas Trujillo, presidente del país en aquel momento, aspiraba a reasentar. Una decisión que había tomado tras la conferencia de Evian que, el presidente Roosevelt encabezó en 1938, y que parafraseando a Haím Weitzman reflejaba el sentir de un contexto internacional dividido en dos bandos “uno formado por los países que expulsan a los judíos y el otro por los que rehúsan admitirlos”. Una bipolaridad extrema donde los países del llamado “Mundo Libre”, desde Estados Unidos hasta Austria, se empeñaban en imponer férreas leyes migratorias, y en la que, paradigmáticamente, República Dominicana fue la única nación que tendió la mano de socorro.

historia history Para quien se está ahogando y le tiran un salvavidas, sobran las motivaciones de esta gesta, lo que es una realidad, es que concluida la conferencia de Evian, la “The American Joint Distribution Committee” y la “American Joint Agricultural Corp.”, dos instituciones judías norteamericanas de caridad, formaron la “Dominican Republic Settlement Association, Inc.”, que se llamó la Dorsa y que negoció con el gobierno dominicano un acuerdo que garantizara a los colonos la libertad de religión, facilidades legales con respecto a leyes migratorias y exenciones de impuestos y de tributos aduaneros. Aproximadamente 23 mil acres de tierras despobladas en la costa norte, cultivadas con plátanos y guineos, se convirtieron en hogar de estos inmigrantes que no tenían experiencia en las labores del campo. Jóvenes de no más de 25 años, que arribaron a Sosúa con el miedo adherido en las entrañas y que, como refugiados políticos, recibieron recursos para establecer una colonia agrícola comunal, al estilo de los kibutzs. Finalizada la II Guerra Mundial y motivada por la irrupción del comunismo, parte de la colonia judía de Shanghai, China, decide viajar hasta Sosúa y trasladarse con sus familias. En 1947, un total de 705 personas de continente asiático habían pasado por Sosúa. No obstante, pese a ese incremento de flujo, cerca de la mitad de los pobladores judíos emigraron a Estados Unidos. El resto, de los 363 censados, casi un 60% mantienen una forma de vida sustentada en el comercio y formaron matrimonios mixtos, con la población local dominicana. En la década de los setenta, Sosúa reestructura la base de su modelo económico. Un cambio de estructura que construye en base a un progresivo aumento de las actividades comerciales particulares y a la proliferación de sistemas de cooperativas. En los años ochenta, con la creación del aeropuerto y la llegada masiva de turistas europeos y estadounidenses, motiva un resurgimiento económico que dé respuesta a las necesidades de estos visitantes. En paralelo, se produce un éxodo de la comunidad judía, que busca nuevos horizontes formándose y estableciéndose en Estados Unidos. La migración es progresiva y paulatina desde las dos últimas décadas. Por eso, la comunidad actual judía de Sosúa, es reducida. Los vestigios de su patrimonio están en el museo, la sinagoga, el cementerio y el parque judío que, como símbolos, sobreviven al tiempo y el espacio. Restos sempiternos de la historia de una generación que encontró en el país una nueva vida. La memoria latente de los que tuvieron que empezar de cero en un país distinto al suyo pero que agradecidos, recuerdan la ayuda que República Dominicana brindó al pueblo judío en un momento crítico para su supervivencia.

The vestiges of its patrimony are in the museum, the synagogue, the cemetery and the Jewish park as symbols that survive time and space. Endless remains of the history of a generation that found a new life in the country. The latent memory of those who had to start from scratch in a country different from their own but grateful, remember the help that the Dominican Republic offered to the Jewish people in a critical moment for their survival.

Con una gran riqueza acuífera en sus municipios Constanza y Jarabacoa, aporta más de la mitad del suministro de agua al país. LA VEGA VIEJA En las ruinas de la ciudad original que Colón fundara en 1494 “La Vega Vieja”, los arqueólogos continúan estudiando los cimientos de la antigua metrópoli que fue próspera entre 1505 y 1510. Dicen los historiadores, que fue un centro productor de oro, llegando a ser una de las ciudades más ricas de República Dominicana. En esta primera villa se construyó tempranamente una iglesia de piedra en la que fray Pedro de Córdova comenzó a defender los derechos de los indios. En 1562 un devastador terremoto destruyó la ciudad. Las ruinas del monasterio de San Francisco, donde fray Bartolomé de las Casas dijo su primera misa, dan fe de ello. Al año siguiente se reconstruye en un nuevo emplazamiento a orillas del río Camu. Actualmente, la urbe tiene alrededor de 400.000 habitantes, con una intensa vida comercial y nu-

Carnaval vegano PATRIMONIO FOLCLÓRICO NACIONAL

l sacerdote Fray Bartolomé de las Casas quedó boquiabierto cuando en febrero de 1520 le dieron la bienvenida en La Vega, al compás de disfraces de moros y cristianos que exhibían con orgullo los moradores de aquellas tierras. Según registró el religioso, la festividad tenía una expresión española, con el uso de trajes de color rojo, amarillo y verdes. Destacaban las máscaras representativas del diablo medieval, es decir, con orejas grandes, boca abierta y dientes al aire, que se reproducen como fiel reflejo de la colonia, en víspera de la Cuaresma cristiana. Seis siglos más tarde, el carnaval vegano ha

sido declarado patrimonio folclórico nacional y esta considerado como el más vetusto de América. Una tradición que pervive cada domingo del mes de febrero, por la tarde salen los diablos cojuelos que según la tradición popular estos seres fantásticos tenían el ardid de cojear para que la gente se acercara con confianza y aprovechar entonces para arremeter contra ellos. Personajes fantásticos con sus barbas de cuerno de chivo, que salen a la calle pertrechados de vejigas de toro para golpear en las posaderas a todo aquel que ose toparse con ellos en las vías públicas y respetando a los que, guardando las distancias por temor y respeto, se man-

tienen en la acera. Las máscaras ostentan vistosos colores y exhiben burlones, colmillos, y enormes ojos saltones. El Papa Urbano IV institucionalizó el carnaval vegano, pero su mayor auge se produjo a principios del siglo XVIII, con la llegada de un grupo de cubanos a la isla. Los pobladores de los barrios más populares introdujeron conceptos distintos como la llamada “culebra de San Blas”, inspirada en temas africanos. Sin duda es la festividad más importante y trascendente de la cultura popular dominicana que se engrandece cada año, con la afluencia de más público deseoso de participar en las tradiciones y costumbres de nuestro país.

The Dominican Republic Patron Virgin veneration center, Nuestra Señora de las Mercedes, standard of the province, is in this city in one of the most sacred places in the country, the Santo Cerro. Every September 24, Dominicans from all over the country come to pay homage to the Virgin and to admire the view from the emblematic cross at 14 meters above the Cibao Valley and the surrounding mountains landscapes. La Vega province stands out for its agricultural production. According to the Ministry of Agriculture, 35% of the country rice consumption is produced here, as well as 32% of the national poultry production. Education is also a productive engine in the city since it is the main source of employment. There are many existing schools and so, several teachers who work in the public system. The Cibao International Airport is the closest for those going to La Vega. By car or by bus, the road is very easy from Santo Domingo through the Cibao highway that runs through the central mountain range of the country. l presagio de que Stephany Ortega iba a ser una gran figura de la música dominicana y que se erigiría como la cantante lírica del país con mayor reconocimiento internacional. Ensoñaciones, elucubraciones o meras narraciones, lo cierto es que Stephany dejó su infancia en la costa norte de la isla para trasladarse a Santo Domingo donde a la edad de diez años comienza sus estudios de piano en el Estudio Diná. “De pequeña, junto a mis hermanos, acompañábamos con los coros a mis padres que tocaban la guitarra y cantaban. Así que fue algo natural acercarme a la música de manera formal”. En la Universidad Autónoma de Santo Domingo estudia la Licenciatura en Música y cinco años después termina con el promedio más alto de la promoción. Un logro que asegura ”le costó sudor y lágrimas” pero que le permitió tener el valor suficiente para solicitar en el Ministerio de Cultura de Luxemburgo una beca para estudiar composición y retomar los estudios de piano. “No sólo me la dieron sino que hicieron una excepción y me la renovaron por segundo año consecutivo al ver mis progresos, algo que me motivó muchísimo”. Durante ese tiempo, se propuso ciegamente aprender francés, no solamente para integrarse con el resto de sus compañeros y profesores sino como parte de su superación profesional. “Me puse a estudiar Dirección de Coros, y me di cuenta que la literatura vocal europea tiene bastante repertorio en alemán, entonces me puse a estudiar alemán. Por el apoyo de Luxemburgo quise obtener la doble nacionalidad y dije: a estudiar luxemburgués se ha dicho”. El colofón lingüístico lo puso hace seis años cuando conoció al que hoy es su marido, el chef Michele Tenzone “Él es de origen italiano y cuando nos conocimos acababa de llegar a Luxemburgo y solo hablaba italiano... así que el amor me motivó a estudiar este nuevo idioma”. Desde que estudiara canto lírico en el Conservatorio de Bruselas, su voz se convirtió en su instrumento favorito aunque combinaba el canto, la dirección de coros y el piano. “Daba conciertos como solista cantando, dirigía varios coros y proyectos corales al mismo tiempo que acompañaba con el piano. Pero hace cinco años decidí parar paulatinamente mis compromisos como directora y pianista para concentrarme de lleno en mi carrera como cantante lírica y en el dúo que formo con la pianista Léna Kollmeier: el Dúo Rosa”. Una apuesta que ha marcado un nuevo rumbo en su carrera profesional pero que ha recibido la anuencia de la crítica por el reflejo de musicalidad, profundidad de interpretación y experiencia técnica en sus interpretaciones. “Pienso que tienen razón ¡Jajaja!... no, hablando en serio, recibir una crítica de este nivel me llena el corazón de felicidad, porque, me digo que tantos años de sacrificio estudiando para poder brindar lo aprendido valieron la pena y están dando sus frutos”. Unos frutos que más allá de aptitudes, potencial y credibilidad suponen un compromiso a nivel personal “Ser una artista profesional e internacional es un peso sobre los hombros, una responsabilidad para con el público y para con las críticas que llegarán en el futuro.

She affirms that this achievement “costed her sweat and tears” but at the same time it gave her the courage and push her to apply for a scholarship to study composition at the Luxemburg Ministry of Culture, which let her re-connect with her studies of piano. “They not only gave me the scholarship, they also made an exception and renovated it for a second year because of my good performance, a fact that was such a motivator for me.” In those days, she had the firmly purpose of learning French, not only to enhanced the relationship with her colleagues and professors but also because of her professional improvement. “I began to study Chorus Direction when I realized that European vocal literature had most of its repertoires in German, so I decided to study this language too. Taking into account the support that Luxemburg had gave to me I wanted to obtain the double nationality and I think: Let´s study Luxembourgish! The linguistic colophon was set six years ago when she met her future husband, the chef Michele Tenzone. “He is from Italy and when we met, he had just arrived in Luxembourg and only speaks Italian... so, love motivated me to study this new language.” Since she studied the Master of Arts in voice at the Royal Conservatory of Brussels, her voice became her new favorite instrument, although she combined singing, conducting and the piano. “I gave soloist concerts as soprano singer and conducted some choirs and choral projects at the same time that I played the piano. But five years ago, I decided to gradually stop my commitments as conductor and pianist to put the focus on my career as lyric singer and in my role in the duo that I form with Léna Kollmeier named the “Duo Rosa”, too. The reflection of her musicality, the depth of her interpretation and the technical experience in her performance have received the consent of the critics in the new direction of her career. “I think the critics are right! Ha, ha, ha. Afortunadamente ese ímpetu, constancia y vehemencia le han valido para cantar ante los duques herederos de Luxemburgo, como parte del Concierto de Beneficiencia para los refugiados y para atesorar numerosos reconocimientos internacionales y premios como en la categoría “Voz” del Concurso Internacional de Música de Manhattan, un peldaño más en su exitosa trayectoria “Fue una experiencia única, el honor de haber sido escuchada por artistas y cantantes que admiro tanto como la gran Teresa Berganza. Que me hayan elegido, no me lo creía... de hecho duré como un mes en las nubes, porque la sorpresa fue inmensa. Una dominicana, ganando un premio internacional en Nueva York... aún me parece un sueño... Dios está conmigo, no hay duda”. Nominada en dos ocasiones a los Premios Soberano no oculta su alegría de poder ser reconocida en su país. “Claro, sería un honor para mí contar con el reconocimiento artístico más importante de mi tierra”. El modelo de perdón en grupo es un proceso compuesto por cinco pasos que ayuda a las personas a analizar su dolor, enfrentarlo, alcanzar el perdón y conservarlo con el tiempo, recuperando en cierta manera, la inocencia inicial. El perdón, por tanto, restaura la salud porque la hostilidad y el resentimiento, emociones muy negativas para la salud, permanecen cuando no se otorga. El pintor holandés del siglo XIX, Vicent Van Gogh, buscó inspiración en los girasoles. Una colección que bastó para inmortalizarlos. Su resistente tallo, unas hojas grandes con forma ovalada y una gran flor, similar a una margarita de gran tamaño, lo conforman. Su origen se remonta a 3.000 años antes de Cristo donde las tribus indígenas de Nuevo México y Arizona lo cultivaban con fines alimenticios. Los españoles llevarían la planta a Europa con fines también ornamentales que incluían el color, la lozanía y la belleza. Es en Rusia en el siglo XIX, cuando se comienza con la práctica de extraer aceite de la pipa o semilla de girasol Pertenece a la misma familia que la margarita, la cineraria y la dalia. Sus grandes pétalos dorado siguen el recorrido del Sol y su fruto es un pequeño grano ovoideo y alargado que aporta nutrientes importantes a la dieta, los cuales favorecen y fortalecen el sistema inmunológico. El girasol se puede producir en cualquier terreno porque sobrevive en circunstancias o terrenos bastante áridos, aunque para una producción espectacular es bueno un terreno húmedo y suelto. Comenzar la mañana en el pintoresco barrio de pescadores Las Flores es un paseo obligatorio. Anclado a orillas del Río Magdalena es reflejo de la actividad de la pesca diaria que traen los navegantes que cruzan Bocas de Ceniza. En sus muchos restaurantes y miradores con plácidas vistas al río, puede tomar un exquisito café local mientras se deleita con las maravillosas vistas. La recién restaurada edificación republicana de la Intendencia Fluvial brinda un paisaje nostálgico junto a un brazo del río Magdalena que entra al Mercado Público. Las estaciones del Tranvía y Montoya son monumentos nacionales. A unos pocos pasos del imponente edificio fueron reubicados, en modernas instalaciones, los vendedores del más exquisito bocachico en cabrito. El pescado de río relleno con verduras es asado al carbón en hojas de plátano convirtiéndose en una delicia local que el turista no debe perderse. El conjunto arquitectónico acompañado de este plato es una experiencia para una saborear un almuerzo criollo tradicional. A tan solo cinco minutos de la Intendencia Fluvial se encuentra el Malecón del Río León Caridi. Esta avenida está provista de miradores y bancas decoradas con mosaicos de colores obra de la artista plástica, muralista y escultora Elmar, cuyo arte se caracteriza por una explosión de brillo y vistosidad. En el Malecón está descrita la ruta de las poblaciones que atraviesa el caudal del Río Magdalena. Desde este punto se pueden tomar hermosas fotografías del río y las embarcaciones que navegan en él. En la tarde, una buen opción es visitar el teatro Rex. Construido en 1935 por el arquitecto Art Decó Rafael Carrerá, recientemente ha reabierto sus puertas al público. Ofrece una mirada nostálgica a la historia de los cines antiguos en la ciudad. Abierto todos los días, los miércoles en la tarde se proyecta una película al público y los sábados sus noches se llenan de jazz. En la noche, cualquier salsero que se respete tiene que visitar La Troja. El legendario local de baile, conocido en el argot popular como estadero de salsa brava, abre de miércoles a domingo para recibir a rumberos de todas las latitudes. Los fines de semana hay encuentros de coleccionistas de salsa y presentaciones de grupos folclóricos. La esquina, ubicada en la calle 74 con carrera 44, ofrece a curiosos y visitantes una completa colección musical estimada en más de 6 mil vinilos.

The river fish stuffed with vegetables is roasted in banana leaves above charcoal, becoming a local delicacy that tourists should not miss. The architectural ensemble accompanied by this dish is an experience to savor a traditional Creole lunch. Just five minutes away from the Fluvial Municipality, there is the “Malecón del Río León Caridi”. This avenue is equipped with viewpoints and benches decorated with colored mosaics by the work of the plastic artist, muralist and sculptor Elmar, whose art is characterized by an explosion of brightness and eye-catching. In the Malecón the populations route that crosses the flow of the Magdalena River is described. From this point you can take beautiful pictures of the river and the boats that sail on it. Puedes comenzar la mañana paseando por la Catedral Metropolitana María Reina de Barranquilla, iglesia catedralicia de culto católico dedicada a la Santísima Virgen María Reina. Es una edificación de estilo modernista cuya construcción tomó 27 años y fue diseñada por el arquitecto italiano Angelo Mazzoni de Grande. De ahí, se debe visitar la restaurada Plaza de la Paz Juan Pablo II, un espacio público abierto de Barranquilla, ubicado en un estratégico y céntrico sector de la ciudad, entre las carreras 45 y 46 o avenida Olaya Herrera, y la calles 47 y 53. Nos dirigimos a la iglesia de San Nicolás de Tolentino de Barranquilla, una iglesia de culto católico bajo la advocación de San Nicolás de Tolentino, patrono de la ciudad, puedes hacer un alto en el camino para comer el famoso “narcobollo”, masa de maíz cocido, envuelto en hojas de la misma planta, y aderezados con queso, coco, plátano y yuca. Como colofón, un frozo malt, una mezcla entre frío y derretido, con una galleta azucarada, en la histórica heladería Americana, ubicada en la carrera 35 con la 45. En la tarde puedes vivir la pasión del fútbol en el Estadio Metropolitano, la casa de la selección Colombia. Fue inaugurado en 1986 sustituyendo al estadio Romelio Martínez. El ambiente nocturno lo puedes descubrir en la llamada “zona rosa”, Su época dorada fue a finales de los años 80 y los 90, La calle 84 se transformó en el punto de encuentro de los fanáticos de la Selección y también de las celebraciones de los títulos del Junior, en especial del recordado campeonato de 1993. Atravesar el barrio el Prado, con su bello hotel del mismo nombre y de arquitectura republicana es visita obligada. Las calles del barrio, diseñado en la década de los años 20 por los hermanos Karl y Robert Parrish, están adornadas con robles y lluvias de oro, entre otros árboles. Sus amplias avenidas, jardines y mansiones reflejan estilos traídos por inmigrantes alemanes, italianos, sirios, judíos y libaneses. La capital del Atlántico, una de las ciudades más alegres y con mayor proyección en Colombia que tiene mucho que ofrecer.

Fumet de pescado 1 lb. filete de pez león 1 lb. de almejas frescas 1 lb. cola de langosta 1 lb. de camarones limpios 1 lb. de camarones tití 1 lb. de mejillones sal y pimienta al gusto 6 dientes de ajo majados 1 lb. cebolla, cortada en brunoise 3 ramas de cilantro ½ taza vino blanco 4 Cucharadas Aceite de Oliva Agua 1 lb. mapuey, lavado y pelado sal y pimienta al gusto 1 Cucharada de bija molida 4 Cucharadas de harina.

Preparación Hierva el fumet de pescado con un poco de sal, cocine la auyama hasta que ablande y pase los dos productos por la licuadora y batir hasta convertir en crema. Cuele y devuelva a la olla. Coloque el pescado y marisco en un recipiente y sazone con la sal y pimienta, ajo, cebolla, cilantro y vino. Calentar el aceite de oliva y cuando la sartén esté bien caliente, agregue la cebolla, ajo y cilantro del sazón de los mariscos y saltee. Añada los mariscos y saltee, agregue el pescado y cocine por 1 minuto adicional. Añadir los jugos restantes del sazón, mueva bien, y lleve todo a la olla con la crema de auyamas, a fuego lento. Agregue agua si es necesario para cubrirlo todo. Ralle el mapuey, coloque en un bol y mezcle con la bija, harina, sal y pimienta. Forme bollitos con la mezcla y agregue al caldo. Cocine todo junto durante 15 minutos, ajuste de sazones y retire del fuego. Sirva con arroz.

DULCE DE CAJUIL CON CHOCOLATE CASHEW FRUIT DESSERT WITH CHOCOLATE

esde siempre, el increíble sabor del cajuil en almíbar ha sido símbolo memorable de mi niñez. Recuerdo a mi madre recolectando cajuiles frescos de la mata del patio, lavarlos y sumergirlos en una gran olla, y poco tiempo después su característico aroma comenzaba a inundar agradablemente cada rincón de la casa. Hoy lo rescato del olvido y además lo combino con chocolate, pues al probar su mezcla descubrí que ambos se complementan perfectamente.

En una olla a fuego lento coloque el azúcar, canela, anís estrella y las 3 tazas de agua. Mezcle bien e incorpore los cajuiles. Cocine a fuego medio hasta que los cajuiles absorban el jugo y se logre un almíbar fluido. Retire del fuego, añada una cucharadita de vainilla y mezcle bien. Funda el chocolate en baño de María y sirva con el dulce de cajuil.

Mezcle las lechugas y hierbas con un poco de vinagreta y divida en cada plato. Tope con las bolitas de jalao, macadamias tostadas y fresas, rocíe con un poco más de la vinagreta. Por último, añada la granilla de cacao tostada.

PARA LA ENSALADA:

Ingredients FOR 8 PEOPLE FOR THE SALAD: 4 jalaos (Coconut and Honey Candy) 1 cup of macadamia 2 cups of romaine lettuce 2 cups of purple lettuce 1 cup of mint leaves 1 cup of basil ½ cup of cut strawberries. Preparación Lave, pele y corte las yautías en pedazos pequeños. En una olla a fuego alto, sofría la cebolla y el ajo en el aceite de oliva. Luego, añada las yautías y saltee, moviendo constantemente. Añada las cuatro tazas de caldo de pollo y deje que hierva a fuego medio hasta que las yautías estén blandas. Retire del fuego y vierta en una licuadora (reservando un poco del caldo de pollo) y licue hasta obtener un puré suave y cremoso. Lleve de nuevo a la olla y agregue la crema de leche (y el caldo reservado si es necesario). Cocine durante cinco minutos a fuego medio, agregando nuez moscada y semillas de cilantro molido, ajustando de sal y pimienta. Retire del fuego y sirva con la carnita salada por encima, decorada con cilantro fresco.

La neurociencia ha constatado a través de especialistas como la Dra. Stephanie Ortigue que tan solo tardamos medio segundo en enamorarnos, el tiempo que necesita nuestro cerebro para poder liberar las moléculas neurotrasmisoras que generan las distintas respuestas emocionales. Por cada 1000 reproducciones de un video, un Youtuber recibe cierta cantidad de ingresos de acuerdo a distintas variables: edad de la audiencia, localización geográfica, profesión, género o diversos intereses en particular. Carol Acosta, la veinteañera dominicana que vive en Nueva York desde su más tierna adolescencia, a través de sus monólogos de coaching sobre sobrepeso y su franqueza hacia el amor por la comida, sobre todo, por la pizza, la ha llevado a adquirir el título de “La reina de los 15 segundos” en Instagram. Reina porque es su primer nombre y porque es respetada por una importante comunidad de seguidores que la idolatra. Desde finales del 2014 abrió su cuenta en Twitter y después comenzó a subir pequeños vídeos a Instagram, que llamó killadamente, por ser una palabra coloquial dominicana que apega al enojo que tiene una persona ante una situación que le afecta. Actualmente más de dos mil cortos de menos de dos minutos en los que habla sobre su día a día, sobre sus amigas y sobre todo, de cómo superó depresiones derivadas del bullyng que sufrió en un colegio de Nueva Jersey donde estudiaba, la ponen en lo más alto de los rankings. isciplinas como Crossfit o TRX fomentan el entrenamiento funcional, es decir, aquel que persigue estirar los músculos que usamos al realizar los movimientos habituales de nuestra actividad diaria, en lugar de hacerlo de manera aislada. Una tendencia que generó adeptos a finales del siglo pasado y que ahora mismo se ha convertido en un boom porque involucra cadenas musculares completas como el llamado “core” o cinturón abdominal (incluyendo en éste la pelvis y caderas). El entrenamiento en suspensión es una de las posibilidades para practicar el entrenamiento funcional y el TRX, como el FHX o RIP. Son marcas de productos para realizar cada uno de los movimientos y ejercicios en los que pies o manos están sostenidos al equipo de suspensión, es decir, un solo punto de anclaje inestable, con una o dos asas unidas por un cable o cinta. El otro extremo del cuerpo (manos o antebrazos si en el equipo están pies o rodillas) se apoya en el suelo. Al haber un único punto de sujeción, la persona tiene que superar la inestabilidad y combinarla. Así se consigue desarrollar fuerza, resistencia, coordinación, elasticidad, y fortalecimiento del core. El concepto de entrenamiento surgió a mediados de los noventa de la fuerza de operaciones especiales de la Armada de Estados Unidos, los Navy Seal, que buscaban un equipamiento para su entrenamiento que fuera fácil de transportar y así poder utilizar en sus misiones especiales. A partir de un paracaídas roto idearon un conjunto de arneses con los que podían ejercitar todo el cuerpo utilizando como carga su propio peso. La fama de su efectividad atravesó los muros de los cuarteles, haciendo furor en los gimnasios de todo el mundo y ahora, lo practican desde deportistas profesionales y cuerpos militares de élite hasta personas que simplemente buscan mejorar su calidad de vida, pasando por fanáticos del fitness. También se está empleando con éxito en entornos clínicos o de rehabilitación. Una herramienta muy versátil y portátil que puede usarse casi en cualquier lugar y en cualquier momento.

EL MAESTRO JOSÉ REYES COMPONE EL HIMNO DOMINICANO LUEGO DE CONOCER EL ARGENTINO THE MAESTRO JOSÉ REYES COMPOSES THE DOMINICAN ANTHEM AFTER LISTENING TO THE ARGENTINE ANTHEM lar o en cualquier acto solemne, se hicieron presentes ante miles de espectadores del mundo entero. Pocos saben que la partitura musical tiene su origen en la destreza y sensibilidad del compositor José Reyes quien, después de conocer el himno nacional argentino, quiso hacer una composición análoga y pidió ayuda a su amigo, el poeta Emilio Prud´Homme, con los versos que acompañarían su cadencia rítmica. Al pentagrama también se unieron las estrofas compuestas por César Nicolás Penson, Francisco Henríquez y Carvajal, José Dubeau y José Joaquín Pérez. Hijo de Rafael Reyes, un humilde comerciante detallista y de María Merced Siancas, José Reyes vivió durante mucho tiempo en un bohío de la actual calle Arzobispo Nouel. Soldado en la tercera campaña de la Independencia, estudió música con el director de la banda militar, Juan Bautista Alfonseca. Fue ahí donde aprendió a tocar de manera autodidacta, varios instrumentos musicales, en especial, el violonchelo. Mazurcas, valses, pasos dobles forman parte del repertorio creativo de Reyes quien también escribió música laica y religiosa, en gran parte inédita. Su carácter tímido y su fuerte autocrítica le impidieron darlas a conocer más allá de unas pocas misas. El caso del que se convirtiera en himno patrio dominicano, fue una excepción de su introspectiva forma de ser. En 1883, en un acto regio celebrado en la logia La Esperanza, en conmemoración al XX aniversario de la Restauración de la República, la pieza se presentó por primera vez de manera oficial. Pasaría un año más para volverse a escuchar de forma pública. Esta vez en el teatro La República, que hizo un homenaje a Juan Pablo Duarte, cuyos restos mortales llegaban al país desde Venezuela, para depositarse de forma solemne. En 1885, recibió la aceptación del público cuando la banda militar del maestro Betances

His relationship with a Puerto Rican singer brought him closer to the artistic world. BACANA MAGAZINE SE RECICLA

ALTA COSTURA EN PAPEL Cuando Jam nos contactó para proponernos hacer un vestido con números anteriores de Bacana Magazine nos sorprendió, pero nos convenció, pues realmente su propuesta es algo diferente. Este ingeniero de iluminación ha trabajado con los grandes reguetoneros y se ha especializado en el mundo de los eventos. Esa fue su propuesta, “crear un momento” para dar respuesta a la solicitud de los clientes. Creó un vestido para una mujer elegante, alta, estilizada que fue expuesto en diferentes hoteles. Aunque entusiasta del diseño nunca estudió esta carrera pero se ha mantenido muy vinculado a ella aplicando su pasión por el reclicaje. Para la elaboración de este vestido se utilizaron pocos materiales, una base de tela, hojas de bacana magazine e hilo. Una confección hecha a mano digna de la haute-coûture.

HAUTE COUTURE ON PAPER When Jam contacted us for proposing us to make a dress with the Bacana Magazine previous editions he really surprised us, but he did convince us, because his proposal is something different by far. This lighting engineer has worked with the most recognized reggaeton artists and has specialized himself in live events. That was his proposal, “to create a moment” to answer to the customers’ request. He created a dress for an elegant, tall and sophisticated woman. A dress which was exhibited in many hotels. Although he is a design fan, he never studied this career, but has remained really close to that world and has applied his passion for recycling on it. Few materials were used in the dress: a fabric base, Bacana Magazine pages and thread. A handmade confection worthy of the haute-coûture.

Por fin la marca de lujo por antonomasia, emblema “premium” británico por excelencia y hoy propiedad de BMW, mal que les pese a los hijos del decadente imperio británico, presenta lo que hasta el pasado mes de mayo era una promesa: el lanzamiento del SUV más caro y exclusivo de todos; el Cullinan.

u competencia es muy reducida pero existe, desde el Bentley Bentayga (bajo control VW) al Lamborghini Urus (igualmente en la órbita del grupo VW), pasando por los más modestos Range Rover LWB y Mercedes Clase G. Rolls afirmó que su SUV sería el más grande, lujoso y exclusivo de todos, el rey de los SUV, vamos. Y para ello lo bautizó con el nombre de Cullinan, en honor al diamante sudafricano, el mayor del mundo hasta la fecha, extraído de las minas de Thomas Cullinan en 1905 y hoy propiedad del tesoro de la corona de su graciosa Majestad.

motor El apogeo del mercado de los SUV de lujo está ya al borde de la saturación, y las perspectivas de la economía británica “post brexit” no dejan lugar a demasiadas alegrías. El mercado chino, que había tomado el relevo de los países ricos del golfo Pérsico, también está empezando a saturarse, y por otro lado Rolls no tiene ninguna tradición y experiencia en este tipo de vehículos, al contrario que por ejemplo Land Rover, Audi o Mercedes. En sus 112 años de historia, Rolls Royce nunca ha fabricado un todo terreno (salvo algunos vehículos militares, a título experimental). Y su experiencia en tracción total tampoco es precisamente dilatada... La única respuesta es que su selecto público la pide y que contando con él (que puede convertirle en el modelo más vendido de la marca), Rolls Royce puede llegar a vender 6.000 coches al año, o sea un tercio más sobre los 4.000 que viene a vender ahora, y consolidar su posición de marca de lujo en los mercados emergentes que no cuentan precisamente con un red vial de primer nivel.

INMENSO Y MUY PESADO, IMPONE MÁS

Su carrocería está basada en la plataforma pomposamente denominada “Architecture of Luxury”, que es una evolución de la del BMW Serie 7 largo desarrollada ex profeso para los Rolls más lujosos. Sus dimensiones son simplemente impresionantes; pese a ser 40 cm más corto que un Phantom VIII y 20 cm más alto, mide 5,34 m de largo por 2,16 m de ancho y 1,84 m de alto, con una espectacular distancia entre ejes de 3,30 m. Estéticamente, la apariencia de este Cullinan no deja de ser la de un armario con ruedas, maciza y pesada como la de los clásicos Rolls, y tan aerodinámica como un ladrillo. La zaga es quizás el elemento más novedoso, con su grueso pilar C, conformando una clásica carrocería familiar cúbica, con un portón trasero de doble hoja.

EL CONFORT POR ENCIMA DE TODO

La suspensión del Cullinan es neumática e independiente a las cuatro ruedas mediante un eje por doble paralelogramo superpuesto delante y multibrazo trasero, contando con amortiguación neumática y barras estabilizadoras activas. Para facilitar el uso sobre tierra se ha aumentado el recorrido de la misma, y también el de los amortiguadores neumáticos, que contienen un mayor volumen de gas para aumentar su efecto y mantener el mismo grado de confort, contando con una altura libre de vadeo de agua de más de medio metro (54 cm). COMFORT ABOVE ALL

The Cullinan suspension is pneumatic and independent to the four wheels by means of an axle by double parallelogram superimposed front and multi-arm rear, with pneumatic damping and active stabilizing bars. Con esta configuración se puede solicitar un panel divisorio acristalado, tanto entre la fila delantera como con el maletero, mejorando el aislamiento térmico y acústico. Con la configuración de 5 plazas (Lounge Seats), la segunda fila queda formada por una banqueta corrida con los respaldos divididos en mitades asimétricas (la clásica disposición 1/3-2/3), ambas eléctricamente abatibles y ajustables mediante controles en las puertas y el maletero. Un maletero de película En la versión Lounge Seats (5 plazas) alcanza un volumen total con los asientos abatidos de hasta 1.930 litros cargando hasta el techo, con un fondo útil máximo de 2,25 m, realmente muy amplio. El interior recuerda mucho al del nuevo Phantom, con un salpicadero elegante, y puede personalizarse de múltiples formas a gusto de sus exigentes propietarios, además de contar con todas las ayudas a la conducción y conectividad multimedia que ofrecen las gamas más exclusivas de BMW (lleva cámaras de visión perimétrica a 360º, cámara de visión nocturna, conexiones WiFi y USB (5), control de crucero activo, alerta y frenada autónoma por riesgo de colisión, alerta por cambio involuntario de carril, “head up display”, soporte de carga inalámbrica de móviles, etc, etc). SIN SORPRESA EN EL MOTOR

Desde luego, no será el súper SUV más potente del mercado, pero tampoco lo pretende, se conforma con ser “el mejor y más lujoso”, que no es poco. De lo que sí dispone este señorial Cullinan es de un selector de modos de conducción “off road” (que Rolls Royce denomina “Everywhere”, o sea para circular por todas partes) que viene a actuar como un modo todo terreno automático, actuando sobre 12 parámetros del coche (motor, transmisión, suspensión, dirección...). A través de él se pueden elegir diversos modos de conducción, como “nieve”, “arena”, “rocas”, “grava”, “hierba húmeda”, etc. El cuadro es por supuesto digital, por pantalla configurable, con otra pantalla táctil multimedia para las demás funciones, aunque también lleva un mando rotativo entre los asientos delanteros para varias de ellas, rodeado por otros específicos que activan la función «Off-Road» (todoterreno), «Hill Descent Control» (control de descenso en cuesta) y para el reglaje de la altura de la suspensión neumática. En suma, un majestuoso e imponente súper SUV que pretende convertirse en la nueva referencia del máximo lujo en su selecto nicho, y cuyo precio sigue aún sin desvelarse, aunque algunas fuentes apuntan hacia las 300.000 libras.
