Welcome to the tenth edition of The Busselton-Dunsborough Life Ten editions and five years in print! Where has the time gone?! A good opportunity, I think, to once again thank all of our advertisers and readers whose unflinching support has made this journey possible. Add style and warmth to the wardrobe
This winter, covering up will be an absolute joy! With so many fabulous looks to choose from, take inspiration from the new season’s trends and embrace the cooler weather. This season, a wearable look for everyone is sport luxe. This athletic trans-seasonal trend gets revamped throughout the year and this winter, it centres on soft greys and nudes. Tops with sheer, PVC or even tweed panels add the glamour to a pair of slimline stretch pants or track pants. A quilting effect is very popular on pants, skirts and tops too and will look great on a fabric bomber jacket to finish off the look. For feet, add a pair of sneakers – slip-on’s, laced or midrise. Pale pink goes perfectly with greys and, although normally a spring or summer colour, it promises to be huge this season. Winter coats look incredibly soft and dreamy in this pastel shade and are quite a diversion from the usual black. Looking for warm comfort often means snuggling up in oversized roomy knits. Long and lean jumpers as well as waterfall and boyfriend cardigans do the job very nicely. Going for fine knits means you can layer too without looking bulky. Other knitwear trending currently includes jumpers with chunky jewelled embellishments or printed animals. They look great teamed with a midi skirt or narrow cropped pants. Add a pair of ankle boots to the skirt or loafers to the pants. Moving away from the cocoon shape of last winter, this year’s coats are being cinched in at the waist with a casual tie at the front or a statement belt. The coat doesn’t have to meet in the middle and the belt or tie will look effortlessly cool in a contrasting colour or texture. It’s a feminine silhouette that produces a strong look. Also, look out for wraps in the form of huge blanket scarves, the bigger the better, in oversized check and plaid prints. The slimline pant is a mainstay for men this winter with legs cropped around the ankle and layers worn on top to create a bulkier top half. And, as a contrast, relaxed track-style pants will link in with the sport luxe trend. For sweaters, the rollneck jumper in a fine knit looks great with either type of pant. And not going anywhere fast is the check print – in any size or format – and not only for sweaters, for coats too. It’s welcoming to see books, photos and other family treasures beside the hearth. Likewise, flanking the fireplace with a pair of comfy armchairs works too. As for the fires themselves, the choice will depend on whether or not your property has a flue through which smoke escapes outside. If the home does not have a flue, and the expense of installing one is prohibitive, choose a fire that burns fuel without creating smoke. Currently, there is a huge range of flueless fires on the market that burn gas or liquid bio fuel, such as bioethanol. These are easily installed into an existing fireplace surround and some can simply be hung on the wall to create a clean, streamlined look. This type of fire does not need a hearth so is an ideal choice for a
smaller room. Designs range from traditional styles to ultra-modern and there is often a choice of fuel bed, such as logs, pebbles, charcoal or coal. Some even have a remote control so that the temperature can be altered from an armchair! Spend time carefully researching which type of flueless fire to choose. Some are very costly to run and some do not give out much heat. However, although some fires are predominately installed for decorative purposes, it is surprising how much warmer we can feel by just looking at a brand new fire!

In 1989, I began working in the upholstery textile industry for Warwick Fabrics and in the early 90’s, I made the move to Kibby Fabrics. From those days, it seemed a natural progression to what Holly and I are doing now.”
An exciting, new furniture store has recently opened its doors in Busselton. Located in the Homemaker Centre, Southern Comfort Furniture is home to a stylish range of exclusive, contemporary pieces that capture the very essence of south west living. Having spent a decade supplying furniture to interior designers, hotels and home builders in Perth, owners Holly and Graham Yeomans decided to embrace a sea-change to Busselton. The Busselton-Dunsborough Life magazine met up with the husband and wife team for a chat.
Where did your interest in furniture originate from? Holly – “I have always been interested in interiors right from being a small child aged six. I also travelled a lot as a child and as a young adult and through my experiences I have not only met plenty of different people from all backgrounds but also been influenced by different interior designs I have seen.”
When did you first get involved in the furniture and interiors business? Holly – “I started by enrolling in a furniture design course at Perth Tafe in 2000 whilst working for Impressions Furniture. However, things really took off when Graham and I met the guys from Globe West at a furniture show in Melbourne. Globe West is a contemporary furniture design and importing company well known for its unique designs. We gelled with the guys immediately and began working with

We see ourselves as a concept store, building on our clients’ ideals and there are many looks that we can provide to help bring an idea to reality. We also specialise in European oak, solid and recycled teak and have an extensive range of outdoor furniture and home accessories.” Graham – “We also offer assistance on home styling and can fit-out an entire home when required. Our products our sourced from WA suppliers, from interstate and from overseas.”
Why did you open in Busselton?
What’s different about Southern Comfort Furniture and which areas do you specialise in? Holly – “We believe we offer a range of unique, affordable furniture not commonly seen in the normal furniture store. We aim to provide the very latest designs and styles to our south west clients, allowing our customers access to exactly what’s on trend now. For example, you can open the pages of almost any of the top selling Australian interiors magazine such as Modern Home, Real Living or House & Garden,
Holly - “What can I say, it’s got everything! It’s a lovely, friendly coastal town with great walks and a beautiful coastline. It’s also got good access to Perth and it’s no problem to drive up the freeway and bring stock back to the store within the day. Our Molmic kids also love at Southern Comfort Furniture growing up in a smaller community and are very well settled in their school.” Graham – “The fishing is great, particularly rock fishing when the salmon are on their run, but I also love the scenery, winding roads and sense of space. I get a sense of freedom and time to dream, I suppose. Wow, what a start to 2014! We are currently experiencing the most buoyant selling conditions in 7 years with stock levels falling to a level not seen since 2007. See www.realestate.com.au where less than 450 properties are currently listed for sale for the 6281 and 6282 postcodes - down from around 1000 properties in 2011-12. According to the latest REIWA figures, sales volumes show 155 house transactions for Dunsborough already this year. This is the same number recorded in total for 2013 and up from just 73 at the same time of the year in 2011. Land sales are also up, according to REIWA, with figures showing 107 vacant land transactions so far this year. This compares to a total of 115 for the whole of 2013 and 86 at this time of the year in 2011. This has resulted in a major shortage of available vacant land for sale, particularly for town size lots, which in turn has reflected in strong capital growth. REIWA figures show an increase in value of 6.7% in the past 12 months. Despite this, we have recently experienced an easing in buyer enquiries for the period end of April into May; a reaction perhaps to the hotly anticipated federal budget announcements. This is typical of the current market where, despite good sales results being achieved, buyers still remain cautious, meaning we are certainly not experiencing the frenzied buying activity experienced between 2005 and 2007. For this reason, we expect to see modest capital growth throughout this year, on a par with the last 12 months. Remember, if you are planning to sell, choose your agent carefully. Research agents who dominate sales in the area, have a good history of achieving optimum prices, and who offer
superior marketing strategies. The agent will need to optimise the presentation of the property, demonstrate experience and passion for both the property and the industry, and be backed by a team of equally experienced and passionate consultants. The right combination of the above will certainly create the most likely circumstances for you to achieve your goals. Feature Build From the very day the owners moved into the property that pre-dates the current house, they had a real passion for their home. They loved the neighbours, location, orientation and view, and knew that a dream home could be designed to perfectly fit their vision and lifestyle. So, twelve years on, they instructed Busselton architect firm D’Agostino and Luff to set about creating the commanding home it is today. On approaching the property, the most striking features are the architectural elements of off-formed concrete, the crisp, sharp rendered projections and glass. An in-ground concrete pool is located in the front yard and cleverly wraps around the side to provide a generous length for swimming laps. The off-formed concrete elements continue internally and are complemented by polished concrete floors, stair treads and risers. There are bespoke elements throughout the home, many being used for the first time in the south west. The suspended slab is embedded with hydronic floor heating, which radiates heat to both the lower and upper living areas. A standout feature is the exceptional timber furniture in every room which was crafted by Dunsborough Woodworks. The SIPS story
A number of years ago at a trade show in Perth, I spent some time at the SIPS Industries display, impressed with its innovative system of using insulated panels in the construction process. SIPS stands for Structurally Insulated Panel System and consists of an expanded polystyrene (EPS) insulation core sandwiched between 10mm orientated strand board (OSB) faces. Although it appeared to be a great product, I took the option to take note and
watch at that stage. Since that initial curiosity, a few years have passed and I have maintained my interest in this construction process. Developed in Scotland and widely used throughout the UK and Europe, SIPS Industries is now well established in Perth, operating from a factory in Bibra Lake. Several meetings last year with the SIPS team at their factory instilled further confidence in the product and confirmed to 32

me it was time to work this product into my designs. Now, there’s nothing better than your own home for trying out new things! Hence, the first project to use this system has been my own home, images of which are available to view. The bulk construction has now been completed in an extremely fast time frame. In fact, I can go as far as to say we have pretty much negated the need for any traditional framing construction and are finding SIPS is as easily integrated as a framed wall. SIPS also has added speed, strength, accuracy, very high levels of thermal resistance and low wastage to the construction process. Plus, we have found that the weather protection offered by the panels has been extremely beneficial while working through the wet! We have a number of other new materials being used at present and I will keep you up to speed with our findings in future articles. What persuaded you to move to Bunbury? A number of reasons. How long have you been involved in the automotive industry and what sparked your interest? My association with the automotive industry spans a period of over 25 years. How do you relax away from the office? The business and the construction of the new dealership keep me very busy, as does my home life with my wife and 2 small children. However, I do enjoy a run along the spectacular Bunbury coastline, a visit to my local gym, or a long Sunday lunch somewhere outdoors, sampling the great local produce. My wife and I love it here.

Inline Skating A mobile programme that comes to you
As one of the nation’s fastest growing sports, the benefits of learning to skate are plentiful. As well as being great fun, affordable, sociable and accessible, the health benefits are numerous and wide-ranging. Now, thanks to the Be Active Mobile Skate Programme, an initiative of The Rink Bunbury, budding skaters are able to experience the thrill of inline skating right on their very own doorstep. The Rink’s mobile programme is a natural extension of the range of programmes run at its skating centre in Gibbons Road, Bunbury, and is available from as far north as Perth to Walpole in the south. To host a class in your area, a smooth, level asphalt surface is required, i.e. a basketball or tennis court, and the area must be swept. During the wetter months, undercover areas are recommended as skating is not permitted in wet conditions. Equipment supplied by The Rink includes the inline skates and all protective gear and tuition is available for beginner, intermediate and advanced skating levels. For multiple class bookings, a 15 minute break between classes is recommended to allow for changeover time and it is also recommended that an adult or teacher is present during classes. The areas covered by the Rink are divided into 4 separate zones each with its own pricing structure. Zone 1 covers the Greater Bunbury area and prices are adjusted to cover distance and staff travel. Meet….Anne Edwards In this issue, we talk with Anne Edwards, a former national champion, who has rediscovered her love of skating at The Rink.
When did you start skating? I started as a 4 year old. My 3 brothers and I lived at the Rink! We all competed and it wasn’t until I was 15 that I decided that I wanted to get good. I said to my coach, Susan Brooks, that I wanted to win nationals and she replied, “OK, well if you do, you will need to practise and then practise some more!’ So I followed her instructions, worked hard and guess what - I won! Then, aged 17, I moved to Perth, trained as an apprentice pastry chef, met my husband and had 2 beautiful children, Blake and Cristin.
What are your memories as a child skating and would you recommend parents bring their children to skating classes? I loved skating as a child. It gave me the freedom to express my creative side and it was something different. I’d definitely recommend bringing children to classes as they get to skate with others at the same level and work through the stages at their own pace.
Why did you come back to skating? My daughter had started and I decided that instead of sitting on the sidelines, I’d put my old skates on and see how it felt. Realising how much I’d missed it, it didn’t take long before I was back doing private lessons and competing again. Then, under the guidance of Susan, I began to learn a new style of skating for me called Solo Dance. This meant no partner, just me, participating at times I could make it or 52
sport & recreation whenever my daughter was training. The compulsory side of this programme involves skating to music with turns and steps (think ballroom dancing on skates). Next, the creative side is where we create a character programme to fit my own personal skill level. Timing and musicality are key here as are the variety of turns and tricks. This year’s programme was Roaring 20’s and I had so much fun.
different to teenage bodies and you need to adapt accordingly. Adults need more time to recover, good medical advice and technical coaching or you get to a point when your body says stop. My coach, sports doctor and physio are all able to help me when I have issues that need addressing and I know that as my body changes I can improve my understanding and seek help when needed. After less than 2 years, I’ve learnt a new discipline, improved my health, worked better with my body and fallen back in love with my sport. Even better is that each time my daughter and I go training together, I get great joy from watching her and the other skaters improve, whilst having great fun. On her return, Anne was placed 2nd at National Championships 2013 and was placed 3rd at the 2014 Oceania Championships in New Zealand.
Have you enjoyed teaching and judging? I love teaching as I can be with children and adults who want to learn a sport that I’m passionate about. Judging is new to me but being a coach has helped me see a different side to the sport and understand the judges’ points of view. I’m really enjoying this new journey as it gives me the opportunity to give something back to a sport that has given me so much.
Have you enjoyed competing again? I love competitions, maybe because I have 3 competitive brothers, however, it also gives me the opportunity to improve my skills and reach my goals. The Oceania Championship was an amazing experience being my first ever international competition. I met loads of competitors at the same skill level and was able to reach a goal that I’ve had for a long time.
How has skating encouraged you to get fit and how have you adapted to being older? Since my return to skating, I have not only lost weight but also increased my strength and flexibility to help my competition chances. It’s really improved my overall health. My nutrition awareness has also improved thanks to a new career cooking at Natural Temptation Café. I have learnt so much about how healthy nutritional food can give you the energy to fulfil a busy, demanding lifestyle. Wall Art
A feature wall within a room has almost become a requirement of a well-finished home. Commonly a wall of contrasting paint or flamboyant wallpaper, interior designers are now moving towards a more individual approach to decorating and this involves sourcing unique artwork. A striking piece of art can say a lot more about a home and its owner than a block of paint from the current season’s on-trend colour palette. Individual and personal, it will have been chosen because it is of particular interest to the buyer. For budgets that don’t stretch to buying expensive artworks, try creating your own special piece. A simple way is to create a photo or art wall of a particular subject. This could include photographs of family members, seascapes, patterns in nature, sailing, cars, maps or prints of artwork. Keeping to the same subject matter will bring the separate pictures together as one piece of art as will settling on one colour of frame and how they are arranged. Try starting from the middle of the wall and work around in outward circles or a spiral of frames. Or ensure every frame has a side that has a certain parallel measurement, such as 30mm, to one other frame. Another successful look is to create a shape of all the frames together.
Frames in themselves are diverse and can make a beautiful artistic arrangement when hung without their backing or their glass. Empty frames like this work best if they vary in their ornateness and style. Sticking to the same colour is recommended unless using metal frames. These can work well as a group even if the metal colours, such as gilt, silver and bronze, vary. Finally, how about using mirrors, either in interesting Art Deco designs or as framed mirrors to create that unique look? With their reflected light, these work particularly well in part of a room that needs to be brightened up. 56

Australia The Photographer’s Eye Nick Rains Pouring over the images in Australia The Photographer’s Eye, is a visual treat in itself but this beautiful book produced by award-winning photographer Nick Rains has even more to offer. Rains began his photographic career over 25 years ago in Europe and, since moving to Australia in 1990, he has focused on travel and landscape photography. He is all too familiar with travelling for weeks at a time throughout the wilderness in order to find a significant photo moment. And this is what provides the commonality for the images in Rains’ current publication; knowing where to look for the photo. Every section covers areas from a state of Australia and Rains writes a short passage about why he chose specific places to photograph. He includes ‘photographic hotspots’ with coordinates so that the reader can use Google Earth to find the exact locations. To make the most of photo opportunities that may arise in these specific hotspots, there is a section at the back of the book with photo tips, including image depth and advice on the optimum time of day for the photo. The images themselves are spectacular and vary greatly in their point of interest. There are vast natural landscapes, city scenes, bold colours, aerial shots, intricate details and patterns, the list goes on. Rains has produced a book that is not only a pleasure to dip in and out of but one that offers photography enthusiasts an unparalleled insight into creating great photography.
We Are Water Wally Lamb Wally Lamb has created a reputation for writing bestsellers and We Are Water is destined to achieve similar success. He is an author that thrives on sharing his interest of human psychology, giving the reader vivid insights into characters’ thoughts and behaviours. A great deal of Lamb’s fiction focuses on people striving to become better and happier people. The story of We Are Water is told through the voices of a family living in modern-day New England. Each has their own reaction to Annie Oh (mother, wife and artist) separating from her husband after 27 years and marrying her lesbian lover. Painful feelings and past life experiences are unearthed as the family comes to terms with the wedding and with each other. There are no wishy-washy characters to pad out the storyline; Lamb has created each to have their own unique traits to define their persona – nonconformist, free-spirited, do-gooder, self-consumed. We Are Water is an intricate study of resilience as very different people struggle to achieve love and fulfilment in their lives. It is, at times, a disquieting read. Winter Nail Art Beautiful nail art is currently a huge beauty trend and can add as much impact to an outfit as a statement bag or pair of shoes. Runways around the world have regularly been showcasing polish fashion and here are some ideas for fabulous winter nails. The edit on colours is for glorious, deep red wine shades; blues, such as royal and navy; nudes that are buttery, caramel or taupe; and greys that have a blue undertone. Nudes and greys are perfect for showcasing jewellery and particularly, of course, rings. Darker nails tend to resurface in the cooler months and there is a call for black and graphite polish in matte as well as high shine. Striking effects include adding metallic swirls or embellishments, such as a crystal. However, because WA tends to have mild winters, black may seem a little heavy. So perhaps save it for a one off manicure for a special night out. Choosing a different polish for the tip of the nail opens up so many colour and design options. It is a modern take on the classic French manicure. What’s set to be on trend this season is to have a dark nail colour, such as a deep red wine, navy blue or graphite with a metallic or glittery tip. Bare nails can be equally as attractive with a painted tip or with just a flick of colour across the tip. There are also many amazing effects that can be added after a base coat, such as diamond dust, gold leaf, gemstones and even tiny beads that can be ‘rolled’ on to each nail before it has dried. Make sure that you take time to commit to a regular beauty regime for your hands so that you can indulge in countless new looks throughout the winter months. Start by filing a nail shape that suits your fingers by following the natural curve of your
cuticle. Add hand cream and soak your hands in warm water for a few minutes. Gently massage back cuticles with a drop of cuticle oil and then wipe nails with polish remover. Now your nails are ready for their winter art!

As one of Busselton’s most popular eateries renowned for its fresh, diverse and wholesome menu, More Café has always been on our ‘to-do’ list. In this edition of The Busselton-Dunsborough Life, we finally paid a visit. Open from Monday to Saturday for breakfast and lunch, More Café offers a unique dining experience. With its lime washed walls, lively atmosphere and distinctly urban feel, it’s the perfect place to enjoy a meal with friends, or to simply grab a coffee and watch the world go by. With alfresco dining and plenty of takeaway options available, there has always been a wide range of reasons to visit. Arriving for breakfast at 8am, the café was already in the middle of its busy morning serving. A morning made particularly busy by a steady flow of Ironman competitors preparing for the event later in the week. Choosing from the Autumn 2014 menu, we were sorely tempted by the More Breakfast Wrap, a delicious combination of scrambled egg, bacon, spinach, tomato, Cheddar cheese and barbecue sauce, and the More Breakfast served with 2 eggs, bacon, Italian sausage, potato cake, roast tomato, mushroom and toast. However, in the end, we decided to try one of the café’s signature dishes, the Breakfast Bruschetta. Served with field mushrooms, avocado, poached egg and drizzled with balsamic vinegar, the dish proved to be an inspired choice with all the textures and flavours combining perfectly on the plate. It’s no surprise that this is one of the most ordered dishes on the menu and accompanied by a chilled glass of freshly squeezed orange juice it really was the perfect start to the day. Don’t be mistaken for thinking, however, that
all breakfast choices are substantial. For those who fancy a quick bite, there’s a wide selection of different toasted breads (along with a gluten-free option), plus Blueberry Buttermilk Pancakes, Maple Roasted Muesli and Almond Milk Porridge to name but a few dishes. And then, of course, there’s the coffee – worth the visit alone! Or try one of the café’s delicious smoothies, including the Brekky, a fantastic combination of bananas, strawberries, oats, honey and yoghurt. For lunch, the current menu continues to offer up an enticing selection. Choose from Nasi Goreng with chicken or prawns, Panko Crumbed Teriyaki Chicken Burger with avocado and Swiss cheese, Thai Pork Burger with Asian slaw and sweet chilli sauce or Beef burger with Cheddar cheese, onion jam, bacon, tomato and aioli. Mmm! Or simply grab a takeaway snack from the counter. My Favourite Dish

Snapper and Leek Fish Cake with Sauce Grenobloise Both my business partner and fellow chef Tim and I have both spent time in fine dining kitchens and although Goanna Café doesn’t claim to be a fine dining experience it doesn’t mean that elements of the experience cannot feature on the menu. This fish cake shows that simple food done with care and respect can be elevated to something quite special. Not all of the ingredients have to be expensive or glamorous. The recipe for the fish cake has been adapted from a dish we used to cook at a Michelin star restaurant in London. The snapper is sourced from 34 Degrees Blue in Margaret River. Having a good reputation with our supplier certainly helps us to deliver a better product to our customers. The Sauce Grenobloise is a traditional French recipe and is a nice alternative to a mayonnaise based tartar sauce. The fish cake is a good main element to any meal and can be served many different ways. A poached egg on top Fish Cake with hollandaise sauce makes an amazing breakfast or, 300g snapper fillet served with chips and steamed peas, it makes for a great 1 litre milk winter comfort meal. 1 onion Method Serves 6 1 bay leaf Place the snapper fillet in a saucepan, cover with milk and sprig of thyme add the onion, bay leaf, thyme, peppercorns and cloves. 6 peppercorns Cover with greaseproof paper, bring very slowly to boil 6 whole cloves then turn off and allow the fish to steep until cool. The 50g smoked salmon snapper should be cooked so that it is flakey but still juicy. 2 tbsp butter Finely dice the smoked salmon and place to one side. 1 leek Chop the leek into a 1cm dice and wash thoroughly. Cook 300g potato the leeks in the butter, season with salt and pepper. Drain the leeks on absorbent paper. Peel and cook the potatoes 2 tbsp chopped parsley in salted water then mash. flour In a large mixing bowl, add the snapper, smoked salmon, egg wash cooked leeks, mashed potato and chopped parsley. Mix panko bread crumbs together and season to taste. Divide the mix into 6 even Sauce Grenobloise portions. Mould into a ‘puck’ shape. Pass each puck through flour, egg wash and panko crumbs and place to 1 tbsp chopped shallot one side for cooking. 1 tbsp lilliput capers For the sauce, combine all of the ingredients and season 1 tbsp chopped parsley to taste. Cook the fish cakes either in a deep fat fryer at 1 tbsp chopped tarragon 2 hardboiled eggs, finely chopped 170˚C or shallow fry on medium until golden brown. My Favourite Dish By Denise Heberer, The Deck
Pork Trio There is nothing better than a perfectly cooked cut of meat. Except, of course, three different cuts from the same animal cooked and served three different ways, all on one dish, all coming together in unison. At The Deck, our Pork Trio has been on the menu ever since I took over running the restaurant, and for good reason. Firstly, the dish includes a lean sirloin of pork, chargrilled and cooked lightly so it remains juicy. It offers up the flavours that only a chargrilled piece of meat can deliver. Secondly, we include a delicious pork belly cooked in a special stock. The meat melts in the mouth but the dish still has the crisp skin to provide that crunch. Finally, the dish includes slow braised ribs Head Chef Steve cooked in a smoky, sweet-style with his Pork Trio American sauce. Served on a flavoursome parsnip purÊe, the dish also features pork crackling, parsnip salted crisps and broccolini with herb jus to finish off the experience. The Pork Trio would now have to be one of the most popular dishes on the menu, offering so many different combinations for lovers of pork to enjoy. Winter Recipe Cauliflower and Potato Curry What better way to get warmed up this winter than to tuck into this spicy dish. What’s more, it’s even better when left to cool and then reheated the next day as the flavours can really infuse into the vegetables. Serves 4
Method Place the chunks of potato into a pan and cover with cold water. Bring the pan to the boil and then simmer for 5 minutes. Drain the potatoes and tip onto paper towel. Heat 2 tbsp oil in a large pan and add the onion and peanuts. Cook while stirring until the onion starts to turn translucent. Add the ginger paste, chilli flakes, mustard seeds, cumin seeds, coriander, turmeric and some salt and stir constantly for 1 minute. Add the potatoes and cauliflower to the pan and stir to thoroughly mix all the ingredients. Add 60ml of water, cover with a lid and reduce the heat to its lowest setting. Cook gently with the lid on for around 10 minutes or until the cauliflower and potatoes are tender. Check from time to time in case the mixture is sticking, if so, add a tablespoon of water. Add salt and pepper, if desired. Serve with rice and naan bread.

food & wine What’s great about this tart, apart from the fact that it is incredibly delicious to eat, is that it is meant to look homemade. This means that there is no need to bother rolling out pastry to exact measurements. As an alternative to cinnamon, try adding ½ tsp almond essence instead.
Winter Recipe Rustic Pear and Apple Tart Ingredients readymade short crust pastry, defrosted according to the pack’s instructions 1 tbsp cornflour 2 tbsp light brown sugar, plus extra for sprinkling
1 tsp ground cinnamon 3 ripe pears 3 apples 1 tbsp lemon juice baking paper
Method
baking sheet 1 tbsp milk 1 tsp honey ¼ tsp boiling water
a border all around the fruit of about 8cm. Fold the border up over the fruit, leaving the fruit in the centre uncovered. Use the baking paper, if necessary, to help to lift the pastry up. Don’t worry about getting the pastry even. Brush the pastry with milk and sprinkle with the extra sugar. Bake for 35-40 minutes until the pastry is golden. Remove the tart from the oven. Make a glaze by mixing the honey and boiling water together in a small bowl. Brush the glaze over the fruit and pastry crust. Place on a plate and allow to cool. Serve warm or at room temperature with custard.
Set the oven to 200°C. Mix together the cornflour, sugar and cinnamon in a bowl. Peel the pears and apples, core them and cut into slices. Toss them in a large bowl with the lemon juice. Sprinkle over the flour, sugar and cinnamon mix and stir well to coat the fruit evenly. Roll out the pastry between 2 sheets of baking paper into a circular shape, about 30cm in diameter. Lift onto the baking sheet and remove the top sheet of baking paper. Arrange the fruit mixture in the centre of the pastry circle, leaving
