culottes and skirts as well as on tops too. It breaks up the block of black or white and brings a lighter, fresher look for summer. The dress to invest in this summer is a shift dress. It’s an incredibly easy item to wear and looks great in this season’s vibrant botanical print as well as in a delicious sorbet colour. For a more body-con option for dresses, the sheath is also going to be very popular. For a relaxed nonchalant summer look, look out for tops and sheath dresses that expose shoulders. Slouchy necklines, off the shoulder or cut outs give a peek of flesh without showing too much. It’s a nod back to the 1960’s and looks fabulous and chic with a Bridget Bardot-esque ponytail with height at the crown.

It’s bold, it’s bright, it’s botanical!

Summer in WA is all about glorious sunshine, warm breezes and blue skies; the perfect backdrop for showing off the latest trends hitting our stores. It’s going to be a bold and bright season with a great choice of feminine, elegant and relaxed silhouettes. Channelling a retro resort look, botanical is going to be the standout print for summer. Look out for large scale photographic inspired prints of ferns, leaves, tropical palm trees, pineapples, exotic flowers and birds in beautifully rich green, red, orange or classic monochrome. This print is very feminine and lets us girls easily slip into a summer holiday mood. The best way to wear a botanical print is to keep the cut simple and to pair it with subtle jewellery and nude shoes or sandals. Matching separates works well but you can break up the look by picking an individual piece, such as a midi skirt, shift dress, boxy top, wide leg pant or cute shorts, and wearing it with something neutral or bright white. Key pieces to have in the wardrobe this summer start with culottes. Either in shorts or mid-length, culottes are the ideal way to wear pants for the months ahead. Add strappy heels and a beautiful, elegant look is created. The mid-length is also the way to wear a skirt this summer in a streamlined pencil, A-line or fluted style. Eb&ive The waist is accentuated and the hem at Homeward Bound Imports should lie just below the knee, creating a sophisticated and very feminine look. To complete an outfit with either a midlength skirt or culottes, add a cropped boxy top or tuck in a crisp white shirt. Monochrome textural mesh is set to feature prominently on mid-length 10

Greta Diaries

The Art of Looking Expensive

Dearest ones, Greta from ShoeBeDoo here to share the holy grail of beauty - looking expensive effortlessly. And without the thousand dollar price tag. Here’s how to harness accessory buying power …

That Woman ...

You all know her. The one you pass by in the street and go, “Wow look at how she put THAT together”. It’s not just about her chic wardrobe or the amount of money she spent. Often, it’s what she put with the basics. That handbag, that pair of heels, that clutch.

That Handbag ...

…which isn’t black! We all tend to go safe and say, “I need a good black handbag, it goes with everything”. But does it really and is it really how you want to look? Black, black, black, blah blah blah. Instead, pick your favourite colour in the rainbow and find that colour somewhere, somehow, in a bag. Elegant, well priced, well designed bags from Etiquette always have a neutral base colour, or black accented trim (there’s your black, ladies). And then they have the zing: a fuchsia floral embroidered pocket on the front, violet and teal satin stripes in the gusset, bright pink satin lining inside. Oh yes, “she’s” got one of those slung over her shoulder!

Lace shift mini dress at Jilly Boutique

That Pair of Heels ...

…be they achingly gorgeous Valentino-inspired small pointed kitten heels from German designer Peter Kaiser for the comfort lovers, or Jimmy Choo-influenced caged heels from Brazilio. It’s not all about that bass …it’s all about those shoes. Tan ballet pumps from Django & Juliette with ankle skimming, tailored black pants is ever so Audrey or wear your LBD with a pair of high heel floral musk and melon points from Sachi. Effortless … can’t you just see “her” confidently striding on the sidewalk?

Vintage style floral blouse at Jilly Boutique

That Clutch …in black satin is out and that clutch in snake embossed cobalt is in. Olga Berg is the veritable queen of colour and texture with art printed in textile on pods and floral landscapes picking up every colour possible on envelope clutches. Does “she” rock her denims and slouchy tee with coloured shoes and a perfectly printed clutch? Mais oui, she does … Inspired yet? So hope so. Because colour, texture and interest all contribute ever so positively to the art of looking expensive. That, and the lack of only head to toe black or beige. Want more of an accessory-fix? Follow me on Facebook (ShoeBeDoo. Bunbury.Dunsborough) and Instagram (shoebedooshoes). After all, as the late Oscar de la Renta said, “A woman makes an outfit her own with accessories.” 19

get prepared. Start by giving decked areas a good sanding down by hand to remove any splintered areas, or use a hired sander if the whole area needs attention. Sweep the timber and wash it down with a decking wash solution. Next apply the stain - this is the easy part! Use a brush for the edges and an applicator with a long handle for seamlessly covering large areas. Now it’s onto the lawn. Weeding, fertilizing and watering correctly is vital at this time of the year as the wrong balance in the garden can encourage weeds and damage grass. If in doubt, seek specific advice from a local garden centre to ensure healthy grass growth. Once the grass is thick and dense, not only does it create a healthy lush foundation for the outside space but it is also more difficult for weeds to survive. When mowing, don’t cut the grass too short as this can weaken the turf and allow sunlight to weeds, which will help them to grow. Don’t forget this is also the time to check all reticulation points are working correctly and not buried under bushes. With the maintenance issues sorted out, it’s time to have a think about bringing some new design and decoration ideas to the outside space. A new colour palette for cushions,

Summer is here and now is the perfect time for readying our outside areas for the warm months ahead. In the south west of WA, we are blessed with the perfect weather for spending long days and evenings outside so some hard work now at the start of the season will definitely pay dividends later. We all have to start somewhere so let’s begin with the maintenance issues. Then we can move onto the more fun part – a revamp of our outdoor settings and furniture! Start off by ensuring the outside of the house and any nooks and crannies are free from cobwebs, and that the windows are sparkling clean. Why not get in a window cleaner if washing down all the glass feels too overwhelming! If pavers have not been regularly maintained during winter and stains from algae or other plant debris exist, try using a mild detergent, diluted in water, to remove them. Use a stiff brush and the discolouration should lift. Remember, diluted bleach in water or a jet wash should only be used after checking with the paving stone manufacturers in case these treatments are too harsh for specific pavers. For decking, early summer is the key time to

Discover ... Rustic French Living

Located in a beautiful old Methodist church in the picturesque town of Boyanup, Rustic French Living specialises in French-inspired furniture, antiques, collectables, homewares, clothing and gifts. Originally opened in August 2011, the idea for the store came about through previous owner Jo McIntosh’s love of the French provincial look combined with her already successful interior design business. Now three years on, the store has recently been taken over by Mari Geerlings, who moved to Western Australia from South Africa earlier this year. A former antique dealer and shop owner in Krugersdorp, near Johannesburg, of over 18 years, Mari will continue to work closely with Jo, sourcing products from France and running the popular range of evening classes. In store, find an extensive range of Frenchinspired homewares, a selection of antique furniture, recycled furniture in the French provincial style, clothing, traditional bed linen,

quilts, cushions, linen tablecloths, runners and curtains. There’s also new and recycled ladies’ fashion, jewellery, handmade cards, gifts for babies, and fabulous Christmas decorations. With Lee York

Welcome to a buoyant Dunsborough! According to reiwa.com, the median land price in Dunsborough has jumped a whopping 26.1% in the past 12 months and the median house price has risen 13.8% for the same period! Other suburbs have also shown strong growth with Quindalup, for example, showing median land prices up 10.4% and median house prices up 16.9% for the year to date. Closer analysis of our market shows, however, that it’s a lift in sales activity at the upper end of the market that is mostly responsible for the increase in the average sale price as opposed to an overall increase in capital growth rates of specific property types. This is not to say that we haven’t experienced capital growth, although our company’s sales results would reflect a more modest growth rate of around 10% when each sale is analysed on its individual merit. This is certainly a higher than expected growth rate and, considering we are now entering the busier summer period with the lowest number of properties being offered for sale since 2007, it would suggest that the residential market has well and truly turned the tide. We would expect to see this trend continue over the next 6 months resulting in a scarcity of property available especially in the premium locations by the end of the summer. The rental market continues to show strong growth with our company’s vacancy rate remaining steady throughout the year at less than 2% for properties in town. We are currently achieving between $450 and $575 per week for 3 and 4 bedroom, 2 bathroom homes in the estates and have demand from tenants looking for premium properties between $650 and $900 per week. With over 30% of properties in the region not permanently occupied and many of the available rental homes only being offered as holiday accommodation, we are consistently experiencing a shortage of properties available for long term rental and therefore would expect to see rental values continuing to lift as the population continues to grow. Lee York is a Director of JHY Realty, Dunsborough, and can be contacted on 0438 867737 or in the office on 9759 1300. Winner of the 2014 South West HIA Innovation in Housing Project of the Year, this magnificent home was designed by Dane Richardson from Dane Design Australia and built by Tallwood Constructions. Featuring a huge cantilevered balcony and concrete roof, cedar bi-fold shutters, lift, glass walled cellar room and high quality cabinetry and tiling together with an exceptional level of detail and finish, this home is cutting edge innovation. So clever is the design that it leaves the casual observer wondering exactly how the cantilevered balcony and roof have been achieved. Located on the shores of Geographe Bay in Dunsborough, the home is complemented by a concrete plunge pool, boat storage and fish cleaning station. Externally, the bold elements are sharp with textured coated render and rough-sawn cedar battens. Highlights internally include the floating timber stairs wrapped around the central lift, which leads to the cellar room. Your attention is then immediately drawn to the feature fireplace in the living area, which leads the eye to the meals area and the turquoise waters of Geographe Bay beyond. Upstairs, the first floor balcony has roughsawn, cedar bi-fold shutters, allowing for a superb outsideinside living room. Building Design By Dane Richardson

Materials

Form and function. We hear it all the time but I don’t want to discuss either of these (very) important aspects of architecture and building design, well, not in detail now, anyway. When I look at a building, it’s the form that’s the first thing to catch my eye, close behind this (and really in conjunction with the form), I see the material selection and composition. I have no idea of the planning, if it was in budget, met the owner’s expectations or is highly efficient. My drive-by critique is based solely on the form and materials. These two elements set up the “love it” or “I’m not sure” reaction. When talking about materials, in my opinion, it’s all about junctions, where one element connects to another. Decisions on where and why to change a material are critical to the success of the project. Materials do not need to be high cost; they can be the most typicallyused, cost effective materials but when used 36

creatively, with restraint and with highly resolved junctions, the whole project will benefit. Within this article are a few images of some of my work. Decisions made to arrive at the materials you see and the detail of the junction between each are very deliberate. It takes time and a whole lot of “what if this” and “what if that!” Selecting materials with differing textures is a good start. Glass is smooth and shiny, timber warm and rough, Colorbond is highly textured but smooth, and render, stone, paint etc. all have very different qualities when considering just the material for aesthetics. Layer the performance and cost factors and you will soon see that material selection is complex and well worth the time spent considering the options. Most importantly, spend time resolving where the junctions between differing materials occur. Differing materials do not connect well in the same plane. Subtle changes in facade alignment, internal corners or deliberate

breaks, such as recesses or projections, are great places to design in a change of material when necessary. Think about the balance and always use restraint. Too many “good” materials will not be good at all. Too little and it may look like the

budget ran out. Select materials that can be afforded within the scope of the project on all elevations and use a maximum of, say, three main external materials. Two is great but it will be a challenge to achieve a winning look. ... cont. pg 38 37

Choose to exaggerate and express the form of the building by the material selection, or choose to minimise and reduce its form by using only one material; very challenging but a wonderful result. The options are unlimited just bear in mind that the choice of material will dramatically impact on the success of a project.

Pay Off Your Mortgage Sooner Five simple and practical tips

We would all like the financial freedom of being mortgage free. Well, put a few prudent measures into place and before you know it you could be shaving years off the term of your loan. 1. Deposit your income into your home loan account and save on interest payments Reduce the interest you pay on your home loan by depositing all of your income into your home loan account. Automatic transfers can then be arranged to pay bills and access regular cash deposits.

2. Bundle all your financial services and products together Some banks will provide customers with discounts or fee waivers if they do all of their banking at the one bank. Does your bank offer

property & ďŹ nance you this? If not, do your research and shop around. Also, when taking out a new home loan, look for special offers, such as no application fees, as this can save hundreds of dollars off the application process. 3. Make the most of an offset account Look for offset accounts where home loans are free of monthly fees and linked to your home loan. Every dollar in your mortgage offset account reduces your daily interest charges on your home loan. 4. Make extra lump sum repayments Consider saving loose change and cutting down on particular weekly expenses. Why not prepare your own lunch instead of buying it?

Paying as little as $25 extra a week towards your mortgage repayments can reduce the average $300,000 home loan over 30 years by around 5 years! (Make sure your home loan product allows you to do this without incurring additional fees). 5. Watch your fees as redraw and account keeping fees will add extra to your loan repayment Some home loan products charge no account keeping fees for the life of the loan. Make sure you do your research before choosing the right loan. It is important to consider which features will be important to you, including redrawing funds, switching loans or having the flexibility of a repayment holiday, for example. The above article should not be taken as investment advice. The Busselton-Dunsborough Life recommends readers seek the services of a qualified financial adviser before putting any of the above ideas into practice.

business you are offering and the dynamics of the market as well as the business’s key differentiators, such as service levels and competitive advantage. 2. Revise prices regularly to reflect market changes. Businesses that are inflexible to changing industry conditions and market forces feel the impact first. Identify the key indicators that influence your profit margin, including direct costs, such as fuel, wages, maintenance and subcontractors. Regularly monitor these to ensure that the prices charged maintain profit margins. When costs change, communicate these openly and build support for price increases. The more customers understand these cost pressures, the less shocked they will be by price changes, particularly when current service quality levels are expected to be maintained. 3. Keep other marketing elements current and up to date. Your reputation, image and branding should send a strong signal that reinforces your price. If the company image reflects high quality, customers will expect to pay more. 4. Vary prices for different market segments. Some segments will place a higher value on your service than others. Their perception of value will be determined by the need for convenience, what the service actually means to them and how important it is to meeting their needs. Where the perception of value is high, look at charging higher prices. Also, be aware of “over servicing”, particularly where customers are not prepared to pay for additional things that they don’t want.

Pricing Strategies For Business

How to combat rising costs

Many businesses are currently struggling with rising costs, particularly with fuel and electricity. These challenges are making it harder for businesses to compete. Having an effective pricing strategy can be the difference between stable profits and a business in decline. Cost increases can only be recovered if a pricing strategy is flexible, regularly reviewed and can be adjusted quickly. Reviewing prices regularly reduces the need to make excessive price increases, which can damage customer relationships. It’s all about communication and managing expectations. A pricing review doesn’t just mean increasing prices. Additional costs can sometimes be absorbed by bundling the offering differently or introducing new charges for certain transactions. No matter what pricing strategy a business adopts, remaining transparent and communicating with customers about the need for price changes is critical. Here are four pricing strategies to help improve profitability:1. Know your costs but associate prices with added value. A “cost plus margin” pricing model gives less room to adjust prices in a competitive market. However, a stronger perception of value in a customer’s mind gives greater potential for increasing prices. Understand the value of what

Mercedes-Benz C-Class Top-selling sedan now bigger and better!

Any new car launch from Mercedes-Benz is going to be a significant event but when it’s the German luxury car maker’s core product in

the Australian market, expect quite a fanfare. Let’s put this into perspective. The outgoing C-Class is not only the nation’s biggest selling

Colin Shaikh 46

motoring prestige sedan, it actually even outsells many of its cheaper rivals from Ford, Subaru and Honda, amongst others. Currently, it accounts for almost one quarter of all Mercedes-Benz sales downunder, having ruled the roost in the mid-size luxury sedan market ever since its launch over 7 years ago. Pretty impressive stats! So with quite an act to follow, what can we expect from the all new C-Class? Well, to start with, it is considerably bigger. With the wheelbase extended by 80mm, not only is there a great deal more internal space for passengers, externally the car is now almost as big as the E-Class from 2 generations ago. This extra length has created a look and feel that oozes elegance and style and its sweeping lines and sculptured side panels offer more than just a nod and a wink to the top of the range S-Class – a car, incidentally, that was designed in the same Mercedes-Benz studio. Along with sharing some of its looks with the flagship S-Class, the new C-Class also features much of its technology. All models now include LED headlights, electric front seats, satnav, parallel and reverse parking assistance and blind spot assist. Premium models add extra software, 19-inch wheels, adaptive cruise control, active lane assist and full leather. With nine airbags as standard and an array of cameras, including rear view and overhead view, the car also has a lane departure warning system and the very latest early crash avoidance technology, including a fatigue-detection system to monitor steering behaviour. Perhaps the most significant development on the new C-class is its new aluminium body and lightweight suspension system. With the roof, doors, bonnet, boot and fenders all made from aluminium, a weight reduction of around 100kg has been achieved. This has led to both improved performance and fuel economy with the entry level C200 now consuming an impressive 6.0L of fuel per 100km. With all models now fitted with 4-cyclinder engines, the turbo-powered 2.0 litre C200 kicks off the range, delivering135kW of power and 300Nm of torque. Next up and priced at just over $60K plus on road costs is the C200 BlueTec diesel with the sportier C250 at around $70K plus on road costs. The current range-topping model the C300 BlueTec dieselelectric hybrid is another first for the range with its 20kW/260Nm electric motor allowing the car to move from 0-25km/h smoothly and silently. With prices almost identical to the outgoing model, improved performance, better fuel economy and upgraded features, notwithstanding its stunning new visual appeal, expect the all new C-Class to continue its dominance of this market sector for some time yet. For further information on the all-new Mercedes Benz C-Class, contact Mercedes-Benz Bunbury on 9721 8199.

BMW 2 Series Active Tourer

Transport the family in style!

As BMW’s first ever front-wheel drive vehicle, the 2 Series Active Tourer represents a significant shift in focus for the Bavarian luxury car brand. However, with the Multi-Purpose Vehicle (MPV) market big business these days, there’s been a certain inevitability about BMW’s foray into the premium compact class for some time. As the new kid on the block, the 2 Series Active Tourer has certainly set the bar high. Offering plenty of comfort and luxurious touches inside the cabin, the new model retains a stylish, sporty edge with its wellproportioned, sleek lines on the outside. Combining its long wheelbase with a raised roofline, passengers can enjoy an unprecedented feel of spaciousness together with the commanding views that a higher seating position offers. Versatile luggage compartments, a sliding rear seat and its split-folding rear backrest further enhance the vehicle’s practicality. Safety levels also impress with BMW ConnectedDrive providing a range of assistance systems to include, amongst others, Traffic Jam Assistant, a feature aimed at making freeway driving less stressful. In addition to the sophisticated, all-new front-wheel drive system, the 2 Series Active Tourer also introduces a new generation of

powerful, light and fuel-efficient engines in both three and four-cylinder options. Delivering exceptional efficiency, the brand new three-cylinder petrol engine, fitted to the entry level 218i Active Tourer, generates 100kW and 136hp whilst still achieving a combined consumption of 4.9L per 100kms. The 218d Active Tourer, however, does even better with its four-cylinder diesel engine achieving a combined cycle consumption of 4.1L per 100kms. All this while still producing 330Nm of power, a top speed of 208 km/h and a dash from standstill to 100 km/h in just 8.9 seconds! Top of the bill in this class is the 225i Active Tourer. Fitted with a standard eightspeed Steptronic gearbox and four-cylinder petrol powerplant, it powers from 0-100km/h in around 6.5 seconds, achieves a top speed of 240km/h and consumes a miserly 5.8L per 100km/h on a combined cycle. As the first of potentially a number of frontwheel drive cars from BMW, the 2 Series Active Tourer offers a compelling choice for the new breed of upwardly mobile families. Keep an eye out for further additions to the line-up. BMW X6

Exciting second generation SAV revealed!

It’s not often a car can lay claim to creating a completely new genre. But back in 2009, that’s exactly what the BMW X6 achieved. With its unique blend of the robustness and versatility of an SUV and the sporting elegance of a coupé, the Sports Activity Coupé (SAV) was born and not unsurprisingly other luxury car manufacturers were quick to follow in its wake. Five years on and with global sales of over 250,000, BMW has further strengthened its grip on the lucrative SAV market with the launch of the second generation X6. Delivering improved handling and ride comfort, enhanced performance, lower fuel consumption and featuring permanently active all-wheel drive, the new X6 also comes with an impressive array of extra equipment over and above the previous model. This includes bi-xenon headlights, 19-inch alloy wheels, an 8-speed Steptronic sports transmission with steering wheel shift paddles, leather trim, two-zone climate control, auto-dimming rear-view mirror and the Driving Assistant safety package from BMW ConnectedDrive. A new line-up of engines features the latest-generation V8 developing 330kW and 450hp for the X6 xDrive50i, a 190kW, 258hp six-cylinder diesel engine for the X6 xDrive30d

and another straight-six diesel with three turbochargers developing 280kW and 381hp in the X6 M50d. Using the latest BMW TwinPower Turbo technology, extensive BMW EfficientDyanamics technology and enhanced aerodynamics and weight saving techniques, fuel consumption has been cut on average by an extraordinary 22 per cent. Underpinned by a newly developed aluminium intensive chassis and featuring an improved adaptive suspension package, the new X6 delivers added agility and improved response. With three packages to choose from, Comfort, Dynamic and Professional, all featuring adaptive damping control, the new model also comes with the new electromechanical steering system as standard. Longer and slightly higher than the first generation X6 (34mm and 12mm respectively), and with a more sculpted and aggressive look than its predecessor, there is still no mistaking its undeniable appeal and luxurious feel. Its continued popularity seems already assured. For further information and pricing on the new BMW X6, contact Auto Classic in Victoria Park on 9311 7533, or Westcoast BMW in Wangara on 9303 5888.

Extended Warranties Are they worth the paper they are written on?

For most people, apart from buying a house, purchasing a car is one of the biggest financial decisions they are ever likely to make. It’s understandable, therefore, that buyers would see the benefit in protecting themselves against unforseen repairs and bills through purchasing additional cover. Typically a warranty that kicks in after the manufacturer’s warranty has expired, extended warranties are big business for car dealerships. They are also likely to be one of a number of products (along with paint protection plans and anti-theft devices) that the dealership will push at the time of purchase. So, if you are thinking of taking the plunge and purchasing one of these products, it’s worth asking yourself a few important questions before you do. How long do you intend keeping the car? If you plan to keep your brand new car no more than 3 to 4 years, chances are the car will still be under the manufacturer’s warranty when you come to sell it. In this case, it is not usual to fork out for extra cover. Who is the warranty with? Manufacturer-backed warranties are much more likely to be reliable policies. Most of these can be used at dealerships across the country whereas so-called third-party warranties (non-manufacturer-backed warranties) may only be useable at the actual dealership that sold it. Have you read the fine print? An extended warranty is not always the cure-all solution promised. Extended thirdparty warranties can often be backed by

companies with somewhat questionable reputations that will try and squirm out of paying for anything. Often, the fine print of the warranty will reveal that only a very basic level of cover exists and parts may not even be replaced with like for like new parts. Have you shopped around for the best price? The chances are that the dealer selling the car will not be obtaining the best possible price or policy for your needs. Avoid signing up on the spot and check with other dealers who might be more willing to negotiate or at least offer a choice of products. Check your own repair history and the history of the model purchased Think about typical problems you have encountered in the past and how much they cost to fix. Have you had cars in the past that have encountered problems that are covered by the warranty? Plus, is the model of car you are buying prone to having specific mechanical issues? If the answer is no to both of the above, you may be wasting your money. Cars today are more reliable and less likely to break down. Ask yourself the last time you drove a car that had a major mechanical issue. Peace of mind is appealing to all but why pay for something you don’t really need? Instead, why not put away half the cost of the warranty into a savings account and draw on that if required. Remember, extended warranties are not big business with car dealerships for nothing! Do you own research but the money is probably much better off in your pocket! 50

in Busselton’s settlement history. The earliest sandstone buildings date from the 1860s. A new courtroom was added in 1897. It’s a fine and rare example of colonial arts and crafts architecture. The old gaol cells are a stark reminder of less gentile times. The site functioned as a judiciary until the 1970s. Today it’s used as a retail outlet for South West arts and crafts and offers heritage tours.

Book Reviews Modern Tropical Garden Design Made Wijaya Page after page, Made Wijaya’s Modern Tropical Garden Design presents a collection of stunning images as well as a detailed documentation of the work and philosophies of the best modern tropical landscape designers over the past century. A prolific designer of gardens and houses in the tropical world, Wijaya has also written several books to showcase his work. This time, however, he has chosen to take readers on a specific journey to share his appreciation of how modernism has impacted on landscaping in the tropical world. Dipping into Modern Tropical Garden Design is an informative and personal experience. Wijaya describes not only how the gardens were constructed but also their effect on the senses and the ambience that they create. It is certainly a beautiful book and full of information. It is also highly likely that Modern Tropical Garden Design will, as intended by Wijaya, inspire people around the world to use nature in conjunction with architecture in their own garden designs.

The Enchanted Wood Enid Blyton First published in 1939, The Enchanted Wood still enthrals children the world over with its magical tales and adventures. This modern day edition has been delicately revised in places (without compromising its wonderful nostalgic appeal) so that the fantasy story can resonate even more with its young readership. The author is, of course, Enid Blyton, whose remarkable popularity as a story-teller continues to grow today well after her very first book was published over 90 years ago. Blyton was an incredibly prolific author extremely adept at tuning into the escapades, thrills and wonders that fascinate children. The Enchanted Wood is the first in a three book series that centres on the ‘faraway tree’. Hidden deep in the Enchanted Wood, this enormous tree is home to many mystical creatures and, at its very top, leads the way to different magical lands through a hole in the clouds. A brother and his two sisters happen across the tree and enjoy many adventures throughout the book. This is storytelling at its best and proves that Blyton’s writing still stands the test of time. Readers of The Enchanted Wood are bound to be hooked and will be keen to not only finish the trilogy but to discover more Enid Blyton stories too. The above books were supplied by Barefoot Books, Busselton’s leading independent bookshop. Visit the store at Shop 23, Fig Tree Lane, Busselton, or call 9751 3905. 57

education & training

The Reading Race By Louise Clark Welcome to my new, regular column for The Busselton-Dunsborough Life. For me, going to primary school was all about having fun and playing with my friends. I don’t remember any pressure to read better than my peers and wasn’t bothered by who was reading which level of books. It’s a different story today. As a former primary and secondary school teacher, and now that I have my own young children, I have seen that from very early on in their school life, children can feel quite inadequate with their reading ability if they are not progressing at the same speed at their peers. This feeling of underachieving is, of course, completely unfounded. We all know that, unless there really is a problem that demands help and support, all children will learn to read in their own time, eventually. Unfortunately, though, due to these pressures, some children start to ‘place’ themselves in the class and label themselves as slow if they don’t ‘get’ reading as quickly as others. This can cause frustration and issues with confidence in areas of their personal and school life as well as lowering their own general expectations. So why is this happening? My belief is that it is partly because our education system is more transparent. This is, obviously, a good thing as we want to know exactly what is being taught to our children, when it is being taught, and

how it is being delivered and assessed. Our children also know what they are expected to achieve and this is vital to help them take more ownership of, and have more independence in, their learning. However, now that we are all armed with this information, it is not only us who expect our children to go through school proficiently, achieving all the necessary knowledge, skills and understanding, and thereby ticking off all the boxes in the correct order. Our children expect this too. We need to take the pressure off ourselves and our children and let them know that learning to read is not a race. Let’s focus instead on the enjoyment of reading to and with our children. Whoever learns to read first is not necessarily the cleverest or most able child. While one child may have succeeded in reading their first chapter book, another may have used spectacular spatial awareness in their construction work, managed to count back in 5’s from 100 or displayed amazing social skills by making up new games to play at recess. Let’s remind ourselves and remind our children that we are all different, and we all find our own successes in our own way, in the end. Louise Clark has studied and taught across all age groups in the British and Australian schooling and college systems. 60

A Visit to Yallingup Lodge Spa Retreat

By Belinda Morrissy

Spending the night at a spa retreat is all about being able to relax. It’s a chance to recharge the batteries and to escape the stresses and strains of everyday life. As I entered the guest lounge at Yallingup Lodge Spa Retreat, I immediately felt relaxed. In fact, so relaxed I thought I’d never want to leave! With its plush furniture, interesting artworks, scented burning candles and collection of musical instruments, the inviting room also included an assortment of books, CDs and even a vinyl collection. Yes, there was even a record player! My second thought was that I had to come back and visit during the winter to sit by the roaring fire. It’s not often you get accommodation offering an open fire place and a swimming pool. Escorted to our room by the owner of the lodge, Jenny, our suite was located closest to the guest lounge. We were lucky enough to be staying in the Verdelho King Treetop suite, one of 5 rooms in total, all named after wines. Each has its own private outside spa, mini bar and use of the facilities. Some also have a hammock. I was certainly impressed with the attention to detail in all rooms. The bathrooms at Yallingup Lodge are opulent and spacious and come complete with high quality fixtures. There are thick towels, a flat screen TV with DVD player, candles and the softest robes I have ever worn away from home. Plus, good quality wine and

champagne glasses; a must in my opinion. Jenny and Retreat Manager Stacey were also more than happy to help out with any special requests, offering advice of where to visit and dine, even offering to make reservations on our behalf. After a tour of the grounds, I ducked into OM Day Spa for an OM signature massage and facial. This unique spa is a traditional Ayurvedic spa offering Indian therapies and Ayurvedic retreats. Experiencing organic, herbal OmVeda products for a blissful 90 minutes, I literally floated out of the day spa, located poolside, and back to our room to relax further on our private balcony overlooking the treetops. Offering a full quota of treatments for couples and groups, the spa also runs 5 day wellness retreats several times a year with cooking classes, meditation and yoga included. Waking at our leisure the following morning, we browsed the self-serve options for breakfast and opted for ham and cheese croissants with orange juice and coffee. It was lovely having the place to ourselves, a definite advantage of a midweek getaway, but even when the rooms are full I suspect we would have felt just as relaxed, such is the way the lodge is set up. And what a location! Just a few minutes’ drive from Dunsborough and Yallingup and close to some of the world’s finest wineries and best surf spots. 61

Meet ...

Jeanette Elliott

A dermal clinician originally from Perth, Jeanette has recently set up her own local practice at the Greater Bunbury Medical Centre.

How long have you been practising as a dermal clinician and what brought you to Bunbury? I began studying cosmetic dermal science in 2008 and have practised in the area of aesthetics and advanced skin therapies for more than 10 years. Realising that my passion was in corrective skin treatments and evidence based practice, this led me to pursue further studies and gain formal qualifications in the field of dermal therapies at the Australasian Academy of Cosmetic Dermal Science (AACDS). We moved to Bunbury in 2010, seeking a ‘tree change’ from city life and haven’t looked back since! Which skin conditions do you primarily treat? I specialise in the management of both healthy and damaged skin conditions to promote optimal function. Using a holistic approach, I prescribe topical therapies as well as therapeutic interventions and clinical treatments. This also involves conducting a thorough consultation taking into account medical conditions, diet and lifestyle factors as well as a detailed skin assessment. Typical skin conditions treated include acne, normal and premature ageing, sun damage, pigment disorders, scar management and excessive hair growth. How many treatments are typically required to achieve permanent hair reduction? The number of treatments generally required very much depends on the area being treated, the skill of the practitioner and other factors, such as age, skin type and hair colour. Ultimately, it is patient safety and the long term efficiency of the treatment that is most important. Are there any particular conditions that are more prevalent in the south west of WA? In short, the south west is no different to anywhere else in Australia. Our outdoor lifestyle

with its abundance of sun together with other environmental factors can be extremely harsh on our skin. Damage affects skin at the most basic level – in the skin cells. This is where the skin revision journey must begin to help improve skin conditions and fight premature ageing.

Describe how technology and treatments have improved in this field. Techniques and equipment have improved dramatically but unfortunately not all practitioners are fully qualified to undertake treatments in a safe and effective manner. Dermal therapy emerged over a decade ago out of the skin therapy industry through the increasing popularity of non-surgical cosmetic treatments. Its rapid growth increased the demand for formally trained dermal clinicians and led to the development of formal higher education in the area of dermal science. A dermal therapist is quite different to a beauty therapist or paramedical aesthetician as they specialise specifically in the field of dermal therapy. In an effort to maintain standards, integrity and education, I have become actively involved in the dermal therapy professional community via my role as a tutor, trainer and student assessor within the AACDS. How do you manage to relax away from your clinic? My husband and I live on one and half acres of land in Donnybrook. We have a beautiful home and vast gardens that I thoroughly enjoy and it is this peaceful and loving environment where I can truly relax and wind down. 64

Life’s Health Tips A Pinch of Salt!

The World Health Organisation advises populations to reduce their salt intake to less then 5g per adult per day. In Australia, surveys indicate consumption is generally double this. Salt is also known as sodium chloride but labels often list sodium, which is not the same. To calculate salt content, multiply the sodium figure by 2.5. Therefore, a food with a sodium content of 1.2g contains about 3g of salt. To tell if food is high in salt, look at the figure per 100g. High is more than 1.5 g per 100g, low is 0.3g per 100g. Salt is an ingredient found in a lot of food, particularly processed and pre-packaged meals, cured and smoked meats, biscuits, pizza, breakfast cereals and ready-made sandwiches. Reduce your intake by removing your salt cellar and instead season food with a variety of herbs and spices, pepper, mustard powder and chillies. Use lime and lemon juice

for marinades and add wine to casseroles and risottos. Your taste buds and blood pressure will thank you!

Whales and Dolphins

Coping with a stranded animal By Dr Paul Repton, GEOvet

The south west is a fantastic location to experience the majesty of whales and dolphins in their natural habitat. Twice a year, thousands of these animals traverse the WA coastline on their journeys to and from tropical breeding grounds and the cooler feeding grounds of the Antarctic waters. The most commonly seen whales are humpback and southern right whales. Both of these species belong to the group of baleen whales, which, rather than preying on live animals, sieve huge numbers of planktonic organisms from the sea water using the strands of baleen in their mouths. Both humpback and southern right whales are extremely large animals, growing up to 18 to 19 metres and weighing between 40 tonnes (humpback) and 80 tonnes (southern right). Unfortunately, some of these animals get into difficulties during the journey and end up stranded on our beaches. Occasionally, this will happen to large numbers of animals, such as pilot whales, and will result in a mass stranding. If this occurs, it is important to know what you should and should not do. Most singular stranded animals are already sick and severely debilitated. Therefore, it’s important to act quickly and appropriately to assess them and treat them, if required. Despite their beautiful appearance, dolphins and whales are wild animals and not accustomed to the presence of people or other animals, such as dogs. Therefore, being in close proximity to a stranded whale can make them significantly more distressed than they already are.

Unfortunately, once large whales are stranded it is difficult to return them to the sea. Often these animals will require humane euthanasia. All stranded animals are assessed by a veterinarian, in conjunction with DAWFA’s wildlife officers, to determine their health status and prognosis. Smaller whales, such as long-finned pilot whales and minke whales along with dolphins, may be more readily returned to the ocean or transported to alternative facilities for temporary medical care. Remember: the most important thing to do when faced with a stranded or distressed animal is to ensure the safety of you, others, and the animal itself. For help or advice in the event of witnessing a stranded animal, call DEC’s Wildcare helpline on 9474 9055 or GEOvet Veterinary Clinic on 9754 4422. GEOvet operate 3 practices in Busselton, Nannup and Capel as well as a 24 hour emergency service. For further information, go online at www.geovet.com.au

My Favourite Dish By Alfonso Puzzarini, Shaana Café

Wrap Piadina An Italian speciality from the Emilia-Romagna region, Piadina is an unleavened flat bread that dates back over 3,000 years to Roman times. Today, it is still an important part of the Italian lifestyle and is one of the main foods eaten in Italy. Although relatively new to Australia, this traditional bread is already extremely popular in other parts of the world and in New York there’s even a special Piadina restaurant on 5th Avenue. Classic Piadina is rolled out thinly, placed onto a Terracotta plate and cooked on burning embers. The result is a large, circular disk, speckled brown by the heat and with a delicate flavour. It is widely regarded as a healthy and natural food choice as its recipe contains basic simple ingredients. No yeast, sugar, dairy products, animal fats or preservatives are added, making it an ideal

dish for many. Perfect either hot or cold, it is a delicious meal either on its own or stuffed with meat, cheese or vegetables. It also makes a great pizza base or dipping bread. At Shaana Café, we offer 3 different versions of the dish. La Piadina Al Prosciutto is a tasty combination of Parma prosciutto, Swiss cheese, rocket, sundried tomatoes, basil and pesto. Or try our amazing glutenfree option, La Piadina La Porchetta, with its wonderful mix of traditional Roman pork belly kebab, rocket, cherry tomatoes and balsamic vinegar. Finally, you can try our vegetarian option, La Piadina Vegetariana, featuring hummus, fresh baby spinach, grilled zucchini, grilled capsicum and feta. As we say in Italian, “Provare per credere!” Try it to believe it! The above dishes are available at Shaana Café, Unit 2, 6 Dawson Drive, Yallingup. Call 9756 6999 for further information. 70

My Favourite Dish

By Kel Rabbit, Raw Cake Chef, Samudra

Banana and Blueberry Cheesecake Raw cakes showcase their ingredients so well, providing intense and fresh, healthy flavours. The natural foods that go into raw desserts also feed the body with nutrients, giving plenty of health benefits, not just empty calories. They are also satisfyingly rich thereby making it harder to overindulge. I especially love using fresh seasonal fruits in cakes. The main ingredients in this layer cake are cashews, coconut oil, natural sweeteners, bananas and blueberries. Cashew nuts provide essential fats, protein, vitamins and minerals and are especially rich in vitamin B. Coconut oil is great for giving fast, even energy from its medium chain triglycerides. It also has the benefit of speeding up the metabolism as well as giving the body essential fats that are necessary for healthy hair, healthy skin, brain function and mood. The two fruits, bananas and blueberries, Ingredients are some of my favourites. Bananas, of course, provide energy For the base: as well as potassium for vital heart and muscle function in addition to helping keep the body alkaline. They also taste so 1 cup raw or activated cashews delicious. Blueberries are full of antioxidants and boost the 1 cup raw or activated almonds immune system and general vitality. ½ tsp vanilla paste

½ tsp salt 1 tbsp agave nectar, rice syrup or maple syrup 2 tbsp coconut oil, melted Banana layer: 2 cups raw cashews, soaked at least 2 hours, rinsed and drained 4 ripe bananas ½ cup maple syrup 1 tsp vanilla paste 1 cup almond milk 125g cacao butter, melted Blueberry layer: 2 cups raw cashews, soaked at least 2 hours, rinsed and drained 1 cup blueberries 1 cup agave nectar 1 tsp vanilla paste 1 cup almond milk 250g coconut oil, melted

Raw desserts are incredibly fast and simple to make. They can be stored frozen for up to three months or in the fridge for a few days. But good luck being able to wait that long to devour them!

Method Line a 25cm spring form cake tin with non-stick paper around the base and edges. In a food processor, blend the cashews, almonds, salt and vanilla. Add the sweetener and coconut oil and continue to process until the mixtures comes together. Press this into the cake tin base and freeze it. For the banana layer, blend the cashews, bananas, vanilla, almond milk and maple syrup in a blender until smooth. Add the cacao butter and blend again until it’s very smooth and creamy. Pour a layer into the cake tin and freeze until solid. To make the blueberry layer, use the same method of blending the cashews, vanilla, agave and almond milk until smooth. Then add the coconut oil and blend again. Pour a layer over the frozen banana mixture. Freeze the cake again until solid. Repeat this process with the remaining banana and blueberry mixtures, making sure each layer is completely frozen in between. Once set, allow the cake to defrost to room temperature, decorate and serve. 72

Chilli, Pumpkin and Feta Risotto

The tangy feta cheese in this risotto is deliciously creamy and works perfectly with the mellow pumpkin and subtle kick of the chilli. This is a very simple dish to prepare and you can concentrate on getting the rice just right while the pumpkin is slowly roasting in the oven. Serves 4

Ingredients 900g pumpkin, peeled, cut into small cubes 4 tbsp olive oil 1 red chilli, deseeded and finely chopped 1 onion, finely chopped 2 small cloves garlic, finely chopped 300g Arborio rice 1 tsp dried oregano 100ml white wine 1 litre hot vegetable stock pine nuts salt and freshly ground black pepper

Method Preheat the oven to 200째C (180째C fan-forced). Place the pumpkin on a large baking paperlined oven tray. Add 2 tablespoons of oil, the chilli and a little salt and pepper and mix well with the pumpkin. Roast for 20 to 25 minutes until the pumpkin is

tender and starting to brown. Remove and keep the pumpkin warm. While the pumpkin is cooking, fry the onion gently in a little oil until it softens. Add the garlic, rice and oregano and stir well to ensure the rice is coated with the oil mixture. Add the wine, simmer and let it evaporate. Add the stock. Just add a ladle or two at a time, allowing it to be absorbed by the rice before adding more. Stir gently and frequently for 15 to 20 minutes until all the stock has been absorbed or until the rice is cooked yet still firm to the bite. Meanwhile, toast the pine nuts in a dry frying pan, stirring them around every few seconds until they start to colour. This should only take a minute or two. When the rice is al dente, remove the pan from the heat and gently stir in the pumpkin and feta cheese. Sprinkle the toasted pine nuts over the top. Delicious!

Feature Winery Whicher Ridge

Located on the north facing slopes of the Whicher Range, a 20km drive south of Busselton, Chapman Hill-based Whicher Ridge Wines is fast making quite a name for itself. Owned and operated by Neil and Cathy Howard, the winery, a producer of small quantities of single variety, single vineyard, single region wines, was recently named as one of Australia’s Ten Dark Horse wineries in the prestigious 2015 James Halliday Wine Companion. In addition to this, it also received a 5 star rating from Halliday. Owners Neil and Cathy Howard were understandably delighted with the accolade. “It’s such a wonderful opportunity to have our winery highlighted in the Companion. We received the exciting news after being phoned by a winemaker friend who called to congratulate us, it was a total surprise,” said Cathy. James Halliday commented, “The quality (and value) of the wines produced by the husband and wife team of viticulturist Neil and winemaker Cathy Howard is quite exceptional. When you factor in their collective 40 plus years’ experience, their 7ha estate vineyards, and the purchase of high quality grapes from Frankland River, it begins to make sense.” Utilising grapes from three wine regions; Margaret River, Geographe and Frankland River, a trip to Whicher Ridge according to Cathy, “will take you on a journey of discovery of these three Western Australian wine regions. We use hands-on, traditional winemaking techniques, which at times can be quite physically exhausting, such as basket pressing our reds when lots of shovelling is involved! Our Riesling is a dry, textured style fermented cool in tank with a small percentage of light

lees whereas our Sauvignon Blanc is a departure in style from what has become the norm in Australia and New Zealand. It is partial barrel fermented and aged on lees for 12 months. Our Chardonnay is barrel fermented and also aged on lees for 12 months with regular bâttonage and our Shiraz and Cabernet Sauvignon are worked in small open fermenters and basket pressed before going into oak barrels for 2 years.” Exciting news at Whicher Ridge is the opening of the new Wine Sensory Garden to complement the farm-style cellar door. Open between Thursday and Monday, the garden layout and design nurtures a strong link between food and wine by relating the aromas and flavours of various fruits, herbs and vegetables back to similar or complementary aromas and flavours in a particular wine variety. The cellar door also includes a selection of gourmet farmhouse pantry products available for purchase, including dried spice blends, olives, infused olive oils, dressings and sauces. Located at 200, Chapman Hill East Road, Chapman Hill, Whicher Ridge Cellar Door and Wine Sensory Garden is open 5 days a week, from Thursday to Monday, from 10am to 5pm.
