Boarding at Aquinas. 6 years that will be treasured for life. Boarding is the experience of a lifetime – a chance to learn the values of sharing and respect, and develop lifelong friendships. To help boys (and parents) settle in, a strong sense of family and mutual support is fostered in every aspect of residential life at Aquinas. New boys are given a mentor – an older student they can turn to for advice. Each of the three boarding houses has a House Mother and live-in House Master, also looking out for the boys’ wellbeing.

A Liberating Education within an Inclusive Community are two of the key touchstones of a Catholic education in the Edmund Rice tradition. They’re on display everyday in our boarding houses. To learn more call 9450 0600 or visit aquinas.wa.edu.au

Stephanie Says…

The latest fashion trends from The Busselton-Dunsborough Life’s resident fashion expert...

Summer Fashion

For summer beauty, faces get the pared back look so that makeup is natural and appears ‘barely-there’. Highlighters and illuminators do a great job in boosting radiance and if a little colour is required then add blush and balm with sorbet-like orangey hues. Hair should be effortless and perfectly ‘undone’. The major trend for summer is to embrace your own hair type and pull off a natural look without the use of heat styling. A regular conditioning mask is therefore a summer essential!

Add some flamboyancy!

With so many bold ideas appearing on international catwalks for summer, we can expect a full-on season of extreme looks. Have fun with the trends and be prepared to be the centre of attention! Summer just wouldn’t be summer without showing off some flesh and this season it’s the turn of the shoulder. An off-the-shoulder top with a high waisted mid-skirt or pants is a feminine and chic combination. There are plenty of jumpsuits and dresses cut to bare shoulders too and an asymmetrical style will look great for the warm evenings. In contrast, expect to also see statement sleeves this summer. Big and voluminous in sheer fabric, sleeves add fluidity to an outfit whether bunched up to the elbow, asymmetric or bell. Fringing was around in the cooler months and is coming back for the summer. In the past, it has created an all-over bohemian look but this summer’s fringing adds a modern edge to simply and elegantly cut jackets, pants, dresses and skirts. Look out for it on bags too for a more subtle way to wear the trend. Any lace pieces you picked up for spring will still be perfectly acceptable for summer. But it’s broderie in structured pieces that will be the hit of the season. It’s geometric and modern while lace can be flowery and delicately pretty. White and black are set to be the favourites for broderie in tops, skirts and dresses but expect to see bright colours too. And when it comes to bright colours, it’s all about orange. There are plenty of brights around but it’s the deep hues of burnt orange through to more vivid tones that will be the colour of choice for pieces this summer. Bags and shoes in tan complement perfectly. 10

The

Greta Diaries AND I’M FEELING GOOD ... Yes, dearest ones, it’s summertime. And I’m here to let you know about those things that are going to make you want to walk out of the door and into the stores (or to click online to our website!!!)...

The Exciting ...

From block heels to mesh covered vamps, sandals have never been so gorgeous. We’re talking grey, pale pink, lime, vivid orange … we’re covering sexy Brazilian styles from Brazilio to new local brand Frank/e giving us some sass. And, with comfort guaranteed, resistance is futile...

Get Nude ...

No need to reach for the epilator, we are talking the prettiest shades of nude on your feet to give you swoon-worthy leg length. Make like Grace Kelly and slip on a ladylike tea dress with mid-heel beige embroidered beauties from Valeria Grossi, classic, ballet-pink, patent strappy sandals from Unisa or dainty bow-adorned pumps in a peach nude from Hispanitas of Spain. Now where is our ticket to Monaco…?

Loafering Around ...

Contemporary and ageless (oh yes, just like us!), the loafer works its magic from spring way into summer. Pack a punch with pin cushioned designs care of Rollie Nation (our personal fave? The palm tree embroidered ones) or strike a pose with lasercut offerings from style mavens Mollini. The perfect shade of grey...

There’s a New Flat in Town ...

Ballet schmallet, the ultimate lazy girl’s choice for summer cool has got to be the espadrille. If you don’t quite have your summer pedi in order, your new best friend is going to be this Spanish winner. Seen in Chanel worthy styles from Macarena (white with a black toe, yummo!) and in fashion forward colours from Toni Pons, get ready to be obsessed. If shopping is your cardio, get your daily dose of shoe love and follow me on Facebook (ShoeBeDoo.Bunbury.Dunsborough) and Instagram (shoebedooshoes). And remember, life is short. Buy the shoes ….

Jewellery Design

By Nicholas Mattiaccio

There’s nothing quite like wearing your very own piece of custom-designed jewellery. A piece that can be worn and treasured and perhaps even passed down through close family for generations to come. At Mattiaccio Fine Jewellers, I specialise in creating unique timeless pieces that the wearer will cherish for a lifetime. Rings are one of my areas of speciality and designs for these pieces often start out as a simple idea brought to me by one of our clients. It is then up to me to take this idea and transform it into a practical wearable design that truly represents its new owner. The rings can either be created from scratch or, as in many cases, from a customer’s existing materials. This can be a challenging and time consuming process but the end result is always extremely rewarding. Once a design and budget has been agreed upon, it’s time to choose the stones for the new piece. I use only the finest quality gemstones and Australian diamonds to ensure the highest quality standards are met. Once everyone is happy with the layout, I

begin the process of handmaking the ring. This is a very different process to how most modern jewellery is created as each individual component is rolled, formed, cut and filed into shape. I then solder all of these components together, polish the ring and set the stones. This is again a much more difficult and time consuming process than modern day CAD casting but the quality and finish of a handmade piece is always far superior. Presenting the customer with the finished piece of jewellery is always such a rewarding part of my job. Many customers who see the small granules of gold before I start, or who bring in their broken jewellery to remodel, do not truly understand how wonderful the finished piece will be until they see it. It’s clear they also appreciate the amount of work that goes into creating each piece, which, I believe, means they cherish it even more. For further information on designing or re-modelling jewellery with Mattiaccio Fine Jewellers, contact Nicholas on 9751 2609 or visit his studio at 73 Gale Street, Busselton. 20

Outdoor Living Summer is here and it’s time to get creative with your outdoor space. Put a few ideas into action now and your garden and alfresco areas will look revitalised and inspiring for months to come. Outdoor furniture can be an expensive outlay so if this is not in the budget, simply swap existing pieces around and find new ways of enjoying the space. Consider the ambience you want. For a contemporary outdoor living room, arrange sleek furniture around a coffee table whilst continuing the colour scheme from indoors. And how about really creating the wow factor by building a brick fireplace or installing a fire pit? For a more informal and eclectic look add items, such as a rug, throws or even a mirror, which can be fixed to a wall behind a dining space to brighten up a dull area. Painting a boundary wall adds contrast to the garden and helps plants, decorations and

furniture to stand out. Colours that work well are aubergine, dark grey, bluey-grey, khaki and neutrals, such as taupe and off-white. Braver dashes of colour, like burnt orange and burgundy, are great for smaller feature walls. Inject new life into your outdoor space by redressing the dining table. Hurricane lamps are a great way of keeping flames going during a breezy evening but try using beautiful mismatched candle sticks, jars or coloured glasses instead. Put a vase of flowers and cuttings from the garden on the table to make the setting feel homely or, for a rustic feel, plant up little pots of brightly coloured geraniums. Lighting is an essential part of reworking an outdoor space for spring. As well as making an attractive entertaining area, lighting allows for the garden to be used well into the night, pathways, steps and cooking areas can be ... cont. pg 24 22

safely lit, and features and focal points can be highlighted. Plan the lighting carefully and the garden can take on a new, intriguing and different appeal to how it feels during the daytime. For a relaxing dining ambience, use cluster lights in nearby trees or shrubbery as they will cast a gentle yet useable light. They also create eye-catching definition within branches and leaves if placed within architectural plants, such as palms. For single trees and sculptures, up-lights create the perfect look. They draw the eye to a lost corner of the garden and

provide depth as well as drama. Up-lights can also be used to accentuate geometry in a more structured garden by being placed at the bottom of plants. Think about using rope lights to highlight meandering pathways, ground level lights to add glow to steps leading to the house, pool lights and even statement feature lights, which add an impact all of their own. Put the hard yards in now and you will be able to enjoy those hot summer days and balmy summer nights outside from morning until dusk. 24

Potted Plants

Consider incorporating fragrant flowers to add an indulgent resort-style feel to the area for the warm balmy evenings. Sweet gardenias, intense star jasmine, murraya with its orange blossom-like perfume and classic lavender all produce gorgeous scents as well as beautiful flowers. Plus, choose the herbs you plan to use when cooking and plant them up too. These will give a rustic feel to an outdoor table setting and provide the finishing touch on dishes when dining alfresco. When it comes to choosing the pots, make sure they all have plenty of holes for drainage. Avoid plastic as these pots become far too hot in the sun, leading to the roots of the plants getting damaged. Glazed ceramic and stone pots help to keep the potting mix and root system at a constant temperature and also

Nothing beats the feeling of lazing in a private alfresco area especially if it’s full of colourful and fragrant plants. What’s more, it’s an easy morning’s project to plant up some pots for summer and an excellent activity to help keep children busy – they can even be in charge of watering duties! The ideal flowers for summer include geraniums, marigolds, miniature dahlias, dwarf bougainvillea, frangipanis, nasturtiums, echinacea and Californian poppies. Go for an explosion of different vibrant colours or pick complementary shades to go with the home’s current outdoor furnishings and decorations. 26

don’t dry out too quickly. Terracotta pots, on the other hand, can dry out quite quickly so use these for plants needing good drainage. Just remember to water frequently. Place the pots together in groups as this helps to help keep plants cooler as well as increasing humidity. Lightly mulch them and try placing them on saucers of moist sand as this will also keep roots cooler. When it comes to watering, it’s best done when the weather is at its coolest. As the summer goes on, rearrange the pots and add new additions so that your potted garden is constantly changing and evolving.

Fredrick Collection

Discover unique, individual quality furniture

With its unrivalled selection of unique and stylish furniture, homewares and accessories, new Dunsborough-based furniture gallery Fredrick Collection is a must-visit this summer. Owner Chris Wheeldon has travelled the world to bring Fredrick Collection to the south west and the timeless mix of pieces on display offers an exquisite choice of furniture and design for the home. The gallery derives its name from Chris’ father, Fredrick. Born in an era of understated style, Fredrick was a man who prided himself on his appearance no matter what the occasion. Rarely seen without a suit and tie, a style and attitude created from an era of both hardship and fortitude, The Fredrick Collection draws inspiration from his legacy. His presence is also felt in the level of service provided at the gallery. The team prides itself on delivering old fashioned, friendly service, by getting to know the customer, understanding their requirements, and tailoring design ideas to meet their needs. There’s a huge choice of styles available to choose from, including French Provincial, Hampton Coastal, Country Cottage, Shabby Chic, Vintage, Retro, Eclectic and Industrial. Fredrick Collection believes a home is inspired by the owner’s individual style and is a reflection of his or her personality. A blending of quirky pieces in the home creates interest and makes a statement about the

owner’s personal taste. These pieces create a different story each time they are used or viewed. Decorating a home can, therefore, be an inspiring adventure and whether by mixing very different styles, or teaming an antique piece of furniture with a unique vintage piece, or by adding beautiful ceramic vases or

sculptures to create interest, it’s a journey that should be enjoyed. By being prepared to be a bit different, and by introducing an element of warmth and charm into the home, a perfect balance is created between luxury, elegance, comfort and style and it is then that the buyer’s true personality is reflected. Visit the gallery at Unit 1, 26 Faure Lane, Dunsborough, and find a piece that becomes intrinsically part of you and your family’s life while embracing the south west lifestyle. Also, go online at www.fredrickcollection.com.au, or visit the store’s Facebook and Instagram pages to keep up to date with the latest news and arrivals. Talking Property with Andrew Hopkins

Despite the somewhat pessimistic views currently published in newspapers or broadcast in the media on the WA property market, I feel a great sense of positivity on the future of the local real estate market. The whole world has changed a great deal since the Global Financial Crisis hit us all for six. After a close to five year period of staggering capital growth, which somehow we thought would continue, the real estate market crashed and in the premium beachside zones values dropped dramatically. Up to as much as 40% or more in some cases. No longer was real estate an option for wealth creation, no one was buying premium holiday homes and locals weren’t selling and upgrading.

generously to its members in times of need and welcomes people who also desire to call this area home. As the awareness of the area’s attributes continues to grow, more and more people will be seeking the kind of lifestyle that Dunsborough and its surrounds offer. Due to coastal migration trends in general, property in beachside locales will always be a desired commodity. The permanent and semi-permanent population will continue to rise. Prime beachfront and beachside property in Dunsborough, Eagle Bay, Yallingup and Quindalup is now excellent buying due to the post GFC price adjustments and expected long term demand trends. We are seeing an increase in that demand right now. Young families are escaping the rat race to bring their children up in a clean and secure environment. Many baby boomers who had put off retirement plans are also deciding that now is the time to enjoy the fruits of their labour. Time to enjoy fishing, surfing, golfing, wining and dining in safety and security. Investors are also realising that the economic conditions and current price levels support action. For further information on purchasing a home or holiday property this summer, contact Andrew Hopkins at JHY Realty on 9759 1322.

... I feel a great sense of positivity on the future of the local real estate market Over the last 3 years, however, we have experienced a period of relative stability, aided by low interest rates, with even some modest growth in prices seen. Travel to other parts of the globe and it is quickly brought home to you just what a paradise we live in. A stunning location just three hours’ drive from our capital city on a pristine north-facing bay with fantastic views, shelter from the prevailing winds and calm safe beaches. A fabulous place to live, to raise a family, retire or holiday, all without the stresses of rampant crime, polluted air or congestion. With some of the cleanest water and air on the planet, our caring sharing community gives 32

with a budget evaluation for the concept design referenced against the project brief budget. 3D renderings of the proposed design scheme also help to visualise the proposal. At this stage, feedback provided to the designer is critical. If the designer has nailed it, then step back and let him continue with the professional service you are paying for. If there are areas that either require modification or a complete rethink, explain your concerns and let the designer provide creative solutions. The design will incrementally change and develop as the feedback is included. Each area of the design progresses from concept to specific and detailed design, incorporating feedback, compliance and selections. The design package will ultimately become more formal, becoming suitable for tender and construction. There are many review stages along the way, take time to evaluate and communicate with your designer.

In the previous edition of The BusseltonDunsborough Life, I published tips on how to engage the services of a building designer. In this edition, I will be focusing on the design process itself and the fees involved.

Design Process The design process commences with a site investigation and the preparation of schematic drawings. This will include a site analysis diagram containing information, such as the property’s orientation, prevailing breezes, site topography and the basic planning of spaces. A fundamental stage, the process of researching the site overlaid with the agreed brief will resolve many issues early in the project. Local development conditions, privacy issues, boundary setbacks and maximum heights should always be taken into account in the concept design phase. The concept design should provide you with confidence that the designer has completed a rigorous site analysis and has followed the brief. TIP – Make sure the designer provides you

Fees Like all professional service businesses, building design fees are linked directly to the scope of work and related to time costs. For example, a simple single-level custom designed home on a flat site may take only a ... cont. pg 38 37

property & finance few months to design and document. On the other hand, a complex highly-detailed design may take a year or even longer to complete, with possibly months of compliance and approvals required. For these reasons, fees will be specific to each project and may be quoted either as a percentage of the project budget, as a lump sum or even as an hourly rate. TIP- Fee proposals should be in writing and associated directly with the deliverables and scope of work. Make an effort to understand what you are asking for and what will be provided. Design is exciting and great design can be life changing! Feel free to get in touch if you have a project in mind. It also ensures that the client obtains the fairest and most competitive price while working with their chosen builder every step of the way. This beautifully designed home looks like it has ‘grown up’ out of the landscape, just like the Marri trees surrounding it. The clients were the most passionate people we have ever built for and knew every intricate detail of the home. It is a tribute to them, their vision and to the supervisor, Rohan Borig, who, together with the entire team at Tallwood Constructions, constructed this remarkable home. The home was a finalist in the recent HIA South West Housing Awards in the category of Custom Built Home $1.5m and above. ‘A negotiated contract at an early stage of the design process enabled consultation on key details and buildability issues. This early “buy-in” resulted in an exceptionally high standard of finish being achieved. We are thrilled with the end result. Alex Campbell of Tallwood Constructions talks about this recently completed home in Quedjinup As a builder, there is nothing more rewarding than being involved in a project from inception through to completion. On a classic, hot, mid-summer, clear blue-sky day three years ago, I met the client for the first time on the yet uncleared rural block in the hills behind Dunsborough. What made this meeting memorable was that he was on holiday from London and arranging for his new home to be constructed whilst living on the other side of the planet. The clients, husband and wife architects from the UK, engaged the services of local designer Dane Richardson from Dane Design Australia to coordinate the local structural, hydraulic and electrical engineering teams and to recommend a builder with whom they could trust to undertake such an unusual venture. This allowed Tallwood Constructions to proceed in a negotiated tender with the clients where the margin is agreed and the Bill of Quantities provided to the client. This entire 40

All new SUV ups the ante

Who would have thought that just 6 years ago the small luxury SUV market would become such a key battleground for the world’s leading car manufacturers? Back then, it was a market that didn’t exist, that was, of course, until the launch of the Mk1 version of the BMW X1 in 2009. Now in case you hadn’t noticed, we have the Audi Q3, Mercedes-Benz GLA and Lexus NX plus a few others all clamouring for your attention. With close to three-quarters of a million units sold to date, there is no doubting the X1 has been an unqualified success. So successful was the car on launch, in fact, that BMW was even rushed into creating extra production capacity to keep up with demand. So with the launch of the all new X1, has BMW come up with the goods again? Visually, there is no denying its X heritage and, although slightly shorter

“a more robust appearance and chiselled front end gives added curb appeal” than the outgoing model, a more robust appearance and chiselled front end gives the new X1 added curb appeal and a more commanding presence on the road. Extra height to the car and a raised seating position has also given drivers an improved view of proceedings. Inside, the driver-focused cockpit design, which has become a hallmark of the brand’s models, offers plenty of luxurious touches together with a modern contemporary feel. An all-new generation has also brought with it a raft of improved safety features. A new addition to the range is the BMW Head-Up Display which, as in the larger X models, projects driving-related information directly onto the windscreen. The new X1 can also be specified with the marque’s Stop & Go function, Lane Departure Warning system, Traffic Jam Assistant, Collision Warning and

Pedestrian Warning systems. Fans of the original X1 needn’t have worried. Now available in both front-wheel drive and all-wheel drive, the second generation X1 is an altogether better car than the one it has replaced on just about every level. Faster, more efficient, roomier and better looking, it has laid down an imposing marker for competitors to follow. Mercedes-Benz GLC

Mid-sized SUV set to steal the show

With Audi and BMW having enjoyed huge success with their mid-sized SUV’s, it has clearly only been a matter of time before Mercedes-Benz muscled in on this lucrative sector. Of course, the German luxury car manufacturer did launch a left hand drive model, the GLK, back in 2008 but with its rivals catering for all markets, the car was never fully competing on a level playing field. Enter the Mercedes-Benz GLC; the long-awaited trump card. Using the same MRA (Modular Rear Architecture) platform as the hugely successful C-Class, it also takes much of its design influences from its sedan sibling. In fact, around 70 per cent of the components found on the C-Class are used on the GLC. So with the car based

on one of Mercedes-Benz’s most successful ever launches, whilst adding a liberal dose of versatility and practicality, it’s no wonder the GLC has got tongues wagging. Gone are the days of dull looking SUVs and the GLC’s visual appeal takes design in this sector to a whole new level. Sporting coupé-style looks, the car’s extra-long wheel base (the longest in its “the GLC’s visual appeal allows for a lower takes design in this sector to class) stance and a classa whole new level” leading drag coefficient for good measure. The effortless style also flows through into the cabin, again borrowing much of the interior and dashboard design from the C-Class. Drivers and passengers alike will appreciate the luxurious, adjustable front seats, extra head and legroom in the rear, large boot space and easy access through its wide chunky doors. Currently, there’s a choice of 3 engine options for prospective GLC buyers ... cont. pg 50 49

each fitted with the new 9G-tronic 9-speed auto gearbox and all-wheel drive system. The GLC220d entry model features Mercedes Benz’s highly refined 2.1 litre twin-turbo diesel engine and delivers 125kkW of power and 400Nm of torque. Accelerating from 0-100km/h in just over 8 seconds, it also claims an impressive combined cycle fuel economy of 5 litres per 100kms. For diesel fans after a touch more power, the GLC250d will be the preferred option. Speeding from 0-100km/h in just 7.6 seconds, this more aggressive vehicle delivers an impressive 500Nm of torque. Finally, completing the line-up down under is the GLC250 petrol. Using the same 2.0 litre turbo engine as the A-Class and C-Class, acceleration from 0-100km/h is even quicker at 7.3 seconds while fuel consumption remains remarkably low at 6.5 litres per 100kms. With a list of standard features as long as your arm, there are plenty of toys to keep even the

most fastidious of buyers happy. The entry level 220d features 19-inch alloys, keyless start, satellite navigation, electric front seats, a 360-degree view camera and side-steps whereas all versions come with 9 airbags and blind spot monitoring. The 250 petrol also gets 20-inch alloys, leather seats, tinted glass and the excellent Driver Assistance Package Plus pack featuring adaptive cruise control and steering assist. A game-changing SUV, the GLC might be a late entry into the mid-sized SUV market but it has certainly been worth the wait. Seemingly offering the complete package of looks, comfort, safety and performance, it will be a hard act to beat. Patterns and Maths By Louise Clark Most children love discovering patterns. From an early age, they recognise patterns in the stories we read to them and they get to recognise what is coming next in a rhyme or song because of the repetition. Children recognise patterns that occur in nature, in their daily routine, with beads in a necklace, on the soles of their shoes and even with the windows on a skyscraper. Patterns are everywhere and it is fun for children to notice them and to learn how to predict what is coming next. Without knowing it, these children are actually doing maths, naturally, and enjoying it. This is because finding, observing and understanding patterns are essential maths skills. Many mathematical concepts that children will come across at school are based on patterns, such as counting in 2’s, 5’s or 10’s, or times tables. By helping our children to recognise and decode patterns, we can also help them to grasp and enjoy working with the maths concepts that they will come across at school. For pre-school aged children, try making patterns with food when making a snack together. Find leaves, seeds and petals in the garden to arrange and stick onto a piece of card. Cut up thick kitchen sponges to make stamps and create a stamped pattern with

paint, or use cookie cutters or a melon baller to make potato stamps for your child. Talk about the morning routine and work out which activity comes next. It is also fun, and excellent for predicting skills, for children to point out when a pattern is wrong. So try giving your child opportunities to do this. Number games are another favourite with children that help with learning about patterns. There are many variations of the ‘stand up, sit down’ game, such as standing up and counting in 1’s and sitting down once a multiple of 5 or 10 occurs. Print off an online hundred chart and ask your child to colour in the even numbers or a certain multiple. Talk about the squares of colour that start to appear. Choose another colour for a different multiple and talk about why some numbers have been coloured twice. However you choose to play with patterns, there is no doubt that it will help your child to discover, observe, think, experiment and create. It’s an effective way for a child to get a great start in maths. Louise Clark has studied and taught across many age groups in the British and Australian schooling and college systems.

Ensembles regularly perform in the annual Bunbury Eisteddfod as well as in numerous events throughout the year. The school also participates in a myriad of sporting competitions with students being able to join a wide selection of teams for evening or weekend competitions. An annual

highlight on the sporting calendar is Country Week where the school has been represented in everything from dance to touch rugby, girls’ AFL and debating. The swim team is also flourishing with weekly lessons before and after school, swim clinics, interschool competitions and the annual Rottnest Swim Challenge. The Co-Curricular programmes extend to include serving the wider global community. As a member of Round Square, a global organisation which encompasses life experiences and philosophies beyond the classroom, students are encouraged to take part in opportunities based upon its six pillars or IDEALS; Internationalism, Democracy, Environment, Adventure, Leadership and Service. Through student exchanges, service trips to complete community work in disadvantaged areas and conferences within Australia, Australasia and around the world, Round Square can be experienced in a variety of ways. Did you know Busselton’s heritage-listed Courthouse is older than its famous jetty?!

From Jetty to Bond Store Just a brief walk from Geographe Bay’s glorious foreshore, the Courthouse played an important role in Busselton’s early settlement history and growth as a port. The earliest limestone buildings date from 1860 - 61. They include a bond store once linked to the jetty by rail, where precious cargo like beer, wine, tobacco, salt and rice was brought from ship to store in horse drawn wagons to be held until tax was paid.

Step Back in Time The historic site includes the original courtroom and gaol cells where people were sentenced and imprisoned for disorderly conduct, drunken behavior, theft or vagrancy. A cell with shackles used for Aboriginal people is a stark reminder of their treatment in the past.

Above: Whaler’s Wife Left: Old Gaol Cells Bottom: Busselton’s Cultural Precinct

A new courtroom was added in 1897. Still furnished with its original jarrah fittings - magistrate’s bench, clerks table, witness stand, dock and public gallery – the brick and exposed wood building is a rare surviving example of colonial arts and crafts architecture. The Courthouse functioned as a police station and lock-up until the 1970s. Today the historic buildings house artists and performers rather than prisoners and police constables. Now used as a retail outlet for South West arts and crafts, a walk through the complex with one of our knowledgeable guides brings its stories alive.

Built in the 1930s in the neoclassical style, the building was used as an office for the Department of Agriculture and Forestry, and then as a bank. It now houses ArtGeo Gallery where we host a diverse selection of exhibitions sourced regionally and Australia-wide. See website for program details.

A Coach’s Philosophy

into the minds of those who compete. I have never once believed that succeeding is about the ribbon, medal or trophy. Instead, it’s the journey it represents, the people met, the challenges overcome and the self-discovery and friendships made. If you want to compete, you will need to believe in what you do and work hard but it’s also vital to love what you do. Surround yourself with good people who give honest feedback and focus on improving one thing at a time. The motto to remember is, ‘Each day, just a little more than the day before.’ A regular, sustained training programme is essential. No one excels at anything by bringing a half-hearted approach to a task. It breaks my heart to see children brought to practice, the week or even the day before an event, having previously not trained. Expectation and last minute rehearsals simply create more stress and anxiety. Conversely, it is the athletes who have set goals and worked hard towards these goals who are the ones that succeed. “That was so amazing, I’m so

By Susan Brooks

As Head Coach at the Rink, Bunbury’s very own inline skating centre, I regularly see how our coaches, officials, competitors, not forgetting friends and parents of competitors, all work together to create a positive culture in the pursuit of excellence. Our focus may just be on the sport of inline or roller skating but our coaching philosophy can, of course, be applied to all aspects of life, not just other sports. A key fundamental belief of mine is that by learning to compete we learn more about ourselves. True learning occurs through a process of hard and sustained commitment and a true understanding of each challenge, gain and loss along the way. The words we hear society use to label people, such as ‘winner’, ‘loser’, ‘smart’ or ‘dumb’ ignore the long term effects and core values that are instilled

pleased with myself, I just skated and gave my best and it was so much fun!” This is a quote from one my most successful skaters ever, Allira Hanczakowski, at the 2015 World Championships in Colombia. It’s also important to appreciate that if a young athlete is taught that winning is all that winners do, then dealing with adversity and the inevitable off days will be considerably harder. Making mistakes is part of life, whether you are a sportsperson or a businessperson, but dealing with them is the key. By learning from them, we deal with the issue, improve from the experience and move forward towards our goals. Susan Brooks is Head Coach and the owner of The Rink, Bunbury. Fractional Radio Frequency A new technology in skin rejuvenation By Jeanette Elliott

What is Fractional Radio Frequency (FRF) and how does it work? A highly effective, cutting-edge treatment, FRF repairs damaged skin and reduces the signs of skin ageing caused by over exposure to the sun. Radio frequency electrical energy has been used in clinical and medical applications for more than 75 years, however, it now plays an increasingly important role in the area of aesthetics and appearance medicine. FRF allows the removal of damaged skin cells and the resurfacing of the superficial skin layers. It treats mild to moderate wrinkles, post acne scarring and other pigment and textural irregularities. Simultaneously, volumetric deep dermal heating is applied to the skin’s collagen fibres, causing an immediate and long term skin tightening. This combined treatment effectively treats superficial areas and deeper layers of the skin for an optimal result. During the treatment, FRF creates a number of microscopic columns (70-100 microns in diameter). This is necessary for the controlled dermal heating to elicit a wound response in order to cause tightening and collagen deposition. The process is non-ablative although it still allows for dermal penetration, resulting in considerably less downtime and recovery as well as fewer risks and complications than ablative procedures. Who should be treated with Fractional RF? Treatment is safe and effective for all skin types, successfully treating acne scarring, wrinkles and pigmentation while improving overall skin texture. A thorough consultation is necessary to deem the appropriate parameters for each treatment.

The most advanced, non-surgical aesthetic therapies to ensure you look and feel rejuvenated

What results can be expected? Expect a reduction in post acne scarring, in mild to moderate wrinkles and in superficial skin discolouration. Skin texture will also become smoother and more elastic due to the collagen stimulation and the production of healthier skin cells. How many treatments are required? The typical treatment protocol is 3 treatments, 4 to 6 weeks apart, with the total number of required treatment sessions dependent upon the condition of the skin being treated. What can be expected after the treatment and will it be uncomfortable? Topical anaesthesia is applied 45 minutes prior to treatment to reduce discomfort. Many patients feel a warm, prickly sensation as the energy enters the skin and a pink to red sunburn appearance with mild inflammation should be expected, lasting up to 48 hours. This is a common reaction and aftercare instructions are given following the treatments to ensure correct home care. The Alma Lasers Pixel Fractional Radio Frequency medical device is the device of choice at Jeanette Elliott Dermal Therapy and treatment packages are available now. Jeanette Elliott is a dermal clinician who has many years’ experience in helping patients to understand their skin and the conditions that may affect it, providing realistic expectations of the results that can be achieved. Beach Dangers

How to keep your dog safe

By Dr Paul Repton, GEOvet

Spending time with your dog at the beach over summer can be highly rewarding and a great deal of fun for all. However, there are a number of hidden dangers that dog owners should be aware of when heading to a pooch’s favourite sandy spot. If the dog is prone to scavenging, always be on the watch for puffer fish that commonly wash up on our shores. Extremely poisonous, getting into contact with one of these nasties can cause an ascending paralysis within the dog. The animal will first become unsteady on its feet, next start to vomit before finally collapsing, unable to breathe. Emergency veterinary treatment is always required in these cases. These symptoms are similar to the reaction experienced from a snake bite and, with snakes often seen on the beach during the warmer parts of the day, it’s also important to be on the lookout for these venomous reptiles too. Remember to also keep a watchful eye on your dog in the water as occasionally they can run into trouble with near drownings and poisonous creatures, such as stingrays. Stingrays can shoot a poisonous barb into the pet if accidently trodden on, which causes a very painful and nasty wound that will often require treatment or surgery. Taking dogs to the beach during the cooler part of the day will also help avoid the dangers of

66

heatstroke, especially for dogs with short snouts, such as bulldogs and pugs, which may have trouble breathing. Interaction with other dogs is common on the beach so always ensure your dog is well socialised and trained if you let it off the lead. Dog fights are not uncommon at the beach just like any other public park. Likewise, be mindful that in any public area there is also a potential risk of contracting Kennel Cough or Parvovirus; another good reason why it is important to keep your pet’s vaccinations up to date. Finally, don’t forget to keep an eye out for discarded fishing lines and fishing gear as pulling fish hooks out of lips and tongues is no laughing matter. This usually requires sedation or anaesthesia, which, of course, has its own risks.

Restaurant Review

but where’s the creativity? Well, with its puréed scallops served within a delicious dumpling on a bed of chilli oil, this dish positively oozed creativity and tasted extraordinarily good. Fantastic! Next it was onto the mains and the Fish of the Day, Tasmanian Ocean Trout, and a Malaysian Duck Curry. Immaculately presented and perfectly executed, both dishes were outstanding but I do have to give a special mention to the curry. Served with eggplant pickle and jasmine rice, the duck, presented on the bone and placed directly on top of a row of curried potatoes and sauce, was simply sensational. Cooked to absolute perfection, the pan-fried duck just fell away from the bone and the sauce offered the perfect accompaniment. It’s an absolute must-try this dish – highly recommended. We rounded off our fabulous lunch with the exquisite Deconstructed Yuzu Cheesecake served with a black pepper gel and dollop of homemade strawberry ice-cream. A perfect end to a quite spectacular meal. With its combination of fine art gallery and bistro, The Studio Yallingup has always had much to offer. Home to work from some of Western Australian finest artists, the creativity that surrounds Head Chef Chow clearly shines through in his food. This is modern Australian cuisine with an Asian twist at its very best.

The Studio Bistro

It is now five years since The Studio Bistro in Yallingup opened its doors and, with rave reviews being the norm, anticipation was high for our first visit. Set in picturesque gardens alongside national parkland, our lunchtime sojourn also coincided with a glorious spring afternoon. Alfresco dining on the deck was definitely the order of the day. Having worked under some of Australia’s leading chefs at Vue de Monde Melbourne and Tesuya’s Sydney, Head Chef Malcom Chow certainly knows a thing or two about devising an enticing innovative menu. It was certainly going to be no easy task to pick from the range of tempting dishes on offer. With a strong focus on sourcing local produce, the modern-Australian style menu with its Asian influenced dishes is clearly a real labour of love for Chow. Choosing a selection of starters to begin with, we sampled the Chicken Liver Parfait, Master Stock Crispy Pork Belly, WA Octopus Terrine and Steamed Scallop Dumplings. Quite magnificent! I could rave on for hours about the extraordinarily smooth parfait served with pickled shallots and the wonderful octopus terrine with its tempura crumbs and amazing white soy gel. I could also wax lyrical over the fantastic crispy pork belly but if I had to pick a favourite it would have to be the steamed scallops. Scallops are a popular item on restaurant menus these days and more often than not are prepared the same way – grilled. Nothing wrong with that 68

Shaana Café

With an increasing amount of customers deciding to follow specific diets, either through choice or necessity, local restaurant owners repeatedly have to adapt their menus to suit demand. Yallingup-based eatery Shaana Café has always prided itself on offering a wide choice of dishes suitable for all dietary requirements and it has now added a selection of dishes for those wanting to follow the paleo diet. The paleo diet is a diet based on the daily foods thought to have been consumed by our early ancestors. It consists mainly of meat, fish, vegetables and fruit and excludes dairy, cereal and processed foods. This highly nutritional approach is said to work hand-in-hand with the body’s genetics to help keep it lean, strong and energetic. The Paleo Veggie Breaky at Shaana Café offers a healthy and delicious start to the day. Featuring poached eggs, sautéed spinach, slow roasted tomatoes and local avocado on organic quinoa polenta, enjoy this dish every day (except Wednesday) from 7.30am. Or for lunchtime diners, why not try the Paleo Spaghetti, a tasty combination of zucchini spaghetti, homemade basil pesto, shrimp and cherry tomatoes. Located at Unit 2, 6 Dawson Drive, Yallingup, Shaana Café also offers up a range of gluten free and vegetarian dishes for dining in or takeaway.

Book Review

The Great Australian Cookbook Helen Greenwood & Melissa Leong

This generously-sized cookery book immediately impresses with its unique Australian artwork, supplied by Reg Mombassa, and its stunning photography by Lottie Hedley, which not only showcases the dishes but also their contributors and the beautiful scenery of Australia. The Great Australian Cookbook was dreamt up and created by co-editors and food writers Helen Greenwood and Melissa Leong. They compiled a list of 100 chefs, cooks, bakers and food producers and asked them one simple question, “What do you cook for the people you love?” The resulting recipes and thoughts were collected over 6 months of travelling on the road around Australia with Greenwood’s and Leong’s production team, and they paint an affectionate picture of the food that Australians love to share and eat. There are no sections to distinguish starters from

desserts or one region of Australia to the next; instead, there is an eclectic collection of dishes that follow one another, seemingly randomly, throughout the book. This means there is no quick zoom to a mains chapter or a section on the food of each state but surprisingly, and perhaps refreshingly, it is an approach that works. Together with the bold and honest photography, it’s a layout that encourages a slower and ultimately more enjoyable read of each page. However, for organisation and logic junkies, there is no need to panic! Within the book there is a comprehensive index that sorts dishes according to their main ingredients as well as several others that organise recipes into groups, such as dairy free, salads, baking and gluten free. The Great Australian Cookbook is a book to be treasured. There are 165 recipes contributed by 100 of Australia’s culinary legends, providing plenty of experimenting to do with new dishes for the keen chefs among us. But more than that, it’s a visual celebration of food that simply makes people happy. Priced at $49.99, The Great Australian Cookbook is available at all good book shops. Royalties will benefit Australian charity OzHarvest.

Summer Recipe

Ingredients

Quinoa Summer Salad If you have yet to discover the delights of quinoa, then this Mexican-influenced recipe is the perfect place to start. The delicately nutty seeds are so simple to prepare – it’s similar to cooking rice – and then, it’s just a matter of combining all the ingredients. Makes 4 large servings or 6 smaller servings as a side dish

Method Rinse quinoa thoroughly in running water in a fine strainer or cheesecloth. Drain. Place quinoa in a saucepan and add 300ml water. Cover and bring to the boil then reduce the heat and simmer for 15-20 minutes until the quinoa starts to look transparent and has released little white sprouts. You may need to lift the lid a little to prevent boiling over. Chill the quinoa until cool. In a large bowl, mix together all the dressing ingredients. Add salt and pepper to taste. Add all the salad ingredients and mix well.

Serves 4 Salad Ingredients: 150g quinoa (white, red or black) 1 green capsicum, chopped 1 red capsicum, chopped 2 avocados, chopped 3 large tomatoes, chopped 400g can kidney beans, rinsed and drained 4 spring onions, sliced Dressing Ingredients: 1 tablespoon olive oil juice of 1 lime 1 clove garlic, finely chopped 1 tsp ground cumin 1 green chilli, seeds removed and finely chopped 2 tbsp chopped coriander leaves salt and pepper
