choose from. The crop top works well if it is quite fitted, like a thin sweater, or boxy and comes to just above a high waisted skirt or pair of pants. Cut outs are also set to continue their popularity in dresses and tops. The peplum has, for this season, been played around with and has been transformed into neat bunches of folds for a feminine, sculptural look. There are folds and ruffles on the front of skirts and dresses as well as sweeping frills on tops. It is a defined look that works on form fitting pieces. For the guys, pastel colours will also feature heavily this spring. Sorbet pink, pale blues and greys will all feature strongly in the new season’s palette. Don’t be put off by the soft colours; they actually bring a sharp freshness to clothes and can be worn by all ages. Khaki is a great colour to choose to pair with pastels as it sets them off and helps to ground the outfit too. Go for a sporty, athletic look to showcase these muted tones. A relaxed sweat top or vintage washedout t-shirt looks great with slim-leg shorts to just above the knee. Or try the popular preppy look, and wear tapered chinos with canvas sneakers, topped with a shirt. A bomber jacket or a casual blazer is the perfect way to finish off a relaxed spring outfit. Enjoy your spring shopping trips!

Colour-up for the new season!

What better way to begin spring than with a fresh and romantic colour palette! Pastels were everywhere on the runways this year when designers showcased their recent spring/ summer creations, especially pale pink! Both sleek work outfits with a masculine cut or pieces within the sports luxe trend for weekend wear can be beautifully softened and feminised with sugary shades of pink, yellow, purple and green as well as washed-out blue denims and pale greys. Layered and loose is the perfect way to wear pastels for a relaxed spring look. Slouchy pants, boxy tops, sweaters and long jackets are ideal for head to toe pastels outfits. Stick to the same shade or mix it up for added texture and depth. Neutral separates such as loose white pants, a cream or grey top, or a stunning pair of nude pumps or sandals can also prove effective in breaking up the overall look, if required. Adding a strong item to pastels really brings an edge to an outfit. Bold prints and pastel shades complement each other surprisingly well. Or simply add a narrow black belt to a loose jacket or cardigan and balance it with black heels. Standing out as a clear diversion from the pastel collection of shades is cobalt blue. It is a wonderfully rich and bright colour that looks fabulous with neutrals in the form of a pair of heels or a boxy top. Baring slithers of skin are still a trend that is in for this spring. Many designers have been presenting shifts and gowns that show off shoulders, are strapless or feature skinny spaghetti straps. To add to that, there are plenty of crop top and skirt or pant outfits to

Living Alfresco!

7-piece Milton setting at The Outdoor Furniture Specialists

We might not quite be ready to decamp from our warm living rooms to our outside living space but with spring most definitely in the air, now is the perfect time for readying our outside areas for summer. In the south west of WA, we are blessed with the perfect weather for spending long days and evenings outside so some hard work now will definitely pay dividends later. We all have to start somewhere so let’s begin with the maintenance issues. Then we can move onto the more fun part – a revamp of our outdoor settings and furniture! Start off by ensuring the outside of the house and any nooks and crannies are free from cobwebs, and that the windows are sparkling clean. Why not get in a window cleaner if washing down all the glass feels too overwhelming! Hopefully, pavers have been maintained regularly with a stiff bristled brush during winter so that debris and grime have not built up. If, however, stains from algae or other plant debris exist, try using a mild detergent, diluted in water, to remove them. Use a stiff brush and the discolouration should lift. Remember, diluted bleach in water or a jet

wash should only be used after checking with the paving stone manufacturers in case these treatments are too harsh for specific pavers. For decking, spring is the key time to get prepared for the hot summer ahead. Start by giving decked areas a good sanding down by hand to remove any splintered areas, or use a hired sander if the whole area needs attention. Sweep the timber and wash it down with a decking wash solution. Next apply the stain this is the easy part! Use a brush for the edges and an applicator with a long handle for seamlessly covering large areas. Now it’s onto the lawn. Weeding, fertilizing and watering correctly is vital at this time of the year as the wrong balance in the garden can encourage weeds and damage grass. If in doubt, seek specific advice from a local garden centre to ensure healthy grass growth. Once the grass is thick and dense, not only does it create a healthy lush foundation for the outside space but it is also more difficult for weeds to survive. When mowing, don’t cut the grass too short as this can weaken the turf and allow sunlight to weeds, which will help them ... cont. pg 26 24

home & garden to grow. Don’t forget this is also the time to check all reticulation points are working correctly and not buried under bushes. With the maintenance issues sorted out, it’s time to have a think about bringing some new design and decoration ideas to the outside space. A new colour palette for cushions, throws and candle holders can completely refresh an outdoor space. Try moving furniture around to take in a different view. Consider a theme, such as beach, nautical, French provincial, resort, or Eastern and select items that tie in with the look. A favourite piece of furniture or decorative item is often all that is needed to spark off a design idea. Spend a weekend visiting display homes as these are often full of the very latest ideas to help create the perfect outdoor area.

lounging and relaxing? Is your interior style modern, traditional, contemporary or organic and do you intend to create a flow of that style from inside to out? There’s a choice to be made between the classic elegance of timber, the resilience of wicker or the comfort associated with plush cushions on aluminium. Because of its flexibility, modular furniture can often work well outside as suites can be designed to suit individual needs. Ultimately, it’s about creating an inviting and relaxing environment, taking into account the size of the areas and walkways leading into it. The finishing touches can make your outdoor space completely unique with a whole host of accessories available to complete the look. The above tips were supplied by The Outdoor Furniture Specialists, Bunbury. Visit the store at 98 Blair Street where you can also view the range of Stratco Outback installations to get a first-hand visualisation of the perfect outdoor space.

Mercedes-Benz C-Class Top-selling sedan now bigger and better!

Any new car launch from Mercedes-Benz is going to be a significant event but when it’s the German luxury car maker’s core product in the Australian market, expect quite a fanfare. Let’s put this into perspective. The outgoing C-Class is not only the nation’s biggest selling

prestige sedan, it actually even outsells many of its cheaper rivals from Ford, Subaru and Honda, amongst others. Currently, it accounts for almost one quarter of all Mercedes-Benz sales down-under, having ruled the roost in the mid-size luxury sedan market ever since its

28

on the road

launch over 7 years ago. Pretty impressive stats! So with quite an act to follow, what can we expect from the all new C-Class? Well, to start with, it is considerably bigger. With the wheelbase extended by 80mm, not only is there a great deal more internal space for passengers, externally the car is now almost as big as the E-Class from 2 generations ago. This extra length has created a look and feel that oozes elegance and style and its sweeping lines and sculptured side panels offer more than just a nod and a wink to the top of the range S-Class – a car, incidentally, that was designed in the same Mercedes-Benz studio. Along with sharing some of its looks with the flagship “a look and feel that S-Class, the new C-Class also features much of its oozes elegance and technology. All models now include LED headlights, electric front seats, satnav, parallel and reverse parking style assistance and blind spot assist. Premium models add extra software, 19-inch wheels, adaptive cruise control, active lane assist and full leather. With nine airbags as standard and an array of cameras, including rear view and overhead view, the car also has a lane departure warning system and the very latest early crash avoidance technology, including a fatigue-detection system to monitor steering behaviour. Perhaps the most significant development on the new C-class is its new aluminium body and lightweight suspension system. With the roof, doors, bonnet, boot and fenders all made from aluminium, a weight reduction of around 100kg has been achieved. This has led to both improved performance and fuel economy with the entry level C200 now consuming an impressive 6.0L of fuel per 100km. With all models now fitted with 4-cyclinder engines, the turbo-powered 2.0 litre C200 kicks off the range, delivering135kW of power and 300Nm of torque. Next up and priced at just over $60K plus on road costs is the C200 BlueTec diesel with the sportier C250 at around $70K plus on road costs. The current range-topping model the C300 BlueTec diesel-electric hybrid is another first for the range with its 20kW/260Nm electric motor allowing the car to move from 0-25km/h smoothly and silently. With prices almost identical to the outgoing model, improved performance, better fuel economy and upgraded features, notwithstanding its stunning new visual appeal, expect the all new C-Class to continue its dominance of this market sector for some time yet. For further information on the all-new Mercedes Benz C-Class, contact Mercedes-Benz Bunbury on 9721 8199.

engine to give the tail a leaner, more contemporary look whilst also lowering the centre of gravity to improve handling. The soundtrack to the new model has also been ratcheted up a notch with a new intake path through the frame creating a noticeably more engaging growl. Fitted with lighter wheels for more responsive steering and improved straight line performance, its more upright riding position makes it ideal for everyday town riding as well as track day workouts. Optional ABS is also available together with a new coded key immobiliser and useful under seat storage. Its comprehensive dash with twin trip computer and tyre pressure monitoring system provides all of the information a rider could need whether on the road or on the dirt. Available in 3 separate finishes, Diablo Red, Crystal White or Phantom Black, the colours appear as sharp slashes down the length of the bike from the poised tail section right down to the front mudguard. There’s certainly no denying this is a bike that will look great whether negotiating traffic or tearing around the racetrack. Triumph Street Triple 660 Learn to ride in style!

The importance that legendary British biking brand Triumph attaches to the Australian market has again been made clear with the release of the new learner legal Street Triple 660. Specifically designed to target the LAMS (Learner-approved motorcycles) market, a scheme implemented in WA in January of last year to increase the range of bikes that could be ridden on an R-E class licence, the all new Street Triple 660 is, however, more than just a modified version of the current Street Triple range. Agile, responsive and easy on the eye, its liquid cooled, 3-cylinder 660cc engine and reconfigured chassis deliver both sharp handling and impressive performance. It’s a package that will satisfy well after licensing restrictions have been lifted. The Street Triple 660 is also the first in the range to come fitted with a selection of new updates. The most obvious of these is the new exhaust that neatly tucks underneath the

Book Reviews Food for Friends Barbecue The Australian Women’s Weekly

Essential for every self-respecting Australian, especially at this time of year, Food for Friends Barbecue should be at hand before any weekend get-together is organised. The Australian Women’s Weekly is renowned for producing clear, no-nonsense cookery books that are full of delicious recipes and ideas that work. Each recipe is triple tested, as the stamp says on every cover, to make sure it is successful. The usual attention normally given to steaks and sausages has had an overhaul and there are new takes on preparing them and new ideas on how to serve them up. There are fabulous sections covering seafood, roasts and kebabs that are deceptively simple to create. Outdoor food has been taken to a new level and plenty of the dishes featured in the book would be perfectly acceptable for dinner parties when the barbecue has been stored away. At the start of the book, there is a useful section to guide first-time barbecuers through the process, including selecting the type of barbecue and fuel. In every section, there are doublepaged essential tips so that the cook can get the best results. Photographs show each dish in beautiful detail, making this not only a must-have ideas book for the summer, but a joy to dip into and browse at any time.

We Are Water Wally Lamb

Wally Lamb has created a reputation for writing bestsellers and We Are Water is destined to achieve similar success. He is an author that thrives on sharing his interest of human psychology, giving the reader vivid insights into characters’ thoughts and behaviours. A great deal of Lamb’s fiction focuses on people striving to become better and happier people. The story of We Are Water is told through the voices of a family living in modern-day New England. Each has their own reaction to Annie Oh (mother, wife and artist) separating from her husband after 27 years and marrying her lesbian lover. Painful feelings and past life experiences are unearthed as the family comes to terms with the wedding and with each other. There are no wishy-washy characters to pad out the storyline; Lamb has created each to have their own unique traits to define their persona – non-conformist, free-spirited, do-gooder, self-consumed. We Are Water is an intricate study of resilience as very different people struggle to achieve love and fulfilment in their lives. It is, at times, a disquieting read. But there is humour too and humanity in the novel, which provides welcome uplift and comfort. 36

Early Extra Repayments – The key to home loan heaven! By Theo Krinos

We would all like to make them and we know the benefits to be had but, for many, making extra repayments on a home loan is not always possible. Everyday living costs, school fees, family holidays; there is always something for us to spend our hard-earned wages on. However, study the financials facts more closely and there are some pretty compelling reasons as to why we should. Take the example of a typical $400,000, 30-year loan at 6% interest with fortnightly repayments. The total interest on the life of this loan equates to a sobering $463,000. However, here’s where it gets interesting. By paying an extra $100 a fortnight from day one, a total of $104,000 is saved over the life of the loan whereas stretch to $200 a fortnight and the interest saved equates to $167,000! Put another way, this is equivalent to a 37.5% tax rate payer earning an extra $265,000 over the loan term! The key here is not only regular payments but early repayments. By delaying the extra payments two years, the $100 payment would save just $88,000 and the $200 payment $143,000. This is because in the early stages of a loan the majority of the repayments are

consumed by interest whereas extra repayments go straight off the principal. So in short, getting on the front foot with extra repayments from the day the loan settles is a highly prudent strategy. Remember too that all home loans are based on payments in arrears, meaning that the balance of the loan is accruing interest from the very first day. Therefore, the earlier extra payments are made, the quicker the reduction in the interest paid over the term. Clever strategies to reduce interest can also include fortnightly payments to allow 13 months of payments instead of 12 in a calendar year. Offset accounts are also highly effective in reducing interest payments and these can be used for redirecting lump sums, such as tax rebates or bonuses. One thing is for sure. Whatever your strategy, extra repayments off your home loan will lead to guaranteed and significant long term financial rewards. Theo Krinos is Finance Manager at Smartline, Bunbury. Pricing Strategies For Business How to combat rising costs

By Phil Di Candilo 2. Revise prices regularly to reflect market changes. Businesses that are inflexible to changing industry conditions and market forces feel the impact first. Identify the key indicators that influence your profit margin, including direct costs, such as fuel, wages, maintenance and subcontractors. Regularly monitor these to ensure that the prices charged maintain profit margins. When costs change, communicate these openly and build support for price increases. The more customers understand these cost pressures, the less shocked they will be by price changes particularly when current service quality levels are expected to be maintained. 3. Keep other marketing elements current and up to date. Your reputation, image and branding should send a strong signal that reinforces your price. If the company image reflects high quality, customers will expect to pay more. 4. Vary prices for different market segments. Some segments will place a higher value on your service than others. Their perception of value will be determined by the need for convenience, what the service actually means to them and how important it is to meeting their needs. Where the perception of value is high, look at charging higher prices. Also be aware of “over servicing”, particularly where customers are not prepared to pay for additional things they don’t want. Phil Di Candilo is Director of RSM Bird Cameron Bunbury, part of a full service, national accounting group, delivering expert corporate financial and advisory accounting services to clients across diverse industry sectors. Call him on 9722 5600.

Welcome to my regular column. Many Australian businesses are currently struggling with rising costs, particularly with fuel and electricity. These challenges are making it harder for businesses to compete. Having an effective pricing strategy can be the difference between stable profits and a business in decline. Cost increases can only be recovered if a pricing strategy is flexible, regularly reviewed and can be adjusted quickly. Reviewing prices regularly reduces the need to make excessive price increases, which can damage customer relationships. It’s all about communication and managing expectations. A pricing review doesn’t just mean increasing prices. Additional costs can sometimes be absorbed by bundling the offering differently or introducing new charges for certain transactions. No matter what pricing strategy a business adopts, remaining transparent and communicating with customers about the need for price changes is critical. Here are four pricing strategies to help improve profitability:1. Know your costs but associate prices with added value. A “cost plus margin” pricing model gives less room to adjust prices in a competitive market. However, a stronger perception of value in a customer’s mind gives greater potential for increasing prices. Understand the value of what you are offering and the dynamics of the market as well as the business’s key differentiators, such as service levels and competitive advantage. Additional costs can sometimes be absorbed by bundling the offering differently or introducing separate charges for some transactions. 42

Thinking of renovating? Who should you call first? A builder, an architect, the local council? Try your real estate agent!

Same great service, different name!

As land opportunities in sought after locations with good neighbourhoods close to the inner city are becoming increasingly rare, more and more people are choosing to stay put and extend or renovate their existing dwelling.

9797 4177

However, before you embark on any renovation project, make sure you do your research. This expensive exercise could put you out of pocket in the long run! Before you start, take into account the current value of the property, the renovation costs and the projected time that you intend to stay in the property. Don’t throw a heap of money at a property that you intend to keep for only a short period of time. As a rule of thumb, expect it to be a minimum of 3 to 5 years before you see a return on a major renovation.

The danger is that you could fall victim to the dirtiest phrase in real estate, ‘over capitalisation’, when quite simply the money outlaid is not reflected in the market value of the property.

Feature Build Alex Campbell of Tallwood Constructions talks about this recently completed home in Quedjinup. As a builder, there is nothing more rewarding than being involved in a project from inception through to completion. On a classic, hot, clear blue sky, mid-summer day, three years ago, I met my client for the first time on the yet uncleared rural block in the hills behind Dunsborough. What made this meeting memorable is that he was on holiday from London, arranging for his new home to be constructed whilst living on the other side of the planet. The clients, husband and wife architects from the UK, engaged the services of local designer Dane Richardson from Dane Design Australia to coordinate the local structural, hydraulic and electrical engineering teams and to recommend a trustworthy builder who could undertake such an unusual venture. This allowed us to proceed in a negotiated tender where the margin is agreed and the Bill of Quantities provided to the client. This entire process is transparent and allows the total involvement of the client. It also ensures that they obtain the fairest and most competitive price while working with their chosen builder every step of the way. This beautifully designed home looks like it has ‘grown up’ out of the landscape, just like the Marri trees surrounding it. The clients were the most passionate people we have ever built for 46

and knew every intricate detail required for the home. It is a tribute to them, their vision and to the supervisor, Rohan Borig, who, together with the entire team at Tallwood Constructions, constructed this remarkable property. 47

different. We never get a chance to become bored or complacent with the homes we build. They all present their own unique characteristics, benefits and challenges. I love working with them all.

Meet ...

Alex Campbell of Tallwood Constructions

Do you have a favourite project that you have worked on?

How long have you been constructing homes and how did you get started?

As a builder who often works with architects, my opinion as the builder, is often not invited. Personally, I enjoy being fully engaged in the process and believe the best outcome is achieved for all concerned when there is an equitable relationship between the client, architect and builder. This was the case with my favourite home on the beachfront in Old Dunsborough. It has a glass mosaic tile infinity edge pool and the multi-level home was superbly designed to create excellent views and intimate living areas.

Nearly thirty years. My first job in a building company was in the ‘Two Way Room’ of the original Collier Homes. This was in the days before mobile phones and the supervisors had two way radios in their cars and I had one in my office. They would call in to arrange deliveries and it was then my job to contact the suppliers and make the bookings. It was like being in an air traffic control tower some days. It was a great experience and gave me an excellent overview of the building process and the personalities. I also learnt that you achieved a lot more being friendly and respectful with whoever you are dealing with.

What will be the future trends in building design?

What do you think are the secrets to your company’s success?

The type of building in the south west is evolving rapidly with a move away from traditional double brick and tile to more lightweight prefabricated products. With the reduction in the number of wet trade apprentices over the last 10 years due to the labour demands caused by the mining boom, we will have no choice but to adapt.

Genuinely wanting to help and please people. Home building is one of the last handmade products of our age. Coordinating and coercing suppliers and trades to achieve the expected result is difficult and requires a lot of passion, skill and experience to achieve the finished result. I am very fortunate that I have a like-minded team at Tallwood Constructions.

How do you relax away from the business?

Does building in the south west present any unique challenges?

I started Tallwood Constructions 16 years ago. It took me a long time to realise that as the owner of a small business, it’s easy to spend every minute of every day working. There has to be a balance between, family, work and yourself. Paddling in winter has been an excellent way to look forward and enjoy that particular season. For the last five years, I have been doing three sessions of boot camp a week and two sessions of yoga. I have really enjoyed the recent explosion of obstacle races such as the Tough Mudder. To celebrate my 50th birthday, I am about to walk the Kokoda Track with four of my friends. I have also just completed my 14th Avon Descent.

There are a limited number of trades in the south west. To ensure the cheapest possible price is being achieved, architects and clients often expect builders to get four or more quotations for each part of a home. This is often not possible. Whilst the south west is serviced by many builders, there is only a finite trade base that we all pull from. As a builder who specialises in one off homes and renovations, you have to build a team of suppliers and tradespeople around you.

Do you have any particular materials that you like working with? I am fortunate that all of our projects are 48

Beauty Talk By Niobe Gulley

Clinique’s new skincare product, Clinique Smart Serum, is a serum smart enough to understand your skin’s past and change its future. Five years in the making, this clever serum has been formulated to identify skin problems and to address them with targeted repair. The theory behind this is that damaged skin sends out a signal, prompting the serum into action. For example, if skin has fine lines, then the serum will address these. No lines, then the serum will firm skin instead. Clinique Smart Serum has been designed to work best where skin needs it most and is intended for women of all ages and all ethnicities. Niobe Gulley is the owner of The Beauty Shop and The Beauty Shop Beauty Room. Two destinations in one location in the Stirling Centre, Bunbury, for all your beauty needs.

There is always plenty of excitement in-store when new skincare products arrive on the market from the world’s leading beauty houses. Recently, we have seen a number of new products released specifically designed to tackle ageing concerns head-on. New releases that help to ensure skin can always look at its youngest and its best. One such product that emerged this winter from Estée Lauder is Micro Essence. It is described as a Skin Activating Treatment Lotion that penetrates deeply to strengthen and repair skin, helping to reduce fine lines as well as softening the skin. The end result is a much sought after radiance and a youthful glow. To achieve the best results from Micro Essence, Estée Lauder recommends using it in conjunction with its Advanced Night Repair, a concentrated treatment that repairs, strengthens and protects while you sleep. Using the two products together maximises their individual effects. Now available in-store, Shiseido has a new serum called Ultimune Power Infusing Concentrate. It was created to work for women of all ages to tackle the effects of ageing, environmental factors and other daily stresses. The magic within this product is the technology that helps to boost the work carried out by deep skin cells in the epidermis of skin. These cells ingest antigens and present them to immune system cells which then fight them off. So the Ultimune Concentrate boosts the skin’s natural defensive functions against ageing. The results from using this product include strong and glowing skin as well as improved firmness and less visible wrinkles. 51

Join the Food Revolution! By Raquel Powley

Welcome to my first column for The Bunbury Life! You are what you eat. It’s a phrase we hear a lot and it’s true! That slice of cheesecake you ate yesterday is now fuelling your body and brain! To many of us, this simple equation will be familiar. Food = chew, swallow, void is filled, brain functions again = back to work. We forget that the food has entered an intricate digestion process that most of us know little about and take for granted. Remember too, that we are all made differently so no single lifestyle diet is going to suit every person. Take note of your blood type. The descendants of hunters and gatherers still perform better on the diet and lifestyle of that blood line, i.e. exercise, little or no grains, meat and whole vegetables and plenty of fruits. Studies also show clearly that Asian cultures that have added refined Western food to their diet have also added all of the ailments that come with consuming food that our bodies just don’t know what to do with (read The China Study). So what do you do? Who do you listen to as there is so much conflicting information! Well, here’s a simple 5 step process to get started:1. Find out your blood type (this is the easiest step!). 2. Research! Choose a lifestyle diet that resonates with your beliefs, is achievable and can be adjusted

to accommodate any allergies. 3. Clean out the cupboards! Don’t have the food and drink that you are no longer meant to be eating lying around. Replace it with the preferred healthy choice. 4. Purge. Want to fly with the eagles? Leave the turkeys behind. Your closest friends and loved ones may not be accepting of your decision to change your life and health. You may need to avoid them for a short (or long) period of time! Surround yourself with likeminded people that will support and mentor you. Seek out online and/or local groups, courses, a professional – counsellor, trainer, natural therapist. Engage in activities that will empower you to keep your change permanent. 5. Spoil yourself! Set a goal to work towards and reward yourself with something that will help you through the tough days when you can’t be fagged! A new frock, that romantic holiday, a massage, a polka dot bikini, lunch at a local winery with your bestie, whatever motivates you! Pin a picture to your fridge, save it as your wallpaper and picture yourself enjoying your reward! Best of health!

What is a Dermal Clinician? By Jeanette Elliott

good foundation for formal dermal therapy training. What can dermal clinicians treat? They specialise in the management of the skin in health, and disease or damage, to promote integrity and optimal function. An holistic approach is undertaken whereby topical therapies as well as therapeutic interventions and clinical treatments may be prescribed. This also involves a thorough consultation, incorporating medical conditions, medications and lifestyle factors as well as a detailed skin assessment to treat skin conditions. These conditions range from teenage and adult acne, and scarring, to hyperpigmentation, ageing skin, rosacea, sun damage, and wrinkles, to name a few. Jeanette Elliott is a dermal clinician who has many years’ experience in helping patients to understand their skin and the conditions that may affect it, providing realistic expectations of the results that can be achieved. She is a member of both the Australian Society of Dermal Clinicians and the Aesthetics Practitioners Advisory Network and is actively involved in the dermal therapy professional community via her role as a student assessor within the The Australasian Academy of Cosmetic Dermal Science. Located at the Greater Bunbury Medical Centre, call her on 9791 7938, for a free no obligation consultation and begin your journey towards healthy, beautiful and younger looking skin.

In WA, a dermal clinician is a professional who has graduated with a nationally accredited dermal therapy qualification from the Australasian Academy of Cosmetic Dermal Science (AACDS). They have extensive knowledge of the human body and, in particular, the body’s largest organ, the skin. The title is used to describe someone who performs dermal therapy treatments. These can include intense pulsed light, laser and other light-based treatment modalities, microdermabrasion, superficial chemical peels, skin needling and other advanced beauty/ cosmetic treatments. Traditionally, these types of procedures were performed in a medical setting, however, they are fast becoming the mainstay of non-medical clinics. Dermal clinicians are independent practitioners although they will often work inter-professionally and collaboratively with other specialists or health professionals to achieve optimal outcomes for clients. Is a dermal clinician different to a beauty therapist or paramedical aesthetician? Yes. Traditional beauty therapy training does not specialise in dermal therapy treatments. Although some beauty courses cover some dermal therapies, they do not provide the theory or practical competencies required to safely and effectively perform dermal therapies, especially within a medical setting. Nevertheless, beauty therapy can provide a 54

Feeding Your Pet By Braden Collins

The correct feeding of pets is key to achieving optimum health. Many diseases we see on a regular basis are the result of animals being fed an incorrect diet or simply being overfed. Diseases, such as arthritis, cancer, diabetes, pancreatitis and dental disease, can all be caused by incorrect or excessive diets. Obesity is the most common food-related problem we see in general vet practice. A dog that is overweight or obese will, on average, have a life expectancy of around 3 years shorter than a dog in optimal body condition. For an animal that might normally live for 12-15 years, this means it may lose 20-25% of its life span. Obesity has also been shown to increase the risk and severity of arthritis due to the excessive strain on joints, can contribute to type-2 diabetes in cats and is a major risk-

factor for organ problems, such as pancreatitis. To check if your pet is overweight, feel over the ribs. The general rule is you should be able to feel the ribs easily through a slight fat cover, but if you were to imagine the animal shaved, it shouldn’t be possible to see the ribs. Because each animal’s metabolism and activity level is different, we recommend altering the amount of food to suit individual pets’ needs. Feel the ribs on a regular basis and change the amount being fed as needed. Remember that giving treats and “human-food” all contributes to the animal’s weight so be careful which extras are fed to them. Dental disease is another problem that can be caused by incorrect diets. The biggest culprits we see here are tinned and soft foods. These 56

animal health foods can leave residues on animals’ teeth, which become the perfect habitat for bacteria, leading to plaque build-up and periodontal disease. Feeding biscuits rather than wet food reduces this build-up, and bones (always raw, never cooked) can help keep teeth clean. Home prepared diets can be excellent for pets if well-formulated, but can cause severe problems if not carefully balanced with the correct amounts and types of vitamins and minerals. We have seen several cases of poorly balanced diets contributing to bone fractures and other nutritional deficiencies, which can cause severe illness. When feeding a home prepared diet, make sure it has been correctly researched to ensure it is right for your pet. For commercially prepared diets, quality is critical. Cheap food is often made from low quality meat and other primary produce that are poorly digested, leading to significant wastage (this may be seen in the form of frequent bulky stools and flatulence). We

recommend Royal Canin foods to our clients because it is made using human-grade food products. The range is also designed to look after pets’ health with different foods available for animals at different life stages and of different sizes. Restaurant Review

the well-seasoned, beautifully presented polenta chips. Quite superb! Next, we moved onto the main lunch section and sampled one of the four open burgers available. We chose the Crumbed Chicken Burger and what an excellent decision this was! Coated in Japanese crumbs and served with Swiss cheese, avocado and Wasabi mayonnaise along with a green salad and crunchy fries, the dish was an absolute delight. Finally, it was on to the Salmon Orecchiette. After all, if a restaurant names itself after a particular pasta, it is only fair we try it! Well, we were certainly glad we did as this dish proved to be another highlight. Served with large chunks of mouth-watering Tasmanian salmon, fried capers, red onion, fennel seeds, pangrattato, Parmesan and extra virgin olive oil, the combination of flavours and textures, together with its unwavering freshness, was hugely enjoyable. A triumph! Open for breakfast, lunch and dinner 5 days a week, Orecchiette might be a 5 to 10 minute walk from the CBD but we can assure you that extra bit of effort is well worth it. Located next to Guppy Park, it it also offers the perfect spot for those spring and summer days when eating alfresco becomes an integral part of the WA lifestyle. A restaurant that comes highly recommended, discover a piece of authentic Italian charm right on your doorstep.

Orecchiette

Located at the Marlston Hill end of Victoria Street, Orecchiette is an exciting, new, café-style eatery on the Bunbury dining out scene. Never needing an excuse to try something new, in this issue, The Bunbury Life decided to pay a well overdue visit! You may ask, why the name? Well, Orecchiette happens to be the favourite pasta of owner and Head Chef Danny Drummond, who, along with wife Jennie, opened the restaurant in early spring. With a menu inspired by his mother’s passion for fresh, wholesome home cooking, Orecchiette prides itself on its locally sourced ingredients, wine list and enticing atmosphere. Arriving for lunch, we couldn’t wait to see if the restaurant was going to live up to its recent glowing reports and growing reputation. A well thought out combination of both light and more substantial meals, at first glance, the lunchtime menu will certainly get lovers of Mediterranean food salivating. A mix of traditional favourites and imaginatively designed dishes, the menu strikes a perfect balance between classic Mediterranean fare and Danny’s and Co-Head Chef David Gell’s modern, creative take on the genre. We began by sampling the Italian Hot Sausage off the light lunch section of the menu. Immediately won over by the delicious, authentic-tasting sausage, we were also wowed by

Natural Sense

By Annie Malone

I recently had the good fortune to get a five week holiday and journeyed with my husband to the north west of the state to compete in a fundraising mountain bike challenge for the Royal Flying Doctors Service, a worthy cause. Five days’ hard riding over the rough corrugated gravel roads of the Gibb River in dusty, hot conditions and camping may not be everyone’s idea of a well-earned break but I love the peaceful respite of the outback. The thing I love most about holidaying in the outback is that you are forced to think differently. All those things that we take for granted such as running water, electricity at the flick of a switch, petrol stations conveniently placed where we need them, not forgetting food and coffee shops, are no longer readily available. After a few days of roughing it, small things make you whoop for joy, such as 50 metres of sealed road or a section of road that has just been graded. Then you arrive at a place like Home Valley Station with its hot running water, showers, toilets and grass to set your tent on and you are in absolute heaven. Life is good but mind the crocodiles, oh, and the snakes and wild bulls. They are fast so don’t try to outrun them! Travelling on to Darwin, I noticed the lack of, “Be careful, this is a wild untamed land” signs. Yes, sure there were some, “Beware there may be crocodiles in these waters” signs, but it was generally accepted that people would be aware with the common rule being, “humans beware and keep your wits about you”. Even at the restaurants on the wharf in Darwin, all that separated diners from the 4 metre drop to the ocean where stingrays, moon fish and

crocodiles danced in the spotlight together was a 20cm kick rail. No safety fence. Everyone was vying for the closest ocean side table and I wondered, had any customers ever had one too many and ended up in the drink! So this got me thinking as to how spoon-fed we have become in our more populated cities and towns. Why do we need signs warning us of all sorts of obvious danger? Have we lost the ability to judge for ourselves? Are we doing our children and general population a disservice in over-protecting ourselves with signs so that we no longer think for ourselves? Do we need a university degree in “common sense” to survive each day? Do we need a degree in nutrition to realise that fresh natural juice from real fruits and vegetables will be more beneficial to our health than sugary, artificial flavoured carbonated water? If you eat more fuel than you are using, the excess will be stored on the body for later….or forever. It’s a no brainer. We humans are a resourceful and robust species. So let’s get back to the basics of life instead of over complicating and over analysing things. Keep it simple. Remember, if we look after our bodies, they will keep working for us. If we are considerate to ourselves and others, it will usually be returned in kind. And, if you swim with man-eating animals, you could get eaten! Natural sense, bring it on! Spring Recipe Zucchini and Pancetta Tagliatelle Being in season, zucchinis are at their best right now. In this dish, they add colour and texture as well as fresh spring flavour. Simple and quick to prepare, this dish is perfect for taking outside and enjoying alfresco. Use smoked bacon or chorizo instead of the pancetta, if preferred.

Ingredients

olive oil 200g diced pancetta (or chorizo) 3 medium-sized zucchinis 2 cloves of garlic, crushed 200g Parmesan cheese, grated 200g crème fraîche 300g tagliatelle

Method

Use a mandolin, wide grater or vegetable peeler to create ribbons of zucchini. Set aside. Heat a small glug of olive oil and fry the pancetta for a few minutes until it starts to get crispy. If using chorizo, fry gently in a dry pan as it will cook in its own oil. Add the zucchini ribbons and increase the heat. Add the garlic once the zucchini has started to soften. Meanwhile, cook the tagliatelle according to its instructions and then drain. Add the tagliatelle to the zucchini and pancetta and reduce the heat. Stir in the crème fraîche and the Parmesan. Add a little water if the mixture is too stiff. Serve in bowls and enjoy with a leafy salad.

Think Pink! With Jake Atkinson Lately, there has been a significant rise in the quality of rosé wines. We are seeing stylistic changes from once sweet and simplistic wines to dry and textured. An attitude change from producers who once made use of the rosé category as a means of utilising surplus grape supply to a concerted approach to make quality European-styled table wines. Mazza Wines of Donnybrook is a heavily European-influenced producer that only works with grape varieties indigenous to Spain and Portugal. The 2013 Bastardo rosé is no exception to its roots with a subtle yet vibrant Mediterranean feel. The wine is a lovely pale shade of salmon and has a floral, peach and nutty fragrance, whereas the palate transfers into a dry and almost briny flavour of almond with a fleshy peach texture finished with a light but refreshing touch of acidity. Ferguson Valley’s 52 Stones Bubelle is another rosé with European flair. Its base is the Italian variety Sangiovese. The 2014 vintage is fresh in the bottle and displays a bouquet of wild strawberries, rose petal and earl grey tea. The palate of the wine is thin and fine with ripe strawberry flavours and a bright but refreshing acidity. Perfect for enjoying alongside a platter of the new season homemade salumi the locals are currently preparing. Keeping with the Italian theme, Vineyard 28 of

Harvey has yet again produced another fantastic Moscato. The 2014 Moscato is a vibrant pink wine with an attractive musk stick and ripe nectarine aroma. The palate achieves exactly what a good Moscato should; bright ripe berry fruit sweetness and a texture with fine but refreshing effervescence, making this a great option for fans of lower alcohol, sweet but not taxingly heavy, wines! Next time you venture out to the Geographe cellar doors, make sure to ask about their rosé offerings. They are the perfect wine to share with friends over some great food and fun times. After all, that’s what wine is all about. Jake Atkinson is Sommelier at Mojo’s Restaurant, Victoria Street, Bunbury.

Bonking Frog Wines Competition Winner In the previous issue of The Bunbury Life we offered one lucky reader the chance to win a case of wine from Boyanup-based, Bonking Frog Wines. We are delighted to announce the winner of this great prize as Eileen Robbins of Australind. Many congratulations to you! And, just for the record, the answer to the question, What is the name of the just released Merlot variety?, was, of course, the 2011 Paterson Reserve Merlot. 62

Neil and Cathy Howard of Whicher Ridge Estate

The Geographe Wine Region Welcome to another update on the news and happenings around the Geographe wine region The 2015 James Halliday Wine Companion has recently been published with plenty of favourable mentions for Geographe wineries. Located on the north facing slopes of the Whicher Range, south of Busselton, Chapman Hill-based Whicher Ridge Wines is fast making quite a name for itself and this year the winery has been nominated as one of Australia’s Ten Dark Horses in the Companion. Owners Neil and Cathy Howard were understandably delighted with the accolade. “It’s such a wonderful opportunity to have our winery highlighted in James Halliday’s Wine Companion. We received the exciting news after being phoned by a winemaker friend who called to congratulate us, it was a total surprise,” said Cathy. “The quality (and value) of the wines produced by the husband and wife team of viticulturist Neil and winemaker Cathy Howard is quite exceptional. When you factor in their collective 40+ years’ experience, their 7ha estate vineyards, and the purchase of high quality grapes from Frankland River, it begins to make sense,’’ noted Halliday. This year, the Companion has also seen James Halliday award Donnybrook’s Oakway Estate a coveted 4.5 star rating, placing the local producer amongst the very best of Australia’s wineries. “We are extremely proud and very humbled by this incredible accolade,” said owners Wayne and Ria Hammond. “Our 2011 Reserve Shiraz was awarded 94 points (out of 100), the 2013 Sauvignon Blanc scored 92 and the 2012 Barrel Select Chardonnay received 90 points.” For those interested in sampling Oakway Estate’s wines, why not book a ticket for its Middle Eastern-themed Long Table Lazy Lunch to be Oakway Estate 2012 Barrel Select held on September 21st. Tickets are priced at $65 and visitors will enjoy a Chardonnay fabulous afternoon of food fusion and superb wines. Tickets can be cont... page 66 64

purchased via the online shop at www.oakwayestate.com.au or by phoning the winery on 9731 7141. Ferguson Valley winery, Talisman Wines was also the recipient of some positive press with 3 of its wines receiving 90 plus points in the Companion. Its 2012 Gabrielle Chardonnay received an impressive 94 points, its 2013 Riesling 93 points and its 2012 Zinfandel 91 points. In addition to that, the winery also received a gold medal for the 2013 Riesling at the Boutique Wine Awards. Mazza Wines has also received a round of excellent reviews in the latest Companion. The 2011 Mazza Cinque received a gold medal rating of 94 points and its five other 2011 releases all scored over 90 points. The Cinque is a blend of five different varieties of Spanish and Portuguese grapes grown by the Mazzas in Donnybrook and is made up of Tempranillo, Graciano, Touriga, Tinta Cao and Sousao. The Mazzas also Talisman Wines grow the Portuguese variety Bastardo which is used to 2013 Riesling make a very popular dry rosé (see page 62). The 2013 Bastardo also scored well with Halliday at 91 points and was listed as a wine of special value for money. David Mazza said he was very happy about the consistently high ratings from Halliday year after year. “These Willow Bridge Estate alternative grape varieties are thriving in the Gravel Pit Shiraz Donnybrook soil and climate and are producing excellent wines.” See Mazza Wines at the Donnybrook Food and Wine Festival in November.

News from Smallwater Estate is that the winery recently won 2 gold medals at the Cowra Wine Show for its 2013 Shiraz and 2013 Rob’s Block Cabernet Sauvignon and gold at the Boutique Wine Awards for the Shiraz. With plenty more wine shows being held around the country at present, expect more good news from the winery shortly. Ferguson Valley winery Willow Bridge Estate has scored a highly impressive 95 points for its 2012 Gravel Pit Shiraz in the prestigious Ray Jordan Top 100, recently published in The West Australian. Jordan reported, “This wine often has the white variety to add some aromatic lift, yet this year the fruit was so good it’s going solo as a 100 per cent Shiraz. Beautiful wine with supple ripe tannins, medium weight fruit and complexity, showing wine doesn’t have to be big to be complex and concentrated. Exciting wine from Geographe.” Finally, Vineyard 28 will be hosting an exhibition of works from members of the Bunbury Felting Group on the September long weekend. The exhibition will be open from 10am to 5pm each day and entry is free. The winery has also recently released its popular sweeter style wines, the 2014 Moscato and 2014 Dolcetto. These are both now available at the cellar door.

Feature Wine The Top Drawer – 2010 Cabernet Sauvignon

This smooth, elegant Cabernet with plenty of lifted berry fruit flavours from Donnybrook winery Barton Jones exhibits persistence and exquisite balance. A light to medium bodied red, it has been carefully matured in predominantly new and seasoned French oak to give softness and complexity as well as balance. A wine to be enjoyed from release, this 100% estate grown wine will improve if left to cellar up to 2018. Awarded 4.5 stars by Winestate Magazine in the 2014 Best of the West, the wine also won Best Cabernet at the 2012 Geographe Wine Show, a silver medal at the same show and bronze at the 2011 Boutique Wine Show. With an aroma of lifted hedgerow berries and herbs, the palate is a mixture of intense briar berry fruits balanced with oak to give a fine structure. The palate is tight but with great fruit intensity. Ripe, firm tannins are well balanced with the fruit weight. Oak - 100% maturation in new and seasoned French and American oak for 14 months

Winemaker – Stuart Pym, Luke Joliffe (Consultant) Bottling – June 2011 RRP - $27 Barton Jones Wines is a boutique winery created by Jackie Barton and Adrian Jones. Located on Upper Capel Road, Donnybrook, the winery opens its exciting new cellar door in October.
